In fact, I guarantee none of these things will fulfill you like a full da y of charity work; they won’ t give you a sense of community , a sense of family or a sense of hard work. What I am s aying is that some times they make life just plain fun. And I don’ t think there’s anything wrong with that.

The Coconut Cure-All:

DIY BEAUTY TREATMENTS Recently coconut oil has been touted as the rising star of the culinary scene.

But its uses e xtend far beyond the kitchen. It turns out the oil is just as good for you on the outside as it is the inside. Plus, it’ s all-natural, easy to find and even easier to use. Her e are a f ew of our f avorite at-home recipes that make great additions to any one’s beauty routine.

FACE MASK Mix a spoonful of coconut oil with a few drops of tea tree oil. Put a light layer of the mask on your face overnight and wash it off in the morning. This mask can help reduce redness, calm acne and moisturize.

HAIR MASK On very low heat, warm ½ cup of coconut oil with a tablespoon of honey. Apply the mixture to your hair, leave it in for 10 to 15 minutes, and then thoroughly wash with shampoo.

LIP SCRUB In a small bowl, mix together one tablespoon of coconut oil and one tablespoon of brown sugar.

Add an optional drop of vanilla for added fragrance. Apply to lips and gently rub them together. Don’t worry if you get a little in your mouth; it’s edible too!

Champagne is an opulent drink most often saved for special occasions and holidays. But Bryan Maletis, owner of Fat Cork, says any day is a good day for some bubbly, especially the artisan variety.

RM: Can you explain the term “grower champagne”?

BM: Grower champagne is created b y the same people who gro w the grapes, farm the land and craft every cuvée with care. Gro wer champagnes are usually small family operations where the land has been passed do wn for four to six g enerations.

RM: And how does that affect the product?

BM: Ninety-five percent of all champagne imported in the United States is no t grower champagne; it’s mass-produced champagne blended from the grapes of hundreds , or even thousands, of different grape gro wers and vineyards. It’s not necessarily bad; it’s just not artisan. I like eggs great, but then somebody mak es you a farm-fresh egg with a super -orange yolk that is so unique and delicious—it’ s like that. Once you have grower champagne, you’re spoiled because you kno w just how great champagne can be when it is produced in small quantities and comes s traight from the farm.

RM: In your opinion, is champagne exclusively for special celebrations, or is it appropriate for a nightly glass?

BM: “Celebrate every day” is our mantra at F at Cork. When your mom comes into to wn, that’s certainly special enough to open a bo ttle. When you ha ve a great da y at work, open one up. Having a bad da y? Toast to whatever makes you happy. Champagne is no t just for special occasions, and instead of waiting for an occasion special enough to open a bo ttle, open a bottle and create the special occasion.

RM: With what part of a meal is champagne best served?

BM: Champagne g ets the reputation for being an aperitif only , which is absolutely wrong.

It is indeed delicious as an aperitif, but it is also an ex tremely versatile beverage that pairs well with all sorts of different foods . Especially the small-production gro wer champagnes; they have a great div ersity of flavors. One of m y favorite indulgences is opening a great bottle of champagne to s tart the meal, then also opening a great bo ttle of red wine and en joying both as the meal progresses . A sip of champagne after a bite of roas t meat or v eggies cleans the palate and mak es the next bite even more delicious. Then add in a few sips of red wine alongside everything, and it’s a fun dinner indeed.

RM: What do you recommend for the daily glass?

BM: Grower champagne is at the top of the p yramid, and in m y biased opinion, it is the best sparkling wine in the world for the money . But it s tarts at $40 to $50 per bottle, and that’s not realistic for many people. So I recommend drinking other good sparkling wines from around the world made in the champagne me thod but aged for less time and made from less expensiv e grapes. When I w as starting out, I s till fondly remember putting a bottle of great grower champagne in our refrig erator once a month and looking forw ard to the special treat, while honing m y palate on the less expensive stuff during the week. When my wife and I decided to start our Fantastic Champagne Club at Fat Cork, we created the entry -level tier with that idea in mind.

We ship you two bo ttles every other month for a to tal of 12 bo ttles per year, or one great grower champagne to enjo y once a month.

RM: What sets your warehouse and tasting room apart from other wine purveyors that simply carry champagne?

BM: All we do is gro wer champagne. We have 70-plus cuvées that I go over and handselect every year, and all of our champagnes are ex clusive to us in the United States .

We don’t buy from importers or dis tributors; we buy directly from the ca ves of our producers and ship it directly to our ca ve in Seattle, where we k eep it temperature controlled and ship it direct to cus tomers all over the country. You can’t buy our champagnes anywhere else, and that allows us total control over quality and storage.

And for our FC Club members, I actually hand-select cuvées for members based on their preferences. Every member gets a unique shipment. I tak e their feedback into account every time I select cuv ées for them, and also when I g o to Champagne to select cuvées from the gro wers.

This world is crazy, and so is daily life; taking a moment to reflect and celebrate is what makes me most happy.

RM: What are some of the biggest misconceptions about champagne?

BM: I mentioned it before; the bigg est misconception about champagne is that it’ s a beverage only for aperitifs , not for the meal. Ano ther misconception is that it’s only for special occasions. Try this nex t week: your spouse comes home to find an open bottle of champagne and two glasses se t out. This world is crazy , and so is daily life; taking a moment to reflect and celebrate is what mak es me most happy.

RM: Do you have any advice for those who are new to the champagne world but would like to learn more?

BM: I would start by hosting a sparkling wine/ champagne tasting party. Every couple signs up to bring a different type of bo ttle, and everyone can taste them tog ether and see the differences. We also post a lot of short, educational videos in our e-mails and on our blog.

We love to educate our consumers on the basics of champagne, such as ho w to open it prop erly, how to chill it, ho w to serve it, types of food pairings and even how to saber! Actually, the majority of our F C Club members signed up knowing nothing about champagne, and through their tasting experiences with us, they are now experts.

RM: What are a few bottles you recommend for those once-in-a-lifetime events (wedding, anniversaries, etc.)?

BM: Vintage champagne mak es up only 10 to 15 percent of the o verall production of champagne, and it’s my personal favorite, as it represents a single great vintag e in time.

It is crafted to last many years, even decades.

We have access to very old vintages that have been aged in the producers’ cellars , not a warehouse. This is critical for old wines to maintain quality.

My personal favorite is the 1996 vintag e Blanc de Blancs from our producer Gimonne tOger. It’s 100 percent chardonna y from one of the best vintages ever and grown in the finest vineyards for chardonnay in the world.

That’s arguable for an y wine g eek, but I’m happy to argue it an ytime. But that bo ttle is rare (only 300 left in the world), and so it’s also expensive at $159. For under $100, I recommend the Grongnet Special Club 2008.

It has a unique s tory with a specially shaped bottle that highlights it as one of the bes t grower champagnes. The 2008 vintag e is young, but also one of the greates t ever so far, and this cuvée will age for a decade or more.

It is $84, and it’s also one I would highly recommend for a once-in-a-life time event.

RM: What’s in store for the future of Fat Cork?

BM: In 2015 I will be expanding our portfolio of producers to include s till wines as well as champagne. My fingers are still crossed, but I hope to convince a few great producers from the Burgundy region of F rance to be ex clusively represented by Fat Cork.

As of late, chefs and foodies seem obsessed with truffles, the fungi that grow underground in F rance and Italy and are traditionally hunted b y pigs (dogs are now commonly used as well). H owever, the uniquely muskytasting morsels come at a hefty price. The New Yorker reported that in December of 2014 a 3.93-pound white truffle sold for $50,000 during a Sotheby’s auction. There are less expensiv e options, but truffle-lovers looking to enjoy the host of healthy minerals that truffles provide—including copper, magnesium, iron and zinc—should be a ware there are man y ways in which people fak e it, including using o ther mushrooms as a substitute or chemicals meant to mimic the smell and tas te.

BRE A KING ING THE THE MOLD MOLD A few years ago, a series of tragedies struck Maja Arnold and her family, but what she chose to do with the pain is nothing short of beautiful.

L

ike all of Maja Arnold’ s pieces of jewelry , the first necklace she designed w as the product of a deeply personal s tory.

It started about sev en years ag o when Arnold became pregnant with twins .

After a complicated pregnancy that left her bedridden for a month, Arnold had the twins (a girl, Is abella, and a boy, Lukas). The twins, weighing only two pounds each, spent two months in incubators gaining strength before Arnold w as able to bring them home. However, two weeks after , Arnold and her husband los t Isabella to Sudden Infant Death Syndrome (SIDS). “The whole process w as so dif ficult for me,” Arnold says.

grieving the loss, two years later , Arnold started trying again for another child. “I pra yed to God to giv e me a girl; I needed my girl back. And I g ot pregnant. God gave me back my girl, and I named her Ella, ” Arnold says. However, the family’s trials weren’t over. Just one year after Ella’s birth, Arnold noticed there was something wrong with Lukas .

“Lukas was diagnosed with stage-three cancer. He had a kidney tumor. It was so scary. One day to the other, he was perfect one day, and then I was changing his diaper and no ticed a bump on his belly ,” Arnold says. “And I thought, oh m y God, my other twin is g ong to die.” Arnold quickly took her son to Seat tle’s Children Hospital where he endured surg eries, chemotherapy and radiation.

Lukas is no w seven and a half years old, and he has been health y for almost four years , much in part to Arnold’ s passion for creating a health y home and lifes tyle for her children. But Arnold s till wears the marks of all her struggles—literally.

Arnold, now 41, has been in the fashion indus try for 20 years, holds a degree in typography and has alw ays had a passion for dra wing. So when trag edy struck, she fell back on those things to g et her through the toughes t times. After g oing through the loss and sickness of her children, she found herself sk etching designs using all three of the children’s initials. “It’s meditation and healing,” Arnold says.

“That’s how I heal—with art.”

Arnold says she then took the hand-dra wn design of the initials , had it cas t in silver and wore the necklace close to her heart as w ay to keep all her children with her. Pretty soon, people took no tice of the piece.

“People were asking me about it, and they started talking to me about the initials they would use. And I realized we all ha ve a story. I could tell that jus t talking to me about their lo ved ones was a healing process ,” Arnold says. “One woman wanted me to use her mom’ s jewelry, and we made a unique s ymbol of her family and her child using her mom’s diamond. Another wanted her husband’s initials. It’s inspirational to me because it’ s about the s tory and what it means to people.”

this is exactly what mak es Arnold’s jewelry so special. There are no preset casts, no standard designs. She creates each piece using inspiration from the person and his or her unique story and initials. “Each one is different because we are all different, ” she says.

The other thing that sets her designs apart is the style. These are no t your mo ther’s monogrammed necklaces. “I’m really into anything that’s different, not average,” she says. “I like very modern, sleek clean-cut lines . I’m just not traditional in any way, and when you s tart looking at spiri tual jewelry, it’s usually very old school. I w anted to bring a young, fun and chic look to it. ”

Now that everyone is healthy in the household, Arnold is able to focus on her jewelry , something she believes she was born to do . “Professionally, for the first time in m y life, I’m doing what I re ally want to do,” she s ays. “It’s like watering a flower. It means that much to me. ”

For those interested in creating a one-of-akind necklace, the process takes about three weeks, and the s tandard piece comes with two design options, a chain and the final monogrammed piece.

Also, clients have life-long rights to the final design and can use it in o ther ways if they like. While the price depends on the type of me tal, pieces start around $350.

“For me, ultimately spiritualty is m y business.

he idea for an article on matchmaking on the Eastside started last fall when in the span of just a few weeks I received numerous inquiries from Bellevue Club members asking about services or forums we could provide for singles. These members pleaded that they weren’t interested in spending their only free hours combing profiles in the plethora of online dating sites. They simply wanted a trusted source to help them make connections with like-minded people, in this case other members.

While I felt for those members , it wasn’t a feasible project for us at the time. But when ano ther member introduced me to P eggy Bennett, a personal matchmak er who specializes in helping Eastside residents find love, I realized the topic w as more relevant than I had thought, and I had to share her story with our readers and members .

As she says many people do, when I first met Bennett, I made an immediate comparison to Patti Stanger, the celebrity matchmak er made famous by her big personality and successful Bravo reality show The Millionaire Matchmaker.

And Bennett doesn’t necessarily shy away from the comparison. After all, lik e Stanger, Bennett prides herself on being ex tremely selective and straightforward with her clients .

However, Bennett stresses that she v eers away from Stanger’s style in that she is much more discreet—and a good deal sweeter.

“I have directiveness,” Bennett says. “That’s why I call m y business Straight to the H eart. I offer clients coaching, w ardrobe and even body language advice and tips . I’m pretty assertive, but I’m like the nicer v ersion of Patti. I genuinely love people, and I lo ve being in the people business.”

In further explaining her unique approach, Benne tt also makes it a point to differentiate herself from the surfeit of matchmaking sites that so man y singles in her targ et demographic protest out of dis trust. “There’s definitely a customer for those online sites ,” Bennett says. “But my client is one who w ants to be more selective, private and efficient with their time. I screen everyone, so clients ha ve a sense of security of who the people are. They will also ha ve a sense of security kno wing they can trus t who I am. ”

An Eastside native herself, Bennett, who met her own husband on a blind date se t up by a mutual friend, launched Straight to the H eart in December 20 14 but has alw ays enjoyed the art of pla ying Cupid. “I ha ve a natural instinct for it. I can easily read people’ s energy, and I don’ t think that’s something you can be trained to do,” she says, who for man y years has work ed as a personal w ardrobe stylist for Nordstrom, a profession she says is strangely similar to matchmaking.

“They are both all about the one-on-one relationships , and that’s what I lo ve. Nordstrom wardrobing is a one-on-one setting, and by doing that you ’re spending a lo t of time guiding clients , and they tend to open up ,” Bennett says. “I often ha ve single clients open up and ask, ‘B y the way, do you kno w of anyone who is single?’

It was a very natural progression. It all came tog ether, all my skills and talents .”

So what is the actual process of making it into Benne tt’s database? Anyone interested in Bennett’s services can register through her website. Afterw ard, Bennett conducts an in-person interview , where she discusses exactly what the client is looking for in a partner and relationship . This process no t only clarifies what the potential client is looking for but also ensures they are a g ood fit for Straight to the Heart. Bennett prides herself on selecting singles with s trong family values who are looking for a long-term partner .

“I talk to them about their career , demographic preferences, children and family, personal values, how they were raised, tra vel and so on, ” Bennett says. Once all the de tails have been hashed out, Benne tt offers clients three options, ranging from an (unpaid) W omen’s Only to a VIP M embership, which includes dating preparation guidance and s tyling advice, among o ther benefits.

But no matter the level of membership, Bennett offers all of her clients a few tips up front, such as don’ t bring your stress with you on a date, don’ t drink too much and hold off on sex. “That’ s not part of the signed agreement, but I feel s trongly about telling them to hold off on sex because they jus t won’t be successful,” she says. “If you’re looking for a long-term relationship or marriag e, I’m going to offer the advice to dig deep and find out who they are first.”

Bennett stresses that when couples lis ten to this advice, they are be tter able to recognize a true soul mate.

“There is chemistry and then there are soul mates . Some people are fooled b y chemistry alone. Women specifically can be s wept off their fee t, and that can ma ybe last through the engag ement. But if you don’ t have that solid base, those feelings of ‘I feel lik e I’ve known you my whole life,’ it may not last. True love runs way deeper than sexual chemistry.”

The last thing that Benne tt stands firm on is not showing pictures to clients before they mee t. She doesn’t want to allow for any preconceived notions or judgments to seep into the process . “Only I get to see that information. I’m really blessed in that I ha ve my clients’ trust. discov er in g d u ba i It’s easy to dismiss Dubai as a land of excess: excessive shopping, excessive high-rise buildings, and certainly excessive sun (the average temperature high year-round is 92 degrees Fahrenheit). But it’s also excessively fascinating.

A blend of old and new, Dubai shows how quickly a city can change if it just sets its mind to it. This isn’t the place it was 50 years ago. It isn’t even the place it was a decade ago.

In fact, it’s probably transforming as you read this.

That kind of rapid rebirth is worth witnessing.

Buoyed by its relatively newfound reputation as a cosmopolitan destination, Dubai has begun attracting visitors in spades. If you’ve never visited the Middle East, this can serve as a great gateway—the United Arab Emirates city is peaceful, progressive and multicultural, traits that aren’t always abundant in this part of the world.

GETTING THERE As long as you ’re staying for less than 30 da ys and have a valid passport for more than six months , you don’t need to obtain a visa prior to lea ving the United States for the UAE. There are multiple airline carriers that tra vel to Dubai.

With Emirates, you can fly nonstop from Sea-Tac to Dubai International Airport (D XB), which takes about 14 hours. You can also g et a connecting flight with a host of airlines, but pay attention to flight times, as the journey can sometimes stretch to a da y or so jus t one way—something to consider when planning ho w long to be gone.

Once you arrive, taxis are the mos t popular way to get around, but the me tro is another option. You can rent a car too, although it’s likely only a g ood idea if driving is necessary in your itinerary. Here, traffic is bad and accident rates are high. F emale travelers might be interested in pink-roofed taxis, intended for ladies only and driven by fellow women.

WHAT TO DO Beaches, shopping malls and indulg ent dinners, oh my—Dubai is every bit the extravagant getaway you’ve heard about.

Where to start? Jump right in with a dizzying display of glittering gold at the Gold Souk, where one sparkly necklace after ano ther will catch your attention. If you think that’ s over the top, it’s time to head to the world’ s tallest building, the 2,717-foot Burj Khalifa. (For comparison purposes, it’s almost three times taller than Seattle’s Columbia Center.) On level 148, experience the world’s highest outdoor observation deck. Come back do wn to earth and visit Dubai Museum, located in the circa-1787 Al Fahidi Fort, for a look at the city pre-boom. Learn about life in the desert, traditional Arab households, pearl diving and much more.

That only scratches the surface, of course— caviar spa treatments, splash-happy water parks, dinner cruises, choreographed water fountain shows and desert s afaris with spectacular sunset views are just a sampling of the activities that a wait.

CULTURE CLASH Although the UAE is far more tolerant than o ther Middle Eastern countries, there are still significant differences in culture compared with the West. For example, alcohol is not allowed to be consumed publicly , and there’s a zero-tolerance polic y for drinking and driving. Dress is more modes t. Women do not need to co ver their heads in general, but should do so before entering a mosque. The left hand is considered unclean, so it’s not appropriate to eat with it. Public displa ys of affection should be avoided. Brush up on some of these differences before you lea ve—not only will it sho w respect for the place you ’re visiting, it will k eep you from po tentially getting into trouble! ( Jail time for making an impolite g esture in traffic would certainly put a damper on your vacation.)

A little research beforehand combined with a sense of curiosity will serv e you well as you discover Dubai, one of the Middle Eas t’s most intriguing destinations.

Reflections magazine: What is table Thai massage?

Amber Maurer: Table Thai massage is similar to sports mass age and can be as effectiv e as a deep tissue mass age. The majority of our clients are ex tremely active in their ev eryday lives, so incorporating table Thai massage into what we offer for bodywork is an excellent fit to help clients achieve relaxation, increase pro prioceptivity and improve flexibility.

RM: Can you explain proprioceptivity?

AM: Proprioceptivity is the awareness of posture, movement, changes in equilibrium and kno wledge of position, weight and resistance of objects as they relate to the body . When people acquire more propriocep tivity, the result is that they become more aware of their body, specifically where they hold tension.

RM: What kind of experience can a person new to table Thai massage expect?

AM: They can expect to check out of their mind and into their body as if they were g oing into a yoga class . The client, ins tead of actively stretching, will receive what we like to call a lazy man’s yoga session. Clients can expect to experience muscle compres sion, joint mobilization and acupressure. In this w ay, table Thai massage is both relaxing and energizing.

RM: Can you explain a little more about acupressure?

AM: Acupressure is the specific technique for applying pressure to the body to create channels for healing energy to circulate in all parts of the body. It opens up energy path ways via the nervous system. It energizes the ph ysical, emotional and mental aspects of the client.

RM: You call it lazy man’s yoga; can someone who has never done yoga enjoy this?

AM: Clients who ha ven’t yet ventured into a yoga s tudio will be able to achiev e just as many benefits as those who are yogis .

Clients will most likely leave feeling inspired to take a yoga class for the first time.

RM: How many sessions are recommended?

AM: Table Thai massage is similar to all other massage bodywork; it’s recommended for both preventive and restorative treatments.

You can’t ever have too much mass age. Listen to your body, discuss a plan with your mass age therapist and start reaping the benefits of consistent, quality massage.

RM: Do you recommend table Thai Massage for people with injuries?

AM: Table Thai massage is suitable for mos t injuries. Since the stretches can be done in man y different positions on the table, it’s very accommodating. But please alw ays communicate an illness or injury with your mass age therapist before beginning your session.

RM: How do you recommend clients prepare for their first session?

AM: Wear loose or stretchy, comfortable clothes. Workout clothes are appropriate. No oil is applied, and the session will be per formed fully clothed. For an added benefit, spend 5 to 10 minutes in the sauna to warm up your body , or come pos t workout and shower for your session and you will be w armed up and ready to stretch your muscles. Always remember to h ydrate before and after massage sessions.
