ANNUAL ORANGE COUNTY JUNIOR TENNIS TRIP

A group of young tennis players made the annual trip to California for some sunshine, good food and, of course, lots of tennis. The weather was perfect this year, and the kids played over nine hours of extremely competitive tennis and had some quality team-bonding experiences.

Different bodies want and need different things. But everyone likes convenient, fresh food that tastes good. Our executive chef thoughtfully designed a line of prepackaged meals for health-conscious people who don’t have time to cook every meal. Pick from vegetarian, meat-focused or well-balanced options, depending on your preferences.

However, if you do find time to cook, try out these recipes. We took one from each category for those who want to try their hand in the kitchen.

impossible meatballs

INGREDIENTS

1 pound Impossible meat

½ cup onion, diced

1 clove garlic, chopped

4 tablespoons gluten-free bread crumbs

2 tablespoons olive oil

1 teaspoon fresh thyme

½ teaspoon sage, chopped

½ teaspoon rosemary, chopped

1 tablespoon salt

¼ teaspoon black pepper

PROCEDURE

Preheat the oven to 400 degrees F. In a large mixing bowl, combine all the ingredients. Scale the mixture into two-inch meatballs and place on a baking sheet. Roast until browned, 25 to 30 minutes.

WELL-BALANCED

Spicy Tomato Salsa and Chips

INGREDIENTS

8 Roma tomatoes, halved

¼ yellow onion, roughly chopped

2 garlic cloves, peeled

1 jalapeño, stemmed

2 tablespoons chipotle

2 tablespoons kosher salt

½ bunch of cilantro, chopped

PROCEDURE

In a cast-iron skillet, sear the tomatoes, onion and jalapeño until lightly blackened. Place the vegetables and the rest of the ingredients, except for the cilantro, into a blender. Puree and taste for seasoning. Place the salsa into a bowl and stir in the cilantro. Serve with chips, burritos, fajitas and other dishes.

Achiote Meat Marinade

INGREDIENTS

½ pound achiote paste

32 ounces orange juice

¼ cup minced garlic

½ cup lime juice

½ tablespoon salt

PROCEDURE

Puree all the ingredients in a blender. Use the marinade with chicken, seafood, pork or beef. The flavor is best if you marinate the meat for 24 hours or longer before cooking. The marinade can also be frozen for later use.

SWIM TEAM ALUMNUS MAKES A SPLASH IN SANTIAGO AT THE 2023 PARAPAN AM GAMES

Reflections magazine: When did you start swimming?

Gabi Farinas: I started when I was five years old. It was a way to get the blood to my feet. And floating in the water just felt so good to me.

RM: Can you explain a little about club foot for those who might not know about the condition?

GF: I was born with the most severe. My ankles were turned in at 90 degrees, and my feet basically upside down with the tops of my feet facing the ground. So I've had a ton of foot manipulations from just a few weeks old.

RM: And you’ve had surgeries as well?

GF: Yeah, the first one I remember was at 11 years old. We did both legs at the same time, and it was incredibly painful.

RM: What does it mean to have gone down to Santiago and compete with the world's best just a few years later?

GF: I mean, it's insane. I remember that me at 11 years old, and I was really nervous. I didn't even know if swimming on that level was what I wanted to do because I was used to just competing at local swim meets. I remember seeing all the biggest swimmers, and I'm now competing on the same team. It used to be like, ‘Can I have your signature?’ Now we're on the same flight together, competing against each other. And I think that's just crazy.

RM: Can you tell me about the event in Santiago in November of last year? What were your expectations for it?

GF: My event for the Santiago 2023 Parapan Am Games was the 50-meter freestyle. That's what got me on the Paralympic emerging team.

RM: What did your training for this huge event look like?

GF: I worked with a sports trainer that specializes with all my conditions. Because it's not just the feet. For the past two years, I've had this ongoing shoulder problem. And it was mostly caused by my ankles, because one of them is worse. So, it throws off my whole entire rotation.

RM: What do your peers think about your accomplishments? And how do people react to your story?

GF: A lot of my peers at school wanted to talk to me about it, so it was nice. I got to explain the whole entire Paralympic movement. It's not super well known, but it's been gaining popularity these past few years.

RM: And by movement, what do you mean? Can you explain a little bit?

GF: So we have the Olympics and then Para, as in parallel to the Olympics. And they recently made it so that all the same funding goes to both. All the medals win the same amount of money, and they changed a lot about the rules. I think it's because of a lot of the Paralympians like Jessica Long. She's a six-time gold medalist. They've just been saying, 'There's no difference between us and Olympians. We train just as hard probably sometimes even harder.'

RM: What’s in store for the future?

GF: The ultimate goal is to make the 2028 Los Angeles team.

RM: Do you think you’ll be swimming your whole life?

GF: That’s the great thing about swimming; it can be lifelong. Yeah, definitely. Even if I'm not winning medals, the meets are so much fun.

RM: What is your biggest piece of advice for other athletes?

GF: Just to keep going. I mean, I’ve wanted to quit on many days, but I get up and do it again. Yeah, and surround yourself with people who want to push you.

SILVER: BUILDING FUNDAMENTALS

Ages 6+, Tu, 4-4:45 p.m., Sa, 10:45 - 11:30 a.m., Basketball Gym

Players will begin to refine their shooting technique, dribbling ability and learn in-game competition. Intermediate skills such as crossovers, running the floor, playing defense, chest passing and jump shots are introduced. Silver players must pass the Bronze Skills assessment prior to registration. Children will learn basic ballet steps and terminology while discovering rhythm and coordination, using their own creativity and lively imaginations. Ballet and pretty dress up clothes encouraged. Session 1: $180/member, Session 2: $150/member

BALLET LEVEL 1 & 2

Ages 5-8, Tu, 5-6 p.m., Multipurpose Room Ballet Level 1 & 2 allows ballerinas to begin developing the main concepts of ballet including coordination, spatial awareness, position of the feet and an introduction to movement vocabulary. Session 1: $180/member, Session 2: $150/member

Our program teaches aquatic and water safety skills in a logical progression. The objectives are to teach swimmers to be safe in, on and around the water and become efficient swimmers. Classes are 30 minutes each. A skill level assessment is recommended for all swimmers entering group swimming lessons to ensure accurate placement. Session 1: $138/member; Session 2: 115/member

HOW TO FIT YOUR BIKE

The first step in any cycle class is to fit your bike to your body and preferences. To do this properly, stand next to the bike and adjust the saddle (seat) to be in line with your hip bone.

Next, adjust the distance between the saddle and the handlebars. “You’re looking for comfort in your back,” instructor John McKinnon says. The closer you move the saddle, the less bend and stretch there will be in your back. Just be sure to keep a straight back and slight bend in the elbows.

Slip your shoes (both SPD clips and athletic shoes are appropriate) into the pedal cages. Pull the adjustable straps tight, but avoid tucking the excess strap into the pedal. This allows for easy adjustments or release. Also, if you aren’t wearing cycling shoes, make sure your soles are on the harder side. This will give you more stability.

“If you want to work your core more, adjust the handlebars a little lower,” instructor Nicol Gecewich says. “For more support, raise them up.”

If you want to track your workout, get a heart rate monitor. The Technogym bikes do not sync with smart watches or bracelets. Note: Heart rate monitors must be Ant + compatible to sync with the technology properly.

PHRASES TO KNOW

CADENCE (RPM)

The number of full rotations your pedals make per minute. It’s a common measurement for intensity.

CLIMB

Indicates that you are going to use resistance to mimic the effort it takes to go uphill. If an instructor calls for this, get ready to sweat.

FLAT

Similar to a climb, this directive signals resistance level. Flats are less resistance, but they can be varying speeds (i.e., fast flat).

FIRST POSITION

Hand positioning on the handlebars: when the hands rest on the middle of the bars.

SECOND POSITION

Hands are placed on the bottom corners of the handlebars.

THIRD POSITION

Usually reserved for the standing position, holding the uppermost part of the handlebars.

RESISTANCE

All spin bikes have a knob that dictates how much effort it will take to move the pedals. To make it more difficult, add resistance; to make it easier, turn down the resistance.

SADDLE

This refers to the seat of a spin bike. Instructors will often use the phrases “in the saddle” to signal you should be sitting and “out of the saddle” to signal you should stand up and pedal.

SPRINT

Like in running, sprinting means to go as fast as you can. Often this will be on a low to moderate resistance so you can safely increase speed.

From the high-tech capital of Seoul to the tropical getaway of Jeju Island, the East Asian nation of South Korea packs an outsized amount of things to do in its small footprint.

SEOUL

Most visitors to South Korea will end up in its sprawling capital, Seoul, where a variety of neighborhoods host pictureperfect palaces, trendy shopping streets, quirky museums, adorable cafes, and scrumptious street food.

SOMETHING OLD, SOMETHING NEW

Perhaps the starkest contrast between the past and present is in the Gangnam District, known for its soaring skyscrapers and designer brands. Right across the street from the gigantic Starfield Coex Mall — it includes more than 300 stores, 100-plus dining options, an aquarium, a cinema, and a library that features towering stacks of books more than 40 feet high — sits the Bongeunsa Temple. This Korean Buddhist temple dates back to 794 and the grounds manage to carve out a slice of peaceful tranquility in one of the busiest areas of the city.

DRESS THE PART

Visit the beautiful Gyeongbokgung Palace, and you’re sure to see a steady parade of people strolling along in hanboks, traditional Korean clothing. (Those wearing a hanbok even get in for free!) For women, the full skirt is paired with a short jacket, while men get a longer coat with loose trousers. There are lots of shops for hanbok rental tucked in the alleys near the palace, which makes for an ideal photo shoot backdrop. Nearby, the Bukchon Hanok Village boasts a significant collection of hanok, traditional wooden houses that were found all over Korea during the Joseon dynasty. Walk through this hilly neighborhood and admire the architecture, drop into a teahouse, or visit a cultural center.

HIGHS AND LOWS

For a view from above, make the short climb to the top of Seongsan Ilchulbong on the eastern side of the island to enjoy panoramic views of the ocean, the mountainous landscape, and Udo Island. (Take a ferry there to explore this smaller island, and don’t miss the peanut ice cream, an Udo specialty.) To go low — like below-the-ground low — Manjanggul is a large lava tube with about a kilometer open to visitors. See the stalagmites, stalactites, and other cave formations, including the largest lava column in the world (formed when lava flows from the ceiling to the ground and hardens).

JEJU ISLAND

A volcanic island south of the mainland, Jeju has been called the Hawaii of Korea, but it has a vibe all its own. Enjoy the slower pace of life as you explore the natural wonders, local delicacies, and rich cultural heritage of this island, connected to Seoul by the world’s busiest flight route.

TAKE A PASS

If you’re not sure where to start with sightseeing, a Discover Seoul Pass can be a good value for getting into a wide array of attractions. Tour historic spots like the Changdeokgung Palace (which has helpful free tours in English a few times a day), ride the roller coasters at Lotte World Adventure, cruise the Han River at night with Eland Cruise, and have fun with the Instagram-friendly optical illusions at the Alive Museum — all included with the pass.

REAL-LIFE MERMAIDS

One of the most unique aspects of Jeju Island is its community of haenyeo, free-diving women who have plunged into the sea in search of abalone, conch, and shellfish for generations. A long legacy of being the family breadwinners and performing such a dangerous job with minimal equipment leads to a certain spirit that you can feel. See a haenyeo performance daily at Seongsan Ilchulbong Beach, or learn more about the history of the industry at the Jeju Haenyeo Museum.

RELAX TO THE MAX

South Korea is known for its beauty products, so it’s no surprise that they take skincare seriously. A fixture of everyday social life is the traditional Korean bathhouse, known as a jimjilbang. These range in amenities, but at a no-frills neighborhood spot, you can expect a gender-segregated, no-clothing-allowed space with hot and cold pools, steam rooms, and optional services like a vigorous body scrub (prepare to say goodbye to layers of skin you didn’t even know you had). You’ll get a set of pajama-style clothes to wear into the communal coed spaces, which include sauna rooms of various temperatures and materials, like salt, quartz, and jade, chosen for their healing properties.

IF YOU GO

Google Maps doesn’t work in South Korea, so download an app like Naver Map or KakaoMap to help navigate. In Seoul, you’ll likely want to get a T-money card to use the subways and buses — keep in mind that they can only be loaded with cash, not by credit card. On Jeju Island, renting a car is the easiest way to get around, but there are buses and footpaths for those with time to spare.

TASTE TEST

Given that it’s an island, Jeju is flush with seafood — particularly abalone, which the haenyeo work so hard to get. It’s often served in porridge, but you can also find it grilled and raw. On land, the beloved Jeju black pig produces a red-hued pork that’s soft and chewy. Many visit here just for a taste of this rich meat. And you can’t go far without seeing Jeju’s trademark hallabong, a citrus fruit that’s like a tangerine. The sweet and tangy juice is a must-try, and it’s also used to flavor chocolates, cookies, tea, and other goodies. Or grab some hallabongs just as they are from a local seller, like at the Seogwipo Olle Market in the southern part of the island.
