FEATURED ARTIST LINDA-JO DUFF Y Linda-Jo (LJ) Duffy is an artist who lives in Woodinville. She works on multiple pieces of art at a time, employing representation, abstraction and invention, while experimenting with a variety of conventional and unconventional mediums. Oil, acrylic, encaustic and mixed media all find a home in her work. Using ordinary, familiar objects with sometimes ethereal figures, she mingles together many layers of paint and hinted patterns, creating a timeworn painting that hints at the wonder of the common experience.

HOW TO HIT A BUNKER SHOT

Sand shots can be scary, but they don’t have to be with the right tips and drills.

ONE

To make sure your entry point into the sand is consistent, take your golf club and draw a line in the sand.

T WO

ONE

Aim to strike the sand two inches behind the ball.

T WO

Pick a spot in the sand behind the ball (rather than the ball itself) and focus on this point of impact during your swing.

THREE

A good-sized divot in the sand is about six inches in length (two inches before the ball and four inches after) and an inch or two deep. Any more sand than this and it becomes very difficult to get the ball out of the bunker without making a very aggressive swing.

Without a ball, practice hitting the line over and over.

THREE

Once you feel like you are hitting the line somewhat consistently, place a ball two inches ahead of the line. Now, with the ball there, continue to focus on hitting the line, not the ball, and your bunker play will improve.

The data is in, and the results are undeniable: exercise adds years to your life and can drastically improve the quality.

ACCORDING TO A 2018 REPORT from the National Institutes of Health, “A decline in skeletal muscle mass (atrophy) begins during the third or fourth decade of life, and approximately 10% of muscle can be lost by the age of 50 years.” In addition, “The rate of muscle loss then accelerates so that by the seventh and eighth decades of life 0.7%–0.8% of lower limb muscles is reduced per year in both men and women.” This muscular decline affects muscle strength, mobility, flexibility and people’s ability to navigate the world comfortably. But it can be even more serious than that. “Reductions in muscle mass and strength are associated with lower quality of life and higher mortality from all causes,” according to Medical News Today. Improvements in cardiovascular disease and Alzheimer’s are two of the most heavily affected conditions. But the good news is that improvement can happen for anyone at any age. And luckily, we have plenty of options geared specifically for this demographic. While active seniors can participate in dozens of classes and programs at the Club, below are our top recommendations.

BEGINNER LEVEL V E G E TA B L E TA G I N E R E C I P E

Ingredients: ¼ cup olive oil 2 medium onions, large dice 8 garlic cloves, chopped 2 large carrots, peeled and large dice 2 cups butternut squash, large dice 2 cups sweet potato, peeled and large dice 1 tablespoon salt 1 tablespoon harissa 1 teaspoon ground coriander 1 teaspoon cinnamon ½ teaspoon turmeric 2 cups canned diced tomatoes ½ cup dried apricots, chopped 4 cups vegetable stock 2 cups canned garbanzo beans 1 tablespoon lemon juice Parsley, mint or cilantro leaves Process: In a large pot, heat the olive oil and add the onions. Cook over medium heat for a few minutes. Add the garlic and sauté briefly. Add all the ingredients from the carrots to the turmeric. Toss and cook for 5 to 10 minutes over medium heat. Add the tomatoes, apricots and stock. Bring to a simmer and cover. Lower heat and cook for about 25 minutes, or until all vegetables are tender. Stir in the garbanzo beans and heat to warm. Add the lemon juice and check for salt and pepper seasoning. Serve over cous cous and garnish with the chopped herbs.

I N T E R M E D I AT E L E V E L CHICKEN POZOLE VERDE Ingredients:

9 cups chicken stock 2 pounds boneless and skinless chicken breast 1 pound tomatillos, husked 1 onion, quartered 2 poblanos, seeded 1 jalapeño, seeded 4 garlic cloves, smashed ½ cup chopped cilantro (stems are fine) 1 tablespoon Mexican oregano 3 (15-ounce) cans hominy, drained Salt

Garnish: Shredded cabbage Sliced radish Onion, small dice Avocado Lime

Process: In a large pot, bring the chicken stock to a boil. Add the chicken breast and simmer until cooked through, 15–20 minutes. While the chicken is cooking, puree the vegetables and spices. Note: To peel the tomatillos, place in warm water for a few seconds and the husk will separate from the bulb. Steal a little stock from the pot if it is too thick. Once the chicken is done, remove it from the stock and shred with two forks. Add the shredded chicken, tomatillo puree, and the drained hominy back into stock. Season with salt. Simmer for about 10 minutes. Season again as needed. Ladle into bowls and garnish. 26 | nov/dec 2023 reflections

A D VA N C E D L E V E L BEEF BOURGUIGNON Process:

Heat oven to 250 degrees Fahrenheit. Heat the oil in large Dutch oven and add the bacon. Cook over medium heat until the bacon starts to brown. Remove the bacon with a slotted spoon to a plate. Mix the flour, salt, and pepper. Toss the beef with the flour mixture, then gently tap off excess. In batches, sear the beef in a single layer, turning to brown on all sides. Add more oil as needed. Remove the seared cubes to the same plate as bacon. Once all the beef is seared, add the carrots, onions, and garlic to the pot. Stir the vegetables and try to loosen any brown bits from the bottom of the pan. Continue to cook for about 5 minutes or until the onions are starting to brown. Add the tomato paste and cook while stirring until the paste starts to brown. Remove from heat and add the brandy. Stir to evaporate the alcohol and loosen the food from the bottom of the Dutch oven. Add the wine and return to heat. Bring the wine to a boil. Add the bacon, beef, stock, and herbs to the pot and cover. Place in the oven for about 1½ hours, or until the meat is cooked and the vegetables are very tender. After about an hour of cooking time, heat a sauté pan with the butter. Add the mushrooms and season with salt. Cook until the mushrooms release their liquid and start to brown. Add the frozen onions, and continue cooking until they are thawed and warm. Remove once the bourguignon is finished in the oven, return to the stovetop, and gently stir in the mushroomand-onion mix. Check the seasoning level and allow to sit for 5 to 10 minutes. Serve over mashed potatoes or toast, or eat straight!

Come winter, a long outdoor roller-skating park called Numerica Skate Ribbon turns into the most unique ice-skating rink in Washington. Located on Riverfront Spokane, it’s “a 16-foot wide and 650-foot-long pathway with a 3,500-square-foot attached pond. Skaters can experience slight inclines and declines as they make their way around a path of ice surrounded by beautiful Northwest-inspired landscape,” according to the website. Those who opt out of skating, can cozy up around the large firepits.

ICE FISHING DIFFICULTY LEVEL: 2

Ice fishing is fairly accessible in Washington. And you don’t even need that may tools to get started. According to The Washington Department of Fish & Wildlife, the following gear list will work: • Freshwater or combination fishing license • Fishing rod (any old rod will do or ice fishing rods are very inexpensive) • Bucket (to carry gear and sit on) • Auger and scoop for drilling through ice. A chain saw will work as well. The best spots are usually found on the eastern side of the state, which tends to get colder, or in the North Cascades. Best Fishing in America lists the following eight spots as great fishing holes: Patterson Lake, Curlew Lake, Bonaparte Lake, Fish Lake, Roses Lake, Fourth of July Lake, Moses Lake, and Potholes Reservoir.

“BRAELYN BAKER IS QUITE LITERALLY ONE OF THE FASTEST WOMEN ON THE WEST COAST,” EXPLAINS BEN BENSON, HER TRACK-AND-FIELD COACH AT THE BEAR CREEK SCHOOL. Which is a goal Baker, now 17 years old, had very early on. “I started running track and field as soon as my school would allow me to, which was in sixth grade. But my passion started even before that. My [older] sister set the pace for my love for it when I’d see her on the track in high school,” Baker says. “Back then, I was just chasing people bigger and older than me.” Now, as a junior in high school, “she has become the most dominant sprinter in Washington State, having held the state lead across all classifications in the 100, 200, 300 hurdles and the 400, with multiple stadium and meet records to her name,” says Benson.

It’s hard to fully emphasize just how impressive that feat is. But what’s even more impressive is the humble way she talks about how she came to control the sport. “I’m just a goal-oriented person and have a passion for those goals,” Baker says. But it’s far from that simple.

Earlier this year, for example, she went to the 2023 USATF National Junior Olympic Track and Field Championships in Eugene, Oregon. She ran eight races over the course of five days. Preliminaries, semifinals, and finals for the 100- and 200-meter races. Then semifinals and finals for the 400 hurdles.

Even more grueling, she had to run the last of two of those races with just 20 minutes in between events. She finished as the champion in all three events. It wasn’t just about raw running talent. Baker planned and studied the races for months before.

“Sometimes it’s about running smarter not harder.” This is just one example of how measured and thoughtful her approach is. Which is why she is currently being scouted by multiple colleges, and why her season’s final stats are astounding.

“When you think about eight events in five days, one of the most important things is to look at the history of these races,” she says. “I knew I needed to make a plan that would allow me to get to the finals. A lot of people burn out in the earlier races. I knew I needed to save my energy.

“Braelyn is the embodiment of a once-in-a-generation talent. Her character, positivity and magnanimous personality shine a light beyond her performances and onto her as a person,” Benson says.

“I’m looking ahead, setting goals and by the grace of God and my family and coaches, I will have continued success,” Baker says. “I want to compete at the collegiate level, open up doors to different perspectives to training and eventually have a professional career,” Baker says.

FAVORITE RACE SONG: I have a bit of nostalgia for a song we listened to at Bear Creek: “Sweet Caroline.” We listened to it coming back from every meet, so it has a special place in my heart. FAVORITE ATHLETE: Sydney McLaughlin-Levrone. She runs the 400-meter hurdles, so I connect with her on the event we both run. But also I connect with her on her values and faith journey. I really respect everything she stands for. FAVORITE SUBJECT IN SCHOOL: I’m a Running Start student, which means I’m dual enrolled in high school and college classes. A hidden treasure in British Columbia is the network of old railways that were converted into recreational trails. One near Kelowna, called the Kettle Valley Rail, stretches from Hope to Castlegar. WHERE TO PLAY: BIG WHITE SKI RESORT About an hour west of Kelowna is Big White Ski Resort, featuring Canada’s largest ski-in ski-out resort village. Note: Half the fun is trying to find the right numbered gift each day, so scramble them up. Even adults will experience some nostalgia from this! DISPLAY! You’ve worked so hard on your little calendar, so put it somewhere visible so you can show it off and so you remember to have your giftee open each day. You can hang them on your tree, on the staircase railing, inside a big box, etc. Get creative and have fun with it!
