FEAST OF THE BLACK NAZARENE. Filipino Catholics exhibit unwavering dedication to the Black Nazarene, firmly believing in its extraordinary power to cure ailments and fulfill their prayers. The Traslacion, an annual event, entails devotees pulling a carriage carrying the sacred statue along the streets of Manila. In their ardent desire to touch or approach the image, participants frequently put themselves at risk of harm or even fatality.

Held in Iloilo City, Philippines every fourth Sunday of January, this festival honors the Santo Niño and commemorate the arrival of Malay settlers in Panay Island. The celebration is known for its vibrant street dancing, colorful costumes, and lively music that showcase the rich cultural heritage of the region. MORIONES FESTIVAL. During the Moriones Festival, participants dress up as Roman soldiers with colorful costumes and masks made of finely crafted materials such as wood and metal. Pangasinan Town Cooks Up Talong Delights

desserts wafted through the air, the colorful costumes of street dancers and the usual hospitality of this town delighted residents and visitors during the nine-day celebration.

Instead of serving Pinakbet sa Kawa, where a variety of vegetables is sautéed in fish sauce in a big flat pot, the local government highlighted the town’s main agricultural output during the Talong Cookfest.

With 25 entries from each barangay, the event was a true feast for the senses, and the extraordinary culinary talents were on full display. From the mouthwatering Talong Lasagna to the intriguing Talong Graham, the participants truly pushed the boundaries of flavor. Not to be missed were the innovative Pork Talong Embutido and the tantalizing Talong Sisig with Pork and Tofu.

The coveted first prize was given to Barangay Unzad’s Rice Cake Eggplant, with Barangay Lipay’s Fried Stuffed Eggplant Glazed with Yakiniku Sauce securing the second spot. Barangay Amanperez’s Royale Bibingkang Talong also made a mark and was recognized for its delectable taste.

Launched in 2006, the 16th celebration marks a significant milestone for the town, recognizing its remarkable achievement as the primary source of eggplant and other vegetables in Northern Luzon. Despite facing budget constraints this year, the Talong Festival, an integral part of Villasis’ nine-day town fiesta, continues to uphold its true purpose - to celebrate the abundant harvest of our diligent farmers in the past year.

‘Accidental Author’: Abi Balingit’s Book ‘Mayumu’ Highlights Filipino Sweets

Lemongrass Pandan Thumbprint Cookie FOOD TRIP

Filipina American Abi Balingit’s unlikely journey as a cookbook author began when she posted photos of Lao Gan Ma spicy chili crisp cupcakes that she made. Her now-literary agent reached out and asked if she was interested in writing a cookbook.

“I wasn’t thinking about writing a cookbook at all but obviously I was like ‘yeah, why not?’ she told the Asian Journal.

This was a few months into the pandemic, around September 2020, and about a month since she started her baking blog called The Dusky Kitchen out of her apartment in Brooklyn.

Two-and-a-half years later Balingit is a newly minted accidental author with her book ‘Mayumu: Filipino Desserts Remixed”. The book is a nice combination of remixed Filipino American dessert recipes and essays on her Filipino American experience.

As a pandemic project, her blog became an outlet to share her baking journey and the pasalubong treat boxes she sold to benefit some non-profit organizations that she supported.

“I used baking as a tool to cope. I’m really glad that baking was there and through the blog, it was also a way to connect with people outside of my apartment and the people I already knew,” she explained.

Balingit has been baking since she was 13. She humbly rated herself a seven when I asked her.

“I was self-taught. I had just learned on YouTube

“It’s interesting how it wasn’t always my intention to write a book, it wasn’t my intention to have this blow up the way that it did. But it’s more like, I’m letting the tide take me and that’s how I want the future to be so I will never say no to anything.”

and my mom showed me some things like Filipino recipes,” she said. “There’s so much more for me to still learn even after doing this book and baking is so precise and such a science that I definitely learned a lot while doing research for it.”

Born and raised in the Bay Area, Balingit feels that all her influences have contributed to developing her palate and her taste and those are what she offers in the book.

“Growing up in California and even living in New York, you’re exposed to so many different cultures here and you get to try so much different food. And so I think a lot of the inspiration that I got was from childhood nostalgia and meeting new people and trying other people’s food,” she said. “I do like how certain flavors can play together but still trying to like respect where things come from.”

She cited the sapin-sapin as an example.

“The hardest thing to explain about the book is like, I try really hard to you know, be intentional about where these flavors are coming from and to show sapin-sapin I know is like ube, jackfruit, and macapuno I think are the three flavors and that’s usually purple, orange and white, but you know there’s so much more you can do with those different layers.

For her, these layers are a good opening for other people who may not have tried Filipino desserts before. In her book, Balingit made it Strawberry Shortcake

With her book, Balingit says she wants to offer options to home bakers so they can use whatever is accessible or familiar to them.

Because she created her remixed and reimagined version of some traditional Filipino pastries and desserts, she is ready when she encounters comments with negative connotations such as “Adobo cookies, of course, she’d do that because she’s Fil-Am.”

“I think a lot of the savory combinations that I come up with, it’s like, you know, I don’t want you to taste, to bite into and be like ‘Ugh!” I would never put ratios that are too much, I don’t want you to feel like you’re eating it with rice but that it’s the flavor inspiration,” she said.

’BAHALA KA SA BUHAY MO’

Balingit learned a lot of life lessons from her parents Arnel and Angelita, which is why she chose Mayumu as the book’s title to honor her parents’ mother tongue –the word means sweet in Kapampangan.

She memorialized one of these life lessons in her book, which she dedicated to them. She wrote: ‘To my parents. You told me “Bahala ka sa buhay mo!” So I did.’

A rough translation would be “Do whatever you want with your life” and parents usually deliver this line to their wayward children.

“I think that’s mostly what my parents say when they’re mad at me. It’s always like what are you gonna do, what are you doing, are you going out, are you doing this? I always think about that a lot,” she explained. “They just want you to succeed and you know, it’s not

always positive but it’s always with good intentions.”

Balingit took that to heart and despite having a business degree, she set forth into the field of baking and it is a journey she’s enjoying to the hilt.

“There are things that your parents would want for you but I think that you’re only happiest when you can do the things that you personally want. And by that point, they’ll be happy for you,” she added. “Baking is a passion but I still do everything to stay stable until I am financially secure.”

She also fondly remembers her mom telling her ‘Do your best and God will do the rest’ while her dad would tell her to just be good to other people a major life lesson that she learned at such a young age through the folk story about the monkey and the turtle that her dad used to tell her as a kid.

Her parents inculcated in her to lead her life with kindness and do good for others and that’s what she has been doing with her baking. The joy of doing it is sharing the stuff that she has created with other people and one way to do that is through the book. Another way is that every time she holds a pop-up, she tries her best to donate proceeds to mutual aid organizations.

CALIFORNIA HOMECOMING

After a couple of events in New York earlier this month, Balingit is all set to fly to California to do a mini book tour to launch the book.

“In my heart and my feelings, I feel very proud and very excited,” she told us. “My parents have a book already and they’re reading it right now. But it’s really special to come home - I’m the only one here on the East Coast right now and it’s been six years of me living here.”

She knew from the get-go her primary market and she made sure her publishers knew about it.

“I was very upfront and I was like, obviously personally, I want Filipinos… to make the Filipino Americans as the most specific target but I hope that this is also to all bakers out there,” she said.

“I don’t think there’s any reason why anyone should turn an eye and be like, ‘Oh, I’m not Filipino and I have a Filipino cookbook’ because I think there’s genuine curiosity across every type of baker and every different level of baker. So I think this book appeals to hopefully everyone,” she added.

Balingit was on a vacation in Key West, Florida with her boyfriend as a celebration of their fifth anniversary. Her editor emailed her saying that she has the first copies of the book and it was sent to her by mail.

“I was so excited and I cried,” she said, recalling the moment. “A lot of people compare writing a book to literally having a baby because it’s such a long gestation period.”

“Holding the book for the first time was just surreal. I think it was like a pinch yourself kind of thing because I just didn’t think it’d ever be done, to be honest.”

THE SWEET TEST

Balingit admits that as a young kid, she loved everything sweet, from candies and cakes to pastries. As she grew up, her taste matured as well.

“Now my favorite thing to say is like that’s not too sweet, that’s so good and that’s a major compliment, you know. And I think a lot of the times like American desserts are traditionally a bit sweeter,” she shared.

This is the reason why among the 75 recipes included in her book, some have savory influences, like the aforementioned Adobo Chocolate Chip Cookies. Then there’s Miso Caramelized White Chocolate Champorado with Pork Floss, KareKare Cookies, Stamped Calamansi-Fish Sauce Shortbread, Spicy Bagoong Caramels, and Sampalok Tajin Snickerdoodle, among others.

It was a conscious effort on her part to create these recipes that are not too sweet so she found ways to cut the sweetness by adding salty and savory components to balance things out.

Asked about what’s in store for the future for her, Balingit said she is open to everything. Some people have asked her to open a café to showcase all her treats, and others have suggested a follow-up book.

“I still want to love baking, I think that’s what I want to continue to do,” she said. “But it’s also about finding that delicate balance. I think maybe the right time will come for me to do all these things.”

What is This Thing Called Love of Country?

With all its allusions to unrequited revolutions, bolos and tattered flags, or death by diaspora, we are still at a loss for words in finding its true meaning. What is love of country?

Love of country perhaps begins with our sense of place.

It reaches far beyond the coffeetable images of our town fiestas, the text messages of our digital journal, the textbook definitions of nationalism, and even way beyond the borders of this lonely planet called nostalgia.

It is easy to get carried away by national symbols like flags, anthems, monuments and shrines as literal expressions of love of country.

But is it red, white and true? Not to worry, fellow travelers, the muse is with us.

In the same romantic way that love goes beyond mere symbols of affection, so does love of country teach us to remember the meaning behind the symbols.

Through the celebration of fiestas, the understanding of our past, the return to our scenic roots, we express love of country, recreating, reliving, reaffirming memories of home.

It is love of country to keep looking back to our roots. Carlos Bulosan found his great longing for the country he left while searching for America in his heart. In America too, Bienvenido Lumbera, National Artist for Literature, found home by writing that subject called the “Filipino”.

As we rewrite the story of our nation, new heroes—those who represent our collective aspirations and achievements—are born.

Manny Pacquiao is a hero to all of us. The world stops every moment he brings down any one of his foes in the ring. He unifies us in a way that has never been done in history. But after each fight—symbolic of his own love of country—he never fails to come home.

Our desire to take root in the country, while in a foreign land, emerges from the knowledge and wisdom we have of our heartlands.

Returning home is a testimony to this desire to understand our selves as a people rooted in the land.

Love of country embodies all our ways of seeing, our ways of believing, our ways of locating ourselves in the world.

Our country’s story is in our verses, in the vitality of the tunes of our reed flutes and our kulintangs.

Our story is in the balikbayan coming home. And this return signals what Leonard Casper wrote in his introduction to Bienvenido Santos’ Scent of Apples: “a return of the Philippines to the man, whether or not a return to the Philippines is ever managed.”

To speak of love of country in the contemporary world is to recognize the patriotism embodied by our Filipino expatriates.

The heart is, after all, the cradle of memories, that wherever the Filipino expatriate finds himself or herself, the country remains nestled in the heart.

To love our country is to remember the communities, the families, the hometowns.

To love our country is to understand that through the symbols of our culture—the pasalubong, the kapeng barako, Original Pilipino Music, adobo—we express love for this community, and a longing for all things Filipino, all things that remind us of home.

Binalonan Town Fiesta Features Balikbayan Night

With the theme “Flourishing Through the Years: Celebration of Growth and Embracing the Vibrant Future of Binalonan”, this year’s fiesta celebration in Binalonan, Pangasinan treated residents and visitors to a wide range of activities and events.

The six-day town fiesta celebration at the Municipality of Binalonan exhibited unity at its best, with the Binalonians fully represented by the 24 barangays, the business community, public and private schools, and all the other sectors of the municipality.

Binalonan is a first-class municipality in the province of Pangasinan located in the eastern part of the province, about 51 kilometers from Lingayen and 190 kilometers from Manila. Binalonan is known for its rich history, culture, and natural beauty.

The municipality is home to the Sto. Nino Church, which was built in 1841. Binalonan is also known for its century-old acacia trees, now considered a natural heritage.

Religious processions, cultural parades,

and performances, Iron Chef Cookfest, the Miss Binalonan 2024 pageant, and a fun run, were among the highlights of this year’s much-awaited celebration.

The local government also hosted its annual Senior Citizens, OFW, and Balikbayan Night last February 16 at the Binalonan Amphitheater.

Municipal Councilor Arturo V. Romua welcomed the attending and opened the night with his opening remarks. Vice Mayor Bryan Louie R. Balangue welcomed guests especially balikbayans from all over the world in his welcome address.

Binalonan Mayor Ramond Ronald V. Guico IV shared an inspirational message by encouraging those who were in attendance to continue contributing to the community through their skills, experience, and wisdom. He concluded by emphasizing the humble town’s slogan “Binalonan ang Galing”, and asked everyone to do their fair share of giving back to their hometown.

Representative Ramon N. Guico Jr. (5th District of Pangasinan) was the guest of honor and speaker. In his speech, he encouraged senior citizens, overseas Filipino workers, and balikbayans to continue as role models and be good examples to the community.

Meanwhile, Pangasinan Governor Ramon V. Guico III also took the stage to offer his congratulations following the success of the celebration and reminded guests of the town’s strength and excellence. Governor Ramon V.

The night was filled with fun and laughter as guests joined the SC Dance Content of line dance and cha-cha and danced along to the musical offerings by the Original Esting Caranto Orchestra. The Health & Wellness Confex 2024 recently concluded at the SMX Center in Pasay City on a high note, with government and private sector representatives pledging to work together to promote the Philippines as a prime health and wellness tourist destination.

nothing to do. Everyone was wearing masks and PPE (personal protective equipment). I was the only one in shorts, and I had to sign a waiver because I insisted on staying with my mother at the ICU,” he narrated. “I couldn’t do much, so I did push-ups. After only three push-ups, my hands were shaking. But I forced myself to continue, and you know what? Today, I’m doing 139 push-ups every day.”

“I’ve also been running every week, and I spend one hour in the gym every day,” he added. “Health and wellness are all about attitude, and it should be a priority for everyone regardless of age,” he said.

Calixto-Rubiano echoed the importance of having the right mentality towards health and wellness. She also talked about the various health and wellness programs of the Pasay City government, including the empowering mothers and infants (EMI) project. “We are aligned with the First 1,000 Days program, a public health initiative that aims to provide comprehensive health and nutrition support during the first 1,000 days of a child’s life,” she said.

In addition, the city implements feeding programs, conducts free medical tests, and extends support for COVID-19 patients.

The first day’s list of speakers also included Wanda Teo, former DOT secretary, and Cynthia Lagdameo Carrion, Philippine Retirement Authority (PRA) general manager and CEO. Every speaker focused on their unique perspectives, but all of them emphasized the need to integrate health and wellness into the tourism industry.

El Nido

El Nido is one of the top destinations in the Philippines offering various activities. From enjoying the beauty of nature, exploring marine life, and bar hopping at night, you can find everything in El Nido.

TRANSPORTATION MODES EL NIDO

There are two modes of transportation used to get to El Nido. First, you can take a flight directly to Puerto Princesa airport. Then, you’ll have to travel for another six hours via van transportation which costs around 600 pesos per person. The second option is to fly via Airswift Airlines, which offers direct access to Lio Beach upon landing. This location is only 20 minutes away from El Nido town proper.

When you get to the town proper, you’ll have the option to explore by taking tricycle rides or renting a motorbike. Please note that a valid driver’s license is required to rent a motorbike.

DILUMACAD ISLAND

One of the most remarkable islands in El Nido is the Dilumacad Island, also known as the Helicopter Island because of its resemblance to a helicopter floating on the water from afar. It can be accessed via a 30-minute boat ride.

PH Eyes ‘Layover Tours’ for Transitioning Local, Foreign Tourists

The Philippine government is planning to introduce a “layover tour” program for local and foreign tourists transiting through the Ninoy Aquino International Airport (NAIA), Tourism Secretary Christina Frasco announced last February 7.

Frasco said the Department of Tourism (DOT) is in talks with relevant agencies, including airport authorities to push the launch as early as the second quarter of 2024.

“For the very first time, mayroon tayong, in the works na ngayon, na layover tours para sa ating mga layover or transit passengers (we have, in the works already, layover tours for our layover or transit passengers),” she said in an interview.

“Imagine, just having a few hours but being

able to get to know the Philippines through our Philippine Hop-on Hop-off (HOHO) bus tours,” she added.

The Tourism chief said government agencies are currently negotiating the technicalities of the program, including the process for tourists who will temporarily exit the airport gates for side Manila trips.

“We’re very hopeful na isa na naman ito sa mga innovations na ma-introduce natin para mabigyan ang Pilipinas ng added competitive edge to become Asia’s tourism powerhouse (that this will be another innovative program to give the Philippines an added competitive edge to become Asia’s tourism powerhouse),” she said.

The upcoming tourism program is expected to feature the newly launched HOHO Pasay-Paranaque, also known as the Entertainment Hub Route.

‘HOHO Pasay-Paranaque’

The DOT rolled out the HOHO Pasay-Paranaque Route on Thursday, which features 13 bus stops to highlight the various “entertainment hotspots” in the two cities.

This is the third of its kind following the HOHO Business and Cultural Hubs launch in Makati and Manila last year.

“While these cities boast historical landmarks and commercial districts, their emergence as entertainment hubs has been a defining feature that attracts locals and tourists alike,” the DOT said.

“Further, their fusion of contemporary entertainment complexes, and vibrant nightlife makes them integral pillars in shaping Manila’s entertainment landscape,” it added.

The 13 designated bus stops in Pasay and Paranaque are as follows:

- Ninoy Aquino International Airport (NAIA) Terminals 1, 2, and 3

- Newport World Resorts

- City of Dreams

- Ayala Malls Manila Bay

- Parqal

- Okada Manila

- Solaire Resort

- Luxe Duty Free

- MOA Main Stop

- SMX Convention Center

- MOA Seaside

Both local and foreign tourists in the country may already avail of the new HOHO tour through a mobile application developed for HOHO, where they can book their tour, either guided or do-it-yourself (DIY).

The HOHO app can be downloaded in both the App Store and Google Play Store.

At least three more HOHO hubs are slated to be launched in 2024, namely the Heart Hub (San Juan, Pasig, and Mandaluyong), the Lifestyle Hub (Taguig - The Bonifacio Global City), and the Mind Hub which focuses on popular educational institutions located in Quezon City.

The Philippines Hop-On-Hop-Off Travel by the Hubs operates through designated hubs, where tourists have the freedom to choose their preferred destination and duration of stay.
