Hello 2024, please be gentle to us, we’ve been through a lot the last couple of months. A lot more than we ever thought we were capable of dealing with, yet here we are, alive, ready to take on a new year, ready to implement new resolutions, and ready to take on the world literally and figuratively!

The bazaar team...

I don’t know about you guys, but for me personally, my resolutions have changed a lot along with my perspectives. I no long care about my first world problems the way I used to. It’s really quite irrelevant if I make it to the gym more often, or smoke less, or run more, or buy a new car, or drone, or any of the other crap that used to occupy my materialistic brain. My resolution for 2024 and onwards is to be kinder and gentler, to be more charitable with those less fortunate than me, to be more vocal about what’s going on in this confusing, sometimes ugly hypocritical world we live in, to appreciate every single minute of every single day, and to remind myself that we’re all so lucky to have food, water, electricity, doctors, medicine and so much more at our fingertips all the time, Alhamdulillah.

We’re easing into 2024 with this issue. We always find hope and perspective after meeting with the different people in Kuwait who are busy changing the world, whether it is by small personal action or large impactful ones. Sometimes, just seeing someone climb their own Everest is the best reminder that we can be and do better. This month, our biggest heroes come in tiny packages. We met up with the Promenade Ice Skating team who have been showing us that perseverance and hard work will always yield results. They just got back from Skate Bangkok 2023, and we spoke to them about competing, what it means to be part of a team and what they are working towards. We’ve learned that change doesn’t have to be loud. Sometimes, it comes in the form of comics that comment on social issues. The Social Culture Club interviewed Hashem Behbehani, to learn more about his art and using it as a social commentary tool. We may have joined the dark side this month after speaking to Hadeel Al Refaae who runs the Darkroom in VO Kuwait, the region’s largest photography darkroom. Analog photography and development make you rethink your relationship with the camera, the subject and the creative process. It parallels life, and reminds us that taking your time, learning a new skill and exploring new horizons can have surprising and happy results.

It’s still a new year so we’re still thinking about the changes we can make. The most important change we’re making this year is being more conscious with our buying habits. Yasmin Mostafa’s thoughtful feature can help you make the switch to local brands that you should be supporting. Our friends at xcite gave us five great tips that can help us do better this year. We love that they are simple and small, so we can grow with them throughout the year. This year reminded us once again to hold our loved one’s closer, and our favorite way to do that is around a table of good food. We recently dined at Babel to enjoy Lebanese hospitality and culinary traditions at its best. As we indulged in dish after dish that delighted us, we felt grateful to be where we were. We also discovered the new Sakura at the Holiday Inn & Suites Salmiya and were dazzled by how its legacy continues to impress diners seeking authentic Japanese fare. VO. THE DARKROOM Taking pictures, the old-school way By bazaar Staff

Today, taking a picture is effortless. Pick up your phone, point and click. We rarely have to worry about focus, composition, or running out of film. If you are wiser (i.e. old enough to remember analog cameras) then you will remember being conscious of how many shots you have left. Yet, there is raw beauty in analog photos. You need to be thoughtful while composing them because you can’t crop them later. You need to make sure that you are balancing exposure and light while shooting. It is an intentional process that deserves preservation. And now you can learn how to do it all at VO. The Darkroom. We met up with Hadeel Al Refaae who runs the Darkroom in VO Kuwait to learn more.

Hadeel initially joined the VO team as a graphic designer, contributing her skills and expertise. Within two months, she boldly approached management with an innovative proposal—a darkroom initiative for VO. Embracing this visionary concept, VO took proactive steps to transform her idea into reality. With the unwavering support from the chairman, Shaikha Ohoud Salem AlAli AlSabah, this ambitious idea gained momentum. Shaikha Ohoud believed wholeheartedly in Hadeel’s capabilities and championed her vision for the darkroom. Through this collective effort, VO successfully established one of the largest darkrooms in the Middle East, This embodies VO’s proactive dedication to youth development. What is your daily role at the Darkroom? I completely manage and run the darkroom, from making the social media posts to mixing chemicals to meeting with people for collaborations to teaching the workshops and I absolutely love it! Why analog photography, and why do you think it is special? Analog Photography is such a wonderful process and each stage is a different process. This process takes you to different places. First, the location, where you capture all of your images. After you reel in your film roll, then you head to the darkroom to develop your film. Then you wait for your negatives to dry, after which you can start printing. What makes it so special is the places it takes you and people you meet from across the globe who are still practicing the same Art form and are trying to figure out the same issues we come across in the darkroom. It’s really not a matter of whether people should or shouldn’t pursue Analog photography or not. Analog Photography is an Art form and just like any other Art I’ll always urge everyone to explore Art. Who is analog photography for? Honestly, for anyone. There’s a wonderful initiative by Serbet Salih that’s called “Sirkhane Darkroom” and it is a Mobile Analog Photography project that is built for children who are refugees. This just proves that you can build a darkroom anywhere and create a community. Do you think there’s a place for both digital and analog? It really depends on each person and what they enjoy more. I’m a graphic designer and for me personally, it differs from project to project. There’s a time for digital and there’s a time for analog. I’ve worked as a graphic designer in competitions, and we have to do social media posts that have to be uploaded 20 minutes from when I receive them. But then I’ll take out my Analog camera for when I want to walk around and just enjoy.


What are the Darkroom facilities like? The Darkroom is quite spacious, it measures 8 by 5 meters and can accommodate 8-10 people. But one time I hosted a birthday workshop and I had 14 people in the darkroom. What workshops are available at The Darkroom? I offer different workshops, so there’s the 101 Darkroom workshop where you learn how to develop and print. Then there’s the Photogram workshop where you don’t need a camera or a negative for this, it’s a way to explore printing using objects. This is also offered for children. There’s also the Pinhole camera workshop, where we make a camera out of a shoebox, and you take a picture with it. Many people come in a little bit intimidated, but it’s really ok, even if you come to VO. The Darkroom and ruin your first print, who cares? If anything, this whole process is a trial and error, and you can’t expect to be incredible at something from the first try. Personally, when I travel I still go to darkrooms, and I’m constantly trying to refine my skills so that when I’m back in Kuwait I can help people with their craft. But, when people come for a workshop, they always come back for another workshop, or they’ll join us at our film screening or a Photo Walk. What advice would you give to people who are interested in analog photography? My advice for people who would like to start exploring Analog photography see if your parents have an old camera, change the batteries, and buy a film roll. Take your camera with you and start taking photos of everything you see. Develop it and then see what you like about the image and see what you don’t like. Don’t repeat what you don’t like, and make sure you keep an open mind to the entire process. Are there any plans or future expansions in the making for the Darkroom? As for the physical space, I believe it’s the perfect size for a community darkroom. I do have plans for collaborations that are both local and global. The space and the community have so much potential, and this is only the start. Whose support has been invaluable during this journey? I’m very thankful that I got the opportunity to build such a wonderful place that brings in together people from different realms. Thank you to all the interns who have volunteered with their time and energy, but an exceptional mention has to go to Aziz Maksheed. He was my right arm during this time. WANT A 4-DAY WORKWEEK? Invest in AI By Vishnu S. Pendyala

Every semester, I ask my students to look at the U.S. Bureau of Labor Statistics Occupational Classification and think of which jobs can be automated using AI. This serves to inspire them to come up with their own startup venures. Quite often, customer service representatives and data-entry keyers come up in the list.

Indeed, generative AI has plenty of potential to automate many aspects of customer service. And other areas of AI, such as computer vision combined with natural language processing, can take over data entry substantially. AI is changing the nature of work—but that isn’t always bad. Recently, JPMorgan’s CEO predicted a 3.5-day workweek in the future, owing to AI. The more we get machines to work for us, the more time we get back for ourselves. Machine learning, which is a branch of AI and increasingly being used interchangeably with it, is about teaching machines to learn to behave like human beings—and even outperform them in certain tasks. I have been teaching the subject to graduate and undergraduate students at San Jose State University for the past five years, using my flipped classroom videos, and motivating them in a number of ways, such as asking them to interview subject matter experts from the industry; ask questions that I use in “Ask Me Anything,” a series with renowned researchers; and implement challenging course projects. The students explore the math behind the methods and design interesting machine learning applications. 26

Most of us already use machine learning in our day-to-day lives, knowingly or unknowingly. Whenever we converse with Siri or Alexa, unlock our mobile phones using facial recognition or laptops using fingerprints, take recommendations from Netflix, or search the internet, we are using machine learning. In several recent and upcoming inventions such as the self-driving car or generative-AI-based ChatGPT, machine learning has the real potential to replace human beings. States like California have already passed multiple bills limiting the use of AI. I agree that artificial intelligence poses risks, but the opportunities are too compelling to be ignored. With automation, economies of scale quickly add up, resulting in accelerated progress. Automation already helps with blue-collar jobs such as the bank teller or dishwasher. Artificial intelligence can help in white-collar jobs with databased decision-making made possible by machinelearning-based data analytics. In that sense, AI is capable of substituting at least partly for our very expensive human intuition. Jeetu Patel, chief product officer at Box, said recently that AI will impact half a billion white-collar

jobs. Given that machines have some amazing qualities, like tirelessness and lack of other human fallibilities, the prospects of AI are huge. Human intelligence has millions of years of evolution behind it. Many paradigms have not yet been considered in the 50 or 60 years that artificial intelligence has been in existence. It can easily be said that we have hardly scraped the full potential of AI. However, all the above-discussed advantages of AI will not have the desired effect if they work only to fill the coffers of the C-suite and a few others at higher echelons. If the corporate culture does not practice giving back to its employees, their families, their alma maters, and the society at large, all the accelerated efforts will simply be siphoned off into an endless well of corporate greed. Governments and enterprises should strike a delicate balance between the two.

He was first spotted within the local social scene in and around Kuwait; always 28

first in line to donate his time and talent to many local charitable causes. Philip Kamble, a selftaught artist, is constantly searching for and experimenting with new techniques to incorporate into his watercolor expertise and calligraphy. An expat, who was raised in Kuwait, Philip describes his work as spontaneous, visibly exciting, and greatly influenced by his surroundings, his travels and his love for music. He enjoys exploring multiple media, such as watercolors, pastels, inks, and oils. Philip regards himself as an avid, plein air painter. He is a true community inspired artist who has been inspired by the following quote from Erica Cook: “I’m not interested in competing with anyone. I hope we all make it.” When asked about his thoughts on art inspiring a community, he stated: “I would like to see us all move forward together, hand in hand, be it science, art, literature or sports. Making a brighter and better future for generations to come, and create a valuable legacy in our time.” Through this initiative ASAR not only strives to grow their own collection of original visual communication pieces, they strive to create a safe place for talented individuals to be seen, individuals who will add to and uplift the community, the economy and ultimately the regional business world. The ASAR team has already started the search for the 2025 artist for. QUIET LUXURY ISN’T JUST A TREND It’s a clever business model By Elizabeth Segran

In 2023, the world decided that flashy logos were gauche. Instead, consumers gravitated toward products that were high in quality and well made, but that were much more subtle in their marketing and visuals. There were many reasons this concept—which we now call “quiet luxury”—became a big theme this year. It partly had to do with the economy. Post pandemic, as stimulus checks stopped coming and people spent more disposable income on entertainment, there was less money to spend on expensive, trendy products. People wanted to invest in classic, high quality goods that would last a long time. This ideas was reinforced by the pop-culture TV sensation Succession, in which the wealthiest New Yorkers eschew loud labels for elegant, but subdued clothes and accessories. As with everything in consumer culture, however, quiet luxury may go out of style, as the pendulum of fashion swings. After months of muted colors and logo-free products, brands and designers are likely to change course, as a way to create a sense of newness. But at Fast Company‘s Innovation Festival, Shilpa Shah, cofounder of the minimalist fashion label Cuyana, and John Meadow, founder of the Scarpetta restaurant group LVD Hospitality, argued that companies should resist the urge to go back to loud luxury. As founders who specialize in delivering high-quality, understated products and experiences, they both believe that quiet luxury is better for business. Here’s why:

Instagrammable wall, Meadow is focused, instead, on creating moments of connection over a dinner. He’s interested in how comfortable the seats are and creating cosy nooks for couples, and tables that will create intimacy among larger groups. “You can’t buy these moments of connection and intimacy,” says Meadow. “We spend so much time trying to create them, because we know this is what will make the dinner memorable.”

Quiet Luxury is Customer Centric At the heart of quiet luxury is a focus on the needs of the customer, says Shah. Flashy logos transform customers into walking billboards for a brand, but quiet luxury brands tend to be focused on the needs of the customers. “The ultimate luxury is having a product or experience that you feel like tailor made for you,” says Shah. At Cuyana, for instance, Shah’s design team spends a lot of time researching their customers’ lifestyles and points of view. They discovered that the busy, professional women who buy their products are looking for problem-solving, timesaving solutions. This led them to develop a systems approach to products. Quiet Luxury Is Sustainable The problem with trends is that they are designed to become obsolete, which means customers will toss them after a short time. Quiet luxury, on the other hand, is designed to be relevant for as long as possible. Today’s customers are profoundly aware of the climate crisis and the need to shop sustainably. Shah says that many of Cuyana’s customers are drawn to the brand because they want to shop consciously and responsibly; the brand coined the tagline is “fewer, better things.” So, the brand remains focused on creating products that are classic and the customer will want to hold on to for years. “We’re very thoughtful about our color palette, and silhouettes,” says Shah. “We’re very deliberate about not playing into trends. And we’re focused on the quality of the materials, so that they are durable enough to last generations.” At Scarpetta, Meadow says that there are also trends in the world of fine dining. But he isn’t interested in playing into whatever cuisine or flavors happens to be in vogue. Instead, he focuses

on creating simple, beloved dishes, using farm-totable ingredients. One of his favorite dishes is a simple pasta. “Sourcing is very important to us,” he says. “It’s one way we can have an impact on the environment.” Quiet Luxury Keeps Customers Coming Back On the surface, it might seem like a quiet luxury approach isn’t good for business. After all, creating classic, durable products and low-key experiences doesn’t seem like a recipe for getting customers to come back for more. But the opposite seems to be true. Many of the most notable quiet luxury brands—like Loro Piana, Bottega Veneta, and Hermès—have thrived when their trendier counterparts have come and gone. Meadow believes this is because customers get excited about trends, but they repeatedly come back to experiences that are consistently high in quality and tailored to their needs. “People love going back to that restaurant where the staff know your name and remember your favorite wine,” says Meadow. “They don’t go back to the place with the Instagrammable dessert.” Shah says the same is true for Cuyana. While their products are designed to last a long time, the brand sells a wide range of goods. And when customers have a gap in their wardrobe for a new blazer or their wallet has worn out, they go to Cuyana because they know they will consistently get something that is well-designed and longlasting. “Contrary to popular belief, quiet luxury is good business,” she says. SOCIAL COMMENTARY COMICS BY HASHEM BEHBEHANI Changing the way we think, one illustration at a time by Social Culture Club

Comics are an interesting and exciting medium. They’re an expressive combination of text and visuals that can convey a wide range of ideas and tell diverse stories in a tiny space. Historically, people dismissed their importance as a tool for discourse. Yet, in today’s fast-paced world, they are the perfect way to make a poignant statement in a couple of pictures. Notable Kuwaiti comic artist, Hashem Behbehani, is doing just that on Instagram. Hashem’s unique work, which merges art with social commentary, has garnered substantial attention, exemplified by up to 6,000 likes per post from his 10,000 followers on Instagram. This high engagement ratio is a testament to the impact and relevance of his content. We met up with him to learn more about his journey.

Can you share a bit about your background, and what initially inspired you to become a comic artist? My path to becoming a comic artist was in no way a straight line. In school, I enjoyed drawing objects, focusing on their highlights and shadows. However, I felt limited in what I could do with the medium. For most of my university life in the US, I stopped drawing completely, dedicating time to my other passion: information systems. Upon returning to Kuwait in 2012, reverse culture shock urged me to share my experiences. Drawing comics came naturally, but I stopped shortly after. It wasn’t until covid lockdown that I started again. Your character is based on yourself. What aspects of your personality or life experiences have you incorporated into this character? My comics stem from my feelings, experiences,

and observations. They expose elements of my personality which I believe to be sarcastic, analytical, and realistic. I like to think of my comics as a visual journal that I share with the world. What motivates you to address social and political issues in Kuwait through your comics? My focus on Kuwait started by chance after posting a comic about the paddle craze in 2022. The reactions I received revealed a significant need for art commentary on local political and social issues. This realization was exciting as I had so much more to share. What kind of impact do you believe your comics have on your audience, especially in terms of awareness and discussion about the issues you address? I never thought that my interests in history and

politics would be beneficial. I gradually realized I could incorporate them into my comics, thereby informing people who are generally uninterested in politics or do not understand certain parts of it. Many people feel heard as I try to speak to the frustrations of a significant portion of the population. Could you please walk us through your creative process? How do you go from an idea to a fully realized comic strip? My ideas come from observing everyday life. I jot down my thoughts in my notes, sketching them if possible. Every idea must have a message that speaks to myself and others. Gradually I move over to my iPad, adding more detail with every draft I make until I reach a satisfying result. The process usually takes no less than a week.


What are some of the challenges you face when creating comics that address sensitive or controversial topics? My main challenge arises when I post to multiple social media apps and accounts. Audiences vary quite drastically. Some might see my comics as a bit too pessimistic or aggressive. Sometimes reposts might be taken out of context. Those who follow my work know that my criticism comes from a good place. How does your audience respond to your work? Most of the responses I receive are positive and encouraging. It is clear to me that demonstrating a point comically regularly comes across as stronger yet less aggressive than plain text, resulting in discussions that are beneficial for everyone involved. In what ways does Kuwaiti culture influence your storytelling and artistic style? The freedom of speech available to us in Kuwait has a big influence on my storytelling ability, as it

gives me ample room to criticize and joke about serious topics that affect everyone in the country. No country is perfect, and I appreciate our system’s acceptance to exposing its own flaws. Do you have any personal favorite comics that you’ve created? If so, which ones and why? I have multiple favorites so far. One of them is a post I made for the elections in 2023 which I titled “Honest Campaigns”. It showcased a spectrum of false promises we typically see from parliamentary candidates. Another favorite is a post I made about the Palestinian struggle, given its impact on a wide range of viewers. Are there any new themes or projects you are currently working on or plan to explore in your future comics? I constantly have a list of topics and themes I want to approach, but I never plan too far ahead, as I like to react to life events as they unfold. This helps me maintain the feel of a visual journal.

As someone who has successfully pursued their passion uniquely, what advice would you give to individuals looking to follow their passions? One advice I always repeat is to never think it’s too late. We often give up on our dreams, thinking the train has passed, but people would be surprised how much progress can be made with the time they have left. Lost time can be made up, and second chances can exist. Delays do not always mean a smaller chance of success. Do you have any final words or messages for your readers and fans? I never expected that I would resume making art, or for it to be appreciated on the level it is today. I appreciate my fans, and anyone who reacts to my work, whether negatively or positively. THE IMMIGRATION AGENT DROPS BY THE COFFEE SHOP By Craig Loomis

One taxi comes to a screeching halt, followed by another right behind it, and both drivers, as if practiced, throw open their doors, leap out and begin yelling, pointing at one another. Almost immediately, there is honking and a flashing of lights as other cars stop to watch and listen. Both drivers are bald and loud, gesturing like they mean it. Meanwhile, he takes a sip of coffee and squints to get a better look. Finally, as the taller, balder one reaches to take off his sandal only to suddenly change his mind, the honking becomes intolerable and with one final terrible bout of pointing, they return to their taxis, re-slamming their doors and in a spray of gravel and dust, speed away. He nods at this and gives his coffee yet another healthy sip. That’s when a man dressed all in black walks in, stops in front of his table, thinks about sitting down, even putting his hand on the unused chair, but then doesn’t, content to stand. When the man in black asks him a question, he is secretly irritated that his coffee shop musing has been interrupted. Now, once his asking is done, the man in black decides to sit. “What about him?” The man in black’s tone becomes deeper, darker. “Ok, ok, if you must know. No reason to be rude about it. Well, he drives a green car, that’s the first thing. Not sure what make, what kind, what flavor, just your basic green car, and more times than not it needs a good washing. That’s it. What else is there to know—man with green car?” Mr. man-in-black slowly takes off his sunglasses, rubbing his eyes, the bridge of his nose, and then quickly slips them back on. His tone is louder now, and the woman behind the counter, who could be the owner, or maybe not, says something that neither one of them can hear. The man in black asks more. “What’s that? There’s got to be more? Fine, no need to yell.” This is when someone else enters the coffee shop and somewhere a bell rings, and they both turn to see. The new coffee shop person, some gas company worker in dirty blue overalls, done with his night shift, takes a seat nearby. Mr. manin-black doesn’t like this. “Ok, wait. How about this: when he gets out of his green car, he has to swing both legs at the same time, something like a swiveling, which is not easy to do, never mind the green car. So, that make two things—dirty green car with two swiveling legs. What else do you need to know?” Three people look unhappy: the woman behind the counter who is slowly making her way to the gas worker’s table, the gas worker himself, who hasn’t stopped frowning up at the ceiling and Mr. man-in-black, although his sunglasses make it hard to say for sure. “Alright, alright, have it your way. He’s fat. I didn’t want to say it but you keep insisting. Obese is the word of choice these days. So, there you have it: fat man who has to swivel to exit his dirty green car. Happy?” 34

As he leans closer, hovering over his coffee cup, something like a growl comes from Mr. man-in-black. “Have me arrested? For what, pray tell?” More leaning, growling. “A wife? Girlfriend? I have no idea. You should ask him. In fact, why not ask him all these questions you’re asking me?” This time when he removes his sunglasses, the gas worker cannot help but aim a frown their direction. When she comes out from behind the counter, everybody can see that she is wearing a green apron, and for some reason that helps, a little. “No sir, I am not being rude, nor disrespectful. I’ve told you all I know about the man. Is that it, are we done?” Mr. man-in-black steeples his fingers on the tabletop, whispering. “No, no, as neighbors go he’s as good as the next person. I rarely see the guy except when he is getting in and out of his green car. Are we done?” Mr. man-in-black makes a motion towards the door. “Fine, til’ next time. By the way, who did you say you were? You have a badge or something to show me? I mean, isn’t that the first thing you’re supposed to do, flash a badge, an ID?” Upon hearing the word ‘badge’ the gas worker’s frown changes to worry, sending a spoon clattering on the floor. He tries once, twice, to reach it, to pick it up, but both times it is just beyond his reach. The gas worker stops to consider: to get up out of his chair and take one giant step, bend down and pick it up, or not. His considering over, he decides on not. And it isn’t long before she comes from behind the counter to pick up the spoon for him. And now Mr. man-in-black says something terse, tough, before reaching into his coat pocket, and when he does the counter woman and the gas worker cannot help but turn to get a good look, more frowning, leaning. “No, I am not being smart. It’s just that I have seen my fair share of police TV shows to know what’s what.” From his coat pocket he pulls out what looks to be a card, a photo, or both. “Ok, I see. Immigration? Mr. . . .Mr. Abdullah, is it?” The man-in-black rubs his hands together. “Oh, oh, sorry, Agent Abdullah? Right, sure. Agent. I get it. So, my neighbor is on some kind of no-fly list or something?” Rubbing his hands together harder, longer, and all the while the gas worker who has just finished 36

his night shift shuffles his feet, this boots. “No, just guessing. How would I know. What’s that? Is he away from home often? Mr. Abdullah, Sorry, Agent Abdullah, I have no idea and now if you’ll excuse me.” Once Agent Abdullah leaves his card on the tabletop and walks away, past the gas worker and out the door, he is alone again. She is safely back behind her counter, and the gas worker has stopped shuffling his boots long enough to talk

into his cellphone. Meanwhile, he is thinking about his neighbor when a what can only be described as a fleet of taxis, one right after the other, the other, the other, cruise by, followed by much honking. IT’S NOT YOU, IT’S THE PLASTIC Scientists explain the design flaw that keeps plastic from being recyclable By The Conversation

Hundreds of millions of tons of single-use plastic ends up in landfills every year, and even the small percentage of plastic that gets recycled can’t last forever. But our group of materials scientists has developed a new method for creating and deconstructing polymers that could lead to more easily recycled plastics—ones that don’t require you to carefully sort out all your recycling on trash day. In the century since their conception, people have come to understand the enormous impacts— beneficial as well as detrimental—plastics have on human lives and the environment. As a group of polymer scientists dedicated to inventing sustainable solutions for real-world problems, we set out to tackle this issue by rethinking the way polymers are designed and making plastics with recyclability built right in. Why use plastics, anyway? Everyday items including milk jugs, grocery bags, takeout containers and even ropes are made from a class of polymers called polyolefins. Polyolefins make up around half of the plastics produced and disposed of every year. These polymers are used in plastics commonly labeled as HDPE, LLDPE or PP, or by their recycling codes #2, #4 and #5, respectively. These plastics are incredibly durable because the chemical bonds that make them up are extremely stable. But in a world set up for single-use consumption, this is no longer a design feature but rather a design flaw. Imagine if half of the plastics used today were recyclable by twice as many processes as they are now. While that wouldn’t get the recycling rate to 100%, a jump from single digits—currently around 9%—to double digits would make a big dent in the plastics produced, the plastics accumulated in the environment and their capacity for recycling and reuse. Recycling methods we already have Even the plastics that make it to a recycling facility can’t be reused in exactly the same way they were used before—the recycling process degrades the material, so it loses utility and value. Instead of making a plastic cup that is downgraded each time it gets recycled, manufacturers could potentially make plastics once, collect them and reuse them on and on. Conventional recycling requires careful sorting of all the collected materials, which can be hard with so many different plastics. Here in the U.S., collection happens mainly through single stream recycling—everything from metal cans, glass bottles, cardboard boxes and plastic cups end up in the same bin. Separating paper from metal doesn’t require complex technology, but sorting a polypropylene container from a polyethylene milk jug is hard to do without the occasional mistake. 42

When two different plastics are mixed together during recycling, their useful properties are hugely reduced – to the point of making them useless. But say you can recycle one of these plastics by a different method, so it doesn’t end up contaminating the recycling stream. When we mixed samples of polypropylene with a polymer we made, we were still able to depolymerize—or break down the material—and regain our building blocks without chemically affecting the polypropylene. This indicated that a contaminated waste stream could still recover its value, and the material in it could go on to be recycled, either mechanically or chemically. Plastics we need—but more recyclable In a study published in October 2023, our team developed a series of polymers with only two simple building blocks—one soft polymer and one hard polymer – that mimicked polyolefins but could also be chemically recycled. Connecting two different polymers together multiple times until they form a single, long molecule creates what’s called a multiblock polymer. Just by adjusting how much of each polymer type goes into the multiblock polymer, our team created a wide range of materials with properties that spanned across polyolefin types. But creating these multiblock polymers is easier said than done. To link these hard and soft polymers, we adapted a technique that had previously been used only on very small molecules. This method is improved relative to traditional methods of making polymers in a step-by-step fashion, developed in the 1920s, where the reactive groups on the end

of the molecules need to be exactly matched. In our method, the reactive groups are now the same as each other, meaning we didn’t have to worry about pairing the ends of each building block to make polymers that can compete with the polyolefins we already use. Using the same strategy, applied in reverse by adding hydrogen, we could disconnect the polymers back into their building blocks and easily separate them to use again. With an almost twofold increase in annual plastic use projected through 2050, the complexity and quantity of plastic recycling will only increase. It’s an important consideration when designing new materials and products. Using just two building blocks to make plastics that have a huge variety of properties can go a long way toward reducing and streamlining the number of different plastics used to make the products we need. Instead of needing one plastic to make something pliable, another for something stiff, and a third, fourth and fifth for properties in between, we could control the behavior of plastics by just changing how much of each building block is there. Although we’re still in the process of answering some big questions about these polymers, we believe this work is a step in the right direction toward more sustainable plastics. We were able to create materials that mimic the properties of plastics the world relies on, and our sights are now set on creating plastic compositions that you couldn’t with existing methods.

The Promenade Ice Skating Team once again proved their mettle at Skate Bangkok 2023, held from December 7th to 10th. Led by Head Coach Nurul Ayinie Sulaeman and Coach Ronald Maboloc, this skating ensemble showcased exemplary teamwork, skill, and camaraderie throughout the competition.

The team comprised a diverse group of talented skaters, each bringing their unique strengths and perspectives to the ice. Participants as young as seven years old displayed remarkable dedication and sportsmanship in their performances, contributing to the team’s collective success. The team’s remarkable performance secured them the 11th place among 26 competing teams from eleven countries. Throughout the event, the team participated in fifty-six events, culminating in an impressive collection of sixteen gold, twelve silver, fourteen bronze, ten fourth-places, and four fifth-placed medals. The Promenade Ice team prides itself on the strong bond and unity within the group. It is in this regard that all the team members and coaches shared how they felt about the team and their performance in the competition. Reema Alqenaie (9) expressed appreciation for the team’s support, emphasizing their positive response even in the face of challenges. Jana Saleh Aljouhar (11) cherished the heartwarming gestures of her teammates, highlighting the encouragement received after her routines.

AGING WELL The lighter side of aging By Lori Borgman

Someone once said, “With age comes wisdom.” Then someone else immediately said, “Yeah, but sometimes age comes alone.” My experience is that with age comes usefulness.

A granddaughter, eager to pass me in height, frequently “measures up” with me by standing noseto-nose to see who is the tallest. She “measured up” the other day and announced, “I now come to the second line on Grandma’s forehead!” I knew there was a reason I don’t get Botox. It’s good to feel needed. One day, helping first-grade English-as-secondlanguage students with reading, I could see that the little Burmese boy following my finger as I pointed to words was intently studying the back of my hand. I lifted my hand with aging skin, pointed to it and slowly said, “Wrinkles. Wrinkles.” He repeated after me, “Wrinkles.” He grinned from ear to ear and his eyes lit up learning a new word. It is wonderful to be helpful, although this wasn’t exactly what I had in mind. I’ve always had curly hair and it has become even curlier with age. Recently, a granddaughter 48

asked, “Grandma, if you let your hair grow really, really long, would it hang down straight or just get bigger and bigger?” The latter, darlin’. I’ll cite Dolly Parton on this one: “Big hair puts you closer to God.” How wonderful to be consulted on something like the potential trajectory of curly hair. I think. With age also comes the distinct advantage of not only having read a lot of history, but of having lived a lot of history. No, I did not personally know George Washington, Abe Lincoln, Teddy Roosevelt or help build the Panama Canal, but I can tell you about telephones that hung on kitchen walls, milkmen who delivered milk to your front door, ketchup that came in glass bottles, record players, June, July and August heat without air conditioning and a summer job I had in college doing data entry that fed into a computer so enormous it took up an entire room.

Due to age, I am frequently the go-to person for an assist on Jumble word puzzles. Far be it from me to ruin the cloud of adulation by explaining I excel at Jumble because I have made so many typos over the years that every misspelled word looks vaguely familiar. By far, the greatest laurel of “maturing” is having rushed around like a madwoman to get a meal on the table for a large group, being seated at the table and hearing a gentle voice say, “You’re a good cook, Grandma.” Then another and another and another says, “You’re a good cook, Grandma.” It may be that I am a good cook, but it also may be that no one at the table wants to be outdone. If competition is the means by which I am showered with praise, then so be it. I accept.

Maybe you’ve taken up a dance class with her, watched her in a TV show or a music video, picked up one of her modeling ads, or bumped into her somewhere along your life in Kuwait. If not, this is a great opportunity to discover her journey. Arriving in Kuwait without a single contact, Ashley Ostendorf is a huge testament to her success living abroad away from family in the States, earning a wide network of friends, work colleagues, and a huge support network she now calls her second family and home by dedicating herself to her passion of teaching…just sitting here in a quiet coffee place doing this interview with her, five incidences of existing or ex-colleagues /clients came up to us to say hello to Ashley. Her tenacious, dynamic versatility has as helped her navigate the perplexities of the teaching and arts world in Kuwait. Ashley’s multi-talented and successful nature started from an early age. Born the eldest, into a family of five she grew up in northern Virginia in the U.S., just 30 minutes out of Washington D.C., which influenced her family dynamics and achievements. Ashley’s mother worked at NASA for seven years; her grandfather, Dr. John Cox left behind a huge legacy for her mother, as one of the original flight directors for the Space Shuttle Program. Ashley graduated with a master’s degree in Education. Quipped with a sense of curiosity about the other side of the world and a thirst for seeking adventure, the Middle East was an attractive choice to satisfy her love, from an early age, to see a different part of the world. It was when one of her revered University teachers, Professor Almarode at James Madison University, taught her the hallmarks and essence of teaching and education. He saw something in her that “could change the world”, he said. Through her well-equipped degree in education, her great talent with people, and her charisma, he inspired her to seek career options abroad, in the Middle East, in countries like the Kingdom of Saudi Arabia, Morocco, Kuwait, and in Europe. Almost every job she applied for replied with “When can you start 50


working with us”. But she wanted a taste of the Arab culture. Ashley’s dad helped her narrow down her overwhelming career offers with the fact that Kuwait was one of the safest countries to work in, as a young postgraduate. Marked by low crime rates and ease of living and transportation he convinced her it was a safe country for young career prospect seekers. It was the final reason why she decided to come to Kuwait. Now looking back at her career in academia and teaching she reflects on how quickly her teaching touched the lives of nine generations of children in Kuwait. Besides being dedicated to her first-ever teaching job at ASK, Ashley started playing Galic football, and represented the Kuwait team, and competed and won in regional tournaments. To those who are unfamiliar, it’s an Irish rugby sport. She traveled around the GCC, Qatar, Abu Dhabi, Dubai, and Al Ain which, were her main travel destinations during her first two years in Kuwait. She took advantage of her teaching breaks like summer or spring breaks to pursue her love for sports. As she recalls, traveling for those regional competitions made her settle more into the Middle Eastern culture by exposing herself to other GCC Countries and shaped her first formative two years in the region. Growing up Ashley was an avid athlete. “Sports was significant to me. It cultivates your character, it teaches you valuable lessons like teamwork, discipline, and responsibility.” After two years of life in Kuwait, and fuelled by her never-ending curiosity in education and academia, Ashley applied for a teaching job in Seoul to explore a different part of the world. She was accepted to teach at an American School in the heart of Seoul. She was to teach a class of 20 Korean kindergarten kids who didn’t speak any English. Because of her love for adventure, she sought and welcomed the challenge of navigating the barriers of language in education. It was a blessing in disguise because Asia marked the beginning of Ashley’s teaching dance chapter of her life. One night she decided to take up K POP dance classes to serve as an escape from her job challenges in Soeul. K POP, short for Korean Pop Music is a music genre originating in South Korea. After she came back to Kuwait from South Korea, colleagues who owned local businesses started recognizing more of her talent and asked her to advertise for their brands. This got her recognition from advertising agencies like A1, Senyar, CBS Models and proposals to feature in local Kuwaiti music videos.”

“I was featured in a music video “ Habib Kan” by Abdullah AL Rowaished. It was one of the starts of my being featured in music videos. I was very grateful for this beautiful experience to work alongside the iconic Kuwaiti Singer and Actor. I have also had the pleasure of meeting his daughter Moothy Al Rowaished whom I’m indebted to because she connected me with and recommended me to the owner of Omni Studios at the time, Sara Merza. When Ashley met Sara Merza, then owner of Omni, she started taking up teaching dance alongside her teaching job at ASK. “I wanted to teach more than academia and curriculum. I wanted to teach expression through dance.” Ashley teaches Hip hop, burlesque, and floor (LA-inspired dance genres) for women, and Ballet for kids. Ashley’s classes served as a haven and helped many women shying away from expressing themselves or struggling with self-esteem. In a way, she was promoting a women’s empowerment environment through dance. Through the recognition Ashley received from within the dance community and her Omni classes, she began receiving interest and recognition from VO, a Kuwaiti platform focused on supporting and developing young talents. VO cast her in the live performance “Wasalna” by Bader Al Shuaibi, and with fellow choreographer and friend Doss in 2021. She loved the challenge of dancing in a live performance. Taking the sense of sight and mirrors away from her usual dance routines at Omni and relying on music cues was hard, but she practiced relentlessly. Following VO Ashley got recognized as

a rising leader and was cast as a choreographer by Sony Music for a music Video by Bashar AL Shatti “Ya Tair”, featuring Daffy which was a huge success and garnered more than a million views. Word traveled far about her good reputation on set after that, which got her her Debut TV Career in “Qafas Mekhmali”-“The Velvet Cage” a Ramadan TV Show on Abu Dhabi Television alongside Bader Al Shuaibi whom she worked previously with at VO. Though her Arabic was limited on set which made it challenging to connect with the crew on a deeper level, Ashley sought and thrived in the out-of-comfort experience. After the closing of Omni Studios, Ashley taught at Club 7, Harmony, the Workout Boutique, and at Institute of Performance Arts in Kuwait. Today her latest project is full-time supervision of Red Town, the launch of the latest Concept in dining on Kuwait’s seaside, a seasonal Pop-up collab between TEC and BBT for an immersive fear experience together with dining, a first of its kind in Kuwait. Ashley continues her passion for dance through an online App Ashleyohhhhhhh Project on Passion. io. which clients can download to book private or group classes with her or download prerecorded dance instructional videos of a song and learn it step by step. THE KID WHISPERER How to end angry door slamming By Scott Ervin Dear Kid Whisperer, I’ve had it with my 9-year-old and door slamming. She gets angry, runs to her room and slams the door. It’s amazing how loud and jarring it is. We have been guilty of yelling at her, and we have also grounded her and taken away video games – just to name a few of the things that have failed. Yesterday, after an argument with her father, she slammed the door, and then opened and slammed it five more times in a row while yelling at us. I’m at a loss. -- Sherry, San Francisco Dear Sherry, It surely isn’t news to you that there is a lot to work on here. It sounds like you are doing some arguing and punishing, two things you should never do with kids. I’ve outlined alternatives in my blog, podcast and book, but in this column I’ll state for the good of all that punitive punishments with no logical connection to negative behaviors (taking video games for slamming a door) don’t teach very much. Worse, they engender some understandable resentment. What has almost certainly led up to these punishments are lectures, warnings and threats, which have undoubtedly led to more door slamming and generally obnoxious behaviors. I will show you how to calmly set a limit about the door one time, and then how to calmly follow through with action. I’d start at dinner tonight: Kid Whisperer: The door slamming yesterday really made me sad. Feel free to keep your door as long as you can use it correctly. Kid: Whatever. Ten minutes later, Kid slams the door again. Kid Whisperer does nothing and says nothing. The next day when Kid is at school, Kid Whisperer takes the door off the hinges and stores it. Kid (seeing that the door has disappeared): WHAT IN THE WORLD! HOW DARE YOU! THIS SHALL NOT STAND! I HAVE RIGHTS! I WILL PETITION THE UNITED NATIONS! THEY WILL HOLD YOU ACCOUNTABLE! Kid Whisperer: Oh dear. This is unpleasant. You will get your door back as soon as you can show me that you can be pleasant. Kid: I HATE YOU!!!! Kid Whisperer: Oh dear. Looks like there’s some room for growth. Every unpleasant outburst like that puts you further away from being able to have a door on your room because those outbursts show me that you are not ready to have a door that is slammable. I’ll love you no matter how long it takes you to become pleasant. Kid: I WILL SUE YOU! I WILL SUE EVERYONE! Kid Whisperer: Oh dear. There you go again. I am going to go to my room where it is more pleasant. I’m going to gently close the door behind me. Kid: THIS SHALL NOT STAND! 54

But it will stand. You have total control over whether or not Kid gets her door back, while you have no real control over whether she slams her door when she has a door. I would be doing other Delayed Learning Opportunities as well (she would create a plan for dealing with frustration and write a list of alternative words and actions to use when she is frustrated). I would also use Strategic Noticing to reinforce pleasant behaviors and give her some signals when she was using target behaviors: “I notice you are being pleasant.” Or “I notice you are using kind words.” By reinforcing positive behaviors and never letting your daughter get what she wants with negative

behaviors, you will give your daughter a chance to re-create herself into a person that everyone enjoys being around. And, by all means, bring that door back when she starts habitually using more positive behaviors! Behavioral consultant Scott Ervin, M.Ed, is a parent and former teacher and principal. IS ANYONE SAFE?

How confidential computing will shape the next phase of cybersecurity By Bobbie Gossage

The most recent cybersecurity stats look pretty grim. Malicious actors were able to breach more than 108 million accounts— roughly 14 accounts every second—in the third quarter of 2022, according to VPN provider Surfshark, the highest numbers since 2021. One big issue? Data security has traditionally focused on protecting data at rest and in transit, which means encrypting data when it is stored on devices or transmitted over networks. Data also becomes vulnerable to attacks from malware or malicious insiders once decrypted during processing. But protecting data in use is a tricky process. Unlike data at rest or in motion, data in use is actively changing. This is why individuals and applications typically process data in an unencrypted or unsecured format. The lack of protection during data processing makes it vulnerable to malicious internal and external attacks. A technology dubbed “confidential computing” aims to provide data security and privacy in every state: at rest, in transit, and in use. How confidential computing works At its core, confidential computing encrypts data at the hardware level. It’s a way of “protecting data and applications by running them in a secure, trusted environment,” explains Noam Dror—SVP of solution engineering at HUB Security, a Tel Aviv, Israel-based cybersecurity company that specializes in confidential computing. In other words, confidential computing is like running your data and code in an isolated, secure black box, known as an “enclave” or trusted execution environment (TEE), that’s inaccessible to unauthorized systems. The enclave also encrypts all the data inside, allowing you to process your data even when hackers breach your infrastructure. Encryption makes the information invisible to human users, cloud providers, and other computer resources. Encryption is the best way to secure data in the cloud, says Kurt Rohloff, cofounder and CTO at Duality, a cybersecurity firm based in New Jersey. Confidential computing, he says, allows multiple sources to analyze and upload data to shared environments, such as a commercial third-party cloud environment, without worrying about data leakage. He adds that confidential computing technology is the solution to cloud data insecurity because it incorporates homomorphic encryption, a process that allows users to perform binary and computational operations without revealing the data to a third party. “The best tried-and-trusted method of securing data is to use end-to-end encryption to protect data at its source where only the intended consumer [can] decrypt it,” Rohloff says. 58

Homomorphic encryption is especially useful in an industry like healthcare, where patient data needs to be protected. “For example, a healthcare provider may want to share patient data with a research organization,” explains Ron Reiter, CEO and CTO at Sentra, another Tel Aviv-based cybersecurity firm. “With confidential computing, healthcare providers can encrypt the data and allow the research organization to process it without having access to the decrypted data.” Confidential computing technology could also potentially be used to secure on-premise servers, gateways, Internet of Things devices, laptops, and mobile phones. Still, confidential computing faces some challenges that will affect mainstream adoption. “One of the biggest challenges is the need and costs of specialized hardware, such as TEEs and secure enclaves,” Reiter says. Plus, most current confidential computing technology is just too sluggish, says Alon

Saban, EVP at HUB Security. “Today, confidential computing is done via silicone and CPUs [computer processing units]. It’s slow, ineffective, and can’t handle heavy loads,” he says. Launched in 2017, HUB Security is determined to improve the efficiency of confidential computing. The company is using technologies like artificial intelligence and 5G to help improve performance speed, and hopes to make confidential computing faster and more accessible over the next few years. “Data is the new currency,” Saban says. “Organizations in virtually all market sectors care [about] two things: their sensitive data and business continuity. Attacks on one or both of those is bothering the C-suite, regulation entities as well as customers who rightfully expect data ownership and 100% availability.”

Visiting the Holiday Inn & Suites is always a comforting experience, as the hotel is deeply entrenched within the fabric of local society. You always feel like you’ve come home after a trip abroad, only to be deeply spoiled at their enticing dining outlets. Here at bazaar, we’ve always been longtime fans of Sakura at Holiday Inn & Suites for our fix of authentic and delectable Japanese and Asian fare. This is why we were elated when we were invited to experience the all-new Sakura at the iconic hotel. We couldn’t wait to see the restaurant’s new look and to sample some of the new additions to their beloved menu. Walking into the new Sakura at Holiday Inn & Suites in Salmiya is a sight to behold. The decor is extremely zen-filled, you instantly feel like you’ve stepped into an oasis of calm amid the always bustling Salmiya. A pristine Bonsai tree greets you as the space’s grand centerpiece, and right behind 76

it is the Teppanyaki Bar, where diners may choose to sit to observe all the culinary action. Following a minimalist, wabi-sabi aesthetic, organic elements surround you, from stone to bamboo throughout the restaurant, grounding us and mentally guiding us to appreciate the foray of flavors we were

soon to enjoy. We also loved how the natural light floods the entire space, thanks to its well-picked location next to the hotel’s gardens. We especially appreciated the wall art of stone chopsticks, and the special private dining cabins, fashioned after authentic Japanese dining rooms.


Sakura is not just all about serving us fresh and handmade sushi since the early 90s, as its menu boasts an impressive expression of both Japanese and Asian dining. They’ve always offered the very best in the art of sushi, sashimi, teppanyaki, and perhaps some of Kuwait’s tastiest Teriyaki specialties! The reason behind this iconic establishment’s lasting success is credited to its dedication to only using fresh ingredients, and retaining the most masterful chefs in town to always deliver a consistently delicious and unforgettable experience. If you’ve always trekked to Sakura at 360 Mall or the Crowne Plaza Hotel, then you will revel in this special Salmiya destination at Holiday Inn & Suites Kuwait. Our experience begins with a theatrical performance of our chosen beverages at our table. We got lucky and opted for a beautiful, sun-filled table by the windows. Choosing to pair our Japanese fare with vibrant Mojitos, we deeply appreciated the love and care presented in the preparation of our delicious Strawberry and Passionfruit Mojitos. We started with a classic, beloved Kani Mango Salad, and loved the crunch of carrots and green mango alongside the morish crab sticks, all balanced out with a fragrant creamy coriander dressing. Appetizers are always aplenty at Sakura, with classic favorites like the Rock Shrimps, Seafood Gyoza, and Edamame making regular appearances on our orders. However this time, we decided to try their new Crispy Tuna Tartare (also available in Salmon) alongside the Panko Baby Corn. We adored the tartare. Three pristine cuts of sushi rice are topped with mixed and chopped fresh tuna, fired up with sriracha, fresh spring onions, and sesame oil, garnished with purple shiso. As for the baby corn, who doesn’t love a good tempura? We loved the special spicy sauce that accompanied this appetizer, we couldn’t get enough and we know this will be a quick favorite with little Sakura diners. We then delved into Sakura’s finest fresh fish selections. Enter the world of Sushi and Usuzukuri. Their new Hamachi Usuzukuri features a vibrant, thinly sliced yellowtail topped with ponzu sauce, spring onion, and Japanese chili. The ponzu here cut through the richness of the yellowtail. Not to be missed! Classic Temaki also features on the menu, but of course, one cannot ignore Sakura’s special Maki. With enticing flavor combinations, there are plenty of options to choose from. However, we settled on the Muma Maki, the colorful Fuji Maki, and the sultry Caramel Maki from the House Rolls. [Continued...]

For the Muma Mki, the creaminess of the avocado perfectly balanced out the chopped tempura, crab, and crunchy spring onions. The Caramel Maki is always a hit as we can’t get enough of the caramelized crispy crabstick, and well for the Fuji Maki, the color of the beautiful fish alone makes us feel like we’ve traveled to Japan! You can also opt for Sakura Platters when dining in a group, choosing between a salmononly platter for Salmon lovers, Sakura Lovers Platter, and the Spicy Lovers platters for those who appreciate a feisty kick to their sushi rolls. For bigger gatherings, Sakura also has a masterful array of platters to choose from! But we were in for more theatre at Sakura, especially when it came to the performance of the incredible Beef Teppanyaki. Prepared using succulent US Wagyu Beef Tenderloin, we loved watching the iron griddle get fired up and seeing the chefs at Sakura do what they do best! Served with grilled vegetables, the Teppanyaki here is always a delight! There are also specialties like marinated beef Yaki, and the new Chicken Katsu, but the kid-friendly portion! Kiddos also get to enjoy new Noodles, such as a creamy rendition as well as a more classic Tonkatsu sauce version. For the big kids (that’s us) we can revel in the new Beef Curry Ramen! For dessert, we ended our Asian feast with a delicate, authentic Mochi ice cream plate in various flavors, including vanilla, strawberry, and lovely matcha! Since Babel is always a favorite, we were excited to return for a unique culinary experience and breathtaking seaside views. As usual, their service was exemplary, where you feel that you are a guest at a Lebanese home, where they love to serve you. As soon as you are seated, you are welcomed with complimentary nuts and nibbles, even before you are invited to look at the menu. We started our culinary tasting with hommus istanbouli, mwarrade, grapevine leaves, fattet shrimp and grilled cheese rolls. As for the hommus istanbouli, we especially loved the flavours of pine nuts and parsley in every bite that elevated the dish into a masterpiece. We were already in food heaven! Then came the showstoppers, the mawwarde and the fattet shrimp. Mawwarde can be best described as an open-faced kibbeh with the most delightful of stuffings, one of roasted peppers, and the other of tender meat morsels, kebab bil karaz style. This is definitely a must-try; you will not regret it we promise! The shrimp fatteh, a Babel specialty and a progressive take on the traditional eggplant fatteh, had the most beautiful contrast of textures. From the flavourful yogurt, to the tender eggplant and the crunchy bread, topped with the most succulent shrimp. This dish created a fusion of flavors you can only experience at Babel. We will be ordering this one every time we visit. And just when you think the meal is finished, there is always a little more! After we had fully indulged in the mezze, we were invited to dive into an ocean of flavors with an irresistible array of seafood delights. From the fresh seafood display of the daily catch, you can pick and choose your favorite seafood and have it cooked to your liking. We particularly enjoyed beautifully grilled, deboned fish as well as fried fish paired with the tangy tartar sauce. With the surf, we also enjoyed the turf! We enjoyed a variety of juicy, tender grilled meats that really tantalized the taste buds, our favorites were the lamb cutlets, the shish taouk of course, and the grilled meat. The grilled meat was so tender, it just melted in our mouth! Pair this with their delectable hommus istanbouli, and you’re all set!

And to cap off the delicious culinary journey, we ended on a sweet note, along with their complementary dark-roasted, rich Arabic coffee and ghazlieh and fruits which showcase Babel’s exemplary hospitality. In total, we tried four desserts: ghazlieh, oum ali, ashta bel ashta, osmaliyeh ashta and with three of us there, funnily enough, we each had a different favorite. The oum ali was sweet, warm and just like a perfect hug on a chilly winter’s day. Topped with coconut, it was a crowd-pleaser. Then we had the ashta bel ashta, which can be best described as a delicate ice cream with hints of rose water, a fruit coulis, and topped with a textured cream – your palate will rejoice. We then enjoyed the osmaliyeh ashta, which was so light and airy, that it almost didn’t feel like you ate anything so the calories don’t count! It is such a delicate and light dessert; it is the perfect way to end a filling meal. Last, and definitely not least, my absolute favorite, the ghazlieh! The smooth milk pudding with hints of rose, topped with the delicate, melt in your mouth, cotton candy, I don’t even have the words to describe this gloriousness. Clearly, we enjoyed the meal immensely. We have all made plans to take our families and friends back on the weekend since we are already craving many of the dishes that we enjoyed!
