EXCELLENT WINES MADE EASY
J.E. RIDLINGTON AND SON WAS ORIGINALLY ESTABLISHED IN 1705 AS YATEMAN WINE AND SPIRIT MERCHANTS. IT WAS IN THE OWNERSHIP OF A DORSET FAMILY, BEFORE CHANGING ITS NAME TO J.E. RIDLINGTON IN 1842. IT WAS PURCHASED BY HARRY BATEMAN IN 1918 TO OFFER HIS BREWERY CUSTOMERS A QUALITY SELECTION OF WINES AND SPIRITS, ALONG WITH SUPERIOR SERVICE AND CHOICE, PROVIDED BY EXPERTS.
John Bateman, Harry’s son and George’s brother, developed the business into a bonded warehouse and cellars. It was an offer that would become the envy of Lincolnshire, not only due to the carefully selected range, sourced from all over the world, but also due to the Cognacs, Ports and Sherries imported from the continent in oak barrels, ready for decanting at J.E. Ridlington.
John Bateman also oversaw the unique blending of fortified wines. This tradition and skill was passed down to John’s son Peter and has now been taken on by our wine sommelier, who works very closely with wineries, vineyards and agents to ensure a range and service most beneficial to our customers.
Our service and this brochure are all about helping customers make the best choices in selecting the most appropriate wines for their business and customers. Every pub and restaurant is different and has its own unique requirements. Many require purely value offers, others an extensive range and some a selection to match their food offers. Most need all of these!
Making the correct selections can be difficult. This brochure has been designed so that you can view each wine by country in one section and by grape variety in another – all with images of bottles and descriptions. We can lay out suggested wine lists for customers and produce tent cards and table talkers to entice customers to buy. And should you wish to alter your range at any time, we can swiftly supply new lists. This brochure comes with helpful tips and background information to assist you. We also have Wine and Spirit Education Trust qualified experts with experience on both sides of the bar.

DEFINING YOUR WINE LIST, PAGE 9
There are important factors you need to consider when making selections for your wine list.
However good your wine selection, quality can be jeopardised by poor storage. J.E.
WINE IS AN ALCOHOLIC DRINK MADE FROM A SINGLE VARIETY OR A BLEND OF GRAPES, USUALLY WITH THE ADDITION OF NO OTHER INGREDIENT, EVEN YEAST, AS THE YEAST IS NATURALLY FORMED ON THE GRAPE SKINS.
The main wine styles are red, white, rosé and sparkling. Red wines are created after long contact with red grape skins and rosés by brief contact with red grape skins. Most sparkling wines are created by the addition of yeast to the bottle, or during the production process.
Different grape varieties create different styles of wines, the grape’s character often coming from the growing environment, soil and the climate of an area.
France has traditionally been the most famous wine-producing country in the world. However, different styles and varieties of grapes are now grown on nearly every continent and varying wine production methods present fascinating opportunities for sampling and adventure! From Australia to England, Argentina to New Zealand and France to Chile.
Although grapevines can grow within a year, some are over 100 years old, dependent upon the variety, environment and climate. In the Southern Hemisphere, harvesting takes place between February and April and in the Northern Hemisphere between August and October.
If a wine is a blend from several harvests it is a nonvintage wine. However, if the grapes for the wine were all harvested in one year, it is a vintage. Certain vintages (year of harvesting) are noted as being superior to others.
Cooler climates tend to produce wines which have tartier tastes and warmer climates fuller, riper flavours.
Single varietal wines are made using only one grape variety, while wine blends are made with a mixture. Neither is necessarily superior, they are just different wine producing methods.
Firstly tilt the glass slightly to one side and check the wine for clarity, viscosity and colour.
Swirl the glass before smelling the aromas and checking for any ‘off smells’ (corked wines have a certain stale aroma to them created by infected corks, rather than cork floating in the wine).
Taste the wine by taking a small mouthful, sucking in air slightly to ‘breathe’ the wine and roll it over all areas of the tongue, checking for sweetness, acidity, tannins, alcohol and body. Swallow the wine to combine the senses of the tongue and nose.
In the aftertaste do the flavours linger?
Are there any predominant flavours? Do new exciting flavours come to the fore?

• What is your target market?
• What proportion of wine sales do you envisage being through ‘social drinking’ and how much as an accompaniment to food?
• Which wines do you wish to match to your food offer?
• Do you wish to offer a selection of entry level, intermediate and premium wines and where should the main focus be?
• Which countries do you wish to have represented and which grape varieties? It is often best to balance your list between popular countries and best performing grape varieties.
• Do you wish to avoid stocking wines which are also available in the supermarkets?
• Do you wish to stock a number of well-known branded wines?
• How many whites, reds, rosés and sparkling wines will you stock?
• Do you wish to regularly update your wine list and introduce ‘Specials’ and ‘Wines of the Month’ to keep the offer fresh?
Customers are often given confidence by knowledgeable staff with a basic understanding of wines, who are able to make recommendations, especially with regard to food matching.
Having a ‘Wine of the Week’ or even ‘Month’ gives customers confidence and gives you the opportunity to focus your staff on a particular wine and even set them sales targets. It is also an opportunity to push wines that return good margins.
The highest margin wines, which require cooling, should be placed on the top shelf of the fridge, as this is where customers will focus their attention. Low margin house wines should not be prominent.
You may consider pricing wines by the bottle and by the glass, with the bottle being at a discounted price. You may consider pricing your wines by gross profit percentage, percentage mark up or cash margin. It is often best to price more expensive wines based on cash margin otherwise they become unattractively expensive.
As well as ensuring your wine list is comprehensive and well balanced, do not lay your list out in price ascending order. Your high profit wines should be positioned in the middle of the list.
This is where the majority of customers buy from!
Effective merchandising gives the customer confidence in the wines you have on offer and the way in which you look after them. A display of quality glassware appropriate for red, white, rosé and sparkling wines adds significantly to the wine experience. However, ice buckets, coolers, tent cards and well organised bottle displays add value.
We offer a wine list design and printing service completely free of charge. The design and layout is based upon the specification which can be agreed between yourself and your Area Sales Manager, in order to ensure that it is the most appropriate for your venue and offering. These can be turned round very quickly and updated as per your requirements.
Customers have confidence in wines which are gold medal winning. This is why many of the wines we have selected have won top awards at the International Wine Challenge, the Sommelier Wine Awards and the Decanter World Wine Awards.
EFFECTIVE MERCHANDISING GIVES THE CUSTOMER CONFIDENCE IN THE WINES YOU HAVE ON OFFER.
We have a wide range of point of sale merchandise to help boost your sales and emphasise care and quality. This includes corkscrews, ice buckets, tent cards, posters and wine seals.
Our Area Sales Managers and Telesales team have all studied and qualified for the Wine & Spirit Education Trust Award and are skilled at offering advice and tips to help you maximise your wine potential.
We produce a periodic wine newsletter for our customers which keeps you updated on such things as market trends, new wines to the market, forthcoming promotions, incentives and Wines of the Month. There are also ‘top tips’ on marketing and presentation and the generating of margin, volume and profit opportunities created by wines.
The Sommelier Wine Awards is a wine competition with a difference. As Britain’s only on-trade wine competition, it focuses entirely on wines aimed at the on-trade.
Since it started in 2007 it has grown to become the first point of reference for the UK’s on-trade wine buyers as well as the key competition for wines trying to increase their presence in hotels, pubs, bars and restaurants across the world.
The SWA judges all serve or buy wine for their venues in the ontrade, or are leading consultants. Wines with general distribution in the high street are not permitted to enter, except for sparkling and fortified wines, or merchants’ online-exclusive wines.
The main wine styles come in red, white, rosé and sparkling. Wines should always be stored away from strong light, hot bulbs and heat sources, if they are to retain their quality. Wines not on display for serving should ideally be stored at a temperature of 13º-15ºC for them to develop and retain their qualities.
Part of the wine experience is to ensure that all wines are served at the correct temperature, which helps to maximise the aroma, effervescence and flavour of each style.
• Light red wines should be served at 12º-15ºC, which is slightly below room temperature. However, there is an increasing fashion to drink these lightly chilled.
• Bold red wines should be drunk at 15º-18ºC, which is normal room temperature.
• Light white wines should be served at 8º-12ºC, which is chilled from the fridge. Sparkling wines should be served slightly colder.
• Rich white wines should be served at 12º-15ºC, having been chilled in the fridge and left to sit at room temperature once opened, allowing them to breathe.
• Sparkling cooler jackets are often useful for white wines, wines should always be served on ice.
HOWEVER GOOD YOUR WINE SELECTION, QUALITY CAN BE JEOPARDISED BY POOR STORAGE, TEMPERATURE CONTROL OR PRESENTATION.
THE CORRECT TEMPERATURE HELPS TO MAXIMISE THE AROMA, EFFERVESCENCE AND FLAVOUR.

ARGENTINA’S ELEGANT WINES ARE A RESULT OF THE COUNTRY’S HIGH ALTITUDE, BONE DRY SOIL AND CONTINENTAL CLIMATE – THAT MEANS HOT SUMMERS AND COLD WINTERS. MENDOZA IS HOME TO 80% OF ARGENTINA’S WINE GROWING. THE VINEYARDS ARE PLANTED AS HIGH AS 1400M ABOVE SEA LEVEL AND THE AVERAGE ANNUAL TEMPERATURE IS ONLY 15-19ºC.
There’s a long-standing tradition of winemaking and the Argentinians know how to keep hold of all the best bits of their heritage, such as using pure mountain water for wine production. They lead the way with 21st century concerns too – like being environmentally friendly. Look out for their main grape varietals. We’ve selected a range including Malbec, Torrontés and Tempranillo, which we feel represents Argentinian wine.

AUSTRALIAN WINES ARE DISTINCTIVE IN CHARACTER; IT’S NO WONDER THERE IS AN INTERNATIONAL LOVE AFFAIR WITH WINES FROM DOWN UNDER.

The Australians produce a wide range of wines, many of them being distinctive in character and exciting blends across varieties and regions.
Their wines are mostly fruity and extremely well balanced with slight oakiness, but extremely likeable and easy to drink.

NORTH OF LYON IN EASTERN FRANCE IS THE WORLD-RENOWNED REGION OF BEAUJOLAIS. WINEMAKERS HAVE BEEN CRAFTING FRESH AND FRUITY WINES ALONG THE BANKS OF THE SAÔNE RIVER FOR CENTURIES.
With few exceptions, all Beaujolais wines are made from the Gamay grape, which is thought to be a cross of Pinot Noir and an ancient white variety known as Gouais. All Beaujolais grapes must still be hand-picked and the traditional winemaking method used.
The warm, sunny climate is ideal for wine production. The northern half of Beaujolais is hilly, with soil that is granite-based. The southern half, also known as Bas Beaujolais, is much flatter and has mainly sandstone and clay-based soil.
As you might expect, this change in the landscape is reflected in the wine. Northern vineyards often create complex wines, whereas lighter, fruitier wines usually come from the south.

It’s amazing to think that during the dark ages, medieval times, the Renaissance – or any period you like to choose – Bordeaux has been the source of arguably the best wines on earth. There’s great variety too. Reds can be easy drinking and youthful, or complex and intense. In terms of climate, Bordeaux is influenced by the Atlantic Ocean. The rivers that flow from the coast split the area into two distinct parts. The area nearest the sea is known as the Left Bank. Cabernet Sauvignon is the main grape here. Perhaps its best-known area is the Haut-Médoc. On the Right Bank, Merlot is king and is produced in the areas of Saint-Émilion and Pomerol.
Over the last 2,000 years many of the world’s best wines have come from the Bordeaux region of France. The area produces some fantastic youthful and easy drinking red wines as well as intense and complex wines made mainly with Cabernet Sauvignon and Merlot varieties.

BEAUTIFUL BURGUNDY IS ONE OF FRANCE’S MOST IMPORTANT WINE REGIONS. LOCATED IN THE EAST OF THE COUNTRY, IT IS A LARGE AND DIVERSE AREA THAT’S FAMOUS FOR SEVERAL STYLES OF WINE. FROM THE COOL NORTH OF THE REGION COMES CRISP AND FLINTY CHABLIS.
Made from Chardonnay grapes, Chablis is celebrated for its mineral tang. Further south, Côte d’Or has a slightly warmer climate and is home to some of the finest wines in Burgundy, if not the world.
Lovers of French wine will recognise the names of the region’s legendary villages, like Meursault, Puligny Montrachet, Gevrey Chambertin and Pommard. If you find yourself in a vineyard in this area, you will probably see Pinot Noir grapes on the vines.
They are used to create highly sought-after reds noted for their elegance. Chardonnay is the favourite grape here.

SPARKLING WINE IS MADE ALL OVER THE WORLD, BUT CHAMPAGNE ONLY COMES FROM CHAMPAGNE, A SMALL REGION 100 MILES EAST OF PARIS. IT’S THE MOST NORTHERLY FRENCH WINE REGION AND HAS A UNIQUE TERROIR.
Champagne is perhaps the most famous of all blends – it’s made from a combination of Chardonnay, Pinot Noir and Meunier. It can be enjoyed with food or on its own and, of course, we love it as a sparkling, celebratory wine. Mother Nature is behind the legendary fizz. Champagne’s cool climate produces wines with high levels of acidity which are ideal for sparkling wine. These wines are blended and bottled accordingly by each Champagne House to define their House style. A second fermentation inside the bottle creates Champagne’s sparkle, when added yeast transforms sugar into carbon dioxide which is trapped as bubbles inside the bottle.
To fully enjoy a glass of Champagne, it’s recommended that you use a tulip shaped glass, flared, wide and high. This lets the bubbles rise elegantly and also allows for optimal flavour and aroma development.
Champagne is only Champagne if it comes from the Champagne region!
This most northerly wine region of France creates world famous sparkling wines, produced from their Chardonnay, Pinot Noir and Pinot Meunier grapes.
Champagne has yeast added to the bottle which creates tight, nose tingling bubbles.

Ayala Rosé Majeur 6 x 75cl 1

Bollinger is one of the oldest family houses still in existence in Champagne. Their methods have changed little and their wines are still outstanding.
Fresh aromas mixed with characteristic sweet, doughy overtones, which are balanced by richer fruit, peach skin characters and classic baked biscuit flavours and a crisp citrus finish.
Ripe strawberry and vanilla flavours, enhanced by classic baked biscuit characteristics and a crisp finish.

Slightly appley, yeasty nose and long, rich flavours of biscuity, toasty fruit.

Veuve Clicquot Yellow Label Brut has been the symbol of the House since 1772. A perfect balance between power and finesse, its complexity comes from the predominant presence of Pinot Noir and Reserve Wines.
THE FAMOUS LANGUEDOC WINE REGION IS MASSIVE. IT SPANS THREE FRENCH COUNTIES, FROM THE AUDE TO THE GARD, PASSING THROUGH THE HÉRAULT, AND STRETCHING AS FAR AS THE WESTERN PYRENEES.
As you might expect, a region this big has lots of different types of soil, climate and vine. Vineyards close to the sea can have sandy, limey or even clay soils. In valleys, there are often large pebble terraces. And of course, the weather can change dramatically depending on how close you are to the ocean and its breezes. This results in a lot of different and unique wines, each with their own personality and flavour. It’s what makes discovering the wines of the region so much fun. Languedoc’s Syrah, Grenache, Mourvèdre, Malbec and Picpoul de Pinet grapes are all fantastically popular.
The largest grape growing area in France producing wines of great flavour and personality, which are slightly different from the norm, due to the areas sandy, limey and clay soils.

THE LOIRE VALLEY IS SOMETIMES CALLED THE GARDEN OF FRANCE. IT WINDS FROM THE ATLANTIC COAST TOWARDS THE NORTH-CENTRAL CITY OF ORLEANS. FROM SANCERRE TO MUSCADET, WHITE WINES FROM THE LOIRE ARE FAVOURITES FOR MATCHING WITH SEAFOOD.
But the Loire isn’t just about white wines. Reds and rosés have the kind of mineral profile that fits today’s trend for lighter wines.
The western-most point, on the coast, is called the Nantais where Muscadet comes from. At the eastern-most point there are the central vineyards, where there is the famous commune of Sancerre.
They are perfect examples of how forwardthinking producers can create wines that show off the very best of their terroir. We all know how popular New World wines are, but these winemakers are making sure the Old World doesn’t get left behind.

THE RHÔNE VALLEY IS AN IMPORTANT WINE GROWING REGION, SITUATED IN SOUTH EASTERN FRANCE. IT BEGINS OUTSIDE LYON AND RUNS SOUTH FOR OVER 100 MILES, WITH CHANGING SOIL TYPES AND MICRO-CLIMATES ALONG THE WAY.
The region falls neatly into two halves. The steep granite slopes of the northern half end at the town of Valance, with the sandy, flat southern half beginning at Montelimar.
The south is famous for Côtes du Rhône and the world-famous Châteauneuf du Pape.
Châteauneuf du Pape can be a fine blend of up to 13 grape varieties and is unique for the Appellation (French wine law) requiring it always to be served from an embossed bottle.
The Rhône Valley is in the south east of France where there are micro-climates and changing soil types, contributing to making some of the world’s best Syrahs. The most famous wine from the Southern Rhône Valley is Chateauneuf du Pape, however also famous are the Cote du Rhône and the Cote du Rhône Villages styles.

WINEMAKING IN GERMANY GOES BACK TO WHEN THE ROMANS INTRODUCED THE IDEA 2,000 YEARS AGO. IN THE 8TH CENTURY, MONASTERIES BECAME CENTRES OF WINE CULTURE AND WINE WAS THE DRINK OF THE PEOPLE.
These days, Germany is one of the most northerly wine-growing countries in the world, thanks to the warm Gulf Stream. Moderately warm summers, good amounts of rain and a long ripening period combine to create gorgeous grapes with lots of fruity acidity.
The Riesling grape is regarded by many experts as the finest white varietal in the world. The challenging terroir along the great rivers of Germany produce a contemporary wine that perfectly balances acidity, sweetness and fruitiness.
The Mosel Valley is one of Germany’s most famous wine regions. Steep valley walls keep vineyards warm and mean plenty of rain. Pale Mosel wines have the fragrance of spring blossoms and are refreshingly fruity.

HUNGARY IS EUROPE’S 7TH BIGGEST WINE-PRODUCING COUNTRY! IT PRODUCES AROUND 300 MILLION LITRES OF WINE ANNUALLY.
This Wine history of the region dates back to the Kingdom of Hungary. From the 18,000 hectares of red grapes planted, about 30 percent of Hungarian wine is either red or rosé with a wine profile taste that is fresh, crisp, fruity, easy to drink, with great ageing potential.

ITALY HAS A RICH AND VIBRANT WINEMAKING HISTORY AND IS THE SECOND LARGEST WINE PRODUCER IN THE WORLD, AFTER FRANCE. FAMOUS FOR THEIR LOVE OF WINE, THE ITALIANS MAKE A WIDE SELECTION OF STYLES.
Of course, there are the world-famous wines from Italy’s indigenous grapes, like Chianti from Sangiovese and Barolo from Nebbiolo. But you’ll also find plenty of winemakers creating more contemporary styles using traditional Italian grape varietals, such as Nero D’Avola and Grecanico.
The Italians produce contemporary style wines from international grape varieties including such classics as Chianti and Barolo which are extremely popular. Italy is now the second largest producer of wines and are a must for any wine list!

THERE IS A GROWING DEMAND FOR NEW AND INTERESTING SPANISH WINES AND SPAIN TODAY IS CITED AS ONE OF THE WORLD’S MOST DYNAMIC WINEMAKING COUNTRIES. ONE THAT OFFERS A BEGUILING COMBINATION OF TRADITION, VALUE, NEW INVESTMENT, INNOVATION AND DISCOVERY.
Rioja is one of Spain’s most well-known wine regions. Situated in the Ebro valley north of Madrid, it covers the provinces of Navarra, the Basque Country and Castilla y Leon. Its northern border is determined by the Sierra de Cantabria mountain range and in the south by Sierra de la Demanda, and the resulting conditions create a very privileged environment for vineyards.
Rioja was the first Spanish wine region to hold the maximum category designation of Calificada (Qualified). Its regulations establish the demarcation of the production area, the grape varieties which can be grown, the maximum allowable yields and winemaking and ageing techniques.
No wine list should be without a Rioja from Spain’s most famous wine region. The three Rioja areas are perfect for the Tempranillo grapes to ripen and flourish, however the Albarino and Verdejo grapes for white wines and Garnacha for red wines should not be ignored.
