Chairman’s & Welfare Report

CHAIRMAN’S REPORT JOHN MURRAY, CHAIRMAN As we end the year and herald in 2016, I bring you good news and glad tidings. With sincerity, I wish to thank each and every member of the club, for your generosity. Thank you for supporting Bankstown Sports and all our associated venues. The past year has been good and productive, when your club has made remarkable progress, as we strive to provide you with facilities and services that are more in line with what you expect. The club has traded well and has registered another successful financial year. On Monday 2nd November we held our 58th Annual General Meeting. The event was well attended and the directors, who were up for election, were returned, unopposed. In addition to the formalities of the AGM, Mark Condi, our CEO, did an informative presentation for the benefit of members, providing them with an overview of how the club performed, the challenges we face, what is being done to manage the business in a professional way to stay competitive and our plans to move forward. We concluded the year with total revenue of just over $103 million, an improvement over last year. Following this performance, we paid our share of State and Federal taxes amounting to $22.4 million. We recognise the fact that one of our greatest assets is our staff, so our investment in employee and employee related costs amounted to $22.8 million. We remain true to our mandate, which is to work in the interest of the community, so we ended the financial year with a contribution of over $2.6 million to our dedicated sporting clubs and the local community. I am proud to say that our associated venues performed well and each venue has made positive contributions. We are constantly working on improving the way we respond and serve our members, by

WELFARE REPORT December, January and February 2015/2016

lifting our standards of customer service and providing new facilities. Thanks for your understanding and patience shown over recent months, while the builders were in the club expanding the Travelodge Hotel and completing new restaurants. As we approach the festive and holiday season I am pleased to say that Lucky Cheng’s Noodle House and Chocolateria San Churro will be open for business. Children will enjoy watching the noodle chefs kneading and pulling hand-made noodles to a degree that are ever so fine, and the menu offers a great variety of soups and dishes. There are hand-made pancakes, dumplings, wonderful wontons and interesting side dishes like ‘silken tofu with pork floss and preserved duck eggs’. The delights of chocolate needs no introduction and the offerings at Chocolateria San Churro will appeal to both young and old alike. Both these new food outlets are certainly worth a try and I would urge you to read all about it in this edition of the magazine. The Rainforest Lounge will also have a new spectacular bar with a ‘grand staircase’ leading down to the Sports Bar. Next year we will begin work on redeveloping the Sports Bar so that it represents an entirely new concept and venue that appeals to one and all. I am happy to inform you that the expansion of our Travelodge Hotel is well ahead of schedule and all construction work will be completed in January/February 2016. This summer your family and friends can enjoy movies in the comfort and security of the club. The Theatre is being specially equipped with a big screen and state-of-the-art projection and audio system to bring you popular and latest movie releases for your enjoyment. For the last twenty years your club, along with many of our business associates, have supported the Forbes Jockey Club, in the

Forbes Shire, in country NSW. In appreciation of our support as usual 35 members of the Forbes Jockey Club spent a weekend at Bankstown Sports, at their own expense, at the end of October. They enjoyed their stay and wanted to register their gratitude to the club and its members. I would like to reinforce our position as a community club. When we were established 58 years ago, we were set up to serve the local community. As we approach another landmark of six decades, we will continue to remain true to our purpose. This has been a good year, so we have put back a significant amount of money into the community. We have every intention of continuing to do so over the years to come. The Board has decided to build a commercial office tower within the precinct of the club. In the New Year we hope that construction will begin on a nine-storey building, located on the site that used to be the old Masonic Centre, at the corner of Restwell Street and Greenfield Parade. We have spared no efforts in planning the structure as an A-Grade building, with A-Grade office space, that meets the best environmental standards. The building, named the ‘Flinders Centre - Bankstown’, will accommodate all our administrative offices while most of the floor space will be leased out. The Flinders Centre will have a distinct advantage over most local office buildings, because it will enjoy all the services and facilities available from our adjacent Bankstown Sports. My thoughts and good wishes are with you, your family and friends, over Christmas, New Year and the festive season. It is a time catch up, to relax and enjoy ourselves, but also to remember those loved ones who have helped enrich our lives but have passed on. A Merry Christmas and a Happy New Year!

The following members have passed away recently and to their relatives and friends may we offer our sincere condolences in their time of grief: Heather Davidson, Margaret Snell, Colin Hanna, Lilian Mueller, Jean Casamento, Anthony Trad, Norma Ayling, Maggie Christensen, Arthur Dawson, George Paxton, Frederick Smith, Viktor Iliasiewicz, Jack Bishop, Judith Serong, Gerald McCrossan, Bruce Rowan, John Lyons, Dirk Van Acquoy, Robert Rose, George Morton, James Beak, Leslie McInney, Patricia Hutchinson, Gwenth Wooding, Clifford Couper, Ruth Treuer, Stanley Hayes, Alfred Tegova, Mary Ernest, Peter Callaghan, Yvonne McDermott, Margaret Wicks, Raymond Cameron, Garry Blackadder and Giovanni DeCataldo. Order a steaming bowl of hand pulled noodles, dumplings or soups, teamed with a fragrant jasmine tea or a refreshing Tsingtao beer. The restaurant’s interiors have been designed to bring all the noise and colour of an Asian hawker market, right to the club, with cobblestone floors, colourful lanterns and old style carts. The menu, inspired by the dishes of Northern China, reflects the current trend of freshly made noodles and dumplings served in piping hot, spicy broths or bamboo steamers. Patrons will also be able to enjoy culinary theatre as expert noodle chefs deftly prepare their meals. “Lucky Cheng’s Noodle House will provide a complete visual experience with patrons being able to watch our skilled noodle chefs turn 4

dough into authentic handmade noodles and freshly made dumplings,” says Bankstown Sports CEO, Mark Condi. “The experience is not only fun, but highlights the authenticity and the freshness of the product.” Lucky Cheng’s Noodle House will use a popular Asian ordering system to bring food swiftly to the table. The menu will feature on a disposable placemat, replaced after each customer. Diners will also receive a small order card, with a simple listing of the menu items. Patrons simply tick off their menu choices, add the number of dishes they require and hand it to their server to take to the kitchen. Easy! Another handy feature will be that patrons can choose to dine in or takeaway their meal.

“Patrons will be able to sit in the restaurant or take away to any other part of the club,” says Mark Condi. “The restaurant will operate throughout the day to accommodate those people who like to eat outside the traditional times for lunch and dinner.” This is the first stage of an expanded Asian

precinct for Bankstown Sports Club. “The club hopes to start stage two of the Asian precinct next year,” says Mark Condi. “We plan to extend the Lucky Cheng’s Noodle House experience by adding a complete handmade dumpling kitchen, and possibly our own Peking duck oven.”

Mr Cheng, or ‘Lucky’ as he’s known by the locals, is a wily character who grew up on the streets of Shanghai. His drunken chicken is famous around here and he serves up tasty treats in the small hours of the morning. When he’s not cooking up a storm you’ll find him at the Mahjong table. Chocoholics rejoice! Chocolateria San Churro is open, serving delectable Spanish-style chocolate desserts and sweet treats. Let’s meet franchise owners, David Perez and Vien Nguyen… What appealed to you about opening a San Churro store at Bankstown Sports? David: I am of Spanish heritage with both my parents born in Spain. I chose San Churro because eating churros and chocolate was something I grew up with and this was an experience replicated at my first visit to a San Churro store in Fremantle whilst holidaying in 2010. Vien: David and I have worked together since 2004 and have been talking about going into business for years. This is our first franchise together. Having worked in hospitality in the past, San Churro seemed like a business I would enjoy being a part of. Do you each have a sweet tooth? David: I love eating chocolate and enjoy good coffee. My favourite item on the menu is the Chocoholic’s Sundae with a delicious coffee. Vien: I have a Nutella sandwich every morning and like to eat ice cream. My favourite San Churro menu item is the Spanish latte – fresh espresso with condensed milk. I grew up drinking a similar style latte in Vietnam. In my opinion, San Churro has the best Spanish latte ever!

Why do you think people love chocolate so much? David: Chocolate makes you feel good, enlightens your spirit and makes you happy. It brings people together and is something that can be shared on many occasions. Vien: Good chocolate is a guilty pleasure that delights all ages. What is the must try on the San Churro menu? David: The new Churro Funnel Cake is something everyone must try. We describe it as ‘the love child of a doughnut and pancake’. Made fresh to order, it’s covered in cinnamon sugar, drizzled in melted milk chocolate and topped with vanilla ice cream and chocolate flakes. We are also excited to be serving the new Churro Ice Cream Sandwich. This is made with delicious San Churro ice cream sandwiched between two mini funnel cakes! Vien: The Melting Chocolate Bomba, don’t miss that this summer! The Chocolate Bomba is the perfect mix of dark chocolate, berry coulis and vanilla raspberry semifreddo. This is served as an enclosed globe with the hot berry coulis poured over to melt the chocolate and reveal the semifreddo inside.

is here!

What’s so special about a visit to San Churro?

David: San Churro provides customers with an affordable, premium dessert experience and destination to spend quality time with their loved ones and take a break from the everyday. There are currently 48 San Churro stores and Bankstown Sports Club will be number 49! Vien: San Churro is a place where people can come to socialise, celebrate, share and indulge in a fun experience together. San Churro has a delicious and different menu of mouthwatering treats. As of the beginning of November 2015, San Churro is proud to be serving chocolate made using Fairtrade Cocoa. What special celebrations can we expect at San Churro Bankstown? David: For any customers that join our newsletter, we will invite them to enjoy a Churros for Two on their birthday for free! Vien: San Churro believes in celebrating. This Christmas you can expect to see some great gift ideas from our retail range like the take-home hot chocolate pouches or the boxes of delicious truffles. NEW YEAR’S EVE AROUND THE GLOBE! United States of America The Big Apple’s famous Times Square celebration features star-studded musical performances, a pyrotechnic display and about a million revellers soaking up the dazzling lights and energy. At midnight the historic Waterford crystal ball ‘drops’ down a pole with millions of people watching throughout the world.

Italy For many Italians, New Year is a time to play a game of Tombola, similar to Bingo, with a glass of Spumante or Prosecco. An old custom that’s still followed by some, especially in the south, is throwing your old things out the window to symbolise a fresh start. Watch your head! Some people also wear red underwear, which is said to bring luck in the coming year.

Japan In Tokyo, people gather around the Zojoji Temple to release helium balloons containing New Year’s wishes and watch the lighting of Tokyo Tower and an impressive fireworks display. New

Year is also a spiritual time in Japan. At midnight temple bells ring 108 times and the city’s most popular temples and shrines are visited by millions of people over the following weeks.

France Head to the Champs-Elysées in Paris to be in the middle of the celebrations. The famous avenue is a great vantage point to view the Eiffel Tower as it lights up in a sparkling display on the stroke of midnight. Then it’s time to grab a glass of French champagne, give your fellow partygoers the traditional double-cheeked kiss and say Bonne Année!

Great Britain London has a slew of spectacular New Year’s Eve parties, not to mention the jaw-dropping firework display over the Thames River. The magnificent fireworks display, which lights up the famous waterway each New Year’s Eve, was ticketed for the first time last year due to the overwhelming crowds that flock to the riverbank 31 December each year.

SERVICE TO SPORT MEDAL AND AWARDS 2015.

Celebrating the club’s

SPORTING HEROES A wonderful range of dedicated people were recognised at our annual gala event, the Service to Sports Medals and Awards, held in October within The Grand Ballroom at Bankstown Sports. The club is reliant on the dedication of members for the success and integrity of all the sporting codes represented. CEO of Bankstown Sports, Mark Condi, says “As a club founded on the values of community sport, we are always very honoured to be able to provide this important recognition of the commitment of good people to their sporting codes. “So many people volunteer hours of their time every year to keep things running smoothly. These awards are a thank you and a pat on the back to people who constantly give, without any expectation beyond the personal rewards of supporting their clubs.” In the Community Engagement through Sport and Recreation Award, the club recognised Ms Shane Le Claire of Bankstown Sports Strikers Football Club. Shane was acknowledged for her tireless work with the Lightening Bolts Program which began in 2008. Since 2009 Shane has run the squad on Saturdays during the regular season and also managed to develop one of the participants into an assistant coach. 12

The Young Club Person of the Year Award was given to James Pisani of Bankstown Sports Little Athletics Club. James has been at the club since he was five years old and gives so much of his time across weekends and even most weekday afternoons to provide opportunities to other children. The Volunteer of the Year is Gary Penman from Bankstown Sports Women’s Cricket Club. Often described as the backbone of the club, Gary has been an active executive committee member and tireless volunteer for over 15 years. The Club of the Year is Bankstown Sports Athletics Club, which has now won five NSW championships in a row. The club also had Olympians at the London Games and five Australian junior champions in 2015. There were three Service to Sport Medals this year. This award acknowledges life-long service to sport with 20 or more years of service as a volunteer. Our three worthy recipients were Phil Watson from Bankstown Sports Strikers Football Club, Terry Minton of Baulkham Hills Football Club and Max McCleay of Bankstown Sports Women’s Cricket Club.

“So many people volunteer hours of their time every year to keep things running smoothly.”

Giving kids A SPECIAL CHRISTMAS VISIT Christmas is a tough time for children who have a mum or dad in jail. Bankstown Sports has contributed $24,850 to the SHINE for Kids Supported Transport and Child/Parent Activity Day Program, which assists children who are otherwise unable to attend prison visits. SHINE for Kids is a charity dedicated to supporting children with a parent in the criminal justice system. “The program enables children to visit parents in prisons, which are often located far from the child’s home,” says CEO of SHINE, Gloria Larman. “Without these visits, these children are at risk of losing this important relationship with a parent, which can have very damaging consequences for the children in both the short and long-term.” The funding will service 45 children and their families from the Bankstown LGA. School holiday programs provide an opportunity for imprisoned parents to spend a whole day with their children in a way that removes the sterile, ordered and directional environment of a ‘normal’ prison visit. “Child/ Parent Activity days allow an opportunity for children to have fun, play and bond with their mums and dads in prison in a completely child focused environment, unlike a standard prison visit,” says Gloria Larman. The program will allow children to enjoy fun activities with their reunited family. “We will support children from Bankstown to interact with their parents through group activities like creating art and craft or playing ball games.

Parents will also have an opportunity to make their child’s lunch, feed them a bottle, play and create without the other carer present – empowering them to participate in everyday parenting tasks.” The innovative program does more than just foster stronger families. “By facilitating the positive experiences between the children of prisoners and their parents, this creates a positive flow-on effect within the communities they live in, by reducing isolation and stigma as well as the likelihood of reduced crime rates over the long term,” says Gloria Larman. Research has shown that children of prisoners are five times more likely than other children to go to prison*. “Programs such as this help break the cycle of children following in their parents footsteps, reduce overall crime rates and create stronger families and local community,” says Gloria. “This program enables children to maintain positive family relationships with their imprisoned parent and it supports the successful reformation of families upon parents release from prison.” *The Centre for Children of Incarcerated Parents, United States, 2000. Celebrate as the …wins a major award! Bankstown Sports’ Atrium Bar has won a 2015 National Restaurant and Catering Award in the Small Bar category at the 17th Restaurant and Catering Awards. More than 380 local restaurants, cafes and catering businesses were judged across 71 categories. An independent team of trained judges, who anonymously visited venues to determine the winners, judged the awards. CEO of Bankstown Sports, Mark Condi, says “This is wonderful recognition for all the hard work the club and our staff have been doing to provide our members with exceptional food and beverage experiences for all tastes and budgets. These awards recognise industry best practice and we’re so pleased to be acknowledged. The Atrium Bar has become a special place in the club for those looking for a

unique atmosphere and world-class cocktails.” This summer the Atrium Bar will be introducing a new cocktail and tapas menu. Bankstown Sports Executive Chef, Helmut Gundendorfer, takes great pride in providing exceptional tasty bites for the Atrium Bar to accompany the great range of wines, cocktails and tap beers, with different kegs added every week. With stylish and comfortable furniture all set under a pixel wave ambient light show, the Atrium Bar is set up for your comfort and enjoyment.

Exclusive!

INTERVIEW WITH SANTA Christmas VIP, Santa Claus, took time out from running his global gift empire for an exclusive one-on-one chat. The world’s most generous man revealed plans for special appearances and celebrations at Bankstown Sports. Santa! Can we expect to see you at the club this year? I never miss a chance to drop by my favourite club and meet some amazing kids and their parents and grandparents. I usually sneak in a nice glass of cold milk and a burger at the Greenfield Station Bistro and put my boots up by the air-conditioning. I won’t forget to buy my raffle ticket for the Christmas raffle – they’re on sale from 6pm, Thursday 17 December. After all my hard work spoiling others, I deserve a few treats myself! Did you have anything to do with the Christmas spirit at the club? Of course! I sent an email to my old mate, Mark Condi, making a few suggestions for festive fun. Like my elves, Mark got right to work! My North Pole carollers will be spreading the Christmas cheer throughout December. I do love it when they sing Santa Baby! I won’t get homesick as the club has transformed into a winter wonderland, including a giant Christmas tree in the foyer waiting area. If you’re dreaming of a white Christmas, I’ll be letting it snow with a special snow machine on The Rock (outside Greenfield Station Bistro) for the visiting penguins, polar bears, reindeers, owls and elves.

When will you be here Santa? I’ve cleared my very busy schedule and will be appearing throughout December at Bankstown Sports, see dates on page 18. Kids can get a selfie with me outside Greenfield Station Bistro at the Santa Photo area. I hear you have a special Christmas kid’s competition? Why yes! Kids need to fill in three simple questions: Where is Patrick the Polar Bear? Where can you see Paige the Penguin and her friends? And what is your favourite Christmas treat? Mine is Mrs Claus’ shortbread! Pop your entry into the barrel near the giant Christmas tree in the main foyer and one lucky child could win a yearly pass to Monkey Mania. Find out the winner at the Children’s Christmas show on Sunday 20 December. Ho-Ho-Hoping you win! And what else is on for the kids? Don’t miss the stage show Holly & Jolly’s First Christmas on Sunday 20 December in The Grand Ballroom at 10.00am and 2.00pm. Whoops, is that the time? Better get back to the toy factory! Don’t forget to be nice, not naughty. I’ll be making a list and checking it twice, you know.

Thanks Santa! * Festive trading hours will be varied over the Christmas period. Check opening hours on the back cover. Bankstown Sports InTouch

BEATLE MAGIC! The wonderful Beatle Magic show makes its way to The Theatre on Saturday 5 December. To prepare you for the magical mystery tour we asked the band a few questions. How do you choose which Beatles songs to sing? Do you like a certain period or do you draw from the whole catalogue? We find that because The Beatles had such a large catalogue of songs that everyone likes, we try and please everyone by singing songs from throughout their career. We do a lot of Number Ones, but we also sneak in a few album tracks to keep the die hard fans happy. Something for everyone. Has the band ever been to the legendary Cavern Club in Liverpool in the UK? No not yet, but we were asked by them to contribute to a world celebration of 50 years since the release of From Me To You back in 2014. We were asked to represent Sydney joining other Beatles tributes from around the world to be part of a medley video that was uploaded to YouTube on the very day 50 years after the original was released. That was such an honour for us.

Where is the magic in the show? It’s in the sound and attention to detail. We have been described by some of the big names in the industry as one of the most soundalike Beatles tributes in the world. We have that WOW factor. How does the band go with the Liverpudlian accents? Very well, we have had some of the biggest compliments from scousers from here and overseas. If you watch the Beatles movie A Hard Days Night enough times, it tends to rub off! Where is the band originally from – don’t say Liverpool?

SATURDAY 5 DECEMBER THE THEATRE TICKETS $15 ALL Doors open 7.15 pm. Showtime 8.00 pm. Reserved seating. Purchase tickets at BankstownSports.com or at main reception.

We come from just north of Liverpool. A place called Cabramatta. Haha. (True). Tickets are only $15, to purchase visit BankstownSports.com or main reception. Bankstown Sports InTouch

Bankstown Sports General Manager, Andrew Kelly, says “Movies will screen multiple times a week with a variety of session times. This makes it perfect for combining a movie with lunch or dinner at one of our ten restaurants. What better way to enjoy a day or night out in comfort and style.” Watching movies at the club will soon become a favourite outing for the family as all tickets are at affordable prices for the family and children will be catered for during the school holidays with age-appropriate films. “We’ve always provided an exciting variety of live entertainment at our club but the addition of movie screenings means we now have a full and dynamic offering with something for absolutely everyone,” Andrew says. Every 14 February, lovers around the globe celebrate their relationships with chocolate, flowers, cards, romantic meals and other gifts. The international day of romance dates back to the 5th century. There are a few different versions as to why we have a Valentine’s Day, but most agree it is named after Saint Valentine, a bishop who held secret marriage ceremonies of soldiers in opposition to Claudius II who had prohibited marriage for young servicemen.

In 1964 a new wave of rock and roll swept around the world from the UK, as bands like The Beatles, The Rolling Stones and The Animals caused a perfect entertainment storm. Now you can hear The Animals live at Bankstown Sports as they tour direct from the UK. Featuring two founding members of the original band, The Animals will perform in The Theatre on Saturday 27 February, one of only two Sydney shows. Bruce Springsteen recently revealed on stage in the US that it was The Animals who were his favourite British Invasion band of the 60s and 70s, declaring We’ve Got To Get Out Of This Place as a song that has informed all of his own songwriting. The Animals were also the second British band after The Beatles to top the American charts with their multi-million selling and instantly recognisable House of the Rising Sun. Hear these hits and others like Don’t Bring Me Down and Don’t Let Me Be Misunderstood and relive a formative time in the history of music with The Animals, direct from the UK, appearing at Bankstown Sports. Tickets are just $40 or you can book a whole booth for 4 people for $180 and make a real night of it!

CHRISTMAS VALET PARKING AND CARWASH

K I-TAS AS T L U M M HRIST E C S I TH SAV AND TIME! SOME

There’s nothing quite as stressful as the Christmas rush. Save time and your sanity searching for a car park by trying the club’s handy valet service. Bankstown Sports Club Carwash and Valet are dedicated to delighting customers with squeaky clean vehicles and prompt, efficient parking options. Let the club take care of your car this Christmas. Having a clean car and parking spot is guaranteed to put you in a festive mood!

The club has a range of cleaning services from standard, deluxe to executive services as well as interior and exterior detailing (please note 24 hour notice must be given for a detail). And you don’t have to worry that it’ll eat into your Christmas budget.

CLUB CARWASH

The Club Carwash is located on the green level of the car park, entrance via Greenfield Parade or Mona Street.

Now that the warmer months are upon us, your car might be looking worse for wear from sandy trips to the beach and lack of rainfall to wash away the season’s dust and grime. Washing your vehicle is an important part of car maintenance and a great way to protect your investment.

Open: • Monday to Thursday, 8am – 5pm • Friday and Saturday, 8am – 9pm • Sunday, 9am – 5pm

Carwash prices start from $20 (member price for external wash). Park your car, head into the club and relax knowing our attendants will be working hard to give you an incredible result.

The club offers a valet service on Friday and Saturday evenings when it can get very busy. During the Christmas period there are more functions and it can be quite hard to find a park. Pull up in front of the club and for a small fee, we’ll park it for you and bring it back to you. If you’re in a hurry or you’re dressed up for an event and don’t want to walk around in the car park, you can walk straight in the door. It’s so handy. • Friday, 6pm – 11pm • Saturday, 6pm – 11pm

Addicted to love! The Grand Hall was the scene of great joy as Joanne and Eben Caldwell said I do in a summery beachthemed wedding which defied the rain outside. It was a second chance at love for devoted parents Joanne and Eben Caldwell when they married in an evening ceremony in front of 110 guests in The Grand Hall on Saturday 26 September. Dressed in a gorgeous ivory gown with a small train, Joanne was walked down the aisle by her two daughters Ashley, 21 and Jemma, 17, who were also her bridesmaids. The Illawong couple exchanged vows underneath a stunning love heart arch made of balloons. “It was a magical moment making our commitment to each other in front of our closest family and friends,” says Joanne. “Both of us had been married before but Eben had been alone for 13 years and myself six years. It was lovely to celebrate having found one another.” The cold, rainy weather outside couldn’t put a dampener on the relaxed ‘beach themed’ reception, which included a fun lolly station for guests. “The weather was first and foremost in our planning and we were relieved Bankstown was so well covered!” says Joanne. The couple and their guests were blown away by the club. “The Grand Hall was amazing,” says Joanne. “The balcony meant our guests could enjoy fresh air, having an elevator was very handy for the older guests and the facilities were very new and modern. The staff were friendly and helpful and they set up the tables beautifully.” Some guests even compared Bankstown Sports to a lavish Las Vegas Casino! “Bankstown Sports has the wow factor,” says Joanne. “Our guests from New Zealand had never seen such an amazing club with the water, fish and rainforest area, plus all the restaurants. They were gobsmacked and commented that they had never seen such a beautiful club, except in Las Vegas!”

J OA N N CALD E AND EBE WELL N

The couple decided on a buffet for their wedding feast. “We had an array of lovely salads and meats as well as a full dessert buffet, which included cake rolls, fruit salad and pavlova. My favourite dish was the incredible mushroom soup. My friends are still talking about it.” The couple cut a three-tiered white chocolate mud cake made by a friend, and guests were entertained on the night by Joanne and Eben’s talented neighbours, the Milic family. The newlyweds danced to You’re Too Good To Be True by Frankie Valli. “We had dancing lessons for a few months,” says Joanne. “We both have left feet but perseverance paid off and the dance was a success.” The Bankstown Sports Events Department helped guide the couple through every detail of the event. “Eben and I met with the Events Department on numerous occasions and spoke regularly on the phone. They were very professional and it was fantastic to have them there on the day to make sure it ran smoothly.” As the party wound up, many of Joanne and Eben’s guests opted to stay at the onsite Travelodge Hotel. “Once we knew international and interstate guests wanted to come to our wedding we needed a venue that had accommodation as well as a function area,” says Joanne. “Bankstown Sports was the perfect choice. Many of our guests stayed the night – around 15 rooms were booked by our guests, who found it so convenient.” Eben and Joanne honeymooned in Phuket for 11 days, returning to a lifetime of memories of their special wedding day. “We had a beautiful wedding day and it was so much fun,” says Joanne. “It couldn’t have been better.”

BARBEQUE SEASON Bankstown Sports’ Executive Chef, Helmut Gundendorfer shares his secrets to cooking the best steak and the perfect barbeque. As the weather gets warmer and the season’s best produce becomes available, summer is the perfect time to fire up the barbeque for a great family lunch or dinner. “The most important thing you need to do is buy a good quality steak. Make sure it’s grain fed and has been graded by Meat Standards Australia,” Chef Helmut says. “Next, get the grill really hot so the meat is sealed properly to ensure the juices don’t escape. Seasoning is important for great flavour. Ideally, use sea salt or Himalayan salt, or whatever you like as long as it’s good quality. Once you have cooked it how you like it (rare, medium or well done), take the steak off the grill and let it rest so when you cut it the juices don’t run out.” When it comes to checking if a steak has been cooked, rare, medium, or well done, Chef Helmut relies on touch. “A rare steak feels very soft and a well done steak is firmer. This is the sort of thing that takes experience but it’s something you can learn over time as long as you keep at it,” he explains. Chef Helmut’s secret to cooking a great barbeque is to use fresh ingredients and don’t be afraid to try something different. “When I have a barbeque at home I start by 36

Bankstown Sports InTouch

cooking mini cheese kransky, Spanish chorizo sausage, served with mustard and haloumi (cheese) wrapped in bacon with a balsamic glaze.” “For the main meal, I like to cook a quality rib eye cutlet, Tasmanian salmon or lamb cutlets marinated with mustard and rosemary. Prawns with garlic and chilli are great, or lamb kofta, which has a great Middle Eastern flavour, served on pita bread warmed on the barbeque with lemon juice, oregano, garlic dip or hummus.” For vegetarian options, Helmut recommends corn on the cob and chargrilled asparagus, eggplant and zucchini served with a sprinkling of parmesan cheese, aioli, chilli or lime. For something sweet to finish off the meal, try grilling fruit such as mango, pineapple or peaches, using brown sugar to caramelise, then serve it all with ice cream. Perfect for summer, no sweat! You can keep up to date with Chef Helmut’s great tips and delicious dishes on Instagram at @BankstownSports or follow #ChefHelmutCreates.

GREENKEEPER AWARD The NSW Bowling Greenkeepers Association has announced Adam Troth, the head greenkeeper at Birrong Sports, as the Greenkeeper of the Year. Sponsored by Living Turf, the award takes into account not only the surface prepared, but the work put in behind the scenes by the greenkeepers. The award is the most prestigious accolade awarded for bowling greenkeepers in NSW. “It was awesome to be recognised by my peers,” says Adam. “The judges have a very high standard, so it was great to know they deemed the greens at Birrong Sports a high class standard. There’s only been 12 winners of this award in 20 years, so I’m honoured to have won it this year.” The Greenkeeper of the Year Award is presented at the annual Bowls NSW Legends Vs NSW Greenkeepers Day held in July each year. The award was presented to Adam on 31 July by Mike Darlington of Living Turf. Nominations are considered by a panel of judges who undertake thorough site visits. Adam had been nominated for the award several times before but this was his first win.

“It was a complete surprise,” Adam says. “They announced the award after we had played Legends Vs NSW Greenkeepers. My family had come down to watch me receive the award, which made it even more special. I have one award for home and one that’s displayed at the club.” Adam has been the head greenkeeper at Birrong Sports for 15 years and a greenkeeper for 26 years. He’s hosted World Masters Games, Premier League and State finals over the years. “I love my job. I play golf and lawn bowls, so that gives me an understanding of how the greens need to be for the players,” says Adam. “I enjoy working at Birrong Sports and have two other great staff here with me who help maintain five greens and surrounding gardens.” The award recognises outstanding performance in greenkeeping, including quality of greens and surrounds, machinery storage, chemical storage, awareness of

environmental programs and professional approach and contribution to the industry. “People think we just cut grass, but there’s quite a bit more to it,” says Adam. “We also carefully maintain the soil condition, checking PH levels and microbial activity and have to comply to strict environmental standards. It’s constantly challenging and interesting work.”

SWING IN TO

BAULKHAM HILLS Baulkham Hills

CHRISTMAS FAMILY FUN DAY Christmas is arriving early for the families of Baulkham Hills Sports Club. The club is hosting a Christmas Family Fun Day on Sunday 20 December from 12pm until 4pm with a Christmas Toy Raffle to follow at 5pm. There’ll be no shortage of activities to keep the kids entertained. Kids can pat and feed their favourite furry friends at the Petting Zoo. There’ll be a selection of farm animals including a sheep, baby lambs, kid goats, duckling, rabbits and chicks. Baulkham Hills family, the Kelly’s, can’t wait to join in the fun. “My kids James, 5 and Olivia, 8, absolutely love animals and will adore being able to pat their favourites,” says mum Nicola Kelly. A kids disco will burn off some energy and will include face painting, games, silly hair spray, tattoos and nail painting. Of course no family day would be complete without rides, and the kids will be able to try out a mini Ferris wheel, Wizards Flight and the Jurassic Park Inflatable which features two slides, rock climbing wall, two dinosaur rockers and a large jumping area. It also has safe net walls, so parents can watch their kids have fun from

all sides. “The inflatables, disco and activities will be a great school holiday treat for our kids,” says Nicola. “James can’t wait to let loose on the Jurassic Park and try rock climbing. Olivia is looking forward to the face painting, tattoos and nail painting. My husband, Damien and I will also be able to get a rare moment to relax and catch up with our friends!” The highlight though will no doubt be a visit from the big man himself, Santa, at 2pm. “James and Olivia can’t wait to meet Santa and make sure he’s across their Christmas toy list!” says Nicola. “Baulkham Hills Sports Club is a great venue for local families, and this event is fantastic in the lead-up to Christmas, which is often very busy and stressful. We’re always looking for activities in the school holidays, and the Family Fun Day provides hours of entertainment for all of us.” All snacks and drinks will also be provided on the day, catering to even the fussiest little tummy.

BANKSTOWN SPORTS BOWLS Bowls Club’s Christmas Drive The Bankstown Sports Bowls Club’s Christmas Drive is the perfect opportunity to lend support and raise the spirits of sick children and their families at The Children’s Hospital at Westmead. For over 20 years member Brian Gray and his colleagues have been collecting toys and cash for the Westmead Children’s toy drive, donating thousands of dollars for new equipment for the oncology ward and sackfuls of toys for the children. “It breaks your heart seeing these sick kids in hospital doing it tough. It’s great that we all chip in and hopefully make a difference where we can at this time of year,” says Brian. “Every little bit helps and it’s a real team effort every year. The last few years the money raised has gone to home monitoring equipment so the kids don’t always have to come into the hospital for treatment and instead they can stay in the comfort of their own home. This year money raised will go towards equipment again and we’re hoping to collect hundreds of toys. We usually fill up the van, which is fantastic.”

MONEY RAISED IN … 2012: $3000 + lots of toys 2013: $4000 + lots of toys 2014: $5000 + lots of toys 2015: Let’s beat the RECORD!

WHAT YOU CAN DO? Drop a new and unwrapped toy to the Bowls Club before 12 December 2015. The toys will go to the volunteer section at the hospital, arriving unwrapped so that volunteers can match the toy with the child and then wrap them on site. Good ideas for toys include colouring books, storybooks, DVDs, board games, puzzles and arts and crafts. “Think of gifts that they can play with without running around,” suggests Brian. “And consider all ages, including teenagers.” Buy a ticket to the Bankstown Bowls Club Christmas ham raffle. Volleying her way across the world is Rachel Gibson, who has represented Australia at the Youth Commonwealth Games in Samoa and the club at the World Championships. Both of these events were extremely competitive, with Rachel finishing with a junior world ranking of 80th. Another individual with a big future in the sport is Michael Bolton. Michael recently played in a tournament in Coffs Harbour where he has been named into the main professional draw. Bankstown Sports Squash Club President, Allan Condie, says “Even though we are a small club, we have a great family culture and want the best for all of our members.
