William Rolfs Greetings to all Ever’man Shoppers and Friends, Can you believe it is fall already? The weather is starting to cool off after a long hot summer. Fall is such a colorful time of year. The leaves start to turn and all of the earth tone colors are visible in displays around town. There seems to be a festival every weekend this time of year. I really enjoy the Gulf Shores Annual Shrimp Festival and the Great Gulf Coast Arts Festival. Hopefully, you will get to enjoy some of these great local events.

As you read through this special holiday edition of The Healthy Alternative (THA), take note of all the products and services we have added in the past few years. We now supply all of your holiday meal needs from whole dinners to sides and desserts. We also offer many items needed for those annual holiday parties at home and work. We offer many different party platters and will custom create to meet your needs. Just give us a call or stop by the Cafe for details and pricing. We want to make your holidays more enjoyable.

Our new fall community garden will be planted soon. We continue to work with Cat McCreery, a local gardening expert, to design and plant our garden. Cat teaches both staff members and customers how to maintain an abundant garden in a small space. She also teaches on the many ways to protect your plants from insects and disease naturally. Everyone is welcome to attend Cat’s monthly class held in the Educational Center. Please watch and enjoy as your co-op’s educational garden grows.

Ever’man management is happy to report great results; your cooperative is performing very well and we have many plans for the future. We are a couple years into our completed new store and

General Manager with strong member support our sales continue to grow above our original projections. Our financial position is strong and getting stronger. The Board of Directors and I have begun the process of researching a second store. Last year, we hired a consultant to perform a market study to find the right area for locating another store. You may have been asked a few questions while shopping.

Your answers combined with answers from our staff and other experts, help the consultant predict areas that will best support a new store. This study is now complete and we have been looking in areas noted by the study. We hope to be able to report good news soon.

Would you like to help families in need this holiday season?

Ever’man will be partnering with the “Be Local” team from the Pensacola News Journal. We will be offering meal bags for purchase in the store. You may purchase one or as many as you like. We will then deliver the bags, in collaboration with area nonprofits, to needy families in our community. Please join us in this cause. We want to show our thanks by helping someone else who needs our support. Watch store communications for more details.

In closing, I would like to remind everyone about board elections.

If you have been a member for at least six months (without interruption) and are interested in being on our board, visit our website or ask customer service for an application. The deadline for applications is Tuesday, November 8. The election will be held the first couple of weeks in February 2017. There are three Board of Directors positions for this election.

Dave DeBlander We have so much to be thankful for this Thanksgiving season. We live in one of the most beautiful spots in the world with sugar white sand beaches. We enjoy 340 days of sunshine and our thriving downtown, growing by leaps and bounds, offers us and our children an exciting future.

Furthermore, our community is filled with culture and history which makes it a great place for tourists and for residents and their families, a place with many options for a fun-filled weekend. Indeed, we are lucky to live in Florida, in a place where people spend thousands of dollars to vacation! At Ever’man, we have a beautiful store, in full service to its members and customers, with our biggest problem being where to park during the heavy rush hours around lunch and dinner time. The staff and management are working in harmony along with the Board of Directors as we endeavor to make this a community store that everyone loves, appreciates and patronizes.

Our Educational Center is filled with classes all month long and every day. The value of a membership at Ever’man increases as management continues to find ways to add benefits to already existing member benefits such as Member Only sales, complimentary classes open to both members and the community, and the privilege to run for the board and to vote for the Board of Directors.

Our cafe continues to be the talk of the town with a wide selection of wonderful, nutritious organic products both at the hot bar and the salad bar. Every day I seem to meet more and more people who are aware of and stop in at the cafe to get a delicious, nutritious meal. We

have come a long way from our former little deli that was stuck in a corner of the old store. Your Board of Directors by no means feels that we have attained everything you want, so we strive to bring new and fresh ideas to meet our Ends Statement, which ultimately results in store improvements, more education and outreach to the community. All members are welcome to come to our board meetings to sit in and listen and see how board work is conducted. Additionally, all members are welcome to speak during the open forum portion of our board meetings. Your input, thoughts, and suggestions are greatly appreciated.

As the store increases sales, we have been able to lower prices while continuing to have the highest standards for the items we stock. We know that members and customers trust us to carry the highest quality, healthiest, organic, natural, non-GMO products and that is something that we don’t take lightly. Your board strives to continue to earn that confidence. Over the years Ever’man has become a vital part of the community and we are thankful for the great community support.

The best tip for a successful holiday is planning. When cooking the meal timing everything so it comes out ready to serve at the same time can be overwhelming. When planning to prepare a frozen turkey allow three to four days to thaw in the refrigerator. Almost all hams are now fully cooked so you want to use lower heat and heat longer to get it up to serving temperature. Side dishes should be prepared ahead of time, cooked off early and need only reheating at meal time, so that your time is spent visiting with friends and loved ones instead of stressing over meal preparation. With a good plan, you will be ready to enjoy!

My best tip for the holidays is to plan ahead so you can get the most enjoyment with the least amount of stress out of the season. To make sure we have all the items that you are planning to serve for your holiday meals, our department staff has been busy securing great pricing on seasonal produce. We will have the season’s best: sweet potatoes, cranberries, fall squash, potatoes, onions, pearl onions, fresh herbs, cooking greens, celery, beans, apples, citrus and much more. Our best tips for you over the holidays are to take time to relax and take supplements to boost your immune system.

The best tip for a successful holiday is to call the Ever’man Cafe and let us do the cooking. The cafe will be featuring rotisserie turkey dinners complete with sides or a vegan option. These dinners require a pre-order, forms available at the Cafe or Customer Service. We will have sides a la carte, which include: maple glazed yams with cranberries, green bean amandine, classic mashed potatoes, traditional herb dressing or cornbread dressing, homestyle poultry gravy or mushroom gravy, cranberry relish and dinner rolls. We will be serving the exquisite mushroom walnut loaf available for our vegan/vegetarian consumers. We offer the option of ordering individual plates. For the last course of your meal, choose from a variety of house made holiday pies and cakes.

Pumpkin Gingerbread Your Seasonal Favorites

The holiday season is a time to celebrate by sharing good food with family and friends.

What better way to greet your guests than with the warm, welcoming scent of pumpkin gingerbread right as they walk in the door. Make the most of special moments by taking in all the beautiful colors and fragrant aromas that fill your house and kitchen. Use these recipes as inspiration to fill your meals with organic and high-quality ingredients that leave your guests feeling truly nourished.

Ingredients

2 cups sugar 1/2 cup canola oil 1 cup applesauce 1/2 cup blackstrap molasses 4 large eggs 2 teaspoons vanilla extract 1/2 cup water 1 15-ounce can pumpkin puree 1 tablespoon ground ginger 1 teaspoon ground allspice 1 teaspoon ground cinnamon 1 teaspoon salt 2 teaspoons baking soda 1/2 teaspoon baking powder 2 cups all-purpose flour 1 1/2 cups whole wheat flour

Preparation

• Preheat the oven to 350°F. Grease two 9 x 5 inch loaf pans.

• In a mixing bowl, whisk together the spices, salt, baking soda, baking powder and flours.

• In a second large mixing bowl, whisk together the sugar, oil, applesauce, molasses, eggs, vanilla, water, and pumpkin until smooth and well blended. Add the flour mix to the wet ingredients and blend well, then pour the batter evenly into the loaf pans.

• Bake for 45-50 minutes until a toothpick inserted into the center of the loaf comes out clean, being careful not to over-bake. Let cool for 15 minutes before removing from the pan.

Serving Suggestion

Pumpkin bread is a delicious breakfast treat served warm with a smear of cream cheese and a drizzle of honey.

Mushroom Gravy Ingredients

1/4 cup olive oil, divided 3 tablespoons finely diced onion 2 tablespoons finely diced carrots 2 tablespoons finely diced celery 1/2 cup sliced button mushrooms 1 3/4 cups vegetable stock 1/2 tablespoon tamari 2 teaspoons chopped fresh rosemary 1/2 teaspoon dried thyme 3 tablespoons all-purpose flour

Preparation

In a medium saucepan, heat 1 tablespoon olive oil and add onion, carrots and celery. SautĂŠ until softened, then add the mushrooms and sautĂŠ until browned. Add the vegetable stock, tamari, rosemary and thyme and bring to a boil.

In a small skillet, heat the remaining olive oil and whisk in the flour to form a roux. Add the roux to the stock once it begins to boil and whisk until smooth. Bring to boil, reduce heat and simmer for 10 to 15 minutes or until it reaches desired thickness. Serve immediately.

Serving Suggestion

This gravy complements pan-seared chicken breasts as well as vegetarian holiday favorites like garlic mashed potatoes, lentil loaf, rice pilaf, couscous or vegan turkey.

Kale Cranberry Salad Walnuts, cranberries and a tangy dressing give this salad crunch and the perfect balance of sweet and sour flavor.

Ingredients Salad

2 large bunches lacinato kale, thinly sliced 1/2 cup red onion, thinly sliced 1/2 cup dried cranberries 1/2 cup walnuts (toasted, optional)

Dressing

1/3 cup extra virgin olive oil 2 tablespoons cider vinegar 2 tablespoons orange juice 1 1/2 teaspoons Dijon mustard 1 1/2 teaspoons honey 1 teaspoon orange zest 1/4 teaspoon salt

Preparation

Place the kale, onions, cranberries and walnuts in a large bowl and set aside.

Whisk together all of the dressing ingredients in a small bowl, drizzle the dressing over the mixed kale and toss well.

Serving Suggestion

Serve this salad with roasted chicken or turkey, roasted vegetables or red meat, such as brisket.

Cinnamon Apple Stuffed Squash

Tender acorn squash is filled with apple and dried cranberry stuffing for a delectable side or main dish.

Ingredients

2 acorn squash, cut in half, seeds removed 3 tablespoons unsalted butter 3 cups diced yellow onion 2 celery stalks, diced 3 cups diced apple, cored and seeds removed (about 2 large apples) 1/2 cup dried cranberries 2 tablespoons maple syrup 1/3 cup water 1/2 teaspoon cinnamon Pinch each of salt and black pepper

Preparation

Preheat oven to 375°F. Place acorn squash halves face down on a rimmed sheet pan or baking dish and add 1/2 inch of water to the pan. Bake squash for 40 minutes.

While the squash is baking, heat the butter in a saucepan over medium heat. Add the onion and celery and sauté for 5 to 10 minutes until soft. Add the apples, cranberries, maple syrup, water and cinnamon; stir well and cook another 5 to 10 minutes until the apples begin to soften. Season with salt and pepper. Remove from heat.

After the squash has baked for 40 minutes, remove from the oven, turn them cut side up, and fill each with the apple stuffing. Place back into the oven and bake another 15 to 20 minutes until the squash is tender. Serve warm.

Serving Suggestion

Slice the stuffed squash halves into wedges to serve as a side with ham, turkey or chicken, or serve each half as a vegetarian entrée.

Chris Kimberl Ever’man Assistant Kitchen Manager Can you share with us what prepared you to be the Ever’man Assistant Kitchen Manager?

Growing up I spent a lot of time in the kitchen with my mother, I believe that is where my interest in cooking started. When I was nineteen I started my first cooking job on Pensacola Beach, and for the next several years I found myself in and out of the restaurant business. In my late 20s, I was accepted into a threeyear apprenticeship program in New Orleans where I worked and learned from some of the best chefs in the business. After my apprenticeship my wife and I moved back to Pensacola to raise our two children. Shortly after, I opened up a catering business with long-time friends. Over the course of my twenty five years of restaurant experience I have learned one important lesson: always expect the unexpected. I do and that means I am able to deliver a delicious plate of food every time.

Tell us a little about your interests and how you spend your free time?

Family is a big part of my life. When I’m not working I spend time with my wife, Jeanne, and my kids, Henry and Grace; we like watching movies and streaming YouTube videos. I also enjoy cooking for the youth group at our church on Wednesday nights. But the one thing I like the most is relaxing by doing nothing at all.
