Happy New Year to all of our members and patrons! The holidays have come and gone; I sure hope you and your family were able to spend time together. My family and I sat down to several really nice meals at which we spent hours just talking and enjoying each other’s company. If you are like me, overeating was part of your holiday. It’s now time to refocus and get back on track to healthy eating. Inside of this publication, there are many tips, recipes and suggestions on how to get started on your healthy eating plan. Please take a little time and enjoy this issue. As always, Ever’man is here to help. We have the most wholesome and nutritious foods you and your family need. January is a month full of New Year’s resolutions and we are here to support you. Please do not hesitate to ask our knowledgeable staff to answer your questions, both in the store and on the phone. They are happy to provide you with friendly service. Here at your co-op, we had a really good year. We plan for 2017 to be just as prosperous. The financial condition of your co-op is very healthy and the sales continue to increase with new customers and members. This past year we added many more products to our shelves including a huge line of co-op only brands like Field Day and Natural Value. These items are great quality products at a very reasonable price. We will be adding more product lines as they become available to your co-op. You might have also heard some really good news for your co-op. After years of planning for the opening of a second location, the first step toward making that a reality
was taken in 2016, when we located a piece of property on Nine Mile Road that really fits our needs. The Board unanimously approved the purchase of this four acre property. Of course, it will take time to develop this project. We are in the process of hiring an architectural firm to help us design the right building for our needs. I expect it to take anywhere between 18 to 24 months to get the store designed, approved, built and opened for business. This will be our first store built from the ground up. We are as excited as you are, but please be patient as we go through each stage with care and diligence to ensure the result is a store that will delight members, customers and staff alike. This time of year is board election season at your co-op. We have an uncontested election this year. There are three seats up for election and only three candidates. Therefore, all three candidates (all incumbents) will be reseated for three year terms. Please help me show appreciation to Stephen Moody, Kelly Oden and Lynn Jackson for their willingness to volunteer for co-op service. A three year term is a big commitment. We appreciate everyone on our Ever’man Board of Directors. In closing, I want to thank you for your support of our co-op. It’s this support that keeps us financially healthy and growing. We truly appreciate each and every member and patron. I look forward to seeing you in the store soon.

New Year, New Store! Ever since I have been on the board, going back to 2007, the Ever’man Board of Directors has discussed the viability of a second store. This month, that idea has become a reality as we have purchased a great piece of land on Nine Mile Road. Plans are to break ground as soon as possible. To arrive at our decision, we had our national cooperative consultants help us find the right area of town. Additionally, they performed an exhaustive market study to inform us on other pertinent factors. Our decision to open a second location has not come about haphazardly, but literally after years of work and research. When the opportunity to purchase this land came available, it was obvious that this location was the perfect spot for store number two. The comments that we have received from members and shoppers have been overwhelmingly supportive and we are quite confident we have made the right choice. Now the work begins as we collaborate with our architect to design a store that will incorporate our Ends Statement. Our desire is that the Nine Mile Road Store will make a signature statement at this location. Beautiful, sustainable, friendly, innovative, convenient, futuristic, inviting, economical, stateof-the-art, sociable, welcoming, hi-tech, attractive, etc. are just some of the concepts that we are excited about as we plan this second store. Financially, we are poised to make this move as the co-op’s financial picture is stable and projected to continue to do well. Our General Manager William Rolfs has developed a very competent staff that we know will be able to handle all the responsibilities and hard work that they will face in making this move. Your Board of
Directors is up to the task and we are very excited to do our part. The relationship between the Board and the staff could not be better. What can you expect as a member or shopper? First of all if you live on or near the north side of town, you will have a shorter, more convenient ride to the Nine Mile Road Store. This second store is projected to have about the same retail space as our Garden Street location and will be the full-service store you have grown to love. We bought a sizeable piece of land so there will be plenty of room for parking and as we did with the Garden Street Store, we desire to make the Nine Mile Road Store more than just a grocery store. Our vision for the second location has it being a community gathering place that will encourage folks to have a healthy, happy lifestyle and a place to enjoy all the results of that way of living. What that looks like is our job to create and, of course, we welcome your input as this is your store. Ever’man is a cooperative, governed by the members and not by a corporate entity. Let us know, during this development stage, your thoughts. We have a suggestion box at the customer service desk and our board meetings are open to the membership. Most of our Board of Director meetings take place on the last Monday of every month in the Educational Center building and all members are invited. Pensacola is pumped, the members are pumped, the staff and the board are pumped and we are ready to make this big leap into the future. Your support is welcomed and appreciated and now, yes, we can begin thinking about store number three down the road!
2017 Election Results
The 2017 Ever’man Board of Directors election was uncontested. The Board had three seats available and three applicants. The applicants were Kelly Oden (incumbent), Lyn Jackson (incumbent) and Stephen Moody (incumbent). These candidates meet the requirements for continuing as a board director and will be seated at the March meeting of the Ever’man Board of Directors. It has been my privilege to serve on the Ever’man Board of Directors for the past six years. I am a native Pensacolian and lifetime member of Ever’man. I love this area and have a commitment to see our community thrive, especially in the areas of health and wellness. My long-time experience as a member, teacher, business owner, retreat presenter and leader in the local health and wellness community gives me a unique insight into the needs of the Ever’man community. I have studied and applied many whole food and wellness principles to create a healthy lifestyle for myself, my family, my many students and business clients. My years of experience in the field of health and wellness is a valuable asset to the Ever’man Board. I am honored and thrilled to continue to serve on the Ever’man board!
Lyn Jackson I grew up in Pensacola and first joined Ever’man while attending Washington High School. From day one, Ever’man was always more than a grocery store to me, and the sense of community imparted by staff has stuck with me. The shared values surrounding community, healthy foods, nutrition, and stewardship are at the heart of both my professional and personal life. I am the owner of Dunn Media, a media production firm in Pensacola that works closely with clients on branding and visual storytelling. As an avid athlete and sportsman, I value having Ever’man provide the best basis for a healthy diet anywhere in our area. As a board director, I support the vision that Ever’man is more than a store, is looked to as a leader in the community for healthy eating, community outreach, and providing an exceptional place to work.
Stephen Moody I’ve been privileged to serve on the Ever’man Board of Directors for the last three years. In that time, I’ve learned how to best work on a cooperative board and the dedication it takes to align decision making with both our Ends Statement and the seven cooperative principles. I’m proud to be a part of Ever’mans’ vital health and wellness work in the community and to continue in my role as a director. I have been interested in healthy living for over 25 years and I love the fact that Ever’man is a trusted source for those looking to eat wholesome, nutritious food and learn new skills for developing a healthy mind, body and spirit. For the past ten years, I have led the creative team of a local publishing company. This experience has helped me to hone my leadership and organizational skills and has given me a broad understanding of our community as a whole, as well as the opportunity to develop valuable contacts at all levels of local government and industry. My daughter and I shop at Ever’man daily and we love the sense of community offered by our local cooperative and the friendly, knowledgeable staff.

Ever’man Meal in a Bag Thanks to your support 172 local area families received a wholesome meal! Because of the generosity of Ever’man members, shoppers and our community, The Ever’man Meal in a Bag Program was a huge success! Our goal was to
donate 160 meal bags, but with the huge outpouring of support we ended our drive at 172. You made a huge difference by providing a total of 2,236 items in 172 bags (2,298lbs) of organic nutritional food to MANNA Food
Ever’man Celebrates Success of Partnership with Community Action Ever’man is proud to continue our longtime partnership with Community Action, which is focused on serving low-income seniors in our community. We are happy to announce that after two sister agencies did an extensive community outreach, Community Action classes at Ever’man have more than doubled the last three months. One class held right after the
outreach initiative was topped out at 45 attendees. Ever’man has partnered with Community Action and the Florida Department of Health in Escambia County to provide monthly classes about healthy eating along with a cooking demonstration. These classes continue to provide valuable information about health and wellness to our community.

Ever’man Charity Eco-Friendly Bag Program In support of our local community, we were proud to be first to roll out a Charity EcoFriendly Bag Program. Since its inception of the program in July of 2015 a total of $ 2,217.09 dollars has been donated; $134.49 from members and customers who directly contributed by adding to their total purchase amount and $2082.60 from the 5 cents donated for each of the 41,652 reusable bags utilized during shopping trips. That is 41, 652 less plastic bags that got put into our local trash. Our program makes it easier than ever for members and
customers to contribute to worthy community charities. For each eco-friendly bag used, Ever’man will donate 5 cents to a charity of the shopper’s choice. From Jan. 1 through Feb. 28, Ever’man is happy to announce that our Charity Eco-Friendly Bag Program donation options will be:

Ever’man Board Announces Second Store Location We are proud to announce that the co-op is growing! Your downtown cooperative is pleased to announce plans for a second location on Pensacola’s north side. Our co-op’s Board of Directors has closed on property located at 1000 East Nine Mile Road where we will build a new grocery store, cafe and educational center. Board President Dave DeBlander further explains, “Our members have been asking for another location on the north side of town for a number of years. We believe in the power of community, the collective energy of individuals coming together to be more environmentally conscious and to live healthier lives. Ever’man is proud to be an honorable cooperative citizen and strong
community partner.” “Everyone at Ever’man is excited to expand our cooperative and our mission into a part of our community that is experiencing amazing growth. About Our Winter Community Teaching Garden The Ever’man Community Garden contains a beautiful selection of heirloom vegetables, herbs, and flowers located just behind the co-op. All of these plants were grown from carefully selected heirloom seeds, many of which have been grown and passed down in the family of our gardener, Cat McCreery, for close to 100 years. Growing a garden in Florida has some special challenges. Along with our lovely warm beachy climate also comes a wide variety of mildews, molds, funguses, and pests that can affect plants. In order to combat these problems, we utilize the natural practice of companion planting. By using this practice, we create a balance in nature, without the use of chemicals, which allows our pollinators and beneficial insects to thrive, and to work with us side by side. One of the best plants that helps to keep pests out of our garden are the Dwarf French Marigolds. These flowers line the
edges of the Community Garden from spring through September. French marigolds produce a natural pesticide from their roots that is so strong it will remain in the soil years after the plants are gone. For the winter months of January to March, you might notice we are growing a lot of lettuce varieties in the garden. The varieties we have planted thrive on regular harvest, as long as you harvest only the outer leaves and leave the center to grow. In produce there are multiple items that can help you achieve your health goals for 2017. Fresh organic fruit and vegetables are a good way to get the daily vitamins you need. Mediterranean Broccoli Salad Bring in the new year with a rainbow of colors in this simple Mediterranean-inspired recipe. Bright green broccoli combined with sweet carrots and cheerful banana peppers make this dish chock full of vitamins and nutrients. Warm salads are a great way to eat vegetables in the winter months when the body is craving heat, and cold salads might not be as appealing. Make a large batch on Sunday, and add some salad to your lunches throughout the week, or use this as a stunning side dish.
Ingredients
• 1 pound broccoli florets • 1/3 pound carrots, peeled and cut into 1-inch coins • 1 cup canned cannellini beans, rinsed and drained • 1/4 cup banana peppers, thinly sliced, stems removed • 1/4 cup lemon juice • 2 tablespoons olive oil • 1 1/2 tablespoons apple cider vinegar • 1 tablespoon honey • 1 clove garlic, minced • 1 teaspoon dried oregano • 1/2 teaspoon crushed red pepper flakes
Preparation
In a large pot of salted, boiling water, blanch the carrots for about 3 minutes, then add the broccoli florets and cook 2-3 more minutes until just tender. Drain and plunge the veggies into a bowl of ice water
to retain the broccoli’s color and prevent overcooking. Drain thoroughly once cooled. In a large bowl, whisk together the lemon juice, olive oil, vinegar, honey, garlic and spices. Add the broccoli, carrots, beans and banana peppers and toss gently.
Serving Suggestion
Making this salad a few hours ahead of time allows the flavors to meld. Like your herbs fresh? Substitute 1 tablespoon of freshly minced oregano leaves for the dried oregano leaf.

2 tablespoons olive oil 2 cups diced yellow onion 4 cloves garlic, minced 1/2 pound button mushrooms, quartered 1 1/4 cup Arborio rice 2 tablespoons tomato paste 2 teaspoons tamari 1 teaspoon smoked paprika 1 teaspoon salt 1/2 teaspoon ground black pepper 3 tablespoons lemon juice 3 1/2 cups vegetable broth, divided 4-5 cups roughly-chopped kale (1 large bunch) 1/4 pound smoked Gouda cheese, shredded
Preparation
Preheat oven to 350°F. In a large Dutch oven, heat the olive oil over medium-high heat. Sauté the onions for 5 minutes, add the garlic and mushrooms and sauté until the mushrooms begin to soften. Add rice and stir while sautéing for about 2 minutes. Add tomato paste, tamari, paprika, salt, pepper,
lemon juice and 3 cups of the broth and stir to combine. Bring to a boil, stirring occasionally, then cover with a tight lid and place in the oven for 20 minutes. Remove from oven, uncover and return the pan to the stove over medium-low heat. Stir in the kale and another 1/4 cup of broth. Cook for another 5-10 minutes, adding more broth if needed, until the kale is tender, rice is creamy and liquid has been absorbed. Remove from heat and stir in the cheese. Serve warm.

Tips for Homemade Bone Broth: • Roast the bones before you boil them to get a better flavor. Employee Spotlight: Matt Tomlin, Cafe Counter Lead Can you share with us what prepared you to be the Ever’man Cafe Counter Lead? I have worked in the food industry for over 15 years. I got my start in Nashville, Tn. managing a casual dining restaurant for ten years. During that time, I also spent two years as a corporate trainer. While I lived in Tennessee, I was also part owner and operator of a small sandwich shop in Hendersonville. I moved back to Florida four years ago to be closer to family. I have worked for Ever’man for three years. During renovations, I helped develop new procedures for the counter. Tell us a little about your interests and how you spend your free time? When I’m not working, I enjoy spending time with my wife and three boys. Certified Organic: Non-GMO And so Much More When it comes to food labels, the USDA Certified Organic seal is the gold standard and indicates so much more than just “pesticide-free food.” The label represents a sustainable, transparent and ecologically sound system of food production that not only produces abundant, nutritious, delicious food but also speaks to one of today’s hottest food topics: genetically modified organisms (GMOs). GMOs have never been allowed in organic production and remain excluded from organic certification to this day. Most people interpret the USDA Organic seal as representing what the food isn’t. Organic food isn’t contaminated by toxic pesticides, antibiotics, added hormones, or synthetic fertilizers, and it isn’t irradiated or genetically modified in a lab. Since all of these things are potentially present or true in conventionally farmed and produced foods, the best way for concerned consumers to avoid them is to look for the USDA Organic seal. But the seal also represents a much broader set of positive goals for our food system, ones that protect the land and our right to know what is in our food.
Organic Agriculture is Sustainable At its best, organic production uses sustainable practices that once established are relatively self-perpetuating and long-term solutions. These practices include: • Building healthy soil, naturally. This is done through composting, green manure cover crops, crop rotation and other time-honored methods. Organic farmers have no need for synthetic fertilizers that can pollute our water supply. • Using biological methods to control pests. Pest management can be achieved by maintaining native plants as habitats for pollinators and beneficial predatory insects that will prey on common pests. • Maintaining humane conditions for livestock. Plenty of fresh air and space to roam means animals are healthier and farmers don’t need to rely on daily doses of antibiotics to keep them well.
Organic Systems are Transparent Today, most food travels many miles and changes hands multiple times before it reaches our plate making it hard to know how it was produced. Not so for organic. Items that bear the USDA Organic seal have a fully transparent production and delivery record known as an “audit trail” that is annually documented, inspected and evaluated by third-party organic certifying agents. It’s their job to ensure organic producers adhere to the organic standards developed and enforced by the U.S. National Organic Program. What is more, many countries participate in equivalency programs that harmonize organic certification requirements internationally. This means that for something imported to the United States to be labeled as organic, it must have international documentation that its production adhered to the same standards or better than items bearing the USDA Organic seal. There are also international certifying agents that use the same criteria all over the world that meet or improve upon qualifying certification standards. Organic is a global movement that is only increasing in momentum.
Certifiers accredited by the USDA conduct periodic residue testing to further verify organic food does not contain prohibited substances, including GMOs.
Certified Organic, The Gold Standard Regardless of which USDA certified organic label (“100 percent organic,” “organic,” or “made with organic ingredients”) appears on the product packaging, none of the ingredients inside are allowed to contain GMOs. On the other hand, food bearing only a non-GMO label or claim is not making any other assurances about how it was produced. Only certified organic food that bears the USDA label is guaranteed to provide you with all the benefits discussed in this article. This is why the seal is known as the “gold standard” of food labels. National Co+op Grocers (NCG), the organization behind this website, is a founding sponsor of National Organic Coalition which advocates for preserving strong organic standards, and a partner of the Just Label It campaign that calls for mandatory labeling of GMO foods so that consumers have the right to choose.
Organic is Non-GMO GMOs are plants or animals created through the process of genetic engineering. Under the organic standards, genetic engineering is an excluded method. Genetic engineering conflicts with the basic philosophy of organic farming, which takes the approach of working with natural biological systems in order to produce healthy food. Because GMO crops are prevalent in the United States food supply (173 million U.S. acres in 2012), organic farmers must take extra steps to ensure their organic crops are not inadvertently contaminated by GMOs. These efforts are verified by their inspector each year. Methods used include buying non-GMO seeds from reputable distributors and testing them before planting, timing their planting to prevent cross-pollination with neighboring GMO crops, preserving a “buffer zone” of uncultivated land around the perimeter of the farm, and documented cleaning of farm equipment.
