WILLIAM ROLFS GENERAL MANAGER Greetings to all Ever’man Shoppers and Friends, Hard to believe that we are coming to the end of another year at Ever’man. We have had a really good year and hope you have as well. Your co-op has performed well and continues to be on solid financial ground. Sales have resumed their positive trend even after the new Publix opened on Cervantes Street. We are looking forward to another busy holiday season. As you read through this special holiday edition of The Healthy Alternative, notice all of the products and services we have added in the past few years. We can now supply all of your holiday meal needs from whole dinners to sides and desserts. We can also offer many items needed for those annual holiday parties at home and work. We offer a variety of party platters and can also custom create to meet your needs. Just give us a call or stop by for details and pricing. We are here to help make your holidays more enjoyable. On October 6th, we held our Annual Membership Party. We hope you were able to attend and enjoy some really good food and fellowship. There were more than 400 people who checked in to enjoy

the event. We had a lot of great food, a band (Bear With Me), Beer, Wine Lemonade, Tea and soft drinks and even a bounce house/ slide for the kids. I saw a lot of people really having a good time enjoying the event. I am very proud of my staff and the Ever’man Board of Directors who made this event possible. Thanks to all who helped. At the meeting, I was able to give some details on our 9 Mile Road project. We held a Ground Breaking Ceremony on the 24th of October at 10am. Of course, all members and shoppers were invited to join us to celebrate this milestone. The construction should start very soon and take about a year to finish. We believe we have designed a store to fit the area’s needs and make our members and customers proud to shop. If you picked up a copy of the Sept./Oct. Healthy Alternative, there are renderings of the building. You can also get to the digital copy from our website, www.everman.org. We will start sending out updates as the project moves forward. Again this year, we will offer our Ever’man Meal in a Bag program to help support local families during Thanksgiving. Last year, our goal was 150 bags. With your kind support, we shattered that goal by

helping more than 372 families with enough food for 5,580 meals. Again this year, we have partnered with Members First Credit Union of Florida (MFCU). MFCU will also offer the bags in each of their branches. We have set our goal higher again this year. We are hoping to help at least 400 families. MANNA will again be distributing these bags to needy families in our area. Please see more information in this issue of The Healthy Alternative. In closing, watch out for our next Board of Directors election to be held the first two weeks of February. There are three seats open, but we have not finished the slate of candidates yet. Please take the time to read the candidates’ bios in the Jan./Feb. Healthy Alternative and exercise your member benefit to vote. We make voting very easy both instore and online. I look forward to working with our current board members along with new directors that may be elected. Have a great holiday season with family and friends. I hope to see you in the store soon.

Excited. Pumped. Thrilled. Nervous (sure, but not too much.) Yes, we have broken ground on the new 9 Mile Road store and everything is set in motion for success. By success, we mean the following: 1) a beautiful destination that just happens to sell groceries, 2) an establishment that will enrich the lives of our community, 3) an example of green, sustainable business practices, 4) a provider of good, meaningful jobs, 5) an educational institution teaching the joys and benefits of a healthy lifestyle and, 6) another great asset to our exciting, growing Pensacola culture. We hope to blow everybody away with the beauty of the store,

the products and services offered and the park-like area that will be just behind the store. The outdoor seating will be adjacent to the pond with walking trails and rich foliage that will make this store something to behold. Being close to the University of West Florida and all the growth associated with the 9 Mile area and the Navy Federal complex ought to make this location a great success. As people become more aware of the importance of healthy organic eating habits and living a healthy lifestyle, the Ever‘man brand and locations will be a large footprint in our community. A big shout out needs to go to our General Manager, William Rolfs, for his diligence in bringing this project to fruition. The problems associated with putting this construction project together were monumental due to the present construction industry issues, such as higher prices for materials and the busyness of contractors. Without someone of William’s expertise and hard-work, this never would have happened. Obviously, there is still along way to go but if you see William in the store, send a thank you his way, it is well-deserved.

On a few other notes, you are seeing an increase in the cooking classes being offered in the Educational Center so look for the schedule in the store and in this issue of the THA. As we build up this aspect of the Ever’man experience, I believe you will want to attend some of them and have a great, fun learning experience. Board of Directors elections will be held in February, so please consider exercising your right as a cooperative member to vote. In closing, this second store has been something the Ever’man Board of Directors has been talking about for at least five years, and now it is happening. We know you are going to love the 9 Mile Road location and our downtown location will continue to provide the services and products our members desire. I bet it won’t be too long from now that a third store will begin to be discussed by our members, board and staff. Exciting times!!!

Perfect for leftover Thanksgiving turkey, this Brazilian stew spices things up with garlic, ginger and jalapeño pepper. Total Time: 45 minutes; 30 minutes active Servings: 4-6

INGREDIENTS 1 tablespoon vegetable oil 1 cup diced yellow onion ½ cup diced green bell pepper 3 cloves garlic, minced 1 tablespoon minced fresh ginger 2 tablespoons minced fresh jalapeño pepper 3 ½ cups diced tomatoes (1 28-ounce can) 12 ounces lager beer Salt ¾ cup peanuts, ground fine in a food processor 1 cup light coconut milk 2 ½ cups cooked turkey, skin removed, chopped Ground black pepper 3 tablespoons minced parsley 3 tablespoons minced cilantro 1 lime, zest and juice

PREPARATION In a large Dutch oven or stockpot, heat oil over medium-high heat. Add onion and bell pepper and sauté for 5 minutes. Add the garlic, ginger and jalapeño and sauté another few minutes. Stir in the diced tomatoes, beer and a pinch of salt and bring to a boil. Cover pot, reduce heat to a simmer and cook for 15 minutes, stirring occasionally. Add the ground peanuts, coconut milk and turkey. Stir and simmer, uncovered, for another 5-10 minutes. Add salt and pepper to taste and stir in the parsley, cilantro and lime zest and juice. 1. Cream butter and cream cheese together until fluffy. Add flour, sugar, salt and beat to combine. Form 2 disks, wrap in plastic wrap; chill 4 hours. 2. In a coffee grinder, grind poppy seeds coarsely then heat in a pan with milk, honey, raisins and zest. Stir over medium-low until thickened, approx. 20 minutes, then cool completely. 3. Preheat oven to 325ºF and line two sheet pans with parchment. Roll out dough to make two 12" rounds about 1⁄8" thick, then spread each with half the filling. EVER’MAN HIGHLIGHT Local Artist Spotlight: Tammy Rolfs; Ever’man Quilt Artist During the October 6th Member Party, Ever’man Board of Directors and Ever’man Managers were thrilled to accept the generous donation of an Ever’man Branded quilt from local quilt artist, Tammy Rolfs. What inspired the design and donation of the quilt? Ever’man had a quilt on loan hanging in the store. I believe it was a traveling quilt made from Co-op t-shirts. William told me the quilt was moving to another store, so I decided to make one for that spot in the dining area. How did you get started quilting? My mother ( Joyce Carlisle) taught me to sew and I was making curtains, tablecloths and things of that nature. About a year and a half ago, William’s mother (Grace Rolfs) started teaching me to quilt. I also attended a few classes at A&E Fabrics from a very sweet lady by the name of Wanda Fountaine. I have learned so much from each of these ladies. I just love designing patterns and doing this craft. I am currently working on my 11th quilt. What materials and techniques did you use in quilting? My friend (Laura Porter) gave me an older Kenmore sewing machine that she was not using. I have acquired several different measuring tools made for making quilts and cutting fabrics to the right size. I always try to use 100% cotton fabrics. I have used a few patterns, but most of my quilts are designs that I have created. 12 | THE HEALTHY ALTERNATIVE

How many hours did it take? How many pieces of fabric? It took about 4 months working in my spare time to complete the quilt. I am not really sure how many hours were actually involved. There are 5 different fabrics in the quilt and hundreds of small squares and half squares made from the fabrics. I had to send the center piece of fabric to Chicago to have the Ever’man logo screen printed on. There weren’t any screen printers locally that could print the large image. Do you have a favorite place/time to quilt? I have to be in the mood to sew and be creative, so I can keep mistakes to a minimum. I don’t really have a favorite time, but I am most comfortable working at my dining room table.

EVER’MAN IN THE COMMUNITY Ever’man Meal in a Bag Help us give a local family a wholesome meal. The Ever’man Meal in a Bag donation program is organized in partnership with Members First Credit Union and MANNA Food Pantries. The Meal in a Bag program is possible with the generous product support of National Co+op Grocers (NCG) and other vendor partners. From November 1st – November 16th, look for the Ever’man Meal in a Bag display in the co-op and in local branches of Members First Credit Union. Last year, with your generous support, Ever’man Meal in a Bag program fed more than 372 local families, and in total, the program donated a total of 7,440 lbs of organic, nutritional food. All donations go to MANNA Food Pantries in the month of November.

EVER’MAN COMMUNITY EMERGENCY RELIEF FUND During September, the Ever’man Community Emergency Relief Fund raised resources to contribute to local food banks to support the need created by Hurricane Florence. Ever’man would like to thank our members and customers who kindly contributed to our Hurricane Fundraiser. Because of your generous support, we donated a total of $1000.00 dollars to Feeding America’s local food banks in the affected areas. The Food Bank of Central and Eastern North Carolina, a 501(c)3 nonprofit organization, was quick to distribute food, water, hygiene items and cleaning supplies to the hardest hit areas of the Carolinas.

Ever’man Charity Eco-Friendly Bag Program In support of our local community, we were proud to be first to roll out a Charity Eco-Friendly Bag Program. Since the program’s inception in July of 2015 a total of $6,057.39 dollars has been donated; $272.49 from members and customers who directly contributed by adding to their total receipt purchase amount, and $5,784.90 from the $.05 donated for each of the total 118,012 reusable bags utilized during shopping trips. That is 118,012 less plastic bags that ended up in our local trash. Our program makes it easier than ever for members and customers to contribute to worthy community charities. • Create stunning meatless main courses with stuffed butternut squash, a homemade lentil loaf, or Tofurky Roast. • Make a festive quinoa salad featuring lots of green and red vegetables, and add cranberries for sweetness. • Roasted organic, seasonal veggies is always a simple, crowd pleasing side dish.
