Greetings to all our members and patrons, I sure hope you are enjoying this great weather. We have had some rain, but it has really helped our Community Garden to grow. We have a bountiful garden going here at Ever’man. Heirloom plant specialist, Cat McCreery, has been hard at work every week; she works in the garden every Monday from 8am–10am. She is really good at teaching while she works so stop by and pick her brain sometime.

The harvest is already coming in. The Cafe has already used long beans, okra, cucumbers, Malabar spinach and a variety of herbs. If you want a sample, just ask at Customer Service.

On Saturday June 4, we held our Annual Spring Membership Meeting. We estimated just over 350 people attended during the three hour event. There was great music by Brooks Hubert, very delicious food prepared by the Ever’man Cafe, friendly fellowship and some positive news from our board. There was even a bounce house for the young ones. Everyone seemed to have a great time. Hope you were able to attend. If you would like a printed annual report, just ask at the Customer Service Desk next time you shop. I want to thank all of our employees who worked so hard to make this event a success.

During the Spring Membership Meeting, I was proud to report on several large accomplishments from this past year. First, the store is performing well financially. This is due to the wonderful support we receive from our members and customers. Our sales continue to grow as we move into our third year in the remodeled store. Our balance sheet remains strong, so we are in a very good financial position.

Second, we were able to complete three separate financial audits this year. We had a sales tax audit by the State of Florida. Our Board of Directors also requested two separate

audits. The first was an audit of the recent expansion project financials. The second was a full financial audit. Both of these audits were conducted by Warren Averett CPAs. Both audits were completed and only a few minor changes to enhance reporting were suggested. I am very proud of my finance coordinator, Joy Soper, and her team. They work very hard to keep our books clear and concise and in adherence to Generally Accepted Accounting Principles (GAAP).

As you read through this edition of The Healthy Alternative, you will read about why a co-op membership is so valuable and important to the community. For $12 ($5 for seniors), you get a whole list of benefits. Just to name a few, you get monthly member only sales, discounted bulk special order pricing, eligibility to run and vote for the Board of Directors, discounts to events such as our cooking classes and educational seminars and to show your support of local, regional, and national organizations. If you just take advantage of the Spring Membership Meeting event, the free meal pays for your annual membership.

DAVE DEBLANDER BOARD PRESIDENT Being a member of Ever’man is just a good thing to do for a whole host of reasons. If you are a member, you are most likely aware of your valuable contribution.

If you have yet to become a member, let me share just how important your membership is: 1.) You can purchase products, every day, at a discount via our Monthly Members-Only Specials.

Not only that, but you also get discounts on cooking and educational classes, seminars and events.

2.) When you place a special order for a case of an item (most items), you receive members-only special pricing.

3.) You get a vote for the Board of Directors and, better yet, you become eligible to run for a board seat. The Board of Directors monitor the policies of the store and conduct monthly meetings. At those meetings, the board works in conjunction with the General Manager to ensure the store is on sound footing and responding to the needs and wishes of the membership.

One of our staff members, our demo coordinator Ryoko, will be presenting and conducting demos of these kid-friendly

What is the one thing in your department that contributes the most to a superior member and customer experience?

SONNY PORTER MEAT & SEAFOOD MANAGER The one thing that the Meat & Seafood Department makes sure to deliver is outstanding customer service. The way we do this is by being transparent about our sources, our standards for our products, and our recipes. We enhance your experience by employing dedicated staff available to answer questions and to address special needs and requests. We join the efforts of other departments to make sure our members and customers feel appreciated and welcome every time the walk into our store.

STEVE COCHRAN PRODUCE MANAGER Each Produce Department associate is fully trained in every aspect of the department, so that they may answer any questions that come up for our members and customers. They are also well versed in the layout of the store so they can show customers where certain items are that they are looking to purchase. If per chance they don’t know the answer to a question or where an item is located, they know whom to contact so the customer is not waiting any length of time. We dedicate our time to helping each member and customer to the best of our abilities so we can meet their needs in a timely manner.

DARRELL MELTON GROCERY MANAGER At the Everman Grocery Department our daily main focus is on customer service. Every day we have the opportunity to assist our members with their product needs. While a large number of our members and customers know specifically what is needed, we also see a lot of new customers that have no idea of what they are searching for. This is exactly when we have the opportunity to educate and help customers understand the exciting organic and natural world. Sometimes in doing the research for the answers to your questions we get the opportunity to educate ourselves – something we always appreciate. LYN SPARKS WELLNESS MANAGER The one thing in the Wellness Department that I would say contributes the most to our positive customer experience would be our knowledgeable staff. It is important to us to be able to answer our members and customer questions.

We personally work very hard to keep up with new trends and information. Additionally, the companies we deal with give us trainings and keep us informed about the new products. If we don’t have the answer readily available, we will do our best to find out from the many resources available to us.

PREPARED FOODS MANAGER The consistent quality and variety of the cafe products drive superior customer and member experience every day. We have diversified our hot bar offerings to include fresh hot pizza two days weekly, rotated different entrees weekly, and are constantly testing new products. Additionally we have revamped many bakery recipes and are offering new products and packaging. We have revitalized our cold bar to include fresh fruit and different prepared salads as well as opening it earlier in the morning to enable our guests to grab lunch to take out while enjoying an expanded breakfast bar.

Improved and additional staffing all day has enabled the cafe to provide excellent service throughout the day and evening.

SAVOR SUMMER: SANTA FE STYLE

T

ired of eating the same salads?

Shake things up a bit over the summer with this Santa Feinspired black bean and corn salad recipe with plenty of bright colors guaranteed to spark your appetite.

Feel free to get creative and pair this dish with what you’re cooking on the grill this season, whether hamburgers, grilled fish, or chicken (for Santa Fe flair). Or, opt for preparing the salad as a stand-alone entrée to serve with tortillas—but, if you choose this route, you might want to consider adding more black beans to the mix to achieve a higher level of protein. Just one cup of black beans contains roughly 39 grams of protein (this is higher than the 29 to 34 grams of protein found in only 4 ounces of meat). This easy-to-make salad feeds four and can be whipped up in practically no time at all, which means you won’t have guests waiting for long.

Ingredients • • • • • • •

1 15-ounce can black beans, rinsed and drained 1 cup corn kernels, fresh or frozen (thawed) 1 large tomato, seeded and diced 1 medium green pepper, diced 1 bunch green onions, diced 1 tablespoon jalapeno pepper, finely chopped 8 ounces feta cheese, crumbled

2 cloves garlic, minced 2 teaspoons chili powder 2 teaspoons ground cumin 2 teaspoons Dijon mustard 1/4 cup fresh lime juice (2 limes) 1/4 cup olive oil Salt and pepper to taste

Preparation

1. In a small mixing bowl, whisk together the garlic, chili powder, cumin, lime juice, Dijon mustard and olive oil to make the dressing.

2. In a large mixing bowl, combine the beans, corn, tomato, green pepper, green onions, and jalapeno pepper. Add the dressing, mix well and season with salt and pepper. Top salad with crumbled feta cheese.

Serving Suggestion

This Tex-Mex favorite is right at home served with grilled fish or burgers, or add diced cooked chicken to create a Santa Fe-style salad, served on a bed of greens, in a soft flour tortilla or atop a crisp tostada shell.

Tomato Bruschetta Ingredients • 1 pound roma tomatoes, seeded and diced • 1 red onion, diced • 1 1/2 tablespoons fresh basil, chopped • 1 1/2 tablespoons fresh parsley, chopped

Dressing • 1 tablespoon olive oil • 1 1/2 teaspoons balsamic vinegar • 3/4 teaspoon red wine vinegar • 1/2 teaspoon garlic, chopped • 1/2 teaspoon salt • 1/8 teaspoon freshly ground black pepper

Preparation 1. Preheat oven to 375° F. 2. In a small bowl, whisk all dressing ingredients together. Set aside.

3. In a large bowl, combine tomatoes, onion, basil, and parsley. Toss with dressing.

4. Slice baguette into 1” slices, place the slices on a baking sheet and bake until bread is lightly toasted, about three minutes.

5. Top each slice with the tomato mixture and serve.

Tips & Notes For a garlicky version, rub the toasted bread slices with 2 peeled garlic cloves before topping with the tomato mixture.

What’s New at Ever’man!

We appreciate your comments and suggestions to help us better serve our members. Here are some of our new products, which have come to the store thanks to customer suggestions.

Suggestion: Carry Organic Valley

Cream (not “ultra” pasteurized, just “pasteurized.”)

Why: Pasteurization is a process that kills both

the good and bad bacteria in dairy products. Ultra pasteurization heats milk to 280°F - a higher temperature than that of pasteurization. The benefit is that the shelf like is extended to 30-90 days from 12-21 days for pasteurized milk. The drawback is that ultra pasteurization is more lethal to bacteria - both the good and the bad. For more of the good bacteria to support gut health choose “pasteurized.”

Suggestion: Carry pure Garbanzo Flour not

Garbanzo AND Fava Flour. Thank you.

Ways to use it: Garbanzo Flour is versatile, inexpensive, and a great way to add in plant-based protein. You can use it to make falafel, socca (a delicious vegan and gluten-free bread), or as a thickener in soups, among countless other cooking possibilities.

Local Spotlight What’s Fresh at the Hot Bar? It’s no secret that our hot bar has become a local favorite for a quick breakfast, lunch or dinner. We are always trying to enhance our ability to meet customer needs, especially by listening to customer suggestions. Customer suggestions have helped to guide changes such as our expanded breakfast menu which now includes coffee cake, bacon-wrapped eggs in a basket, and gluten-free french toast sticks. In addition to serving a full breakfast bar at 7 am we also now offer our salad bar earlier, starting at 8 am, to accommodate those wishing to ‘take for later.’ Suggestions have also brought new menu favorites

including weekly pizza days, as well as fresh fruit and pico de gallo on our breakfast bar.

Since Cat McCreery began our community teaching garden in the fall of 2015, we have been incorporating her weekly garden harvest at the hot bar. In this process, we have been able to include things like beets, Asian long-beans, parsley and chard in our cafe. Fresh herbs from the garden are included in our recipes, and fresh greens are available postharvest on our salad bar. These garden-fresh meals have been a beautiful way to bring seed to table eating full circle right in our store.

Brett Beamer, Ever’man Kitchen Manager

Can you share with us what prepared you to be the Ever’man Kitchen Manager?

I started working as a line cook when I was 19 years old. Over the past 23 years, I have worked for several corporate restaurant chains including Darden (Olive Garden Italian Restaurant), and Brinker (Chili’s Grill & Bar). I spent five years traveling the country as a Corporate Trainer for Chili’s before accepting a management position in the quick service food industry. I worked as the assistant grocery manager here at Ever’man for two years before moving into the Kitchen Manager position.

Tell us a little about your interests and how you spend your free time?

When I am not working, I enjoy going to ice hockey games with my wife, Carolyn, and my daughter, Amy. We also enjoy spending time together at the beach during the summer months.

Ashley Forrer

Education Coordinator Ashley joined the Marketing Team in late December. Before moving to Pensacola, Ashley grew up in California and studied biology at Sonoma State University. Originally interested in going into the medical field, Ashley quickly became attracted to natural and alternative medicines. This interest led her to become involved in her school’s nutrition and health program, where she helped to plan events and teach classmates about healthy living. To learn more about natural medicine, Ashley went to Costa Rica to become a certified yoga teacher, and followed graduation by studying to become a Certified Holistic Health Coach. This past year

Ashley worked as a wilderness therapy guide in Utah before moving to Pensacola and joining the Ever’man team. Here at Ever’man, Ashley is the education coordinator, which means she organizes the community classes, creates and teaches in-store training to staff, goes out in the community to participate in health fairs and community outreach, and assists in all the other marketing projects and events.

Ever’man is happy to be recognized as a community resource for information on getting and staying healthy. We are pleased that the Ever’man Wellness Department, Cafe and Educational Center were featured on pages 72 through 73 of the May Bella Magazine and appeared as a story online.

At Ever’man, members and shoppers are given a chance to show their support for worthy community charities through The Charity Eco-Friendly Bag Program. Since July 1, 2015 at every Ever’man Grocery and Cafe cash register shoppers are being rewarded for shopping with eco-friendly bags. For each eco-friendly bag used, Ever’man will donate 5¢ to a charity of the shopper’s choice. Charity choices fall into three 501(c)(3) categories; an organization that is committed to providing healthy food, another that supports sustainable environmental practices and one that ensures the wellbeing of our pets and wildlife.
