GREETINGS TO ALL EVER’MAN SHOPPERS AND FRIENDS, Here we are heading into spring again. It’s time to start planning your summer gardens. We have been so proud of our winter garden here at Ever’man. The winter has taken a toll on some of the plants, yet others continue to produce a harvest. Cat McCreery (our Super Gardener) planned and executed a garden that was not only beautiful but produced a huge amount of food. We gave a lot of the harvest to customers and served a good bit in the Cafe. This past weekend, Cat joined Chef Irv Miller (Jackson’s Steakhouse) at a fund raising dinner to support rebuilding the area’s oyster beds. Cat used Nasturtium leaves and flowers to decorate Chef Miller’s dishes. These decorations were all edible and came out of the Ever’man garden. Cat said she received rave reviews. Cat is now working on planning our spring garden. If you would like to learn more about our garden, or gardening, she will be working a set schedule on Mondays. Please plan to drop by; Cat is a great source of information. It’s hard to believe, but we are about to finish our second full year in our fully renovated store. We are busy planning some anniversary events to celebrate. We will offer some really great prices on many items throughout the store. Our renovated store has really been doing well. During the first year, we served about 2,000 more customers per week than the previous year, which had been forecast in our planning. The second year, we expected to grow, but we exceeded the growth expectation. In this second year, we have been averaging servicing about 900 new customers per week, over the first year after the renovation. We hope to continue this trend of growth.
As we move into our new fiscal year (April 1), we are starting to research opening a second store. We added plans for a second store to our five year business plan last year. We have completed a market study to give us an idea of a great location and an estimate of sales potential. We were very pleased with the results of this study. A good location will not be easy to find because we will need a pretty large building. Of course, a project like this will not happen overnight and will take a lot of due diligence. We will keep our membership informed as we move forward. As you know, April 22 is Earth Day. Ever’man always strives to do our part in the fight for Mother Earth. We are planning some nice events including educational classes and the planting of our spring garden. Please watch the calendar online and at the service center for the latest schedule of events. This THA is also packed with sustainability information so take your time and enjoy a great read. As a member, your membership gives you a voice in who serves on the Ever’man Board of Directors. This year elections were held from February 1 through 17. I personally want to thank members for participating in our democratic process and I extend my congratulation to the returning board members Dave DeBlander and Dawn Vorthmann and welcome to the board Eric Schneider. In closing, I hope everyone is ready to enjoy the great weather our area brings this time each year. Thanks for your continued support and I look forward to seeing you in the store.

Why make the effort to live a healthy, natural, organic, sustainable lifestyle? Does it really make a difference? Yes, in my experience, it really does make a difference. I like feeling good, having energy and not suffering from chronic diseases. The average American has three chronic diseases by the time they are 56 years old. Unfortunately, many items sold in traditional grocery stores contain ingredients that may have adverse effects on your health. People say to me quite often that it is hard to eat a healthy, organic diet. My answer is that heart disease, cancer, diabetes, etc. are a much harder burden to bear. Eating an organic healthy diet is no guarantee that you will be totally healthy and live a long life but it sure does increase your chances. By eating organic food, you are also improving the world around you. Harsh, toxic chemicals are used in growing conventional plants and animal feed. These chemicals are known to be harmful and not necessary. The know-how to grow organic food on a large scale is available today. Food with little nutritional value (packaged, junk, over processed), along with animals given growth hormones in inhumane environments harm everyone. If you are doubtful, please watch the documentary, Food Inc., and see how conventional poultry and livestock are raised.
My wife and I have been eating a modified macrobiotic diet for 42 years, which consists of organic vegetables, grains, fruits, beans, legumes, fish, chicken and occasionally beef. It makes a difference whether that chicken was grown in a cage, no larger than itself, and given hormones that make its breast so large that it cannot stand up. I love the Ever’man Meat Department’s whole organic chickens that are free range and are sold fresh - you really can taste the difference. (Try baking one of the whole chickens at 400 degrees for 70 minutes, you will find it delicious!!) When my wife and I go to a seminar or convention for a week and eat the non-organic restaurant food, by the end of that week, we are tired, lethargic and ready to eat clean organic whole food again. There is no place like home, especially when your refrigerator and pantry are filled with organic food. Eating organic, local and fresh not only makes a difference in the life of you and your family but also the farmer’s family and the world around you will benefit too!

Elections 2016 Ever’man Board of Directors Election Results The election results are in and Ever’man Cooperative Grocery and Cafe has one new Director and two returning incumbent Directors. This year, annual elections were held from February 1 through 17. Paper ballots were counted Thursday, February 18 and online calculations were received on Friday, February 19. The combined reports indicated clear wins for incumbents Dave DeBlander and Dawn Vorthmann. The third seat was tied between incumbent Johnny Ardis and Eric Schneider. On February 23, the nominating committee conducted a recount of the paper ballots. The results of the recount remained the same. The issue was brought before the board on Monday, February 29. After discussion, the board voted to decide the tie via board vote. The results of that vote gave the third seat to Eric Schneider. Each Director is elected to a three year term and will be officially seated at the March 28 board meeting. Voting in the Board of Directors’ elections is the simplest way to effect change in Ever’man Cooperative Grocery and Cafe. By voting for the candidates that most nearly match your vision for Ever’man, you participate in the direction that we take as a cooperative organization. Less than three percent of our active membership cast ballots this year. There are now over 11,000 Ever’man members and we know we can do better! Remember, as a member, you have a voice and every year we need to hear from you when it’s time to choose the members you want to lead Ever’man! We urge you to participate in the election each year so that your voice may be heard.

“Co+op Forest” Offsets Carbon Emissions and Supports South American Co-ops
A farmer in the ACOPAGRO cacao cooperative, a collaborator with NCG’s Co+op Forest, rakes cacao beans. Many of us travel for work or leisure, and whether we realize it or not, it can have a negative impact on the environment. Greenhouse gas emissions from aircraft have increased exponentially over the last decade. Everyday over 8 million people across the globe travel by air, and each plane emits particulate and gasses that contribute to climate change. Each bi-coastal flight has a warming effect equivalent to 2-3 tons of carbon dioxide per person. National Co+op Grocers (NCG) has long been concerned about the impact their work travel has had on the environment, and they wanted to do something to counteract that. In 2013, they created the Co+op Forest initiative that offsets greenhouse gas emissions associated with NCG’s business travel and utilities in each of its main offices. “It requires a considerable amount of travel to serve all 148 NCG co-ops nationwide, and Co+op Forest allows us to offset the resulting greenhouse emissions in a way that reflects not only our core value of sustainability but also provides opportunities for cooperatives 3,000 miles away to thrive,” said Robynn Shrader, chief executive officer of NCG. NCG partners with Pur Projet— an offshoot of the fair trade food company Alter Eco and an international organization preserving ecosystems in disadvantaged communities—to grow the Co+op Forest. They work with local farmer cooperatives to plant and maintain native trees in the Peruvian Amazon. Co+op Forest is part of a system of sustainable agroforestry in the region, where local farmers produce fair trade, organic products; some of which are sold in NCG’s retail food co-ops. NCG’s Co+op Forest will expand to the Alto Shamboyacu community, which is home to roughly 150 families—mostly organic, fair trade coffee and chocolate producers who belong to the Oro Verde farmer cooperative. The cooperative works to increase crop yields by training farmers in sustainable agroforestry techniques to complement and preserve the surrounding rainforest. As part of this year’s carbon offset purchase through Pur Projet, NCG is compensating the farmers to plant and maintain 1,458 native trees among their crops. These new additions to Co+op Forest will improve crop yields by providing needed shade, create
habitat for other native species, and eventually generate income for the community fromFSC-certified timber—all the while sequestering tons of greenhouse gases as the trees mature. Oro Verde cooperative also works with farmers to revitalize beekeeping, a tradition to the area’s indigenous culture that has been largely abandoned in modern times. “We chose to expand our support to the Alto Shamboyacu community because, in addition to slowing climate change by planting trees, the local farmer-owned Oro Verde cooperative is addressing another critical sustainability issue—helping to protect the world’s pollinators,” Shrader added. NCG also committed this year to conserving an additional 1,200 acres in the old growth forest of the San Martin BioCorridor—a lush, mountainous landscape in northwestern Peru that is highly biodiverse— and planting 729 native trees in the deforested Alto Huayabamba region. Both are areas that NCG has supported in past years, bringing the total number of trees that call Co+op Forest home to an estimated 837,000. Currently three NCG member food co-ops, The Common Market in Frederick, Md., Los Alamos Cooperative Market in Los Alamos, New Mexico and BriarPatch Co-op Community Market in Grass Valley, Calif. have also made individual contributions to Co+op Forest to meet their own sustainability goals. Chris Maher, general manager of BriarPatch said that he’s proud that NCG walks the walk by offsetting travel-based carbon emission through Co+op Forest, but that their co-op can also participate in the program as well. “In 2014, when BriarPatch began charging for single use bags, we incentivized customers to bring their reusable bags by promising a donation to the Co+op Forest for the first 100,000 reusable bags used in our store,” Maher said. MEAT & SEAFOOD MANAGER Before the renovation there wasn’t a Meat & Seafood Department at Ever’man. Since the renovation our members and customers have been able to purchase a wide selection of sustainable seafood and local meat including grass fed beef in several different varieties of cuts. Some of our most popular items are Alaskan wild caught salmon, shrimp from the Gulf of Mexico, and organic and all natural chickens from Bell & Evans. The new service that is being greatly enjoyed is our fresh in- house made sausage which is made from the freshest ingredients, most flavorful pork, chicken, turkey and lamb. We offer different types of sausages to satisfy the most discriminating tastes so stop by our counter and try some today.
Since our renovation two years ago there are a lot of new and enhanced services our members and customers enjoy. As everyone likes the new layout of the store and has many positive comments, it is hard to pick one or two services that stand above all others. One of the most often shared comments from members and customers is how much they enjoy the Cafe selections, our customer service, the new checkout lines, the cleanliness of the store, and all the new goods and services provided by all departments. All comment on how beautiful the store is and how very pleasant it is to shop here. So stop by Customer Service and renew your membership or sign up for a membership, but most of all enjoy your shopping experience at Ever’man Cooperative Grocery and Cafe.

PRODUCE MANAGER In response to suggestions and to meet the need of our busy professionals and families, the Produce Department has a new cut fruit and veggie program. We do all the work for you and make it easy to get a healthy meal or snack together for you and your family. The waste from the cut fruit and veggies goes directly to compost that also helps those customers that need compost for their gardens or as pet or farm animal feed. Make sure to think of us for your quick, fresh and locally sourced cut fruit or breakfast-in-a cup (yogurt, fruit and granola) and the many selections of cut veggies for use in salads, stir fry and soups.
WELLNESS MANAGER In the Wellness Department we have always had a lot of support from our members and customers and that has continued since the renovation. The daily feedback from members and shoppers helps us to know just the right products to bring in to meet the needs and wants of our community. For example, since the renovation we have been able to expand our most popular lines; Alaffia as an example. Additionally, the layout in our department since the renovation has made it easier for customers to locate products; come in and see for yourself!

DARRELL MELTON GROCERY MANAGER With the renovation of the store, additional space was dedicated to a larger receiving area. Part of this additional space was used to add a cardboard bailer for disposal of the cardboard from stocking products in all departments. The daily use of the bailer means that we are able to not only keep costs down but also be even greener in our business practices. In the past the cardboard was placed into a dumpster which was emptied several times a week at a cost to the Co-op. With the addition of the cardboard bailer we now have a company that pays the Co-op for the bailed cardboard. On an average we have three to four bales per week that are picked up and sold to the recycling company.
PREPARED FOODS MANAGER The completion of the renovation transformed the Ever’man Deli into a significantly larger operation which was rebranded the Ever’man Cafe. One major new service was the introduction of a hot and cold bar which serves a daily breakfast, lunch, and dinner with dozens of freshly prepared entrees, side dishes, and desserts. We also expanded the counter facility to include an array of salads and sandwiches, as well as a larger selection of Grab N Go items. Bakery production increased considerably including a fresh bread program and many made from scratch cakes, pies, and cookies. Members and customers are also enjoying relaxing in the dining room and new outdoor patio seating. With our expanded renovated facility, the Ever’man Cafe offers a truly comfortable and delicious dining experience.

Farmhouse Bean Soup with Parsnips and Greens
Ingredients • • • • • • • • • • • • •
2 tablespoons olive oil 1 yellow onion, diced 1 large carrot, peeled and diced 3 parsnips, peeled and diced 3 cloves garlic, peeled and minced 1 15-ounce can diced tomatoes 4 cups vegetable broth 3 to 4 sprigs each of fresh rosemary and thyme 1 15-ounce can northern beans, rinsed and drained 1 15-ounce can pinto beans, rinsed and drained 1 15-ounce can kidney beans, rinsed and drained 5 cups fresh spinach, chopped Salt and black pepper to taste
Preparation
In a large pot, heat the oil over medium-high heat. Add the onion, carrots, parsnips and garlic and sauté 5 to 7 minutes. Add the tomatoes, broth and herbs and bring to a boil. Add the beans, reduce heat to simmer and cook 20 to 30 minutes until vegetables are tender. Stir in the spinach and season with salt and pepper to taste. Serve warm.
Serving Suggestion
Thanks to convenient and nutritious canned beans, this soup is a fast and tasty weeknight main dish. Just add a side salad and a plate of corn tortillas.

Cauliflower “Couscous” with Asparagus and Peas Ingredients • • • • • • • • • •
1 head cauliflower 12 ounces asparagus 10 ounces frozen peas, thawed 1/3 cup pine nuts Zest and juice of one lemon 2 tablespoons olive oil 1 small shallot, minced 2 tablespoons mint leaves, julienned 1 teaspoon thyme leaves, chopped Salt and freshly ground black pepper to taste
Preparation
Break the cauliflower florets apart, cutting the larger ones down until all the pieces are roughly the same size. Place the florets in a food processor and use 8-12 quick pulses to reduce the cauliflower size and texture to slightly smaller than a grain of rice. In a 12-inch skillet, heat 1/2 cup water and a pinch of salt to a simmer. Add the cauliflower in a single layer. Bring back to a simmer, reduce heat a little, cover and cook cauliflower 5 minutes, or just enough to take the raw edge off, but not so much it becomes soft or loses texture. Remove the cauliflower from the skillet and drain in a colander or mesh strainer, then place in a medium serving bowl. Heat a small, dry skillet over medium heat. Add the pine nuts and stir frequently. Toast just until they smell nutty and have begun to turn golden, about 3 minutes. Remove from heat and set aside. Remove the woody ends of the asparagus, then cut each spear on the bias into 1-inch lengths. Wipe out the skillet used for the cauliflower, add the olive oil and heat over medium heat. Add the shallot and sauté gently for a couple minutes, until translucent. Add the asparagus and continue sautéing a few minutes more, just until the asparagus is al dente. Add the lemon zest and juice, fresh thyme and salt and pepper and cook another 30 seconds or so. Add the shallot-asparagus mixture, peas, pine nuts and mint to the cauliflower. Drizzle with a little olive oil and toss gently to combine. Adjust the salt and pepper, and lemon juice to taste. Serve slightly warm or at room temperature.

I started as a cook and advanced through all of the management positions until I settled in as Director of Operations for a nine store franchise. This position ended due to the sale of the franchise. I decided after 15 years of restaurant operations to try my hand at retail. I went to work for Winn-
Dixie as a deli manager and progressed to grocery manager and then on to center-store manager. Now I am enjoying my position as Assistant Grocery Manager at Ever’man. While it’s true the state of the environment can be quite overwhelming, it is a fact that each person truly can make an impact on our community’s sustainability. It is easy to start! Small daily changes are a great way to start! Here are three meaningful ways to do your part in keeping our community pristine: 1). Reduce food waste! It is estimated that in the United States 20 pounds of food per person per month goes to waste! To make the most of each of your meal ingredients consider the following tips. If you make a big pot of grains, turn the leftovers into a delicious salad with chopped veggies, and black beans. If you buy a rotisserie chicken, take the bones and boil them to make a nutritious bone broth. By stretching your ingredient, you will not only help eliminate food waste but will also end up saving yourself money, too! 2). BYOB: Reuse bags and water bottles! Each time you go to the store shopping, take small steps to reduce packaging waste: Bring Your Own Bag (BYOB), buy bulk items, and use reusable water bottles. By buying bulk, the total product cost will be reduced because there is much less packaging, and you only have to buy as much product as you know you will use. You can even bring your own container and refill each time you buy bulk. At Ever’man we make it easy to buy bulk. Our cashiers will weigh your empty container and write down the weight of the container on a label. Then you are ready to add your product and write the PLU number of that product to that label. If you need assistance, ask our friendly Ever’man staff! If you happen to forget your reusable bag, look for the reusable bag library at the Customer Service desk. You are always welcome to borrow a bag from the library, but we ask that you please be sure to return it so someone else may use it. Make it a habit to keep an extra bag handy in your car just in case you make a last minute trip to the store. Remember also to keep your reusable water bottles in your car. 3). Recycle waste properly! Utilize recycling centers, and make it a habit to recycle as much as possible. Are you unsure of what to do with food oil, grease, and fat waste? Use the FOG (Fat, Oil, and Grease) containers at the back end of the Ever’man parking lot. Fill these containers with cooking oil, meat fats, and dairy products. ECUA recycles the fats and grease collected in these containers to be used as biodiesel fuel .

Plastic Bag Swap and Recycling
As part of our mission to be a leader in green business practices, Ever’man was pleased to host a Plastic Bag Swap conducted by Keep Pensacola Beautiful. Plastic bags are not biodegradable and have a tendency of clogging waterways and posing serious danger to birds and marine animals that mistake them as food. Plastic bags can take over 1,000 years to break down in a landfill if not recycled properly. On February 6 , 2016 community members were encouraged to bring plastic bags to the Keep Pensacola Beautiful booth to “swap” for reusable bags and enter their information for a chance to win a 100% recycled plastic bag birdhouse from Trex Company. For every 25 plastic bags brought to the booth, one reusable bag was issued and one ticket was entered into the drawing. The event was very successful with a total of 50 people participating and a total of 2,150 plastic bags collected.

WEAR TV Story on January 29, 2016 When WEAR TV wanted to report on the impact that banning the use of plastic bags in retails stores might have on Pensacola residents, reporter Laura Hussey and crew came to Ever’man to interview shoppers. Ever’man management has historically encouraged the use of environmentally friendly shopping bags and last July introduced the first ever Ever’man Charity Eco-Friendly Bag Policy. Dredging still delayed at beach

Renourishment of Pensacola Beach will remain delayed as conditions on the Gulf of Mexico have yet to calm to the point where workers can can dredge the needed sand from the Gulf. Santa Rosa Island Authority Execu tive Director Buck Lee said to expect the work to be delayed until at least the mid dle of January.
"Once we ever get some favorable conditions around here they can get on it and get on it quickly," Lee said. The planned renourishment will be the third in 13 years at the beach and will come at a cost of $17 million. Weeks Ma rine, the contractor hired to do the job, has been waiting since mid-November to get started on the project. Weeks Marine has been working to lay three miles of pipeline to dredge the sand, but the barges in place to do that
work have been forced to spend much of their time in Pensacola Bay waiting for conditions in the Gulf to improve. When they are able to get the neces sary pipes in place, the sand will be exca vated from the same 137-acre borrow area as the 2002-03 and 2005-06 restora tion projects. An estimated 1.75 million cubic yards of sand will be deposited along the 8.1 miles of beach shoreline. Ariola Drive will be the starting point. Bulldozers will disperse sand westward
to Park West and the Fort Pickens gate. The pipeline at Ariola will then reverse course to the east, and the sand will be deposited eastward just beyond Park East. Escambia County loaned $8.5 million to the Island Authority with a matching state grant to fund the renourish ment.The SRIA is will repay the county $1.3 million per year until the loan is re paid in full.

Say yes to progress in2016 Welcome to 2016 - another new year! We're now at a perfect starting point to write our own history. We are blessed with a blank slate in which to achieve our accomplish ments, goals and dreams. The month of January starts off a tad slow, but that's a good thing. We should think of it as a time to focus on and work toward great things to come. I have taken time to set a few personal goals for the homefront, but also have big hopes for some milestones in our community. It's no secret that Santa Rosa County is fortunate to have many citizens who care enough to share their ideas, visions, time, talent and money with local charities and nonprofits. Each organization is unique in its own special way in serving its target audience. Anytime you mesh different ·personalities and groups together, ,J>roductive things are sure to hap llEen. But sometimes there can be a ,tew differences in opinion. As the �aying goes, "A certain amount of opposition is a great help to a man. Kites rise against, not with, the wind." In other words, oftentimes oppo sition can strangely enough, help us work toward success. It may help us to better comprehend a situation or reevaluate our stance. With that said, it makes good common sense that various players on board in shared visions and plans also work as closely and cohesively together as possible for the better good of the community. Petty differences, negative opin ions and unhealthy competition should play no role on the communi ty stage. We should all strive to put away any personal differences and make our area the best place in which to live, work and play. The best answer is to dream and work together as a team to accom plish a wide range of things - things that will not only benefit current and future generations. This involves having strong, capable representatives in local government who don't settle for things already accomplished. We are thankful for and always in need of visionaries who see what needs done, look to the future and take a strong stance at ensuring those needs and goals are met in good time. We need strong, creative and caoable boards of directors and

Electric vehicles and hybrid elec tric vehicles have become increasing ly more popular since their introduc tion in the late 90s. Although they aren't the most wide ly driven cars in Pensacola, the num ber of EV and HEVs on the road are growing and many local, green-mind ed business are preparing to accom modate these new drivers. Car charging stations have popped up in numerous locations across the city in the last two years. Gulf Power offers four separate stations at their corporate offices near Bayfront Parkway. Ever' Man's Co-Op installed a two-car station last year. Sandy Sansing has stations at his Chev rolet, Nissan and BMW dealerships. A few of the hotels on Pensacola Beach also provide stations for guests to charge their rented electric smart cars after leisurely cruising the sandy streets.
