Wow, has it ever been a hot summer. That hot weather should start coming to an end very soon. Fall will be in the air and we will be able to enjoy the outdoors again. School has resumed and everyone is getting back to their routines. If you are looking for a healthy way to pack snacks and lunches, Ever’man can help. We have all kinds of tasty and nutritious items such as organic fruits and vegetables, lunch meats, breads, snack bars of all varieties, bulk trail mixes, boxed juices, bottled water and the list goes on and on. Our staff members can give you plenty of suggestions if you need a little help. Fall is also a time for football and other sports and we are ready to help with all your tailgating needs. We have party platters full of fruits, veggies, cheeses, lunch meats, sandwiches or deviled eggs. Please give us 24 hours’ notice for most platters. Late summer and early fall is also the peak of hurricane season. Please be careful and make sure you have a family plan. Stock up on items like water, tuna, soup, juices, snacks and other items to hold you until the power is returned. In the event of a storm, Ever’man will be here to help. As long as our employees are safe, we will stay open. In the event of a closure, we will open back up as soon as it is possible. Check our Facebook page for updates.

Your co-op continues to perform very well. Our business continues to show growth over the previous year. Everyone in the store is working very hard to keep the shelves stocked with the items you want and need. To make your celebrations go smoothly, we are already working on plans and orders for the holiday season and have already secured the turkey and Tofurkys you will want for Thanksgiving and the holidays. Our turkey options will include free range, non-GMO and antibiotic free. We will also stock certified organic choices. For those of you that are looking for ready to serve options, we will offer fully cooked dinners in our Cafe as well as all of the fixings to go with your turkey or Tofurky dinner. For dessert, we will be baking lots of pies and cakes, including everyone’s favorite, our vegan carrot cake. Pre-orders will be taken to ensure we can fill everyone’s needs. Please let us know if you have special needs or requests for holiday items. In closing, I hope you have a wonderful fall season. Stay safe and watch for the little ones as they go to school. At Ever’man, we continue to strive toward our ultimate goal to be the “Best Grocery Store” in the Pensacola area. Hope to see you in the store soon.

Dave DeBlander With fall in the air, we are reminded that it is time to start gearing up for our Board of Directors elections. Soon you will be hearing about board elections and the schedule for putting names in nomination as board candidates. The nomination and election process is an important part of the successful running of your cooperative grocery store. As a cooperatively run store, the board oversees and makes all major longterm strategic decisions while working hand-in-hand with the general manager. During the year, the board reviews key store measures to ensure the store is run according to best business practices, is responsive to members desires and adheres to our core values. Those core values (also called the Ends Statement) are:

Board President If you understand and appreciate these values and feel that you can be an asset to the board, you may want to consider running. Requirements include being a member of Ever’man for at least the last six months and being successfully vetted by the Nomination Committee. In addition to appreciating our ends statement and what it stands for, it is a plus to understand business metrics and accounting principles (we have yearly sales now over $12 million). Other qualities that are valuable to board membership are involvement in community organizations, business and management skills, ability to make tough decisions and willingness to speak on behalf of all the members and not just represent a few. While acting in its official capacity, the board always speaks with one voice and therefore a board member must be willing to remain quiet and act professionally when certain decisions are made that may go against their personal wishes or even interests. We are elected representatives of the membership and have to act accordingly. Presently the board is working very harmoniously and our relationship with our GM William Rolfs is on a very good level. As you can see by being and shopping in the store, things are very positive and we are in a great phase of growth and development. If you feel you might be a good candidate for the board, please stop by the customer service desk once the date has been set to accept applications and find out more.

New Local ECUA Facility in operation

s a local cooperative grocery store, Ever’man stays committed to being an example of green business practices. Since our first store opened in 1973, Ever’man staff and management have followed conscientious waste management practices throughout the store and Cafe. For example, to reduce food waste, we donate unsold food items to local soup kitchens in the area including St. Joseph’s soup kitchen and the Waterfront Rescue Mission. The plates, cups, and napkins available in the cafe are either made from recycled, bio-degradable material or from a material readily recycled after use. All of these green business practices help to reduce the amount of waste produced in our store and sent to the landfill. Now that recycling has returned to our area, we encourage you to help continue our commitment to staying

green by properly recycling your materials after enjoying a meal in the Ever’man Cafe. ECUA’s Interim Materials Recycling Facility (IMRF) will process glass, paper, and mixed plastics ( 1-7). You can find the full list of acceptable recycling materials, and what not to recycle, on ECUA’s website: ecua.fl.gov/green/recycling. These guidelines are also

available at the Ever’man store educational rack and our website: everman.org/news/ecuarecycling-guide/. In terms of recycling at Ever’man, there are a few main points that are important to follow: • Before placing glass, aluminum, biodegradable, and plastic containers to the recycling bin remember to scrape off all food into the trash bin. • Please do not place plastic camera film containers and plastic bags in the recycling containers. • ECUA’s IMRF is a single stream recycling facility. This means you do not have to

separate recyclable materials. They just ask that you make sure all materials added to the recycled materials bin are actually recyclable and are as clean as possible. • If you dine in, feel free to serve yourself on the reusable plates and to utilize the stainless steel silverware.

All NATURAL Cleaning Products

Looking for cleaning products that are eco-friendly and up to the task? Many kinder-to theenvironment products are widely available and equally effective. And that’s a good thing because, according to conservative estimates by the Clean Water Fund in Washington D.C., the average American uses about 8 | THE HEALTHY ALTERNATIVE

40 pounds of toxic household cleaning products—like chlorine bleach, formaldehyde, phosphates, phthalates, petroleum products, and sulfuric acid—each year. These are chemicals that make their way into our waterways and may also linger in our home environment in our air, on our counters and in

our clothes. It’s easy to make the switch to natural cleaning products— look for options in the co-op’s household supplies/cleaning aisle and consider making some simple green cleaning products from ingredients you probably have stocked in your pantry. At the co-op, some things you might want to pick up are a natural, all-purpose cleaner and a glass cleaner. There are also excellent Eco-friendly shower cleaners, toilet bowl cleaners, tub and tile cleaners, floor cleaners, carpet cleaners, and spot and stain removers. You can even find natural, botanicallybased disinfecting cleaners and wipes (commercial disinfectants are typically highly toxic). Don’t forget dish liquid and dishwasher detergent, as well as a natural rinse aid (yep, those are available now, too). Opt for concentrates when possible, as well as post-consumer recycled plastic or cardboard containers. For real savings, you might want to concoct some of your own natural cleaning supplies, using common household ingredients: • White vinegar can be used as softener in your washer’s rinse cycle or combined with equal parts water for an all-purpose/ glass cleaner. • Cornstarch can be sprinkled on carpet to freshen before vacuuming or made into a paste with water for cleaning silver. •Washing soda makes a great spray cleanser when combined with hot water (1 teaspoon soda per 2 cups of water) or a solution

for soaking grimy items like barbecue grills (1 cup soda per sink-full). • Baking soda works wonders as a sink/tub scrubber or as a diaper pail freshener. • Plain liquid soap and a few essential oils combine for a scented cleaner with disinfecting properties. For ease on cleaning day, stock all your cleaning supplies in a large galvanized bucket, along with some colorful washable cloths (instead of paper towels) for cleaning (add a bow—and maybe a book of natural cleaning tips—and you’ve got a great gift for a college freshman or newlywed, too!).

Mexicali Brunch Quick Casserole Dishes for Fall Brunch

Once the weather gets cool enough to turn the oven back on, make the most of this year’s fall harvest with these quick to prepare oven dishes. Once you chop the veggies in these dishes and assemble all the ingredients, the oven will do the rest of the work. After 30-45 minutes in the oven, these large casserole dishes will be ready to feed up to eight guests. As the days get shorter, invite your friends, neighbors, and family members to come over and enjoy a meal together. These recipes are great for vegetarians or vegans, however, protein such as grass-fed beef or organic chicken may be added.

Ingredients • 10 flour tortillas • 1/2 box taco vegan filling, prepared and cooled • 3/4 cup sliced scallions • 1/4 cup green pepper, diced • 1 can (4 ounces) diced green chiles • 1/4 cup prepared salsa • 3 cups shredded cheese, cheddar or Mexican blend • 5 eggs • 2 cups half and half • 1/2 cup milk • 1 tablespoon flour • 1/4 teaspoon garlic salt

Serving Suggestion

Preparation 1. Preheat the oven to 350°F. 2. In a large bowl, combine the taco filling, scallions, green pepper, green chilies, and salsa. Scoop 1/3 cup of the filing into each tortilla, add a large pinch of cheese, and roll the tortillas. Place tortilla rolls in a lightly greased 9x13-inch baking dish, seam side down. 3. In a medium bowl, whisk together the eggs, cream, milk, flour, and garlic salt. Pour this mixture over the tortilla rolls (to just cover). 4. Bake, uncovered, for 30 minutes, then cover with foil and bake another 20 minutes, or until set. Remove foil, sprinkle with leftover cheese, and bake 3 minutes more to allow cheese to melt. 5. Remove from the oven and let stand 10 minutes before slicing and serving.

Savory Noodle Kugel with Leeks and Mushrooms Ingredients

• 8 ounces linguini noodles, uncooked • 2 tablespoons vegetable oil • 2 cups leeks, cleaned and sliced (about 2 thin leeks) • 8 ounces button mushrooms, sliced • 2 large eggs, beaten • 1/2 cup sour cream • 1/4 teaspoon salt • 1/4 teaspoon black pepper • 1 1/2 teaspoons paprika

Preparation 1. Preheat oven to 375°F. Grease a 9 x 13 inch casserole dish. Cook the noodles in boiling water for 5-6 minutes, until just al dente. Drain and rinse noodles. 2. While the noodles are cooking, heat 2 tablespoons vegetable oil in a skillet over medium-high heat. Sauté the leeks for a few minutes and then add the mushrooms and sauté until tender, about 5-10 minutes. 3. In a large bowl, mix the cooked noodles, sautéed vegetables, eggs, sour cream, salt, pepper and 1 teaspoon of paprika. Pour into the casserole dish, sprinkle with the remaining paprika, cover with foil and bake for 30 minutes. Remove the foil and bake another 10-15 minutes to brown the top. Serve hot.

Serving Suggestion

Typically served as a side dish, enjoy this rich Kugel with sweet potato latkes, lentil soup or fattoush, which is a Middle-Eastern chopped vegetable salad.

Tips & Notes

Substitute egg noodles for the linguini for a more traditional Kugel.

These oranges are wonderful for taking on the go for a quick and healthy snack, or to add some sweetness to your favorite salad. Since Valencia oranges have such high juice content, they are also great for juicing.

Whitney Smith, from our Wellness Department, says her go-to wellness item is Garden of Life’s Mykind Organics Women’s Once Daily Vitamin. Sholanda Williams, from our Cafe, says her go-to Cafe item is Ellen’s Cranberry Wrap. This wrap is made with cranberry mayo, turkey, lettuce, Colby cheese wrapped in a wheat tortilla; combining the nourishing foods of Thanksgiving all in a convenient wrap that is perfect for lunch.

Deanna Gilmore, Ever’man Assistant Wellness Department Manager • Can you share with us what prepared you to be the Ever’man Wellness Department’s Assistant Manager?

I became interested in my own personal health in 1995. I really took a look at my diet and got interested in what I was eating. Shortly after that, I began working in a health food store. I gained a lot of on the job training and proceeded to become a wellness department buyer. I eventually had the opportunity to get into management. The most rewarding part of my job is being able to provide customers with information so that they can make an informed decision. Being able to assist and hear stories of how a certain supplement has made a difference in an individual’s life is a very positive part of what I do. This position has been a great opportunity to be a part of the Ever’man team. I enjoy all of our members, customers, and my coworkers. It is a delight to come to work in such a positive environment.

• Tell us a little about your interests and how you spend your free time?

I like to spend time with my family which includes my husband Jason and our three children: Sydney, Jayden, and Jake. As a family, we take our three canine babies Penny, Bella, and Jack along whenever possible, especially, when we go to our beautiful beaches and freshwater rivers. I enjoy reading the current information in health news.

• What is your tip for keeping healthy as the seasons change?

An important factor to reduce our chances of disease is to keep inflammation down in our bodies. Some foods that can reduce inflammation are ginger, turmeric and green tea. Herbs such as astragalus, and Echinacea work well to help build up our immune systems, as well as vitamin C and zinc.

With summer coming to a close and fall just beginning, this is the time of year for all your favorite apples to come to market. You will have a variety of apples to pick from for that quick snack before and after school. Also for an easy to put on the table dinner idea we will continue our cut veggie program. Selections consist of cut broccoli, carrots, cauliflower, and squashes and make it that much easier to serve a healthy dinner quickly. Also in the Produce Department, for your family dinners you will find good deals throughout the season on sweet potatoes and hard fall squashes. Co-ops Grow Communities Celebrating Co-op Month 2016 Co-ops around the world share a set of guiding principles with Ever’man Cooperative Grocery and Cafe including “cooperation among cooperatives,” and “concern for community.” When you purchase delicious, healthy food at the co-op, you’re supporting a business that cares about people and contributes to a livable, sustainable community. When you choose products from co-op farmers and vendors, that impact grows and grows! In October, we’re proud to join with nearly 150 food co-ops around the country to celebrate the many stories of

how cooperative companies, suppliers, manufacturers and farmers are growing strong, healthy communities around the world. Together with our co-op shoppers, we can make a difference! The participating companies in the October five to eighteen promotion work with cooperative suppliers and manufacturers or are cooperatives themselves, and as such, work to build strong bonds between the people who purchase their products and the people who supply them. Co-ops offer a way to transform how business is typically done; co-ops give you the opportunity to

get the products and services you need on a daily basis while strengthening the community around you. Participating companies include Alaffia, Alter Eco, Divine Chocolate, Dr. Bronner’s, Equal Exchange, Guayaki, Maggie’s Organics, Organic Valley, Shady Maple Farms and Theo Chocolate. These companies along with National Co+op Grocers are aiming to raise $80,000 for the La Riojana Co-op, an Argentinian producer of wine and olive oil. Through their cooperative business model, La Riojana has been able to significantly improve the well-being

of their member communities. With the funds raised, La Riojana Co-op can obtain organic certification for almost two villages, which equates to 80 to 95 growers. Ever’man is excited that we will once again be collecting coats, light sweaters, and jackets starting October 1 through October 29. This donation is sponsored by The Mission Anglican Church for the non-profit One Warm Coat. One Warm Coat is a national nonprofit organization that assists in the donation of coats to those in need of one. Coats collected will be delivered to local agencies who distribute them free of charge to men, women and children in our community. Meet Betsy LeGallais, CHHC, CCWS, CCNP For over 25 years, Betsy suffered from Discoid and Systemic Lupus, as well as being a 16+ year breast cancer survivor. Having tried various methods throughout her history with Lupus to alleviate its symptoms — most of which were to little or no avail — she finally decided to take a completely different approach. That is when she completely changed her diet. As a result, she lost over 30 pounds, relieved all symptoms of Lupus and reversed the growth of Thyroid Nodules. Not only that, felt the best she had ever felt in her entire adult life. She became so passionate about her faith in the holistic and whole foods lifestyle that she studied to become a Certified Raw Foods Chef/Educator. She also completed the Holistic Health and Nutrition Coaching program from the Institute for Integrative Nutrition, where she has been trained in over 100 dietary theories and a vast variety of practical lifestyle coaching methods. She is also certified with The American Association of Drugless Practitioners and is a Certified Corporate Wellness Specialist and a Certified Corporate Nutrition Professional.
