A trip to the moon now within reach at the National Naval Aviation Museum Story and Photos by Mike O'Conner

President Kennedy set the almost-impossibly ambitious goal for Americans to achieve, and seven years later it was done: on July 20, 1969 Apollo 11 Mission Commander Neil Armstrong and Lunar Module Pilot Edwin “Buzz” Aldrin became the first men to walk on the moon. Now, visitors to the National Naval Aviation Museum onboard Naval Air Station (NAS) Pensacola can walk in the astronauts’ footsteps with the new “Longer Strides: The Apollo 11 VR Experience,” a virtual reality attraction located on the second floor of the museum. During the five-minute multisensory experience, guests are buckled into seats which shake, vibrate and pitch as their Saturn V rocket blasts off. Virtual reality (VR) headsets provide an allencompassing perspective from the space traveler’s point of view as they are boosted into orbit, make trans-lunar injection, and descend to the moon’s surface in the Lunar Excursion Module (LEM). The 50-year anniversary of the first moon landing is coming in July, and the Apollo 11 attraction is part of the museum’s celebration of naval aviation’s role in spaceflight.

It is located in proximity to an actual Skylab Command Module, a spacesuit exhibit and other space displays. Visitors are greeted by a close recreation of NASA’s Mission Control in Houston. Iconic 1960s-era computer consoles are manned by serious young men in short-sleeved white shirts with thin black ties; even the NASA coffee cups, slide rules and technical manuals are present on the consoles. An angled row of 12 seats with VR headsets await the voyagers while screens on the wall show monitoring positions around the world. Retired Navy Capt. Sterling Gilliam, the museum director,

was on hand April 4 for a media tour of the new attraction, which opened to the public April 5. “We’re really excited the (Naval Aviation Museum) Foundation has brought this project to the forefront,” Gilliam said. “The timing is exquisite. As you know, 2019 is the 50th anniversary of the moon landing. Naval aviation’s involvement is space is phenomenal; the first American in space, the first American to orbit the Earth, four of the ‘Mercury 7’ were naval aviators. The first man to walk on the moon, the last man to walk on the moon – all naval aviators. This is a perfect fit

for this museum as we tell the wonderful story of Americans in space, specifically naval aviators in space, in the Apollo 11 VR exhibit. It’s cuttingedge, we’re really, excited about it and the timing is excellent.” Phil Crabtree, general manager Foundation Museum Support Company, explained some of what went into the attraction’s design. “We wanted something special for this world-class museum,” Crabtree said. “We came up with the concept of this open-air VR attraction, where other people could watch someone enjoy it. We wanted to bring those key

images from the 1960s Apollo era, the red trusses reminiscent of the Saturn V launch tower, and a recreation of Mission Control in Houston, which everyone is so familiar with. We wanted it to look like a snapshot in time from 1969.” To round out the museum’s support of the moon landing anniversary, the Naval Aviation Memorial Giant Screen Theater will be showing “Apollo 11: First Steps Edition,” a new cinematic experience using never-before-seen 70mm footage from historic mission. The movie is scheduled to start May 17; plans include special showings hourly on July 19, 20 and 21. “Longer Strides: The Apollo 11 VR Experience” seats 12 guests per show, and costs $10 per person. Escambia-Santa Rosa Bar Association to host Law Week 2019 May 13 through 19

The Escambia-Santa Rosa Bar Association (ESRBA) will host Law Week 2019 May 13 through 19. Law Week 2019, presented by McMahon and Hadder Insurance, will include a judicial reception, a luncheon, and a religious ceremony. The theme selected by the American Bar Association (ABA) for Law Day 2019, Free Speech, Free Press, Free Society, has been adopted for the week-long local commemoration. According to the ABA, “the theme asks us to examine two cornerstones of representative government and consider the role they have played in sustaining our society.” Law Day is held annually nationwide each to celebrate the role of law in our society and cultivate a deeper understanding of the rule of

law. The Judicial Reception, sponsored by the ESRBA’s Young Lawyers Division and Mike Chastain with Dex Imaging, will be held May 14 from 5:30 p.m. until 7:30 p.m. at V. Paul’s Italian Ristorante, 29 Palafox Place in downtown Pensacola. The event will honor the local judiciary and provide an opportunity for judges, attorneys, and paralegals to mingle and network in an informal after-hours social setting. The cost, which includes heavy hors d’oeuvres and a wine/beer ticket, is $20 per person. A cash bar will also be available. Division Realignments Realignment of certain court divisions recently took place in Escambia and Santa Rosa Counties. Circuit Judges Marci Goodman and David Rimmer retired effective January 7, 2019. Judges Darlene Dickey and Scott Duncan transferred their service to the Santa Rosa bench to fulfill the vacancies. On January 8, 2019 the First Judicial Circuit welcomed Circuit Judges Lacey Powell Clark and Jeffrey L. Burns to the Escambia bench. Zarzaur Law, P.A. to host a Escambia County animal shelter Community Ping Pong Tournament offering reduced adoption fees Zarzaur Law, P.A., a personal injury law firm based out of Pensacola, Florida, has partnered with the Pensacola Table Tennis Club and City of Pensacola Parks and Recreation Department to host a community ping pong tournament event June 8 from 10 am to 5 pm The event will be held on the street at the intersection of Palafox and Romana Streets in Downtown Pensacola. “Ping Pong on Palafox,” hosted by Zarzaur Law, will include a table tennis “ping pong” tournament for all ages and levels, games, refreshments for players, and more! The round robin tournament will kick-off at 10 am with kids age groups and adult divisions with cash prizes for winners. Players can be anywhere from kids, novice recreational weekend players, all the way to competitive club members. The first 50 players to sign up for the tournament will also receive a swag bag. Businesses, organizations, and groups are encouraged to create teams of four, bring their tent, coolers and signs and battle for bragging rights and be the tops in team table tennis. This event is more than the typical community event and fundraiser for Gulf Coast Kid’s House, it’s downright

fun! Players can compete in a Table Tennis Tournament and play games all while supporting Gulf Coast Kid’s House. Guests can learn tips and tricks from Table Tennis professionals and watch kids all the way to pros battle each other right in the heart of downtown Pensacola. One hundred percent of entry fees will go to Gulf Coast Kid’s House. “In this day and age of kids and their devices, we figured highlighting the games we 40-somethings played as kids would be good for everyone,” Joe Zarzaur, owner of Zarzaur Law, P.A., said. Emerald Coast Review accepts art, poetry, fiction, nonfiction Submissions open May 1 for the 2019 volume of The Emerald Coast Review. Published by West Florida Literary Federation, Inc. since 1989, the biennial anthology enjoys a rich history of publishing diverse styles in fiction, nonfiction, poetry, photography, and art by regional writers and visual artists. New, emerging and established authors and artists living along the Florida Panhandle and coastal Alabama are encouraged to submit work from May 1 to June 15. Nominal submission fees range from five to ten dollars and help defray the cost of publishing the book. Student discounts are offered to encourage students of the arts at all levels to find an audience for their work. The 20th anniversary celebration volume will feature the best of submitted works by regional writers and artists,

plus a special section of solicited work from current and former Poet Laureates of Northwest Florida. The deadline for submissions is midnight June 15. The 2019 Emerald Coast Review, as a regional publication, only accepts submissions from authors/ writers/poets and visual artists residing in the following counties in Florida and Alabama: Escambia, Santa Rosa, Okaloosa, Walton, Bay (Florida) and Escambia, Mobile, and Baldwin (Alabama). Artists and writers whose work is accepted will receive a contributor’s copy of the publication and an opportunity to read o display their work at a book launch in early November during Foo Foo Fest. It’s the perfect time of the year to adopt a forever friend from the Escambia County Animal Shelter. The Escambia County Animal Shelter is offering a special reduced adoption fee of $40 for all dogs and puppies and $20 for all cats and kittens beginning Friday, April 26 and running through Friday, May 31. Adoption fees include altering of the animal (spay or neutering services), microchip, heart worm test and the ini-

tial vaccinations, including rabies vaccinations. Escambia County residents will be required to purchase a license at the time of adoption. This is an additional $11 over the adoption fees and is paid separately. The Escambia County Animal Shelter is located at 200 W. Next regional roundup set for May 11 The Escambia County Waste Services Department will host the next Regional Roundup on Saturday, May 11 from 8 a.m. until noon across from the Naval Hospital located at 6000 W. Highway 98. Please see the attached map for directions to the drop-off area. Regional Roundup events provide an opportunity to properly dispose of electronics, household hazardous waste and up to four tires per vehicle, free of charge. Proof of Escambia County residency is required to participate in Regional Roundup, such as a driver’s license, power bill or voter registration card. This is a residential drop-off program only; no commercial waste accepted. Simply drive up and materials will be unloaded for you – no need to get out of your vehicle. Items accepted include: • Computers (monitors, terminals, keyboards and mice) • Printers and copiers • TVs and remotes • DVD players • Gaming systems • Fax machines • Stereo systems • Cell phones and telephones • Paint (up to 20 gallons) • Fuel (up to 10 gallons) • Waste oil (up to five gallons) • Fluorescent lights (up to 10 lights) • Tires (up to four per vehicle) • Antifreeze • Oil filters • Lubricants and greases • Solvents

PLT will dominate you with new Venus in Fur show Pensacola Little Theatre proudly presents Venus in Fur, a play by David Ives, and directed by Maureen McNeill. Venus in Fur is a dark comedy that explores the themes of the novella of the same name by Austrian author Leopold Von Sacher-Masoch. Show dates are May 17 through 19 and 23 through 25. Tickets are on sale now. Venus in Fur follows the tumultuous story of beleaguered playwright/director Thomas and the vulgar yet commanding actress, Vanda. Thomas is desperately searching for a lead actress for his stage adaptation of the classic sadomasochistic tale, Venus in Furs. In walks Vanda, an actress who is utterly wrong for the sophisticated role yet exhibits a strange command of the material. She piques Thomas’ interest with her seductive talents and secretive manner. As the two read the script together, the lines of reality blur and the audience becomes a voyeur in their struggle between sexual submission and dominance. Christopher Holloway and Renee Jordan will be taking on the

roles of Thomas and Vanda. Director Maureen McNeill hopes to present these two characters in a way that highlights the social conversation around the current #MeToo movement. “Venus in Fur premiered in 2010. Almost ten years later, American’s social landscape is transforming due to the development of the #MeToo movement. Our country is involved in an ongoing dialogue about what it means to be a woman in a ‘man’s world.’ Our production will present the characters in a way to highlight the current power struggle between males (Thomas) and females (Vanda),” says McNeill. She hopes that this production will encourage audiences to start discussions about the themes they will see explored onstage. This show is for mature audiences only and contains strong language and adult content. Scuba diving safety symposium The Escambia County Marine Advisory Committee is hosting a special Scuba Diving Safety Symposium Monday, May 13 at 5:30 p.m. in conjunction with the Marine Advisory Committee’s regular meeting. Additional SunPass and Annual Pass lane pavement markings to be installed The Escambia County Engineering Department will begin re-striping and installing new signs as part of the toll booth lane upgrades in front of the Bob Sikes Bridge Toll Plaza entering Pensacola Beach. The upgrades are expected to improve Pensacola Beach traffic flow and will consist of modifying the four toll lanes at the toll plaza. The work is expected to begin mid May. After the striping is complete, the two far left lanes will become the mixed mode lanes for cash and SunPass/Annual Pass, and the far two right lanes will become the dedicated SunPass/Annual Pass lanes (no cash accepted). The current configuration consists of the far left lane as the dedicated SunPass/ Annual Pass lane, with the other three lanes serving as mixed mode lanes ac-

efits.” The longstanding practice involves policyholders signing over benefits to contractors, and insurers contend that abuses and litigation are driving up insurance premiums. Lawmakers took steps such as limiting attorney fees in so-called AOB cases. MEDICAL MARIJUANA: Going into the session, DeSantis essentially gave lawmakers an offer they couldn’t refuse as he sought to eliminate a ban on smokable medical marijuana. If lawmakers didn’t act, DeSantis threatened to drop an appeal of a court ruling that said the smoking ban, included in a 2017 law, was unconstitutional. Lawmakers quickly went along with DeSantis’ request and eliminated the ban in March. SCHOOL CHOICE: The Republican-dominated Legislature continued expanding school choice, including passing a new vouchers program known as the Family Empowerment Scholarship Program. Under the program, state money will be used to send as many as 18,000 students to private schools next year. Crit-

ics contend the plan is unconstitutional, citing a 2006 Florida Supreme Court ruling that struck down a similar vouchers program. SCHOOL SAFETY: Pointing to recommendations by a commission created after last year’s mass shooting at Marjory Stoneman Douglas High School, lawmakers passed a wide-ranging bill designed to bolster school safety. The bill included issues such as improving mental-health services, but almost all of the debate focused on a controversial provision that would expand the school “guardian” program to allow armed classroom teachers. TRANSPORTATION: In a top priority for Galvano, lawmakers approved a plan aimed at expanding or building three toll roads. The plan, which drew opposition from environmentalists, would extend the Suncoast Parkway from the Tampa Bay region to the Georgia border; extend the Florida Turnpike west to hook up with the Suncoast Parkway; and create a multi-use corridor, including a toll road, from Polk County to Collier County.

LAWMAKERS SIGN OFF ON BUDGET AS SESSION ENDS By JIM TURNER NEWS SERVICE OF FLORIDA

TALLAHASSEE – Florida’s Republican-dominated Legislature quickly put the finishing touches on a record $91.1 billion spending plan Saturday, meeting numerous requests from freshman Gov. Ron DeSantis. While declaring “great wins for conservatives,” along with environmental protections that should appeal to Democrats, the governor said he intends to use his line-item veto power but didn’t specify what spending he might target. “It’s going to be under $91.1 billion when I get through with the budget, don’t worry about that,” DeSantis said during a traditional “sine die” ceremony in the Capitol’s fourth-floor rotunda after lawmakers ended the annual legislative session. The Senate voted 38-0 to approve the budget for the fiscal year that starts July 1, and the House followed with a 106-2 vote. The only dissenters were Rep. Loranne Ausley, D-Tallahassee, and Rep. Cindy Polo, D-Miramar. The budget includes high-profile spending issues such as $680 million for the Everglades and other water projects; a $242-per-student increase in school funding; and $50 million to maintain for at least another year the state’s embattled tourismmarketing agency Visit Florida. The package also would provide a little more than $220 million to help areas of the Panhandle hit last year by Hurricane Michael; $45 million for Senate President Bill Galvano’s priority to add or build toll roads; and $40 million to retain the Job Growth Grant Fund, an economic program created

under former Gov. Rick Scott. DeSantis will have a chance to veto parts of the budget when it formally reaches his desk. As DeSantis prepares to review the budget, Galvano, R-Bradenton told the governor Saturday, “Just trust me. It’s all good.” Galvano later told reporters, “I hope that he really studies and understands what is there and gets to the bottom of it as opposed to just making a statement in terms of a number to cut.” Scott, now a U.S. senator, made $615 million cuts in 2011, his first year as governor. Last year, in his final year in the governor’s mansion, Scott removed just $64 million from the budget. DeSantis implied that Galvano’s toll road priority, which is spelled out in a bill (SB 7068) that will soon go to the governor, will likely survive. But other spending could be on the chopping block. “Obviously there’s certain things government shouldn’t be doing at any level. If that’s in there, that’s going to be a candidate,” DeSantis said. “There are some things that maybe government should do but should be local, and not state government.” The spending plan includes $3.4 billion in reserves, but DeSantis indicated he would like to see a larger amount. Vetoes of spending could boost the reserves. “The economy is great. I wish I could say we’re going to have 3.6 (percent) unemployment ad infinitum,” DeSantis said. “But I think we just need to prepare ourselves that the economy is cyclical. I hope it’s not next month, next year, three years from now. But eventually things are going to get tighter. We all have to recognize that.”

House Speaker Jose Oliva, R-Miami, said late Friday the session had included “extraordinary” collaboration between the Legislature and the executive branch, noting that DeSantis had served in Congress. “There was a legitimate commitment on behalf of the governor to work with the Legislature, having been a legislator (in Congress),” Oliva said. “The president of the Senate and I are good friends, trust a great deal in one another.” The budget also earmarks $10.2 billion in general-revenue funding for health care and other social service programs, with much of that state money drawing federal matching funds. In all, the health and human services budget totals $37.6 billion. While the Legislature made deep cuts to hospital funding in recent years, the new budget does not include Medicaid reductions for hospitals. Lawmakers, however agreed to continue for another year eliminating Medicaid “retroactive” eligibility for elderly and disabled people. Pregnant women and children have been exempted from the policy and will continue to have a traditional three-month retroactive period to enroll in the Medicaid program when needing services. The Legislature initially agreed last year to eliminate Medicaid retroactive eligibility, a move that saves about $100 million. They agreed to extend the policy for another year by including it in the new budget. The budget expires annually, which means lawmakers will have to address it again next year. Senate Appropriations Chairman Rob Bradley, R-Fleming Island, said people often focus on large-dollar or high-priority budget issues. But Bradley said one of the brightest spots in the budget is a change that

could help adults with disabilities who want to work. The change would allow adults with disabilities to earn about $50,000 annually without losing access to Medicaid benefits that assist people with activities of daily living. “It’s going to make a real difference in people’s lives,” Bradley said. “Many people in the state of Florida will be able to get better-paying jobs, make more money and get the benefits they deserve.” The budget is the largest in state history, topping by 2.7 percent the $88.7 spending plan for the current year. House Majority Leader Dane Eagle, RCape Coral, said the increase is “organic,” due to the state’s population growth and additional tourism. Environmentalists, however, expressed disappointment in the session, in part because the budget includes $34.5 million for the Florida Forever land-preservation program --- much less than the program has often received in the past.. “This year’s amount is a far cry from the $300 million this program received for decades. It is also well short of both last year’s $100 million appropriation and Gov. Ron DeSantis’ budget recommendation this year of $100 million,” said Aliki Moncrief, executive director of the Florida Conservation Voters. “To say we are upset would be an understatement.” Legislative leaders have pointed to funds remaining from the current year’s allocation to Florida Forever, which wasn’t as much of a priority under Scott and the previous state Cabinet. – News Service staff writer Christine Sexton and senior writer Dara Kam contributed to this report.

The House backed the limit, saying high levels of THC can lead to psychosis. But the Senate refused to go along with the limit. – NURSE PRACTITIONER POWERS: While House Speak-

TALLAHASSEE – Expect state lawmakers in 2020 to again take aim at a powerful panel that put seven constitutional amendments on the ballot last year – all of which passed. Gov. Ron DeSantis expressed support Saturday for getting rid of the Constitution Revision Commission, which meets every 20 years to propose changes to the state’s top legal document. The commission drew criticism last year for “bundling” unrelated issues in single constitutional amendments. “I didn’t have enough bandwidth to propose it, but I would like to see the CRC eliminated,” DeSantis told reporters during a wide-ranging discussion after the 2019 legislative session ended Saturday. “I think what happened last election with some of those bundled amendments was not good.” The Senate voted 35-4 during this

spring’s session to approve a proposal (SJR 362) that sought to eliminate the commission. It also voted unanimously to back a separate measure (SJR 74) that would have restricted the commission to putting single subjects in ballot proposals. However, House leaders did not put either proposal up for a floor vote. If the Legislature had approved the proposals, they would have gone on the 2020 ballot because any changes to the commission would require changing the Constitution. Last year’s 37-member commission was mostly appointed by former Gov. Rick Scott, former Senate President Joe Negron and former House Speaker Richard Corcoran. As an example of the bundled amendments that drew controversy in November, one ballot measure tied together a ban on offshore oil drilling and a ban on vaping in workplaces. DeSantis on Saturday joined lawmak-

ers who have expressed concerns that the panel exceeded the intent of voters, who created the commission in 1968. “You literally had to vote on offshore drilling and vaping in the same amendment. I don’t know how that makes sense,” DeSantis said. “I also think we’ve let too much policy go into the Constitution.” In all, voters approved 11 constitutional amendments in November. In addition to the seven that came from the Constitutional Revision Commission, two were placed on the ballot through citizens’ initiatives and two were placed on the ballot by the Legislature All constitutional amendments require approval from 60 percent of voters to pass. While DeSantis and many lawmakers were unhappy with the Constitution Revision Commission, the Legislature on Friday also approved a measure that would make it harder to get citizens’ initiatives on the ballot.

The measure places more restrictions on petition-gathering efforts --- a key part of putting initiatives on the ballot. For example, the bill would require petition gatherers to register with the state and prohibit them from being paid per signature. Supporters contended the changes are needed to combat fraud in the petition-gathering process. DeSantis said, “whether this is enough, I don’t know.” One idea that has been floated at times would be to create an initiative process to amend state statutes, which are easier to change than the Constitution. That would reduce the number of constitutional revisions. “If you want to do policy through initiative, it should be a statutory initiative,” DeSantis said. “If the policy doesn’t work out (in a constitutional amendment), then you’re hamstrung. You’ve got to go back and do another amendment process. And that’s cumbersome.”

1 1/2 cups buttermilk 1 tablespoon mustard powder 1 tablespoon Sriracha 2 teaspoons minced garlic 2 teaspoons paprika 4 chicken drumsticks, bone in, skin on 4 chicken thighs, bone in, skin on vegetable oil, for grill 1/4 cup chopped fresh parsley

1 lemon, cut into wedges (optional) In medium bowl, whisk buttermilk, mustard powder, Sriracha, garlic and paprika. Place chicken in large zip-top bag; pour buttermilk mixture over chicken. Seal bag and refrigerate 2 hours or overnight. Heat outdoor grill for direct grilling over medium heat. Remove chicken from marinade, shaking off excess; discard marinade. Lightly oil grill grates. Transfer chicken to grill and cook, turning occasionally, 16-18 minutes, or until internal temperature reaches 165 F. Transfer chicken to serving platter. Sprinkle with parsley and serve with lemon wedges, if desired.

Recipe courtesy of Rachel Gurk of Rachel Cooks on behalf of Milk Means More Prep time: 20 minutes Cook time: 10 minutes Servings: 6 Arugula Pesto: 2 cups fresh arugula, tightly packed 1 clove garlic 1 tablespoon lemon juice pinch red pepper flakes, (optional) 1/3 cup shredded Parmesan cheese 1/2 cup extra-virgin olive oil salt, to taste pepper, to taste Grilled Pizza: 2 tablespoons flour, divided 1 pound pizza crust dough (at room temperature if using refrigerated dough) vegetable oil, for grill 1/2 cup Arugula Pesto 1/2 cup part-skim ricotta cheese

1/2 cup diced deli ham 1/2-3/4 cup fresh corn kernels (about 1 cob) 1/4 cup thinly sliced red onion 1/4 cup shredded Parmesan cheese Heat grill to medium heat (350-400 F). To make Arugula Pesto: In food processor, combine arugula, garlic, lemon juice, red pepper flakes and Parmesan. Pulse until combined then, with food processor on, drizzle in olive oil until pesto forms, scraping down sides as needed. Taste and season with salt and pepper, to taste. To make Grilled Pizza: Flour pizza dough lightly and stretch or roll to about 1/2-inch thickness (14-16-inch diameter). Sprinkle remaining flour on large rimless baking sheet, pizza peel or pizza stone. Transfer dough to baking surface. Clean grill grate and grease with oil-soaked paper towel and tongs. Slide dough off baking surface onto grill. Cover and cook until dough is bubbling on top and golden brown on bottom, 2-3 minutes. Carefully flip dough over using peel or tongs. Remove crust from grill to add toppings. Spread Arugula Pesto over dough. Top with ricotta, ham, corn kernels, onion and Parmesan. Return pizza to grill, cover and cook until toppings are heated through and bottom of crust is crispy, 5-7 minutes. Remove from grill, slice and serve.

Dressing: 1 cup plain yogurt 3 tablespoons freshly squeezed lime juice (3 small limes) 2 tablespoons milk 2 tablespoons chopped fresh chives 1 clove garlic, peeled and minced 1/4 teaspoon kosher salt 1/8 teaspoon black pepper Steak: 1 teaspoon kosher salt 1/4 teaspoon black pepper 1/4 teaspoon granulated garlic 20 ounces boneless petite sirloin steak Salad: 3 cups baby spinach 3 cups chopped romaine lettuce hearts

1/2 cup sweet red pepper rings 1/2 cup sweet yellow pepper rings 1 cup avocado chunks 1/4 cup thinly shaved red onion To make dressing: In blender, combine yogurt, lime juice, milk, chives, garlic, salt and pepper. Blend on low until smooth consistency forms and chives are completely incorporated. Transfer dressing to jar with tight-fitting lid and refrigerate until serving. Heat grill to medium. To prepare steak: Combine kosher salt, black pepper and granulated garlic to create rub. Sprinkle half of seasoning mix over one side of steak, pressing it into meat. Repeat with remaining seasoning on opposite side of steak. Grill steak over direct medium heat to desired level of doneness, approximately 4-5 minutes per side for medium pink center. Remove steak from grill and let rest 7-10 minutes on cutting board. To make salad: Toss spinach and romaine on large platter. Scatter red and yellow peppers, avocado and onion over greens. Slice grilled sirloin thinly against grain. Arrange meat slices along center of salad. Drizzle dressing over salad just prior to serving.
