How Marketers are Selling Pensacola in the Big Apple Pensacola has long been a popular vacation destination for families throughout the southeast, but the addition of a new nonstop flight to Newark, New Jersey has local travel promoters marketing the city further away than ever before in the nation’s most iconic mecca. United Airlines announced last October that it would add daily nonstop service between Pensacola International Airport and Newark Liberty International. The inaugural flight landed in Pensacola on June 6. The Newark airport is 45 minutes from downtown Manhattan in New York City, making the United flight a direct link between snowbirds looking to dip their toes in the Gulf and Pensacolians pining for a taste of the Big Apple. For the folks whose job it is to promote travel here, the flight has provided an opportunity to show off all Pensacola has to offer in one of the nation’s biggest metropolitan markets. “In the last couple years we’ve started to see New York creep up into our top 25 destinations for visitation,” said Steve Hayes, president of Visit Pensacola. “Chicago, Dallas and Houston are still higher up, but with an important market like New York showing up and United saying we’re going to offer this route, we knew we wanted to do anything we could to share all that Pensacola has to offer.” In conjunction with the inaugural United flight, Hayes and other Visit Pensacola staff traveled with chefs from Pensacola to offer a taste

of Pensacola to New York travel writers, influencers and media. Among the delegation were Irv Miller of Jackson’s Steakhouse, Dan Dunn of Big Top Brewing Co., Gus Silivos of Skopelos and James Briscione of the forthcoming Angelena’s Italian Ristorante. “I think some people who are coming to the South think they’re getting all fried food, and we know that couldn’t be further from the truth,” Hayes said. “So we had three chefs serving seafood.” Visit Pensacola also took a Pensacola virtual reality experience to New York to show off our white sands and amenities like the Pensacola Bay Cruises, Palafox Street and the Blue Angels flying overhead. “It’s funny, they actually think

we Photoshop the white sand on the beaches,” Hayes said. “It was to show them that, ‘No, this is really what you get.” Visit Pensacola also secured an $87,500 grant from Visit Florida, which it matched, to run a targeted digital advertising campaign in New York City encouraging travelers to consider Pensacola for the summer. The campaign ran from May through June. The hope in selling Pensacola as travel destination to New Yorkers is two-fold. Even a small slice of such a large market could be a boon to the local tourism economy. Secondly, the new United route is seasonal and will end in August. If the route can be made popular, the company is more likely to bring it back in the future.

The Pensacola International Airport is promoting the route locally on its billboards, social media and in email campaigns. The Newark route is the airport’s 20th direct flight. Pensacola Mayor Grover Robinson celebrated the new route at a ribbon cutting ceremony coinciding with the first arrival on the new route. “We really appreciate this with United putting another city and another way for us to connect Pensacola to the rest of the country and the rest of the world,” Robinson said. “So we hope that you will take the chance to fly out of here directly to New York.” United’s Pensacola to Newark route offers daily flights with ticket prices averaging around $350 for a round trip.

United Airlines is offering nonstop flights to and from Newark, New Jersey and the Pensacola International Airport during the summer months. Depending on the popularity of the route, it could become a permenant addition to the flight itinerary.

Great Southern Restaurants presents Summer Restaurant Week The Fish House, Jackson’s Steakhouse, Atlas Oyster House and Five Sisters Blues Café will once again team up to present Summer Restaurant Week, August 5 - 11, 2019. In step with similar events in cities all around the country, Restaurant Week is a culinary celebration that offers residents and visitors alike world-class dining at a great value. This year we are pleased to be able to include our newest addition, Angelena’s Ristorante Italiano. Now in its ninth year, the Great Southern Restaurant’s Restaurant Week continues to be a great summer hit with both locals and visitors. Chefs from each restaurant will prepare a three-course, fixed-price dinner menu utilizing the best in local and seasonal ingredients, showcasing their culinary expertise, for $33.00 per

person, per restaurant. Diners are encouraged to try each special menu at all five restaurants during Restaurant Week. Volunteers sought for EscambiaPensacola Human Relations Commission The Escambia County Board of County Commissioners is seeking Escambia County residents interested in volunteering to be considered for an appointment to two seats on the Escambia-Pensacola Human Relations Commission. The EPHRC was first established by an interlocal agreement between the Escambia County Board of County Commissioners and the city of Pensacola in April 1974. The purpose of the commission is to be responsible for the promotion of fair treatment and equal opportunity to all citizens of the local community. For this term, commission members, who are called commissioners, will serve an initial two-year term of office. Commissioners will establish a schedule of regular meetings, which shall be held at least monthly. The commission meetings are held to discuss the previous month’s day-to-day activities and to ensure that the in-

terlocal agreement between Escambia County, the city of Pensacola and the EPHRC are in compliance. Additional meetings may be held for special discussion, workshops, training sessions or community activities. Escambia residents interested in serving on the Escambia-Pensacola Human Relations Commission are asked to submit a resume and letter indicating their desire to serve on the commission by the close of business Friday, August 2. Mobile is going to the dogs: More than a thousand dogs to compete at the Gulf Coast Classic Dog Show The annual Gulf Coast Classic Dog Show will be returning to Mobile, AL in 2019 after a decade! The Mississippi Gulf Coast Toy Breed Club, the Singing River Kennel Club of Mississippi, the Mississippi Coast German Shepherd Dog Club and the Mobile Kennel Club have joined forces once again to bring dog lovers a weekend of exciting canine competitions. More than a thousand dogs and their owners will get the chance to strut their stuff in the show ring Wednesday, September 4th through Sunday, September 8th at The Grounds, 1035 Cody Road, Mobile, AL 36608. Show hours will be from 9 AM to 5 PM each day. The event is great for the whole family with free admission and free parking. Spectators can: • Meet and greet a variety of different dog breeds. Visitors can learn about responsible dog ownership and speak with breeders, owners and exhibitors. • Watch the judging of various breeds in Conformation and cheer for your favorite. • See young owner-handlers com-

pete against their peers in the Junior Showmanship Competition. • Watch dogs test their natural instincts as they try to find a rat hidden in a tube in a maze of hay bales in the exciting sport of Barn Hunt. • See dogs chase a lure that simulates the unpredictability of chasing live prey in Lure Coursing. • Watch owner-handlers compete in a special series called the National Owner-Handled Series. These exhibitors are striving for a spot in the finals at the AKC National Championship presented by Royal Canin in Orlando in December. • Watch dog’s test their natural scenting instincts in Scent Work Trials. • Watch canine athletes show off their extreme water skills in a Dock Diving competition. • Watch owners take their dogs through the AKC Canine Good Citizen Test (CGC). Dogs that demonstrate good manners earn the Canine Good Citizen certificate from the American Kennel Club. All events except for the Dock Diving competition will take place all days.

Heroes Among Us speaker series The Cpl. J.R. Spears Detachment of the Marine Corps League announces its 7th annual Heroes Among Us speaker series to be held at Seville Quarter. The series, now in its seventh year, is held at 6 p.m. on the last Thursday of each month from May through October. It is presented by the local Marine Corps League, J.R. Spears Detachment 066. Admission is free and open to the public, although donations will be accepted for the Veterans in Distress

Fund to help veterans in need. The “Heroes Among Us” series, founded in 2013, features people from all branches of the military service. The goal is to let those people share their experiences with others, both civilians and military veterans as well as active duty members. West Florida Genealogical Society historical presentation: The life and times of Doc Holliday A controversial figure of the Old West, Dr. John Henry Holliday - better known as “Doc Holliday - began his life in Georgia in 1851. He trained as a dentist before heading to the West. He suffered personally and professionally because of tuberculosis, and often supported himself as a gambler and dealer at card tables before the disease claimed his life. Holliday is perhaps best remembered for a brief moment that made history. He was one of the gunmen at the O.K. Corral shootout in Tombstone, Ari-

zona, on October 26, 1881. The gunfight lasted less than a minute but it’s still remembered and frequently re-enacted more than 130 years later. Crestview dentist Dr. Richard Thomas is an expert on Doc Holliday, and his performance brings this colorful character to life. Thomas will also bring items from his extensive collection of Holliday memorabilia. The presentation is part of the West Florida Genealogical Society’s monthly meeting, August 3rd, 2019, at 10:00 a.m. at the West Florida Genealogy Branch

Library at the corner of 9th Avenue and College Boulevard in Pensacola. All are welcome, and admission is free. The West Florida Genealogical Society is a 501(c)(3) nonprofit organization founded in 1982 to promote knowledge of and stimulate interest in the study of genealogy. REPORT: 55 CHILDREN SEPARATED FROM PARENTS WERE HOUSED IN HOMESTEAD ANA CEBALLOS News Service of Florida TALLAHASSEE – A congressional report released Friday shows at least 55 migrant children separated from their parents by President Donald Trump’s administration in 2018 were sent to the privately run Homestead detention center for unaccompanied immigrant youth. One of the children was a 13-yearold boy from Guatemala, who illegally crossed the Arizona border with his father in June 2018. The boy was separated from his parent for more than a month, according to the report released by the Democratic-led U.S. House Oversight Committee. The report is based on data the House committee obtained from the Trump administration, after issuing subpoenas to force federal officials to turn over documents related to the now-defunct policy of separating migrant children from their families at the southern U.S. border. The documentation is “woefully inadequate in terms of the volume of information and the number of separated children who remain unaccounted for,” the report’s authors noted. The report is based on data from at least 2,648 children who were sepa-

rated from their parents between April 2018 and June 2018. It does not include information about more than 700 additional children who were separated from their families since then, the report noted. From the information gathered, the report shows at least 18 infants and toddlers under the age of 2 were taken away from their parents at the border and kept apart for 20 days to six months. The report, requested by Congressman Elijah Cummings, a Maryland Democrat who is chairman of the committee, harshly criticized Trump’s “zero tolerance policy,” initiated in 2018, which referred all individuals who illegally crossed the border into the country to the U.S. Department of Justice for prosecution. Adults were sent to the custody of federal immigration authorities and placed in detention facilities. Migrant children were taken into the custody of the U.S. Department of Health and Human Services, which is charged with operating detention centers for migrant children and with the family reunification process. “The Trump administration’s child separations were more harmful, traumatic and chaotic than previously known,” the report reads.

After being separated from their parents, at least 679 migrant children were kept in the custody of the federal government for 46 to 75 days, according to the report. More than 25 children were held for more than a year, the report found. “The height of child separations at the southern border occurred between April and June 2018,” the report says, which called the policy a “deliberate, unnecessary, and cruel choice” by Trump and his administration. The circumstances of the 55 children who were sent to the Homestead facility are unclear. The case of the 13-yearold Guatemalan boy who was separated from his father a day after they were taken into custody is the only one highlighted in the report. “The father was moved to three different ICE detention facilities before being reunited with his son more than a month after they were separated,” the report said. HHS officials have long maintained that family separations are not “driving the continuing operation of Homestead.” “In addition, no children at Homestead are there due to [Trump’s] Zero Tolerance Policy,” officials said in a June 26 advisory that provided the latest information on the facility, operated

by Comprehensive Health Services. Federal officials said that more than 12,060 teens have been sheltered at the Homestead facility since it began housing migrant children in March 2018. More than 9,800 of the teenagers have been paired with a “suitable sponsor,” officials said. The facility – like others housing migrant children – has become a flashpoint for Florida Democrats, including members of Congress who have repeatedly toured, or attempted to visit, what the report refers to as an “emergency influx shelter.” Several Democratic presidential candidates made a point of visiting the shelter while they were in nearby Miami for a debate last month. U.S. Rep. Rosa DeLauro, a Connecticut Democrat who chairs the House Appropriations Subcommittee on Labor, Health and Human Services, and Education, is scheduled to lead an “oversight visit” of the facility on Monday. Florida U.S. Reps. Debbie Wasserman Schultz, Charlie Crist and Lois Frankel are slated to participate in the tour. According to a press release issued by Frankel’s office, the Homestead shelter is the only for-profit child detention center in the country, and houses approximately 2,000 children ages 13 to 17.

SMALL COUNTIES WARY ABOUT EXPANDING MEDICAID CHRISTINE SEXTON News Service of Florida Some of Florida’s smaller and poorer counties are worried that expanding Medicaid access to low-income childless adults could force them to raise property taxes. The “fiscally constrained counties” expressed their concerns to Florida economists, who are conducting an analysis of a proposed constitutional amendment that would require the state to expand Medicaid to low-income childless adults. In a July 8 email, Small County Coalition of Florida lobbyist Chris Doolin told Amy Baker, the state’s chief economist, that it would be “important to identify” which counties are at or near a tax cap that limits the amount of revenue that can be collected by counties through property taxes. Counties are concerned about the issue because they contribute to the state’s required share of the cost of the Medicaid program, which provides health care to the poor, elderly and disabled. The Agency for Health Care Administration annually calculates how much counties must contribute to the overall cost, which is shared by the federal government. In fiscal year 2019-20, Florida counties will contribute $302 million to the $29 billion health-care program.

The expansion of Medicaid is of acute concern for the 29 fiscally constrained counties, which are rural counties in North Florida and in the south-central portion of the state, because they do not generate a lot of money from property taxes. “It is true that they share in part of the costs of the Medicaid system. And if you grow the Medicaid population by this newly eligible expansion group, then that does have a feedback,” Baker told The News Service of Florida. “It’s not one-to-one but that does increase the costs pressure on governments.” Baker mentioned the county’s concerns during a meeting of the Financial Impact Estimating Conference last week, where economists agreed that about 260,000 people would enroll in Medicaid program if Florida were to expand the program as allowable under Obamacare. The 260,000 estimate is about 44 percent of the Floridians who would qualify for the program under an expansion. The economists will spend the next two weeks delving further into the counties’ concerns. But Baker warned that, until new enrollees show up “and we know where they are from, we may not be able to tell the effect on individual counties.” Baker also suggested that an expansion may not be bad news for the small counties. If new enrollees are “concentrated

more in the larger counties, or more than normal in the larger counties in the state, it’s possible you could have a very small county that could even end up better off,” Baker said. The proposed constitutional amendment would require the state to expand Medicaid access to lowincome childless adults as allowable under the federal health care law known as Obamacare. The Financial Impact Estimating Conference is required to conduct a financial analysis of all proposed citizens’ initiatives. While it is unkown where the enrollees will live, the economists have agreed that the majority of the people who would qualify for the expanded program would be placed in the statewide Medicaid managedcare program. Managed-care plans, economists agreed last week, would be paid an average $396.50 per member monthly to provide benefits to the new enrollees. The Medicaid HMO rates are just one piece of the puzzle concerning costs. Economists also must determine the savings, if any, associated with an expansion. The federal government currently covers 60 percent of the state’s Medicaid costs. But the federal government is much more generous with its share of the socalled “Obamacare population,” or low-income adults who don’t have children. For that population, the federal

government contributes 90 percent of the costs. Advocates, meanwhile, argue an expansion would save nearly $200 million in 2022-23. The Republican-controlled Florida Legislature has in recent years rejected efforts to expand Medicaid, but supporters of the effort are trying to bypass legislators by letting voters decide whether the state should be required to expand eligibility. The proposed constitutional amendment, backed by the Florida Decides Healthcare political committee, would expand Medicaid eligibility to low-income adults between the ages of 18 and 65 who earn 138 percent of the federal poverty level. The committee has collected nearly 80,000 signatures in support of the amendment, enough to reach the threshold triggering judicial and economic reviews of the proposal. Florida Decides Healthcare must collect more than 766,000 signatures from registered voters for the proposal to make it onto the 2020 ballot. The Medicaid measure will become the first to be evaluated under a contentious new law designed to make it more difficult for citizen initiatives to get onto the ballot in Florida. State economists have been required to review proposed amendments in the past, but those reviews haven’t included a detailed financial analysis until now.

FPL SETTLEMENT APPROVED ON IRMA COSTS JIM TURNER News Service of Florida TALLAHASSEE – Utility regulators on Tuesday signed off on a $1.3 billion agreement involving Florida Power & Light’s costs for restoring electricity after Hurricane Irma plowed through the state in 2017. The Florida Public Service Commission approved the settlement between FPL, the state Office of Public Counsel and the Florida Industrial Power Users Group. The agreement finalizes the costs, which will be covered by the utility’s savings from a 2017 federal tax overhaul. “The storm that we’re dealing with, Irma, was a tremendous impact to your customers, throughout your service area,” said Commissioner Donald Polmann. “I think everybody should recognize that this has come to a pretty quick closure with the settlement agreement. I do absolutely see this to be in the public interest that we move forward expeditiously.” The agreement also includes the development of technologies intended to better track future storm ex-

penses for the utility. Commission Chairman Art Graham predicted a new cost-tracking app will reduce future restoration costs. FPL had contended it spent $1.375 billion to restore electricity after Irma made landfall in 2017 in Monroe County and then barreled through much of the state. But in filings as recent as late May, the Office of Public Counsel, which represents consumers, and business groups questioned hundreds of millions of dollars in costs. The agreement includes $50 million in adjustments to accounting for expenses. The utility, saying it accomplished what the customers expected, reported that 50 percent of its 4.4 million customers that lost power from Hurricane Irma were back online within one day. Within 10 days of the storm, 99 percent of the customers were restored. FPL spokesman Mark Bubriski said the agreement confirms the company “handled that storm properly.” “Hurricane Irma may seem like ancient history to

some folks, but really it was less than two years ago,” he said. “The regulatory process takes some time to review everything that goes into it.” As an example of the steps to better track expenses, FPL is starting to employ a smart-phone app for recording time and expenses of crews, which will expand the app’s uses in 2020. “We have been working on some new technologies to help us better manage, track, and increase transparency around the costs of restoring power after a hurricane,” Bubriski said. Part of the complexity of tracking expenses is that utilities bring in large numbers of crews from other states to help restore power after major storms. The utility used workers from 30 states and Canada to restore electricity after Irma, deploying 28,000 workers across its coverage area. State Public Counsel J.R. Kelly said high costs are expected as utility crews come in as customers demand quick restoration of power. However, he said “we don’t want open checkbooks to these people, pay them exorbitant amounts of money.”

DESANTIS SEEKS TO PLACE BETHUNE IN STATUARY HALL

JIM TUrner News Service of Florida TALLAHASSEE – Gov. Ron DeSantis formally asked Wednesday that the statue of civil-rights leader and educator Mary McLeod Bethune replace the likeness of a Confederate general as a representative of Florida in the U.S. Capitol. DeSantis sent a letter to the architect of the U.S. Capitol officially requesting that the Bethune statue be substituted for the one of General Edmund Kirby Smith in National Statuary Hall, a

change Florida lawmakers approved last year. In a press release issued Wednesday, the governor’s office noted his request was made on the 144th anniversary of McLeod Bethune’s birth. “Dr. Mary McLeod Bethune was an influential educator, leader and civil rights activist who became one of Florida’s and our nation’s most influential leaders,” DeSantis said in the release. “Dr. McLeod Bethune’s statue will represent the best of who we are as Floridians to visitors from around the world in our nation’s capitol.

Her legacy endures and will continue to inspire future generations.” Bethune, who will become the first African-American woman honored by a state in the national hall, founded what became Bethune-Cookman University in Daytona Beach and later worked as an advisor to President Franklin Roosevelt. Each state is allowed to have two representatives in the national hall. Florida’s other representative is John Gorrie, widely considered the father of air conditioning. The Florida Legislature voted in 2016 to replace the Smith statue, in the midst of a nationwide backlash against Confederate symbols that followed the 2015 shooting deaths of nine African-American worshippers at a historic black church in Charleston, S.C. Smith was born in St. Augustine but had few ties to Florida as an adult. As commander of Confederate forces west of the Mississippi, Smith was considered the last general with a major field force to surrender. He

has represented Florida in the National Statuary Hall since 1922. The proposal to remove Smith drew opposition from a group called Save Southern Heritage, which was formed in 2015 in response to “kneejerk Anti-Southern institutionalized bullying.” Despite agreeing to remove Smith, lawmakers were unable to come up with a replacement during the 2017 session, as the House did not move forward with any of the suggestions from the Great Floridians Program within the state Division of Historic Resources. The committee advanced Bethune’s name along with Everglades activist Marjory Stoneman Douglas and Publix grocery store founder George Washington Jenkins, Jr. Democrats’ demands to replace Smith intensified after a white nationalist rally in Charlottesville, Va., turned deadly. A plan to remove a statue of Confederate Gen. Robert E. Lee helped spur the Charlottesville rally in 2017.

A 9-foot marble statue of Bethune is already under construction in Italy, funded through donations to the Mary McLeod Bethune Statuary Fund, Inc., a notfor-profit corporation set up through the Daytona Beach Community Foundation, Inc. and the university that bears her name. The new work is expected to arrive at the nation’s capitol in 2020. “This is a proud day for Florida and for the community that Dr. Bethune called ‘home,’ ” Bob Lloyd, chairman of the Mary McLeod Bethune Statuary Fund, said in the governor’s pres release. “We are so appreciative of the support of Governor DeSantis, Bethune-Cookman University and all Floridians who are bringing this great project to fruition.” The Smith statue is set to be relocated at the Lake County Historical Society and Museum in Tavares as a Florida Department of State exhibition and long-term loan, according to the governor’s office.

ELECTIONS LAW TARGETED OVER EARLY VOTING SITES DARA KAM News Service of Florida TALLAHASSEE – Part of a new elections law that requires “sufficient nonpermitted parking” at early voting sites will create an unconstitutional burden on young voters attending colleges or universities, plaintiffs in a long-running dispute over campus early voting argued in documents filed Monday. The parking requirement was tucked into a sweeping elections package during the waning days of the legislative session in early May. Republican Gov. Ron DeSantis signed the package (SB 7066), and the new law went into effect on July 1. The dispute over the parking requirement is the latest focus in a lawsuit against the state by the League of Women Voters of Florida, the Andrew Goodman Foundation and a handful of students. The lawsuit, filed in May 2018 in federal court, originally focused on an interpretation of the state’s election laws by former Gov. Rick Scott’s administration, which decided that certain campus buildings did not meet statutory guidelines for early voting sites. Chief U.S. District Judge Mark

Walker in July 2018 ruled that the interpretation was unconstitutional and issued a preliminary injunction allowing campus early voting locations. In the November elections, that resulted in early voting on 11 campuses, with about 60,000 ballots cast, according to court records. Plaintiffs on Monday asked Walker to consider an amended complaint to also address the provision in the new law, which mandates that early voting sites “must provide sufficient nonpermitted parking to accommodate the anticipated amount of voters.” The provision was added to the elections package by two Republican lawmakers “as a never-before-seen, eleventh-hour amendment” in the waning days of the session, plaintiffs argued in the 107-page amended complaint. The parking requirement mirrors the justification former Secretary of State Ken Detzner gave in a 2014 directive, “in what can only be logically explained as an attempt to avoid this court’s preliminary injunction order and reverse the access to early voting for tens of thousands of young voters that followed as a direct result,” the plaintiffs’ lawyers wrote. “The permitted parking prohibition provides a new means of suppressing the vote of young voters,” they added.

tively prohibits on-campus early voting in communities that voters disproportionately access on foot, on public transit, or through cars with parking permits,” the plaintiffs argued. The “intended effect of both the secretary’s persistent obfuscation of when and where early voting may be offered on campus and the adoption of the permitted parking prohibition was to make it more difficult for young voters to cast early ballots,” the complaint alleges. The efforts “to particularly burden young voters are animated by a belief that doing so will assist in gaining or maintaining a partisan electoral advantage,” the plaintiffs argued. The parking requirement also will have a negative impact on early voting sites in urban areas where parking is scarce, the lawyers argued. The parking provision “will effectively prohibit the use of early voting sites in densely populated commercial and residential areas that voters disproportionately access on foot, on public transit, or through cars with parking permits,” including college and university campuses, the complaint reads. The judge gave the state 14 days after the amended complaint was filed to respond.

After Walker’s preliminary injunction and early voting on campuses in November, new Secretary of State Laurel Lee, who was appointed to her job by DeSantis, argued that the case was moot and should be dismissed. Attorneys for Lee cited a directive she issued after becoming secretary that, they wrote, “addresses the plaintiffs’ concerns head-on and provides a further safeguard.” “In it, the secretary specifically states that supervisors may place early voting sites on college or university campuses under the plain text of … the state’s early voting statute,” Lee’s attorneys wrote in February, prior to the passage of the new law. “Thus, with or without this court’s earlier published decision, the most recent directive makes clear that the secretary has no intention to revert to an improper position alleged to have placed an undue burden on the plaintiffs’ right to vote.” Walker, however, issued a ruling in April that rejected the state’s arguments that the case was moot. Sweet and Salty Popcorn Party Mix Yield: 14 cups

10 cups popped popcorn 2 cups miniature pretzel twists 1 cup pecans 1 cup peanuts 2 cups rice, wheat or corn cereal squares 1/2 cup butter (1 stick) 1/2 cup packed brown sugar 1/4 cup corn syrup 1/2 teaspoon baking soda Heat oven to 300 F. In large bowl, combine popcorn, pretzels, pecans, peanuts and cereal squares; set aside. In medium saucepan over medium heat, heat butter, brown sugar and corn syrup. Stir mixture until it begins to boil. Boil 3 minutes without stirring. Remove from heat and stir in baking soda. Note: Mixture will foam. Pour syrup over popcorn mixture and stir until evenly coated. Pour mixture onto large, rimmed baking sheet or roasting pan. Bake 30 minutes, stirring twice during baking. Stir mixture several times as it cools. Store in airtight container.

Popcorn Pepperoni Pizza Dippers Yield: 16 squares

Nonstick cooking spray 2 eggs 1/2 cup tomato and basil reduced-fat cooking cream 1 tablespoon grated parmesan cheese 1/8 teaspoon coarse ground black pepper 10 cups popped popcorn 1 cup shredded mozzarella cheese 1/3 cup thinly sliced pepperoni, coarsely chopped marinara sauce, for dipping Heat oven to 350 F. Spray 8-inch square baking pan with nonstick cooking spray. In large bowl, whisk eggs, cooking cream, parmesan cheese and black pepper. Stir in popcorn, mozzarella cheese and pepperoni. Spread mixture in prepared pan, patting down with spatula or spoon. Bake about 15 minutes until set and lightly browned. Let sit 5 minutes. Cut into 16 bars. Serve warm with marinara sauce.

Truffle Popcorn Yield: 10 cups 1 1/2 tablespoons olive oil 1 tablespoon, plus 2 teaspoons, white truffle oil, divided 1/2 cup popcorn kernels 1 tablespoon butter 3 tablespoons shredded parmesan cheese 1/2 teaspoon sea salt freshly ground black pepper In large, heavy-bottomed pot with lid, combine olive oil and 1 tablespoon truffle oil. Add about three popcorn kernels. Heat over medium-high heat until one kernel pops. Add remaining popcorn kernels; cover. Once corn begins to pop, shake pot constantly over heat. When popping slows, remove pot from heat and transfer popcorn to large serving bowl. Melt butter and mix in remaining truffle oil. Pour mixture over popcorn; toss. Sprinkle parmesan cheese, salt and pepper over popcorn; toss to distribute evenly. Serve immediately or store in air­ tight container.

Maple Bacon Popcorn Mix Yield: 2 quarts

6 slices thick-cut bacon 1/4 cup pure maple syrup 8 cups popped popcorn 2/3 cup pecan halves, coarsely chopped 2/3 cup dried cranberries 2 tablespoons butter or margarine 1/4 teaspoon coarse ground black pepper 1/4 teaspoon maple extract Heat oven to 400 F. Line jellyroll pan with foil. Place wire rack in pan. Arrange bacon in single layer on rack. Bake 15 minutes until ends of bacon start to curl. Remove and reserve 2 table­spoons bacon drippings. Brush bacon with 2 tablespoons maple syrup; bake 15 minutes until browned. Cool then coarsely chop bacon. In large bowl, combine popcorn, pecans and cranberries. Combine butter, black pepper, maple extract, remain­ing maple syrup and reserved bacon drippings. Cook over low heat until butter is melted. Drizzle over popcorn mixture and mix thoroughly. Spread popcorn mixture in jellyroll or roasting pan. Bake 5 minutes. Toss in bacon pieces. Serve warm.
