He’s been called the greatest of all time and the real deal, but now Evander Holyfield is adding another title to his long career: mentor. The Boys & Girls Clubs of the Emerald Coast recently announced that Holyfield, the five-time Heavyweight Champion of the World, will serve as the special guest speaker for the Third Annual Steak & Stake fundraising dinner. Holyfield will share his inspirational story on Thursday, September 22 at the Boys & Girls Clubs of South Walton in Santa Rosa Beach, FL. Holyfield won the bronze medal in the Light Heavyweight division at the 1984 Summer Olympics, and he is the only boxer to win the heavyweight title five times. His life story began in Atmore, Ala. as the youngest of nine children. When he was four, his mother moved the family to Atlanta, where she’d been born. This is where Holyfield and his older brother made an important discovery that would change Evander’s life forever. It was called the Warren Memorial Boys Club. The Steak & Stake Dinner provides an opportunity for every guest, including donors, community partners and volunteers, to meet with and hear from the direct beneficiaries of their efforts—our Club Members. My mom was the breadwinner of the home and whatever she said was so. When my mother allowed me to go to the Boys Club, she said, “You follow directions. Don’t get in trouble. You’re representing me.” Everything I did, my mom would always remind me that I represent her. I joined the Club at six years old and she would say, “When you don’t like what they do, you come back and tell me what they’ve done and I’ll talk to them. Don’t talk back to them.” At the Boys Club, it was that way anyway, because sportsmanship was a big thing, because if you talked back to the referee, you couldn’t play. There was a lot of discipline. When you grow up and have had that disciple from an early age, it’s easier to excel to the next level. My mother was the leadership at home and the Boys Club had their leadership there. It was the same song. My career was built on that. It wasn’t an overnight thing; I had to adjust using what I learned from my mom and the Boys Club.
I was at one of the first integrated Boys Club. It was run by white people. I didn’t have enough money to get in. It cost a quarter and I didn’t have a quarter. But I went there because of the generosity of others. And I got back home because of the generosity of others. I couldn’t afford to get back home sometimes, so the ladies who just happened to be white, would pay for me. Now if I was prejudiced against them, they may have never helped me. When you’re not prejudiced, it makes I’ve read that through things work. My whole boxing your Club experiences you career was made possible by were influenced by differ- white people who paid for ev-

They allowed me to train there. They would make sure the gym was prepared for me. I was sort of like a hero to them. They realized, “Here’s a kid who came through our program. He don’t drink or smoke.” I had a great reputation. They gave me a home away from home. They had everything necessary to be successful. Even today, I still train. I still spar. I get up to run. I’ve learned to have my balance and consistency. All these years, I’ve had the same thing to eat over and over so the discipline still factors in.
You famously went back and forth on retirement. What motivated you to finally retire?
I was going to be the heavyweight champ of the world again, but I realized that each generation is going to take it to another level. I was the only champ at that time, but part of being the champ is knowing when to stop. My biggest problem was that I let people know what I was going to do, and most people want you to lose before you go. So I figured I’d go ahead and fight and then stop on the win. I did that.

It was large. You have to understand, the late 60s and 70s were a time of prejudice. But my mom told me at six years old, “There’s good and bad in every color. We’re all the same. You’ve been called the We’re all poor.”

Share how the Club helped you to prepare and train for the Olympics? I’ve also learned you are still very focused on leading a healthy life, what do you do to stay fit today and how did what you learned
The game is always changing. Each generation is supposed to do better, and the only way they can do better is when you as the champion show others how to do it. I watched Frazier and Ali and learned how to do what they do, then I took it past that. As far as the biggest change, when they took boxing off of television, that hurt the game. Kids aren’t watching the game and getting a young start anymore. While boxing is about
pete skillfully, not just with pure exertion. If you do it properly, you realize it’s a technical game.
You are outspoken about your faith. Describe your faith’s impact on your life. Well my faith is my life. It would’ve been hard to do anything apart from that. You become this great athlete and you become great at this sport, but that doesn’t make you a great person. Faith, on the other hand, humbles you and makes you a great person. Everything that God gives you to do leads to success of some kind. You can’t be great at everything without God; there’s not enough hours in the day. So I’ve focused my greatness on God. Don’t lie to yourself thinking you can be great at everything. There’s a piece of God in everybody, and that’s why everybody has skills, but we have to work together.
Tell me about your life outside the ring.
I truly feel that it’s my job to be a part of what made boxing good. And now I want to explain that to young people and help. When boxing’s over, boxers get a pension; they get money. But people don’t realize that a lot of these people get dependent on drugs and alcohol, and they lose that money. They may look successful, but they may not have had a good education or a good upbringing, but they still need help. Earlier in their lives, though, there wasn’t anyone to talk to them. So I want to talk to them when they’re young, teach them the value of hard work and disciple, and teach them how to box. These fans give their heart and their soul to watching us, and it’s time for us boxers to give back to the kids.

On Friday, September 23, 2016, in Pensacola, veterans in need of service will gather to Stand Down. “Stand down” is a military term meaning relaxation from readiness or alert. In active duty, this means a break to re-group from the stresses of combat—the opportunity to renew their spirit, health and overall sense of well-being. For our local homeless and at-risk veterans, it means much the same—a chance to re -group from the stresses of homelessness and instability to be served by our community. Included among these services are a Veterans Court (staffed by the State Attorney, Public Defender, Clerk of Court, and Judiciary) to address outstanding misdemeanors and warrants and a Civil Legal Clinic (staffed by pro bono attorneys, paralegals, and students) to help our veterans address their civil legal problems.

Feeding the Gulf Coast Asks Florida Panhandle Residents to Take Action to End Hunger Until the end of September, Feeding the Gulf Coast, formerly Bay Area Food Bank, together with the Feeding America nationwide network of food banks, will mobilize across all 50 states in an effort to bring an end to hunger. Hunger Action Month is designed to inspire people to take action and raise awareness of the fact that 48 million Americans, including 15 million children, are food insecure, according to the USDA. The Hunger Action Month 2016 campaign asks people to consider how it
must feel to live with an empty stomach, which puts a healthy life and a promising future at risk. In the western Florida Panhandle, more than 158,000 people struggle with hunger and may not know where they will find their next meal. That number includes one in four kids who may not have enough to eat. Working with local organizations, Feeding the Gulf Coast has put together “30 Ways in 30 Days”—a calendar with hunger fighting activities on each day throughout the
month of September. REVAMPED SENATE CHAMBER TO BE READY FOR NOVEMBER SESSION
By RYAN RAY THE NEWS SERVICE OF FLORIDA When state senators arrive in Tallahassee after the November elections, they will be greeted by newly revamped digs. A $6 million renovation of the Senate chamber is on schedule for completion ahead of a Nov. 22 organization session, when lawmakers will be sworn in, leaders formally move into their positions and rules get adopted. Upgrades to the chamber include a new dome, modernized lighting and heating, ventilating and air-conditioning fixtures,
new chairs and desks, an updated voting board and carpet bearing the Senate’s new seal, recently changed to remove a Confederate-era symbol. Throughout the summer, the fourth and fifth floors of the Senate chamber were divided by scaffolding to allow workers to renovate both simultaneously. Those scaffolds are now gone, the new lights and airconditioning units fully completed. Workers are installing carpet and other fixtures in the chamber’s fifthfloor galleries, where visitors and members of the press observe Senate
proceedings. Senate spokeswoman Katie Betta said all major parts of the construction will be done in early November to leave time for finishing touches such as testing new informationtechnology equipment and installing phones for in-house communication. Outgoing Senate President Andy Gardiner, R-Orlando, said in a January memo the renovations were long overdue, saying key features were “in serious need of replacement.” “In my view, we are guests in this building and we have an important responsibility to ad-
By LLOYD DUNKELBERGER THE NEWS SERVICE OF FLORIDA With a 48 percent increase in the number of students seeking counseling, Florida universities are asking for an additional $14.5 million in the coming budget year to hire more mental health professionals, including psychologists, counselors, psychiatric nurses and prevention specialists. At least eight out of the 12 universities don’t meet staffing standards recommended by experts, because they have more than 1,500 students for each mental health professional on the campus. The inadequate staffing has led to waiting lists, fewer counseling sessions and the need to rely on off-campus services, which are not covered by student health fees. There is also an increase in more severe cases, with campus counseling centers reporting 4,200 visits in the 2013-14 academic year that were classified as emergency or crisis visits, involving issues like severe depression, acute anxiety and suicidal thoughts. The counseling centers also reported 300 students had to be involuntarily hospitalized under the state’s Baker Act during that academic year. “The (state university system) counseling centers provide services that are critical to student retention and success and the need to address the mental and behavioral health of SUS university students has never been more critical,” according to a report from Christy England, associate vice chancellor for academic research and policy. The state Board of Governors, which oversees the universities and is meeting Wednesday and Thursday in Sarasota, will review the report and consider the mental health funding as part its 2017-18 budget request to the Florida Legislature. The data shows that since the fall of 2008, the number of students seeking counseling services rose 48 percent, to 20,495 clients, in the 2013-14 academic year. There were also 163,000 counseling sessions, a 67 percent increase. The directors of counseling services at Florida State University and the University of Florida, two of the state’s largest and oldest institutions, confirmed the staffing challenges.
“Every year our utilization rates go up,” said Carlos Gomez, a licensed psychologist and director of FSU’s counseling center. Between the 2014 and 2015 academic years, Gomez said his center saw an increase of 19 percent in student visits, rising to about 3,800, or about 9 percent of the campus’ 41,000 students. Gomez estimated that FSU has roughly one mental health professional for every 1,900 students, well above the 1,000 to 1,500 students per counselor ratio set by the International Association of Counseling Services. When he arrived on campus two years ago, Gomez said students faced a five-week waiting period for services. He said his center changed its clinical model, allowing immediate evaluations. But he said the staffing problems make it difficult to provide extended counseling services. “What we can’t do is see every student who walks in our door for psychotherapy,” Gomez said. “We are referring in record numbers out into the community.” The FSU counseling center has created a “treatment coordinator” position to help students, who get free health care on campus, find and pay for off-campus services. “Sometimes they (the off-campus providers) give us a break, sometimes they don’t,” Gomez said. “But that’s certainly a challenge.” As for students who can be accommodated on campus, Gomez said the staffing shortages means students are receiving counseling sessions every two or three weeks, rather than the once-every-week standard. Ernesto Escoto, the licensed psychologist who directs the University of Florida’s counseling center, said his school has one mental health professional for every 1,546 students. It means that by roughly mid-October each new academic year, the counseling center is putting students on waiting lists for services, he said. “The demand for mental health services has increased at counseling centers, not only in Florida, but across the United States,” Escoto said. Escoto said the UF counseling center uses a “triage” system to identify students in the greatest need of services, but like
FSU and other universities is also having to refer more students to off-campus services. In Gainesville, Escoto said students can use an off-campus counseling service provided by Alachua County that only requires a modest co-payment. “But that is not the case for all the counties in the state,” he said. The counseling directors cited several trends that may be adding to the increased demand for mental health services. Escoto said effective psychiatric drugs have allowed more students with mental health challenges to attend state universities than did so in the past. “Now with the care, more and more students are able to enroll and succeed. But at the same time, it’s like moving to the major leagues from the minor leagues,” Escoto said. Some of those students find their coping skills “become taxed” by the more intense atmosphere and “they relapse and struggle,” Escoto said. Both Escoto and Gomez cited a “lack of resiliency” among students, as compared to previous generations, when it comes to coping with normal setbacks like a low grade, a relationship breakup or roommate problems. “A number of the students we see lack the resiliency skills necessary to bounce back from setbacks,” Escoto said, saying the situation can be heightened in a competitive university atmosphere. “They have not failed much in life and now they get a ‘B’ or a ‘C’ in class and all hell breaks loose.” Under the budget proposal, the $14.5 million would fund 137 positions spread across all 12 state universities. It would allow the schools to hire more psychologists, mental health counselors, psychiatric nurse practitioners, case managers, prevention specialists and office staff. FSU would receive $1.9 million for 19 counseling positions, with UF receiving $2.2 million for 23 positions. Gomez and Escoto said the funding would have a dramatic impact on their staffing challenges. “My hope is then that we won’t have a wait list anymore,” Escoto said. “We will be able to provide care immediately to students and help them be successful in their studies and complete their education in a timely manner.”

Capitol-goers will also note the absence this fall of a familiar Senate mural depicting scenes from Florida history. Its attachment to the chamber’s outer wall through an adhesive necessitated its removal. The mural now resides in the Senate archives housed in the Old Capitol.

WATER STANDARDS FIGHT HEADS TO APPEALS COURT By JIM SAUNDERS THE NEWS SERVICE OF FLORIDA Moving quickly after a judge tossed out challenges to controversial new state water-quality standards, the city of Miami has signaled it will continue battling in an appeals court. The city has given notice that it will appeal a ruling last week by Administrative Law Judge Bram D.E. Canter, who rejected the challenges by Miami, Martin County, the Seminole Tribe of Florida and Florida Pulp and Paper Association Environmental Affairs, Inc. Canter sided with the Florida Department of Environmental Protection, which argued that the challengers had missed a legal deadline in the cases. Miami filed a notice of appeal Thursday in the 3rd District Court of Appeal, two days after Canter’s ruling, court records show. The water standards, which were developed by the Department of Environmental Protection and approved July 26 by the state Environmental Regulation Commission, have been highly controversial. They involve new and revised limits on chemicals in waterways, with the department saying the plan would allow it to regulate more chemicals while updating standards for others. But opponents raised a series of objections, with Miami, for example, arguing that the plan “loosens restrictions on permissible levels of carcinogens in Florida surface waters with absolutely no justification for the need for the increased levels of the toxins nor the increased health risks to Florida citizens.” The four challenges were filed separately
last month in the state Division of Administrative Hearings and then consolidated in one case. But the Department of Environmental Protection argued that the challenges should be dismissed because they were not filed by an Aug. 5 legal deadline that applies in such administrative cases. Part of the decision focused on the Seminole Tribe, which launched the first challenge, filing its petition at 5:02 pm on Aug. 5. The Department of Environmental Protection contended petitions had to be filed by 5 p.m. That meant the petition wasn’t technically filed until 8 am Aug. 8, after a weekend, Canter wrote. The tribe and the other challengers argued they had more time to file petitions because of a “notice of correction” filed after the July 26 approval of the standards by the Environmental Regulation Commission. But Canter’s ruling said such a deadline extension could only apply if the department had published a “notice of change” to the standards, not a notice of correction. As is common, the initial document that Miami filed Thursday in the appeals court did not include detailed arguments seeking to overturn Canter’s dismissal of the case. But in a document filed Sept. 6, the city urged Canter to reject the Department of Environmental Protection’s position that the petitions should be dismissed. The city pointed to issues such as the disputed “notice of correction” linking to a revamped table of chemicals involved in the water standards. As a result, the city argued, the notice of correction “represents a substantive change” that should have led to a new timeline for filing petitions.
MIAMI ZONE LIFTED, BUT ZIKA FIGHT CONTINUES By JIM TURNER THE NEWS SERVICE OF FLORIDA A federal travel advisory stemming from the Zika virus was downgraded Monday for one Miami-Dade County neighborhood, while eradication efforts have increased in a second, higher-profile area. Meanwhile, the state is approaching 100 locally transmitted cases of the mosquitoborne virus, according to the governor’s office, which continues to implore Congress to approve a Zika relief package. Gov. Rick Scott traveled Monday to the Miami neighborhood of Wynwood to announce a one-square-mile Zika transmission zone has been lifted after 45 days with no continuing evidence of the virus spreading in that area. “Now that the Wynwood zone has been lifted, we must all work together to help this incredible Florida community fully recover,” Scott said in a prepared statement. The state has been spraying Wynwood and a similar zone in Miami Beach daily with regular doses of the insecticide naled, which targets adult mosquitoes, and Bti, to kill mosquito larva. Due to the efforts, the U.S. Centers for Disease Control and Prevention on Monday altered an advisory that had told pregnant women not to travel to Wynwood. With the change, Wynwood was added to more general guidelines that warn pregnant women worried about potential exposure to Zika to consider postponing nonessential travel to MiamiDade. Pregnant women and partners of pregnant women living in Wynwood are also advised to strictly follow steps to prevent mosquito bites. The Zika virus, which also can be spread sexually, is particularly dangerous to pregnant women because it can cause severe birth defects. Wynwood was the first place where locally transmitted cases of Zika were first detected in the U.S. The 45-day period covered three mosquito incubation periods. While Scott touted the success in Wyn-
wood, eradication efforts have not solved Zika problems in a similar zone in Miami Beach. The Centers for Disease Control and Prevention on Friday increased the size of that zone from 1.5 square miles to 4.5 miles after the announcement of of a fifth test sample of mosquitoes with the disease in Miami Beach. As of Friday, the Florida Department of Health had reported 835 cases of Zika in Florida, including 660 “travel-related” cases that involve people getting infected elsewhere and bringing the disease into the state. The department reported Friday that 79 cases involved people who caught the virus in Florida. But the release from the governor’s office Monday said there are more than 93 cases of locally acquired Zika in Florida. The state separates cases involving pregnant women, either travel or no-travel related, into a single category, with 86 cases as of Friday. Also, 10 cases involved people who are not Florida residents. Meanwhile, members of Florida’s congressional delegation are continuing to urge their colleagues—scheduled to adjourn Friday until November—to approve federal Zika funding, as well as money to combat a growing heroin crisis. “Congress has a duty to protect the public’s health,” U.S. Rep. Vern Buchanan, R-Fla., said in a prepared statement Monday. “Both Zika and drug abuse are spreading and pose a grave threat to Americans. These issues demand immediate federal action.” President Barack Obama in February called on Congress to approve $1.9 billion for Zika eradication efforts. On Friday, Scott used emergency powers to increase the state’s funding for the Zika fight by $10 million, to $36.2 million.

Seared Halibut with Lemon Butter Sauce

Serves: 4 Lemon Butter Sauce 1/2 cup white wine 1/4 cup fresh lemon juice 8 tablespoons whipping cream 3/4 teaspoon fresh garlic, chopped turmeric, to taste salt, to taste white pepper, to taste 8 tablespoons unsalted butter, diced Halibut 4 teaspoons olive oil 4 halibut filets (6-8 ounces each) salt pepper lemon zest herbs

Vegetables 2 tablespoons olive oil 2 small zucchini, cut into 1/4-inch strips 2 small yellow squash, cut into 1/4-inch strips 2 small red peppers, washed, seeded and sliced into strips Potatoes 2 cups Idahoan Signature Russets Mashed Potatoes (from 16.23-ounce package) For lemon butter sauce, add white wine, lemon juice, cream, garlic, turmeric, salt and pepper to saute pan. Heat on high heat and reduce to half its original volume. While lemon sauce is reducing, prepare fish and vegetables.
Once reduced, remove from heat and swirl in diced butter. For halibut, heat non-stick skillet on medium-high heat with olive oil. Season halibut with salt and pepper. Sear until deep golden brown, approxi mately 5 minutes each side. Remove from heat and cover with foil. For vegetables, add olive oil to skillet over medium-high heat. Saute zucchini, squash and pepper until crisp-tender, about 2-3 minutes. Keep warm. For potatoes, prepare mashed pota toes following package instructions. To serve, plate mashed potatoes, vegetables and halibut. Drizzle halibut with lemon butter sauce and garnish with lemon zest and fresh herbs. Note: Haddock or striped bass can be substituted for halibut.

Serves: 4 8 chicken thighs (bone-in, skin-on) 1/2 teaspoon salt 1/4 teaspoon ground black pepper 1 tablespoon olive oil 1/2 cup dry white wine 1/4 cup chicken broth 2 thyme sprigs 2 garlic cloves, crushed 2 cups Idahoan Signature Russets Mashed Potatoes (from 16.23-ounce package) 1 cup sliced cremini mushrooms 1/2 cup cherry tomatoes, halved 1/4 cup pitted black olives, halved sauteed green beans Sprinkle chicken thighs with salt and pepper. Hoisin Roasted Pork
with Steamed Greens
Serves: 4 2 tablespoons hoisin sauce 2 tablespoons honey 1 tablespoon soy sauce 1 pork tenderloin filet (16 ounces) 8 ounces fresh sugar snap peas 8 ounces green beans 2 cups Idahoan Signature Russets Mashed Potatoes (from 16.23-ounce package) Heat oven to 350 F. In bowl, combine hoisin, honey and soy. In non-metallic bowl, pour marinade over pork and set aside for 15 minutes. Heat medium nonstick frying pan over medium heat. Add marinated pork and cook each side 1-2 minutes. Transfer pork to baking tray and cook 15 minutes, or until cooked to desired doneness. Steam fresh sugar snap peas and green beans together. Set aside. Prepare mashed potatoes following package instructions. To serve, plate mashed potatoes, sliced pork and steamed vegetables. Spoon pan juices over pork and enjoy.
