Editor’s Note As I write this, I can finally feel the cool, crisp weather of fall.

It seemed to take an awfully long time to get here this year, but I’ll take it. November has become such a great month for our area. November starts off with the bang of Foo Foo Fest’s wide variety of cultural activities and ends with the delightful squeals of the Elf Parade and the First City Festival of Lights.

Foo Foo has become such a destination and this year, I’m looking forward to the women of fire exhibit at First City Art Center and the many wonderful community involvement focused events at Historic Pensacola.

My daughter and I love the Elf Parade and Winterfest. We’ve been attending since the beginning and it’s a wonderful tradition for us. It marks the true beginning of the Christmas season for us—not the mid October store decorating and shelf stocking that has become the norm. It’s stressful to see all of that stuff in October—when I’m still trying to find a last minute Halloween costume for my daughter, I can’t even begin to think about Christmas trees, gift wrap or presents yet.

That said, I think November is an acceptable time to start talking about the holiday season—Thanksgiving is a holiday, after all. In that spirit, we’ve asked a few local chefs to give our readers their delicious holiday pie recipes. Whether you make them for Thanksgiving, Christmas or a random Sunday afternoon, they are sure to hit the spot. Or, if you’re like me, you can plan to bake them for two weeks and

then just order one at last minute from one of these fantastic chefs. I see a last minute theme emerging in my life planning.

Maybe I need to look into that.

November –also known as Movember— has emerged as an unofficial men’s health awareness month. To honor that, we’ve spoken with physicians and survivors of testicular cancer to learn how to identify and catch the disease early for the best possible outcome. We’ve also asked the fine folks at Volume One and Wilfrid’s to give us a glimpse of men’s hairstyles and fashion sensibility at the moment. They captured that nicely with some cool dudes sporting cool hair and stylish threads.

Thanksgiving is one of my favorite holidays. How can anyone not love a holiday that focuses purely on gratitude and food? A lousy football record, major hurricane damage and a nasty political campaign season causes us to often lose focus on all of the good things we have in our lives. Let’s face it: losing to Tennessee and a barrage of media coverage on dim-wit candidates taking cheap shots at each other are not pleasant subjects. Thanksgiving reminds us to be appreciative of what we have and concentrate on what is really important. The problems will certainly be there the day after, but taking the time to give thanks has a way of re-energizing you to handle the challenges that you face and make them more manageable.

The early Americans who celebrated Thanksgiving taught us a lot. First, though the Massachusetts pilgrims usually get the credit for the celebration, they certainly weren’t the only ones who took time out to offer thanks for the seasonal bounty. Earlier in Virginia they were already doing the same. The lesson is multi-faceted here, beginning with the fact that it’s not important who gets credit for the idea. Thanksgiving wasn’t a national holiday until Abraham Lincoln said it was so. Another point to be made is that this was very much about survival.

All of the early celebrations were about the miracle of not starving to death. Too many prima donnas immigrated to this new world and not enough worker bees who were willing to roll up ye old shirt sleeves and farm the rich beds of seafood a stone’s throw from their villages. They would rather starve than get dirty or do anything labor intensive. And that is exactly what happened.

Those fortunate enough to be around for the big feast learned their lesson and were grateful for the opportunity to develop calloused hands.

camouflage, let alone feathers, reminds me that there is justice in this world. I feel safe in saying this tradition will not be passed on to another generation.

Thanksgiving is also about alliances and humanity. If the Native Americans had any idea of what was coming, I doubt they would have been quite so helpful. It’s amazing how humble and non-threatening you can be when you are hungry. I suppose the pilgrims felt they paid their debt to the very ones who helped to save them from oblivion by inviting them to share in their day of joy. For that brief moment in time, issues such as territorial expansion, power, fear and distrust were put on the back burner and it was simply people giving thanks to God for helping hands, for sustenance and for deliverance.

The modern translation of Thanksgiving is not so different. Our version, of course, borders on pure gluttony but it remains a time to share with family and friends as all contribute to the feast.

As those before us understood, the food serves as a symbolic and welcome distraction. War in the Middle East? Pass the mashed potatoes, please.

While the basic re-creation of the holiday remains, all families have their own traditions as well. My sister’s grown children still recall times they spent the day (every other year) with their remarried father and his wife. She required that everyone at the table dress as a pilgrim or an “Indian” to “get in the spirit.” Now they howl about some of the costumes they had to endure, but at the time they were mortified. I can only picture them sitting across the table from one another, William Bradford meets Pocahontas, as they giggled uncontrollably and were ultimately banished from the colony, or, in this case, the table. Imagining my pitiful wimpy ex-brother-in-law dressed in anything other than

Blended families clearly bring their own set of challenges into a holiday that is all about food. In our own family, we are open and adventuresome with our palette, but we are adamant about the dressing. My daughter almost married a New Yorker and she had to accept the harsh reality that at his family’s table, a foreign substance annually appears that is identified, to her dismay, as the dressing. Our very southern family would surrender to Sherman before they would serve anything other than cornbread stuffing. Yankees, on the other hand, offer up some substitute with god-knows-what as the base. We think it was bread but the texture was so unfamiliar that we shutter to think this might be the same thing we butter for breakfast. Don’t even get me started on what they do to sweet potatoes. The wedding never happened and I feel fairly confident that the dressing played a role in the change of plans.

Clearly, the Thanksgiving tradition is one to be cherished. It is the perfect occasion to blend history with family while adding your own personal touch. And regardless of what dressing you serve, remember to be grateful for what you have. Bad times come and bad times go, but friends and family persevere. Happy Thanksgiving, everyone.

Winterfest Fun!

It’s not the holiday season in Pensacola until Santa leads his merry cast of characters in the Elf Parade through the streets of downtown to officially kickoff Winterfest, and this year’s event promises to big bigger and better than ever.

What began as a neighborhood holiday party has grown into a month-long event series that takes over downtown Pensacola and includes trolley rides, the Elf Parade, visits with Santa, live performances of classic holiday stories and much more.

The Elf Parade on Nov. 23 also serves as the beginning of the First City Festival of Lights which illuminates Palafox Street with hundreds of thousands of Christmas lights for the entire holiday season and draws thousands visitors downtown from across the city and around the region.

Winterfest organizers saw their biggest crowds ever last year when, for the first time, the Elf Parade ended with a fireworks display over Palafox Street. Fireworks are on the schedule again this year and new events for 2018 include a showing of The Polar Express at the Saenger on Theatre on Nov. 24 Santa’s Cookie Festival on Dec. 1 and a toy drive on Dec. 8, among others.

At the helm of Winterfest since its inception, Denise Daughtry said the festival is about providing value and holiday fun for families and visitors in downtown Pensacola.

Winterfest Fun! many parts of Winterfest each year takes a lot of work, but is made worthwhile when she sees families enjoying the holiday spirit in Pensacola.

“Years ago we had a neighborhood Christmas part that was just something fun we decided to do and from there’s it’s really turned into something,” Daughtry said. “It was just a little fun thing that turned into something fun for everyone.”

Daughtry and her small team work year-round to promote and organize Winterfest, and have managed over the years to garner national recognition for Pensacola from the likes of Expedia Southern Living .

acquisition of a hand-crafted miniature train dubbed the “Winterfest Express” that offered tours of Ferdinand Plaza.

scenes from classic holiday films and stories including “A Charlie Brown Christmas,” “How The Grinch Stole Christmas,” “The Polar Express” and others.

Surveys conducted last year estimated that nearly 29,000 people attended Winterfest over the course of the month, and that 5,200 of those were out of town visitors who came to Pensacola specifically for Winterfest. All together, it was estimated that 2017 attendees spent $843,000 in Escambia County, making Winterfest a valuable economic booster in the usually-slow “shoulder season” when crowds have left the beaches and returned north.

When it first appeared in 2014, the name Foo Foo Fest left most people scratching their heads and asking, “What is that?”

Today, Pensacolians know that Foo Foo Fest is the grand umbrella that encompasses the many artistic and cultural events that take place in the first two weeks of November.

From one-of-a-kind performances to huge art installations, even the Great Gulf Coast Arts Festival and the Blue Angels Homecoming Airshow are all a part of Foo Foo Fest. The idea is that by giving one name to Pensacola’s many fall events, the folks that work so hard to bring visitors here can market not just one event here or there, but a whole two-week festival.

The highlight of last year’s festival was undoubtedly the Umbrella Sky Project that drew thousands to Intendencia Street downtown. Many of the selfies snapped beneath those colorful umbrellas still serve as profile pictures on local social media accounts.

While there are no umbrellas this year, Foo Foo Fest 2018 includes a whopping 45 events.

Great Gulf Coast Arts Festival Nov. 2 - 4

The event that should need no introduction. The Great Gulf Coast Arts Festival draws artists and art lovers from across the Southeast for this three-day juried show that has been happening since 1973.

Painters, potters, photographers, sculptors, carpenters, jewelers and all other kinds of artists and craftspeople fill Seville Square downtown to show and sell their work. Whether you’re looking for that perfect piece to go above your fireplace or just want to browse a huge and unique collection of original art works, the Greater Gulf Coast Arts Festival has it all and is a definite highlight on Pensacola’s cultural.

The invited international Arist for the 2018 festical is Abignail Nnaji, a Nigerian painter known for her abstract and experimental paintings depicting daily life.

The festival will also feature works from two designated emerging artists. Pensacolians James Amerson, a sculpture, and Lawrence Lazare, a landscape and street photographer, will share a booth at the festival as the part of the GGAF’s Emerging Artists program designed to introduce new artists to the arts festival scene.

Admission to the Greater Gulf Coast Arts Festival is free. Pets are not allowed.

Back On The Blocks- STREET BEATS, BANDS & BAR-B-QUE Nov. 10

Science on the Street Nov. 1-13

More of a happening than a single event, The Pensacola MESS Hall is bringing science to Science to Palafox Streeet with their interactive set of “Science on the Street” exhibits.

These science stations will line the streets of downtown Pensacola with activities that will be available for the entire duration of Foo Foo Fest. This year’s exhibits will play with your mind as they unravel the science behind illussions.

In addition to the exhibits, available for the duration of the festival, there will be interactive programs including scientists demonstrating illusions and allowing visitors to create their own.

This one-day music battle and jam session occurs on stage and on street corners performed by local, regional, and national musicians. This event includes a Battle of the Bands Challenge as high school, college, and variety bands “strut their stuff.”

This event is one of the cultural preservation activities which supports the history, heritage, and culture of the Creole musicians who created the African-American art and entertainment district in Belmont-DeVilliers- historically known for the emergence of the “Chitlin’ Circuit.” The festival provides an intimate atmosphere which blends a modern and traditional flavor for artists and visitors alike to experience creative expression, musically, and artistically, both indoors and out, while revitalizing and preserving the heritage of the Belmont by offering cultural arts and entertainment for tourists and residents to enjoy while visiting the area. Legendary greats such as Luis Armstrong, Aretha Franklin, B.B. King, Ray Charles, Ike & Tina Turner, James Brown, Dizzy Gillespie, and many others have all left their cultural flavor on the district, and made lasting impressions on the region.

This event is free and open to the public. Back on the Blocks take place at the corner of Belmont and Devilliers Streets on Nov. 10 at 12 p.m.

CUBED Luminous Nov. 8-11

Last year’s CUBED installation was one of the best events Foo Foo Fest had to offer, and the huge cubes produced by the local artists were a welcome addition to downtown’s public art scene.

CUBED is back this year, but this time with a digital twist. Whereas last year’s event had artists paint, sculpt or draw on huge cubes, digital artworks this year will be projected onto the cubes, and another cube made entirely of LED screens will display digital works as well.

CUBED Luminous will partner with UWF Historic Trust and the Pensacola Museum of Art to feature art from invited and open call artists. The works will be displayed at the UWF Historic Trust’s Museum Plaza.

National Flight Academy: Summer Camp for Adults If you haven’t been to the National Naval Aviation Museum onboard Naval Air Station Pensacola yet, you haven’t really seen Pensacola. If you have, then you might not know about the National Flight Academy (NFA) just next door. If you do know about NFA, you might not know that it’s not just a summer camp for your children. NFA offers unique experiences for children and adults alike.

NFA’s Adult Team Training Program may be new to most, but it’s actually been a part of NFA for many years.

Director of Marketing and Public Relations for the Naval Aviation Museum Foundation (NAMF) Malerie Shelton said she is always surprised at how many people don’t know that they can get a similar experience at NFA as their children.

“It’s almost like a little secret,” she said. “People don’t know this is right on the base or what we offer. A lot of the local community understand that if they have a middle or high school student that would be interested in this field, they can send them for our summer deployment program, which are overnight for kids. But they don’t realize that we do have a really unique adult program to

come through and customize your own team building.”

The Adult Team Training Program focuses more on corporate and business teambuilding and leadership training, but the program can be tweaked to include communications training among other lessons. While the children programs include learning math and science along with leadership skills, the adult program focuses more on the more advanced critical learning and thinking skills.

Although the programs are very similar, the leadership, communication and other skills learned from NFA are universal for children and adults, and can be used in and out of the work place.

through missions that are very similar to what the kids do,” Shelton said. “We just take out some of the math, the science, and we turn it into if they want to focus on planning and executing, or something like that. So we can tweak our programing and aviation has so many facets that we can apply to what they are looking for.”

The program is run aboard NFA’s simulated aircraft carrier the USS Ambition (CVT-11), a more than 100,000 square-foot, four-story structure. It boasts an impressive array of technology that includes 42 networked flight simulators, board rooms, a fully functioning galley and several breakout rooms. Special effects within Ambition simulate an actual aircraft carrier, with the sound and feeling of what it would be like to be out on the water aboard a giant ship.

“Everything at the National Flight Academy has a purpose, all the decals on the wall, everything on the ship is supposed to mimic what a real aircraft

carrier is like,” Shelton said. “I’ve had people who have been aboard real aircraft carriers tell me it’s the closest you can get to the actual thing.”

The immersive environment is important to the experience of the program, according to Shelton. People aboard Ambition are thrown into a new environment that no one is used to and no one knows quite what to do. This all lends to a better experience during the program, as well as lending a bit of fun and adventure. With no one knowing what to expect, everyone is put on the same level at the start of the program.

“We are putting you in a unique environment that’s outside of your comfort zone,” Shelton said. “All the egos, all of the titles are dropped at the door. When everybody is in an uncomfortable, new environment they are more apt to pay attention and learn more and take it all in.”

Programs take at least 12 participants to work effectively, but NFA can accommodate up to 200 people at a time, and can take place over several days or a few hours. The program is led by professionals who have experience as team trainers who act as guides to the participants. Depending on what experience you want, NFA’s programs can be changed to fit any need and can focus on one particular skill, say planning and executing, over something like leadership.

Among those who have come through NFA include Navy Federal Credit Union, Ascend Materials, the Delaware Chemical Company and more. Shelton said they have had people from all over the country come to experience the program, and many of those who get the chance come back again or send their children the next summer. She said one woman in particular came through the program twice and sent her child to learn at NFA.

Between the adult and children programs, NFA has had people from all 50 states and at least seven countries come to experience the program.

Shelton said even those who are not interested in aviation or the military find something to enjoy, as they do not center their programs strictly around military teachings, but rather the skills important to communicate and lead successfully.

If you find yourself aboard Ambition, Shelton recommends if you do nothing else that you fly the simulators. The 42 simulators are all networked together, meaning everyone in a simulator can see others in the simulators around them as if they were flying in formation. In addition, people in an adjacent room

on headphones can also see the “planes” and can communicate with everyone as if they were air traffic controllers. This is just one of the experiences the program offers, and it is unique only to Pensacola and NFA. “There are plenty of unique teambuilding trainings around the world, but for one of them to be here in your backyard, I think a lot of people just don’t know it’s available,” Shelton said.

NFA is an educational program operated and supported by NAMF, a 501(c) (3) nonprofit which also supports the National Naval Aviation Museum.

Look around and you’ll likely see them – mustaches and beards, goatees and handlebars cropping up on usually shorn faces. For a little more than a decade, November has been the month when men put down the razors to raise awareness for men’s health issues, especially testicular and prostate cancer.

No-Shave November or “Movember” has grown into a tradition much like wearing pink has become common to show support for breast cancer awareness in women.

Miyamoto, is for men to take an active role in their health by checking themselves at home for testicular cancer, and scheduling screenings with their doctor for prostate exams.

Every year, nearly 10,000 men in the U.S. are diagnosed with testicular and nearly 165,000 with prostate cancer. Testicular cancer primarily affects young men in their late teens to mid30s. Prostate cancer, on the other hand, is most common in men over 45. Both diseases but are serious and scary, but are unlikely to be life-threatening if caught early.

“The telltale sign of testicular cancer is a mass in the testicle,” Miyamoto said. “That’s when they should call their doctor and get an examination. They don’t need annual screenings, it’s just a matter of checking their testicles and they can do that in the shower say once a month or so.

Prostate cancer, at the other end of the spectrum, you need to be seen by a doctor to be properly screened. There are signs and symptoms that may promote suspicions, but typically if you’re

Discovering that you have cancer can be scary at any age, but especially surprising as a young person. Pensacolian Josh Cooper was diagnosed with testicular caner at age 24. Not knowing what the disease might entail, Cooper said he was devastated upon receiving the news.

“When they called me and said there’s a 99 percent chance I had cancer I broke down, I cried like a baby,” Cooper said.

The disease had spread to his abdominal lymph nodes and he was diagnosed with stage 2 seminoma testicular cancer. But Cooper was fortunate in that he had realized something was wrong early and got checked out. Thanks to advances in modern medicine in recent decades, testicular cancer has a near 95 percent survival rate.

After surgery and radiation treatment, Cooper’s life was back to near normal in six 28 Pensacola Magazine

months. Today he volunteers as an advocate with the Testicular Cancer Awareness Foundation, sharing his story and encouraging young men to seek help if they suspect something is wrong.

Where testicular cancer is more common in young men, prostate cancer largely affects older men and in much great number. But some men may be surprised to learn that prostate cancer is rarely deadly and, depending on how aggressive the cancer is, may not require treatment at all.

“Because prostate cancer is usually slow growing, intensive treatment may prove more detrimental than the disease itself,” said Dr. Miyamoto.

A prostate cancer screening involves a blood test and digital rectal exam. If cancer is found, the level of treatment will depend on the type and aggressiveness of the cancer. If a man unlikely to experience effects of the cancer in his lifetime, he may only require routine monitoring to ensure that cancer does not spread or become more aggressive.

While prostate cancer is the second leading cause of cancer death in American men behind lung cancer, most men who contract the disease do not die from it.

Like testicular cancer, the disease is very treatable if caught early.

“The key to all of this is early diagnosis,” said Dr. Miyamoto. “If you’re presented with an advanced prostate or testicular cancer then that’s a much more difficult conversation to have, but typically these cancers are very treatable and curable. If they are caught early the discussions are more positive.”

Easy as Pie

Pie—it’s the ultimate American comfort food. The holiday season is a favorite among pie enthusiasts because the options are plentiful—apple, pecan, pumpkin, rhubarb, pear, sweet potato—add in a little caramel, a little cheese or custard and the opportunities are endless. This month, we’ve asked a few local chefs to share a favorite holiday pie recipe with our readers and they responded with a fantastic variety both sweet and savory pies.

We can attest to the fact that they were all delicious and as you can see, beautiful. So, grab your apron, mixer and rolling pin and get your holiday baking on!

Spiced Custard Pear Tart

Pâte Sablée Tart Shell

Easy Spiced Custard Filling

Yields 2 crusts 8 oz softened butter 1 cup powdered sugar 1 egg yolk 1 tsp salt 2 ¼ cups flour

Yields enough to fill one tart 2 cups whole milk 2 tablespoons cornstarch ½ cup sugar 4 egg yolks 1 teaspoon vanilla 1 teaspoon cinnamon ½ teaspoon nutmeg

Cream together butter, sugar, yolk, and salt until smooth and light in color. Gradually add in flour and mix until uniform. Split dough into two equal parts wrap in plastic wrap and chill for 30 minutes. When ready, roll out to 1/4” thickness and line tart shell pan crimping or cutting edge clean. Preheat oven to 400F and blind bake shell for 5 minutes by pricking bottom, lining with foil or plastic wrap and filling with pie weights or uncooked beans. Reduce heat to 350F and bake for 10 minutes. Remove foil and beans and bake for an additional 5-10 minutes until golden.

Pear Topping

Thinly slice pears and arrange in circle pattern with top of pear pointing towards the center. Glaze with apricot jam to preserve shine and prevent browning. Optional add pomegranate seeds or Combine milk, sugar, and cornstarch in saucepan constantly raspberries for extra pop stirring and scraping bottom of pan to prevent cornstarch from of color. burning. Once milk is just bubbling (but not boiling!) slowly add in egg yolks and constantly whisk until mixture thickens and coats the back of a spoon. Remove from heat and add vanilla, cinnamon, and nutmeg. Put into cooled tart shell and refrigerate until set.

Crawfish Pie

Chef Cory Broussard, Cajun Specialty Meats

Ingredients 1 cup crawfish tails 2-3 TBSP butter 1 onion, diced ½ bell pepper, diced 1 stalk celery, diced 1-1/4 TBSP tomato paste 2 TBSP cream of mushroom soup 2 TBSP evaporated milk

Method 1 tsp condensed milk 6 TBSP water 2.5 TBSP cornstarch Pinch salt Pinch red pepper Pinch black pepper Pinch white pepper 1 tsp garlic, minced

SautĂŠ vegetables in butter. Add tomato paste, cream of mushroom soup and seasonings. Mix well. Add milk.

Bring to a boil. Add water and cornstarch. Bring to boil. Add crawfish tails, turn off burner and let sit for 15 minutes. Fill two Cajun Specialty Meats 6-inch pie crusts to just below top. Bake according to crust package instructions.

Bourbon Pecan Pie Chef Gus Silivos, Nancy’s Catering & Events

Ingredients Vegetable cooking spray ½ cup dark chocolate morsels ¼ cup butter, softened ¾ cup granulated sugar, divided 1 tsp vanilla extract 1 large egg ¼ cup fat-free milk 2 tablespoons bourbon (optional)

¼ cup Dutch process cocoa 2 tbsp all-purpose flour 4 egg whites ¼ teaspoon cream of tartar ½ cup reduced-fat whipped topping (thawed) 1 tbsp unsweetened cocoa 1 tbsp powdered sugar

Method 1. Preheat over to 300. Coat bottom and sides of an 8-inch spring form pan with cooking spray.

2. Microwave chocolate morsels in a small microwave-safe bowl at MEDIUM (50% power) for 1 minute or until melted & smooth, stir at 30-second intervals.

3. Beat butter and 1/2 cup granulated sugar at medium speed with an electric mixer until well blended (about 2 minutes). Add vanilla and egg; beat 1 minute. Add milk and, if desired, bourbon; beat 1 minute. (Mixture will look curdled.) Add

melted chocolate, beating just until blended.

Gradually add cocoa, flour, and chopped pecans, beating at low speed just until blended.

4. Beat egg whites and cream of tartar at high speed with an electric mixer until foamy. Add remaining 1/4 cup granulated sugar, 1 tablespoon at a time, beating until stiff peaks form. Fold onefourth of egg white mixture into batter; gently fold in remaining egg white mixture. Spoon batter into prepared pan.

5. Bake at 300 for 45 minutes or until set. (A

wooden pick inserted in center will come out with just a few crumbs on it.) Remove torte from oven; immediately run tip of a small knife around edge of torte. Let cool on wire rack 30 minutes. (Torte will rise to top of pan while baking but will sink while it cools.) Remove sides of spring form pan.

6. Spoon whipped topping into a zip-lop plastic freezer bag. (Do not seal.) Snip one corner of bag to make a small hole. Pipe dollops of whipped topping around base of torte. Sprinkle torte with cocoa and powdered sugar.

Maple Walnut Apple Pie Jen Smith, End of the Line Café

Ingredients

Method

3 cups unbleached flour 1 cups Earth Balance vegan butter, cold 1 tsp. sea salt ½ cup ice cold water 6 cups Fuji apples, cored and sliced ¾ cup maple Sugar + 2 Tbls. for sprinkling ¾ tsp. cinnamon ½ cup walnuts ¼ cup arrowroot or cornstarch Pinch nutmeg 2 Tbsp. non-dairy milk

In a large bowl mix flour and sea salt, cut in butter and incorporate until you have small pebble size pieces. Add water by the tablespoon, mixing to grab up all the flour (don’t over mix).

Divide dough into two pieces, cover with a towel or plastic wrap and refrigerate for 10 minutes.

In a separate large bowl mix apples, sugar, cinnamon, walnuts, nutmeg and arrowroot until incorporated.

Before starting this part, say to yourself: “All crusts are perfect crusts.”

Roll out your first crust on a floured cutting board, place in pie plate. Pour apple mixture in and lightly press down. Roll out and cover with second crust, crimp edges. Brush top with milk, sprinkle with sugar and score the top with four 2 inch lines. Wrap outer crust with foil and bake for 25 minutes, remove foil and bake for 35 minutes longer.

Pumpkin Cream Pie Chef Miko Franklin, Jackson’s Steakhouse

Crust 2 ½ C. all purpose flour (sifted) ¼ tsp. salt 8 Tbsp. Unsalted Butter (cubed) ¾ C. Milk (chilled) 1 Tbsp. Sugar (fine) Instructions: Place AP flour, sugar and salt in a medium bowl. Using a fork to make a well in the center of the mixture. Add cubed butter and milk to the well. Use a fork to combine mixture until incorporated. Tip dough onto a lightly floured work surface and knead for 1 minute. Then wrap dough in plastic wrap and place in the refrigerator for 1 hour, or overnight.

Once dough has set, place on a lightly floured surface.

Using a rolling pin, roll out dough into a 10” circle. Spray a 9” pie pan and place dough in the center. Using your fingertips, lightly press the dough into the pan. Then turn the out rim of the dough inward, using a fork to press down to make ripples. Pre bake shell for 10 minutes on 325°. Then let cool for 10 minutes.

Once the crust has cooled, pour 2 cups of pumpkin mixture into shell. Use a table spoon to drop 6 tbsp. of cream cheese mixture in the pumpkin filling. Use a wooden stick to swirl cream cheese mixture into pumpkin filling. Place on a baking sheet, and bake for 25–30 minutes on 325°.

Pumpkin Filling 1 Pie Pumpkin 1 ¾ C – Sugar (fine) 3 lg. – Eggs 1 Stick – Butter ¼ tsp. – Salt ½ tsp. – Cinnamon

½ tsp. – Nutmeg ½ tsp. – Ginger ½ tsp. - All Spice 1 Tbsp. – Vanilla Extract ½ C. - Heavy Cream ½ C. – AP Flour (sifted)

Instructions: Wash pumpkin, cut in half and remove all seeds. Place on a lightly greased baking pan. Bake for 25 – 30 minutes on 350. Let cool for 15 minutes, then peel outer skin, and place pumpkin and sugar in a food processor, for 1 minute.

Scrap down the sides of the processor with a rubber spatula.

Add salt, cinnamon, nutmeg, ginger, all spice and vanilla. Blend for 1 minute Scrap down the sides of the processor. Add 1 egg at a time, scrapping down the sides after each addition. Pour in melted butter, blend 30 seconds. Add AP flour, and blend an additional 30 seconds. Scrape down the sides of the processor, add heavy cream then blend for 1 minute, or until smooth. Set to the side.

Cream Cheese Filling 8oz. – Cream Cheese (soften) ¾ C. – Sugar (fine) 2 lg. – Eggs 1 Tbsp. – Vanilla Extract Instructions: Place cream cheese, sugar and vanilla in a standing mixer, on low speed.

Mix for 3 minutes or until fully incorporated. Scrape down the sides of the mixing bowl with a rubber spatula. Add eggs one at a time. Making sure each egg is fully incorporated. Scrape down the sides, and mix another 3 minutes, or until smooth and creamy. Pour mixture into a small bowl with a lid, and set to the side.

Pumpkin Pie

Ingredients 1 can (15 Ounce) Pumpkin Puree 1 can (14 Ounce) Condensed Sweet Milk 1 Premade Pie Shell 2 Eggs .25 Tbl. Cinnamon .5 tsp. Ground Nutmeg .5 tsp. Sea Salt .25 tsp. Ground Ginger .25 tsp Ground Cloves

Method Mix pumpkin and spices together Add remaining filling ingredients Mix slowly, just until thoroughly mixed Pour into pie shell Bake at 400 degrees for 15 minutes, then reduce temperature to 350 degrees for 25 to 30 minutes Cool pie and enjoy!

Pensacola Little Theatre’s FooFoo Festival entry this year is a night of hilarious one-acts by Christopher Durang. A set of Tennessee Williams parodies (A Streetcar Named Desire, The Glass Menagerie), the fading Southern belle, Amanda, tries to prepare her hyper-sensitive, hypochondriac son Lawrence for “the feminine caller” but he rather play with his collection of glass cocktail stirrers. Cleared for Landing: Hayward Inks $35 Million Expansion Deal with Singapore Company One of the largest economic development deals to ever come to Pensacola just got bigger.

Pensacola Mayor Ashton Hayward travelled to Singapore in October to sign a memorandum of understanding with Singapore Technologies Engineering, the parent company of VT Mobile Aerospace Engineering whose $46 million aircraft maintenance facility began operations at the Pensacola International Airport in June.

The MOU between the city and ST Engineering formalizes an agreement that the company will invest an additional $35 million toward an expansion of the airport facility, creating 1,325 new jobs.

The signing took place at ST Engineering headquarters in Singapore and FloridaWest Economic Develop Alliance CEO Scott Luth and

Escambia County Board of County Commissioners chairman Jeff Bergosh were also on hand.

“This is an incredible opportunity for Pensacola and Escambia County, and has been a strong collaboration between the city, the county, the state, the federal government and Triumph Gulf Coast Inc.,” Hayward said after the signing. “Working together, we hope to grow ST Engineering in our region and state into one of the world’s best Aerospace MRO campus.”

ST Engineering president and CEO Vincent Chong said the agreement deepens the relationship between his company and the City of Pensacola, Escambia County and the State of Florida.

“With funding support from the city, county and state, ST Engineering is now able to embark on this project to build the Pensacola Aerospace campus – state of the art facilities that will bring good-paying Business Climate

jobs to more people in the Pensacola area,” Chong said.

“Tapping the lush resource of military aviation veterans as well as the pool of engineering and aviation talent, we will collectively develop a highly-skilled and robust aerospace workforce in the area.”

The efforts to gain a foothold in the aircraft maintenance, repair and overhaul (MRO) sector in Pensacola extend back to 2013 when Hayward and Luth ¬– then of the Greater Pensacola Chamber of Commerce – first met with executives of VT MAE in Mobile and ST Engineering in Singapore.

The investment by the company is one of the requirements for the project to receive an additional $56 million in Triumph Gulf Coast grant funding resulting from the BP oil spill.

The Triumph Gulf Coast board selected the project in July to receive the largest allocation of funding to date, if the city could secure the additional funding.

The deal resulting from those meetings came to fruition with the opening of VT MAE’s 1730,000 square-foot facility in June at the airport and its promise to create 400 jobs at an average salary of $44,500.

In March, Gov. Rick’s Scott’s office announced the awarding of $4 million in Florida Job Growth Grant Funding for the City of Pensacola to develop additional taxiways, ramps and other infrastructure at Pensacola International Airport as part of the project.

All told, the project has about $118 million committed from the state, Escambia County and city. The city is seeking an additional $50 million from the Florida Department of Transportation, $20 million from the Governor’s Job Growth Fund and about $17 in federal grants, leaving about $5 million to fully fund the project.

When fully developed, the VT MAE campus will include four maintenance repair and overhaul hangars as well as administrative and warehouse buildings.

Chong said since opening the VT MAE Hangar, the company has processed 22 jets for UPS and has serviced Frontier Airline planes on an on-call basis. He said the company projects reaching its 400-employee goal by mid 2020, one year ahead of the timeline set in the original agreement.

Hayward said the impact of the jobs created by the partnership with VT MAE will be felt in the region for generations.

“When someone has job it changes their life,” Hayward said at the signing ceremony. “They have opportunities for their family and this is going to be growth for our community and for our state and for our regions and to train these incredible people to learn a skill that’s going to last for generations and the economic impact to our community and the great State of Florida and the nation is going to be extremely important.”

The “Midnight Shift” at Pensacola Police Department Do you like to enjoy a cup of coffee in the morning?

Or maybe in the evening after a nice dinner? Whatever your coffee needs may be, the next time you are searching for another cup of joe, you might want to check out the Pensacola Police Department (PPD). After drinking their weight in coffee, both good and bad, the officers at PPD know coffee pretty well, and they want to share their take on this much beloved drink with the community. In collaboration with DeLuna Coffee and Red Iron Design House, PPD released a new line of coffee called the “Midnight Shift,” a five-bean, medium roast available in stores throughout Pensacola. For every bag sold, $1 will be donated to the Rally Foundation, which supports childhood cancer research.

The idea for a police-brand coffee came first from a realization that the department was lacking an organized connection to local charities.

Operational Support Division Captain Stephen Davis said that the department needed, and wanted, to do more for the community. Specifically, PPD has decided to support the Manna Food Pantry and the Rally Foundation, both organizations Davis said have the department’s complete trust in their skill and devotion to their causes.

Davis also revealed that the department’s connection to the Rally Foundation has been critical, as members of the department have been impacted by cancer in the last few years.

The Rally Foundation has been a leading force in fundraising, with 92 cents for every dollar donated given directly to childhood cancer research, and it was a natural selection for PPD in their efforts to connect with the community.

“A while back, we decided as a department that our effort with charities was – well we could do better,” he said. “We spread our resources way too thin trying to do too much and we weren’t having too much success with anything.”

After struggling with the problem for a little while, the idea of coffee was brought up while Davis was in conversation with Lisa Long from Red Iron Design House. He said he was surprised when she liked the idea, and even more so when someone else told him they liked the idea as well. What had originally been a half-baked idea soon took hold of everyone involved and the creation of Midnight Shift was in the works.

“It is a great companion idea. We did realize that a lot of our meetings and the things we did revolved around coffee – coffee with a cop, our town hall meetings. So we tow our bags of Pensacola police coffee with us down to the Doghouse or Urban Swinery or Global Grill and it’s a perfect fit.”

“It’s taken on a life of its own,” Davis said. “It’s like a spare tire that’s gotten away from us rolling down a hill. It’s picking up speed and needs very little work now.”

“I worked midnights for 14 years of my career,” Davis said. “That’s quite a bit of coffee, quite a bit of bad coffee.

events that included coffee, including their Coffee with a Cop days where officers would go and have coffee at local shops. This gave people in the community a chance to interact with the officers in a unique environment. Coffee was also involved in more official meetings, such a town hall meetings. It may not have been the shining star, but coffee brought the police and the community together.

“It (Midnight Shift coffee) is a great companion idea,” Davis said. “We did realize that a lot of our meetings and the things we did revolved around coffee – coffee with a cop, our town hall meetings. So we tow our bags of Pensacola police coffee with us down to the Doghouse or Urban Swinery or Global Grill and it’s a perfect fit.”

Modern policing over the past few years has been highly criticized, with police violence from Chicago, Baltimore and Ferguson affecting public perception of all police departments, including PPD. Davis said

PPD wants to continue to serve Pensacola with the integrity and courage it has always had in a community that trusts them, and that giving back to charity and being active in the community is their way of building that bridge.

“This is Pensacola,” Davis said.

“We can sit down, we can work stuff out. We may not come to an agreement, but at least we will come to an understanding.

That’s all we want.”

ENTRECON RETURNS

Northwest Florida’s premier business and leadership conference Entrecon is set to return to downtown Pensacola for its fourth year on Nov. 14,15 and 16.

Organizers say the conference has become a must-attend event for community-minded business leaders and has evolved over the years to include topics important to all members of the workforce.

“It started off being a conference for entrepreneurs and businesses owners and we quickly realized it was important to catch a wider audience and that’s what we we’re hearing is that people wanted a leadership conference so we developed and grew the original Entrecon in the premier business and leadership conference in the area,” said Studer Community Institute Director of Training and Development Rachael Gillette.

The three-day event is organized by the Studer Community Institute and features a series of keynote speakers, breakout sessions and networking events and draws around 450 attendees annually, Gillette said. The event also include the EntreCon Awards ceremony on Nov. 14 to recognize the impact of entrepreneurs and businesses have on the community.

Nine Pensacola business leaders make top 500 Florida influencers list Florida Trend recently recognized nine Pensacola leaders as top Florida influencers in their inaugural Florida 500 Influencers Index. The Pensacola influencers included Deborah Calder, executive vice president of Navy Federal Credit Union; Michael Myhre, CEO of Florida Small Business Development Center Network; Ken Ford, founder and CEO of IHMC; Mark Faulkner, president and CEO of Baptist Health Care; Fred Levin, chairman and attorney of the Levin, Papantonio, Thomas, Mitchel, Rafferty, and Proctor Firm; Eugene Franklin, president and CEO of Florida Black Chamber of Commerce; Quint Studer, founder of the Studer Family of Companies; Lewis Bear Jr., president and CEO of Lewis Bear Co. and Michael Murdoch, president and CEO of AppRiver. The list is the first ever compiled by Florida Trend in an effort to spotlight some of the most influential business leaders in Florida. These did not necessarily mean the most visible people or the people with the most state-wide influence, according to Florida Trend, but people who had influence on the small and large scale and those who have had a long record of work and effort put into their field. While highlight the influencers’ work and success, the list also gave those selected a chance to answer some personal questions about themselves.

“In the course of developing our list of influential Floridians, we invited those under consideration to answer questions about themselves via an online form,” Executive Editor of Florida Trend Mark Howard said in an editor’s letter.

“We chose the questions carefully, hoping the responses would enable us to present more personal snapshots of the people we believe are charting Florida’s course.

Among other questions, we asked what they considered the biggest issue for Florida; we asked them about personal challenges; about how they perceived the future of their industries; whether they ready for pleasure and to relate something they thought most people don’t know about them.”

Many of the Pensacola influencers shared personal challenges and stories about working in their field or simply how they live their daily life. Murdoch shared his Dominican heritage, Studer opened up about being a 35-plus year recovering alcoholic and Myhre talked about not having any college ambition until the birth of his daughter. They also mentioned current projects and goals for their companies, including Studer’s ongoing work to improve the lives of children and Faulkner’s struggles to rebuild Baptist Health Care facilities after they were damaged during Hurricane Ivan.

The list provides a window into the lives of those who help to run Pensacola, but it also shows the larger context of their influence throughout the state.

Florida Trend selected the influencers after a year-long project that included interviews, research into business contacts and input from community sources. The nine Pensacola business leaders were selected from a much larger pool of people, one that include a former Speaker of the Florida House of Representatives and major business executives, such as the Mayo Clinic, Synovus, Royal Caribbean Cruises and more.

“The reality is that in a fast-growing state of 21 plus million, with a $1 trillion GDP (gross domestic product), we probably could have included one thousand names and still generated disagreement about who made the list and who didn’t,” Florida Trend Publisher Andy Corty said.

The list provides a window into the lives of those who help to run Pensacola, but it also shows the larger context of their influence throughout the state. Some, like Ford and Levin, are local business enterprises, while Calder and Faulkner belong to businesses that are known throughout the state. Either way, their influence was strong enough to catch the attention of Florida Trend and proven enough to make the list. The presence of so many Pensacolians on the list speaks to the continued growth in the community. With Florida Trend set to release another influencers index next year, Pensacola’s place as a rising business city means there may be more locals spotlighted for success in their industry.

Around the Region UWF receives $3 million grant to enhance STEM courses The University of West Florida received a five-year, $3 million grant from the U.S. Department of Education to enhance and expand its science, technology, engineering and math courses.

The grant, which was awarded to the Hal Marcus College of Science and Engineering, will provide funding for the University to purchase new technology and equipment, and hire additional staff who will help ensure student success in STEM courses.

“Under this grant, we have the ability to transform our STEM general education program using best pedagogical practices,” said Dr. Jaromy Kuhl, interim dean of the Hal Marcus College of Science and Engineering. “We will redesign key STEM entry-level courses, build STEM success studios, and by doing so, improve STEM retention and produce more STEM graduates.”

The grant also provides funds to renovate and build additional laboratory space, including about $250,000 to build new physics labs.

“We’re building in and building out our chemistry and biology labs to improve their technology so they have equipment to enhance the teaching of some of the concepts the students are learning,” said Dr. Matthew Schwartz, who coordinated the grant application while serving as associate dean of the Hal Marcus College of Science and Engineering and now serves as the interim assistant vice president for research

administration at the University.

Among the new staff that will be hired through the grant, will be an academic coach dedicated to helping students succeed in STEM courses by helping them learn effective study skills and time management. A data analyst will also be hired to assess the effectiveness of the enhancements made to STEM courses, Schwartz said.

“All of these pieces added together are part of a comprehensive plan to enhance the way that we teach the lower-division STEM courses to our students,” Schwartz said.

The planned enhancements to STEM courses outlined in the grant application, which will include the redesign of some curriculum, were done in consultation with faculty in the Hal Marcus College of Science and Engineering, Schwartz said. Combined with other recent funding awards from the National Science Foundation and National Institutes of Health, UWF’s Hal Marcus College of Science and Engineering has earned competitive awards totaling more than $5 million to address STEM education in the past five years.

“The administrators and faculty in that college, with the support of UWF, were really what helped push this forward,” Schwartz said.

United Airlines to launch daily seasonal service to Newark United Airlines will launch daily seasonal service between Pensacola International Airport (PNS) and Newark Liberty International Airport (EWR) on June 6, 2019. Passengers can now book flights online at United.com.

“This is another big win for our airport and a sign of the growth of our city and the region,” said Pensacola Mayor Ashton Hayward.

“Establishing routes to airports serving the New York Metropolitan Area is something that my team and I have been working on and we are excited to bring this service to our residents and business travelers.”

Flights are scheduled to depart Pensacola daily at 3:25 pm and arrive in Newark, NJ at 7:00 pm EST. Passengers will enjoy a 2-class configuration aircraft.

Newark Liberty International Airport becomes Pensacola International Airport’s nineteenth destination, the third daily nonstop served by United Airlines.

The Pensacola route is one of 22 new routes United Airlines announced it will add in 2019.

“With more than 40 new domestic routes added this year, we remain committed to

expanding our network to offer customers even more choices in their travel destinations,” said Ankit Gupta, United’s vice president of Domestic Network Planning. “The expansion to Hilton Head Island from three of our hub cities and the introduction of New York’s only nonstop service to Anchorage and Pensacola, are just some of the ways we are responding to customer interest and demand.”

Ninth Annual Bras Across the Bridge Raises More Than $36,000 The ninth annual Bras Across the Bridge raised more than $36,000 for Baptist Health Care Foundation’s Mammogram Fund, a $10,000 increase from last year’s event.

The Mammogram Fund provides mammograms to women in our community who are not financially able to afford one on their own, as well as raises awareness and support for early detection. For every $100 raised through the Foundation, one mammogram can be provided to a woman in need.

Since the beginning of this program, mammogram screenings have been provided to 2,006 women. As a result of these screenings, 391 women required additional testing, 47 required biopsies and 18 were diagnosed with breast cancer.

More than 400 new bras were donated

by Bras Across the Bridge participants. The Foundation will donate these bras to several local organizations that help women and girls in need.

After a busy week at work, I hopped a flight to Atlanta to complete a project for an individual that can only be described as my “spirit animal” and personal Tony Robbins.

Weekender bag in hand, I popped over to the magazine rack at Pensacola International Airport to peruse its curated assortment of design magazines. Of course my young adult go-to was this season’s Domino Magazine. For years I have drooled over the artistry of the features, the minimalistic layouts, and the clever font types. This season’s cover Style Issue beckoned and I answered with a purchase.

At about the 10K mile altitude mark, I came across an article about photographer Thayer Gowdy.

Immediately I fell in love with this woman who was quoted as saying her dream house was like a “West Coast Grey Gardens.” I literally laughed out loud slightly disturbing the dozing passenger next to me.

Gowdy discussed the process of

finding her tear-down and turning it into her “slice of paradise, one plank at a time.” She made mention that her bucket list included sailing to Turkey, having a baby and buying a house in Bolinas, California. She of course notes in the article “I never had the baby, but I have the house.”

Being in the business of design, our conversations don’t always center around trend. Trend is the driving force in the retail market—forcing interiors into the same wear, wash and toss cycle as the apparel industry. Rather, our conversations center around authentic living.

While we are known for neutrals, natural materials, and buckets of white paint, like Thayer Gowdy, we comprehend the desire for transforming a space into a “slice of paradise, one plank at a time.”

So what are the finer points of interior styling centered on authentic living?

Scale back to the necessities: Surround your family with quality that can be shared for years to come. A quality friendship with a few makes for a better life than an existence filled with a sea of acquaintances. This adage could be true for the items in our home as well.

Keep your home stylish: Your home should be a fantastic suit tailored to you and reflecting your personality.

Some look better in a slender cut and some need a wide leg. Your space should fit your sense of self.

Create a safe space: In our society, we are bombarded by pop culture and politics. The last thing we need to endure is chaos in our home.
