From poolside bumps to hot dog iterations, Colorado chefs will change the way you view this delicacy

CAVIAR HAS OFFICIALLY moved beyond white-tablecloth luxury and into Colorado’s broader dining culture. Traditional and unexpected offerings are cropping up on menus, and curious diners are eating them up.

Celebrated as the epitome of fine dining sophistication, caviar’s aristocratic roots trace back to Russian czars. The delicacy’s meticulous, labor-intensive collection process—carefully extracting roe from sturgeon primarily found in the Caspian, Black, and Adriatic seas, followed by a delicate salting and tin-packing procedure—contributes to its ultra-exclusive reputation.

Thanks to a rise in sustainable fish farms, namely in China, France, and California, and to Gen Z and millennials’ viral #caviarbump social media posts, the salt-cured sturgeon roe is experiencing a visible renaissance.

Colorado restaurateurs and foodies are jumping on, and in some cases driving, the bandwagon.

“People are genuinely curious about what’s happening at the top of the food world. Caviar used to feel like it belonged somewhere else, but we’re seeing people here embrace it on their own unique terms,” says Limelight Denver general manager Kim Corrigan.

“At Ajax, we want guests to feel the full range of what Denver dining can be right now, and that means being willing to have some fun,” Corrigan says. “Pairing caviar with a familiar comfort food is transforming caviar from a formal luxury into an approachable and distinctly local dining experience.”

In Boulder, Siren Cocktail Bar’s Sturgeon caviar sliders ($18) and three-gram caviar bump ($9) share happy hour real estate with the tavern’s beloved onion jam grilled cheese and beet tartare. Operations manager Cassidy Bradley was inspired by a caviar-dotted potato roll in Boston and says Siren’s no-frills, two-bite version is served on a King’s Hawaiian roll with creme fraiche, chives, and zero pretension.

“We wanted something nostalgic, and it’s such a nice little treat,” Bradley says. “It’s salty, pairs well with really cold drinks, and it seems to resonate with everybody, which is very cool.”

In Aspen, legendary restaurants find innovative ways to deliver the briny beads with an air of haughty, yet accessible, privilege. Hotel Jerome’s Bumps to Bumps poolside service pairs Ossetra caviar with Champagne from Petrossian Inside the St. Regis Aspen’s Snow Lodge, beloved coastal Italian restaurant Marea rolls out a wide roe range that includes a $275 serving of Siberian caviar and $350 Oscietra, a rich, buttery, top-tier pearl known for its firm pop and nutty flavor. Both are served traditional style with chips, brioche, chives, and creme fraiche. Marea’s caviar bruschetta delivers a contrast of textures and temperatures, placing cool caviar atop a warm, housemade bruschetta layered with creamy stracciatella.

“The richness of the cheese, the crunch of the bread, and the salinity of the caviar come together in a way that feels indulgent but also approachable. It’s elegant without being overly formal,” says Marea executive chef PJ Calapa.

Colorado diners are sophisticated and adventurous, Calapa adds, noting an uptick in guests ordering caviar not only for special occasions but also to elevate everyday meals.

Duemani’s raw bar menu echoes that sentiment, delivering a 56-gram Ossetra caviar tin with crisp tater tots and smooth creme fraiche—the perfect palette-awakening starter before diving into heartier plates of lamb chops and bone-in New York strip.

Greenwood Village’s Eddie V.’s Prime Seafood features traditional caviar service alongside a luxurious $75 twice-baked potato topped with Royal Baika caviar and creme fraiche.

East Colfax diner Champagne Tiger breaks high-low culinary trend boundaries with its Caviar Ashtray, where eight grams of French caviar comes with tater tot “butts” smothered with creme fraiche and chives in a branded ashtray that’s yours to keep. In addition, the Denver brunch staple offers a gold-flecked Dirty Millionaire martini served with two huge Gordal olives, each topped with Boursin cheese and one gram of Sturia Oscietra caviar.

“People are looking for small ways to treat themselves right now, small treats to celebrate whatever they›re accomplishing in life,” says owner Chris Donato. “Starting at just $5 for a bump, caviar gives them that dash of celebration without needing a huge occasion.”

In reality, melanoma is a complex and potentially life-threatening cancer that can affect anyone, regardless of age, gender, or skin tone.

As the deadliest form of skin cancer, melanoma deserves respect—but not fear. Advances in research, improved public awareness, and earlier diagnosis have dramatically improved outcomes, making education one of the most powerful tools available.

According to information provided by the Melanoma Research Foundation, more than 234,000 people in the United States are expected to receive a melanoma diagnosis in 2026, with nearly 93 percent of melanomas believed to be linked to ultraviolet (UV) exposure from sunlight or artificial sources such as tanning beds.

MORE THAN A SKIN CONDITION Melanoma begins in melanocytes, the cells responsible for producing pigment in the skin.

While many cases develop on sun-exposed areas, melanoma can also appear in unexpected places—including beneath fingernails or toenails, on the soles of the feet, inside the mouth, and even in the eyes.

The disease does not discriminate. Although lifetime risk varies among different populations, melanoma affects people of every race, age, and gender. The Melanoma Research Foundation notes that even children and young adults can develop the disease, underscoring the importance of vigilance at every stage of life.

Fortunately, early detection can make an extraordinary difference. When identified before it spreads, melanoma is highly treatable, with survival rates exceeding 99 percent for localized disease.

PREVENTION STARTS WITH DAILY HABITS Unlike many cancers, a significant percentage of melanoma cases may be preventable through consistent sun protection.

Protective clothing is equally important. Long sleeves, pants, UV-blocking sunglasses, and wide-brimmed hats create physical barriers against harmful rays, while seeking shade during peak hours between 10 a.m. and 4 p.m. further reduces UV contact.

Indoor tanning deserves special attention as well. Exposure to tanning beds before age 35 increases melanoma risk by 75 percent, and frequent users are many times more likely to develop the disease than those who never tan indoors.

Even a single blistering sunburn during childhood or adolescence can more than double the likelihood of developing melanoma later in life.

BECOME FAMILIAR WITH YOUR SKIN One of the most effective habits is also one of the simplest: paying attention.

Monthly self-examinations help establish a baseline, making changes easier to recognize. The widely used ABCDE guide encourages people to watch for moles that are asymmetrical, have irregular borders, display multiple colors, exceed roughly six millimeters in diameter, or continue to evolve over time. However, experts

What’s New at Ultra Design Center The Return of New Traditional Plumbing AT ULTRA DESIGN CENTER, one of the most noticeable shifts we are seeing in kitchen and bath design is the return of warmth, detail, and permanence. After years of clean-lined minimalism and matte black everything, homeowners and designers are asking for plumbing that feels more collected, more personal, and more architectural. ON FALL SATURDAYS across Colorado, stadiums fill long before kickoff. Fans stream through campus quads wrapped in school colors, marching bands echo across the foothills and mountain valleys, and the aromas from tailgate grills drift through crisp alpine air.

While Colorado is known for its outdoor recreation, it is also home to a thriving collegiate sports scene. National championship programs, historic rivalries, and sold-out venues have helped put Colorado colleges on the national stage.

UNIVERSITY OF COLORADO: A NATIONAL SPOTLIGHT Few programs have garnered as much attention in recent years as the University of Colorado Boulder (CU). The Buffs have reemerged as one of the most visible programs in college sports, thanks largely to the dramatic turnaround under head coach Deion Sanders.

Colorado went from a 1-11 season in 2022 to a 9-4 campaign and Alamo Bowl berth in 2024, led by Heisman Trophy winner Travis Hunter and quarterback Shedeur Sanders.

The surge made CU a national television draw, with several games ranking among the most-watched in college football, while season tickets at Folsom Field sold out for three consecutive years.

The success proved harder to sustain in 2025, but the program’s renewed visibility has brought increased attention and game-day visitors to Boulder. Set against the Flatirons, Folsom Field remains one of the country’s most scenic college football venues and a centerpiece of Colorado’s sports culture.

COLORADO STATE UNIVERSITY: MOMENTUM IN FORT COLLINS To the north, Colorado State University (CSU) continues building a strong athletic identity of its own.

“Athletics is the front porch to any university,” says Ryan Pfeifer, senior director of strategic communications and brand enhancement for Colorado State Athletics. “Colorado State is a great tier-one research institution, and we want to use our athletic success to help tell that story.”

Rams football remains the main event of CSU athletics, but women’s volleyball has become one of its most recognizable athletic organizations, regularly selling out Moby Arena and ranking among the nation’s attendance leaders.

On July 1, CSU officially joined the Pac-12, aligning with schools including Boise State, Fresno State, Gonzaga, Oregon State, San Diego State, Utah State, and Washington State.

For visitors, the appeal extends beyond the games themselves. “Colorado State and Fort Collins have a unique relationship with

campus just 10 minutes from Old Town,” Pfeifer says. “The game-day fan experience doesn’t just start on Saturday, but on Friday with the Old Town Pep Rally.”

First-time visitors should watch for CSU’s longstanding traditions: the giant white “A” painted on the foothills west of campus, the booming Comatose cannon that fires after every Rams score, and CAM the Ram, the university’s live mascot, roaming the sidelines.

Confused about the “A”? It stands for Aggies, which was the original nickname for CSU’s sports teams.

UNIVERSITY OF DENVER: CHAMPIONSHIP CULTURE While larger schools often dominate headlines, the University of Denver (DU) has built one of the most impressive championship traditions in college sports.

“It comes down to a committed university that attracts great people and fosters healthy cultures,” says Niko Blankenship, director of athletic communications at DU. “Our exceptional coaches recruit great student-athletes with championship expectations.”

That formula shows clearest in hockey. Denver now owns 11 NCAA men’s hockey championships, the most in college hockey history, after beating Wisconsin in the 2026 national title game, the school’s third title in five seasons (2022, 2024, 2026). Magness Arena anchors the fan experience, but DU has also drawn massive crowds on bigger stages: more than 35,000 fans for an outdoor game at Coors Field in 2016, and nearly 18,000 at Ball Arena in 2023, the largest indoor crowd in program history.

Denver’s ski team has won 24 NCAA team titles, the most of any school in the country.

“Not having a football program to prioritize has allowed us to continue to pursue comprehensive excellence across many of our programs,” Blankenship says.

For sports fans, DU offers access to nationally elite competition in an intimate setting just minutes from downtown Denver.

AIR FORCE ACADEMY: SUCCESS THROUGH SERVICE At the U.S. Air Force Academy, athletic achievement is measured alongside leadership and service.

Unlike most Division I schools, Air Force recruits student-athletes who understand that graduation comes with a commitment to serve.

Cadets must complete a minimum of five years of active-duty military service after earning their degree.

“Air Force cadet-athletes are different than other Division I student-athletes because of their commitment to service,” says Troy Garnhart, associate athletic director for communications. “Air Force, along with Army and Navy, recruit athletes that are not motivated by financial gain, but rather want to compete at the highest level while preparing to serve their country.”

The Falcons have paired that mission with sustained excellence. Air Force has won the Commander-in-Chief’s Trophy more than 20 times, more than either Army or Navy, and has been one of the Mountain West’s steadiest football programs since the conference’s founding in 1999. The program’s modern peak came in 2019, when the Falcons went 11-2 and 43

COLORADO COLLEGE: A HOCKEY TRADITION UNLIKE ANY OTHER Colorado College holds a unique spot in the state’s athletic landscape. While most Tigers teams compete at the NCAA Division III level, the school fields Division I teams in men’s ice hockey and women’s soccer.

Hockey is the heart of it all. The Tigers won NCAA national championships in 1950 and

A major milestone came in 2021 with the opening of Ed Robson Arena, a $52 million, 3,400-seat venue that gave Colorado College hockey its first on-campus home in program history. Built as part of Colorado Springs’ City for Champions initiative, the arena has transformed the fan experience and become a true nucleus of Colorado College athletics.

THE RISE OF WOMEN’S SPORTS Colorado’s athletic achievement story extends beyond the traditional powerhouse programs.

Women’s sports continue to see unprecedented growth, both statewide and nationally. Few people have watched that transformation up close more than Ceal Barry, former University of Colorado women’s basketball coach and deputy athletic director.

According to Barry, one of the biggest changes has been the expansion of opportunities available to female athletes. Over the course of her career, colleges added sports such as soccer, lacrosse, gymnastics, golf, and softball, while newer offerings increased access even further.

“Programs as varied as bowling, acrobatics, equestrian, and ice hockey provide opportunities nationally for high school girls to compete in college,” she says.

Professional opportunities have evolved just as dramatically. When Barry began coaching in the 1980s, female athletes hoping to earn a living through sports were largely limited to

golf and tennis or competing overseas. Today, leagues such as the WNBA, professional soccer, volleyball, softball, and lacrosse offer viable pathways after college.

Barry also credits organizations such as Sportswomen of Colorado with helping elevate female athletics across the state by recognizing and celebrating generations of female athletes.

“I would point to the ‘96 Olympics in Atlanta, which showcased outstanding women athletes, as a turning point for increased media coverage,” Barry says.

At some point on the twisting rise-and-fall drive, cell service disappears, and the radio fades to static.

A rarity for many screen-saturated childhoods (though plenty of kids might argue they’re the “only 11-yearold without a smartphone”), the quiet transition feels almost unnoticed. The route leads to the 23-acre Tumbling River Ranch, where spotty Wi-Fi, limited cell service, and zero televisions are among the property’s biggest selling points for families seeking unplugged connection time.

ranch’s 1946 roots—21 rooms are stylishly carved into vintage cabins plumped with plush bedding, gas fireplaces, and clawfoot tubs; a barrel sauna and cedar hot tubs beckon from the edge of rushing Geneva Creek; and three family-style meals a day unfold in front of the lodge’s floor-to-ceiling windows with views of Twin Cones Peaks.

As guests cross the narrow wooden bridge—perhaps in an electric vehicle that staff thoughtfully offers to plug in if needed—they’re greeted by John, the ranch’s smiling guest services manager and head of activities, waving them down from an ATV. He leads the way to the base of the main lodge, where a helpful valet takes the keys.

With meals, hikes, archery, horseback riding, and hot tubs all on-site, there’s little reason to drive again until checkout.

Over venison filets and parmesan potatoes, families naturally mingle, lingering over tiramisu dessert before heading downstairs for rounds of Scrabble and shuffleboard in the game room.

Woven blankets cradle guests from Adirondack chairs around the firepit while ranch hosts share stories of Colorado’s iconic Coors family homesteading the very land explored during the day’s hikes. John sets up his famous campfire popcorn bar, and everyone helps themselves to sodas and craft beer from the vintage Coca-Cola cooler.

After hopping between the hot tubs and the homemade river cold plunge, it’s hard not to notice the birdsong or watch the moon rise above the cabins. Small touches—like a pouch of Legos left on a child’s pillow during turndown service or the resident bunny that young guests inevitably name—encourage families to slow down and simply be together.

The Cherry Creek North District is extremely walkable and offers 5,000 parking spaces, including 500 on-street, so you can leave your car behind. For the art walks, maps are available online and in-store to direct people to participating venues, and red balloon sculptures are out front for easy spotting. Inside, friendly staff are ready to greet patrons, some offering sweet treats and gifts, and many offering activations, such as visiting artists making on-the-spot pieces people can take home.

On a recent Art Walk, fine men’s wear store Andrisen Morton got into the creative spirit by bringing in local artist Britten to hand-paint custom pocket squares to go with every purchase.

“We believe the activations are essential to exceeding the guest’s expectations, to surprise and delight. Without them, it’s just a visit to a beautiful store,” LeMasters says. “It’s what will give the event staying power.”

At the Show of Hands gift shop, local artist Jenn Merz worked with visitors to create free, interactive ink prints using leaves from her own garden. Store owner Katie Friedland says the Art Walks have given a nice bump to the businesses in the area. “Second Saturdays bring a wonderful feeling of community and highlight the many artsy small businesses in Cherry Creek North.”

You can easily spend the full art walk time from 10 a.m. to 1 p.m. checking out all the participating spots. Be sure to make time for lunch at a local restaurant, too. It makes Cherry Creek North a one-stop spot to spend the day, feel a sense of community, and open your eyes to new art.

“The art walks break down the perception that galleries are exclusive or intimidating,” says Courtney Olson, gallery director at Relévant Galleries. “Art is meant to be experienced and discussed, not gatekept … We get to introduce people to artists and work who might not have walked through our doors otherwise, and that’s incredibly valuable for our artists and for the neighborhood’s cultural fabric.”
