We give a shout-out to a couple of local ladies in the fashion and beauty industries who took a leap and landed squarely in the careers they love. Tai Bedlock, “Boss Lady” of Erico Motorsports, is now the footwear fanatic behind the U.S. flagship for Embassy London shoes (Stepping Out of Line, page 58). And Stefanie Palko left an unfulfilling job to work in the beauty industry, eventually opening her own business—Copperfalls Aveda Spa and Salon in Castle Rock (Finding Her Niche, page 54).

MY NEIGHBOR FELIX The neighborhood’s most striking new culinary face is the long-planned Centennial location for My Neighbor Felix, a growing Colorado-born concept with locations in Denver and Boulder.

The 11,000-square-foot, two-story destination with an eye-grabbing westward view is set to open in September, featuring artwork from Mexican artist Erick Garcia and a large patio with an outdoor bar.

Built to be group friendly, My Neighbor Felix specializes in shareable items from appetizers to desserts drawn from all seven regions of Mexico. Main dish platters for the table feature carne asada fajitas, mole chicken or the top-seller, Chilhuacle skirt steak dished with tortillas, guacamole, charred jalapeños and adobo sauce. The sharing extends to the beverage roster with a 56-ounce margarita for two (or three) and a flight of eight margaritas.

IF WE’RE BEING HONEST, we must admit that we always dine at the same dozen eateries, maybe less, including takeout and delivery. We have settled for the familiar in recent years, but it gets boring ordering the same old pad Thai week after week after week. Luckily, a bumper crop of new eateries has popped up across the south metro area, dishing everything from Hawaiian garlic shrimp and smoked salmon carpaccio to Maine lobster rolls, Norwegian lemon cake and vegan chilaquiles.

Known for creating funky, sophisticated and vintage-inspired spaces, the Postino team proudly dubs the Highlands Ranch location as one of their coolest patios yet, with its expansive, umbrella-lined sunken patio that harkens to a ’70s-style conversation pit. Each Postino’s features a unique interior focal point, and this fourth Colorado location is no exception. Here you’ll find floor-to-ceiling board games, among many other fun and funky design details.

This might become your new go-to brunch spot with farm-fresh comfort foods like Umbria Egg Toast featuring scrambled egg with crèma and white truffle, crispy oyster mushroom and Parmigiano-Reggiano atop a toasted ciabatta; and the Smoked Salmon Carpaccio with Sicilian garlic yogurt, smoked salmon, capers, pickled red onion, avocado and dill. HANGRY OHANA Variations on Pacific Rim comfort cuisine fill the menu at this new Hawaiian eatery with a Texas mesquite accent. Traditional Hawaiian plates are loaded with Texas brisket, chicken katsu or Hawaiian barbecue chicken, plus mounds of bacon fried rice and mac salad. Entrees also include Kahuku garlic butter shrimp and comfy loco moco: beef patties smothered in brown gravy with over-easy eggs.

ANA’S NORWEGIAN BAKERI It’s worth visiting this inconspicuous Centennial shop just to inhale the cardamom-spiced air. The Norwegian-born owner/baker recreates breads and pastries from her hometown, such as sweet boller rolls, dark rye bread and

iced lemon cakes. Get there early to snag some solskinnsboller, cinnamon rolls with a vanilla custard center. For a serious cinnamon experience, sample Ana’s yeasted cinnamon raisin loaf—its crusty exterior is generously dusted with the spice. Use it to make stellar French toast.

With locations coast to coast, Toastique is all about toasted bread with eight signature variations. Another favorite spreads walnut raisin toast with peanut butter, bananas, berries, peanuts and honey. “This space needed to feel open and flexible.

And we didn’t want to drop in anything angular, or that would have this hard back facing you,” Layne says. “It needed to be flexible and feel like you could walk around the whole thing.” The designer accompanied the homeowners to the studio of Will Day in Boulder to choose the artwork that serves as a focal point for this room.

A grand chandelier from Elegant Lighting welcomes guests in the foyer. The ceiling details that were once dark wood now offer a subtle, flowing detail as a backdrop to the light fixture. A custom circular sofa by A & B Riely Upholstery offers seating in this space that includes a bar in the niche opposite the family room.

The homeowners brought the artwork—hundreds of folded-paper cranes behind glass—to this home as a signature piece.

A local designer swaps the dated finishes in a Cherry Hills Village home for SOMETHING WITH A BIT MORE BLING

LOCATION, LOCATION, LOCATION. A young family relocating from Miami, Florida, sought a wonderful neighborhood—Cherry Hills Village. What they found there was a home with great bones and plenty of space for their lifestyle, but it didn’t quite suit their design aesthetic—the wife’s style. So, they enlisted the help of Lux Builders and Kim Layne Interiors to give the home a facelift.

“The wife is very glamourous,” Layne says.

“They wanted something lighter and brighter with more bling.” Contrary to the his-and-her styles, she’s often required to amalgamate into designs, and the husband was very willing to go along with his wife’s vision for the home.

“The wife was very expressive about her love of glamorous things and Marilyn Monroe and shine and chandeliers,” Layne says. The couple, with young children, also loves to entertain and wanted to be sure the new design would be welcoming and allow large groups to occupy the space comfortably.

The formal dining room shimmers in silver from floor to ceiling. A Kravet table in black contrasts the surrounding Vanguard chairs in a muted purple velvet with shiny chrome frames. The Elegant Lighting chandeliers are dripping in sparkling sliver that plays nicely off the wallcovering and silver sideboards. A large rug

by Authentic Rugs ties the whole look together.

Once closed off from the rest of the home, the kitchen is now light and airy, with easy flow throughout the room and to the adjoining spaces. The large island provides ample seating for guests. The cabinetry from Concept 32 Custom Cabinet Studio is a mix of walnut with a warm gray finish and high-gloss white.

One wall is wrapped in Daltile’s ONE Quartz slabs—the same material as the countertop—for a high-end look and feel, while the Sub-Zero/Wolf appliances from Ferguson with custom doors fade away into the background.

The wife’s home office is an exercise in glamor and beauty. A photo of her beloved Marilyn Monroe hangs above her desk bedecked in silver leaf. The home was dated with lots of dark wood and heavy finishes, so Layne set about determining how to brighten the spaces and refresh the look without removing all the surfaces. She accomplished the look by painting out much of the dark woodwork, lightening the wood floors and adding modern furnishings in luxurious textures and colors. Because the ceilings throughout the home are exceptionally high, Layne carefully balanced the volume that came with painting wood ceiling details white. She used oversized, glamourous light fixtures that would naturally draw the eye down in areas designed to be cozier.

IN THE SAME WAY you fill out your wardrobe, you can create a truly custom and special home with design details that reflect your personal style. These three design elements can really up the wow! factor in your home—lighting, fixtures and paint color. Here are tips to help you craft an on-trend and personally pleasing home.

STATEMENT LIGHTING Don’t let your light fixtures be afterthoughts.

Jackie Newell, founder and lead designer with Basil + Tate, says lighting can be a statement piece which defines a space. “Large fixtures can define the style of a space and smaller fixtures like lamps, wall sconces and art lights can help to define the mood of a room,” she says. “Our eyes are drawn to light, so they are a critical element of every space we design.”

An important consideration when choosing lighting is scale. Newell says to choose a large fixture for a grand foyer—not only to fill the space, but also to be sure it provides enough light. What if your foyer is not so grand?

“Smaller foyers have just as much potential because there are so many fun light fixtures to choose from,” she says. “One of the most important considerations in smaller foyers is the clearance between the top of the door and the ceiling so that you don’t risk the door hitting the fixture when it swings open. Regardless of size, give your guests a reason to look up!”

Certainly, you will have a nice mix of large and small light fixtures throughout your home, and you’ll likely have a variety of finishes and shapes. “From fabric drum shades to forged iron lanterns to seagrass pendants—beautiful options are endless,” Newell says. “Lighting is one of our favorite elements in a room, so we often choose a fixture and let that inspire the design for an entire space!”

BRING THE BLING Fixtures and hardware are often referred to as the jewels throughout your home. And there are so many options in finishes today, your home jewelry can be just as varied as what’s in your jewelry box. For a bathroom remodeling project that won NKBA’s best before and after project, Dawn Wilkinson of Six Walls Interior Design opted for Delta’s high-end Brizo fixtures in luxe gold finish. She made this choice because although the bathroom serves two children’s rooms, it’s also used for guests. “The soft gold finish added an element of luxury for a guest bath, as opposed to a more standard finish,” Wilkinson says. The natural stone she chose for the shower walls and floor created and inspired the color palette. It features both cool and warm tones, which made introducing the warm gold an easy selection. “People are really responding to adding warm tones with gray,” she says. “It makes it warm and inviting by providing contrast to gray or white.”

She does warn that the manufacturers who make the shower door hardware are not the same as the fixture manufacturers. However, she adds, most do a good job of coordinating.

So, be sure to consider that when choosing finishes—especially for a small bathroom where the metals will be in close proximity. Another pro tip Wilkinson provides: “Think about door hardware … If the rest of the home has a different metal, you can do split-finish for door hardware.”

Wilkinson chose wall sconces from Circa Lighting in a similar finish. “The neat thing about a small bathroom—they are little jewel box spaces where you can experiment in a place that doesn’t impact the rest of the home design.”

In other words, feel free to “bling” them out just for the fun of it.

WRAP UP IN COLOR Be gone, boring walls! Color trends are reflecting the outdoors with rich, warm colors bordering on fern green, burnt umber and lambswool creamy white. While the colors themselves can be deep and moody or light and soft, they provide a beautiful backdrop for bold fabrics, dazzling metallic fixtures and other standout elements of design.

Benjamin Moore’s recent palette includes colors such as Wild Flower, a color closer to a natural Colorado flagstone red; High Park, which is a luscious green like a velvet succulent; and Venetian Portico with its soft dried-grass hue; among others.

Use any of these tender tints as an accent wall or to blanket the entire interior—they are simultaneously striking and subtle.

IT WAS the mid-’90s. Stefanie Palko sat staring at herself in the mirror while her hairstylist worked his magic on her. She was contemplating life and the direct marketing career that wasn’t bringing her fulfillment. Then her stylist made a comment that inspired an epiphany which would ultimately alter her career trajectory.

“I wanted a change,” Palko says. “And he said, ‘You should get into the beauty industry.’”

Palko’s stylist had just had a visit from the sales rep for Aveda, a company that began making environmentally friendly, cruelty-free, plantbased beauty products in 1978. He thought being an Aveda sales rep would be a perfect fit for Palko, who was intent on being part of a company making a difference in the world.

The conversation planted a seed in Palko, and within just a few months, she had switched jobs and was working for an Aveda distributor.

“I felt like I had found my niche,” she says, “and I was really enjoying everything about the industry, especially since spas were just becoming a ‘thing’ around that time.” She even met Aveda’s inspiring (now late) founder, Horst Rechelbacher.

“And let’s not forget my golden retrievers,” she laughs. “My husband claims I love them more than him, and sometimes he’s right!”

Recent events have also contributed to the changes Palko observes in the spa industry.

“To say the pandemic changed our world is an understatement,” she says. “People understand self-care in a much stronger way than before.”

Self-care is vital in Palko’s personal life, too.

When she’s not working, she always makes time just to breathe, she says. She also likes

After considering a few different locations, she and her husband opened Copperfalls Spa in downtown Castle Rock in 2000, and by 2008, they had added the hair salon. The spa and salon use Aveda products exclusively for their treatments, which include massages, skin care and facials, body treatments, hair services, and nail services.

Palko doesn’t perform any of the services at Copperfalls. “I don’t have a creative bone in my body,” she says. “I leave that to my talented and passionate staff, who love what they do and can serve from their heart.” She truly enjoys meeting the people who come in, some who’ve been visiting since the first day the spa opened its doors more than 20 years ago. “They’re not just our guests; they’re our friends,” she says.

Stepping out of Line A LOCAL ENTREPRENEUR brings a UK-based luxury shoe brand to Cherry Creek

TAI BELDOCK is stepping out of line with her latest entrepreneurial journey—footwear fashion designer and CEO of Embassy London USA, a UK-based footwear company.

The retired Air Force veteran and motorcycle distributor has a history of taking on challenging professional roles. And her latest venture falls in step. Spunky and vibrant, Beldock brings just as much color and excitement to her latest business venture as the shoes themselves.

In celebration of bold women, she prominently displays the company’s “Step out of Line” tagline with bright neon lights inside the Cherry Creek store. “It speaks to the heart of what these shoes are all about,” she says.

“That’s been the joy of all this. I’m a 60-yearold lady that runs a motorcycle shop. I step out of line all the time.”

It also speaks to what Beldock is all about.

When she left the Air Force, she landed in Denver, working at the Rocky Mountain News.

Soon after, Beldock met her husband and quickly bonded over their love of motorcycles.

The shared interest led the couple to open Erico Motorsports in RiNo, one of the first European-centered motorsports dealerships in the U.S. In fact, it’s the motorcycle career that prompted her latest career in the fashion industry.

During their frequent business trips to London to visit Triumph Motorcycles, she discovered the colorful designs of London Embassy shoes.

Looking to spice up her wardrobe, she always came home with a few new pairs. “Being in the motorcycle industry, I wore a lot of black and a lot of jeans, so shoes were always my signature,” says Beldock.

Beldock is also proud to extend the company’s tagline beyond just the shoes in her store. It reaches the marketing and branding by using models who “step out of line” from the typical fashion model, including transgender and nonbinary models, models of color, and mature models, some of whom are 70 years and older.

Future plans include a line of handbags, a possible location at Denver International Airport and vegan leather options. The Cherry Creek pop-up location will remain open through the holidays while Beldock plans for a permanent address.

But when COVID-19 hit and travel halted, she bought the shoes online. So much so that they emailed her to inform her she was their top U.S. customer.

Without skipping a beat, she responded and asked why they didn’t sell the shoes in the U.S. The CEO replied and asked her to be their U.S. distributor. Beldock welcomed the challenge. “I have no idea how to be a shoe distributor, but I’ve been a motorcycle distributor for years. It can’t be that different.”

In October 2021, she launched the U.S. website and the first showroom in RiNo, eventually moving into a bigger space at the current popup location in Cherry Creek.

It’s easy to see how her enthusiasm pairs nicely with the shoes she sells—vibrant, sassy and colorful. Well-crafted and comfortable, most of the shoes are made with Italian leather shaped in various classic English silhouettes, including oxfords, ankle boots, sandals, heels and more.

The distinction is in the finishes: floral patterns, colorful prints and frisky fabrics.

While the CEO in London designs most of the shoes, Beldock has stepped into the art of fashion design and created her own line of shoes for the U.S. store, which sold out quickly.

She designed several styles, some of which she named after Kamala Harris and Michelle Obama—women who have inspired her.

“Compliments are guaranteed,” Beldock assures her customers. “Fashion can be such a confidence booster; it’s always nice when someone notices. And they will notice these shoes.”
