World Pasta Day 2025, was held under the theme “From Tradition to the Future” on 24-26 October 2025 at the Conrad Istanbul Bosphorus Hotel, organised in collaboration with the Association of Türkish Pasta Manufacturers (TMSD), the Pasta Producers and Manufacturers Association (MÜSAD) and the International Pasta

Dopo una pausa di 12 anni, il World Pasta Day è tornato in Turchia, mettendo ancora una volta in luce la profonda eredità cerealicola dell’Anatolia e il successo globale dell’industria della pasta turca.

L’evento, tenutosi a Istanbul con il tema “Dalla Tradizione al Futuro”, ha evidenziato il patrimonio culturale della pasta, la produzione sostenibile e il suo ruolo duraturo sulle tavole di tutto il mondo. La pasta, sapore comune delle tavole, punto d’incontro tra culture e simbolo di un’alimentazione sostenibile, ha ritrovato il suo valore nelle terre in cui è nata. This magnificent gathering brought together culture, science, sustainability and gastronomy around the same table, celebrating pasta’s rich historical journey and enduring global appeal. Approximately 10,000 years ago, on the slopes of Karacadağ, in the Mesopotamian Plain, pasta made from durum wheat, which was first cultivated in Diyarbakır, Mardin and Şanlıurfa, has become one of the world’s most beloved foods today. The theme “From Tradition to the Future” embodies the vision of carrying this ancient heritage forward for future generations. Türkiye is not only among the world’s leading durum wheat producers but is also recognised as the genetic centre of this valuable crop. The International Pasta Organisation (IPO) declared 25 October as World Pasta Day in 1998, following a decision taken at its second meeting in the United States in 1997. Turkey has previously hosted this important event twice – in 2008 and 2013 – and proudly welcome the world once again in 2025, making Istanbul the beating heart of pasta. The Turkish pasta industry continues to confidently advance towards global leadership in durum wheat cultivation, pasta production and exports. Turkey currently ranks second in the world in both pasta production and export volume.

Il tema “Dalla Tradizione al Futuro” rappresenta la visione di tramandare questa antica eredità alle generazioni future. La Turchia non è solo uno dei principali produttori mondiali di grano duro, ma è anche riconosciuta come il centro genetico di questa preziosa coltura. L’International Pasta Organisation (IPO) ha dichiarato il 25 ottobre come World Pasta Day nel 1998, in seguito a una decisione presa durante la sua seconda riunione negli Stati Uniti nel 1997. La Turchia ha ospitato questo importante evento due volte, nel 2008 e nel 2013, e nel 2025 ha accolto nuovamente il mondo, rendendo Istanbul il cuore pulsante della pasta.

On 25 October 2025, at the World Pasta Day event in Istanbul, all stakeholders in the global pasta industry gathered in Istanbul to discuss Turkey’s strong position in pasta production, the future of the global market, and emerging consumer trends.

La pasta è cultura Durante l’evento, i rappresentanti del settore hanno ricordato che la pasta non è solo un alimento: è un simbolo culturale. Aykut Göymen ha condiviso esempi di studi recenti: “Molti consumatori pensano che la pasta sia fatta con farina, ma in realtà è prodotta con semola. Non contiene additivi, sale o conservanti. La pasta semplice in Turchia è completamente naturale.

Inoltre, ogni formato ha una funzione: per esempio, la pasta rigata come le penne è progettata per trattenere meglio il sugo. Anche questo è frutto di ricerca e sviluppo”. Il World Pasta Day 2025, tenutosi a Istanbul, ha nuovamente mostrato la forza produttiva ed esportativa della Turchia, trasmettendo al contempo messaggi positivi per il futuro del settore. Con la sua avanzata infrastruttura produttiva, la forte capacità di esportazione e il ricco patrimonio culturale, l’industria della pasta turca ha riaffermato l’obiettivo di rafforzare ulteriormente la sua presenza sulle tavole del mondo.

Carl Zuanelli: “Istanbul as one of the most suitable cities for World Pasta Day” In his opening speech, Carl Zuanelli, president of the International Pasta Organisation (IPO), described Istanbul as one of the most suitable cities for World Pasta Day, stating: “Istanbul is a unique city that blends the heritage of ancient civilisations with the dynamism of the modern world. Just like pasta – deeply rooted in tradition, yet constantly embracing innovation. Turkey plays a key role in global pasta production thanks to its high-quality durum wheat and robust industrial capacity. Pasta is a food that transcends culture, politics and economics – it brings people together around the same table. Pasta knows no boundaries.” Zuanelli also highlighted pasta’s Italian origins and its place in the global cuisine, emphasising that its universal popularity is no coincidence: “From Italy to Brazil, from Russia to Turkey, pasta is a food that adapts to every cuisine and gains meaning when shared.”

Intervenendo come ospite, il presidente della TMSD Aykut Göymen ha illustrato l’impressionante dimensione dell’industria turca della pasta: “Con una capacità produttiva annuale di circa 3 milioni di tonnellate, la Turchia è il secondo produttore mondiale di pasta e, con 1,5 milioni di tonnellate esportate, anche il secondo esportatore. Esportiamo in più di 160 Paesi e il nostro mercato totale ha raggiunto i 2 miliardi di dollari, tra mercato interno e internazionale”. Göymen ha sottolineato che il successo della Turchia non dipende solo dalla capacità produttiva, ma anche dall’elevata qualità del grano duro anatolico: “L’Anatolia è il centro genetico del grano duro. Qui parliamo di una cultura cerealicola di 10.000 anni. Il grano duro della massima qualità mondiale cresce proprio qui”.

Turkish pasta industry ranks second in the world Speaking as the host, TMSD president Aykut Göymen described the impressive scale of Turkey’s pasta industry as follows: “With an annual production capacity of approximately 3 million tonnes, Turkey is the world’s second largest pasta producer and, with exports of 1.5 million tonnes, also the second largest exporter. We export to more than 160 countries, and our total market size has reached $2 billion, both domestically and internationally.” Göymen emphasised that Turkey’s success is not only due to its production power but also to the superior quality of Anatolian durum wheat: “Anatolia is the genetic centre of durum wheat. We are talking about a 10,000-year-old wheat culture in these lands. The world’s highest quality durum wheat is grown right here.”

Pasta is a culture Throughout the event, industry representatives emphasised that pasta is not just a food - it is a cultural symbol. Aykut Goymen shared examples from recent studies: “While many consumers believe pasta is made from flour, they actually think it is made from semolina. It contains no additives, salt or preservatives. Plain pasta in Turkey is completely natural. Furthermore, each pasta shape has a purpose - for example, ridged pasta such as penne is specially designed to hold sauce better. This is also a result of R&D.” World Pasta Day 2025, held in Istanbul, once again showcased Turkey’s production and export power while delivering promising messages about the sector’s future. With its advanced production infrastructure, strong export capacity and rich cultural heritage, the Turkish pasta industry reaffirmed its goal of establishing an even greater presence on dining tables around the world.

We must strengthen pasta culture in Turkıye Nihat Uysallı, President of the Pasta Manufacturers and Industrialists Association (MÜSAD), stated that despite Türkiye’s global leadership in durum wheat production, domestic consumption remains below its potential: “I have been part of this sector for 39 years.

Turkey is one of the leading countries with the best durum wheat, yet pasta still does not hold its rightful place in our culture. We still cook rice when guests come over - yet pasta is both affordable and nutritious. You can feed four people with just one dollar’s worth of pasta. There is no other product like it in the world.” Uysallı noted that during the pandemic, pasta making became a real cultural activity, with people rediscovering new sauces and recipes in their own kitchens. He expressed optimism that domestic consumption will continue to grow in the coming years.

Dobbiamo rafforzare la cultura della pasta in Turchia Nihat Uysallı, presidente dell’Associazione dei Produttori e Industriali di Pasta (MÜSAD), ha dichiarato che, nonostante la leadership globale della Türkiye nella produzione di grano duro, il consumo interno resta sotto il suo potenziale: “Faccio parte di questo settore da 39 anni. La Turchia è uno dei Paesi leader con il miglior grano duro, eppure la pasta non occupa ancora il posto che merita nella nostra cultura. Continuiamo a cucinare riso quando abbiamo ospiti - eppure la pasta è sia conveniente sia nutriente. Con un solo dollaro di pasta si possono sfamare quattro persone. Non esiste un altro prodotto simile al mondo”. Uysallı ha osservato che, durante la pandemia, preparare la pasta è diventata una vera attività culturale, con molte persone che hanno riscoperto nuove salse e ricette nelle proprie cucine.

Ha espresso ottimismo sul fatto che il consumo interno continuerà a crescere negli anni a venire.

Richardson acquires pasta manufacturer 8th Avenue

Canadian agri-food company Richardson International Ltd. has completed its £375 million acquisition of pasta manufacturer 8th Avenue Food & Provisions Inc. from Post Holdings Inc. Winnipegbased Richardson said the deal, announced in late August and including the assumption of approximately £80 million in lease-back financial liabilities, brings a durum wheat mill, three pasta production sites and the Ronzoni pasta brand to its US subsidiary, Richardson (US) Holdings Ltd. The company stated that the operations build on its vertically integrated network across Canada and the United States. The pasta facilities are located in Carrington, North Dakota, US (durum milling and pasta production); New Hope, Minnesota, US (pasta production); and Winchester, Virginia, US (pasta production).

From PizzAut to PastAut, with Barilla

The Barilla Group and PizzAut are writing a new chapter in their partnership dedicated to inclusion: from 2026, PizzAut restaurants will also become PastAut, serving first courses prepared with Barilla pasta. The agreement, announced on International Day of Persons with Disabilities (3 December), provides for the donation of professional equipment for preparing and serving pasta and training for young people with autism by chefs from Academia Barilla, who will work alongside them in the kitchen with care and attention. In addition, the company’s support for the project will be further strengthened by the hiring of a young person with autism by the end of the year, who will work on secondment at PizzAut on a Barilla contract.

Scoiattolo - Raviolificio di famiglia has drawn up its fourth Sustainability Report, covering the year 2024, to communicate transparently to stakeholders its commitment to sustainable business practices that are mindful of future generations. The document provides a comprehensive overview of 2024. The focus remains on caring for people’s well-being and creating a positive and inclusive working environment, which are fundamental elements for sustainable growth. The workforce has grown to 167 employees (+17% compared to 2023), with women accounting for 33% of the total. During the year, training programmes and safety measures were enhanced, thanks in part to the introduction of new HSE management roles and investments in internal communication tools designed to strengthen cohesion and sharing.

Food exports are doing well, but we need to look to new markets

Export alimentare bene, ma occorre guardare a nuovi mercati

Exports continue to be a key driver of competitiveness in the Italian agri-food sector.

Italy is now the world’s ninth largest exporter by value (€67.2 billion in 2024) and the second fastest growing country in the world over the last five years, with an increase of 55%. This growth has been widespread across almost all markets, with particularly significant results in Poland (+112%), Spain (+74%) and the United States (+69%).

However, there remains a strong geographical concentration: the top five destination markets Germany, the US, France, the UK and Spain - still account for 50% of total exports. This dependence makes greater diversification urgent, especially at a time characterised by multiple factors of uncertainty and complexity, in which global trade balances are proving increasingly fragile. These are the main findings that emerged at the ninth edition of the Agrifood Monitor Forum, an event organised in collaboration with CRIF and with the support of Crédit Agricole Italia.

The vast majority of grains, which includes cereals, pulses, and oilseed crops - are annuals. That is, they are grown from seed every year. Farmers initiate annual crops by sowing seeds into fields that have been cleared of existing vegetation. If rains are favorable, the seeds germinate, and if weeds are kept at bay, the crop establishes, grows and matures. Some version of this cropping cycle has fed the majority of humans since Neolithic times, 10,000+ years ago. When practiced on a limited scale and on suitable landscapes,

grain agriculture has proven to be resilient and sustainable. However, soil degradation that resulted from the expansion of annual grains onto less resilient landscapes has contributed to the collapse of numerous civilizations including the Roman Empire. And today, with more than eight billion people to feed, the human pressures on agricultural soils have never been greater. However, neither has humanity been in a better position to develop crops and cropping systems that could meaningfully address these existential challenges.

Resilience under erratic rainfall In years when rainfall is excessive during the times when field preparation and sowing should be taking place, it can be difficult and sometimes impossible to successfully plant. And if rainfall is insufficient to germinate a crop after it has been sowed, farmers can also experience serious yield shortcomings and even crop failure. With more erratic weather caused by climate change, these vulnerabilities are only expected to increase. Perennial crops experience similar vulnerabilities as annuals in the establishment year, but once rooted, not only are they much less sensitive to early season conditions, but the deep roots of many perennials can help them survive during periods of drought as they can access a greater volume of stored soil water.

Nutrient retention About 50% of nitrogen fertilizers applied to annual grains are not taken up by the crop. They are lost to the environment during times of the year when fields are bare or when crop seedlings can only take up a fraction of the fertilizers applied. Frequently, phosphorus fertilizers are also carried off fields in large quantities through surface runoff following intense rains. Loss of nutrients into lakes, rivers and marine ecosystems is responsible for the proliferation of excessive algae growth and, in extreme cases, the formation of “dead zones” where excess algae lead to the collapse of aquatic ecosystems. Another avenue of nitrogen loss from agriculture is via gaseous forms, which include a number of potent greenhouses gases such as nitrous oxide. Not only do high rates of fertilizer loss inflict harm on the environment, but they also cost the farmer since fertilizers represent their greatest input expense.

Deep perennial roots have been shown to dramatically reduce leaching by maintaining active water and nutrient uptake at depth over more months of the year.

What are the research goals for perennial grains?

The global community working to develop perennial grains includes over 210 research groups from 30 countries. The central goal of breeders and geneticists is to develop perennial crop species that can achieve consistent, acceptable grain yields for a minimum of 3 years. To create a perennial grain, crop breeders are crossing familiar annual grains like wheat, sorghum, rice and quinoa with wild perennial relatives to introduce the trait of perennialism into the annual. Other researchers are working to domesticate wild perennial plant species similar to how our current annual crops

In contrast more research groups around the world have dedicated time and resources to perennialize wheat than any other crop, beginning with Russia in the 1920s, though progress has been slow due to the complexity of the wheat genome.

Breeding perennial crops is an essential first step towards shifting to a perennial grain agriculture. In addition, many parallel subsequent steps are also pivotal

Of the perennial grains currently undergoing domestication from wild perennial species, Kernza is the only one that has been released on a limited basis in the US for farmers and product developers to begin to trial. Grown on over 1000 ha. across the Midwest, Kernza is used to make products ranging from beers, to breakfast cereals, noodles, crackers, pancake mixes and flour. Kernza’s nutritional profile features an average of 17% protein, 19-29% dietary fiber, a high nutrient density, and is high in antioxidants. Kernza does contain glutens, but lacks the gluten profile of bread wheat. It blends well with bread wheat to produce bread, but on its own it is best suited for unleavened products.

“Perennial BakiTM Bean” is likely the next new perennial grain domesticate to be released to farmers and product developers in the US. It is high in protein and fiber and low in starch and other carbohydrates.

Baki bean’s protein quality is very similar to soy and even outperforms pea as a plant protein source.

Of the perennial grains currently being developed by crossing an existing annual with a wild perennial relative, perennial rice is the only one that has been commercially released. Grown on over 10,000 ha. in China, several lines of perennial rice are being evaluated elsewhere in SE Asia, as well as in five countries in sub-Saharan Africa.

Perennial wheat continues to attract a lot of attention given the importance of the grain worldwide. One breeding approach that has made significant progress in recent years has been to cross durum wheat with intermediate wheatgrass, the same plant that produces Kernza grain. By increasing the number of chromosomes contributed by intermediate wheatgrass relative to the durum wheat, the new wheat species has attained two to three years of perennialism depending on where the crop is grown. Several important traits of the durum wheat such as seed size and seed set remain present in the perennial hybrid.

What steps would accelerate the development and adoption of perennial grains?

Interest and participation in developing perennial grains have expanded substantially over the last two decades, but the expansion still receives only a small fraction of the attention and funding directed to staple annual grains. Support for accelerating the development of perennial grains has until recently been slow to gain momentum because of the technical challenges and time involved in breeding new perennial crop species. In the last five years, there has been a notable rise in interest in perennial grains by philanthropists, national agricultural agencies and international plant breeding institutions such as those making up the Consultative Group on International Agricultural Research (CGIAR). This rise can be attributed, in part, to the emergence of powerful and affordable breeding techniques that complement traditional breeding approaches by utilizing genetic information from breeding populations to help guide selections (e.g., genomic selection). The rise in interest can also be explained by a growing appreciation for

how many of agriculture’s most challenging problems could be addressed by increasing perennialization of the cropping landscape.

While increasing support for developing perennial grain crops and cropping systems is paramount, there are many near-term policy adjustments that would help facilitate or at least remove impediments to increasing perennial grains on the landscape. For example, a European Food Safety Authority (EFSA) panel recently recommended against the approval of Kernza perennial grain as a novel food in the European Union. The panel’s decision was based on a strict interpretation of the EFSA guidelines on allowable microbial counts in novel foods, guidelines that were not created to evaluate grains that are cooked before consumption, effectively eliminating the microbial hazard. Current EFSA standards would likely prevent the approval of staple grains that can have comparable microbial counts as Kernza such as wheat and barley had their approval not been grandfathered-in when EFSA originated. Thus, it will be essential to revise the standards to allow the introduction of Kernza and other perennial grains in the pipeline for farmers and consumers in the EU. It may seem difficult to imagine something as deeply embedded in human culture and agriculture as annual grains changing substantially after thousands of years. Yet change in how food is grown has never been more critical and the ability to make the necessary long-term changes has never been more possible. By combining plant breeding and genetics, with farmer experience, ecology, consumer feedback and numerous other elements, a new menu of perennial crops may make it possible for agriculture to function more like the natural systems it replaced building soils while feeding humanity for another 10,000 years.

The resilience that makes the difference Not all wheat grains are the same. Some withstand drought, intense heat, or fungal attacks without compromising yield and quality; others give in easily.

This is what wheat resilience is all about: the ability to maintain nutritional properties, consistency, and productivity even under adverse conditions. To improve resilience, work is being done on two complementary fronts: varietal selection and farming practices. On one hand, genetic research makes it possible to identify more robust wheat varieties, better suited to adapt to climate change. Through conventional breeding techniques and, more recently, genomic tools and marker-assisted selection, agronomists are able to select lines that tolerate water or heat stress, and resist pathogens, such as brown rust or fusarium. Macaroni magnate Ralph Raulli had a tremendous impact on pasta manufacturing in Southern California in the early to mid-twentieth century.

Raulli was born in 1888 in Raiano, Italy, immigrated to the United States in 1905 and settled in Los Angeles.1 At the age of 27, he founded the Los Angeles Macaroni Company. He later founded the Raulli Macaroni Company and the Sunland Biscuit Company with factories in Los Angeles and San Diego. He was one of the first from the West Coast of the United States to join the National Macaroni Manufacturers Association (now the National Pasta Association), becoming a member in 1927 and later serving on the board of directors.2-3 Ralph Raulli claimed in a 1940 newspaper ad that the original plant for his product made 300 pounds (135 kilograms) of pasta per day in 1911, which was

likely his first foray into the business.4 In 1915, Antonio Bizarri, Henry Guasti and Raulli formed the Los Angeles Macaroni Company at 760 San Fernando Street.5-6 A few years later, the company moved to 822 North Spring Street.7 Raulli sold his shares of the Los Angeles Macaroni Company to Bizarri in 1927, who subsequently renamed his company Anthony’s Pasta, which is now a Winland Foods brand.8 In 1928, the Los Angeles Macaroni Company, Pacific Macaroni Company and United States Macaroni Company merged to form the Los Angeles-Pacific Macaroni Company with a new 40,000 square feet (3,715 square meters), two story manufacturing and distribution facility in the Central Manufacturing District of Los Angeles.9 Their target markets were Southern California and neighboring states, and foreign countries, including Mexico.10 In 1928, Raulli got into the baking industry, initially as the head of the Kahn-Beck Company, a manufacturing concern.11 He then launched the Sunland Biscuit Company in 1929 with an investment of $100,000 for equipment and property.12 After an exhaustive search, he selected an existing building at 4383 Fruitland Avenue in the Central Manufacturing District of Los Angeles, a few doors away from the Los Angeles-Pacific Macaroni Company.13 He saw this area as an ideal location due to its proximity to the Los Angeles Junction Railway and, as he stated, “freedom from objectionable industries.”14 By 1930, one year after opening, sales had tripled and to meet the demand, he expanded the facility to 24,000 square feet (2,230 square meters).15 The company continued to grow rapidly, requiring another expansion in 1932.16 In 1933, Sunland Biscuit also added another manufacturing factory in San Diego.17 One of the first brands was Sunview followed by Raulli’s in 1932.18-19 In addition to pasta, Sunland Biscuit made assorted cookies and crackers, including Munch wafers.20

Raulli was an innovative marketer. Early in his career, he was part of a group of forward-thinking pasta companies in Los Angeles who were normally competitors, but saw the benefit of working together to grow the entire category. In 1923, the Globe Grain and Milling Company, Los Angeles Macaroni Company, Pacific Macaroni Company, Superior Macaroni Company and the United States Macaroni Company joined forces in an advertising campaign to place numerous billboards throughout Los Angeles about eating more pasta.21 This early cooperative advertisement for pasta as a whole without focusing on specific brands caught the attention of the National Macaroni Manufacturers Association (now the National Pasta Association) who was interested in the impact of this type of a joint marketing campaign.22 In the 1940s, Sunland Biscuit was part of an ad writing contest, open to the public where anyone could submit ideas for ads for the participating companies.23 One notable submission for Raulli’s brand used a clever take on a popular nursery rhyme, “When Yankee Doodle goes to town, Upon his bike or pony, Ma pastes this note inside his hat - ‘Get RAULLI’S MACARONI!’”24 Budget Pack, Inc., a company that offered a variety of food products, purchased the Raulli Macaroni Company in 1948.25 Three years earlier, Budget Pack added macaroni to its portfolio with the launch of the Spaulding Macaroni Company, but demand quickly outpaced its production.26 Raulli Macaroni added a 32,000 square feet (2,975 square meters) facility and a fleet of trucks to Budget Pack in addition to the 25,000 square feet (2,320 square meters) facility of Spaulding Macaroni.27 The two factories enabled Budget Pack to expand its market share by offering more products with a wider assortment of package sizes and pasta shapes.28 Also, Budget Pack had a broader distribution network, including Arizona.29 Budget Pack continued to offer the Raulli brand until the early 1950s and, as a quality measure, made all its pasta with 100% number 1 extra fancy semolina to, as they proudly claimed, offer only the “finest in macaroni products”.30-31
