The GLP-1 Effect:
How Hospitality Menus Are Evolving If you've noticed guests gravitating toward grilled proteins, fresh vegetables, or lighter menu options, you're not imagining it. GLP-1 medications are on the rise and reshaping how many consumers think about food.
Paul Carr VP, Culinary Innovation, GSC + GPOs Aramark + Avendra International
8 Fall/Winter 2026-27
EXPERTISE
According to Datassential, 12% of consumers currently use GLP-1 medications, while another 24% are interested in them. That means more than one-third of consumers are either using or considering these medications, making their influence increasingly important for hospitality operators to consider. "We're seeing consumers become more intentional about what they eat, and GLP-1 medications are
accelerating that shift," said Paul Carr, VP of Culinary Innovation, GSC + GPOs at Aramark and Avendra International.
WHAT'S CHANGING ON THE PLATE? Guest spending patterns may not look dramatically different, but menu preferences are clearly evolving.
Fall/Winter 2026-27 9
EXPERTISE
Datassential reports that GLP-1 users are choosing more fresh fruits and vegetables, lean proteins, seafood, eggs, and whole grains, while cutting back on fried foods,
sugary items, highly processed foods, alcohol, and caffeine. Many are also snacking less often, favoring meals that feel balanced, satisfying, and nutrient-dense.
WHY IT MATTERS For hospitality operators, the growing influence of GLP-1 medications offers an opportunity to align menus with changing consumer preferences. As more guests prioritize protein, produce, and balanced portions, menu expectations are evolving alongside them. In fact, Datassential found that 33% of consumers are interested in dishes or menu options designed with GLP-1 users in mind. "Guests still want food that's craveable and satisfying. The difference is a greater emphasis on nutritional value," says Carr.
10 Fall/Winter 2026-27
Fortunately, many of these evolving preferences align naturally with trends already shaping hospitality menus: ݁ Protein-forward entrées ݁ Fresh produce ݁ Whole grains ݁ Lower-sugar offerings ݁ Balanced portions
Operators can address these evolving preferences by making existing wellness-oriented choices more visible, accessible, and appealing throughout the guest journey.

MENU INSPIRATION To help bring this trend to life, Carr shares a few menu and recipe ideas that combine nutrition, flavor, and guest appeal, proving that small menu tweaks can make a big impact.
“The key is integration,” said Carr. “Rather than creating separate menu categories, operators can incorporate these attributes throughout existing offerings, making better-for-you choices appealing to a broad range of guests.”

When You've Seen Every GPO, What Matters Most is Operational Value
Cole Baker Vice President of Hotel Operations Oldham Goodwin
Russell Graham Director of Corporate Support Oldham Goodwin Ático, Fort Worth

CASE STUDY
In hospitality, operational excellence is often won behind the scenes. Guests may never see a purchasing platform or supplier agreement, but they notice when products are unavailable, projects are delayed, or hotel teams are distracted by operational challenges. For Oldham Goodwin, a hospitality company specializing in the development and management of premium select-service hotels, consistency is a competitive advantage. To ensure its procurement strategy was supporting that goal, the company spent two years evaluating hospitality GPO providers to determine which partner could deliver the strongest combination of value, support, and operational expertise. The process ultimately reaffirmed its long-standing relationship with Avendra International. "We evaluated each partner based on total value, not simply technology or headline pricing," said Cole Baker, Vice President of Hotel Operations at Oldham Goodwin. "Avendra stood out because it combines a Fall/Winter 2026-27 17

The evaluation reinforced an important lesson. "Technology alone does not resolve a delivery issue, correct a billing discrepancy, improve supplier performance, or help a general manager navigate an urgent operational need,” said Baker. Before recommitting to the collaboration, Oldham Goodwin identified several opportunities to improve program performance, ranging from distributor billing terms and credit limits to program alignment for more complex properties. According to the company, Avendra responded with a collaborative, solutions-focused approach. "They listened carefully, established clear ownership, and worked with us until the issues were resolved," said Russell Graham, Director of Corporate Support, Oldham Goodwin. 18 Fall/Winter 2026-27
The result was greater participation among property leaders and stronger participation across the portfolio. Today, Oldham Goodwin consistently achieves purchasing participation above 96%. A key driver has been iBuyEfficient, Avendra's centralized procurement platform. With more than 90% of participating suppliers connected through integrated ordering workflows and punchout catalogs, the platform streamlines purchasing while providing greater visibility, approval controls, and reporting. "iBuyEfficient allows us to manage procurement as an integrated business process rather than a collection of disconnected propertylevel transactions," said Graham. Beyond technology, the partnership has helped improve supplier performance and simplify sourcing across the portfolio. Working closely with Avendra's account management team, Oldham Goodwin strengthened coordination

with its mainline food distributors through pricing reviews, inventory solutions, and dedicated escalation support. The result has been improved inventory continuity, stronger supplier relationships, and fewer emergency purchases. The company has also leveraged Avendra's FF&E expertise to simplify replacement and project-related purchases. By quickly identifying brand-approved options and streamlining the sourcing process, property teams can move projects forward more efficiently. In one recent project, that approach generated more than $15,000 in savings within a single product category. For Oldham Goodwin, the experience reflects a broader industry shift.
Procurement is no longer simply a purchasing function; it has become a strategic tool for improving consistency, controlling costs, and supporting portfolio performance. "A GPO should be evaluated on more than contract pricing,” said Baker. “The real question is whether the partner can help your organization implement the program, support your properties, improve supplier performance, adapt to changing market conditions, and consistently convert purchasing scale into operational value."

3 Critical Protection Programs Every Hotel Operator Should Prioritize Before an Emergency Ed Hawkins Director, Strategic Sourcing Aramark + Avendra International William Key Director, Strategic Sourcing Aramark + Avendra International

EXPERTISE
In hospitality, disruptions rarely arrive with a warning. A power outage, life safety system failure, or severe weather event can quickly impact guests, operations, and revenue. Today's operators face increasing pressure to maintain safe, reliable properties while managing labor constraints, aging infrastructure, rising operating costs, and more frequent weather-related disruptions. While no property can eliminate every risk, proactive planning and strategic service partnerships can help operators reduce exposure and recover faster. Through Avendra's sourcing expertise and supplier network, operators can access programs that improve reliability, support compliance, and strengthen operational resilience. We're highlighting three critical service programs that can help operators protect guests, preserve assets, and keep operations running when it matters most. Establishing supplier relationships before a crisis helps ensure faster response when it matters most.

Generator Maintenance That Keeps Operations Running
When utility power fails, guests still expect a seamless experience. Backup generators support critical systems such as emergency lighting, elevators, communications, and life safety equipment. As power demand continues to grow and weather-related risks place added stress on the grid, reliability is becoming a greater concern for businesses. In its 2025 Summer Assessment, the Federal Energy Regulatory Commission (FERC) noted that higher electricity demand, weather uncertainty, and regional capacity constraints could increase reliability challenges in parts of the country.
Because generators may operate only a few times each year, maintenance issues can go unnoticed until they’re needed most. Regular testing and preventative maintenance help improve reliability and reduce costly downtime.
PROGRAM BENEFITS INCLUDE: ▶ Preventative maintenance aligned

Fire Protection Programs That 2 Support Safety and Compliance
Fire and life safety systems are among the most highly regulated assets within a hotel, requiring ongoing inspection, testing, and maintenance. According to NFPA's latest fire-loss analysis, U.S. fire departments responded to an estimated 1.38 million fires in 2024, resulting in approximately $19 billion in property damage. More than 80% of that property loss occurred in structure fires, underscoring the importance of maintaining reliable fire protection systems and life safety equipment.

Fall/Winter 2026-27 31
CASE STUDY
As a preferred GPO partner of Red Roof for nearly four years, Avendra International is proud to support the brand's commitment to operational excellence, brand standards, and franchisee success. Edge Magazine sat down with President Zack Gharib to discuss how Red Roof is turning guest loyalty into long-term growth in an increasingly competitive hospitality landscape.
Red Roof has built a loyal following among value-conscious travelers. Beyond points and discounts, what do you believe drives guest loyalty today, and how are guest expectations evolving? ZG: Loyalty always starts with trust. Guests come back because they know they’ll receive a clean, comfortable room, friendly service, and a fair price every time they stay with us. While rewards programs certainly matter, lasting loyalty is built through consistently delivering on the promises we make. Loyalty is increasingly part of the value equation for travelers. Price, location, cleanliness, and a dependable stay still come first, especially in the economy segment, but a strong loyalty program can help tip the decision when guests are comparing options.
32 Fall/Winter 2026-27
Our guests are looking for value they can understand and use, not overly complicated perks, so our RediRewards loyalty program is designed around savings, relevant benefits, and recognition that support real travel needs. At Red Roof, our focus has always been on delivering meaningful value rather than unnecessary extras. We continue to invest in our hotels, our technology, and the overall guest experience so our guests know they can count on us, regardless of where they’re traveling. When people trust your brand to consistently meet their needs, loyalty naturally follows. Your most loyal guests know what to expect from a Red Roof stay. How do you maintain that consistency across a franchised portfolio, and what role do

procurement relationships and category programs play in helping operators deliver on the brand promise? ZG: Consistency is a mantra at Red Roof. It doesn’t happen by accident. It comes from strong partnerships and a shared commitment to our brand standards. Our franchise owners are passionate entrepreneurs, and our role is to provide them with the tools and resources they need to deliver the Red Roof experience consistently.
Procurement relationships are an important part of that equation. Trusted supplier partnerships enable owners to access quality products, competitive pricing, and brand standard approved solutions that support both operational efficiency and a consistent guest experience. We help franchisees operate effectively and efficiently and encourage them to invest in their hotels, which ultimately provides guests with a more consistent, reliable experience. This drives

both franchisee success and long-term guest loyalty. As the industry continues to navigate labor pressures, rising operating costs, and shifting traveler expectations, which challenge do you believe will have the greatest impact on economy lodging, and how is Red Roof responding? ZG: Rising operational costs are the biggest concern in this sector. Red Roof addresses this challenge with a common-sense approach to business. We deploy smart technology to make the operation of the hotel simpler and more efficient for the franchise owner. Our property management system, HotelKey, offers the hotel staff the right connectivity with online travel agencies, while our payment

gateway, FreedomPay, creates seamless payment solutions for the guest while saving our franchisees money. We are exploring insurance solutions to help the property owner operate more efficiently. Finally, we are driving revenue with smarter and more creative promotions. Our commercial initiatives focus on the inherent value of comfort, convenience and our RediRewards loyalty program. Looking three to five years ahead, what will differentiate the most successful economy hotel brands, and how is Red Roof positioning itself to lead in that environment? ZG: Over the next five years and beyond, what will truly differentiate Red Roof is our commitment to helping our franchise owners succeed.

BEYOND THE BALLROOM:
Banquet Strategies for Today’s Hospitality Operators Brett Montgomery FSCR Manager Avendra International and former luxury hotel executive chef
Banquets and events remain one of hospitality's most important revenue drivers. Group business continues to gain momentum in 2026, with CoStar and Tourism Economics reporting 2.7% growth in hotel group demand through April and CBRE identifying convention and group travel as key drivers of hotel performance. Across hotels, golf clubs, and country clubs, operators are looking for ways to capitalize on that demand while maximizing space, labor, and profitability. Brett Montgomery, Field Service & Customer Relationship (FSCR) Manager at Avendra International, believes the answer often lies in viewing familiar spaces and services through a different lens. Drawing on more than 20 years in hospitality, including executive chef roles at luxury properties, Montgomery has seen firsthand how creative thinking can transform underutilized spaces, elevate banquet offerings, and create memorable events.

People are tired of the traditional banquet room. They want an experience they haven't had before."
Fall/Winter 2026-27 39
EXPERTISE
Looking Beyond the Ballroom For Montgomery, banquet innovation often starts with a simple question: “What spaces on the property aren't being fully utilized?” Throughout his career, he has seen operators unlock new revenue opportunities by rethinking existing spaces. Business centers become private dining rooms. Restaurants host events during off-hours. Suites transform into reception venues. One property even hosted VIP dinners inside a working kitchen. Guests enjoyed a private meal while watching chefs in action, creating something far removed from a typical banquet environment. Montgomery also encourages operators to bring the destination into the event itself. Regional ingredients, beverages, and destination-inspired menu items help reinforce a sense of place, especially for business travelers who spend most of their time on property. While executive chef at a property in Houston, Montgomery showcased local ingredients such as prickly pear through menu items, tastings, and guest experiences, helping visitors connect with the destination without ever leaving the hotel.

Why the Bar Is Getting More Attention One of the clearest banquet trends today is the growing demand for premium non-alcoholic beverages. That shift allows properties to expand beverage offerings while capturing additional revenue. His advice? Treat mocktails the same way you'd treat a signature cocktail. Fresh herbs, specialty syrups, flavored foams, unique garnishes, custom ice, and distinctive glassware can transform a simple beverage into a talking point. Presentation increasingly influences how guests experience and remember beverage programs, making beverage service an important part of the overall event strategy.

Memorable Events Often Come Down to Presentation In a crowded event market, memorable experiences are rarely defined by the menu alone. More often, it's the presentation and guest interaction that leaves a lasting impression. One of Montgomery's favorites was a bacon station where strips of bacon were clipped to a clothesline and served alongside a variety of dipping sauces. The concept wasn't elaborate, but guests talked about it long after the event ended.
“The experience surrounding the event is what people remember. It’s the way food is presented, how guests interact with it, and how details—from tables and chairs to décor and service—come together to create a feeling.” Montgomery has seen the same principle apply to chef-attended stations, interactive displays, and other creative touches that

He notes that guests don't experience an event one detail at a time. They experience it as a whole. The seating, tables, lighting, drapery, and décor all work together to set the tone. When those elements align with the event theme, whether it's a country club wedding or a corporate banquet, the entire experience feels more intentional and memorable.

The Seating Shoppe
The Bottom Line Montgomery's advice is straightforward: "How do you do something guests aren't expecting?" For operators competing for group business, weddings, member events, and social functions, differentiation often comes from finding fresh ways to use existing spaces, services, and amenities. A patio becomes an event venue. A signature mocktail becomes
a conversation piece. A familiar menu item is presented in a way that guests haven't seen before. That's where profitability, guest satisfaction, and long-term loyalty often begin.

As a newly Avendra-approved supplier, The Seating Shoppe provides early-stage guidance to help hospitality leaders align seating decisions with guest experience, operational efficiency, and long-term performance. Hospitality leaders spend significant time evaluating guest-facing investments, yet seating is often treated as a commodity purchase. It can directly influence profitability, operational efficiency, dwell time, and guest satisfaction. From corporate conferences to country clubs and wedding receptions, ballroom seating is repeatedly moved, stacked, stored, and redeployed, making it one of the hardest-working assets in hospitality. Drawing on more than 40 years of FF&E experience, Jeffrey Berkowitz, VP of Business Development at The Seating Shoppe, has worked with hospitality organizations to make informed seating and table decisions that go beyond the product itself.
The Revenue Engine: Banquet, Convention and Meeting Seating Banquet and meeting spaces are among hospitality's most valuable revenue-generating assets.
Supporting a steady stream of events requires seating that performs well for both guests and operations teams. "Nobody thinks five pounds makes much difference when they're looking at one chair. Now imagine your team moving 500 of them between events. Suddenly, five pounds matters a lot," said Berkowitz.
Before Selecting a Banquet Chair, Ask: ▶ How much does it weigh? ▶ How high does it stack? ▶ How much storage space does it require? ▶ Is it comfortable for a threehour event? ▶ Can the frame, finish, and fabric be customized? ▶ What maintenance will it require? ▶ What is its true lifetime cost? Fall/Winter 2026-27 47
ADVERTORIAL
For operators, these factors affect room turnover times, staffing requirements, and total cost of ownership.
What Is the Hidden Cost of a Chair? The purchase price is only one part of the equation. A heavier chair may require more labor to move. A chair that stacks poorly may consume valuable storage space. A product that lacks durability or cleanability may require more maintenance or earlier replacement. "Purchase price is only one number. The better question is: What will this chair do for me over its lifetime?" says Berkowitz.
48 Fall/Winter 2026-27
The Dining Experience: Restaurant Seating Restaurant seating influences both guest comfort and brand perception, requiring operators to balance durability, cleanability, design goals, and compatibility with the overall dining environment. "A chair can look great and still be wrong for the application. Frame style, finish, fabric, dimensions, comfort, weight, and stackability all matter," said Berkowitz. Customization allows these considerations to be tailored to the property rather than forcing the property to adapt to the product.

The chair is our product. Your trust is our legacy.”
The Complete Equation: Tables Matter Too
One Strategy Across the Property
Successful hospitality environments are shaped by more than seating alone. Tables influence traffic flow, room flexibility, functionality, and the overall guest experience.
Every space has a different job. Taking a portfolio-wide approach to seating and tables can help hospitality organizations make more consistent decisions across properties while balancing design, operational requirements, and long-term value.
"Restaurant, banquet, and conference tables each have different requirements, and having one resource can simplify the process while allowing each space to have its own personality," said Berkowitz. Evaluating tables and seating together can help properties create more cohesive, functional spaces while simplifying sourcing and project execution.

Building a reliable distribution network requires careful planning, strong distributor relationships, and rigorous quality oversight to ensure products can be consistently sourced, stocked, and delivered. At Avendra International, onboarding a new supplier is a collaborative effort involving sourcing, culinary, quality assurance, distribution teams, and distribution partners. Each step is designed to strengthen reliability while helping suppliers, distributors, and operators succeed together.

For organizations evaluating new suppliers, here are four important considerations that help create a strong foundation for long-term success. Hospitality operators depend on thousands of products to keep kitchens running, guests satisfied, and operations on track. What many don't see is the extensive work that takes place before a new supplier ever enters the supply chain.
Determine Operational Fit
Not every product is the right fit for every distribution network. Before a supplier is onboarded, teams assess: ݼProduct quality and
food safety standards
ݼOperational and
menu applications
ݼAvailability and
production capacity
ݼGeographic reach ݼAbility to scale across
multiple properties
TIP: Evaluating operational fit early helps create a smoother path from manufacturer to distribution center to property. Fall/Winter 2026-27 51

2 Confirm Distribution Readiness
A product succeeds if distributors can support it effectively. This is where sourcing and distribution intersect. Even the strongest supplier program depends on distributors having the inventory, infrastructure, and forecasting capabilities needed to support it. Before launch, Avendra works closely with Master Food Distribution (MFD) partners to assess: ݼWarehouse capabilities ݼOrder fulfillment expectations ݼService models across regions ݼForecasted demand ݼInventory and stocking
requirements
#
This planning helps place products where demand exists and improves availability across the network. TIP: Early forecasting and communication with key distribution partners can help prevent service issues before they occur.
3 Monitor Performance Closely
Onboarding doesn’t end once a product enters distribution. Avendra uses scorecards and performance reviews to monitor: ݼFill rates ݼOn-time deliveries ݼSupplier inbound performance ݼProduct substitutions ݼDistribution center
performance trends
52 Fall/Winter 2026-27
These metrics provide early visibility into performance trends and opportunities for improvement, helping teams address issues before they impact operations. Ongoing visibility allows teams to identify recurring issues, collaborate with suppliers, and make informed adjustments.

4 Validate Quality Every Step of the Way
#
Quality assurance requires ongoing oversight long after implementation. To help maintain standards, Avendra incorporates: ݼDistribution center assessments ݼDistributor performance reviews " ݼMeet the Truck" audits ݼCollaboration with culinary
and quality assurance experts
ݼCorrective action planning
when necessary
In some cases, assessments and audits uncover opportunities to improve product handling, storage, or delivery processes before they affect clients. TIP: Quality management is most effective when suppliers, distributors, and operators communicate openly and address issues proactively.

Why Enterprise Scale Matters
Behind Every Successful Delivery
Supported by Aramark's enterprisewide purchasing network, which represents billions of dollars in distribution spend, Avendra works at a strategic level with national and regional distributors. Those relationships help align inventory planning, service expectations, and continuous improvement initiatives across the network.
Guests may never see the work that goes into evaluating suppliers, aligning distributors, and maintaining quality standards. They simply expect products to arrive as ordered and operations to run smoothly.
For hospitality operators, this scale helps strengthen product availability, service performance, and consistency across the distribution network.
Building a strong supplier network starts with a rigorous onboarding process and continues through trusted distributor relationships, performance management, and consistent quality oversight. Together, these elements create the reliability hospitality operators depend on every day.

What's one piece of advice you would give a hotel operator looking to get more value from their supplier relationships? Angela Thomas FSCR Manager, Virginia & North Carolina
Don't wait until you have a problem to build supplier relationships. Taking the time to connect with supplier representatives and understand their capabilities can pay off when unexpected needs arise. Even suppliers you don't currently use may become valuable resources in the future. The more familiar suppliers are with your operation, the better equipped they are to recommend solutions tailored to your property's needs. Many of the suppliers you may work with before joining Avendra are likely part of the Avendra program, and your FSCR can help identify opportunities for savings, efficiency, and operational improvement. Scaling Success in Vacation Residences Industry Leaders Share How Procurement, Technology and Collaborations Are Enhancing Performance In today's vacation residence market, success depends on more than location and amenities. To explore how leading operators are meeting these demands, Edge Magazine spoke with two valued clients, Nick Falcone, CEO of Rentyl Resorts, and Michael Ridgewell, Senior Vice President, Asset Management & Resort Operations at Vacatia, about procurement, technology, and strategic collaborations. While Rentyl Resorts focuses on branded residential resorts and vacation home communities, Vacatia specializes in helping independent vacation ownership resorts enhance operations, rental performance, and owner value. Michael Ridgewell Senior Vice President, Asset Management & Resort Operations Vacatia
"As their procurement provider, Avendra is proud to support their growth as they elevate guest experiences, strengthen operations, and bring a fresh, modern model to the resort space," said Heather Altieri, Vice President, Client Relations, Avendra International. Q: How should operators balance brand standards with residential owner expectations as buyers increasingly seek hotel-level service, personalization, privacy, and value?
Nick Falcone CEO Rentyl Resorts (NDM Hospitality)
Michael Ridgewell: “Owners and guests have become increasingly sophisticated. They expect the service levels of leading hotels while also expecting the comforts and familiarity of a residence. Technology is helping bridge that gap through digital checkin, mobile communication tools, and owner portals that improve convenience while allowing onsite teams to focus on meaningful guest interactions.

The resorts that perform best are those with technology that removes friction, as well as employees who deliver authentic hospitality. Standards and personalization aren't competing priorities. When implemented thoughtfully, they reinforce one another.” Nick Falcone: “Our model combines the space and privacy of vacation homes with resort-level hospitality. Guests can access amenities and services traditionally associated with high-end hotels, from concierge support and dining experiences to spa services and customized in-home offerings.

At the same time, maintaining brand standards requires owner engagement. We regularly gather feedback from owners and buyers and create opportunities for personalization within defined brand parameters. That balance helps maintain consistency while giving owners a meaningful connection to the product.” Q: From a procurement and sourcing standpoint, what guidance would you give operators seeking elevated residential finishes while maintaining lifecycle cost control, consistency, and speed to market?
EXPERTISE
NF: “The key is creating standards upfront and aligning procurement strategies with the target customer and expected return profile. While some flexibility is important, excessive customization often leads to higher costs, increased maintenance, and operational inefficiencies. Consistency protects both the guest experience and long-term asset performance.” MR: “Independent resorts often face disadvantages when negotiating pricing, vendor relationships, and contract terms on their own. Scale and purchasing power change that equation. Through our procurement relationships, we've generated meaningful savings across FF&E, OS&E, and service contracts while maintaining quality standards. We also utilize data-driven capital planning and asset redeployment strategies to maximize the value of every investment. For operators seeking elevated finishes without compromising cost control, scale and strategic partnerships are critical." Q: Can you share an example of how Avendra's programs have helped drive value or streamline procurement operations?
MR: “Avendra has been a genuine game changer for our organization. One example is our chemical purchasing program, which was previously fragmented across individual resorts. By leveraging Avendra's network and supplier relationships, we standardized purchasing, improved service consistency, and generated measurable savings across our portfolio. Beyond individual sourcing categories, the broader value comes from consistent pricing, centralized ordering tools, increased visibility, and stronger budget controls. Those capabilities remove administrative burden and allow resort teams to focus on operations rather than procurement logistics.” NF: “Avendra’s purchasing power is certainly valuable, but the administrative controls, available through the iBuyEfficient eProcurement platform, have had an equally significant impact. The ability to establish spending guidelines, approval workflows, and greater visibility across operations has strengthened efficiency throughout our organization.

Q: Looking ahead, what innovations or growth initiatives are you most excited about? NF: “We're focused on expanding our portfolio across vacation home resorts and alternative accommodations, including opportunities in outdoor hospitality. We're also investing in AI-driven revenue optimization and technology platforms that enhance both operational efficiency and the guest experience." Consumer habits are evolving, with more people snacking, looking for better food on the go and choosing options that suit their lifestyles. This gives operators an opportunity to refresh their offering, meet changing customer expectations and support business growth. In many sites, it has become one of the busiest food touchpoints in the building. The operators getting it right are understanding when, why and how customers are choosing to buy.
The traditional three-meal day is fading. Customers are increasingly eating little and often, replacing structured meals with quick, flexible occasions driven by convenience, energy and lifestyle. More than half of all grab and go visits are now a quick bite rather than a full meal.
Here are five trends every operator should have on their radar. To explore how we can support your grab and go strategy, contact your Avendra International account manager or media@avendra.com. That shift in thinking was at the heart of the International Luxury Hotel Association’s recent webinar, The Power of One: Aligning Ownership, Management, and Operations for Smarter Procurement. The discussion brought together leaders from ownership, operations, development, and supplier organizations around a simple idea: when ownership, management, operations, and suppliers are aligned, procurement becomes a powerful driver of business performance.
Procurement is About More Than Purchasing For years, procurement was largely measured by a familiar scorecard: negotiate better contracts, reduce costs, and stay within budget. Today’s hospitality leaders are taking a broader view. "From an ownership perspective, procurement isn't purchasing, it's actually capital allocation that happens every single day," said John C. Tolbert, Senior Vice President at BRE Hotels & Resorts.

Whether it's a technology platform, linen program, or kitchen equipment package, procurement decisions influence guest satisfaction, operational efficiency, and asset value. As Tolbert explained: "The goal isn't simply to buy cheaper. The goal is to create the greatest long-term value by aligning quality, guest experience, operational efficiency, and financial discipline."
where procurement creates the biggest impact. "We really need to consider that total cost of ownership. How long is that piece of equipment going to last? What is the efficacy rate of the cleaning product? Will it have an impact on labor?" It's a reminder that the lowest-cost option isn't always the most costeffective decision.
Looking Beyond the Price Tag
The Person Who Spots the Problem
When a major component failed in a 14-year-old commercial kitchen, the solution seemed simple: make the repair and keep the operation running.
Who in your organization is most likely to spot a costly mistake before it happens?
Instead, Dorien Murphy, Director of Luxury Accounts at Avendra International, recommended replacing the entire kitchen suite, an investment of approximately $150,000. Why? Because the real question wasn't the size of the investment. It was the long-term impact on performance, reliability, and cost. For Molly Preston, Senior Vice President of Procurement, Pyramid Global Hospitality, that's
Often, it's not the owner, designer, or procurement lead. It's the person who will ultimately operate, maintain, or work with the product daily. Marcus Lee, Executive Vice President of Development at HVS, believes too many decisions are made before procurement and operations are brought into the conversation. "Procurement is not something that should be entering a conversation after the deal is underwritten or after a design is finalized. It should be in the room Fall/Winter 2026-27 79

at underwriting. It should be part of the financial model." Preston shared an example from a renovation project where a chief engineer noticed that decorative light switches had been placed beneath lampshades. What looked appealing on paper would have resulted in broken fixtures, maintenance issues, and unnecessary costs once installed. Because the engineer had a voice in the process, the design was changed before installation. "Bringing those operators into the conversations helps avoid expensive changes later, or costs, or frustrated employees or guests," said Preston. Sometimes the smartest decision isn't choosing the right product— it's making sure the right people are involved before decisions are made.
Data Is Easy. Insight Is Hard. Hospitality has more data than ever before. The challenge is turning it into better decisions. "Hotels are swimming in data, but is it insightful?" asked Mark Rademaker, Global Head of Hospitality and Gaming at Adyen. 80 Fall/Winter 2026-27
Leading organizations are looking beyond spend reports and using procurement data to understand its impact on labor, supplier performance, guest satisfaction, asset longevity, and profitability. "Data's becoming the operating system for procurement," said Tolbert. With AI and predictive analytics continuing to advance, procurement teams are increasingly able to anticipate risks, identify opportunities, and make informed decisions before issues affect the operation.
The Real Opportunity The best-performing hotels view owners, operators, procurement teams, and suppliers as a team working toward the same goal: creating value for the asset while delivering an exceptional guest experience. "Procurement is capital allocation. Transparency creates value. Alignment beats negotiation," said Tolbert.
