EXPERIENCE THE Difference

As the population of Columbia County continues to grow, so has the demand for fine dining establishments. Fukuro Bar & Sushi has stepped up to meet that dining need. “Fukuro” means “a night out” in Japanese, and hints at the special nature of the restaurant and the experience they strive to provide.

Since opening in August 2024, Fukuro has gained a reputation for exceeding expectations in food and service areas. Cindy Chen, the manager, explains that in New York City — where she had previously lived and worked — if a high-end restaurant wanted to succeed against the endless competition, they had to be a cut above the rest.

She has worked hard to instill that sense of distinction in her staff in ways like guests never being rushed, so they can relax and enjoy their food and drinks. Servers are also knowledgeable about the menu, which helps patrons understand some of the more complicated Japanese menu terms.

Fukuro’s chef, also a transplant from a highly-rated sushi restaurant in NYC, makes practically everything from scratch — right down to the soy sauce. Fresh fish is imported weekly from Japan, allowing Fukuro to offer

a constantly rotating selection of sashimi and nigiri that includes specialty fish only found on the other side of the world. It is worth coming back regularly to try something new!

While everything tastes amazing, customer favorites have begun to stand out: Truffle Miso with Salmon Sando, fall-off-the-bone Asian-style Tender Short Ribs, Miso Black Sea Bass that has been marinated for more than six hours in a homemade sauce, any of the sushi with unique details like crispy rice and yuzu aioli served alongside fresh wasabi, and finally the Matcha Tiramisu.

To pair with the elevated entrees, Fukuro offers an extensive drink selection. Pilsners like the Kawaba Pearl provide a cold, fresh take alongside the complex flavors of the food, unfiltered sake is served in traditional fashion by the attentive staff, and a long list of whiskeys fits as the perfect nightcap.

The thoughtfully decorated space with fun art and comfortable seating creates an ideal ambiance for a girls’ night, anniversary or any special celebration. Alongside the unique and wonderful menu and great drinks, an evening at Fukuro is sure to be a memorable one.

COFFEE TRAILS

You may have already noticed the unmistakable teal trailer-turned-coffee-shop around town, featuring the unmistakable beauty-owner and operator Jana Farrell slinging the best version of caffeine you ever did try.

Growing up in the Pacific Northwest, Farrell could find a coffee shop on practically any block. “One of my favorite things growing up was going to get a coffee with my mom and how a cozy drink made me feel.” That nostalgia and routine continued to influence Farrell as she worked at coffee shops after graduating college.

When Farrell’s husband got stationed at Fort Eisenhower — forcing the couple to leave Washington state — an opportunity came for her to create a piece of home to share with Augustans, in the form of a coffee trailer.

“I love what I do,” says Farrell. “Wherever people want me, I’ll go.” So, in 2021 she took that passion and started Cozi Cup Coffee, and she was working full-time by 2023.

Known for bold special flavors, the coffee truck uses Buona beans for espresso beverages and drip coffee. “I’ve worked with them from the beginning. I think they’re the best roaster in Augusta,” she states.

Her signature drink — the Cozi Cup — has notes of English toffee and white chocolate with caramel and sea salt drizzled on top. The Sweet Magnolia is another local favorite with hints of white chocolate, orange and a sprinkle of cardamom. For a simpler option try the Pollinator, sweetened with housemade vanilla syrup and organic honey.

Farrell works hard to have as many flavors as possible available throughout the year. Lovers of pumpkin spice or lavender can customize their lattes no matter the month.

THE HART OF THE MATTER

Sustainable choices in the 21st century have become easier with items like reusable grocery bags and the prevalence of farmers markets. However, independent sustainability in the modern era can be almost as difficult as 100 years ago. Unlike a largescale farm that grows a variety of produce or has a large beef herd for cattle commerce, the modern homesteader provides for their small family or community.

Falynne and Jonathan Lockhart work daily to keep the crop-toconsumer chain as short as possible. Both veterans of the U.S. Navy, they were stationed at Fort Eisenhower during the pandemic. “We were both interested in self-sustainability,” says Falynne, “especially after seeing the shortages during the pandemic.”

The work is hard. Along with tending 65 animals including sheep, rabbits and turkeys, the pair grow vegetables in their garden and have an orchard for fruit production — including banana trees! Friends would ask about the homestead and loved hearing about it, but modern households don’t necessarily have the time or ability to take on that kind of production. “Lots of people are interested in knowing where their food comes from, but they just don’t have the resources [to do it themselves],” says Falynne.

So, they purchased seven acres in Harlem and started a homestead in 2021. “We didn’t have a name, and it wasn’t a business [at that point]. We were doing

property at 575 County Line Road. The permanent structure will display various foods and products of Hart & Hearth Homestead. Falynne uses their cottage license to make hand salve and her popular banana bread. “I’m always thinking, ‘How can I do this myself?’” she explains, “and I focus mainly on things I use.”

Each step of the process is intentional. The banana trees were planted to grow bananas for the bread. The natural animal byproducts are used as fertilizer and the goat’s milk is used to make soap. “My dream is to, one day, shear our sheep, spin the wool and crochet with it.”

As the Lockharts work diligently toward their ever-evolving dream of self-sustainability, they continue to share their knowledge and goods with those around them.

You can find them at farmers markets and at Hart & Hearth’s roadside farm stand throughout the season, making it easier for those around them to live with the same quality, healthy local products.
