A NOTE FROM THE

Editor Greetings, my beautiful Attentionistas. A new year has arrived, bringing with it a renewed sense of possibility, reflection, and inspiration. This moment—poised between what has been and what is yet to come— invites us to pause, reset, and step forward with intention. There is something quietly powerful about the start of a new year, especially when it unfolds beneath winter skies. Winter has a way of slowing us down just enough to notice the details: the textures, the layers, the contrasts between warmth and chill. It is a season that encourages creativity—not despite its cold, but because of it. In this issue, we celebrate the fashion, artistry, and imagination that flourish when temperatures drop, and style rises to meet the moment. From bold silhouettes to intricate details, winter offers a canvas unlike any other. For our cover feature, we are truly honored to spotlight Louise Dernier, a brand whose vision continues to shape and inspire the haute couture landscape across the grid. Sitting down with Louise Dernier allowed us a rare glimpse into the creative mind behind

the designs—where innovation, craftsmanship, and fearless fashionforward thinking intersect. Their work not only pushes boundaries but elevates the community as a whole, inspiring designers, models, and creatives alike. This issue would not be possible without the dedication and talent of our incredible contributors. Each page is a testament to collaboration, passion, and the shared love of fashion and creativity that defines Attention SL Magazine. To our supporters and subscribers, your continued encouragement and loyalty are the foundation upon which we build. Your belief in this magazine allows us to keep telling meaningful stories and highlighting extraordinary talent. As you turn these pages, we hope you feel inspired to embrace the season—to find joy in quiet moments, creativity in unexpected places, and warmth in the company of those you hold dear. Take time to relax by the fire, play in the snow, and celebrate the beauty of connection. Until next time, may you be healthy, safe, inspired, and truly blessed.

NOOBLING Kere writes about the world: Discoveries and mistakes By: Kere Delcon

I had a white Christmas in Kansas: three years ago, something I’d only ever dreamt of before – because here, in my first life, Christmas is in Summer. I don’t particularly like summer. I grew up near sandy beaches but never liked the sand. I don’t like swimming in anything I can’t see the bottom of – and although I’m brown, I burn. People always say to me “how can you not love summer?” I just prefer the cold. I always have. So, immersing myself in Second Life during my summer break is bliss, not just because it’s a white Christmas here, but because I can crank up my air con, close the curtains and forget for a while that it’s baking outside. Second Life™ is where Jingle Bells actually makes sense. Where we meticulously line up the snowroofs on our homes and scour our inventories for all those missing pieces of garland, stray pine trees and the stacks of unpacked parcels from Tannenbaums past. A. | 76 | ATTENTION SL

It’s comfortable and seamless for me now. I used to have to apply more thought to the opposites of the virtual world, but after so many years as a pixel person, I run on two calendars these days, virtually (pun intended) without any real thought. I find myself spelling neighbors without a ‘u’ – colors too. Unless I’m talking with my European friends and we call spell properly again (wink). It gets me thinking about how all this has worked so well for so long. The bringing of an extensive global community into a concentrated version of itself, where the best parts of us can be amplified and our differences celebrated – based in servers, keyboards and our imaginations.

WINTER WONDERLANDS

It’s not an easy feat, but the key perhaps – almost certainly – is because this is a user-created world. We learn where to adapt, how to communicate and how to run multiple calendars. We’ve figured out where our compromises need to be so that our differences don’t have to divide us.

Minister is amazing. Our elections were a disaster. Want some cake? This winter, having just rung in another year, we’re all just getting by. This summer, we’re doing the same. Make it as pretty damned close to perfect as you can. Happy New Year, neighbour!

I know this is waxing poetic. Nothing is perfect, but for a place that lets you be almost anything you want to be, alongside others doing the same but who might be from completely different places and backgrounds to you, Second Life is pretty damned as close to perfect as anything could be. I love your accent. Have you heard this song before? We don’t call it that in my hometown. Your Prime

LIVING COUTURE

In the ever-evolving world of Second Life™ fashion, where creativity meets technical mastery, Dernier stands as a bold expression of digital haute couture. Founded by designer Louise Dernier, the brand is known for its dramatic silhouettes, meticulous textures, and unapologetically powerful aesthetic. Drawing inspiration from real-world couture houses, iconic fashion, and the limitless possibilities of virtual design, Dernier consistently delivers pieces that feel more like wearable art than simple garments.

A. | 78 | ATTENTION SL

WRITER: NONGE KOOLHAAS PHOTOGRAPHERS: NEMESIS AZUL Louise Dernier graciously aggreed to sit down with us and opens up about her journey from creator to couture designer, the philosophy behind the brand, and the challenges of translating high-fashion principles into a virtual space. From the importance of texture and craftsmanship to the fear—and freedom—of pushing creative boundaries, she offers an insightful look into what it takes to remain innovative in Second Life’s™ competitive fashion landscape. This conversation reveals not only the mind behind Dernier, but also the passion and vision driving one of Second Life’s™ most distinctive fashion houses. WINTER 2026 | 79 | A.

A. | 80 | ATTENTION SL

Nonge Koolhaas: What inspired you to begin designing fashion in Second Life™? Louise Dernier: I always wanted to wear extravagant outfits in the music videos I created in Second Life, but I felt there was still a missing touch of haute couture. There were stores that made some interesting pieces, but it still wasn’t quite what I was looking for. It was from that sense of absence that the desire to study, improve, and create what didn’t yet exist was made. NK: How did you come up with the name Dernier? LD: I was very fond of a French singer named Louane — I loved both her lyrics and her voice. At some point, I realized that the French language itself carried an inherent sense of elegance. That’s when I came across the word “Dernier,” which means last or final. Later, I discovered that it was also a fashion term, and I believe that was exactly what I had been looking for: ‘The latest fashion.’ NK: How do you approach translating traditional couture design principles into virtual space? LD: My entire creative process takes time — from choosing the design to the moment of its release. I always strive to offer my best work, because I see myself creating art, not just another outfit. I love bringing my creativity to the table and crafting pieces rich in detail, texture, and care. I study each piece meticulously, because I want it to be well-crafted, produced with precision, and delivered

with the highest level of quality and authenticity for our clients. NK: What is your design philosophy when it comes to creating digital garments that stand out in a virtual world? LD: Dernier is a brand that values consistency, high-quality craftsmanship, and staying attuned to what is new — or timeless. Above all, we strive to create pieces that embody strength and grandeur. NK: How do you stay updated on the latest trends in both real-world and virtual fashion? LD: I love keeping up with fashion shows, award ceremonies, concerts, music videos, and browsing Instagram, because there’s always something that catches my eye. I also enjoy following the work of other Second Life designers — their creations constantly inspire me. NK: Can you describe your creative process from concept to completion for a new creation? LD: It’s something fun and full of challenges — each process is unique, yet it always comes with doubts and the fear of not being as interesting as the one before. But I always try to give my best and stay focused, reminding myself that everything will work out in the end. NK: How do you ensure that your designs remain unique while still appealing to the diverse tastes of SL’s global community? LD: Each designer has their own way of pouring their best into their brand. WINTER 2026 | 81 | A.

With Dernier, I strive to constantly improve, maintain a high standard of quality, and create products that haven’t been made for Second Life yet. I’m always aiming to offer something exceptional — something that makes every bit of effort worthwhile. NK: What role does texture, color, and fabric simulation play in your designs, given the limitations and opportunities of Second Life’s™ graphics engine? LD: Texture is essentially the key element of our creations — without it, the mesh is just a collection of polygons. One of the most important parts of our work is delivering textures that bring each project to life and give it meaning. I know there are limitations when it comes to fur, sequins, and similar details, and we always try to keep our clothing lightweight so it can be properly viewed on any computer. We also constantly face the challenge of working against time, events come with strict deadlines. Many times, we end up streamlining parts of our work so it can be seen and appreciated by everyone. NK: How do you balance artistic expression with the technical constraints of Second Life’s™ avatar customization options? LD: We strive to deliver diversity so that every segment of the female body feels well represented. We want all our clients to wear our creations and feel as though each piece was made uniquely for them. NK: What influences, both virtual and real-world, do you draw from when A. | 82 | ATTENTION SL

designing pieces for your collections? LD: Dernier draws from many influences, but you can especially see inspiration from Mugler’s iconic work in the ’90s. It was a remarkable era — it was powerful to see women portrayed not only as beautiful, but as warriors, as icons. In Second Life™, we see many creators producing incredible work, such as Rowne, Boataom, Ison, Merch/ Mutha, Cheerno, Kindex, Rich Fatale, and many others. These brands inspire us to keep improving. I don’t see them as competitors, but as creators I genuinely admire. NK: How do you envision your clothing line evolving in the future, especially with new technological advancements in virtual fashion? LD: I can’t even imagine exactly how that will unfold yet. I’m so consistent in my creative process that I believe new methods and approaches will naturally emerge as the need for more creations arises. I know I’ll have to study more and more as a designer, continuously growing with each new challenge. NK: What challenges do you face when creating high-fashion designs for a platform like Second Life™, and how do you overcome them? LD: I think the biggest challenge at first is the fear of how the public will react. At times, I like to create pieces that are outside the box and really let my creativity run free. But then the fear comes — the fear that it won’t be well received or that it might even be seen as something strange.

WINTER 2026 | 83 | A.

A. | 84 | ATTENTION SL

I try not to let myself get trapped in those thoughts. Instead, I focus on delivering my work and evolving, always offering the best I can with the knowledge I have at that moment. Often, the piece needs to be revisited, because what I know in 2024 won’t be the same as in 2025 — and likely not the same in 2026. And that’s how it will always be: a continuous, cyclical process of growth. NK: Are there any limitations in Second Life that you’ve had to work around in your design process? How do you innovate within these constraints? LD: Some of the limitations we face are challenges we always try to handle in the best way possible. For example, with fur, we add extra layers to simulate the strands; with sequins, we apply a subtle layer of glow particles to recreate their shine. These are just a few of the processes that are easier to explain. NK: What improvements or features would you like to see in Second Life™? LD: I would love to see the mobile platform improved, as it would give users more ways to access the game. I believe this would significantly increase the player base and bring greater visibility to all of us — store owners, bloggers, and creators in general. NK: What do you want Dernier to represent within the virtual fashion community? LD: I hope Dernier comes to represent the very best of haute couture, delivering truly iconic looks. I want its quality, textures, and designs to be praised and appreciated,

and for our brand to remain consistently creative and sophisticated in every release. NK: What strategies do you use to market your designs and ensure they reach your target audience? LD: We maintain a presence on social media so the public can discover our work and follow what we create. We also participate regularly in sales and events, always bringing new releases. NK: What role do collaborations with other creators or influencers play in promoting your line? LD: We have only a few collaborations, mainly because our deadlines are tight and we value having full autonomy over our work. The collaborations we’ve had, however, were exceptional — they gave us a refined understanding of teamwork while also being challenging, since working alongside other brilliant minds can be a bit chaotic. I’m grateful to Cheerno, Fashionism, and MVD for the collaborations and the valuable learning experience. NK: How do you incorporate feedback from your customers or fans into your design process? LD: The customer is the soul of the business — without them, Dernier wouldn’t exist. That’s why I make a point of listening carefully and reading feedback closely, analyzing every possibility so I can incorporate improvements and the audience’s perspective into each of our releases.

WINTER 2026 | 85 | A.

NK: What do you think the future holds for haute couture fashion in Second Life™, and how do you plan to stay at the forefront of this space? LD: Fashion is volatile — at any moment, it’s in a state of change. And just like fashion, Dernier is always evolving. We constantly strive to bring creations to Second Life that, in some way, carry a sense of haute couture impact, showing others that it is possible to create clothing that stands out and goes beyond everyday basics. Dernier is like a young lion — always changing, growing fiercer and braver with each step.

The Image as a Site of Power in Second Life™ By: Daniel Salvatore Salvetti

During the last few months, artificial intelligence has become one of the most sensitive topics within Second Life™. Not so much because of the technology itself, but because of everything it has disrupted: deeply rooted ideas about effort, legitimacy, authorship, and creative value. The debate has, at times, been particularly intense and, in many cases, more emotional than technical, because it does not speak only about tools, but about identities that have been built over many years within the virtual world. When the first artificial intelligence applications began to gain popularity, the reaction was almost immediate. Designers, photographers, bloggers, and creators were confronted with an uncomfortable question: what happens when a powerful visual result no longer reflects the time invested? What happens when an image can be generated in minutes, while others have spent years learning, refining, and sustaining complex creative processes? In Second Life™, this question carried particular weight—not because image editing was something new, but precisely because editing had always been there. For more than a decade, imagemaking in Second Life™ has been a conscious and deeply structured practice. Not merely as an aesthetic resource, but as a language that A. | 122 | ATTENTION SL

crossed through virtual fashion, beauty contests, modeling agencies, blogging, and everything that defined what was considered beautiful, aspirational, and desirable within the platform. My relationship with Second Life™ has developed within that context for more than ten years, moving through different roles—model, contest participant, blogger, brand collaborator, and photographer in constant learning—always from the same axis:

“As in real life, identity is not built through appearance, but through the soul. An avatar only becomes memorable when it ceases to be a digital body and begins to reflect the emotion, personality, and spirit of its creator.” the deliberate construction of a visual identity. Over time, the avatar ceased to be merely a representation and became identity. Year after year, that identity was refined, adjusted, and given coherence,

until it became a recognizable and consistent presence. In an environment where everything is mutable, sustaining an identity over time has become a value in itself. This journey was neither isolated nor exceptional. It belongs to a generation that understood very early

WINTER 2026 | 123 | A.

image, presence, and symbolic power meant within the virtual world. From that space emerged some of the most recognizable faces of an entire era. Among them, Mimmi Boa holds a central place. Rising from that pageant, she quickly became one of the most iconic faces of the fashion industry in Second Life™. Her image moved beyond competitions and settled into editorial agencies, visual campaigns, and commercial spaces across the platform. For years, her presence was constant on the vendors of countless stores and emerging designers, consolidating her name as a true visual brand.

on that, in a virtual environment, image is not an accessory, but a language and a form of symbolic capital. Over the years, some names managed to establish themselves not only as recognizable avatars, but as true brands built on coherence, presence, and continuity. Figures who, beyond trends or tools, knew how to sustain a clear identity and turn it into a reference. Within this historical context, it is impossible not to mention Frolic Mills, one of the most influential personalities the fashion industry in Second Life™ has known. As the founder of the most important beauty pageant in the platform’s history, his vision structured a professional system around modeling and established a standard for what A. | 124 | ATTENTION SL

Her case made one thing clear: when image is sustained with coherence and permanence, it can generate value, aspiration, and desire. It was not only about beauty, but about recognizable identity. Alongside her, other identities emerged that embodied aesthetic excellence long before current technical conveniences existed. Avatars such as Ponchituti Boucher, recognized for years for an exceptionally refined aesthetic even in the pre-mesh era, demonstrated that beauty in Second Life™ was a conscious construction—the result of judgment, sensitivity, and constant work on one’s own image. Within that same ecosystem, Carley Benazzi stood out. She began her trajectory in beauty contests, but her strongest projection took place within

editorial fashion modeling. Her consolidation was especially significant because, from the very beginning and continuing to this day, she has maintained a coherent visual identity as a dark-skinned woman at a time when aesthetic diversity was still scarce in virtual modeling. From the pre-mesh era to the present, she has consistently preserved the essence of her look and physical identity, navigating technical evolution without altering her visual character or diluting her recognizability.

completely different aesthetic. Her pale, almost ethereal skin and light features became an immediate visual signature. For more than fifteen years, she has sustained that same identity, allowing her to consolidate herself as one of the most sought-after editorial models of her time, working with the most important agencies and building an iconic presence based on coherence and visual recognition.

This long-term continuity was key in transforming her image into one of the most recognizable and consistent editorial faces in Second Life™, and ultimately into a solid and respected brand.

In the same way that these figures managed to stand out and consolidate their names within the visual imagination of Second Life™, there have also been—and continue to be—many other models, bloggers, misses, misters, content creators, and photographers who have distinguished themselves over the years.

In contrast, Xandrah Sciavo built an equally powerful identity from a

The visual history of the platform was not built by a handful

WINTER 2026 | 125 | A.

of names alone, but by a broad community that, from different roles, contributed judgment, aesthetics, and vision. Mentioning them all would be impossible—not because of a lack of relevance, but because of the richness and diversity of trajectories that have shaped the medium. My own path is inscribed within that same logic. Over time, the construction of my avatar ceased to be an aesthetic exercise and became a sustained identity process. That continuity, that patient work on image, eventually turned my name into a brand: Daniel Salvatore Salvetti. Not as an act of self-promotion, but as the natural result of having inhabited, for more than a decade, the same spaces, the same codes, and the same demands that defined an entire generation of virtual fashion in Second Life™.

A. | 126 | ATTENTION SL

For many years, that visual construction was closely tied to technical skill and to a concrete need within the system. Before the arrival of mesh, having an attractive avatar was not common. Those who managed to look good did so because they had developed a critical eye and an enormous creative capacity to work with limited resources. Virtual fashion in Second Life™ was then living one of its most intense moments: active agencies, constant competitions, and fierce competition to stand out. Image was capital, and visual excellence was the goal. That competitiveness generated a growing demand for increasingly elaborate images. Photographers emerged as a natural response to that need.

Photography became a bridge between what the avatar was inside the platform and what it could visually represent. There was a clear expectation of correspondence: that the avatar remained recognizable, that its identity was not lost in editing. Achieving this was neither simple nor accessible to everyone. Some exceptional professionals, thanks to their real-life editing experience, were capable of transforming a raw image without betraying its essence. The result was not another character, but the same avatar taken to its highest visual expression. That level of work implied hours, and sometimes days, of meticulous editing. That is why they were so sought after, and why their work carried real value. With the arrival of artificial intelligence, that balance was altered. Processes that once required long learning curves began to be resolved in less time—not because creative judgment disappeared, but because the tool had changed. For many, this felt like a devaluation of accumulated experience. Today, almost everyone can access artificial intelligence. But access does not guarantee vision. The tool has been democratized; judgment has not necessarily followed. Rendering an identity is not simply uploading an image and waiting for a result. It requires learning how to

communicate precisely, how to delimit, how to correct, how to insist. It requires understanding that identity is not preserved automatically—it must be protected. When an identity has been built over many years within the virtual world, translating it into artificial intelligence demands the same rigor that manual editing once required. There is a real risk of dilution, of losing defining traits, of visual blurring. Preserving the essence of an avatar requires time, constant testing, and deep learning. Identity, here as well, must be taught. WINTER 2026 | 127 | A.

of redefinition before finding a new balance. Second Life™ is no exception to that process. What remains intact, however, is its potential. New faces continue to emerge, new perspectives, and new ways of understanding fashion within the platform. Not with the same vision as fifteen years ago—because that vision belongs to another time—but with the same passion for image, expression, and identity construction.

Over time, the fashion industry within Second Life™ has also changed profoundly. Not necessarily for the worse, but undeniably in a different way. The intensity that for years sustained agencies, competitions, runway shows, and fashion weeks as true epicenters of the metaverse’s social life has transformed. Today, the context is different. The dynamics have shifted, and fashion no longer occupies the same central role it once held. Rather than speaking of loss, it may be more accurate to understand this moment as a stage of transition. Every evolution passes through phases

A. | 128 | ATTENTION SL

The tools have changed, the context is different, and expectations are new, but the need to create remains. At this point, artificial intelligence, advanced rendering, and the technical quality that mesh now offers should not be seen as a threat, but as an opportunity. Never before has Second Life™ had such powerful visual resources to build high-level experiences. Never before has it been so possible to offer events, runway shows, competitions, and visual proposals with a level of quality comparable—within their own language—to that of any realworld production. The real challenge is not the tools themselves, but how we choose to use them. Whether we commit to raising standards, professionalizing presentation, caring for collective image, and understanding that interest is

awakened when the experience truly deserves it. Fashion in Second Life™ does not need to imitate the real world, but it can aspire to the same level of rigor, demand, and attention to detail that makes a great event, a great runway, or a great editorial production memorable. As a community, there is the possibility—and perhaps the responsibility—to rethink how fashion events are presented, how agencies are built, how competitions are communicated, and how creative work is valued. Not from nostalgia, but from the awareness that visual quality, clear concepts, and careful execution are key to reactivating interest and participation.

article do not seek to illustrate the past or explain the present. They function as a declaration of intent. They speak of identity, process, care, and vision—constructed through years of exploration in search of who one becomes within the virtual world. Not only as an avatar, but as a sustained personality that does not exist apart from who we are in real life but rather grows in dialogue with it. They are an invitation to imagine what can be possible when new tools are combined with judgment, training, and shared creative ambition. Second Life™ has proven, time and again, that it knows how to reinvent itself. Fashion—as language, as industry, and as a space for encounter—can do so as well.

The images that accompany this

Not by returning to what it was, but by moving toward what it can still become. In the end, the tool has never been the center. Nor has technology. What defines each stage is the collective gaze that decides how to use what is available.

And that decision, now more than ever, remains in our hands.

MODEL BEHAVIOUR By: Nonge Koolhaas

Between Myth and Temptation: Excelsior Models Management Redefines the Virtual Runway In an era where fashion increasingly exists beyond physical space, Excelsior Models Management has positioned itself at the forefront of digital storytelling. Through two distinct yet interconnected virtual fashion shows — Orphic Fashion Show and Live Your Sin; Virtual Fur Is Pure — the agency crafts a narrative that explores identity, transformation, and modern desire. Rather than functioning as isolated presentations, these shows unfold as chapters of the same story, revealing Excelsior’s commitment to innovation, artistry, and model-driven expression. A. | 170 | ATTENTION SL

Chapter One: Orphic Fashion Show Orphic Fashion Show serves as the audience’s entry point into Excelsior’s virtual world. Rooted in mythic undertones and creative rebirth, the show feels less like a runway and more like a moving tableau. From the opening moments, the atmosphere is light, fluid, and contemplative, evoking a sense of freedom that mirrors the spirit of artistic exploration. Stylistically, the presentation leans into bohemian influences, with flowing silhouettes, floral elements, and a relaxed approach to form. These references feel intentional rather than nostalgic, drawing

from the past while remaining grounded in contemporary digital fashion. Each look is given time and space, allowing texture, motion, and mood to guide the viewer’s attention. Excelsior’s models play a central role in shaping the experience. Their movements are unhurried and confident, emphasizing presence over performance. Rather than simply wearing the garments, they embody them, transforming each appearance into a quiet act of storytelling. The virtual setting enhances this effect, dissolving traditional runway constraints and allowing fashion to exist as atmosphere and emotion.

WINTER 2026 | 171 | A.

A Seamless Transition While Orphic Fashion Show establishes softness and introspection, it also lays the groundwork for evolution. Excelsior Models Management uses this first chapter to introduce themes of selfdiscovery and creative freedom, setting the stage for a dramatic tonal shift. The transition between the two shows feels deliberate, signaling not a departure, but a transformation.

Chapter Two: Live Your Sin; Virtual Fur Is Pure Live Your Sin; Virtual Fur Is Pure arrives with striking contrast and unapologetic confidence. Where Orphic feels like dawn, this second presentation unfolds at night, embracing glamour, indulgence, and theatricality. The digital runway becomes a space of heightened expression, where fashion asserts itself boldly.

Virtual fur serves as both a visual anchor and a conceptual statement. Luxurious in appearance yet ethical in execution, it symbolizes a future-facing approach to fashion — one that values innovation without sacrificing impact. The textures and silhouettes command attention, reinforcing the show’s message of empowerment and control. The models move with deliberate intensity, their presence amplified by the virtual environment. Confidence becomes the defining feature, as each look is delivered with authority and individuality. Excelsior’s direction allows this strength to shine, highlighting the versatility of its talent and their ability to navigate vastly different aesthetic worlds.

Excelsior Models Management: Vision and Versatility Together, these two shows present a cohesive portrait of Excelsior Models Management as an agency driven by storytelling and vision. Rather than prioritizing spectacle alone, Excelsior centers its work on narrative depth and model empowerment. The agency’s ability to balance softness with strength, restraint with indulgence, demonstrates a nuanced understanding of contemporary fashion culture. The virtual format is not treated as a limitation but as an opportunity. Excelsior embraces digital space as a realm where creativity can expand, allowing fashion to exist beyond physical constraints. This approach positions the agency as both adaptive and forward-thinking, ready to engage with the evolving landscape of the industry.

Looking Ahead With Orphic Fashion Show and Live Your Sin; Virtual Fur Is Pure, Excelsior Models Management offers more than a glimpse into virtual fashion — it offers a philosophy. These presentations suggest a future where fashion is experienced as narrative, where models are storytellers, and where digital spaces invite emotional connection. As the industry continues to redefine itself, Excelsior’s work stands as a reminder that innovation is most powerful when guided by intention. Between myth and temptation, the agency has carved out a distinctive voice, one that promises continued evolution and creative leadership in the virtual runway space.

Chef’s

KISS –Real Recipes from a Real Chef– WRITER: RAFAEL SINAVVA

The cold of winter calls for thick, hearty meals. That doesn’t mean it has to be unhealthy. Pairing these with fruits or salad is a perfect pick-me-up for those chilly winter days. Grill Pan Honey Glazed Steak Strips Ingredients: 1 lb steak (sirloin or flank), sliced into thin strips ¼ cup honey 2 tbsp soy sauce 1 tbsp olive oil 2 cloves garlic, minced ½ tsp black pepper ½ tsp salt ½ tsp paprika (optional)

Instructions 1. Make the Marinade: In a mixing bowl, whisk together the honey, soy sauce, olive oil, minced garlic, black pepper, salt, and paprika (if using). 2. Marinate the Steak: Add the steak strips to the bowl and toss to coat well. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor). 3. Prep the Grill Pan: Heat a grill pan over medium-high heat until hot. Lightly grease with a bit of oil or nonstick spray. 4. Cook the Steak Strips: Place steak strips in a single layer (in batches if necessary). Grill for 2–3 minutes per side, or until nicely seared and caramelized. 5. Rest & Serve: Remove from heat and let the steak rest for a few minutes. Serve warm with rice, roasted vegetables, or stuffed in wraps or sandwiches. Chicken Coedon Bleu Ingredients 4 boneless, skinless chicken breasts, pounded thinly (about 1/4 inch thick) 4 slices provolone or fresh mozzarella cheese 4-6 slices prosciutto or Italian salami 1/2 cup all-purpose flour, for dredging 2 large eggs, beaten with a splash of milk 1 cup Italian seasoned breadcrumbs (panko can be used for extra crunch) 2 tbsp olive oil (for pan-frying) or cooking spray (for baking) Salt and pepper to taste Optional: 1 tsp minced garlic, 1 tbsp Italian seasoning, fresh basil leaves Instructions: Prepare the Chicken: Place each chicken breast between two sheets of plastic wrap and pound it to an even 1/4-inch thickness. Season both sides with salt and pepper. Assemble the Filling: Lay a few basil leaves (if using), one slice of provolone or mozzarella, and 1-2 slices of prosciutto on each flattened chicken breast. A. | 178 | ATTENTION SL

Roll the Chicken: Roll the chicken tightly around the filling, starting from the narrow end, to form a compact roll. Secure the roll with one or two toothpicks or kitchen twine to prevent it from unrolling during cooking. Breading: Set up three shallow dishes: one with flour, one with the beaten egg mixture, and one with the Italian seasoned breadcrumbs. Season the breadcrumbs with extra Italian herbs if desired. Coat the Chicken: Dip each rolled chicken breast first in the flour, then in the egg wash, and finally coat evenly and thoroughly in the breadcrumbs. Cook: Baking method: Place the breaded chicken rolls, seam-side down, on a lightly greased or parchment-lined baking sheet. Bake in a preheated oven at 350°F (175°C) for 35-45 minutes, or until the internal temperature reaches 165°F (74°C). Pan-fry method: Heat olive oil in a skillet over medium heat. Briefly brown the chicken rolls on all sides (about 4-5 minutes total). Transfer the browned chicken to a baking dish and finish cooking in a 400°F (200°C) oven for about 25-30 minutes, until cooked through. Serve: Remove the toothpicks or twine. Slice the chicken rolls and serve immediately, perhaps with a simple pan sauce made from butter, a little flour, milk, and parmesan cheese. WINTER 2026 | 179 | A.
