Protein Egg Bites

Prep Time: 10 minutes Cook Time: 15 minutes Servings: 1 dozen Ingredients 8 eggs ¾ cup cottage cheese ½ tsp fresh thyme leaves Salt and pepper 4oz Celebrity Goat Original goat cheese 12 Rutherford and Meyer Peppercorn crackers Instructions Preheat oven to 375 degrees F. In a large bowl combine eggs, cottage cheese, thyme, salt and pepper. Whisk well until fully combined. Stir in goat cheese. Line a 12-hole muffin tin with liners. Place one cracker in the bottom of each liner. Divide egg batter evenly into each liner. Transfer to oven and bake 15 minutes, or until center is just set. Remove and serve immediately.
