Made from whole milk (raw or pasteurized) from Manchega ewes grazing in the Castilla La Mancha Region of Spain. This DOP cheese has a nutty, sweet aromatic flavor. The paste is white to yellowish, the texture is firm and compact occasionally dotted with a small eye formation.
