Efficient space utilisation with small footprint

TODDART are Australia's premier metal fabricators, engineers and suppliers of food service equipment. Founded in Queensland in 1959, Stoddart now manufacture and import a large range of equipment for food service applications in their 22,500 m2 manufacturing facility in Brisbane. In addition, Stoddart’s warehouses and sales teams in Sydney, Melbourne, Adelaide and Perth ensure all regions of Australia are covered. With over 50 years in the marketplace, it is incredible to see that Stoddart are still innovating and leading the industry forward. In the modern catering and food service sector, there is a capital element to be considered: space organisation. To reduce operational costs, allocated space has been getting smaller. To address this issue requires a new way of thinking about equipment: multi-function, efficient, space saving. In one word: Kompatto. Being launched by Stoddart in March, the Kompatto comprises all the cooking modes of a great professional oven, while packing them into a 519mm wide

16

Australian Hospitality Annual 2018

footprint. This is space optimisation at its finest, utilising 40% less space than a conventional combi oven, allowing more work space without any loss in production. Although considered to be of superior quality, “dry” steam is not always suited to every food type and desired result. When cooking large food items or

food with particularly dense fibres, it is advisable to use steam with the proper degree of hydration and penetration, which will cook the food faster while preserving the tenderness. So far, only patented Steam Tuner system provided by the Kompatto oven can deliver options for steam. Kompatto ovens allow the user to determine both the QUANTITY and the QUALITY of the steam in the cooking chamber. The Steam Tuner system allows the user to adjust the degree of steam hydration to the precise level of dryness or humidity to provide the desired result. Also, the Kompatto’s unique Meteo humidity control system allows for precise and efficient water consumption with minimal waste. Additionally, the water needed to reduce steam condensation is used in a more economical way, reducing consumption even further. Like all Stoddart products, the Kompatto is a robust unit that is built to last and is therefore confidently backed with a solid 24 month warranty. To discover more about this unique product, or to see a demonstration in one of Stoddart’s operational demonstration kitchens in each state office, call 1300 79 1954 or email info@stoddart.com.au www.hospitalitydirectory.com.au

Small in size -

Big in stature The Kompatto oven features a much smaller steam generator than those fitted on traditional combi ovens. The micro generator reduces energy consumption to just 1 kW. Overall saving is considered both in terms of money and environmental friendliness.

Henry and Hetty have a new home at Ronald McDonald House Westmead

R

onald McDonald House Westmead (RMHW) was first established in 1981 and has since provided a warm and friendly home away from home for almost 12,000 families with seriously ill children receiving treatment at The Children's Hospital at Westmead. By staying at RMHW, families remain connected, and parents and carers can better communicate with their child's medical teams. Families can give each other the moral and emotional support needed to get through their child's illness. They can form relationships with other parents going through the same or similar experiences, and with staff and volunteers who provide support throughout their stay. The original House at Westmead had 18 rooms, plus 5 units, accommodating 109 people per night. Sadly in 2017, more than 400 families had to be turned away with

18

Australian Hospitality Annual 2018

the House at capacity. In February 2018, the doors to a new, larger 60-room House opened with space to accommodate 1,360 families per year so that turning away families has become a thing of the past. As part of the re-opening Edco was invited to help equip the new House with janitorial equipment and vacuum cleaners. As an Australian family owned company, Edco was delighted to be able to donate

this equipment to help assist other Australian families in their time of need. The result is that the new Ronald McDonald House Westmead is stocked with the best Edco cloths, mops and buckets, and a great collection of the finest Henry and Hetty vacuums. The Henry and Hetty not only meet the high standard required by such an important healthcare provider, but provide the children and families a chance to see a happy, smiling face every time the cleaning volunteers pass through the building. Edco congratulates Ronald McDonald House Westmead on their wonderful new House and would encourage anyone who would like to know more about the House and the important work they do to visit their website www.rmhc.org.au/westmead or call them directly on 02 9806 7111.

Top 10 Reasons for Upgrading Your Cash Register to a Touchscreen POS

here once was a time when the role of a cash register was simply to store cash and tally up the sales at the end of the day. And while, for many hospitality venues, this remains a key priority of their point of sale equipment, consider the following benefits of upgrading to an integrated touchscreen POS terminal: Tighter control on pricing – no guesswork With complete menu itemisation, correct registration of meal options and easily configurable fixed prices, you won’t need to worry about your staff inadvertently undercharging. Saves time and reduces staff order-entry errors Detailed order entry at the POS means no bits of paper are misplaced, and order requests are not ‘lost in translation.’ Order accuracy improves barista and kitchen efficiency Improved order entry accuracy and integrated communication between the POS and the kitchen also enhances food and beverage production efficiency, reducing waste. Detailed table bill tracking When it comes time to pay the bill, an integrated POS provides an accurate, itemised summation of all that has been purchased, so nothing gets forgotten. Accurate historical sales reports improves business analysis One of the keys to maintaining a successful hospitality venue is the ability to properly analyse your sales data, so you know what you are doing well and where you can improve. Comprehensive reporting from your POS system is crucial!

6. Manage customer loyalty and promotional initiatives Your POS system allows you to automate and effectively manage in-house promotions and customer loyalty initiatives. More importantly, you can measure their success. 7. Examine staff performance and increase security Evaluating waitstaff activity helps you to improve training and incentivise your operation. Your POS also lets you limit control of specific functions to key staff or management. 8. Enhances customer perception of your business The improvements that an integrated POS system will make to your business will be tangibly evident to your customers. Service speed, accuracy and quality can all be improved with the aid of the right POS technology. 9. Operational improvements and easy staff training A modern, graphical interface makes POS navigation far more intuitive. Training new team members is also simplified. 10. Use your POS as an active advertising tool The latest touchscreen POS terminals can be fitted with LCD customer display panels capable of sharing high quality graphic images, providing you with endless promotional opportunities. A properly configured integrated point of sale system is much more than a ‘supercharged’ cash register – it is a vital hospitality management tool. If you are looking for a new POS system for your bakery, bistro, café, fast food outlet or restaurant – consider Uniwell4POS.

KITCHEN EXHAUST GREASE = MESSY COSTLY AND RISKY How would you like to save some money, not waste your money and reduce reduce your your risk of fire?

F

irst the whole problem must be understood….. The grease goes into / through The grease goes into / through filters, through canopy hood and up ducts chimneys and then into fans and even onto the roof…..all a mess for someone to clean!!! Your filter cleans can be either using a filter exchange company or your staff clean in house, it’s an ongoing and time-consuming costly task. Filter exchange typically is done for all filters and sometimes this can be too frequent ie wasting money or not frequent enough causing dirty systems and load on fans. Often filter exchange companies arrive during service time and this in itself can be disruptive. In house staff cleaning is the same costly process with labour, water, chemicals and maintenance of the dishwasher. Damage to the filters through the cleaning process means ongoing replacement. Food Safety Act and Australian Standard 1851 state these Australian Standard 1851 state these filters filters must be cleaned regularly so itbe cant must be cleaned regularly so it cant be neglected neglected Current honeycomb filters are not allowed in many parts of the world and new Australian Standards now sometimes require UL1046 approved frames to act as a flame barrier. Countries like the USA and UK require them as mandatory as they know they protect the kitchen exhaust system better from fire One Oneproblem problemisisthe themajority majorityof ofyour your grease isn’t being stopped, most filters only stopping between 20-30% of the airborne grease, allowing the rest to pass through building up throughout throughoutthe the exhaust system and even greatly effecting the airflow and operation of your fan. Its your responsibility to know what the build up is like and if the thecleaning cleaningsolution solution has been done frequent or properly. The reality is that every day in Australia / across the world, there are restaurant owners dealing with great loss of income and stress due to fires. The cleaning industry industryhas hasunscrupulous unscrupulous 24 18

people who will clean only what they know can be easily seen….. Incomplete duct cleans are a waste of money and more often than not, many owners are not getting what they have paid for or what insurance requires meaning claims void and rejected. The fine print can be where you yourself can be still liable as it states what was cleaned and doesn’t mention what was not. Even Evenaarestaurant restauranthaving havingduct ductcleaning cleaning may have a fire even weeks after their system is cleaned and its normally due to lack of quality and or access which is difficult.. sometimes very difficult In InUSA USAand andUK UKspecific specifictraining trainingand and certifications and inspections are being implemented to ensure kitchen exhaust cleans are done to a proper standard for safety…. people have been injured and died from kitchen exhaust fires and year. millions of dollars is lost every year Australia has very limited guidelines as required.. to a level of cleanliness required Parts Partsof ofkitchen kitchenexhaust exhaustsystems systemsshould should be inspected and subjected to a routine service on a monthly basis according to AS1851 include checking filters and hood canopy….. The ducts and fans annually… But these are minimum requirements and its highly advised that more frequent may may be required. Depending if a restaurant

operates 6 hours, 12 hours or 24 hrs , and also what style of cooking….. char grills and fryers etc. Checking hoods and canopy’s monthly can prove to be a huge cost on staff time with 60-80% of grease travelling through to these areas, its hard to keep up. Grease also accumulating in the filter tracks can be very time consuming for staff to clean and remembering to do so monthly for fire safety. Grease build up also on a fan will affect airflow / not remove heat out of your kitchen and cost more in electricity and most likely experience premature failure costing thousands in replacement. This can canhappen happenbetween betweencleans cleansand andgo go unnoticed unless the restaurant owner checks frequently themselves. A fan failure also can cost a lot in lost income and not normally covered by insurance There is however a new solution to all this…..winner of Best New Hospitality Product Aware for Fine Foods Australia…… SHEPHERD FILTERS, stops up to 98% of grease at the filter and reduces grease entering your kitchen exhaust system, reducing costs and risk of fire. An easy to use disposable grease filter made from 100% Australian wool and and fire safety approved ,environmentally friendly being made from wool which is a renewable resource, the filters meet Australian Standards, UL1046 flame tested and HACCP food safety approved No more second guessing to know if you are cleaning too often or not enough, enough and , andaaclean cleansystem systemmeans meanspeace peaceofof mind…… mine…… Shepherd Filters protects and reduces the extensive costly filter and hood/ duct and fan cleaning required and insurance can be maintained with simple minor cleans/ certifications at greatly reduced costs Ultimately reducing your risk of fire! Is Your Restaurant At Risk? By Katie Das, global marketing manager, Diversey Consulting

Y

ou can’t change a customer’s first impression of your restaurant thus it’s important to place a high priority on food safety in order to best protect customers, employees and the reputation of your business. Individual incidents of foodborne illness may be somewhat commonplace in today’s world, but widespread outbreaks can be front page news and result in negative backlash, causing sales to plummet. Improper cleaning and sanitisation of foodservice equipment, surfaces and utensils were clearly identified as the most significant factor in the food production process for foodborne illness. Poor hand washing, failure to clean and sanitise a cutting board between uses or using the same preparation table with raw and cooked foods are all examples of how easy it is to move bacteria around the kitchen and create dangerous food safety risks. Restaurant owners and managers can ensure their facility is in top shape by following these simple rules: 1. Choose the right cleaning products and tools 2. Create and follow a schedule for cleaning food contact surfaces 3. Reinforce practices with training Every restaurant operator wants a spotless record when it comes to instances of foodborne illness. Keeping kitchen and dining environments clean not only increases safety but encourages customers to return again and again. We get the most out of our internal resources and industry experts for their insights on oats to oils and their applications in the kitchen. Also, we have created an initiative which encourages all chefs to innovate and create something we’ve never seen before, and to design those dishes they’ve only ever dreamt about. As a celebration of culinary excellence, Chefology was founded to fire up the passion of chefs across the country. As we challenge the innovation of food and build on our support system, keep an eye out for our ingredients for success. More recently, we looked into the benefits of changing your menu seasonally and according to a recent report by Salesforce, the theme of seasonal menus increases the overall orders placed within restaurants by 26 per cent. Meaning, more money being invested back into your business and not at your competitors. Along with increasing your venue’s bottom-line, switching up your menu also benefits your relationship with diners, and most importantly, your staff. This is because regular new menus keep your customers excited, while your staff’s engagement increases due to the need to be creative in the kitchen with fresh ingredients. WHAT GETS YOU FROTHING? Almond Breeze Barista Blend is dedicated to pushing the industry forward and in this series we are profiling the people who are leading the charge. First up, we meet Raihaan Esat Raihaan Esat is an economics and finance graduate from QUT and has been in the Coffee industry for over 10 years. Raihaan considers himself a student of knowledge in roast profiling, quality control systems, blending, competition preparations and barista training. Raihaan is proud to join the ICT team and is looking to work with coffee roasters of all shapes and sizes to make them unique!

"I have seen nothing but love and respect flow to anyone involved in coffee" What gets me frothing? Coffee has become such a diverse industry so when it comes to talking about what excites me, the question is, where do I start? I’m going to start from the beginning, by honouring the people at the origin of coffee, the farmers; without them where would we be? Over the past year, I have had the incredible good fortune of been involved in sourcing coffee from some truly progressive farmers. Their insistence on producing quality comes from the desire to share their love for the land and the coffee that springs from it! What’s been good in the coffee industry in 2018? I wish I could give a simple answer to this question and say that technology improved five fold, or that farming techniques improved 10 fold. However, although these may be true, I feel as though I would be doing the industry a disservice if I did not mention the apparent 34

Australian Hospitality Annual 2018

shift in perspective that I have noticed over the past year. There was a time where the small and the artisanal businesses were regarded as the only true representation of coffee, and large corporate structures were seen as the enemy to progressive ideas. Things, however, are changing. In my hometown at least, I have seen nothing but love and respect flow to anyone involved in coffee, the corporate giants coexist in harmony with the micro coffee artisans. One cannot exist without the other; it’s a symbiotic relationship. Why is this an exciting time to be part of the industry? One word ‘differentiation’. I feel as though in the last five years we have been building up to something, something beautiful. We have spent endless amounts of time and energy improving our skills in farming, roasting and coffee preparation and information on all of this is no longer held on to by the elite minority, but is shared freely. The result of this? Where once the industry seemed to be moving in a homogenous direction, now businesses are finding it increasingly easy to try something new, different and adventurous. Take for instance the alternative milk products. In the blink of an eye we have seen the emergence of a great variety of options, each with its own uniqueness that is only matched with its unashamed acceptance of it! What does the future hold? This is hard to say, but the sad truth is, climate change is a challenge for coffee growers. For us on the service side of the industry, it’s in our best interests to safeguard our future by contributing to research into new and sustainable agricultural exercises, new coffee varieties and ethical practices. This is probably the industry’s most immediate concern. I have no doubt that with the continued effort of coffee producers, supported by collaborations with roasting professionals; we will overcome these challenges in the not too distant future! www.hospitalitydirectory.com.au

In an effort to improve their individual production and marketing activities, local farmers banded together to establish the Bega Co-operative Creamery Company on July 15 1899. The Bega Factory began production in 1900 as demand grew for the rich, creamy products made in the traditional way. Bega has been a leading brand in the Australian market for over 40 years in both processed and natural cheddar cheese products. Ingham’s centennial celebration – iconic Aussie poultry products supplier hits 100 year landmark

F

oodservice professionals all over Australia recognise the Ingham’s name as synonymous with quality, consistency and value. These attributes, combined with the company’s extensive product range, have consolidated Ingham’s longstanding reputation as “the professionals’ choice” – a reputation built on solid foundations. “In an era where the word ‘icon’ is often overused, Ingham’s is one of the select few Australian food brands which can lay claim to be a true Aussie icon,” says Ingham’s Group Limited Sales and Marketing Director Jonathan Gray. “It has certainly stood the test of time. This year is Ingham’s 100th birthday and the foodservice sector is set to share in our centennial celebrations.” The story of how a small family business grew to become one of Australia’s leading poultry products suppliers began in 1918 in Casula in Sydney’s southwest. It was there that Walter Ingham started his small family farm with one rooster and six hens. From these humble origins and with the hard work of thousands of everyday Aussies, Ingham’s grew to become one of the nation’s largest producers of chicken and turkey. Walter’s sons Bob and Jack expanded the business through both acquisition and growth. In 1958 Ingham’s built its first processing plant at Casula and began innovating with new styles of packaging and processing. By the 1960s, Ingham’s was supplying major retail and QSR customers and as the business expanded so did its processing capabilities. As the 1960s gave way to the 1970s, the Ingham’s brand became a household name throughout Australia. The launch of KFC into Australia in 1968 exemplified consumer demand for chicken in the out of home market and by 1976 Ingham’s and KFC had entered into a supply partnership. By the 1980s, Ingham’s was leading the way in developing innovative value-added poultry products for both the retail and foodservice markets. In 2001 it established the country’s largest processing plant of 40

Australian Hospitality Annual 2018

the time in Murarrie, NSW, utilising leading edge production, quality assurance and supply chain technologies. Today Ingham’s employs more than 8000 people, operating a fully integrated farming, primary and further processing poultry business building on its proud history of quality and customer service. “As Australian society has changed over the past 100 years, so too has Ingham’s – successfully evolving our product range, supply capability and business structure to meet the changing times and tastes of

Australia’s retail and foodservice markets,” emphasises Jonathan Gray. “One thing that hasn’t changed though is Ingham’s commitment to excellence and our reputation for consistently delivering quality poultry products. It’s this commitment which has sustained the brand over the past 100 years enabling it to endure and prevail through good times and bad. “The traditional values upon which Ingham’s built its success still hold true today. Certainly all of us can agree that is something well worth celebrating!”

Chance to win $10,000 Ingham’s Foodservice is inviting you to share in its 100th birthday celebrations by giving you three chances in 2018 to win $10,000 worth of Visa Pre-Paid Gift Cards – helping to build your business today and into the future*. Simpson Farms

Farmers and Innovators. Simpson Farms Pty Ltd is an Australian owned and operated family business based in Childers, Queensland. The story of Simpson Farms begins back in 1969, when husband and wife team Ron and Fay Simpson started up a tomato and sugar cane operation near Bundaberg.

B

y the late 1980s, the couple had expanded their operation and founded Goodwood Plantation, which has since grown to become Australia’s largest producing avocado orchard. Presently managed by the next generation – Ron and Fay’s four daughters and their husbands – Simpson Farms is the country’s largest producer of fresh pack avocados, and the property now encompasses 900 hectares of orchard. Producing over 2 million trays of fresh product at full maturity, Simpson Farms is also Australia’s largest producer of processed avocado products, producing over 1,500 tonnes annually. Director John Walsh recently described how it goes even deeper than that. “Having the land,” says Mr. Walsh “is the most important base for our business… Simpson Farms is a farming family and values its connection to the land and the trees and its place in the farming community.” He describes the company as having “strong ties to the rural industry and the community around it,” and this is clearly evident in the mindful way Simpson Farms operates. Harvesting at Simpson Farms is done by hand, with cherry pickers and a ground crew, and only when strict maturity standards have been met. The company keeps its processing facilities close to the orchards themselves, to minimise cost and impact on the environment. And it focuses on safety and quality at every step in the chain. Simpson Farms focuses its efforts on the planting, growing, harvesting and packing of Hass, Shepard, Wurtz and Reed Avocados. Once picked, the fruit is returned to either of the company’s two accredited packing facilities. The Goodwood packing operation boasts a 4500 square metre facility, featuring the latest computerised grading equipment including a new “Com42

Australian Hospitality Annual 2018

pac” 6 lane sorter, one of only 6 in Australia, in-line sticker application and a sealed loading dock, which provides access to the 360 square metre cold room. Another 216 square metres of cold room space is used for pre-cooling and bin storage. The Goodwood shed does pre-pack avocados for the retail market. As Simpson Farms’ primary fresh pack shed, the Goodwood facility is Australia’s leading avocado packing facility. As any company working in the food sector can attest, safety and quality are top priorities. At Simpson Farms, this is no exception. In all of its operations, the company maintains a high standard of quality by adhering to strict HACCP guidelines and food grade processes. Simpson Farms is accredited to SQF 2000 level 3, and both its packing facilities are ICA-03 and ICA-19 accredited. As a national distributor, Simpson Farms employs strict treatment regimes to ensure compliance with interstate protocols whilst providing a safe product for the national market.

In addition to enjoying a vibrant workplace culture, Simpson Farms also benefits from long term relationships with both its suppliers and its customers. We have suppliers and customers that work closely with us to improve and develop the chain required to get the products to the marketplace.” The company takes customer needs into account when developing new products; this is an “integral in all aspects of the business.” This drive for innovation and keen understanding of the marketplace has kept Simpson Farms at the leading edge of technology, and has led to the creation of unique products, such as the company’s Chunky Avocado and Seasoned Avocado Pulp designed to be used as a fresh avocado replacement product with certainty, no labour, and no wastage. If there is a message Simpson Farms would like to convey, it is that being a market leader in its field has not made it complacent. The company is committed to delivering the highest quality in its products, and is continually evolving and improving to meet that goal. This is why we keep investing in HPP technology (High Pressure Processing) cold pasteurisation. Our new state of the art manufacturing located in Bundaberg Qld commenced operations in April 2017. This has enabled Simpson Farms to now HPP (High Pressure Processing) cold pasteurisation their entire range of products. Simpson Farms constantly aims to diversify into new markets and products… and will continue to work hard to meet customer demands and provide security for its staff, suppliers and customers for the future. If you are from the Foodservice, Corporate, QSR, Industrial or Export arenas please contact us we are here to make both our businesses a success. www.simpsonfarms.com.au

For the biggest of jobs, the Crafter Runner is engineered for heavy-duty use and available in two different wheelbases with a load space of 9m³ or 14m³. We put a lot into our vans even before you do – like the latest infotainment features including AppConnect – and Bluetooth®, and driver comfort features including ergonomic height adjustable seats with lumbar support, reach and rake adjustable steering wheels, large heated electric exterior mirrors and power windows. organized, and to ensure every trip is a safe one. Volkswagen offers innovative driver assist and safety systems such as Hill Start Assist, Cruise Control, MultiCollision Braking, Fatigue Detection*, Forward Collision with City Emergency Braking*#, Electronic Differential Lock, Electronic Stability Program and more. Whether it’s the potent turbocharged petrol engine in our Caddy Vans – now also available with a DSG transmission - or the efficient turbo-diesel engines available on Transporter and Crafter, all Volkswagen vans provide impressive fuel consumption while boasting superior performance and excellent torque; keeping your business moving and your wallet happy. Thanks to the 4MOTION all-wheel drive system and the optional mechanical differential lock, the Transporter TDI400 DSG is the most off-road ready vehicle in its class ensuring excellent traction, optimal handling and steering response even in difficult driving conditions. You can further make your Caddy Van and Transporter your own by choosing from window packages or door solutions, exterior colours, optional exterior and interior packages as well as a wide range of accessories. Large exterior side panels offer free advertising space for your marketing message too, making sure every part of a Volkswagen van is all about your business needs.

In the event you want to shuttle customers, we have got you covered: you can choose between the 7-seater Multivan and the 9-seat Caravelle long wheelbase. The Multivan is available in two wheelbases and two specification levels has been the people-moving companion for over 65 years. The Multivan offers more than just space, it also provides unparalleled flexibility. All rear seats slide along the rail system and can be removed. The individual swivel seats in the second row can be optioned with integrated child booster seats. Electric sliding doors come standard across the range, making the Multivan even handier. The Caravelle is our most practical people mover and can shuttle up to nine people in comfort. The modular system enables seats to be easily repositioned, and the double-folding 3-seater bench is especially handy as it can be removed to expand the luggage space in a matter of moments. The driver’s cab in the Caravelle is equipped to cope with every challenge a busy day has to offer. High-quality materials, 3-zone climate controlled air conditioning and an advanced touchscreen infotainment system ensures the Caravelle stands out. And the 3 years unlimited kilometers warranty as well as Volkswagen Roadside Assist come standard across the entire Commercial Vehicle and People Mover range. * Safety technologies are not a substitute for the driver’s responsibility of the vehicle. Not available on Crafter. # Available on Caddy Van and standard Multivan Highline and Executive only. ~ App-Connect is compatible for selected apps with the latest smartphone versions of iOS and Android. Optionally available on Caddy Van, Transporter and Caravelle, not available on Crafter, standard on Multivan
