Elke steursoort moet haar eigen karakter kunnen behouden. Dat is voor ons essentieel.”

Wat bepaalt voor jullie de kwaliteit van uitzonderlijke kaviaar?

“De kweek is de basis, maar de bereiding bepaalt of een goed product ook echt een uitzonderlijk product wordt. Wij werken volgens de traditionele methode, zonder franjes. Kaviaar is al eeuwenlang een luxeproduct; je hoeft het niet opnieuw uit te vinden. Na het wassen worden de eitjes mild gezouten volgens de malossol-methode, met maximaal 2,9 procent zout. Dat is nodig voor de bewaring, maar ook om de maturisatie en rijping op gang te brengen. Die rijping is cruciaal voor de uiteindelijke smaak.

Vervolgens verpakken we de kaviaar in grote moederblikken van 1,8 kilo, waarin het product kan rijpen. Daarna bekijken we per klant wat nodig is: een kortere of langere rijping, een bepaalde textuur, een specifiek smaakpalet. We stemmen dat af op het gerecht en op de voorkeur van de chef. Dat maatwerk is voor ons een wezenlijk onderdeel van kwaliteit.”

Why is this natural environment so important for flavour?

“A sturgeon is a bottom feeder. On a pebble bed, natural organisms develop that the fish actively searches for. That makes a significant difference. Of course, the fish is also fed, but this natural nutrition is essential for flavour development. If you farm in a uniform, covered environment, you often get a more neutral profile and the final taste differences between baerii, oscietra and beluga caviar become less distinct. Each species must be able to retain its own character. That is essential to us.”

What defines exceptional caviar quality for you?

“Farming is the foundation, but preparation determines whether a good product becomes truly exceptional. We work according to traditional methods, without unnecessary embellishment. Caviar has been a luxury product for centuries, there is no need to reinvent it.

After washing, the eggs are lightly salted using the malossol method, with a maximum of 2.9% salt. This is necessary for preservation, but also to initiate maturation and ageing. This maturation is crucial for the final flavour. We then pack the caviar in large 1.8 kg mother tins, where it can continue to mature. Afterwards, we assess each client’s needs: a shorter or longer maturation, a specific texture, a particular flavour profile. We tailor this to the dish and the chef’s preference.

Was there anyone who inspired you along that path?

“My grandmother. She made clothing all her life, with a precision and dedication I have never seen anywhere else. Her obsession with fit, her eye for detail, the way she spoke about fabric as if it were a living material. When I design a silhouette today, I hear her voice.

That heritage lives on in every piece we create.”

“Quality speaks for itself, or it remains silent. A woman immediately feels whether a fabric is right, how it moves, how it holds up through a season by the sea. We select our fabrics with the care of a haute couture atelier. Italian textile traditions provide us with world-class materials. Belgian craftsmanship gives them form, structure and character.”

What makes Belgian design so distinctive in an international market?

“Belgian design speaks a language that people around the world recognise without needing to name it. It is never ostentatious, never gratuitous. Every piece starts from a real question: what is this for, who is it for, what should it do? That discipline translates into silhouettes that work universally. No unnecessary ornamentation, no tricks. What you see is what you get, and what you get is right.”

You deliberately chose Saint-Tropez as your first home base. Why there?

“Saint-Tropez is not just another coastal town. It is a global stage where some of the most discerning people in the world come together. People who instinctively know what is right, who recognise quality without a second thought. If you capture attention there, you know you are holding something of value. For us, it was the only place to begin our story.”

And after four seasons in Saint-Tropez, you opened your first Belgian point of sale at La Réserve in Knokke.

“La Réserve is an address that embodies everything we create.

Ik werk op een hoog ritme, ik ben streng voor mezelf en wil altijd beter doen. Misschien ben ik nooit helemaal tevreden. Maar dit was zonder twijfel een levensproject.”

Wat wil je de komende jaren nog creëren?

“Ik wil zeker nog aan een nieuw boek werken, maar niet meer zoals vroeger. Ik wil trager werken, zonder harde deadlines. Ik zie dan wel wanneer het af is. Als je trager werkt en het publiek de beelden al leert kennen voordat ze in een boek verschijnen, krijgen mensen ook de tijd om er verliefd op te worden. Dat was bij ‘7’ minder het geval. Mensen kopen nu eenmaal graag wat ze al kennen.

Ik voel ook heel sterk dat ik de komende vijf tot zeven jaar opnieuw naar de essentie wil terugkeren. Meer natuurlijke schoonheid, minder forceren. Dat is voor mij vandaag de richting: beelden maken die rustiger zijn, klassieker misschien ook, maar die daardoor net langer blijven hangen.”

All the investments were entirely my own. That means you also need to take on other jobs in between just to make a living. In terms of time and finances, it was quite extreme. At the same time, I wonder whether the public is fully ready for such a book today. It is highly creative, each image was shot in a unique location and tells a different idea. Perhaps it will only be fully understood in a few years. It is forward-thinking, but it has also demanded an enormous amount of energy from me. When it was finished, I honestly felt empty. I work at a high pace, I am strict with myself and always want to do better. Perhaps I am never completely satisfied. But this was without doubt a life project.”

What would you still like to create in the coming years?

“I definitely want to work on a new book, but not in the same way as before. I want to work more slowly, without strict deadlines.

I will see when it is finished. When you work more slowly and allow the audience to become familiar with the images before they appear in a book, people also have time to fall in love with them. That was less the case with 7. People tend to buy what they already know.

I also feel very strongly that in the coming five to seven years, I want to return to the essence. More natural beauty, less forcing.

That is the direction for me today: creating images that are calmer, perhaps more classical, but that linger longer.”
