Wanneer wist je dat je de richting van sommelier wilde uitgaan?

Maar daar hadden ze geen extra handen nodig, dus kwam ik in de zaal terecht. Dat beviel me eigenlijk wel. Op school vond ik de zaal minder interessant dan de keuken, maar in de praktijk was het omgekeerd. Het directe contact met gasten lag me goed.

In aanloop naar mijn eindwerk verzamelde ik – op aanraden van mijn vader – wijnetiketten. Daar werd het zaadje geplant. Ik besloot een specialisatiejaar wijn- en drankenkennis te volgen. Wijn is zo divers: het omvat natuurlijk het proeven, maar ook geografie en geschiedenis. In het restaurant evolueerde mijn rol en ik groeide steeds meer naar het gastheerschap. Vandaag is wijn een gedeeld verhaal dat we schrijven samen met Gert en onze sommelier.”

Hoe staat jouw wijnkennis in relatie tot gastronomie?

“Wijn scherpt je analytische proefvermogen aan, hierdoor leer je hoe je smaken kunt analyseren en combineren. Een wijn kan op zich goed zijn, een gerecht kan uitstekend zijn, maar het is pas de juiste combinatie die zorgt voor een extra dimensie.

My role in the restaurant evolved and I increasingly developed into a host. Today, wine is a shared story that we write together with Gert and our sommelier.’

How does your wine knowledge relate to gastronomy?

‘Wine sharpens your analytical tasting ability, which teaches you how to analyse and combine flavours. A wine can be fine on its own, and a dish can be excellent, but it is the right combination that adds a true extra dimension.

From the start, Gert and I have been extremely focussed on the best food and wine pairings. By tasting a lot, each of us drawing on our own expertise, we have developed a natural symbiosis that has taken our understanding of taste to a higher level.’

1963… Topondernemer Léon Melchior behoort tot de drukst

bouwsector. Hij bouwde grote ziekenhuizen en kantoorgebouwen in België, Nederland, Duitsland en de Verenigde Arabische

Emiraten. Wanneer Melchior in de veertig is, raadt zijn arts hem aan om meer te bewegen. Melchior begint met jagen, maar al

1963… Top businessman Léon Melchior is one of the busiest entrepreneurs in Europe. He founded a stunning fifty-three

companies in different sectors, mainly in the building industry. He built major hospitals and office blocks in Belgium, the Netherlands, Germany and the United Arab Emirates. When in his forties,

Melchior’s doctor urges him to get more exercise, so Melchior starts hunting. But soon enough, hunting on foot becomes too

much of a bore for him and he therefore decides to buy a horse to ease the strain of heavy hiking. The very first horse to set foot

on Zangersheide ground is Richette, and without having planned it, Melchior’s passion for horses starts to develop... At that time

nobody could have guessed that this step heralded permanent changes for the world of showjumping.

In the ensuing years Zangersheide blossomed into a stallion station and breeding stud of global proportions and Zangersheide horses progressed to being Olympic Champions.

Ratina Z One of these figureheads of the aforementioned outcrossing was born in 1982. Ratina Z is a daughter of the Holstein-bred Ramiro Z and Argentina Z, who in turn is a daughter of the French Alme Z and the Hanoverian mare Heureka Z (winner of the GP of Aachen in 1970). Ratina Z would reach the status of top ambassador of Melchior’s sport stables and stud farm and throughout her career she has won an amazing three Olympic medals! Four years after the birth of Ratina Z, Melchior’s youngest daughter Judy Ann is born.

From her earliest childhood on Judy Ann has a passion for horses and riding and soon the first ponies start to arrive at Studfarm Zangersheide.

Yes. We have always been able to book the weeks we want.

We personally prefer Southern Europe in the spring and

autumn months. The booking process works extremely well, and it is a pleasure to log on to the booking system and book our next holidays. It’s so much easier than searching for rentals or hotels.

Do you dream of having your own Netflix series about ‘De Ronde’ like ‘Tour de France: Unchained’?

'We have already been in contact with Netflix. In that sense, the ‘Tour de France: Unchained’ was a blessing for cycling. It generates publicity among a wide audience. Because that is the real battle: we are fighting for the consumer's ‘time’. Twenty years ago, there was no Netflix, Disney+, Streamz or Amazon. At the moment there is certainly a strong momentum in cycling with a number of ‘Galacticos’ such as Tadej Pogacar, Mathieu Van der Poel, Mads Pedersen and Wout van Aert. There are a number of strong storylines, also in women's cycling with figures such as Vollering and Kopecky.
