Art, design, but above all travel, of course.

The world is slowly but surely freeing itself from the grip of Covid-19 in which we were stuck for more than a year. It is noticeable that everyone and everything is eager to get back to living their lives to the full.

We as the ASL Group are also totally ready for it. With the 4th edition of the Blue Sky Magazine, we are following a new direction in various areas. A new paper, which is of course printed ecologically - for every tree that is cut down for this purpose, two new ones are planted - a new design and also in terms of editorial content, we are going all out for everything that makes life beautiful. Art, design, but above all travel, of course.

We take you to charming Santorini, make a stop in the exclusive marina of Porto Montenegro and subsequently enjoy a culinary feast - thanks to the tips of Peter Goossens - in Bilbao. As if that were not enough, we joined Gert De Mangeleer on a culinary fantasy trip to Japan. 6 Michelin stars have never been so close to each other... The adventurous types will be able to warm themselves while listening to the reports on Brittany and especially when they will be able to canoe over the 101 lakes of Sweden, where the water is so clear that you can just drink from it.

6

You can also find purity in the photography of Marc Lagrange, who unfortunately died way too early. Together with his son Vincent, we will provide a fitting tribute. You will be able to discover this and much more in edition 04 of Blue Sky Magazine.

I would also like to stress that we are very proud of this magazine. It is a great communication tool for us as a company. We sincerely thank the creative team of Choisi - the creators of this magazine - as well as all the partners who helped to make this publication possible: the advertisers and members of the Blue Sky Club. I would also like to thank all the ASL Group employees for their dedication to the magazine year after year.

Enjoy reading and enjoy life!

As summer approaches, ASL is also getting really excited. After all, it will not only be a busy, but also a very exciting period. "On 30 June, the first ASL Fly Executive flight will depart from Brussels to Ibiza," says CEO Philippe Bodson. "Last year this initiative turned out to be a huge success," adds COO Ronald Sikora. "In 2020, we were finally able to operate 8 of the 9 planned flights. Only one was cancelled at the end of August due to the new corona surge. With an occupancy rate of about 90%, it was an unqualified success!

10
With ASL Fly Executive we aim for three target groups: leisure such as Ibiza, business destinations such as Zurich and events such as Art Basel or Mippim in Cannes.

At Liege Airport we are going to be the only Fixed Base Operator

How do you explain this?

Philippe: private aviation is the essence of our DNA. So, we know how to deliver a more than enjoyable travel experience to our passengers. That is also what ASL Fly Executive is all about. We firmly believe in the fact that there is a well-defined target group of people who, on the one hand, are turned off by the high budget of a private jet, but on the other hand, are not attracted by the low-cost model towards which traditional aviation is heading. Let's say those people who are used to buying a business class ticket. We can provide this group with a 'semi-private jet experience'. We are really the only ones in Europe who offer this service.

Ronald: Travellers were really enthusiastic last summer. People arrive in Brussels, where they can leave at a convenient time. For example, a flight is scheduled for Saturday morning at 9:30. They are welcomed in the 'royal lounge', where they can drink a coffee and have breakfast in a relaxing way. The aircraft is waiting for its passengers almost literally in front of them. They do not have to worry about their luggage at all. Almost everything is included in the price. Once they are on the flight, the double cabin crew offers a glass of champagne and some tasty snacks, together with the extra leg room and the noise reduction, a nice bonus. The cabin, which has a capacity for 30 or 40 people, is luxuriously finished and has an open feel, sinc e there are no hand luggage racks. In Ibiza, the minibus awaits them at the aircraft. The pleasant travel experience starts in Brussels with zero stress and starts at €495 per person for Brussels-Ibiza

As from August 2021, ASL Jet Handling will be the exclusive Fixed Base Operator for all business and private flights at Liege Airport. For this purpose we have built one of the most modern, safe and green General Aviation Terminals (with hangar) in Europe to ensure maximum service, comfort and efficiency. The finishing of the building is approaching its final phase. The most advanced techniques were applied to make the building as functional, efficient and future-proof as possible.

13
In our Skylounge in Liege, with its stunning view of the departing aircraft, we will be able to organise events and receptions with a capacity of up to 100 guests.

What are your future plans with this rather unique concept?

Philippe: I foresee three major target groups in the near future: leisure such as Ibiza, but also Mykonis, Marbella or Marrakech offer opportunities. Business destinations such as Antwerp-Zurich and events like Art Basel or Mippim in Cannes, which we will soon be flying to for the first time with ASL Fly Executive.

Ronald: Sporting events will also come into the picture. I'm thinking of the Red Devils, when they play at the European or World Cup, or major concerts or festivals. We recently purchased a third Embraer aircraft with a capacity for 30 passengers.

Another exciting moment is planned for the beginning of August?

Philippe: That' s right! If all goes well, on 1 August we will be able to open a brand new terminal at Liege Airport, which is really ‘booming’. We will be the sole FDO operator, which means that all business flights will go through us, which represents a great potential. It is a stunning building that includes a unique Skylounge, where we can organise events and receptions for up to 100 people with direct view of the runway..

Ronald: We are going to have about 6 aircraft permanently based there. This makes Liège easily accessible from all directions. A traffic-jam-free route from Maastricht, Hasselt, Germany, Leuven, Brussels, Luxembourg,... An undeniable advantage in our sector.

14

What about the aircraft hangar?

Will it also be state-of-the-art?

Philippe: I am totally in love with the magnificent wooden support structures and the height of the hall. It is not only sustainable, but it also has extra 'cachet'

Like Ronald pointed out, Liege offers so many advantages. Moreover, they operate 24/7, which also makes it interesting for many people. By car, you will be able to drive virtually right to the aircraft because we are located at the head of the runway, quite a distance from the main departure and arrival halls. This also means that there will be no mandatory screening procedure, which is a time advantage. It is an investment that we have made together with Liège Airport; for ASL it amounts to 4.2 million euros. Liège Airport invested 3 million euros for the preparation of the site, primarily for the construction of the 'aprons' (editor's note: open-air aircraft stands). So, we are ready to fly!

15
I absolutely love the magnificent wooden support structures and the height of the hall. It is not only sustainable, but it also adds extra 'cachet'.

Santorini

There is a lot to say about Santorini. The name of this island refers to the Greek martyr 'Santa Irena', who is believed to have died in exile on this island in the third century. According to Greek history, this island was part of the mythical island kingdom of 'Atlantis' and Plato was inspired by its volcanic eruptions in his stories. What we know today is that it is a fascinating destination with many hidden gems. Join us on a journey through this wonderful group of islands.

CULINARY SENSATIONS IN THE LAND OF THE RISING SUN

with

Gert De Mangeleer

It is going to be a busy summer for Belgian star chef Gert De Mangeleer. With the opening of a second Bar Bulot in the 5-star superior hotel Botanic Sanctuary in Antwerp and, not much later, the revival of his three-star success Hertog Jan in the same majestic building, he will definitely face busy times. However, it is also a well-kept secret that he has a taste for Japanese cuisine and is totally into sushi. On the eve of his culinary renaissance, we asked him about his favourite hotspots in the country of the rising sun.

Sushisho Masa

"Within walking distance of the prestigious Nishi-Azabu district, you will find 'Sushisho Masa', an elegant place featuring a minimalistic interior. Chef Masakatzu Oka was a student of the world-famous sushi master Keiji Nakazawa and set up his own business here 15 years ago with a capacity for 7 guests. When you sit in the front row, you can enjoy the finesse and expertise of the chef. Each creation is a culinary jewel. In addition to sushi variations, you will find fresh fish and seafood, accompanied by Japanese sake. Not only will you have an unforgettable experience, you will also leave the restaurant with a feeling of bliss and satisfaction," says Gert.

"Since its opening in 2016, this address in Osaka became one of the hardest places in Japan to make a reservation. Hidden behind the skyscrapers, close to Umeda Station, you can enjoy Chef Yoshitomo's excellent grilling techniques. The meat comes from the 'Kumano jidori' poultry, Japan's best quality meat bearing the free-range label. Combined with a superb wine list, you can enjoy craftsmanship and culinary excellence here. The restaurant has been awarded a Michelin star, which is well deserved according to the star chef, and who are we to question this?

"Close to the Daihizan Bujo-ji temple in Kyoto, you will find the address of chef Hisato Nakahigashi. He offers you a taste of the flavours and scents of the mountain seasons, by using vegetables and herbs. Started as a place of pilgrimage by his great-grandfather, for four generations now, Chef Nakahigashi has been using the tsumikusa principle, which means 'freshly picked'. Every morning he searches for fresh ingredients, while his team starts the day by making new sticks for the guests. The connection with nature goes right down to the smallest details," explains De Mangeleer.

Tribute to Marc Lagrange

When we talk about sensual portrait photography and femininity with a vintage touch, we instantly think of Marc Lagrange. The Belgian art photographer who passed away in 2015 is unforgettable, thanks to his work which is a tribute to beauty. His son, Vincent Lagrange (32), took a moment to talk about his father, and how his work lives on today.

Who is Vincent Lagrange?

And how did you inherit the love for photography from your father?

It all started in my father's studio, where I grew up. Without realising it, I picked up his ''aesthetic eye'' for images. This has undoubtedly influenced my way of working today. Every day, I was able to observe his knowledge and craftsmanship, as well as the technical aspect and the attention he paid to manual work, in a live setting. That's how I inherited it from him. Nothing was automated but done with time and love for the craft. When I was 16, I was already assisting my father in the studio. Later, after studying photography in Antwerp and concentrating on photography in Amsterdam, I started working permanently. This gave me the opportunity to work on assignments abroad, film shoots, the projects for the luxury house Delvaux, and assignments for various clients worldwide. These were fantastic times, in which we were able to create a dream world with a wonderful team. He was a creative jack-of-alltrades, who translated his passion into his work every day. To this day, I have great admiration for that.

Is there a connection between your father's work and yours?

With him as my teacher, I have inherited his working method and passion. I pay the same attention to detail in my work as he did. The resemblance to him lies mainly in the tranquillity of the images, and the way your eye is drawn to the expression. I have really witnessed and adopted his way of working, whereby he put a lot of time into the preparation. Because, according to him, you could only achieve quality by working as closely as possible to the end result while preparing your image. With those preliminary studies and a lot of patience, we were able to achieve that. And that was extremely satisfying for him, as well as for me.

34
Vincent Lagrange
I look for beauty and expression in the animal kingdom. While people often compare or measure up to others, animals do not.

How does your approach differ from his?

The difference lies mainly in the purity of the subject. I do not focus on nude portraits, but rather seek the pure beauty of Mother Nature. Without using make-up or controlled conditions. To make things even more complex, I look for beauty and expression in the animal kingdom. While people often compare or measure up to others, animals do not. They preserve much more their own identity. This way, I bring something that has not been seen before, and in which I can process my own emotions. Without copying my father's work. It is an enormous challenge, one that my father thought was insane, but that keeps me progressing.

Another difference is the use of accessories and decors, which in my case are rather sober or absent. My father searched for unique objects and accessories and pushed himself to the limit to get the perfect end result. For example, we once sent a letter to the Vatican asking whether a traditional mitre could be made for us. Of course, we didn't mention that it was intended for a nude portrait. But he succeeded, and the result was stunning.

Is there any work of your father's that you find very special, your personal favourite?

When I look at the images where I was present, I can hear his voice again. I hear him commenting on the setting or an idea that comes to his mind. I have very good memories of that. But also in his polaroids I still admire his craft, preliminary studies, and the elaboration of the work. This time-consuming way of working, which has become very difficult today, is something I always try to pursue.

Next autumn, the Foto Biennale in Ostend will be opened. What are we going to see there?

I and my brothers regard the Biennale as a gift to him. It will be a tribute to 30 years of photography with a retrospective time travel through his life. The Biennale will present his work from the 1990s to recordings he made up to two days before his death. With all the sources of inspiration and objects that were part of the person that he was. The curiosities linked to his work, but also personal items such as his camera and original contact sheets, will be shown. The collection will be on display for two months and will then be exhibited in art galleries all over the world in order to keep daddy present.

Helsen Tailors

How would you describe Helsen Tailors to people who are not yet familiar with the business? What can they expect?

"We are a family business of tailors and retailers that has now reached the third generation. We are mainly known as a fashion house that has been advising stylish and ambitious men on their business suits and smart casual outfits for years. In a cosy and relaxed setting, we provide the right advice for your own outfit or for the clothing in your company. Our own 'Helsen' and 'Stijn Helsen' collections are complemented by high-quality brands from reputable fashion houses from all over Europe. This is clearly appreciated, as our shops are often visited by clients from all over the Benelux. Before or after their purchases, we are happy to invite them to our unique 'Basement Bar'. Here they can discuss their requirements with their clothing adviser, or just have a chat with family or friends while enjoying a drink. This is what makes a visit to Helsen Tailors extra special and ensures that they will be happy to come back later. Our womenswear business, Helsen Ladies, has also been developed with the same care and finesse into a unique fashion house."

Do you select the outfits for your clients yourself?

" Definitely. We have known many of our clients for years and the same goes for their wardrobes. We 'unburden' them with a nice pre-selection of fashion pieces that we know they will love. But we are equally happy to work with new clients we meet for the first time. We consider it a privilege that our clients are all smooth and interesting people. They all have a fascinating profession from which we can learn a lot as well."

How do you, as a fashion house, respond to the rapidly evolving market?

"The fashion sector and the buying patterns of its clients are constantly evolving. That makes it exciting for us. With Helsen Tailors and our other businesses, we have always managed to adapt smoothly to the rapidly evolving fashion sector. As a result, we are reaching a wider audience and also younger generations, who are our future clients. We are a stable family SME. The advantage is that we are very agile and flexible."

44
Helsen Hasselt is one of Belgium's most renowned fashion houses. This family business was founded in 1939 by Albert Helsen and later acquired by his son Roland. Today, the family tradition is continued by the third generation. We spoke to Frank Helsen in the stylish bar of Helsen Tailors, one of the three beautiful clothes shops of the fashion house in the heart of Hasselt.
You never get a second chance to make a first impression.

You are active in corporate fashion?

"Yes, we work a lot with corporate clothing. Companies can rely on us for rebranding the look of their business. Together with them, we work out projects in the right style and in harmony with the company and what it stands for. We have a workshop that is connected to our business and where excellent work is carried out. Even after the first deliveries, we continue providing our services, for example when new employees join a team. Our client portfolio is diverse: the automotive industry (e.g., the Motor Show), the financial sector, sports clubs (e.g., the Bel -

gian Olympic Team), the show business, the film industry, the events sector, etc. The Belgian Royal Family, too, has been a client of Helsen's for years, including both Prince Laurent and King Filip. The latter is about the only client for whom we travel. This is not because we don't want to, but simply because we prefer to offer full client service in our own shop in Hasselt. Last but not least, we are the proud preferred supplier of uniforms for ASL Group crew members. We consider it a recognition that we can contribute to the styling of such a beautiful company!”

King Filip is by far the only person for whom we travel to the client.
45
This is not because we don't want to, but because we prefer to offer full client service in our own shop in Hasselt!

Your own brand name 'Stijn Helsen' is also a household name in the Belgian fashion world. Could you tell us a bit more about that?

"Our Flagship Store in the Diesterstraat in Hasselt is definitely worth a visit. We sell a wide range of our own menswear line, luxury products and a beautiful range of accessories, which are also available at other leading clothing shops in Belgium. There is also a beautiful Expo Photo Wall in the shop that presents an overview of today's top fashions and many completed projects. It is so varied and so much to absorb it all. I recommend those who are interested to take a look at the website. And of course everyone is very welcome in one of the shops!"

The Mozart of light

Tom Claeys about light and emotion

The virtuoso of light. That is how you can describe Tom Claeys, the man from Avelgem who designs lighting for the most exclusive interiors at home and abroad. From the shops of a French jeweller's house, the lobby of hotels in Dubai, to the World Expo in Milan in 2015. For years, his designs have been picked up by clients from all over the world who are looking for lighting with a unique experience. It is not only the design that makes his work so unique. His knowledge of emotions that can be manipulated through colour and light intensity also captures the imagination. We met him in his showroom and discussed his collection and the path he has followed.

Who is Tom Claeys?

The story started when I was 14, when I drew a long line on the wall in my bedroom with a marker. It was a timeline, on which I drew years and goals. I knew that I wanted to reach the highest level with my work, and cross national borders. I succeeded, so today I am always looking for new challenges that will lift my work to a higher level.

What is the meaning of lighting for you?

And what effect do you want to achieve with it ?

You don't want the same lighting for a romantic dinner as for a professional meeting. Light creates a certain atmosphere, which has an effect on your mood. This applies to everyone. It's a universal and very complex science that I have mastered over the years. If you harmonise the lighting of a house with the atmosphere it is intended to create, you create a sublime experience. I have always tried to share this knowledge with my customers.

How did you end up in the lighting industry?

30 years ago, I sold a few lighting brands and combined this with renting lighting for events. I worked with some DJs, and by combining the right music and lighting, we were able to transform a simple tent into a disco. By applying the science of light, we were able to get people off and on the dance floor. I later applied that knowledge and psychology to interior lighting, when I started a total design business. One day, when I was in my thirties, a customer asked me about a chandelier that nobody had. A unique piece. I was unable to find what he was asking for at the trade fair in Milan because it was so specific. Thanks to the contact with an artist from the Netherlands, I managed to design a chandelier that perfectly matched the client's wishes. With the right finish and composition. Taking into account heights, dimensions, and the right balance in the interior. That is how the ball got rolling.

50

How did the collaboration with artists develop ?

One of the first collaborations was with the Dutch artist William Brand, who designed an exclusive chandelier in gold thread and Swarosvki crystals. That design subsequently turned out to be a worldwide success. Later, the largest chandelier in the world was placed in Abu Dabi by the Dutch designer Roel Haagmans. There he met a flower artist and together they wanted to create a design with Swarovski crystals. Via Swarovski's agent, we came into contact. I saw the potential of their designs and attracted the right customers. Thanks to my network, I have always been like a gallery owner for the artists. When we were allowed to create the lighting for Cartier's 170 shops, we really made a giant leap. Our designs were exactly what the customer wanted, with the right experience. It always been a difficult but incredibly fascinating niche. There is a commercial aspect to it, but above all a human aspect, in which the contact with the customer and the artist are key. With passion and pleasure as the driving force.

51

LIGHT IS EMOTION

52

What type of lighting do you prefer to work with?

The success of the well-known halogen bulb lies in the correct presence of colour in the light. Just as in the light of the sun, or of fire, it has the right balance of colours. That means that it contains an equal amount of all the basic colours. This right balance is what low-energy light bulbs and LED lights lack. Light that contains no red colour feels cold and grey. That's why I was reluctant to work with it for a long time. LED lighting comes in various colours, but it still doesn't have the right colour balance as halogen lighting. For the illumination of a motorway, for example, it doesn't matter. But in interiors it is extremely important. A woman automatically feels better in an interior with beautiful, warm light. Fortunately, LED technology is evolving very rapidly, but the production remains very complex. You can compare it to an apple harvest, where we use the best apples from the orchard. That quality, combined with a unique design, delivers the ultimate experience.

How is the collection built up and how are the designs created?

Each design is unique and we work à la tête du client. That means that we do not have a collection that can be bought off-the-shelf. Studying light is my hobby. It is very labour-intensive and impossible to pass on to everyone. So, I have to focus on those customers who put their trust in me and who allow me to carry out a light and colour study. Applying this knowledge to an entire house produces an amazing result. Made with heart and soul.

It is a universal and very complex science, but one that I have mastered over the years.
If you match the lighting of a house optimally with the atmosphere it is intended to create, you ensure a suberb experience.

Brittany

The Breton slogan "Be Breizh!" is used for wishing someone luck and was created with the underlying idea that a visitor draws his inner strength from the power of Brittany. Brittany, the peninsula with its 1,700 km of coastline, is a true discovery of picturesque views and natural wonders.

Pointe du Raz

Walking at the end of the world

Over a distance of 10 kilometres, you walk along a route filled with surprises: past the chapel of Lescoff, the little port of Bestrée, and the famous rock point. Pointe du Raz is a place in Brittany that everyone wants to visit one day. A place where the wild, unspoilt nature has been preserved. After the walk, you will head for Monsieur Papier. Here you will find both a café and a bookshop, where you can buy nice items and enjoy a delicious home-made lunch while overlooking the ocean.

56

Pont Aven

In the footsteps of Gauguin, Monet and Picasso

The town of Pont Aven was one of those places in Brittany that attracted many great artists. A riverbed covered with rocks, numerous mills, chapels, busy markets, picturesque costumes, beautiful light: the sources of inspiration were endless. Follow their footsteps and visit the Musée des Beaux-arts, the "Circuit du bois d'amour" and admire Paul Gauguin's painting "Le Christ jaune" in the chapel of Trémalo.

Belle-Île-en-Mer

Monet and the ever-changing sky

In 1886, Monet settled on the island of Belle-Île-en-Mer and made the island world-famous through his paintings. He was captivated by the shades of light and the ever-changing sea, which inspired his paintings such as 'Les Aiguilles de Port Coton'. Matisse also visited the island and fell in love with the colours of the light. On the island, you will discover the Pointe des Poulains, the Musée Sarah Bernhardt, and wander along the "Côte Sauvage" in the footsteps of Claude Monet.

The Breton heritage of Sainte-Barbe

A hidden gem in the rocks

The chapel of Sainte-Barbe is a must-see place. When you walk towards the chapel, you don't see anything at first, but as you climb the monumental stone steps, the chapel slowly unfolds before your eyes, nestled between the rocks. Since the 15th century, this granite architectural gem overlooks the green valley of the Ellé and amazes everyone with its extraordinary location. When you go down to the fountain and walk along the surrounding paths, you can feel the peace and breathe the special atmosphere of this magical place.

Croatia

Land of 101 picturesque harbours

Land in sight! It is the beautiful country of Croatia, which amazes with its hidden gems. Despite its tumultuous past, this picturesque area has found its way into the yachting world. Unlike its popular Mediterranean counterparts, this area along the Adriatic Sea is much less crowded during the summer months. It is the ideal destination for a hassle-free summer at sea.

SeaNet Europe, the yachting specialist, knows the Dalmatian coast like no other. They asked their Croatian captains about their favourite spots alongside the sailing routes. We briefly drop anchor and go exploring.

Island Lastovo

Ubli bay, anchor

Lastovo is one of the Dalmatian islands of southern Croatia in the Adriatic Sea. The island is covered with 53 square metres of vineyards and olive groves. You can dock at the 'Ubli' harbour. From Ubli to the west, towards Pasadur, you can take a nice walk of up to 3 km.

Croatia, the ideal destination for a carefree summer at sea.

Island Lastovo

Zaklopatica bay

In the north of Croatia, only 2 km from Lastovo, you can find Zaklopatica bay, which is home to the rare bird species 'Kaukala'. It is not only a paradise for divers and sailors, it is the ideal base for enjoying the surrounding archipelago during a breathtaking sunset.

Island Korčula

Old town berth

It has never been proved whether explorer Marco Polo was born here. It is, however, the island of folklore, religious traditions, traditional dance, and ... great wine. Especially the white wines made from pošip and grk grapes. Grk grapes are only found in the vineyards of Lumbarda on Korčula, which makes the Grk wine truly unique.

66

Island Vis

Luka harbour & the Stonica bay

A little further offshore, you will find the island of Vis, through the mesmerising 'Luka' harbour. This is not only the place where the musical film Mamma Mia 2 was shot, but also the island of sloping green hills, a heavenly blue sea and little tourism. The water in the hidden inlet 'Stonica' is both turquoise and blue. A true delight for the senses.

“Over the weekend of September 4-5, despite nobody in Champagne yet having any concerns, we had an intuition that we might have to sacrifice part of the harvest in order to save the best parcels and try to make a Dom Pérignon vintage.”

- Vincent Chaperon, Chef de Cave -

2010. Winter was rigorous, spring dry and late. After a particularly sunny decade, such freshness was surprising. Summer was hot, but not excessively. Then, two days of diluvian rain brought this ideal trajectory to a halt. In just a few days, botrytis mold developed on the grapes, mainly on the pinot noir.

This triggered a race against the clock. The grapes were not yet fully mature, but a decision had to be made. Dom Pérignon deployed its full resources to trace a precise map delimiting the maturity and health of each parcel in its vineyards. This expert vision of the situation gave us the possibility of saving excellent plots of pinot noir grapes. But every minute counted, and the challenge of declaring a vintage was on…

The grape picking was drastic and the sacrifices painful. Dom Pérignon decided to focus exclusively on the grapes the botrytis had spared. Executed with great precision, this inspired decision proved correct. When the vendange was over, a portion of the harvest had been lost, but the pinot noir grapes that had been saved were absolutely glorious. They echoed the chardonnay grapes, which had benefited from a complete maturation. They showed richness, concentration and balance – actually the best in the past 30 years. Once assembled, the two grape varieties were intense, yet balanced in both structure and texture, dialoguing in complete unison. The challenge was met, and Dom Pérignon declared a vintage quite literally ‘saved from the waters’.

THE NOSE

The luminous sweetness of tropical fruit – green mango, melon, pineapple – instantly shines. It then cedes to more temperate notes, the tingle of orange zest, the mist of a mandarin orange. The wine breathes, revealing its freshness. The bloom after the rain. A tactile sensation of peony, jasmine and lilac.

THE PALATE

The wine immediately imposes its ample presence, full and massive. A sappy sensation dominates as the tactile is rapidly overtaken by the aromatic. The body unfolds: generous, firm and controlled. Then it contracts, letting the wine vibrate with spices and pepper. The energy is sustained to a scintillating, saline finish.

A Woodstoxx Company

Culinary hotspot Bilbao

A walk through the Basque country with Peter Goossens

Since Bilbao acquired its own Guggenheim Museum in 1997, it has become a true paradise for art and architecture lovers. We can safely call the capital of the Spanish Basque country one of Europe's trendiest city trip destinations. Furthermore, it is a true Valhalla for foodies. Peter Goossens often travelled to Bilbao to enjoy gastronomic delights and to be inspired by other top chefs. He is happy to share his favourite addresses.

76
With its numerous gastronomic restaurants, Bilbao is a dream destination for fine dining.

Azurmendi***

“Time and again, top chef Eneko Atxa gives me an incredible gastronomic experience. In his creations, he unites the rich Basque cultural and culinary traditions with contemporary and refreshing flavours. In his refined menus, he works creatively with fresh and local ingredients, specialities and delicacies. I love going to Azurmendi because it is a wonderful place to dine. It is a modern building featuring many natural elements, a reflection of Eneko Atxa's philosophy. He attaches great importance to sustainability and respect for cultural traditions, the environment, people and society. The restaurant has been built entirely based on that vision. As a result, in 2021, Azurmendi received the first Sustainability Award of Madrid Fusión, after having been awarded several times as the most sustainable restaurant in Spain. Azurmendi is an international reference in the field of sustainable gastronomic enjoyment. The restaurant almost always figures in the rankings of the best restaurants in the world. And with good reason: there are few places where I have eaten so well in a unique setting.”

Kimtxu

"I love the warm and informal atmosphere in this somewhat surprising Asian taberna in the centre of Bilbao. As a visitor, you immediately feel at home here. This makes it easier to open your mind and taste buds to the many new and surprising flavours from all over the world served by owner-chef Iván Abril. In his kitchen, he adds his own contemporary twist to typically oriental recipes and flavours, incorporating techniques he learned in London and Hong Kong. His dishes are always based on excellent local products, such as hake or Sukalki beef and the best seasonal ingredients. The dishes also feature Latin American influences, which makes it all the more interesting - especially if you are a chef yourself. The menu includes a dozen dishes that are regularly updated, so that visitors can always try new things. Despite their apparent simplicity, the dishes are very tasty, balanced and above all surprising. You never get bored at the table at Kimtxu : it is a culinary exploration in a particularly pleasant setting."

Etxebarri

"First of all, Asador Etxebarri has an improbably beautiful setting: Axpe, a charming Basque village surrounded by green meadows and rough misty mountains (editors’ note : about half an hour's drive from Bilbao). The restaurant is located in an old stone farmhouse near the church. And the food is simply superb. The self-taught chef Victor Arguinzoniz prepares his dishes one by one on the grill. This provides all the dishes, even the desserts, with a subtle smoky flavour. This is how he takes a centuries-old gastronomic tradition - the Basque art of the 'asador' or wood-fired grill - to an amazing new level. It is a cuisine that Arguinzoniz has made his own, a style

of cooking that defines Etxebarri and for which people come from far and wide to the small village of Axpe. I have great admiration for him, he is a true self-made man at a very high level. He is famous for his juicy Palamós prawns, his home-made chorizo tartare and his enormous tomahawk steak, to name a few. I have often dined at Asador Etxebarri and it remains a kind of mythical place for me, where I am always surprised by the exceptionally tasty creations of the chef. It is not without reason that Etxebarri was voted the third best restaurant in the world in 2019 by Restaurant Magazine."

Guggenheim Museum

If you are in Bilbao, a visit to the Guggenheim Museum is definitely a must. It is one of three Guggenheim Museums worldwide, alongside the Peggy Guggenheim Collection in Venice and the Solomon R. Guggenheim Museum in New York. The exterior of the building alone is impressive - a museum piece in itself. The museum was designed by the American-Canadian architect Frank Gehry and stands out for its deconstructivist architecture. The building is made almost entirely of titanium, which makes it glow magnificently in the sunlight. You can look at it for hours! The Guggenheim is one of the most important museums for modern art and has been attracting many visitors to the city since 1997. It exhibits works of famous artists such as Pablo Picasso, Salvador Dalí, René Magritte, Andy Warhol as well as young and emerging artists. The museum is not only a major attraction due to the magnificent works of art exhibited there, but also for the Guggenheim Bistro and the Nerua* gastronomic restaurant, both of which are located within the museum walls.

SAGA Homewear

Two years ago, Gaëlle Mousset launched her own line of high-quality household linen: SAGA Homewear. The name is a contraction of the first name of her sister Sally and her own. "I have always had a passion for real estate, interiors, luxury and beautiful fabrics. That's how I discovered customisable luxury interior linen. After an extensive market study, I discovered this was an untapped market in Belgium, and even internationally," says the 26-year-old Brussels entrepreneur. " I provided the ASL Group with personalised towels with embroidered logo. I recommend everyone to visit the toilet at the airport or in the aircraft and to wash their hands there. By doing so, you can experience the quality of SAGA Homewear linen for yourself."

Hello Gaëlle, how did you become an entrepreneur?

"I come from a family of self-employed people, so entrepreneurship is something I grew up with. And through my freelance communications work for high-end brands such as Petrossian Caviar, Porsche, Nikki Beach and Jaguar, I realised that I wanted to launch my own brand. It was in 2019, after a first order of 300 pieces for a private customer,

100
I always go to my customers' homes because interior linen forms an integral part of the decoration of their 'home'. I want to fully understand their world in order to be able to best meet their high expectations.

that I decided to go for it. I took on the adventure and SAGA Homewear was born!"

What does SAGA Homewear have to offer?

"I offer a tailor-made selection of bath linen, bed linen, table linen and beach linen. Customers can opt to personalise their linen with colours and materials that match their interior, with embroidery or a logo, or with their initials. My approach is that of an interior designer. I visit people personally with my samples and offer them colours and designs that meet their needs. My customers are both individuals and professionals, for example boutique hotels, luxury restaurants, spas, jet and yacht companies,.. They all attach importance to high quality and personal service.

Zoute Grand Prix

For many years ASL Group has been a loyal partner of the Zoute Grand Prix and also during the past turbulent year, we continued to brave the storm together. Therefore, we attended the press event for the presentation of the 2021 edition a few weeks ago with exceptional attention. The big surprise was the new entry of the cities of Bruges and Ostend. "We have been inspired by the situation of the world-famous Pebble Beach Concours in California. There, you could see how so-called ‘side-events' organised by 'third parties' were popping up like mushrooms. With our event, we want to anticipate and control everything ourselves. This approach will result in the best and most unique experience for the visitor," according to the Bourgoo brothers who, with the Zoute Grand Prix Week, are prepared for the future.

102
We want to take the future into our own hands. With the golden triangle Knokke-Heist-Bruges-Ostend we are making a huge step forward.
Filip & David Bourgoo

What is the motivation behind this rather spectacular plot twist?

Filip: Our event has become extremely popular. With over 300,000 visitors, the pressure on Knokke-Heist and more specifically 'Le Zoute' is huge. In that sense, the pandemic was quite an eye-opener for us. We have learned a few things and have incorporated them into the 2021 edition, which we hope will be a completely 'corona-free' edition. If we are to believe the virologists and government leaders of our country, that will certainly be the case in the near future.

David: Moreover, Bruges adds something to the international image. Knokke-Le-Zoute is world famous... in Belgium, but abroad we often need to explain where and what this unique seaside resort is. Ostend is the dream match for our GT Tour. The event had become so big on its own - which shocked us - to the point that it was actually too big to schedule as a Sunday morning/afternoon event. Also in terms of DNA, it is more in line with Ostend.

What exactly do you have in store?

Filip: Next to the GT Tour, we will now be calling it the Bruges Concours d'Elégance. Bruges is the ideal setting for the many beautiful classic cars that will arrive from all corners of Europe. Guests will be expected at ’t Zand, the biggest square of Bruges. Subsequently, they will board the coach and be offered a guided tour through the historic centre of Bruges, where a guide will explain both the cars and their history.

David: Afterwards they will be welcomed in Prado Bruges. A beautiful construction that we will erect on ‘t Zand’. There, the guests will be able to enjoy delicious champagne and be treated to culinary delights, while walking among the artworks and vintage & classic cars. Our partner Guy Pieters Gallery plays a major role here. Art & Art on 4 Wheels'. Both companies and individuals will be able to buy a VIP ticket for this event.

103

What else can we expect in Knokke-Heist?

Filip: It goes without saying that Knokke-Heist and 'Het Zoute' will continue to play a crucial role. Prado Zoute will be erected on the beach at the Albert Square (Albertplein). The Zoute Sale by Bonhams will also take place here. After a year of absence, the Royal Zoute Golf Club will again be welcoming 100 car gems for the Zoute Concours d'Elégance by EY.

David: The Zoute Rally by stow will also have its start and finish in Knokke-Heist. There is no doubt that we will experience an edition like never before. We can feel from everyone and everything that the desire to be outside again and enjoy life is stronger than ever.

A warm-up is also planned for the end of August?

Filip: That's right. Our plans to organise several rallies can finally be deployed post-covid. The Rallye de Durbuy, Durbuy GT Tour and Rallye des Châteaux had to be postponed for another year, but the Zoute Generations Rally is coming on 28 August.

David: We want to encourage the passion for classic cars in young people. But we also want to do this in a responsible way. This one-day rally is an ideal moment for father and son or mother and daughter to pass on the passion and knowledge. With safety at the heart of everything we do, we have set up an educational programme with a series of tests, in which the younger generation learn how to drive and control their beloved old-timer correctly. It goes without saying that a delicious lunch will be provided and that we will conclude the evening with a large family barbecue in Zoute style.

Unique annexes in wich we focus on the passion of its residents.

Unicus

Who doesn't dream of being able to fully relax in their own home? As spaces are simply limited in size, the so-called 'leisure houses' or annexes with a fun factor are becoming increasingly important. CEO of Woodstoxx, Robbert Desmet, had already anticipated this for a while and started Unicus a few years ago. Every West-Fleming will quickly recognise the dialect for 'unique house', and those who learned some Latin during their school education will freely translate it as 'something unique'.

"Unique annexes in which we focus on the passions of its residents, that’s what we offer: this can range from beautiful classic cars, music, billiards, travel, wine, cigars,... you name it. Of course, in many cases, a beautiful bar or extensive wellness facilities are a must.

We strive for a superior level of finish, whereby we don't shy away from any challenge. Recently, we even incorporated a golf simulator.”

Gin is only as good as the tonic it’s paired with. While most tonics mask the delicate flavours of gin with artificial sweeteners such as saccharin, at Fever-Tree it’s all about taste. In fact, one might say our founders Charles and Tim are a little obsessed. In their quest for the perfect tonic, Charles and Tim spent days in the British Library researching quinine sources before travelling to some of the most remote parts of the world in search of the finest natural ingredients, venturing as far as the Democratic Republic of the Congo to find the world’s purest quinine. It’s this unique ingredient that gives our tonic its essential bitter flavour, and when balanced with botanicals like natural orange oils, makes for a gin & tonic that’s crisp, clean and like no other.
