Dames still love small-town NZ Dame Lynda Topp – one half of the iconic duo the Topp Twins – discovered a quiet piece of paradise in the stunning, rolling countryside of Staveley. Along with sister Jools, the famed Kiwi comedian, musician, activist and writer is instantly recognisable on our screens, and she can also be found flipping burgers at her Methven café – in between taking the odd selfie, that is. This month, the sisters are heading back out on the road for three South Island shows, including a stop in Methven. This will not only be Lynda’s first ‘hometown’ performance, but the first tour since they both became dames last year. YOU magazine’s Megan Gnad spoke with Lynda about life in Staveley, fighting the good fight and celebrating their 60th birthday with Helen Clark and Jacinda Ardern.

This photo may have been taken a year or six ago, but New Zealand’s love for the Topp Twins hasn’t waned and they are about to enthrall small-town NZ again this year with a three-stop South Island tour.

I

t’s not unusual for four generations to be in the audience at a Topp Twins’ show. The sisters – and their beloved characters – have been a part of New Zealand culture for 40 years now, and with a new range of songs out for children, their power to capture the hearts of Kiwis, and have both grandparents and the little ones in stitches, never wanes. “The older age groups come to the shows,” explains Lynda. “But we also get 20 to 30-year-olds who saw us when they were kids on the TV, and the last show we did we had four generations – great-grandma, grandma, mum and the baby all came.” continued next page

When they’re not touring around the country entertaining the locals, Lynda can be found enjoying the quiet life on her lifestyle property in Staveley, or cooking up a storm at the Topp Country Cafe.

From P4 Their latest tour, Heading for the Hills, starts this month with stops in Balclutha, Oamaru and Methven, a show they’re particularly excited about, given it’s now considered Lynda’s hometown. For the past 15 years she’s been living down this way, joking she’s probably got another 25 to go until she’s officially a local. “It’s always a bit scary playing your hometowns, all the locals are there,” Lynda laughs. “We’re looking forward to it. Country audiences are appreciative of the fact you came and it’s also usually a social gathering to catch up with each other. “We played at the A&P show in Methven

many, many years ago, but this is our first show actually in Methven, so it’s quite exciting.” Following the local show, Dame Jools and Lynda will also be making a donation to the Ashburton/Mt Hutt Girls’ Rugby team.

he Staveley local’s idyllic home and accommodation venture, Topp Lodge – currently on the market as they look to downsize to “a few acres” – which sits nestled in the countryside, has been the perfect location for Lynda and wife Donna. With both a quarter horse and a beautiful little grey horse grazing in the paddocks, the lifestyle property is surrounded

by trees at the foothills of Mt Somers, and has been a tranquil getaway for the in-demand entertainer. “We’re still flat out,” she said. “The Topp Twins have bookings until February next year. We thought we’d be starting to slow down a bit, but we keep chugging on. “I was brought up in the North Island and never really had anything to do with mountain country, but once you’ve lived in mountain country, you crave it, you need to see the mountains. “If I’ve been away, I can’t wait (to get home). I come down the gorge and over the hill there and see the mountains, and your little heart skips a beat. continued over page

From P5 “You haven’t even pulled in the gateway, but when you see those mountains, you feel good. It’s always nice to go home, wander round the paddock and wrap your arms around the neck of your horse.” The other venture keeping Lynda busy is Methven’s Topp Country Café, an ode to wholesome, tasty country fare. Donna, who had already been managing the café, and has a hospitality background, knew what to expect, but Lynda says she was “thrown in at the deep end” and became the cook overnight. Nowadays, she’s a regular in the country café, which serves a range of hearty classics and good coffee, set amongst a rustic, cosy atmosphere. It’s not unusual to see her behind the scenes cooking up a storm. “One minute I’m flipping burgers, the next I’m getting selfies with people,” she laughs. “Methven is a great destination, lots of people come by in the weekend and stop by Topp Country Café. “It’s really interesting coming up with new ideas and I really enjoy the cooking. It’s a country café with good country tucker; they want lots of it and don’t want to have to pay too much. “All the sweet recipes we cook on the premises, we’ve reduced the sugar amount, and only one person has noticed. They said the muffins were much better. We’re trying to do our bit to be healthy.” Taking this philosophy of celebrating local, homegrown produce, they turned it into their own television show, Topp Country, which saw them travel New Zealand meeting 60 ethical farmers and growers along the way. Screening on TVNZ 1, it scooped three awards at the latest NZ TV Awards for Best Lifestyle Series, Best Director and Best Cinematography. An accompanying book, Topp Country: A Culinary Journey Around NZ, was to follow and made New Zealand’s Top 10 Book List.

Thanks to the three series production, The Topp Twins were reintroduced to a plethora of new fans through mainstream television. “Every time we’re on the TV, it reignites the public awareness of you,” Lynda said. “If you’re on TV and then in the supermarket, they yell out ‘Ken’ or ‘Camp Mother’. We’re well known, and we’re approachable. We’re not like big American stars – we’re on the road, we’re heading for the hills in the stinky.” Another passion that’s keeping the Topp Twins in the spotlight across the generations is the production of children’s music, where they take classics like, She’ll Be Coming ‘Round the Mountain, and, Do Your Ears Hang Low, and turn them into catchy sing-a-longs for the whole family. The latest addition, Skip to the Loo My Darlin’, is their seventh book in the children’s audio series for Scholastic Books.

t’s fair to say, the past 12 months took the Topp Twins on a wonderful journey as they celebrated their 40th year as much-loved performers and turned 60. In a nod to their iconic status, when they marked their birthday celebrations at London’s Hackney Empire, not only did former Prime Minister Helen Clark open the show, but current Prime Minister Jacinda Ardern closed it. They all returned

They emphasise that nothing’s changed since receiving the award, but the acknowledgement and support means a lot. “We try not to dwell too much on the dame-thing,” Lynda said. “We’re very appreciative of it, we accepted that on behalf of all the people in New Zealand who had the same beliefs as us who fought the good fight, but I think it was pretty exciting when they rang us and said they were going to offer us a damehood. “New Zealand’s had to grow up in the last little while and we (the country) have. We’ve all stood up when we’ve needed to. New Zealand is an amazing place, we still have that number 8 wire mentality. We’ve seen a lot of change. “Every fight we’ve fought, we’ve won; Nuclear-Free, the Homosexual Law Reform Bill, land rights issues … there’s always environmental issues that are ongoing, and we have to be supportive and all take responsibility for the environment. You can’t just blame one sector, you can’t blame the rural community, or the industrial community, we all have to stand up. “Everybody has to make their backyard pristine and if we all did that, if every single New Zealander did their bit, we could change this country back to being clean, green and pristine.”

at the end with a birthday cake. “Our English friends couldn’t believe it that the ex-prime minister and the prime minister were at our gig,” laughs Lynda. “They said that would never happen in England. They just turned up.” It was very exciting and we were so excited that Helen and Jacinda could make it. They didn’t have to, it’s the Kiwi way.” In 2018, the twins were also bestowed the honour of being made Dame Companions of the NZ Order of Merit, or as Jools

hile Lynda says they’re constantly being asked by fans when they’re coming back Australia, England and Canada, but they’ve always remained adamant New Zealand was their home. For the duo, the real joy is getting to visit the townships and communities that make up our rural heartland. “We never thought of moving to LA or England, or Australia to make it big. We chugged away in New Zealand and, in the end, it paid off for us. We head for the smaller towns because not that many people go there anymore. Small towns are pretty cool in New Zealand.” While they’re out on the road, you may also find them creating new material, devising whip-smart skits and writing beautiful new songs as they travel the highways. Jools does most of the songwriting, and plays guitar, and they then collaborate and work on the harmonies together. If they like it, that’s it, it could be on the line-up that night. continued over page

Those harmonies are what makes a Topp Twins’ song magical and it’s all down to the strong connection the sisters have. “Sometimes Jools will start singing the melody line and I’ll sing the harmonies, and then halfway through something happens and we’ll swap over. That’s just a twin-thing. You can’t beat family harmonies, you’re born with the same genes so those harmonies just happen, they’re magical. “We didn’t sing harmony for a long time. It didn’t come for a while, then we discovered we could change it up a little bit and it just naturally happens now.” While Jools has been through her own set of health challenges, Lynda vouches that her sister is well, cheekily adding she feels like a 24-year-old, but “is wise enough to be 61”. With 40 years of performance experience under their belt, the Topp Twins are more excited than ever to prepare

for another tour visiting three stunning South Island locations. The best part, they say, is spreading joy and laughter to people along the journey. “It’s always nice to have a laugh, it helps breaks down barriers. If you can get a whole room of people from different backgrounds in one room together and all make them laugh, we love doing it. “We’ve been doing it a long time, but every show is a new show to us. Every time we get on the road, it’s a new day. We never look back. Every show is different. “And, we love travelling New Zealand in the ‘stinky’ which is based on the old roadworks caravan. “We have room to make a cup of tea and off we go…”

Lisa’s nomination Hi there, my mum Lisa Stringer should win this prize because I don’t know the last time when she had a break was. My mum is my absolute best friend. In 2015-2016 I was struggling with anorexia and depression and my mum was my number one supporter and helped me through absolutely everything. She travelled multiple times a week to Christchurch Hospital to visit me and to let me know that she was there and she was fighting with me. As well as working full time owning her own Cafe/bakery with my dad. I have put her through hell and back the past few years and I know that right now she needs this. I want to see a smile on her face, I want her to have something for her. Because she does anything and everything for myself, my siblings, my dad, her sisters and all of my family and never does anything for herself. She also lost her best friend Nina to cancer end of last year, and she did everything she could to fight that battle with her, and it’s the worst thing to see your mum lose something so important to her. She carries on because that’s just what my mum is like, she holds everyone up, but for once I just want her to take a break and be treated. My mum is the most amazing person and I am proud to have her as my mum. She deserves nothing but the best and I would give anything to see her smile. ~ Beth Stringer

Ask Lisa Stringer who should win an award for being a top mum and she’d put her own name well down the list. Ask Lisa’s daughter Beth, though, and she’ll tell you her mum is a mum in a million, a mother who takes on herculean tasks when it comes to her children and friends and who never stops to think about herself. Daughter Beth decided to enter Lisa in the Guardian’s search for the district’s mum who was most deserving of $1400 worth of pampering, but she kept that entry secret from her mother. When a delighted Beth received a phone

call from the Guardian telling her Lisa was the winner, Beth called her mother. “Where are you?” she said. Lisa replied that she was driving into town. When was she coming home, Beth asked. The response was vague. Beth pushed harder. “Mum I need you home, I have some news, exciting news,” her daughter replied. Good news over the past year had been pretty thin on the ground in the Stringer household Lisa said, and her first thought was that Beth had landed a job. “I went racing in the door, excited for Beth and she said guess what you’ve won a mothers’ day competition.” continued on next page

Lunch at Speights provided an opportunity for Lisa to have a leisurely catch up with friend Sharon Muir and that was perfect uninterrupted time that was rare in both of their lives. A normal working day for Lisa involves long hours at Cafe Time, a business she owns with husband Scott, organising their children’s activities, working at home. “Plus any time anyone is away I do anyone and everyone else’s jobs too, so having a whole day to myself was unreal. The past

year has been tough, I’ll admit that.” Lisa doesn’t consider she’s done anything any other mother wouldn’t do. “My kids and my family mean the most to me. You put them before yourself, you want them to be happy and healthy. You just do what you do as a mum, but I’m really humbled by this,” she said. Family support is important for everyone Lisa said and she counts hers in Scott and her sisters. “I’m lucky to have them in my life,” she said.

Jake Bailey is the ex-Christurch Boys’ High School senior monitor, whose end of year speech made worldwide headlines after going viral in 2015. A week before he was due to deliver this speech, Jake fell ill and was diagnosed with Burkitt’s NonHodgkins Lymphoma. Jake was given two weeks to live if this was left untreated. He persevered through to make his speech to his school and the video of this went on to touch the hearts of millions and draw support from around the globe. Since being announced in remission in January 2016, Jake has gone on to share his experiences, his story, and the things he has learnt which have given him clarity throughout his journey, in the hopes of helping others facing difficulties. Jake would be the first to tell you that nothing in life is certain, but one thing quite categorically is: Jake Bailey has a gift for making us want to be better human beings, simply by telling his story. International Farmy Princess FARMY PRINCESS with DONNA-MARIE LEVER

queal! I have to pinch myself. Can this be true? I’m penning this riveting piece of literature from Holland! Yes ... the Farmy Princess is on tour in Europe and, this bit you won’t believe, on an actual farming trip. No, we have not won Lotto, but rather, the farmer and I somehow made the elite guest list with AgriVantage on a fact-finding mission – or what I like to call international farming school. I’m still trying to work out exactly how I got the call-up, but to cut a long story short, when we feed our baby calves at the farm each year, they are given milk powder; it just so happens the milk powder that we use comes from Holland and the company Sprayfo that makes it wanted us to come over and see how it all worked. Well, suddenly I am the most interested person in the world in milk powder! Short of starting to drink the stuff myself, I knew I would be on the backfoot in this tour (with lots of other farmy people) and I needed to appear very, very interested, because once this week is out of the way and we have visited farms and milk powder factories around every perimeter of this amazing country, I get to go to France for a few days before I head home ... Paris. Boom! In television they teach us a thing called noddies, which is when you have finished interviewing someone and the camera flicks back on you, you quietly just sit there and nod your head, appearing very interested even though there is usually no one in front of you at the time. Finally, a skill I could use in farming! One of our first stops was at a local farm to have a squizz around. I could already feel myself slipping asleep in the car on the way there as talk turned to cow colostrum.

But hooray for that good old country air, as I jolted myself awake again I took in a quick scan of the green lush pastures, and even for a rookie like myself I could tell something major was missing – the cows! The paddocks were all empty. Nothing, nada, not even a little calf or a baby lamb in sight. A few moments later I realised the cattle were all inside. They farm inside! Suddenly I was interested for real … how cool would this be back home? Imagine it, get up in the morning, make a coffee, and say hi to the cows without leaving the comfort of your own home. Ok, so maybe not quite like that! This

was suddenly becoming a very interesting trip ... we were only on day four and apart from croissants for breakfast being one highlight, I think I might actually be learning something too. Could I finally be becoming the rural warrior I’ve only ever dreamed about? Probably not ... the lure of shopping in Paris, talking French (with the two sentences I know) and soaking up every moment of amazing culture is simply too strong, so au revoir for now! Ginger fudge cake

Makes 30 5x5cm pieces

A

few simple favourites I threw together for a family gathering recently. When time is short these can be prepared the day before and then you’ve got time to relax on the day. Enjoy – the ginger fudge is addictive. With the compliments of qualified chef and baker Sarah Kingsbury

4 packets (1kg) wine biscuits 350g melted butter 400g condensed milk 2t ground ginger 2C chopped crystallised ginger 1/2 C coconut 125g butter 3C icing sugar 2T golden syrup

1T ground ginger

– Mix melted butter, condensed milk, ginger, crystallised ginger and coconut together thoroughly. Next, with cake mixer using the paddle attachment, break up until biscuits are of a decent size, but not finely chopped. Mix biscuits into the rest of the ingredients well.

Smoked chicken, feta and sundried tomato pie

1 onion 500g shredded smoked chicken 1/2 C cranberry sauce 1C feta 2C baby spinach 1C grated cheese 1C chopped sundried tomatoes 10 pieces of streaky bacon

10 eggs 2 1/2 C cream Pastry

– Line a 20x20cm 5cm deep tin with savoury pastry. – Place chicken, feta, spinach, cheese and tomatoes inside the tin on top of

pastry. Cover this with the 1/2 C of cranberry sauce in patches. – Whisk eggs, cream and salt and pepper together to line the previous ingredients. Top the dish with a layer of streaky bacon. – Cover with aluminium foil and bake at 170°C for 1 hour until cooked. Serve.

Ginger fudge cake.

Cinnamon oysters – Line a baking tray and firmly press the base mixture into the tray. – After, add all icing ingredients (butter, icing sugar, syrup and ginger) into a pot and beat for a few minutes until there are no lumps. – Spread over fudge in tray and place in fridge to set. Set time is about 4-6 hours or overnight.

Makes approximately 24

8 eggs 240g sugar 100g golden syrup 1t ginger 2t baking 4t cinnamon 240g flour

– Whisk eggs and sugar on high for 4 minutes.

Cinnamon oysters.

– Add melted golden syrup and lightly/ slowly mix in sifted dry ingredients to ensure the air from the egg mixture does not escape. – Grease or spray muffin tins (medium size). Bake at 150°C for 8-10 minutes. – Slice the oysters horizontally until about halfway through. Fill with whipped cream and sprinkle with cinnamon for a finished touch.

Evaluating your retirement needs

The $64,000 question – and everyone’s answer will be different – but $64,000 certainly won’t be enough! Determining how much you will need to save for retirement will depend upon several variables, including your current age, health, income and level of debt. Here are a few guidelines to help you evaluate your retirement needs. Define your retirement goals: Retirement guru Barry La Valley defines retirement, not as an age, but when you have the freedom to “do what you want, when you want and how you want”. So, determine your goals in retirement – be it travel, or pursuing leisure interests – and calculate how much you will need to fund them. Bear in mind, your retirement may last nearly as long as your working life; statistically, 80 per cent of 65-year-old men can now expect to live to 90, and 65-year-old women to age 94. Unsurprisingly, healthcare in older age can have a big impact upon retirement expenses. Start saving early: As a general guide, it is recommended you aim to have saved the equivalent of your annual salary by age 35, three times annual salary by 45, and five times annual salary by age 55.

Thus, the earlier you can implement a regular savings plan, the better the chance of accruing sufficient funds. Pay off debt: If you are a homeowner, chances are you will have a mortgage on the property. Most people will also utilise loans and/or credit card facilities.

Three to six months equivalent to living expenses is generally recommended. Invest other savings: Most of us have KiwiSaver as a low-cost fund to accumulate our retirement savings. The Government has recently enabled two additional employee contribution rate options of 6 per cent and 10 per cent of gross salary (3 per cent, 4 per cent and 8 per cent also remain). Where possible, ensure you secure the “free” Government contribution of $521.43 by contributing at least $1042.86 annually before June 30 (equivalent to $87 per month). The SuperGold Card is for eligible seniors and veterans, recognising the contribution you make to New Zealand society. The card gives you access to discounts and offers from a wide range of businesses, government-funded free off-peak public transport concessions, services and discounts from your local council. The back of the card indicates whether you are entitled to New Zealand Superannuation (NZS), the Veteran’s Pension and/or Community Services Card. The card does not contain any personal information other than your name, client and card numbers, and any of these entitlements. There are two versions of the card; an S-branded SuperGold Card and a V-branded Veteran SuperGold Card. Who can get a SuperGold Card? You are eligible to receive a SuperGold Card if you are: 65 years or over and legally and ordinarily resident in New Zealand; under 65 years and receive the Non-Qualified Spouse or Partner rate of NZ Super or Veteran’s Pension, under 65 years and currently receive the Veteran’s Pension. If you are not legally and ordinarily resident in New Zealand, you will not qualify to receive a card – “ordinarily resident” means someone who is normally and lawfully resident in New Zealand and intends to stay here. Is there an expiry date on the SuperGold Card? From May, 2010, SuperGold-only cards (those

without Community Services Card entitlement) no longer have an expiry date. If you have a SuperGold-only card issued before this date, that has now expired. The only cards with an expiry date are Combo Cards. Combo cards double as both a Community Services Card and SuperGold Card. They will have the letters CSC on the back of the card, and EXP to indicate the expiry date of the card. These cards have an expiry date because entitlement to CSC can change over time and clients are reassessed for eligibility at least every three years. How does the Community Services Card work with the SuperGold Card? If you have a current Community Services Card at the time you are granted NZ Super, your current Community Services Card can be used to its expiry date, but you will need to re-apply when it expires. NZ Super is counted as income and we need you to update your income details. If you are successful when you re-apply for a Community Services Card, a new SuperGold Card/Community Services Card ‘combo card’ will be issued to you with the initials ‘CSC’ on the back. Please note the expiry date on the back of your card as this can range from one to three years, depending on your personal financial circumstances. The dreaded DOMS

A

lmost everyone has experienced sore muscles one to two days after a big workout, hill run, tramp or first game of the year, but do you know what causes that muscle pain? Now just to be clear, I am talking about generalised muscle tenderness and pain, not specific, isolated pain if you have strained a muscle! DOMS means delayed onset muscle soreness and it usually comes on 24-48 hours after unaccustomed high-intensity physical activity. DOMS can occur anywhere in the body that has recently been exposed to unfamiliar or particularly intense physical activity. It is usually more severe after eccentric exercise, which is where muscle contraction happens while the muscle is lengthening out, such as lowering a weight down or going downhill. This can cause micro tears in the muscles due to the muscles being put under more load than they are conditioned to. So why is it always roughly 48 hours later that the stiffness and soreness in your muscles is at its worst? This is generally because of the inflammatory process that is taking place within your muscles helping to repair and restore those many micro-tears. Many hormones and chemicals are released by the body during this time to clean up the inflamed site and rebuild the microscopic tears that have occurred. DOMS is not a bad thing. It is the body breaking down the overloading bits of your muscle and rebuilding them better than they were before – this is how we adapt and get stronger! You can of course have too much of a good thing though, so try and follow the Goldilocks principle if you are looking for muscle adaptation: – Sore for less than 24 hours? You’ve

gone in too cold – Sore for 24-48 hours? Just right. – Sore for more than 48 hours? You’ve gone in too hot, maybe take it easier next time! Treatment of DOMS could include any of the following: active recovery (light cardio, like walking or jogging), massage, hot and cold baths, compression garments, stretching, massage and foam rolling. It is important to keep your muscles moving even with severe DOMS to reduce further stiffening and soreness. Increased blood flow to the area will help the inflammation process along by bringing in new, fresh nutrients and oxygen. In other words, keep active and carry on!

hours of sleep is important to your good health. Never feel guilty for getting a little extra sleep when your body requires and craves it. Urgently attend to your needs and you will feel so much better, and the ripple effect around you will resonate on to others close by you. You will feel and be a much more content person. Remember there is only one of you, acknowledge the importance of looking after yourself well; if you get sick, it is hard to look after others. Insist on time out when and where you

can. Taking time out throughout your day is important to have a recharge and to consolidate what you have been doing and where you are headed next. Racing from one job to the next can only be exhausting for you. Spare the time to be with the ones you love, as time is a really precious commodity. Using it wisely when and where you can is important to those in your life. Healthy living makes every cell in your body shimmer and shine, so try to live the healthiest way you can, to see and gain the benefits of living a healthy lifestyle.

Bliss balls

These are a healthy, nutritious way to have a scrumptious treat for special occasions, or just any day really. They resemble the flavour of the rum balls once made for Christmas. You can make these bliss balls a little more special by coating them in a variety of different coatings. But, if you’re in a hurry just coat them all in fine or shredded coconut. A nourishing and nurturing dish to have when you are looking for a healthy treat. They are packed with a good variety of vitamins and minerals.

120g dates 80g prunes 80g apricots 80g cranberries

80g almond meal 4-6T cocoa or chocolate powder 2t vanilla essence or vanilla bean essence 10T hot water

– Measure out all the fruit and place into separate bowls. – Chop all the fruit into small dice and place back into their separate bowls. – Cover the dates with boiling water and leave for 3-4 minutes. – Drain them and set aside the liquid. – Evenly place the chopped fruit – dates, prunes, apricots and cranberries – into a food processor. – Sprinkle the almond meal, cocoa and vanilla essence over the fruit and pulse on low for a few minutes. – Add the leftover hot water from the soaked dates and whizz until smooth or well blended to your taste. Don’t

over whizz if you like to taste the small chunks of fruit. – Using a teaspoon, place rolled balls on to a large clean plate. Having slightly wet hands as you go makes for easy rolling of balls. When finished place in the fridge to set. – Roll the balls individually into the toppings of your choice. – Topping choices – fine coconut, grated dark chocolate, chocolate powder, strawberry or raspberry powder, finely chopped nuts (plain walnuts, peanuts, cashews or honey-coated nuts) or melted white or dark chocolate. Three Ps for the garden

he weather has cooled and days are shorter, but there are still tasks to be done in the garden, so pop on your gumboots and get stuck into the three Ps – preparation, planting and pruning. Preparing your garden As a general rule you should incorporate fresh compost into your garden before planting out each season. This improves soil structure, provides important nutrients and food for vital soil micro-organisms and helps plants develop strong, healthy root systems. Vege patch Stagger plantings for regular harvesting rather than having your vegetables mature all at once. Keep planting out seedlings of broccoli, cabbage, cauliflower, spinach and silverbeet. Seeds to sow directly into the soil include broad beans, onions, peas, radish and spinach. Autumn temperatures can drop suddenly, wiping out young plants. A forecast of 4°C or lower means you should protect against frost. Use a frost cloth (or old net curtains) over the garden or re-purpose plastic bottles, flower pots or jars and put them upside down over individual plants (remove any coverings in the morning). Rotate vege crops and every few years rest parts of your garden by sowing a green crop. This helps provide organic nitrogen

naturally and protects beds over winter. Strawberries Mound soil into rows and place strawberry plants in the ground approximately 15cm apart. Mounding improves drainage and allows the soil to warm up quicker and maintain this warmth throughout the growing period. Flower garden Some trusted winter flowering annuals to plant include – alyssum, aquilegia, calendulas, cineraria, cornflowers, larkspur, pansies, primulas, stock, violas and wallflowers. Most perennials are dormant this time of the year, so it’s a good time to divide them or move them to another part of the garden. Fruit trees Start pruning of pip and stone fruit trees including apples, apricots, nectarines, peaches and plums. Ensure pruning

shears/secateurs or loppers are nice and sharp and have been cleaned. Spray pruned fruit trees with a copper compound to help prevent reinfection of fungal diseases in spring. Roses Where leaves have fallen in cooler areas, rose plants can be pruned. Straight after pruning, apply a clean-up spray of horticulture oil and an application of copper oxychloride (not at the same time). Bulbs This is the last month to get bulbs in if you want colourful blooms come springtime. Garlic can also be planted this month. Plant each clove 40mm deep and 60mm apart. Many succulents grow naturally in desert conditions where the days are very hot and the nights can be very cold – there will be no problems with these types of succulents. However, other succulents are less tolerant of cold weather and will perish in particularly cold winters. Succulents by their very nature prefer dry conditions and wet, cold winters can lead to problems, especially if the plants become waterlogged in their growing containers. To be on the safe side, it would be wise to place your succulents where they are protected from frost. Try to keep them on the dry side by reducing their watering during the winter months.

or bowl of a stand mixer. Mix until completely incorporated. – Press 2/3 of the crumble mixture into the lined tin. Place the remaining mixture in the refrigerator. Use the back of a spoon to smooth base out evenly. Bake for 15 minutes then set aside to cool. – Cut apples into thin slices then place in a pot over a low heat along with the ground spices. Cook for 10 minutes or until apples have just started to soften.

Be careful not to let them get mushy. – Smear 2/3 of the dulce de leche over the baked base then top with apples. – Use your hands to crumble the remaining crumble mixture over the apples. – Bake for 25-30 minutes or until golden brown. Leave in the tin to cool completely before cutting into squares. – Place remaining caramel in a microwave-proof bowl and microwave for 30 seconds or until runny. Drizzle over bars and chill.
