LEMON CHEESECAKE EASTER EGGS

Make the cheesecake and use to ﬁll whatever size egg half you like – from smaller, individual versions to one large egg as a fab centrepiece. MAKES AS A GUIDE, ABOUT 10 x 100g CHEESECAKE PORTIONS READY IN 40 MINS, PLUS CHILLING PRICE PER 100G FILLING 50p ● 5 leaves Dr Oetker Platinum Grade Leaf Gelatine ● 125ml lemon juice – about 3-4 lemons ● Zest 1 lemon, finely grated ● 750g fat-free quark, at room temperature ● 175g icing sugar, sifted ● Hollow chocolate Easter eggs, separated

into halves ● Assorted Easter treats to decorate

1 Soak the gelatine leaves in a bowl of cold water for 5 mins. Heat the lemon juice in a pan until hot; take off the heat. Lift the gelatine out of the water (squeeze out the excess) and stir into the lemon juice until dissolved. 2 Beat the lemon zest, quark and icing sugar with an electric whisk or wooden spoon until smooth. Add the lemon juice mixture and beat to combine. 3 Pour the cheesecake mixture into the egg halves and chill until just set – about 2-4 hrs. Decorate with your favourite Easter treats, if you like. Make these treats with your spare choc • Split a croissant to make a pocket, push in chunks of leftover Easter egg. Wrap in foil and cook at 220C/200C Fan/Gas 7 for 10-15 mins, until the chocolate has melted. • Pour a mug of milk into a pan with spoonfuls of cocoa powder to taste. Add a few chunks of leftover Easter

egg and stir gently until melted and the milk is piping hot. Pour into a mug and top with squirty cream and mini marshmallows, if you like. • For a decadent cake icing, stir chopped miniature eggs into buttercream and pipe (using a plain nozzle) onto cupcakes.

Cut Italian prosciutto into strips and wrap tightly down the length of asparagus spears. Heat oil in a frying pan over a medium hob. Fry the asparagus for 6-8 mins until it has softened and the prosciutto is crisp. Meanwhile, bring a pan of water to the boil. Reduce the heat to a simmer and gently crack eggs into the water, one at a time. Poach for 5 mins until the whites are set. Remove from the pan with a slotted spoon and drain on kitchen paper. Top the asparagus with a poached egg and a grind of black pepper. Drizzle with balsamic glaze and scatter with fresh basil to serve.

Blitz destoned and chopped mango in a food processor or blender until smooth. Add a squeeze of lime juice if it’s too thick. Set aside. Heat a non-stick griddle or frying pan over a high heat. Griddle fresh peach slices for 1 min on each side until charred lines appear and the fruit is slightly softened. Set aside. Toast thick slices of Extra Special All Butter Brioche Loaf until golden. Spread reduced-fat crème fraîche over the toast and top with the peach slices. Drizzle with some of the mango sauce. Garnish with fresh passion fruit seeds, if you like, and serve at once.

Heat a knob of unsalted butter in a non-stick frying pan over a low heat. Whisk free-range eggs with a splash of milk to combine then season with pepper. Pour the eggs into the pan and cook over a low heat, stirring constantly, until thick and set. Toast slices of sourdough bread and top with Extra Special Mild & Delicate Scottish Smoked Salmon. Spoon over the eggs and sprinkle with chives. Serve with roasted vine-ripened cherry tomatoes, if you like.

We asked them about their passion for wine. When did it all start? M: When I was in my 20s, I accidentally ordered a dessert wine with the fish at a swanky restaurant, and by the time I realised my mistake it was too late! I made sure to buff up my wine knowledge immediately! What’s your favourite wine? M: I go for a red like Extra Special Bordeaux Supériur – it’s great with a roast. H: When I’m in the mood for some fizz, you can’t beat Extra Special Prosecco Rosé Brut. Any tips for choosing wine? M: Make a note of any wine you like, then look at labels or the tasting notes in store to find one from a similar region. H: I love a comedy name. How do you use up leftovers? 1 TOFFEE POPCORN HARDSHAKE

A super-indulgent cocktail to share with your bestie – just add two straws! In a blender, blitz a scoop of vanilla ice cream, a small glass of milk, a dollop of smooth peanut butter and a small handful of toffee flavour popcorn with a measure of Baileys. Carefully slice off the top of a hollow Easter egg. Fill with the milkshake. Top the egg with squirty cream, more popcorn, some chopped Reese’s Peanut Butter Cups and caramel sauce, if you like. A grown-up twist on the retro kids’ favourite. Whizz a small handful of raspberries in a blender with a measure of Chambord Raspberry Liqueur. Put a scoop of Haagen Daaz Vanilla Ice Cream into a cocktail glass. Garnish with whole raspberries, if you like, and a sprig of mint. Pour over a measure of Fentimans Rose Lemonade. Serve at once.

3 TIRAMISU MARTINI

The classic Italian pudding now comes in a glass. Yum! Pour a measure of chilled Baileys into a cold cocktail glass. Gently pour in a spoonful of single cream. Follow with a measure of Kahlua or Tia Maria. Dust with cocoa powder and add a sponge finger that can be used as a stirrer. Serve at once.
