WELCOME For me, October is when it feels like autumn’s truly here – I love the crisp air, fallen leaves, and digging out my cosiest jumpers. Plus, there’s nothing like snuggling up on the sofa to watch a movie with a delicious treat to share. I’ll definitely be trying the Dreamy S’mores Sandwich Cookies (p39) – quick, easy and made with just three ingredients, it’s really my kind of baking.

It’s also slow cooker season, and I’m all set up to try a Whole Chicken with Bacon Gravy (p18). I’ll be introducing my friends to our #RollBackHacks, too – Mexican-style Vegan Nachos on a budget (p45) are just made for Friday nights!

Of course, October also means Halloween. Our spooktacular white pumpkins are ideal for creating a no-carve space monster (p76). I can’t wait to show my Halloween-mad family our brilliant range so we can dress the house – and ourselves – for fright night! Remember, too, at this time self-care is as vital as ever, so Thrive (p83) is packed with expert advice and inspiring stories. 1 Put the onions, garlic and ginger in a processor and blitz to a coarse paste.

2 Heat the oil in a frying pan on medium; add the bay leaves, cardamom, cloves and cinnamon. Fry for 1 min until fragrant.

3 Stir in the curry powder and fry for 1 min. Add the onion paste. Fry for 5 mins, stirring, until slightly darkened.

1 Heat the oil in a large nonstick frying pan on medium. Carefully fry the whole chicken on all sides until golden, then transfer to the slow cooker.

2 In the same pan, fry the shallots for 4 mins.

Add the bacon and garlic and fry for 2 mins until starting to colour.

3 Transfer to the slow cooker with the herbs,

stock and wine or water.

Cover and cook on low for 5 hrs, or until the chicken is cooked through and the meat comes away from the bone easily.

4 Remove the chicken and keep warm. Remove the thyme from the slow cooker and stir in the gravy granules.

5 Carve the chicken, divide between 4 plates and spoon over the bacon gravy. Add the mash and greens on the side and top with black pepper to serve.

Selection Boneless Pork Shoulder Joint ● 1 onion, finely chopped ● 2 cloves garlic, crushed ● 100ml apple juice ● 400g tin chopped tomatoes ● 1tbsp clear honey ● 1tbsp black treacle ● 1tbsp cider vinegar ● 4tbsp barbecue sauce ● 400g tin black beans, drained and rinsed ● 35g Asda Taco Seasoning ● 8 Asda Taco Shells ● 2 Little Gem lettuces, shredded ● 1 pack Asda Tex Mex Dip Selection 1 Put the pork, onion, garlic, apple juice, tomatoes, honey, treacle, vinegar and barbecue sauce in the slow cooker. 2 Remove the pork and shred using forks. Return to the cooker; stir through the beans and taco seasoning.

Cover and cook for 30 mins.

3 To serve, fill the tacos with the pork mixture and lettuce, then let everyone add their choice of dips.

Chickpeas in Water,

1 Preheat the oven to 200C/180C Fan/Gas 6.

2 Scatter the chickpeas on a large baking tray, along with the cauliflower florets.

Mini spinach dumplings get a spicy, herby hit SERVES 4 READY IN 30 MINS PRICE PER SERVING 79p 1 Bring a large pan of water to the boil, add 700g Maris Piper potatoes, chopped, and cook for 12 mins until tender. Drain and mash.

2 Put 50g Asda Mild Baby Spinach in a food processor with 1 egg, beaten; blitz to a paste.

3 Stir through the mash and season with black pepper. Add 150g-200g plain flour, 50g at a time, mixing as you go, until it forms a dough.

4 Dust a work surface with flour and knead the dough for 1 min. Divide into 4 and roll into logs.

Milk Chocolate Flavour Dessert Sauce and Askeys Treat! Toffee Flavour Dessert Sauce ● 150g frozen yogurt ● 150ml semi-skimmed milk ● 4tbsp squirty cream ● 20g Asda Toffee Popcorn ● 10g dark chocolate, shaved into curls with a veg peeler

1 Preheat the oven to 180C/ 160C Fan/Gas 4. Grease a 21cm round ovenproof

1 Prepare 2 sundae glasses by tilting them to the side and circling inside the rims, about 1cm down, with the chocolate and toffee sauces.

Then stand the glasses upright so the sauces drizzle down inside them.

2 Blitz the frozen yogurt and milk in a blender.

3 Divide the milkshake mixture between the 2 glasses, top with squirty cream, toffee popcorn, a little more toffee sauce and some chocolate shavings.

4 Serve immediately with 2 paper straws in each glass.

● No wok? Use a large frying pan instead. ● Dice meat, poultry or tofu into equal-sized pieces so they all cook evenly. ● It’s important to cook all meat and especially poultry fully before adding the other ingredients. ● Cook on a medium heat then turn lower nearer the end to keep the stir-fry hot but not overcooked. ● Stir continuously to make sure nothing burns, sticks or overcooks. ● Small-sized frozen veg – such as peas, sweetcorn and ready-chopped mixes – can go straight into the wok from the freezer; cook through until piping hot. ● Cook the noodles or rice according to the pack instructions, then add at the end just to incorporate so they don’t overcook. ● Add the sauce 1tsp at a time, tasting as you go along, until the flavour is to your liking. ● Greens cook quickly, so add towards the end to help ensure they keep their fresh flavour and colour.

elcome to Kids’ Kitche en, where we feature recipes cre eated for kids, by kids. This month, Lola, nine, shows us how to make one of he er favourite recipes, chicken and mushroom pasta. She loves this creamy dish because it’s quick and easy to make and combines all her fav vourite flavours.

Lola has food allergies – the main one is shellfish – but she says, ‘I try nott to let it stop me being adventurous with food d or trying new combinations. My mum makes sure I stay safe while encouraging me to make cooking fun.’

Ask an adult to bring a pan of water to the boil, then add the pasta and simmer for 10-12 mins until almost tender. Add the green beans for the final 4 mins of the cooking time.

Drain and return to the pan.

Meanwhile, mix the soft cheese with the milk to loosen it, then set aside.

Heat the oil in a frying pan on a medium setting. Add the chicken and cook for 4-5 mins, stirring, until browned all over. Then add the mushrooms and cook for a further 3-4 mins, stirring often, until browned.

Reduce the heat, add the red onion and cook for 4 mins, stirring often, until softened but not browned.

Add the chicken mixture and the soft cheese and heat through, stirring.

Season with black pepper, scatter over the Parmesan and serve with the salad.

MAKE AHEAD

RICE KREEPIES BARS

Make these colourful critters a couple of hours in advance, using bought bars and melted chocolate 1 Put some Kellogg’s Rice Krispies Squares Chewy-tastic Marshmallow Bars on a tray lined with baking paper.

2 Zap a bar of Asda White

Chocolate with a knob of unsalted butter in the microwave for 30 secs at a time, stirring in between, until completely melted and smooth.

3 Divide the mixture between a few bowls and add a drop of Dr. Oetker Extra Strong Food Colour Gel, in your choice of colours, to each one. Stir until you get a uniform shade.

4 Use a spoon to coat the top half of each Rice Krispies Square with

the various colours of the chocolate to make the monster heads.

5 Add Cake Décor Edible Eyes to make different monster designs, pushing them into the chocolate while it’s still melted.

Allow the bars to set for 5 mins, then transfer to a serving plate.

USE READY-ROLLED PASTRY

‘MUMMY’ PASTRY PLAIT

It’s all eyes on the prize when you dish up this appley puff!

1 Remove a 375g pack Asda Ready Rolled Puff Pastry from the fridge 10-15 mins before needed.

2 Peel, core and slice 4 Granny Smith apples and put in a pan with 80g caster sugar and a small pinch cinnamon. Cook on a low heat until soft and golden. Set aside to cool.

3 Meanwhile, preheat the oven to 200C/180C Fan/Gas 6.

4 Unroll the pastry, leaving it on the baking paper provided, so the shorter side faces you. Spoon the apple down the centre of the pastry, leaving a 2cm border at the top and bottom.

5 For the ‘mummy’ bandage effect, use a sharp knife to slice the pastry into 1cm-wide strips from the outer border towards the filling (stop when you’re 1cm away from the apple mixture).

6 Fold over the top and bottom 2cm section of the pastry. Alternating from both sides, fold the pastry strips over, crisscrossing to encase the apple in a plait, until you reach the bottom. Chill for 20 mins.

7 Brush the pastry with 1 egg, beaten.

Bake for 25-30 mins or until golden.

8 Allow to cool for a few minutes then brush over 3tbsp apricot jam to glaze. Decorate with Cake Décor Edible Eyes before serving.

1 Cover 5 Chupa Chups lollies (in their wrappers) with foil sheets from the Asda Cute Foil Art pack. Twist the foils tightly around the top of each stick to secure.

3 Create the mouth, using an A4 felt sheet. (Felt is easy to cut with craft scissors and sticks to the pumpkin’s curved shape better than card.) We used purple felt and cut out ‘carved’ teeth, but you can get creative – use any colour you like and design your own spooky smile or scowl.

4 Dab dots of PVA A glue all over the e back of the mouth..

Carefully stick it on n your Asda White e Pumpkin, smoothing it firmly into place..

VITAL VITS! Vitamin D works with both calcium and phosphorus in the body, so, even if your calcium intake is adequate, deficiency in vitamin D can prevent calcium from being absorbed. This may lead to reduced mobility, bone fractures, rickets and, in extreme cases, skeletal deformities. Research has also shown that vitamin D may have a much wider impact on health: a lack of it has been linked to obesity, 84 | ASDA MAGAZINE

cardiovascular disease and some forms of cancer.

Vitamin D can also help support the immune system, making it vital for fighting off any pesky bugs.

So it’s especially important during the darker months for helping to maintain health and vitality.

SUN IS SHINING It’s estimated that 29-54% of people in the UK are not getting enough vitamin D; this is mainly due to the limited amount of time we spend outdoors, and the strength of the sun’s rays during our winters.

Research shows that UV

exposure is not strong enough to give everyone sufficient vitamin D, so Public Health England advises that we supplement with 10 micrograms a day during winter – or all year round for those at risk.

Yet, while supplements are useful, it’s important to make the most of vitamin D-rich foods, too.

PLATE IT UP Egg yolks are a good source of vitamin D – one egg supplies 5% of your daily recommended intake.

Red meat, liver and oily fish are also a source, and some foods, such as fat spreads and breakfast cereals may be fortified with vitamin D. (Check the label to confirm, as not all products are fortified.)

Because vitamin D is found almost exclusively in animal products, veggies and vegans may be at a higher risk of not getting enough. So make room for mushrooms! Like humans, mushrooms can synthesise vitamin D when exposed to sunlight, making them the best plant-based source of this vitamin. Funghi-lievable!

his year, we’ve spent more time indoors than ever before and now, with the darker winter months ahead, we’re even less likely to be able to top up our vitamin D levels as much as we should.

Vitamin D is often referred to as the ‘sunshine vitamin’, as it’s created in our bodies when our skin is exposed to sunlight – but it is actually a hormone, and important for our health and wellbeing.

Our bodies make around 90% of the vitamin D we require, with the other 10% coming from certain foods.

So, if you’ve been spending time indoors or covering up when you’re outside, you may be in need of a vitamin D boost, especially during the winter months.

Sober October is the perfect way to reset your alcohol intake and soak up the positives of one month clean. First off, you need lots of sleep for a clear head and an energy boost. In fact, you may find you enjoy life so much more, you decide to quit completely.

When I gave up drinking nearly four years ago, I realised that there’d never be a right time to quit.

I had two weddings, a hen weekend, birthdays and a holiday to negotiate.

Of course, at each celebration, there was a (very good) reason to drink.

What got me through was that my desire to enjoy each event clear-eyed and clear-headed was stronger than my desire to partake of the tipples on offer – and I remember them all in full, vivid colour as a result.

So, the next time you think you need a drink because it’s Christmas/ a birthday/your holiday, remember, you can just say no – what goes in your glass is up to you.

Switching to a 100% green energy supplier may not help you to use less energy, but it will ensure that the electricity you do use is generated from renewable sources (solar, wind and hydropower) instead of non-renewable sources (coal, gas and oil) that contribute to climate change.

Step away from the thermostat!

Turning down your thermostat by one degree can save around £75 a year†.

Keep a basket of cosy blankets within reach of the sofa for a handy extra layer.

Cook efficiently. Conserve energy and reduce cooking times by putting lids on pans, using the correct size hob ring, only boiling as much water as you need at a time, and reheating food in the microwave instead of the oven.

Stick to showers. A bath is always inviting in winter, but showering saves time, water, energy and money. Cutting your daily shower by a minute could save £8 a year†.

Use low-energy LED lightbulbs.

Due to the phasing out of halogen and incandescent bulbs, it’s likely you’re using at least some LEDs – if not, switch ASAP. LEDs use 75% less energy than old-style bulbs†† and last 10 times longer†,, so you won’t have to replace them as often. After the initial outlay, they may save you £40 a year†.

If want to make your home more energy-efficient, take the first step by researching loft and wall insulation and double and triple glazing – it all adds up!

It’s Breast Cancer Awareness Month! Tickled Pink is proud to work with two of the UK’s leading breast cancer charities to help change the future of breast cancer outcomes in the UK...

ur Tickled Pink campaign has been supporting breast cancer charities for 24 years. It’s an initiative that works with two charities: Breast Cancer Now and CoppaFeel!, who joined the partnership this year.

Since 1996, Tickled Pink has helped to fund life-changing support services and world-class research. We are also driving the importance of regular boob checking, as the earlier breast cancer is diagnosed, the better the chance of successful treatment.

Sadly, one woman in seven will be diagnosed with breast cancer during her lifetime, with around 55,000 women and 370 men receiving 94 | ASDA.COM

this diagnosis each year in the UK. Proudly sporting the pink ribbon that has become a symbol for breast cancer charities, our colleagues take time throughout the year to help raise funds, organising activities such as tombolas, pyjama parties, treks and cycle rides. In 2009, following her diagnosis with secondary breast cancer, Kris, now 34, founded breast cancer awareness charity CoppaFeel!.

‘At 22, I found a hard lump in my boob. I had no idea

how long it had been there or if it was normal for me.

I was told it was hormonal, so it was devastating when, after three visits to my doctor, I was diagnosed with stage-four breast cancer at the age of 23.

Meet Jon Turner

Jon, 45, a spokesperson and fundraiser for Breast Cancer Now, supported his late wife Rachel through her illness. He lives with their two children, Jessica, 12, and Freya, 9.

‘Rachel – I called her Rach – was accustomed to the lumps and bumps that were usual for her, so when she found an acorn-shaped

lump while in the shower, she didn’t panic,’ recalls Jon. ‘Three weeks later, it was still there. Rach underwent an ultrasound, mammogram and biopsy which confirmed grade-three triple-negative invasive breast cancer – this is a very aggressive type that can only be treated with surgery, radiotherapy or chemotherapy. Two weeks after that, Rach had an operation to remove the

cells from the primary tumour in the breast spread to other parts of the body. In my case, it was found in my spine.

‘I wanted to educate people – and young people especially – about breast cancer, to let them know an earlier diagnosis means a higher chance of recovery, so I founded CoppaFeel!.’

Kris, who now lives in Cornwall, spent most of lockdown writing a book – out next spring – about her journey from being a carefree 22-year-old to the founder of one of the UK’s most important cancer charities. ‘Lockdown gave me the opportunity, time and focus to get on with writing the book,’ she says.

And as for Coppafeel!’s partnership with Tickled Pink? ‘We’re so excited!’ says Kris. ‘We want to expand our reach with people from all walks of life, empowering them to get to know their normal, check their boobs and pecs regularly, and act upon any changes. With Tickled Pink, we’ll have the chance to make waves and save lives.’

We were devastated.

‘In the three years that followed, we made the best of our time as a family. One day, Jessica asked, “What’s going to happen to you?” and Rach answered, “I’m going to heaven”.

‘Breast Cancer Now’s website was a trustworthy source of reliable information when we needed it most.

We were also able to speak to nurses on the charity’s phone helpline whenever we had any questions.

‘With the charity’s support we felt one step ahead as we always knew what was coming next in terms of treatment. It was a guiding

‘Rach died at the start of January 2018 with her family around her. I see her in my daughters every day – they have their mum’s kindness, sensitivity and wicked sense of humour. I encourage them to talk about their mum, and the incredible support from Breast Cancer Now has continued.

‘After Rach died, I began running to deal with the grief. In 2019, I raised more than £3,000 when I ran in the London Marathon, and I knew that Rach was with me every step of the way.’

Jon is determined to raise awareness, too. He says: ‘Early diagnosis can make a massive difference, so check yourself regularly. Never think it can’t happen to you.’

A lump or thickening that feels different from the rest of the breast tissue.

A sudden change in size or shape.

A change in skin texture such as puckering or dimpling (like orange skin).

A swelling in your armpit or around your collarbone.

Discharge (liquid) from one or both of your nipples.

Constant, unusual pain in your boob or armpit.

Your nipple becoming inverted (pulled in) or changing its position or shape. Also be aware of any crusting or a rash around the nipple.

Getting to know what’s normal for your boobs is important so you can spot any unusual changes early. So it’s important to check your boobs regularly and see your GP if you notice a change.

You’ve spoken honestly about battling depression.

How do you help maintain your mental health?

I try to make more mindful decisions, so now I exercise more and drink less. I’d already made changes before Covid-19. For instance, instead of staying out late on a Sunday with another bottle of wine, I’d head home, watch a film and go to bed early.

How have you coped during lockdown?

I got into a good routine with regular exercise in my garden. I love being in the kitchen, so doing more cooking helped to keep me in check. I stocked up on fresh veg and blitzed lots of soup to make sure I was eating well. When it was announced we were allowed to see friends and 98 | ASDA MAGAZINE
