The Fourth of July is a big deal in America and a great opportunity to throw a backyard party with food and fireworks to celebrate the ‘special relationship’. ‘Mum fuelled my passion for food’

EastEnders star Lisa Faulkner takes a trip down memory lane with her mum’s Bolognese sauce

M

y passion for food came from my mum. She was an amazing cook and I feel she’s now in everything I do, especially when I’m in the kitchen.

Mum and Dad had to live frugally when I was growing up and Mum would buy a load of mince and make a variety of dishes including thatched cottage pie, moussaka and my favourite, spaghetti Bolognese.

After she died, when I was 16, my sister and I became the cooks of the house. To this day, I still use my mother’s utensils. She’d dreamt of working in home economics and would have been so proud of me winning Celebrity Masterchef in 2010.

I find great joy in passing on Mum’s recipes to my daughter Billie, 10. That to me is the joy of cooking – sharing a love of food, a memory of why something tasted so good. Billie loves Mum’s Bolognese recipe and even helps me cook it. We add mint to vary the flavour and use ‘spiralised’ butternut squash instead of pasta.

Food has played such an important role in my life. I think about it pretty much all the time and me and my boyfriend John [Torode] talk about it non-stop.

So it’s apt I’m doing it as a job now.

COOKING UP A STORM

Mum’s ’Bolognese’ SERVES 5 READY IN 2 HRS PRICE PER SERVING £1.42

olive oil * 5tsp 1 onion, sliced * 1 clove garlic, * crushed 400g minced * lamb 200ml dry * white wine 400g can * chopped

tomatoes 1tbsp tomato purée 400ml chicken stock Pinch of nutmeg 1 large butternut squash 1tbsp chopped mint, plus extra

1 Heat 3tsp of oil in a pan and fry the onion for 10 mins until soft and golden. Add the garlic and fry for 1 min.

Add the lamb. Increase the heat and break up the mince with a spatula until browned.

2 Add the wine (use water or grape juice if cooking for kids).

Simmer until reduced by half, then add the tomatoes, purée and stock. Season, stir in the nutmeg and

simmer for 1 hr 30 mins, adding more stock if too dry.

3 Meanwhile, preheat the oven to 190C/170C Fan/Gas 5. Cut the squash across the middle to separate the thinner ‘neck’ from the wider bulb – save the bulb for another dish.

Peel the neck and make into noodles.

Season and drizzle with 2tsp oil, then roast for 20 mins or until tender.

4 Stir the mint into the sauce. Serve on the noodles and top with feta and mint leaves.

l 400g plain flour l 100g unsalted butter, diced l 100g lard l ½ x 400g pack Asda Sweet Potato & Butternut Squash l 1 large red onion, thickly sliced l 2tbsp rapeseed oil l 1tbsp dried sage l 300g mushrooms, sliced l 1 clove garlic, crushed l 1tbsp finely chopped parsley l 250g ricotta l 200g frozen spinach, defrosted and excess moisture squeezed out l 20g Parmesan, finely grated l ¼tsp ground nutmeg l 3 Melis Roasted Red Peppers, cut open and patted dry l 2 cooked chicken breasts, (skin removed), sliced l 130g Extra Special Thickly Carved Honey Roast Ham l 1 large egg, beaten 1 Preheat the oven to 200C/180C Fan/ Gas 6. To make the pastry, put the flour, butter and lard in a processor and pulse to coarse breadcrumbs – or rub in with your fingertips.

Transfer to a bowl and add 125ml chilled water. Bring together with a palette knife, transfer to a floured board and knead to a dough. Wrap in clingfilm and refrigerate until needed.

2 On a baking sheet, toss together the sweet potato and squash mix, the red onion and 1tbsp of the oil. Bake for 25 mins until golden and tender.

Transfer to a bowl, add the sage and roughly mash with a fork. Set aside.

3 Meanwhile, fry the mushrooms and garlic in the remaining oil for 4-5 mins until softened and any liquid has evaporated. Transfer to a bowl and stir in the parsley. Set aside to cool.

5 Roll out two-thirds of the pastry on a lightly floured surface and line a 20cm round springform tin. Spread the base with the veg mash, add a layer of red pepper, then the chicken, mushrooms and ham. Top with the ricotta mixture.

6 Roll out the reserved pastry into a round, big enough to cover your pie with a small overlap. Brush the edge of the pie with egg and top with the pastry lid, press down to seal and remove any excess with a sharp knife.

Crimp the edges with your fingers to seal completely, then cut a small hole in the middle to allow the steam to escape during cooking. Brush the top with egg and bake for 50-60 mins until the crust is golden and crisp.

7 Take out of the oven and allow to cool completely in the tin. Turn out and cut into slices to serve.

Fabulously fresh frittata bites

A delicious variation on the traditional recipe, bursting with Italian flavours – it works well with most leftover veg, too SERVES 9 READY IN 45 MINS PRICE PER SERVING 83p

l 350g Grower’s Selection Baby Potatoes, cut into 1cm-thick round slices l 125g Extra Special Asparagus Tips l 8 Extra Special Golden Yolk Free Range Eggs l 6 sun-dried tomatoes, roughly chopped l 3 spring onions, finely chopped l 30g Parmesan, finely grated l 4tbsp Asda Light Mascarpone l 4tbsp pesto 1 Preheat the oven to 200C/180C Fan/Gas 6. Bring a large pan of water to the boil, add the potato slices and cook for 6 mins until tender. Add the asparagus for the final 1 min. Drain and set aside to cool slightly.

2 Meanwhile, line a 23cm x 23cm, 4cm-deep non-stick baking tray with baking paper.

3 Beat together the eggs in a large jug, then gently mix in the cooked potatoes and asparagus, the sun-dried tomatoes, spring onions and Parmesan. Pour the mixture into the lined baking tray. Use a teaspoon to add the mascarpone in small dollops spaced evenly over the top, then repeat with the pesto.

Season generously with freshly ground black pepper.

4 Transfer the baking tray to the preheated oven and bake for 20-25 mins until just set and golden.

Allow the frittata to cool slightly before removing from the baking tray and cutting into nine rectangles.

Enjoy them cold at your picnic – though they’re just as delicious eaten hot at home!

1 Preheat the oven to 200C/ 180C Fan/Gas 6.

2 Heat a griddle pan on a high setting. Toss the spring onions in 1tsp of the oil and cook for 4 mins, turning from time to time until golden and charred. Set aside on a plate to cool.

2 When the oven is hot,

pour the oil into the roasting tray and slide it into the oven. Leave the tray to heat up for 10 mins.

3 When the oil is nice and hot, carefully slide the tray out of the oven. Lay the chicken in it, skin-side down.

Tumble the cauliflower florets around the meat and put the tray back into the oven to roast for 10 mins.

4 Remove the tray from the oven and scatter over the red onion, chorizo and sprigs of thyme. Return the tray to the oven and roast for a further 15 mins.

5 Take the tray out again, flip over the chicken breasts and give all the vegetables a bit of a stir.

6 Place the tomatoes on top of the mixture and give the tray one more blast in the oven for 10 mins.

7 Remove the tray from the oven and, while it is hot, drop the spinach on top and carefully stir it through so it wilts a little in the heat. Serve.

1 Fire up the barbecue, if using, 30 mins before you want to start cooking.

2 Cook the prawns, watermelon and halloumi separately on the hot barbecue or using a hot griddle pan. Each ingredient will take roughly 2 mins to cook on each side on the barbecue.

3 If you’re using a griddle pan, the prawns will need 2 mins 30 secs on each side. Cook the prawns first, making sure they are pink all the way through, then add the watermelon, and finally the halloumi,

so it remains warm when you serve the salad.

4 When the prawns, watermelon and halloumi have all been cooked, toss them together in a bowl with the basil, mint, pine nuts, olives and rocket.

5 Serve the salad immediately with a glug of olive oil drizzled over, a sprinkling of black pepper and the lemon wedges, to squeeze.

2 Melt the oil in a frying pan over a medium to high heat. When it is hot, add the chorizo and fry, stirring regularly for 3 mins, or until the chorizo is cooked through. Remove it to a clean piece of kitchen roll to blot off some of the oil.

6 Don’t take the muffins out of the tin immediately, as they might break up.

excess water and then chuck them into the pan.

Pile in the kale and keep stirring until it wilts – this will take about 5 mins.

4 Stir in the ham strips, then pour in the chopped tomatoes along with half a can of water. Bring to the boil. One at a time, make a small indent in the mixture with a wooden spoon and crack an egg into each one.

5 Place a lid on top and cook for 7 mins, or until the eggs are done to your liking. Sprinkle with the parsley and serve.

MISO MAGIC While bone broth has stolen the trend headlines in recent years, there’s nothing faddish about miso soup. The Japanese have been starting the day with this instant soup of fermented soy beans for centuries. Chefs in the UK are also discovering inventive ways to use miso’s umami uplift, such as mashed in sweet potatoes or mixed with marmalade as a glaze for roast duck.

1 Place the miso paste in a large saucepan and cover with 800ml boiling water.

Whisk to combine and bring to a gentle simmer.

2 Add the chilli, ginger, tofu and mushrooms to the pan and simmer for about 5 mins until the mushrooms have softened.

3 Stir in the noodles, pak choi and spring onions and simmer for 2 mins.

4 Heat a frying pan over a medium setting and dry-fry the sesame seeds for 3-4 mins until golden.

5 Divide the broth between 6 bowls and garnish with the sesame seeds and mint leaves.

DIVINE DUMPLINGS Like all great cuisines, Asian food is rooted in good, honest peasant food, even if it’s gone gourmet in the meantime.

Wagyu beef and king crab dumplings are both on the menu at Manchester’s contemporary Tattu – with a sister restaurant recently opened in Leeds – and dumplings are sure to be on the menu at the Taiwanese Din Tai Fung when it opens in London this summer. The latter’s signature xiao long bao – delicate dumpling pouches filled with juicy pork and a shot of broth – have been described as the closest thing to heaven in one bite.

Bank the benefits Taking time away from the office each day can have huge benefits, helping you re-energise your mind and body for the afternoon ahead. ‘Have lunch a reasonable walk from your office, then you get some exercise, too,’ suggests Professor Cooper.

Researchers at the Massachusetts Institute of Technology found that chat and socialising during breaks significantly increases productivity, so having a natter about last night’s Corrie could be as good for business as it is for your brain – who knew?

MAKE A CHANGE In 2014, employees surveyed by Bupa admitted their top two reasons for skipping lunch were having a heavy workload and feeling pressured by their boss. ‘Nothing has changed in 2017,’ says Professor Cooper. ‘We’ve developed a culture in which we feel the need to show face-time to bosses, by working longer hours and through lunch.’ The sooner you get into better habits, the sooner you’ll see your own wellbeing and working environment improve. But how to combat the pressure not to take a break?

● Don’t be afraid to say you’ve got too much on your plate. Flag to your boss and co-workers that you often have to work through lunch and see if projects can be shared. ● Make a plan If you want to be sipping coffee in a café by 1.15pm, write a to-do list and get all of your morning tasks done by 12.45pm. ● Leave for lunch at the same time each day so your co-workers see this as your time. If you need to, explain to your boss that a break makes you more productive – you’ll thank yourself later!

Take a screen break and chat to colleagues about holiday plans, or catch up with friends – just avoid gossiping or work moans!

STEP ONE ‘Soak a piece of floral foam (from your local florist) in water and cut it to fit the neck of your vase, with 5cm above the rim. Push the foliage stalks into the foam; make holes with a skewer if necessary.’

STEP TWO ‘Add the flowers – lilies, carnations and stocks – in layers, pushing the stems into the foam. Use the stocks to give height for a triangular shape. Water the foam daily to make your blooms last.’

How to get the best of your bunch ● Remove leaves from lower stems so they don’t rot in the water ● Soft stems like gerbera need to be cut straight across ● Hard or woody stems like roses need to be cut at a 45° angle ● Make sure vases are squeaky-clean before arranging your flowers ● If rose heads start to droop, snip stems at a 45° angle, then plunge into boiling water for 10-15 seconds, before quickly transferring to cold water

Super furry animals Vet Dr Zara Boland has the lowdown on choosing and introducing small fluffy friends into the family

ini furries can make wonderful family pets. They are great for smaller homes compared with larger animals and, as it’s relatively easy to ensure they receive the care and attention they need, they can help children to learn the basics of keeping pets.

But which type would suit your family best? hamsters and gerbils Fascinating and fun to watch, these small rodents enjoy climbing, exploring and hoarding food in nest boxes! Keep them busy in a large, multi-level cage with small boxes and tubes, an exercise wheel and plenty of dust-free bedding for burrowing.

Gerbils, which are best kept in samesex pairs or groups, are more active during the day and live for up to five years.

Hamsters are happier on their own, live for up to two years and are most active at night – so don’t keep them in a bedroom!

They’re both sociable and like to live with their own kind, so if you can, get more than one. A constant supply of fresh grass or grass hay with chopped green vegetables is essential to their health and wellbeing,

so a hutch with access to a run is best – just make sure it’s escape-proof!

Ensure, too, that rabbits have room to explore, stand upright on their hind legs and hop around – ideally in a large garden.

Your cooking Inspiration?

Ina Garten, the Barefoot Contessa. Her recipes help me have more success in the kitchen. And, of course, Gwyneth Paltrow’s It’s All Easy is one of my favourite recipe books of all time.

Do you diet?

When I started playing Sheila [in The Santa Clarita Diet] last summer, she’s going through a life change so I decided to have one, too. I lost 20lbs – it was really positive for me.

How often do you exercise?

Three days a week. I Skype with a trainer from home. It’s a ballet-inspired workout and sometimes I scream out loud because it’s so hard. My trainer, Marni, always gives me an inspirational quote at the end.

Favourite restaurant?

Joseph Leonard in New York for brunch. It has awesome energy – you feel like you’re at a nightclub but without all the trappings. They do fabulous Bloody Marys and food, and everyone’s dancing to music!
