Engagement Over the course of these last 21 months, I have been engaged in a dynamic and challenging task as one of the ASA Eastern Region Trustees of our Association. Prior to that time, I held a vested interest in the Simmental breed, which continues to this day. The difference being, that now, I am engaged completely in the decision-making process for the future progress of the breed as it affects all breeders — small and large! Traveling across the nation and visiting with breeders is nothing new as I have been involved in the seedstock business my entire adult life in numerous breeds. The difference comes in that I’m not only engaged in conversation, but also as a “sounding board” for other fellow breeders’ challenges and concerns relevant to the business of the ASA. The beef cattle industry currently is traveling at “warp speed” and shows no sign of slowing down. Compared to the beef cattle business of an earlier generation, the tools of evaluation and established value are barely recognizable, but are still basically very relevant to what we use today on both the commercial and seedstock sectors of the industry. As in any business model, the foundation or basic values must continue to remain in clear sight. Therefore, as we advance through expanded EPD evaluations, coupled with even more accurategenomic evaluations, let

us not lost sight of the basic phenotypic traits inherent to the Simmental breed. Structure and composition cannot be disregarded in lieu of pursuit of any other single trait selection criteria. To that end, your ASA staff is continually doing three things to gain additional market share for the membership: Innovate; Adapt; and Overcome. Again, with focus on all phases of beef production toward ultimate consumer satisfaction. To focus on basic traits is absolutely necessary and with that in mind, we must continue to also remain focused on our excellent youth programs, as these young people are the future of the Simmental breed. The AJSA Classic program extends far past ‘just another cow show’! It encompasses a vast array of educational events for the contestants to build upon. Any funds dedicated to this end only solidify the future leadership of the breed. If you have not been involved in one of these events, it is well worth your while to do so! You will be impressed with what our youth membership has to offer. During the Simmental events at the upcoming NAILE in Louisville, KY, in November, there are several fundraising activities that will financially benefit the youth members of our breed . . . become engaged, get involved in the future! In closing, as set forth in the title “Engagement,” become more involved whether through volunteer work or contact with ASA staff or ASA Trustee — let your voice be heard. The lines of communication are always open. We are here to serve the needs of ALL breeders. u

Dear Editor: An important biosecurity health consideration in leasing or purchasing bulls is requesting seedstock suppliers test for bovine viral diarrhea virus persistent infection (BVD PI) and trichomoniasis (Trich). Both of these diseases can have a huge impact on the health and reproductive success of your cattle operation. Trichomoniasis, commonly called Trich, is a sexually transmitted disease that results in infertility, pregnancy loss, and prolonged calving intervals in cows and heifers. Bulls are the carriers of the disease but show no outward signs of infection. The United States Animal Health Association (USAHA) is recommending a single, DNA amplified-based test to confirm a Trich negative status. Many state diagnostic labs utilize the USDAlicensed VetMAX-Gold Trich detection kit real-time PCR workflow to determine a bull’s Trich disease status. This test is highly sensitive in the detection of the Tritrichomonas foetus organism. The impact of leasing or purchasing a bull persistently infected (PI) with BVD can result in devastation on both the reproductive health of your cows and the respiratory health vulnerability of your calf crop. BVD PI animals are infected with this virus for life and constantly are shedding to herd mates. With a simple ear-notch sample, bulls can be tested and confirmed negative of BVD PI. Many diagnostic laboratories provide PCR and ELISA testing to determine the BVD PI status for cattle. The diagnostic test cost of both of these diseases of concern is trivial in comparison to the economic burden that will occur should you lease or buy a bull that exposes your herd to these diseases. Make sure when leasing or buying your next bull you ask for the seller to confirm they have been tested free of both BVD PI and Trich. Keeping these diseases out of your herd with diagnostic testing biosecurity is the proactive approach in comparison to dealing with the consequences from disease exposure to your cowherd. Therefore, it’s imperative that cow/calf producers protect the reproductive health of their cowherd by purchasing bulls tested free of both Trich and BVD PI. In both cases, diagnostic testing with real-time PCR tests provides effective results with a single test. A multi-tasking breeder covers much of south Texas as the family cowherd grows and improves.

By Dan Rieder Managing three widely separated cattle ranches requires considerable travel and long hours. Throw in a flourishing vegetable brokerage enterprise and you wonder when Pete Nieshwietz (pronounced Nesh-witz), Jr., finds the time to eat and sleep. The original 7N family ranch is located near Falls City (population: 593) located just southeast of San Antonio. That’s where Pete, Sr. and Marilyn live and keep an eye on 75 head, a portion of the family’s mixed cowherd. Incidentally, 7N was chosen as the ranch name to include the parents and their brood of five children. In 2011, a place at Donna (population: 16,771), 210 miles to the south in the Rio Grande Valley, was added. Pete, Jr. lives there, along with 100 head. More recently, in 2014, a place at El Sauz (population: 50), 75 miles west of Donna, was added. The remainder of their 300-head cowherd is maintained at the El Sauz location. “I have brothers and sisters and some nephews that have a few cows, but for the most part, our operation consists of my folks and myself,” Pete, Jr. explained. “Our current cowherd includes 150 head of registered Simbrah females plus 25 registered Simmentals and 25 registered Brahman. In addition, we keep about 100 Simbrah-influenced commercial cows, which make ideal embryo transfer recips.” Nieschwietz points out that the environment of their three ranches varies considerably. “Here at Donna, the land is flat and flood-irrigated, allowing us to run up to three cows to the acre. Over at El Sauz, it is primarily rocky and arid grazing land, and the home place at Falls City is rolling hills and river bottom. It takes between 10 and 15 acres per cow at those two places,” he continued. Several years ago, based on a friend’s advice, he became involved in the business of vegetables, which led him to establish a brokerage firm. “What I do is sell vegetables for different companies. At first, I sold mostly carrots and onions, but have expanded to include beets, tomatoes, squash, limes, avocados, cabbage, sweet corn, even cilantro,” he said. “I do not have a

hand in directly handling the produce — I deal with the farmers, the packing house people and the retailers, bringing them together to assure timely delivery.” Byproducts from his vegetable business can also be used for cattle feed. “During the drought a few years ago, we fed cull carrots and other misshaped or damaged product. If you chop them up, the cows will not only eat them, they’ll thrive,” he added. “Basically, I buy and sell vegetables early in the mornings, and devote afternoons to the cattle. Now that our cattle numbers have increased, it keeps me going, especially around calving time. One problem I’ve experienced is a lack of reliable help,” he lamented. “In the summer, people would rather work in the air-conditioning at WalMart than outside in 98 degree heat. Some of my best help has turned out to be teenagers who come out on weekends. They do a good job.”

Running the Cowherd “When I was a kid, my folks basically ran commercial cattle until my dad bought our first Simbrah bulls in 1977. They were good, beefy bulls with just enough Brahma in them for South Texas, and they gave us increased poundage across the scales,” he recalls. Nieschwietz, who graduated from high school in 1983 and subsequently earned an Animal Science degree from Texas A&M, had success exhibiting Simmental heifers at various shows in the area until the early 1990s when a gradual switch to Simbrah occurred.

“Right out of high school, I went to work for Tim Smith, over at Parthenon at New Braunfels and did that every summer through college. After Tim left Parthenon, I helped him when he founded Smith Genetics. I also had the privilege of working at one time for Tom Risinger — I learned so much from Tom and Dianne and eventually bought some bulls from them,” he said. At the present time, showing of 7N cattle has been greatly reduced mostly due to contraints on Pete’s time. “We’ll show a few animals here and there, particularly at the major shows here in Texas, but we’ve been doing it lately just so people can see what we have — increasing our exposure.” Over a period of several years, Pete and his dad had been talking about growing their herd. After purchasing the place at El Sauz, they realized a big jump in numbers from 200 to 300 head. The new property was stocked through purchase of some top-end Simbrah females. They also purchased several donor-quality cows, flushed them and implanted the eggs in their commercial cows. “The resulting calves are helping to build our numbers as well as our quality. We can really see the difference. My dad said ‘I think this is the best calf crop I can ever remember having’. We’ve also purchased some high-quality cleanup bulls over the past 3-4 years and that has also contributed to “7N Stylin 105Z”, one of 7N’s prize females. our improvement,” he reported. “We A.I. everything that doesn’t get an embryo and then we follow up with good herd bulls,” Nieschwietz elaborated. “My mom can A.I., I can A.I., and Tim Smith will do some A.I. work for me. Mom and I went to the same A.I. class together when I was in high school.” The extreme heat and humidity of the summer months dictate that a touch of ear be incorporated into local cows. “Our Brahman-influenced cows have no problem, but our straightbred Simmentals, even though they may have been born here and are well-acclimated, will go hunting for shade during the heat of the day, and they’re the the last ones out to graze in the evening,” he states. A major marketing niche for 7N genetics consists of both heifers and steers as youth project calves. “We have a lot of kids who come here and buy animals for most of the major stock shows,” he says. “I’m involved with several sales that also include shows with generous premiums and scholarship programs. Tim Smith sponsors the Synergy sale and show along with $15,000 in scholarships. The Simbrah Super Bowl is held in conjunction with the San Antonio Stock Show and $20,000 in scholarships are awarded there. The Elite sale and show gives out another $10,000 in scholarships,” he comments. “As breeders, we promote these events to the kids, which keeps their interest up, plus educational things like animal husbandry. We get a lot of repeat customers and we work hard to promote that aspect.” He admits that he’d like a better bull market. “We sell 12-15 Simbrah bulls every year, but not as many as I’d like to sell. A few of us have been talking about running our own bull test and having a sale afterwards. However, with the way cattle prices have been, we can steer a good many of our bull calves and still make some money on them. The market is high right now, but you can’t count on that forever,” he said.

He’s also discovered that a preference for hair color is changing. “We’re finding that people are buying more red cattle than they were. A few years ago, everybody wanted black cattle, but now they’re switching the other way down here. I’ve got red bulls and black bulls, but I’ve

A.I.’d for red this coming season to try to take advantage of that demand for red hair color,” he remarked. “We’re breeding for good, middle-of-the-road type cattle,” he concluded. “By paying attention to the best genetics we can find, combining artificial insemination, embryo transfer and top-end cleanup bulls, we feel we’re making steady progress.” ◆

As a bonus, this years’ Fall Focus offered Gettysburg tours and attractions for attendees. The title of the Fall Focus 2015 was “Confidence Builds Success” and featured a distinguished panel of speakers, including Bob Lanting, ASA Board of Trustees Chairman; Wade Shafer, ASA Executive Vice President, Jackie Atkins, ASA Director of Science and Education; Lauren Hyde, Lead Geneticist International Genetic Solutions, ASA; Gordon Jones, Red Hill Farms; Scott P. Greiner, Virginia Tech, Darin Daren Williams, Senior Executive Director of Communications, The National Cattlemen’s Beef Association; Ben Williamson, instructor of Animal Science, Pennsylvania State University; Michael Baker, Beef Extension Specialist, Cornell University; and Alex White, Adjunct professor in the Dairy Science Department and Financial Management Consultant, Virginia Tech and A. culture and livestock in Pennsylvania. Shafer, Atkins, and Hyde focused their presentations on understanding genetic information to increase profitability including the basics of EPDs, submitting good data, how DNA testing can augment EPDs, and what traits affect economic selection indexes. Jones concentrated on crossbreeding bringing perspectives from many points of view including the seedstock and commercial beef breeders. Greiner followed with perspectives on designing genetics and bull selection. Keynote speaker, Daren Williams addressed the group at lunch and discussed avenues to help all producers become more confident beef advocates. Williams shared some current consumer surveys indicating that most of the public is supportive of farmers and ranchers (the people) in general but they do not feel comfortable with farming and ranching practices (the industry). The afternoon continued with talks from Ben Williamson on market share, followed by a case study report on the value of Simmental beef by Michael Baker. Dr. White wrapped up the educational symposium with a discussion on farm succession and retirement planning including ideas to help transition ownership and control from one generation to the next.

Monday ended with a PSA-hosted dinner followed by guest speaker US Congressman Frank Lucas, addressing “Crafting the 2014 Farm Bill through the Legislative Process.” To view speaker videos, PowerPoint presentations, and archives, visit www.fallfocus.org. For the first time ASA held an ASA Representative and State Association meeting on the Sunday prior to the Fall Focus. Bill Zimmerman led the ASA representative meeting discussing the goals of the program. As state association Liaison, Bert Moore, along with other ASA staffers, discussed issues and programs directly related to promoting SimGenetics on a state and regional level. Officers from several states were in attendance, including Pennsylvania, Virginia, North Carolina, and New York, as well as ASA staff members. The Fall Focus is designed to allow Simmental breeders an inside look at issues affecting the beef industry, and the work being done to address these issues on behalf of ASA membership. ASA members, historically, have supported educational programs through attendance and financial pledges. The sponsors who helped ensure the success of the educational symposium

Participants were offered the opportunity to tour the Gettysburg Battle Field, Eisenhower National Historical Farm, Historic Shriver House, and a Farm Herd Walk with Pennsylvania-raised Simmental Cattle.

Hands down, my favorite holiday is Thanksgiving. I love the simplicity of it all. Thanksgiving = family + food + reflection. Thanksgiving is a time to surround oneself with family or friends, eat your favorite dishes, and take a moment to reflect on the good things in life. What could be better? One thing I am thankful for is the opportunity to serve as the Director of Science and Education at the ASA. Our goal at the ASA is to help our members make profitable genetics for the commercial beef industry. We do this by using science and technology to improve selection for profitable and relevant seedstock. The ASA has a long history of embracing science, for example, our Carcass Merit Program, Progress Through Performance, encouraging crossbreeding, and the development of economic selection indexes, total herd enrollment (THE), and genomically enhanced EPDs (GE-EPDs). But we can’t stop there. I came across a saying recently, “What got you here, won’t get you there.” What is the ASA doing to make the future of genetic selection even better? Here are some exciting and relatively new developments to ensure cutting edge technology for our members and their customers for years to come.

International Genetic Solutions (IGS) — Starting in 2010, the ASA and the RAAA joined forces to start a joint multibreed genetic evaluation. Today, IGS consists of 12 breed associations that partner in the world’s largest beef cattle genetic evaluation. We have 16 million animals in the evaluation and the database grows by 340,000 per year. Additionally, the animals can be compared directly as they are all on the same base. This is a huge benefit to the commercial industry. New Genetic Evaluation — The addition of genomic information and the sheer number of animals in the evaluation have pushed our current system to the limit. IGS is collaborating with Drs. Dorian Garrick and Bruce Golden of Theta Solutions, LLC, to revolutionize the methodology and the computational tools used in genetic evaluation. This new system, called BOLT (Biometric Open Language Tools), will allow more frequent evaluations (since it is much faster), better use of genomic information, and ultimately more accurate EPDs. It will also make future changes (for instance, adding a new EPD) much easier to incorporate into the evaluation. Low Density DNA testing option (GGP-LD) — Adding DNA testing information to the evaluation of unproven animals is a great way to increase accuracy of EPDs early in their life. The ASA has used DNA testing information in our genetic evaluation for years but this testing was mainly used in AI sires and donor dams. Now we have a less expensive option that works well for replacement heifers, the cow herd, and walking sires. With GGP-LD, you can add an equivalent of 8 progeny records to an animal’s EPDs before the animal has even reached puberty. More accurate selection decisions will drive faster genetic progress — buying you valuable time. Commercial Option — Commercial cattle producers can now enter IGS’s genetic evaluation through the Com-

mercial Option. Commercial producers can make better selection decisions by getting EPDs and economic indexes on all their females and herd sires. The Commercial Option also generates steer average EPDs and indexes for better marketing of weaned calves. Additionally, enrollees with have access to ASA’s herd management software, magazine subscriptions, DNA technology, and genetic consultants. Not only will commercial cattle operations improve, but adding more data will increase the accuracy of EPDs in our evaluation. A win — win situation! Feed Intake Project — Feed intake is a difficult to measure trait with a large impact on the profitability of an animal’s progeny. This year, the ASA is collecting feed intake data on our Carcass Merit Program (CMP) calves in order to better predict this economically relevant trait. The ASA will leverage DNA markers coupled with feed intake measurements to better predict intake across all SimGenetic cattle. The ASA Foundation is funding the Feed Intake project and currently is seeking donations to help with the added cost of collecting this data. Foundation Board member, Fred Schuetze (bhr@speednet.com) is spearheading the fundraising activity. You may have already received information in the mail requesting your support; this is an excellent opportunity to be involved with this exciting project. In closing, I am so thankful to be a part of this Association, grounded in science and with the commercial beef industry in our hearts. The ASA has a history of science-based decisions and programs that benefit our members and our members’ customers. The above programs continue to emphasize technology that is both science-driven and commercial-cattle-oriented. These programs will continue to provide our members tools to select profitable and relevant genetics for decades to come. u

WE GET VISITORS Mose Mock of Mock Farm, Springfield, GA, was a visitor to the ASA office in late September. A retired Vo-Ag teacher, Mock holds ASA membership #129632. Mock and his wife, Dale, were in Montana to gain insight on how cattlemen in other parts of the country operate. They took advantage of the opportunity to spend several days in and around Yellowstone and Teton National Parks. “During our time here, we hit all five entrance gates to Yellowstone,” he said. “We saw some spectacular scenery and wildlife during our Montana visit and certainly enjoyed meeting the staff at American Simmental.” The Mock cattle operation consists of Red Angus females, which are then bred to Simmental and SimAngus™ bulls. Cattle are marketed through a combination of private treaty and an on-line Internet service. In addition to his cattle operation, Mock runs a flourishing hay business, selling big round bales and small square bales, primarily to horse owners.

Sirloin with Sugar Snap Peas and Pasta Salad Ingredients 1 boneless beef top sirloin steak, cut ¾ inch thick 2 cups fresh sugar snap peas 2 cups cooked corkscrew pasta 1 cup grape tomatoes, cut in halves 3 cloves garlic, minced 1 teaspoon black pepper Freshly grated lemon peel Chopped fresh parsley (optional)

¼ cup fresh lemon juice 2 tablespoons olive oil 2 tablespoons chopped fresh parsley 2 cloves garlic, minced 2 teaspoons freshly grated lemon peel ¼ teaspoon salt ⅛ teaspoon black pepper

Instructions • Bring water to boil in large saucepan. Add peas; cook 2 - 3 minutes until crisp-tender. Drain; rinse under cold water. Combine peas, pasta and tomatoes in large bowl. Set aside. • Whisk Gremolata Dressing ingredients in small bowl until well blended. Toss 2 tablespoons dressing with pasta mixture. Set aside. • Combine 3 cloves minced garlic and 1 teaspoon pepper; press evenly onto beef steak. Place steak on rack in broiler pan so surface of beef is 2-3 inches from heat. Broil 9-12 minutes for medium rare (145 degrees) to medium (160 degrees) doneness, turning once. • Carve steak into thin slices; season with salt, as desired. Add steak slices and remaining dressing to pasta mixture; toss to coat evenly. Garnish with lemon peel and parsley, if desired. Louisville has always been one of my favorites and Iâ€™m sure that this year will be no different. From the green chips to the feeling you get walking down the ramp into Freedom Hall the North American truly is something special. If you are planning a trip to Louisville this year also make sure to check out the giant country store for some of the best shopping in the show cattle industry. The North American is a show where the best cattle in every breed from across the nation come to compete and it is truly incredible to witness. With the show comes nerves and anticipation, but hopefully mostly excitement for the opportunity to showcase all of your hard work from the year. One exciting thing we have coming up in the Simmental breed is an online fundraiser sale to benefit the AJSA. The sale will take place on November 30, otherwise known as Cyber Monday, just more than a week after Louisville. It will be the perfect opportunity to find your Simmental loving friends a great Christmas present. We have some great things and would love if you would come see what we have for sale and would appreciate any support from the breed. The money from our AJSA fundraisers helps pay for

BEEF BUSINESS USDA, States Collaborate USDA has announced a plan to invest $20 million in partnership with 15 state agencies to improve and increase wildlife habitat and public access for recreational opportunities on privately owned and operated farm, ranch, and forestlands. The program is designed to encourage owners and operators of private lands in the participating states to voluntarily open their land for hunting, fishing, and other wildlife-dependent recreation. The USDA’s intent is to improve fish and wildlife habitat on those lands.

One-half of all US restaurants have burgers on the menus, and the report suggests that made-to-order customization found at most sit-down restaurants drives consumers away from traditional burger QSRs.

Beef Drippings Receive Taste Award

Meat Labeling Preferences Marketing researchers at the University of Arkansas have found that country-of-origin labeling (COOL) influences consumer perceptions about food safety and quality. It was discovered that consumers preferred meat from the US when provided with information about where the animal was born, raised, and processed, but not when given information about country-specific meat processing standards. However there are mixed results on COOL studies. According to a 2013 study from Kansas State University (KSU), the typical US consumer is unaware of these labeling requirements and generally ignores origin labels on meat products.

US Burger Obsession Datassential, a food industry research firm, has released a report stating that more than 75% of Americans eat a burger each week, and 25% have eaten one in the last 24-hours. The research reported that most burgers are eaten away from home at a variety of locations such as upscale restaurants, neighborhood bars, and quick service restaurants (QSRs).

Beef Dripping (BD) has been named one of the 50 best foods in the UK and Ireland. Produced in Ireland, BD is made from the suet of grass-fed Angus and Hereford beef, rendered down and clarified to pure fat. The product described as “nutrient rich, high in omega-3 acids, clean, pure, and carries great flavor”. The Great Taste Awards (GTA) judges, in a review, stated that out of the 10,000 entries, “BD has a tremendous, deep beefy flavor”. The GTA is organized by the Guild of Fine Foods, and is known for specialty food and drink in the UK.

Projections for end-of-the-year 2015 suggest that net cash income for the farm sector is likely to fall 21% ($100.3 billion). Net farm income is expected to drop 36% ($58.3 billion), which is down from the February estimate of $73.6 billion. When adjusted for inflation, the decline will bring farm income to its lowest level since 2002. Crop receipts are expected to fall by 6% (12.9 billion), and livestock receipts are projected to decline by 9% (19.4 billion). The debt-to-asset ratio for 2015 is expected to rise, but remain low relative to historical levels.

Non-Farmers Own Rented Farmland Out of the 911 million acres of farmland in the continental US, landowners operate 61% of farmland and rent 8% of farmland (70 million acres), while 31% (283 million acres) are rented from nonoperating landlords. Retired ranchers or farmers held 67.5 of the 283 million acres of non-operation rented land individually or in partnership in 2014. The average age of these landlords is 66.5 years old, and only 18% were under 55 years of age. Nearly 45% of the principal landlords have never farmed.

US Food Insecurity Levels Out The USDA Economic Research Service reported that 14% (17.4 million) of US households were food insecure in 2014. Food insecurity is defined as “when consistent access to adequate food is limited by lack of money and other resources at times during the year”. According to the report, the number of households with food insecurities is on the decline, but it is still above insecurity rates recorded before the recession. Data from 2013 and 2014 report no change, but are down from the 2011 high of 14.9%.

State Cattle Inventory Ranking Twenty-two states reported an increase in cattle inventories for the year-to-date. Texas had the largest increase in cattle inventory in the US with an increase of 700,000 head. Followed by Oklahoma (300,000), Kansas (200,000), Missouri (150,000), and Iowa (100,000). States experiencing decreases were led by: North Dakota (100,000), California (-100,000), Pennsylvania (-80,000), Montana (-50,000), and Kentucky (-50,000).

In a recent study, researchers pinpointed a protein that affects the structural cells that make up the lining of the lungs, confirming that the lungs play an important role in the development of allergy responses.

The study hypothesizes that a lack of contact with microbes as a child leads to more allergy and asthma. The researchers suggest people that grew up on a farm have fewer respiratory problems than the general population because farms have the best exposure to germs for preventing allergic reactions later in life.

APHIS Tackles Feral Hogs The USDA’s Animal and Plant Health Inspection Service (APHIS) has announced a feral swine disaster management program to control damage and risks caused by feral hogs. An estimated 10% of feral hogs carry diseases putting livestock, pets, and other wildlife at risk. The plan calls for eliminating feral swine from two states, managing the population in the rest, and stopping increase damage from feral swine in 10 years. A five-part Wild Pig Management video has been released on how to cope with feral hogs — corralling, box traps, shooting techniques, and proper snares.

Beetles Play Beneficial Role Dung beetles play a significant role in acceleration of cow patties decomposition, causing nutrients to return to the soil sooner. The process starts with the beetles sucking out the moisture in the patties. The warmer the day, the more rapidly the beetles go to work, leading to decomposition in a matter of a few hours. Quicker decomposition means that cattle will not need to avoid grazing close to patties, and increased forage growth will occur as nutrients are distributed across a greater area. u

INTERNATIONAL Brazil Reducing Deforestation

Growing Saudi Beef Market

Brazil, the global leader in cattle production, continues to move toward reducing deforestation. The expansion of cattle pastures had led to destruction of huge swaths of rainforests in Brazil, but a new market-driven “zero-deforestation agreement” has influenced the behaviors of ranchers and slaughterhouses. Apparently, the agreements prompted ranchers to register their properties in an environmental registry, and slaughterhouses have actively blocked purchases from ranches, which do not maintain government-mandated deforestation practices.

The Saudi Arabian beef market grew 9.2% at a compound annual growth between 2008 to 2013 to 150,000 tons. Imports of beef account for 73% of consumption. Sheep meat consumption has increased 3.7% in the last five years. Pakistani and Indian beef dominate the marketplace at 70% of the market share. The meat is sold as a block of meat at cheaper prices rather than select cuts of meat. At the premium end of the market, Australian beef accounts for 23% of the market share.

US Leads Beef Consumption According to a ranking of beef consumption, the world is projected to consume 56.739 million metric tons of beef during 2015. The United States (11.292 million metric tons) is the largest consumer of total beef and is projected to consume almost 20% of the beef production in the world. Brazil is ranked second, after the US, at 14% of the world’s beef consumption, followed by the European Union (7.5) at 13%, China at 12.8%, Argentina at 4.4%, Russia and India, both at 3.7%, Mexico at 3.25%, Pakistan at 2.9% and Japan at 2.2%.

Congo Plans Insect Farming In the Democratic Republic of Congo, a kilogram of crickets costs $50, more than twice the price of beef. Despite the availability of cows, antelope, and snakes, markets are selling insects more than any other protein. Experts hope that edible insects in the country may alleviate widespread hunger among 65 million people by scaling-up the millennia-old eating habit. According to the World Food Program (WFP), 6.5 million people live in food insecurity due to low agriculture productivity and violence in the eastern part of the country. u

A recent research article addressing the biology and biochemistry of beef marbling and its effects on production systems, carcass and fat quality, concludes that against consumer perception, ground beef is healthy for consumers. Other studies state that ground beef increased high-density lipoprotein (HDL) cholesterol (the “good” cholesterol) in both men and women. According to the research article, as cattle fatten and put down marbling, the fat becomes healthier because there is a replacement of saturated fats with oleic acid.

Superbug Found in Ground Beef Conventionally raised US ground beef is twice as likely to contain “superbugs” as sustainable beef, according to Consumer Reports. A study tested 300 packages of ground beef, weighing 458 pounds, from 103 grocery stores across the country, and several varieties of ground beef including conventionally raised, grass-fed, and organic were included. Results show 18% of beef from conventionally raised cattle contained “dangerous superbugs” resistant to three or more types of antibiotics used to treat illness in humans.

Meat Allergy Linked to Ticks Allergies to beef and pork may be caused by a tick bites. In some cases, it’s a life-threatening allergy. The Lone Star tick is reportedly responsible. Allergy specialists say, “the tick harbors a sugar called Alpha-Gal, and that sugar is also in meat and in some people. Apparently a bite from the tick triggers the immune response.” It is still unclear if the allergy reacts to just one or multiple bites, and it takes three to six hours to occur after meat consumption. In some instances, the allergy has disappeared over time.

White Angusâ€” a Genetic Accident A herd of White Angus cattle reside at the University of Florida Range Cattle and Research Center in Ona, FL. The herd is a composite of three-fourths Black Angus, and the remaining fourth is a combination of Black Angus, Charolais, Brahman, and Simmental that resulted in cattle with white hair and dark skin. A part of the outcome is attributed to the dilution effects of black hair coat dominance found in Charolais and Simmental. The genetic combination offers advantages in warm climates because white hair offers an 83% greater sweating rate than black.

Early Weaning Nutrient Requirements University of Nebraska research compared early weaning with traditional separation, and found that the data suggested that weaning cows and calves required the same amount of feed as pairs together, and that early weaning does not reduce energy needs for the pair. All cattle were maintained in a dry lot using the same ration of 60% distillersâ€™ grains and 40% crop residue. Over the period of early to normal weaning period, the early-weaned cows consumed 23.5 pounds of dry matter per day, and gained 46 pounds. The normal weaned cows consumed 22.3 pounds of dry matter per day, and gained 22 pounds. u

CORPORATE REPORT Tyson Terminates Contract Tyson Foods, a primary supplier for McDonalds, has terminated a contract with a chicken farm after release of a Mercy for Animals (MFA) video. The video claims the farm owner abused chickens, and that local law enforcement has launched a criminal and cruelty investigation. A Tyson representative reported, “the company’s animal wellbeing team is investigating. However, based on what is already known about the situation, Tyson is terminating the farmer’s contact to grow chickens for the company.”

GM Addressing Global Warming General Mills (GM), owner of Cheerios, Betty Crocker baked goods, and Yoplait yogurt, have announced plans to reduce greenhouse emissions by 28% throughout its network of suppliers. The company will spend $100 million on energy efficiency and clean energy projects. The GM initiative toward clean energy addresses fears of potential food shortages caused by global warming. Scientists have linked rising levels of greenhouse gases from carbon dioxide with increased global temperatures. The effects range from droughts in California to the floods in the Midwest.

Preconditioning Program Introduced The Boehringer Ingelheim Vetmedica, Inc., has introduces its Market Ready™ Quality Feeder Calf Preconditioning Program for beef producers. Research Studies have shown an average net return from preconditioning ranging from $25-$33 per head, as well as other benefits. According to a company press release, the program, which was “formerly known as Range Ready®, is a re-branding of the preconditioning program to align with today’s producers and markets, and is designed to help producers deliver healthy, highperforming calves and management flexibility.”

Superior, Verified Beef Partners Superior Livestock and Verified Beef, LLC are partnering to provide ranchers with a marketing system for feeder cattle. These two companies jointly offer ranchers the option to certify their cattle through a Verified Beef’s Reputation Feeder Cattle (RFC) program and then market the calves on Superior Livestock. This new option responds to a the recent trend of selling feeder cattle based on their breeding and management history. Superior customers can use the RFC as a third party verification of cattle management practices and genetic merit.

Flying on Animal Fat United Airlines (UA) and Fulcrum Bioenergy have announced that UA will begin flying commercial jets using biofuel from household waste, plant oil, and animal fat. UA is spending $30 million in equity investments with Fulcrum, a California-based company. Fulcrum has developed and commercialized the ability to convert municipal solid waste into low cost sustainable aviation biofuel. The fuel can be directly blended with traditional jet fuels. A biofuel refinery is under construction in Nevada to open in 2017, with plans for five more plants around the country. u

NEWSMAKERS Marston Resigns RAAA Post Dr. Twig Marston, Chief Executive Officer of the Red Angus Association of America (RAAA) since 2014, has resigned to “pursue other opportunities in the cattle industry.” His RAAA contract expires on January 15, 2016. A Kansas native, Marston earned his undergraduate and master’s degrees from Kansas State University, and his Ph.D. from Oklahoma State in ruminant nutrition. From 2002 to 2010, he served as the executive director for the Beef Improvement Federation.

Former Champ Selling Beef Former World Champion and Olympic gold medal boxer, George Foreman, recently announced the launch of “George Foreman’s Butcher Shop”. The shop is designed to be a direct-to-consumer company that provides artisan cuts of USDA Choice and Prime meat and poultry products. Foreman’s company offers Premium beef cuts, sourced from small, family-run ranches throughout the Midwest, as well as other selections of chicken, pork, sausages and side dishes. u

STATE SCENE Florida Reallocates GMO Funds The University of Florida (UF) is reallocating biotech educational funds after public threats were made to the researcher. The Monsanto Company had donated $25,000 to support a science communication effort that provides oncampus workshops to educate scientists about engaging the public on agricultural biotechnology (GMO). The university decided to reallocate funds after the personal information and home address of a professor and chairman of the UF horticulture sciences department was leaked on social media, presumably with intent to incite local violent action.

JANUARY 2016 Auction Markets Decline According to a Texas A&M AgriLife Extension Service study, declining cow numbers have led to consolidation in Texas livestock auction markets following droughts over the past decade. Texas had 167 auction markets in 1969 but only 92 such markets remained in the state by 2013. The decline is attributed to a number of factors, such as producers using other means to market cattle, the study suggested, “fewer cattle to market in the state, requires fewer markets to sell fewer cattle.” u
