First and foremost, we’re really excited to introduce a new member of our team, journalist Darren Burton. Darren comes to Style with a wealth of knowledge of the industry. In the November edition of Style, we have some wonderful stories to share with you. We chat with 2017 Survivor contestant and Geham farmer Mark ‘Tarzan’ Herlaar about his experience on the reality show. We also caught up with Toowoomba-founded band Interim, who are now taking the music industry by storm, based in Sydney. We welcome nutrition and food columnist Nivard Nelson, who chats about the wealth of local food producers available and how we should tap into them. FOUNDED AT A TOOWOOMBA HIGH SCHOOL, HOME-GROWN BAND INTERIM HAS RISEN TO FAME, RECENTLY RELEASING ITS DEBUT ALBUM ESCAPISM

W

hen drummer and percussionist Matt Hollonds was 15, he probably didn’t think his grand idea of starting a band in Toowoomba would lead to fame. He roped his friend, James Basnett, into learning guitar, and Alec Snow into learning to sing. Their high-school band was born in the Garden City. When the band, Interim, moved to Brisbane, their friends, bassist Jock Houston and guitarist Lachy Becke joined. With a modern rock take on blues and a big dose of heavy soul, Interim is shaking up the Sydney music scene in a big way, but it hasn’t forgotten its beginnings in the music scene. “Pretty well everyone but Lachy taught themselves how to play,” Jock says. “Lachy got hooked on Queen at an early age and went through teachers and jazz degrees and has a work ethic like no one else when it comes to guitar. “I had a musical family and was singing and playing guitars and bass all through school, and Matt lived at Murphy’s Creek on a small property, so smashing out drums just seemed the right instrument for him. “Alec’s family was massively into the music of the ’50s and ’60s and Alec has been all about soul, classic blues and rock’n’roll since.” After the boys moved from Toowoomba to Brisbane and studied various degrees,

Work to your strengths, know what you want and try to spend a lot of time focusing on owning the day you’re in rather than the whole journey as a musician. they continued to play all around south-east Queensland. Frontman Alec graduated his course and was offered an acting gig on Home and Away, prompting him to move to Sydney in 2014. A year later, the rest of the band joined him, and they’ve been living and playing locally in Sydney since. In that time Interim has had three national tours and created more than 100 demos, 12 video clips and their debut album which was released in September. “Escapism is the culmination of our band’s journey over 10 years as a bunch of young blokes who tend to move cities a lot,” Jock says. “The writing process tracks back to five years ago and it’s the first time we’ve worked with a producer in the studio for a release rather than recording and mixing everything ourselves. “We released the album through a track and video clip every month over 2017, which hasn’t been done before around the world and was a massive learning process for us logistically —

total nightmare, but cool!” Interim has found the transition from a high-school band to fame on the big stage exciting and complicated. “We were able to leapfrog quite a lot of the nebulous stuff in getting into the local music scene by having it together already and living together and catching a lot of other bands’ shows, but it’s only been this year that the bigger Sydney opportunities have been starting to come our way — things like playing at the Oxford Arts Factory, or Frankie’s Pizza’s fifth birthday in December, or creating relationships with MOSHCAM and Young Henrys,” Jock recalls. “So much of it only comes around when you’re riding the hype cycle of music releases and publicity campaigns which are massive money outlays for video clips and PR and recording expenses that you are kind of sitting there hoping something bigger comes from it all, and we’ve been lucky. “I say lucky even though there’s thousands of hours of behind-the-scenes work that goes into creating and www.thechronicle.com.au/lifestyle

independently releasing an album... It nearly broke me, but (we have been) lucky enough that we’ve had quite a bunch of decent things come our way off the back of that.” While Interim has found that persistence and patience are a huge part of its success, being an independent band comes with taking care of a huge number of tasks. “My job title includes the easiest and hardest parts of being in a band – playing bass and management. Bass is great – a simple instrument that I love... Management is not,” Jock says. “Your day becomes a checklist of new www.thechronicle.com.au/lifestyle

music, bookings, publishing, PR, social media, rehearsals, postering, design, video clips, merchandise, website, the list goes on... “In the few months leading up to the album release it got so bad that I had to quit my full-time job just to manage everything that needed to be done.” The humble men of Interim have found that while their success has been wonderful, it hasn’t come easily — but aspiring musicians should endeavour to be a part of it. “Hit us up if you want to chat about it (joining the industry)... starting a new

local band in this day and age and making it work is one of the hardest slogs you’ll come across. “Love creating music but struggle to get a bunch of other decent, likeable, committed and talented people around you to do it? Learn how to do stuff online and start creating whatever you want in Ableton or a bunch of other platforms. “Love performing music but hate writing or composing? Get into cover gigs or DJing, there’s a lot of opportunities to do that. “Love playing one instrument and nothing but that? Great, study music or become a session/touring musician or play in a bunch of local bands. “Hell, become a YouTube or Twitch hit if you want! “Work to your strengths, know what you want and try to spend a lot of time focusing on owning the day you’re in rather than the whole journey as a musician.” Despite a string of huge successes, the five young men haven’t forgotten where they came from. “Toowoomba will always be special to us,” Jock adds. “There’s a lot of things we reminisce on about Toowoomba: the fog in winter, rolling over the trees that line so many of the roads is something you really come to miss. “Toowoomba’s also gone through a bit of a makeover since we lived there eight years ago. “The street art has added a nice little touch of Berlin to our town, though it’s sad to see the live music scene has really struggled with a lack of venues and spaces over the past few years. “Luckily The Spotted Cow is doing bigger and better things each year.” In terms of what’s next for Interim, the guys are keen to relax — for now. “To be frank, we’re kind of exhausted from it and need to unwind,” Jock says. “We’ve got a few big shows planned but we’re going underground for a while to work on other musical projects, and Alec’s got some theatre gigs.” Looking back, these down-to-earth musicians have embraced the rise to fame so far. “It’s been an amazing part of our lives, we’ve learned so many things and met so many awesome people. “Alot of the time it can be pretty tough on the old mental health, liver and lungs, but a lot of our favourite memories are of creating or playing our music.” November 2017 | 11

THE SURVIVOR TELEVISION FRANCHISE HAS BUILT AN EMPIRE ON ITS MANTRA DICTATING CONTESTANTS MUST ‘OUTWIT, OUTPLAY AND OUTLAST’ ALL WHO DARE GET IN THEIR WAY.

T

he win-at-all-cost mindset has been served up constantly throughout the recently finished fourth season of Australian Survivor (filmed in Samoa) – as castaways shamelessly connived, cheated and conspired in a desperate attempt to be the last one standing. Everyone did it. Well, almost everyone. It seems 51-year-old Geham lime farmer and fan favourite Mark Herlaar didn’t get the memo. More importantly, he probably tore up the memo, because Tarzan (as he was soon dubbed on the show) decided from the outset he was going to “play” the game the way he wanted to play it – doing the right thing by others and being true to himself. Through monsoonal rains and cyclonic winds, he stood vigilantly by the fire to ensure it stayed alight for his tribe mates. While others huddled freezing in their crude make-shift shelter (and despite his own hypothermia), he hunted palm fronds in the dead of night and laid them on his fellow contestants so they might beat the bitter conditions. “Everybody talks about developing strategies and manoeuvring to get an advantage in the game,” Mark said. “I just wanted to keep people warm.” His concern for others even saw him selflessly hand over an immunity idol to Tessa – leaving him completely vulnerable and out the door at the next 12 | November 2017

tribal council. He may have lost the chance at finals glory, but he won a legion of fans across the world for his caring attitude and philosophical approach to life. Yet, he still copped a lambasting by internet Survivor “experts” who claimed his tactics were flawed, ill-conceived and counter-productive to winning the game. Mark takes the criticism on the chin. “They’re bloody right! I didn’t have a clue about what I should have been doing strategically. I went on this show as a journey of enlightenment and I got to experience so many amazing things as a result,” he said. “Those 11 days will shape my future. I don’t know how – but they will.” But what about the $500,000 first prize? “I wouldn’t say no – especially as we’re trying to grow the lime business – but money doesn’t motivate me. There’s more to life than money.” When you look at Mark shrug his big shoulders and wryly smile – you know he means every word. Mark’s early departure from the show may have added weight to the long-standing adage that “good guys finish last” but he also proved why good guys get the tag in the first place. “The marriage proposals have dropped off a bit now,” he laughs. “But, I’ve had people contact me from Ghana to Italy to the Netherlands, you name it – it’s amazing how many people want to

talk to you and get your advice and opinions. "The best advice I can give anyone is to be a salmon and swim against the current. Swimming with it is easy, but it’s nowhere near as fun." So, how did the farmer who doesn’t like farming get into the lime industry? “You’ll think I’m making this up, but my son brought over a few beers one afternoon and wanted me to try one with a lime in it,” he recalls. “I’m not a drinker, but he insisted and it tasted pretty good. The problem was he told me the limes were $2 each. “So, I thought: ‘let’s put a tree in’. It didn’t die, so I thought how about we put in another 700 (just for fun) and then we put in another 3500 (just for fun) and the farm has gone from there.” A deeply spiritual man, Mark puts a lot of stock in fate and “what will be, will be” – it gets him out of bed every morning because he knows each new day brings another adventure. “Life’s what we make of it – never take anything for granted and enjoy every part of it because we create ourselves along the way,” he said. Just as he did on Survivor. No fire for days, no food to eat, the most basic of shelter, horrendously ill-equipped to take on the wrath of Mother Nature – sounds a nightmare. To Mark, it was paradise: “For those 11 days, I wasn’t on a game show, I was living and I’ll carry that wonderful experience to my grave.” www.thechronicle.com.au/lifestyle

CAN YOU WAIT A MO WHILE I SORT OUT MY MO? BY DARREN BURTON

For some, November is usually spent wondering why stores have put up Christmas decorations in October.

F

or the rest of us, the month is all about embracing the highly successful Movember campaign. From humble beginnings in 2004, it has served as a great platform to bring awareness to men’s health issues and raise valuable dollars at the same time. The bloke-iest of blokes around the country welcome the month as an opportunity to throw the razor into the back of the bathroom cabinet and let their inner lumberjack run free. Good on you, I say. Go get ‘em, I say. Hope it all goes swimmingly, I say. But sadly, I don’t mean a word of that

because I’m bitterly jealous that they can do it and I can’t. If I wanted to grow a moustache for November, I should have started around June. And even then, there’s no guarantee of success. Here’s the problem for some of us more follicle-ly challenged gents – growing facial hair on cue is like telling the cat to bring your slippers. There’ll be a sniff of whiskers, but it ain’t gonna happen. Nonetheless, I still encourage you to give it a red hot go this month. Whether you grow a thick and luscious lip caterpillar that can be spotted from space or, like me, you can only manage a

soccer mo (11 a side) just remember that the whole reason you’re doing it is to get talking about men’s health. It’s a fun, visual prompt to start that vitally important conversation. But, whatever you do, be sure to ask your partner first before you start growing that moustache – because it’s even more fun when you know they’re dead against it. Adam and Rachel Healey Where are you from? New Guinea originally. We’ve got a long history with the country – my grandfather settled there after the war and my father was also born there. Tell us about your family. I have a young family who’ll be going to high school here and my wife is an ex-Toowoomba girl, so this is a real homecoming for her. I think people take for granted how beautiful it is here. How long have you been in this industry? I had two years with Sealy Posturepedic and seven years with David Jones (ultimately managing their bedding department). We have owned the Forty Winks store in Hervey Bay for nine years and the Bundaberg store for two and now the Toowoomba store is our latest venture. What earns success in business? The customer HAS to have a good experience with you. They need to feel comfortable, as if they were at home –

SCOOP like they know you. That can only come by looking after people and by helping them get total satisfaction from their visit. What do you pride yourself on? My staff and I genuinely enjoy what we do – you have to love retail to be in this business and that means doing everything you can to ensure our customer service is at the highest level. You need to come to work smiling and leave work smiling and that will get you past any bad day. What would you like to see for the Toowoomba region in the future? Prosperity is very important for the region. We all need growth – no matter what business you’re in. We need good rain for our agriculture industry to flourish and we need building and tourism growth to continue. You want everyone doing well because it becomes infectious and the entire community benefits as a result.

As a slow clothing pioneer, Jane Milburn, of Textile Beat, is inspiring people to reclaim their individuality and help save the planet. Few people sew their own clothes these days because it’s so cheap and easy to buy factory-made options, but our fast and furious, throw-away lifestyles have resulted in an astounding 6000kg of clothing being buried in landfill every 10 minutes. “We are marketed to on every level in our lives, which has us believing we must have new, brighter, better to compete and appear successful. We’re left feeling insecure and unfulfilled by that endless cycle,” Jane says. “There is something totally empowering about stepping away from the pressures and falsity of the fashion industry and living by a slower, more

mindful philosophy.” Jane urges us to resist the rush to own for reasons of status and looks. “Our clothing story runs parallel to our food story. Fast food has had a dramatic effect on our health and similarly, industrial clothing has health and environmental impacts that we are only now coming to realise. Synthetic fibres made from petroleum dominate the clothing market and yet research shows these plastic clothes are shedding microplastic particles into the ecosystem with every wash,” she says, “I started this slow-clothing journey after being selected for the Australian Rural Leadership Program in 2009 and reflecting on the shift in the way we buy, use and discard clothing. ”At 27kg per person per year, Australia’s clothing consumption is twice the global average. We have to change our ways.” “Start where you are, use what you have, do what you can. Before you buy anything new, take time, revisit what you already have and consider how it may be revived, repurposed or recreated.” Textile Beat is a national platform discussing ethical issues around contemporary clothing culture.

THE WORK BAG YOU’VE BEEN WAITING FOR f course women are fantastic at multi-tasking, but having to carry multiple bags everywhere very quickly gets frustrating. Anthea Rowan, of Code Republic, has teamed up with Harvey Norman to bring a stylish solution to the problem. How did you come up with the idea for these innovative laptop bags? After spending over six years in the technology industry, most recently at Lenovo, I always found I was carrying around both my handbag and a laptop bag. No matter how hard I tried, I just couldn’t find a bag that had all the features I wanted in a work bag, whilst remaining stylish and feminine. I noticed so many women were either carrying around two bags like me or shoving their laptops into their handbag, because they were not willing to sacrifice on style. We all know that extra weight doesn’t bode well for the life of a handbag. All the laptop bags available in stores

were certainly designed for protection and portability, but were lacking the panache I was looking for in a handbag. Is this your first time in business? I have dabbled in a few small side projects over the years, however I have always had a day job. This is my first foray into a “real” business, in that I have left the security of a full time job to pursue this 100%. How did you come up with the name for Code Republic? The concept of my products came first, so when it came to deciding on a brand name, I wanted it to be something that resonated with technology but also sounded like a fashion label. i, let me introduce myself. I am Nivard Nelson. My passions are food, wine and spending time with family and friends. I grew up in Auckland, New Zealand (love my All Blacks) and have always had a passion for food. New Zealand has an amazing culture of promoting local produce and after moving to Toowoomba in mid 2011, I noticed that there was not a huge emphasis on local produce, be it dairy, vegetables or wine. People were happy to use the best from around Australia but were reluctant to utilise locally-sourced or produced

ingredients. The reason for writing this monthly column is to introduce the amazing local producers in our region. I have been passionate about local providers and the great stories that they bring. These stories need to be told. Another interest, and reason for wanting this column, is to promote tourism, ideally food tourism. We are happy to travel to Margaret River, the Barossa Valley and the Hunter Region yet we, as a local public are reluctant to visit our local wineries in

Stanthorpe, cheese makers in Kingaroy or farms in the Darling Downs. Now I also love to visit those regions in other states but I think that this is an area – the Darling Down, Granite Belt, Locker Valley – which is so diverse and varied and we should be celebrating and recognising the amazing producers that we have on our doorstep. By promoting and championing these producers we can show Australia and the world just how special our region is.

WHAT ARE THE COMPLICATIONS ASSOCIATED WITH DIABETES?

Potential complications from Type 1 and 2 include kidney disease, increased risk of cardiovascular disease, foot problems, limb amputation, blindness and renal disease.

When the vagus nerve is performing at a lowered function, we can experience a myriad of health issues. In conjunction with other aspects of your biology, increasing and stimulating the vagus nerve is important for healing. The vagus nerve is the main nerve of

the parasympathetic nervous system and often referred to as the “wandering nerve’” The nerve reaches the brain, gut, heart, liver, pancreas, gallbladder, kidney, ureter, spleen, lungs, pharynx, larynx, oesophagus, ears and tongue. This communication pathway plays a big role in the regulation of these organs and when not working properly we can experience negative health outcomes.

The vagus nerve can be interrupted and experience miscommunication from an organ to the brain, communication from within the brain, or communication from the brain to other areas of the body like the heart, liver, and gut. Recent studies have found the stimulation of the vagus nerve could restore consciousness in individuals in a vegetative state. This is promising for individuals who have been diagnosed with Parkinson’s, digestive disorders and neurodevelopmental disorders. Other research has found the vagus nerve plays a large role in the regulation of our metabolism. It has a fine-tuned regulation aiming to preserve energy and prevent weight fluctuations. DETAILS BEHIND THE HYSTERECTOMY M

any women are faced with the need to undergo a hysterectomy. The procedure removes the uterus (womb) and in some cases the cervix, ovaries, and fallopian tubes, to surgically treat conditions such as fibroids, endometriosis, uterine prolapse, gynaecologic cancer and chronic pelvic pain. A total abdominal hysterectomy was once the standard surgical approach, but now, for benign conditions, less invasive techniques such as vaginal hysterectomy and laparoscopic hysterectomy, have been found to produce better outcomes and fewer complications than other options. But what are these different surgical approaches and what is the difference between them?

VAGINAL HYSTERECTOMY

A vaginal hysterectomy is performed through a small incision at the top of the vagina through which the uterus (and cervix, if necessary) is removed. This approach does not require an incision in the abdomen and is therefore often referred to as a “no (visible abdominal) incision” hysterectomy.

LAPAROSCOPIC HYSTERECTOMY

In a laparoscopic hysterectomy, special surgical tools are used to operate through small incisions in the abdomen and vagina. There are two types of laparoscopic hysterectomy — a laparoscopically-assisted vaginal hysterectomy and a laparoscopic

A laparoscopically-assisted vaginal hysterectomy is similar to a vaginal hysterectomy, however the surgeon also uses a laparoscope (miniature camera) inserted into the abdomen to see the uterus and surrounding organs. A laparoscopic supracervical hysterectomy is performed entirely through small abdominal incisions using laparoscopic tools to remove the uterus. activity and less post-operative morbidity than both a total abdominal hysterectomy and laparoscopic hysterectomy. Laparoscopic hysterectomy is the second least invasive and costly option for patients, with benign conditions, as it has several advantages over abdominal hysterectomy such as producing less pain, faster recovery times and less scarring. The surgical approach to hysterectomy should be decided by the woman in discussion with her surgeon. This discussion should cover the relative benefits and hazards. DIETS EXPLAINED: PALEO Also known as the “Caveman Diet”, the Paleo diet takes the attitude that what our predecessors ate led to strong muscles, healthy bones and a great immune system, with lots of protein.

I

n short, if it’s natural, you can eat it – think fruits, vegetables, lean meats, seafood, nuts, seeds and healthy fats. That means that dairy, grains, processed foods, sugars, legumes, starches and alcohol are out. The benefits of the diet are that it has stood the test of time, and goes hand in hand with the rise of HIIT (high-intensity interval training) and CrossFit in recent years, as the diet is perfect for building muscle and giving you energy to burn. The Paleo diet has been around since the 1970s but has become popular again

in the past few years thanks to several celebrities who swear by it. Of course, when you’re a movie star it’s easy to get someone to make your meals for you, but with a bit of planning, the Paleo diet can work for you. Books like The Paleo Solution by Robb Wolf and The Primal Blueprint by Mark Sisson have caused a surge in the amount of attention paid to the Paleo diet and similar eating plans. If these cancers are left too long, they would either have to be treated with radiation, which leads to hair loss in the affected area, or chemotherapy, which causes hair loss all over. On September 23, Chantelle Williams and Brett Ernst tied the knot at St Aiden’s Chapel at TACAPS, followed by their reception at the All Seasons Function Centre. “We met on a blind date organised by mutual friends at the Fiveways Hotel on the May 29, 2015,” Chantelle says. “From the day we met we just clicked and could not stop talking, we would spend hours talking about anything and everything — it felt like we had known each other for years. “My wonderful husband is a great

provider not only for myself but for our beautiful daughter Aria.” Brett and Chantelle Ernst had a traditional, simple and elegant wedding that was also the christening day for their six-month-old daughter, Aria Ivy Ernst, which was celebrated straight after the wedding ceremony. ith the construction stage of your house drawing to a close, it’s now the fun time as you dress your home with your favourite light fittings, window dressings and floor coverings. This is where the dreams you began with now literally materialises before your eyes. It’s where you get to put your final stamp of ownership on your original plans, and your construction site morphs into your new home. The choices you make now will, like everything else you’ve done to build this home, have their own on-going impact on the energy efficiency and sustainability of your home — increasing it or decreasing it. LED lights can be very cost-effective to run, and are available in a wide range of styles and fittings, and can enhance an ultra-modern look or give a fresh light on classic styles. Windows are traditionally the weak link in external insulation barriers, so the choice of your window dressings plays a crucial role in temperature control. There is a large array of choices, from curtains and drapes through to selections of blinds and shutters. The most important thing is to cover your windows. New generations of blinds like the Sunway (with its reflective coating on the window side) and the Sabelle Blockout (that concertinas to trap still air within the blind) do an excellent job of reducing heat transfer through glass. If curtains and drapes are more of your choosing, it is wise to put an enclosed pelmet above your curtain or drapes. These will trap still air between the window dressing and the glass, helping to stop heat transferring through the glass because of the air movement. Floor covering again is very much a personal choice. From an energy efficiency perspective, if your home is built on a concrete slab you are better to look to a matte tile or vinyl plank as they will help transfer warmth into the thermal mass

of the slab, whereas a gloss tiles or timber flooring will deflect and disburse the heat from the slab. Carpets may be the preferred option for your bedrooms, and it does pay to check the underlay is made from recycled materials where possible. A quality natural fibre carpet such as wool is preferable as it is fully sustainable and a renewable material. It is also hard-wearing and long-lasting, reducing the need for frequent replacement of floor coverings. Flotation tanks could be the key to relaxation and stress-relief

S

tress, anxiety, tension! These words are not foreign in society today, but most of us constantly seek ways to balance our lifestyle and lessen the workload and impacts on our long-term health. I was recently discussing this exact concept with a client who surprised me when he mentioned float tanks. Now I wouldn’t consider myself a “new age medicine” person by any stretch but I like to think I am open to trying most new experiences at least once, and the thought of an hour away from the corporate world, parenting and

life in general really intrigued me — so I started researching. I found that a float session comprises of being submerged in a flotation tank for about one hour. The tank is filled with a ratio of water and epsom salts to change the gravity level and allow you to float effortlessly in a controlled, zero-gravity environment — the ultimate relaxation and escape. Float tanks can be beneficial for stress and anxiety management, joint pain relief, sports recovery, headaches and

improved sleep. Participating in a float session allows your body and mind to relax

and heal. The more I researched the more I really wanted to try this treatment. I couldn’t find a provider of this service in Toowoomba but there are float centres in Brisbane and the Gold Coast. At the time of writing this article I haven’t experienced the treatment but I am booked and ready Perhaps this is something that may work for you?

The Raising Children network, an online parenting resource backed by the Australian Government and the Royal Children’s Hospital, says that banning social media outright is not the best approach – tempting though that might be. It recommends that best way to protect your child online is to openly discuss the risks of social media. ◆ Risks include being tagged in an embarrassing photo taken at a party ◆ Understand the dangers involved in sharing content and personal information ◆ Learn how to navigate the risks – for example, if your child posts an identifiable image of herself, she can reduce risk by not including any other personal information ◆ Solve problems ◆ Think about and manage their own “digital footprint” – what your child uploads now might have an impact later.

MY NEW ADVENTURE STARTED AFTER HOPPING OFF THE PLANE IN CHRISTCHURCH

W

aking up early has never been my strong suit. Getting out of bed at 4 o’clock in the morning is usually a struggle of mine. However, this time was different. This time I was leaving my normal everyday life and experiencing a new one in New Zealand. We travelled three hours to the quite little of Lake Tekapo. The entire town faced the remarkable turquoise-coloured lake, with serrated mountains looming in the distance with sifted snow on top. Waking up this time was a breeze. We rushed outside and stood in awe as snowflakes fell on our faces. At Queenstown, the views were breathtaking, so much so that we got sore necks from constantly staring up at

the mountains. Snow covered the streets as far as the eye could see. The crowd of people pushing and shoving was overwhelming. Each coffee shop we visited had rugged-up visitors and locals next to an open fire, and we joined in. We heard that the surrounding mountains had the perfect amount of snow to snowboard. I had never snowboarded in my life, but my friend insisted I try. We travelled by car up the steep mountain. My heart was racing. The ground began to shrink as the strong wind whistled around us, shaking the ski lift back and forth. My friend gave me a quick

run-down on snowboarding, then we were taken to the highest peak of the mountain. My friend warned me, “make sure that you lean forward!” Those felt like the last words I would ever hear. Standing up was the hardest part, but after my feet were buckled in, there was no turning back. I remember staring down the mountain, watching all the professional snowboarders perform flips and tricks. Before I knew it, I was plummeting down the mountain at tremendous speed. Boarding off the ski jumps were undoubtedly the scariest par. Soaring through the air, however, was the best feeling in the world.

You will need three basic tins of different sizes (depending which dish and method you choose) and foil to go over the top if roasting or grilling. I especially like the before-and-after pictures side by side, such as pancetta chicken laid out in the pan, ready to roast. Molly details when to add ingredients. Whether it’s as simple as chorizo and beans, baked haloumi with tomato and garlic, or peach custard tart, these no-fuss recipes look delicious.
