celebrating parenthood While studying journalism I nannied to pay my bills, and let me tell you, it was an experience that has embedded me with a deep respect for parents everywhere. Raising children is said to be one of the most rewarding things you will ever do. It is also one of the most challenging, and will teach you just as much about yourself as it does about the children. How you reason with the utimate in hostile negotiators (aka the toddler) reveals a lot of things about your resourcefulness, patience and disposition that you may never have been forced to consider before in your lifetime. According to the Queensland Fertility Group, in-vitro fertilisation, or IVF, is a process used to overcome a range of fertility issues and for a large number of couples, gives them the best chance of having a baby. Local couple Wayne and Tracy Peters tried to naturally concieve a child for three years, and since then have turned to IVF, finding immense joy in the process. “When we met with Dr [John] Esler (gynaecologist and fertility specialist), he said with our chances of natural conception being so low, he would recommend IVF,” Tracy says. “He said any other procedures or treatments lower than IVF — well, we didn’t have time on our side to do that — so he recommended with our age to go straight to IVF, so that’s what we took on board and decided to do.” 40-year-old Tracy found the process of IVF fantastic, with a well-supported network. Both herself and her husband Wayne made sure that they kept an open and clear mindset. “We’ve found it okay — we didn’t go into it stressed, we just went in thinking we’ll give it a go, and went with the flow,” Tracy says. “I suppose it was a bit daunting at the start when you first meet with the nurses and they give you the whole overview process, which is about a two month process, so you’re getting a lot of information up-front.

“But then when you start it they break it down bit by bit and give you the information relevant to the stage you’re about to go through, so that makes it all nice and easy and you’re not trying to deal with two months worth of stuff up-front.” In terms of the emotional side of things, Wayne and Tracy have taken a methodical viewpoint, instead finding joy and calm in being able to maintain some normalcy in their day-to-day life. Wayne is the proprietor of Joyce Mayne Toowoomba, and Tracy works as the small appliance manager, generally doing six days a week. “We just didn’t let it stress us out, we just went through it bit by bit, through each stage,” Tracy says. “Obviously you can see that it would be emotional, as [some] people have to repeat that cycle time and time again, whereas we were very lucky to have it happen first go, but the whole process really wasn’t that bad. “I didn’t have any side effects from the medication, so we just went about our normal working day, normal life, and didn’t really change anything.” While Tracy was lucky enough to fall pregnant on her first round of IVF, her advice to other couples is to follow up on investigations straight away. “Don’t leave it too late — if the doctors are saying to you with whatever age bracket you’re in that if it hasn’t happened after the 12-month period or if it hasn’t happened after your six month period, don’t delay going and getting your investigations done, because at the end of the day depending on where you are

age-wise, you really don’t have time on your side,” Tracy says. “I suppose that’s where I got caught out — being the modern day working person and your age kind of gets away on you, you think you have lots of time up your sleeve when you don’t.” At the beginning of the IVF process, Wayne and Tracy made sure they took a bit of a break to regroup. “We took a bit of a holiday for ourselves before we started, because we knew that potentially there was going to be some stress coming through during that time, but apart from that we just tried to keep our normal routine.” Overall, Tracy recommends IVF to any other couples struggling with conception, and says there’s a huge amount of support available throughout the various stages. “When you’re going through the fertility treatment you’ve got a team of fertility nurses there on hand that were fantastic with any questions that we had and they were very supportive throughout the whole process, so I think they made it very comfortable for us to go through that process as well,” Tracy explains. “I think initially there are nerves and a bit of apprehension about what you’re about to do, but there’s also a lot of support along the way.” On April 20 at 6.48am in St Vincent’s Hospital, Wayne and Tracy welcomed their son Jackson Lee Peters into the world. On March 20 at 2.56pm at St. Vincent’s Hospital, Chantelle Williams and Brett Ernst welcomed their daughter Aria Ivy Ernst into the world — a perfect little bundle. “Holding her for the first time was very emotional — we went through a long process before she was born,” Chantelle says. “My partner was hurt before I was induced with her — I actually had to hold on for three days. “So, we were in hospital for a whole different reason before having her.” Chantelle is the mess manager at Borneo Barracks in Cabarlah. “I had a really great pregnancy with no sickness — I worked up until 36 weeks,” Chantelle says. “She’s a very cuddly girl,” Chantelle laughs. “Once a week we go out and

have play dates with friends — I have a lot of friends that are pregnant at the moment.” Toowoomba has been a wonderful place for Chantelle, Brett and Aria as a young family. “Aria hasn’t had needles yet so unfortunately we can’t take her a lot of places but there’s some great coffee shops – we love Zarraffas, The Coffee Club and ParisiAnn Patisserie. Chantelle believes that being a mum is never what you expect, and there’s no right or wrong. “Listen to everyone’s advice, but just take what works for you,” she says. “Having a good doctor helps through the pregnancy — someone who is always on call or you can text. “We became very close with our doctor [Dr Zakia Sharif] — she’s more than a doctor.” If she were to do it all over again, Chantelle wouldn’t do anything differently. “Probably not getting Brett to hurt himself!” she laughs. “Everyone has their own struggles and their own story to become a mum, but when it happens, it’s perfect.”

I got a puppy! Oh and I moved out of the rental world into my first ever, very own home which is also exciting... BUT I GOT A PUPPY! I’ve been wanting a little companion for years so a huge motivation to buy my own pad was the fact I wouldn’t need permission to get a pet, but as is the norm in my life, getting little puppa didn’t quite go to plan. For weeks I had been trawling Facebook, Gumtree, RSPCA and pet rescue sites looking for my little buddy and I found hundreds of dogs I wanted to call my own, but one stood out. He was a little Chihuahua with a very unique look, the cutest face and my heart melted — I had to have him. Sure I was still in my rental and sure pets were forbidden, but I’d be in my new house in a week so how hard can it be to hide a mini guinea-pig-sized dog for seven days? It was easy at first because little Bear was still settling in so he was quiet and timid in his new surroundings. I would take him to work with me each day and he would sit in

his play pen chewing his toy or napping, but once he started to get a little more confident he wouldn’t be restrained - yapping in the background while we were on-air or trying to chew through wires. I couldn’t leave him at home though in case someone heard his ‘barks’ (more like squawks) and reported him to the real estate. Luckily for me it all turned out ok — my boss is super cool and never kicked Bear out of the office, my neighbours kept my secret, we’re now settled in to our new home where there are no rules and I never got caught so shhhhhh…let’s keep this between us, yeah?

That is not actually true — most midwives love the opportunity to work with women and families. We genuinely love the precious process of seeing a woman transform into a mother. Having a baby seems like a very physical thing, but it is so much more than that. After over 20 years of midwifery it’s still difficult to capture what changes in a woman becoming a mum — many women can’t describe the feeling until looking back many years later. The feeling is sometimes described as overwhelming love for a baby or responsibility for a new life. Medical authorities now consider that the conclusions from the Women’s Health Initiative trial of the use of HRT in 2002 to be exaggerated and vary with the age of the women and the type of progesterone used. The WHI study had led to confusion regarding the role of HRT and its real risks and benefits. Last year, TGA approved the use of the body-identical micronised progesterone which has been prescribed by integrative doctors and compounded by special pharmacies for a number of years. This is because a systematic review of breast cancer risk with different types of progesterone reported a statistically significant reduction in breast cancer risk for users of estrogen plus the natural micronised progesterone, whereas there was an increased risk for users of estrogen plus synthetic progesterone. Other conclusions were that HRT improves bone density, reduces fractures and cardiovascular disease may be reduced. Alongside this, the risk of blood clots was increased amongst oral estrogen users but not non-oral (ie patches and creams). While HRT is the most appropriate treatment for menopausal symptoms, it is not for every woman and should not be initiated in older women.

During pregnancy nutrition requirements change. Although there is only a small increase in the need for additional energy there is an increase in the need for certain nutrients. In contrast, certain foods can be harmful to an unborn child. The key considerations during pregnancy are: Iron Requirements increase during pregnancy from 18mg per day to around 27mg per day. Good dietary sources of iron include liver, beef, fortified cereals, cashews, baked beans and lamb. Folate To reduce the likelihood of neural tube defects in infants women should consume an additional 400 of folic acid a day, both before and during pregnancy. This can be achieved through supplementation or foods. Rich dietary sources of folate include green vegetables, fruit and fortified cereals. Listeria Listeria bacteria can be transferred through the placenta and can cause premature birth, miscarriage or damage to an unborn child. Foods to avoid that may contain listeria: • Deli meats, pate • Leftovers (more than 12 hours after cooking) • Pre-prepared salads or unwashed produce • Soft cheeses (brie, camembert, ricotta, feta, blue) • Raw eggs or partially cooked eggs Caffeine Limit caffeine-containing drinks to no more than three a day. This includes cola beverages, Mountain Dew soft drink, tea, coffee, chocolate, chocolate flavoured beverages and cocoa. Mercury Although fish contains healthy omega 3 oils there has been some concern regarding the level of mercury in fish, specifically in fish that are higher up the food chain. Food Standards Australia New Zealand recommends pregnant women and women planning pregnancy limit deep sea fish to no more than one serve (150 g) per fortnight.

As the cold weather sets in, the moisture is significantly reduced and that means your hair dries out far more easily. Add to that the stress that hair straighteners, dryers and curling wands can add to the condition of your hair, and your winter locks are crying out for a little TLC.

When you look back on those old photos from the 90’s you can really see how far fake tans have progressed. With varying shades, colour-bases and strengths, it’s now easy to achieve the perfect natural look over winter. Here are some tips to help achieve the look.

Using a deep conditioning treatment once a week over winter is a great way to give your hair a break. This helps restore moisture taken out by indoor heating in your workplace or home, as well as the dry, cold winter air. Our tip is a coconut milk and olive oil treatment. Au natural, this is simple to create and effective. The coconut milk fills up hair strands with proteins and adds moisture from roots to ends, making it perfect for damaged hair or split ends. The rich, fatty acids of the olive oil work to lubricate hair strands individually and helps strengthen them against breakage. It’s a very oily substance however, so remember to stick to the measurements. ingredients 2-4 tablespoons coconut milk 1 teaspoon olive oil 3 drops tea tree essential oil directions Step 1 Mix the three ingredients in a small bowl.

Allow a good 15 minutes for the lotion to dry, however the longer the better - just to make sure.

Step 2 Apply the mixture to your scalp (using hands) and massage into hair from roots to tips. Step 3 Let the hair sit for 15 minutes so the treatment can penetrate. Step 4 Rinse off thoroughly using warm water. Do a final rinse in cold water to help close the hair follicles. Step 5 Towel dry hair and leave to dry naturally. You can store excess hair mask mixture in the refrigerator for up to three days!

dealing with high-risk pregnancy High-risk pregnancy is on the rise but not to be feared as much as initially thought High risk pregnancies are becoming increasingly common. Despite this, many women are not aware of what a high-risk pregnancy is and what it means for both the mother and her baby. Being called high-risk may sound scary, but it’s just a way to make sure that you get special attention during pregnancy. It’s important to remember the term doesn’t mean there will be difficulties but that the likelihood for them is higher, so the mother and baby require extra care and attention. It is one in which some conditions put the mother, developing foetus or both at a higher risk during or after the pregnancy and birth. Specific factors that might contribute to a high-risk pregnancy include medical conditions present before pregnancy, advanced maternal age (above 35), medical conditions that develop during pregnancy, previous obstetric history and lifestyle factors. Preconceptional counselling is recommended if the woman is already taking medication, as it may need to be adjusted or changed for use during the pregnancy. At Woman to Woman Health Clinic, the antenatal care for each woman is individualised according to her risk factors. This requires closer monitoring than the average pregnant woman. Warmly greeted and sat with a flat white (on almond milk of course!) on the terrace, I stare in awed silence at the view. Slowly, finally, the tension falls out of my shoulders. It’s been a long working week and I am truly looking forward to soaking in the mantra of Spicers Peak Lodge: “the most luxurious way to put back everything that life takes out”. Tucked in the mountain luxury of the scenic rim, it’s hard to believe this is just under two hours’ drive from Toowoomba, in the Maryvale area near Warwick. The hills roll into the distance, bright green after recent rain. The clouds are reflected alongside the blue splash of sky in the infinity pool, a little jewel of colour amidst all that green. The greatest drawcard of this place is not just its exquisite luxury, but its removal from all things hurried. An engine throttles into earshot and a couple bids me farewell. “Our chopper is here,” they say, “enjoy your stay — it’s amazing.” We are shown to our room, spacious and chic with a king-sized bed dominating the space, fireplace, lounges to recline and a

beautiful ensuite for those luxurious, hot soaks. Doors open onto our private balcony, where we opt to lunch. The beauty of Spicers means doing as much or little as you like. With a little time before gin appreciation begins at the bar, I change into my robe and make my way to the Spa Anise for a hot stone massage therapy — highly recommended! don’t lose heart Making the decision to have a baby can come with its fair share of challenges For many couples, deciding to start a family is one of the biggest life decisions they will make. People often don’t account for the difficulty that can come with this decision however, and can grow frustrated at the lack of immediacy in falling preganant. The best way to handle this is by factoring it into your family planning. Each couple is different and the time it may take to fall pregnant may vary from anything from a few weeks through to a few years. Once you have made the decision to start a family it’s a wise idea to check in with your doctor for a general health assessment. This will help alleviate any health concerns that could be causing problems in conceiving, as well as have a realistic chat about your age, health and realistic conception timeline. local favourite transformed A popular Drayton hang-out has received a brand transformation. Grumpy Steakhouse, at 48 Brisbane St, is now called Grumpy’s Tavern, Steakhouse and Bar. Co-owner Michael Fallon says the name change was necessary to keep up with the city’s thriving food and drink scene. “This is just part of our brand evolution because after our first 12 months, people’s perception is that we’re just a restaurant,” he says. “We need to fill out our day times and afternoons; we’re licenced from 10am to midnight and operate under a commercial hotel licence. “So we’re trying to encourage people to come in for some drinks and cocktails and to try our lunch menu and specials.” The Drayton Tavern was transformed into the steakhouse in January last year. The “Grumpy’s” brand is the brain child of steak kings Michael Fallon and Nick Luck. Michael says the city welcomed the tavern with open arms so it was their duty to give back. “Our sales mix is heavily weighted on food so we need to lift our bar sales and improve our gaming to level the playing field,” he says. “Kids eat free on Mondays and Wednesdays and on our ‘Sunday fun days’ we put up a jumping castle outside.” Grumpy’s Tavern, Steakhouse and Bar is open seven days from 10am to late.

nurture their talents It is often said that everyone has a talent, and this includes even the smallest ones among us: our children. However, because they are so young, it can be difficult to encourage their talents as you may not yet know what they are. Sometimes you can get an inkling as to what your child’s talents might become, however. While they are probably still too young to recognise interests and talents for themselves, if they instinctively show interest in a particular activity it may be a sign that it has to do with one of their natural talents. For example, if your young child takes a lot of interest in their pencils and paper, they could be showing an instinctive talent for drawing — even though at the moment all they do are colourful scribbles. Be patient at this stage, and encourage them to pursue this interest as well as stimulating growth — but don’t push too hard: at this age too lofty expectations can discourage your little one. As your child gets a bit older, encourage their discovery of their talents by exposing them to all different sorts of activities.

You may find a past-time that your child particularly enjoys and develops an ability for, or it could be a natural-born talent. Once you and/or your child have discovered their talents, it is very important to patiently nurture those abilities. Remember that while there are some kids that are honest-to-goodness prodigies, the majority are just your average child and that’s completely fine. Encourage your child positively when they struggle, because struggling is often where the most learning occurs as your child is trying hard to make connections and give their brain a work-out. Another tip is to pay attention to what your child stares at over what they actually verbalise. Often children are not at a level were they can adequately express their true attitude towards a new activity or lesson, but when they stare at something it can often be an indication of what they are interested in enough to keep at and develop talent. Finally, change your perspective with what you celebrate — instead of celebrating victories, celebrate the mundane, such as repetition.

For so long now it seems the trend for quirky names or different spellings has been going on and on. While there is nothing wrong with a little unconventionalism — as long as you don’t go wild like some parents did in the list at left — this year is seeing a trend back towards more traditional names, as well as longer names and culturally diverse names. Using an ‘o’ in your baby’s name is also popular this year, such as Milo, Theo, Ophelia and Olympia. Deity-inspired names are making a come-back — think Freya, Luna, Zeus and Atlas. Some on-trend culturally diverse names include Mateo, Catalina and Alessandra. Some parents are choosing to look back into their cultural heritage to pick names that align, while other parents are simply picking ones that sound exotic and take their fancy. Meanwhile, traditional names like Charlotte, Olivia, Penelope, Frankie, Elsie and Lilian for girls and Theodore, Harvey, Oliver, Jack, Isaac and Hunter for boys are making a massive come-back in popularity for new bubs. A smaller trend — but one nonetheless — is picking a baby name beginning with X, Y or Z. Think the traditional Xavier, Yasmin or Zoe as well as Xena, Xana, Xenia, Yena, Zane, Zara or Zari.

“Preparing for birth in a household requires the basics of setting up the nursery and having clothing, safe bedding, prams, car seats, and other necessities ready,” Kerri says. ”There are sometimes an overwhelming number of options, and many local businesses will be available at the expo to help parents navigate this. “During the early months of a newborn’s life, women also seek ongoing support for breastfeeding and health checks for bub from midwives and other relevant service providers, who will be providing information at the expo.” Other products and services will include healthcare for pregnancy (including local fertility treatment), education and care for little ones, nursery items, maternity wear, baby and toddler clothing, photography, beauty and self care products, massage therapists, and exercise and yoga for during and after pregnancy. There will also be a play centre with activities for the kids.

With the Garden City holding the title for birthing capital of Australia and with so many services on offer, it only makes sense to have our own Toowoomba Baby and Toddler Expo. One of the event organisers from Little Miracles Maternity Wear Kerri Brennan says previously, regional and rural women have travelled to Brisbane expos. “It’s a time consuming and expensive day for them,” Kerri says. “We wanted to provide an expo locally, giving women easy access to local, first class information, services and products.” In Kerri’s experience, women mostly seek support in all stages of pregnancy — including fertility issues — birth and beyond. “A woman’s journey to motherhood begins at conception, or for many even before this if they have trouble with their fertility. “Pregnancy can be daunting and frightening for first-time mums. “Being informed and feeling supported will help make pregnancy a positive experience for women and help them to be ready for the challenges of dealing with a newborn.” Excellent healthcare, emotional support, feeling good in what you are wearing, and looking after oneself are all very important during pregnancy and the early years of caring for a child. dalby couple just knew When Kymberley Hine and Keiron Horn met, they both knew this was ‘it’. “You hear people say you just know, and it is true,” Kymberley says. The Dalby-originated couple is surprised they never met years earlier than they did, considering Dalby is a small town. “I guess we met when we were meant to,” Kymberley says. Keiron’s proposal was ideal. “Keiron had booked a flight lesson on the Sunshine Coast for the next day but couldn’t

wait and ended up asking me at home in the kitchen the night before,” The couple’s big day was a quiet affair, just how they wanted. They booked in at the courthouse for the date of their second-year anniversary, and had a really relaxing day in the lead-up. “I kept to the tradition of something new, something borrowed, something old and something blue — new dress, borrowed shoes, old earrings and little blue diamantés in my hair,” Kymberley says.

bout half the people who come to us have already secured their block of land. If you have, that’s great — you’re already on your way. What’s going to happen next is your home plans are going to be made to fit within that piece of dirt. No doubt there will be some compromises along the way. That’s normal. There usually are. The question is how comfortably you will be able to live with them.

Will you need to compromise? To get the best energy efficiency out of your home plans on your chosen block may require some modifications as obviously the land cannot be altered, but that doesn’t mean you can’t get a home you are not delighted with. It may just take some creative thinking and, after all, isn’t that part of the fun? For those who have not yet finally decided on the land because you are still looking and weighing up, this is an extremely good time to talk to us — because some of those compromises may not have to be made.

What block, and why The location and choice of your block will be affected by many personal factors: does it need to be close to schools, hospitals, shopping or work, or closer to nature? What plans do you have for gardens and landscaping, sheds, outdoor living or working from home? compost fun While adults may delight in winter over the chance to curl up with a book or a movie and not do a whole lot over their weekend, we all know the same will not fly for children. As the winter school holidays approach however, do not fret, Style has you covered. What you will need: ★ Scrap bucket with lid for inside the house ★ Large outdoor tub or bin with lid ★ Small pots for planting ★ Watering can ★ Good hand soap Method: Begin by having the children research what compost is. On a large piece of butcher’s paper have them draw items that are acceptable for composting and ones that are not. After each meal have the children take it in turns to clear the plates and decide what items can be put into the scrap bucket. This bucket can be kept in the fridge or under the sink cupboard (with a lid) provided it is emptied daily. In the large outdoor tub, begin contributing to your compost. You will need to layer in some dry leaves, soil or even shredded paper to get started. Once the compost has started taking shape, go shopping for plant or flower seedlings. These can be potted out into smaller pots with a mix of soil and your homemade compost.

film Loving It has been often said that home is where the heart is. In the quietly sobering and shocking true story told by Loving, two people followed their hearts and found themselves unable to return to their rightful home for almost a decade. Richard and Mildred Loving went and got married in 1958 in Virginia. How is that a crime, you ask? Richard is white. Mildred is black. Like 15 other American states at the time, Virginia enforced laws that strictly prohibited licensed unions between those of differing racial backgrounds. Richard (played by Joel Edgerton) thought that he had respectfully circumvented the law by taking Mildred (Ruth Negga) to the city of Washington and marrying her there. The authorities in Virginia at that time were hardly impressed by the Lovings’ dual shows of affection and initiative, and hauled Richard and Mildred before a judge. The couple were slapped with suspended jail sentences, and banished from the state of Virginia for 25 years. A work distinguished by its distinct focus and delicate intensity, Loving has little time for the usual tropes that accompany factual dramas with fires in their bellies. Writer-director Jeff Nichols has clearly done his research on what ultimately became a legal case of great significance to modern American race relations.

While every production I’ve seen at the Empire since my first one three years ago has been fantastic, Wicked rose high above. As when reading a well-written book, I was so thoroughly drawn in by what was happening on-stage that it felt as if I were a part of it — no longer just sitting in the audience. The theatre upped the ante with their effects and the stage set, including a digital screen behind to add depth to forests and the city of Oz as well as other scenes. With all the productions I’ve been to anywhere, there has always been one performer who stands miles above the rest. Positively, this was not the case with Wicked: every one of the main characters were strong actors and good singers, holding their own well on stage — from Glinda and Elphaba to Boq, The Wizard and Nessarose. Going into the show only knowing ‘Defying Gravity’, the other songs were simply delightful and well-performed.

south africa’s garden route BY LISA MACHIN

Motoring down South Africa’s famed Garden Route in our hire car (perfectly safe, don’t fret), I am reminded strongly of Noosa on the Sunshine Coast. The 300km Garden Route hugs the south-western coast of the country, following spectacular scenery and drawing thousands of visitors each year. It extends from Mossel Bay in the Western Cape right through to the Storms River in the Eastern Cape and is wonderfully accommodating for guests. Of particular note to wine lovers are the Western Cape areas of Franschhoek, a stunning valley settled by the French, and Stellenbosch, settled by the Dutch. The wine is excellent, and in Franschhoek is best enjoyed on a tram tour between the spectacular vineyards. Enjoying a glass of the country’s famous chenin blanc or pinotage atop a mountain vineyard is a memory to treasure. While this country is home to great eating and drinking experiences, at its true heart is the amazing South African wilderness. Dyer Island at Gansbaai is a well known seal haunt, and it’s here you have the chance to see the terrifying aerial acrobatics of great white sharks. Coloured dark on top, so seals won’t see their approach, these behemoths hunt by powering up from the deep to hit their target with significant force, breaching far out of the water.

Adventure, great wine and a foodies’ paradise

There are numerous boat tours operating from the bay, with the option to watch from the deck or go cage diving with the sharks. They are lured close to the boat with a rubber seal decoy, and the experience leaves you with a solid appreciation of the strength and agility of such a large creature. And of course the country’s capital, Capetown, is a must-see. The impressive visage of Table Mountain as its backdrop, this ocean-fronted city is a chic and modern mix of people, food and places.

Exploring the colourful suburb of Bo-Kaap, formerly known as the Malay quarter, there are great eateries to be found amidst the streets of brightly coloured houses. With the Cape Malay curries, samosas, roti bread, sambals and chilli bites it’s a haven for foodies and offers a little more authenticity than the commercially-glam waterfront. Capetown is a many-faceted city, so make sure you explore.

Explore the government’s paid parental leave scheme If you meet criteria, primary carers of newborn or adopted children can apply for governmental parental leave payments, which provide the national minimum wage for up to 18 weeks.

A Thai treasure tucked in Toowoomba’s Eat Street

I have for years declared Southtown Thai has the best coconut rice in town, so when I heard their second premises, Thai Royale, has opened in the CBD, I was quick to pay a visit. The charismatic and energetic Franky, who has now branched off with his own business after learning his craft from his parents at Thai Royale on South St, greets me at the door. “The chef wants you to try our whole chilli fish tonight,” he says, wearing his trademark huge smile. “I hope you’re hungry!” Authetically decorated with the requisite picture of the King of Thailand hanging on the wall, a carved wooden figurine in the entrance and the vibrant yellow and deep purples the restaurunt has characterised itself with, it is a lovely space in the heart of Margaret St. A glass of sauvignon blanc preceeds our meal, and we chat easily in the warm atmosphere. Franky recommends we try their famous pad Thai dish, with a

side of coconut rice (of course!) and we are not disappointed. Served with generous helpings of peanuts, chilli and sugar, the comforting flavour of this well tested favourite is every bit as good as expected. The combination of rice noodles, crunchy sprouts, beef, hard tofu, seasonal vegetables and fat, succulent prawns are perfectly balanced in this dish. Next, our whole cooked fish arrives — barramundi prepared with chilli, a delectable sauce with a hint of sweetness and garnished with the iconic Thai vegetable art. Pulling tender fish from the bone with a fork is one of the greatest delights of dining at Thai Royale, and makes for an interactive and unique dinner. And of course, the experience wouldn’t be complete without the deep fried ice-cream, coated in delightfully crunchy coconut batter and served with three flavours of topping. So next time an old friend rings up with a dinner invitation, you’ll know where to suggest. In our experience Thai Royale is consistently excellent.
