In a touching story, we talk with Nicole Thomas (p14 and 15), the only local, active volunteer for Heartfelt, an organisation that offers its photographic skills to families experiencing stillbirth, premature births or children with serious or terminal illnesses. Sadly, we say goodbye to a columnist this edition — Bindy Scott (p22) and her family are packing up and moving to Dalby. We will miss her wonderful writing and sunny disposition — thank you for your contributions in your time with us, Bindy. WHAT DO YOU THINK MAKES STELLAR SERVICE?

HOW LONG HAVE YOU BEEN IN THIS INDUSTRY?

I have been in the industry just over 10 years and a centre director for four of those. I trained for the first six years in a city centre but was always keen to work in this centre as I lived in Highfields. I applied to become the assistant director initially, however the director at the time decided to move on

after only three months so I stepped up. The centre has evolved into the wonderful centre it is today with its established gardens and passionate staff.

ARE YOU A DARLING DOWNS OR HIGHFIELDS LOCAL?

I have lived in Highfields for 10 years but my husband and I are originally from Hobart, Tasmania. We moved around Australia with his career and eventually ended up with three children in Highfields. We very much enjoy the Highfields lifestyle and have no plans to move on.

HOW OLD IS THE BUSINESS?

Highfields Early Learning Centre has been an established and well regarded childcare centre in Highfields since February 27, 2008. We cater to children from six months to six years in a warm and welcoming environment run by well-trained educators with many years’ experience in the childcare industry.

WHAT DO YOU PRIDE YOURSELF ON?

I pride myself on leading a team of empowered educators who are passionate about and committed to their work. I am proud that together we provide such a wonderful environment for children which is rich in intentional and play-based learning experiences, allowing children to acquire the skills and confidence they need to embrace a positive and rewarding lifelong love of learning.

THE FLORAL MUMPRENEUR BY CLARE STANDFAST

Meet owner and creative mind of Belle Bouquets, Lisel Vonhoff, the mumpreneur who is emulating women in business for the region “... THERE’S a quote by Luther Barbank that sums up for me why I love working with them (flowers), and it says, ‘flowers always make people better, happier and more helpful, they are sunshine, food and medicine to the soul’,” says Lisel Vonhoff, owner and creative mind behind Belle Bouquets. Lisel, her husband Mark and their four children, ranging from two to six years old, live on a farm in Pechey, just past Hampton. The farm was originally Mark’s grandparents’ property. “It is here that I grow my flowers and work from my studio — a converted vat 6

room from the dairy that ran on the farm for many years,” Lisel adds. “My eldest son will be the first person to tell me a new flower has opened, which is always a moment of excitement, and my girls and I will often work side by side — me on my floral arrangements and them on their flower flat-lay using all my scraps. “They are also quite handy at scrubbing out the buckets — something my youngest son loves to do especially — and helping me harvest and pack the flowers.” While grappling with (and educating) some of her young children throughout the day, Lisel also needs to find time to run her business. Essentially, Lisel is what you would call a mumpreneur — a mother and entrepreneur. “Belle Bouquets began just after I had my second child in 2012 and I was looking for an opportunity to challenge

myself creatively,” Lisel recalls. “I began my journey making paper flowers, vintage style roses, using paper I printed and dyed myself and these proved quite popular, being picked up by a local shop as one of their new products. “I saw a gap in the market for paper flowers and alternate wedding bouquets so I created Belle Bouquets, attending local wedding expos and slowly growing as word-of-mouth spread. “A few years later, I decided to add fresh flowers to my services as well, as I enjoyed mixing these with my paper flowers and the ability to offer both services to my clients was unique.” Prior to starting the business, Lisel was a young housewife with two small children and a background in administration. Before she was married, she did bookwork for a few local businesses. With no official qualifications in

floristry, Lisel is completely self-taught, which has come with lots of enjoyment. “(It’s) hard work, but as with anything that requires effort, the harder you work for something the greater you feel when you achieve your dreams,” Lisel says. “Small steps still get you to the same destination. “I always set myself some small goals, and once these are achieved, I set another goal that is a step higher. “Small steps doesn’t necessarily mean slow progress, it allows you to focus on more achievements and encourages you to do the hard work by focusing on one step at a time and still achieve your bigger dreams.” A day in the life of this busy mum and entrepreneur is no easy feat. “I rise early and after a daily reading, do some exercise,” Lisel tells. “If there are any orders for the day, I pick and bunch flowers before the kids are up for breakfast, then there are farm chores to do before beginning school lessons, which continue for most of the morning. “After school is complete, I usually answer business inquiries and do computer work — my husband and I also have a mechanical business which I do the admin work for — followed by flower play in the afternoon (and) media posts before getting dinner ready at the end of the day. “When the flowers are in season I would be picking in the early morning or late afternoon and monitoring pests and plant health — a constant battle, especially with the pests.” Despite the load of being a working mum, Lisel’s family is a constant support network for her. “They are my biggest encouragers, especially my children, who are often with me when I am on a forage for new material from the farm or in our local

area,” she adds. Finding inspiration from books, the ever-popular Pinterest and other florists on Instagram, Lisel loves putting her floral creativity to work across the board. “I have always said my favourite thing to do is weddings, but lately I have felt more interest and desire to do photoshoots, as this allows for more creativity and I get the opportunity to learn and expand new skills — a challenge I always enjoy and really what got me into flowers in the first place,” Lisel says. In the future, Lisel is looking towards hopefully doing more fashion-inspired pieces. “I would love to do a large paper flower display, kind of like a flower woodland that you dream of playing in as kids.” Lisel finds there’s something special about this region.

“I love the community that our area promotes, neighbours that will watch out for you and in my case, allow me to raid their gardens for inspiration,” she quips. “I also think there is great beauty here in the local landscape and fauna, which is something I treasure and hope to inspire others to see that beauty as well.” So, what does mumpreneur Lisel Vonhoff think, at the end of the day? “All the late nights and early mornings will pay off,” Lisel recalls, looking back. “Remember to put your family first because as a mumpreneur, the word mum comes first, and to me, mum means home, which includes my husband and our marriage, and then entrepreneur. “I believe this is an important balance to maintain to achieve true and lasting success.” December/January 2017

YOU, SUMMER AND SKINCARE WHILE it’s enticing to get outdoors and enjoy the sun — in fact, a must-do for the beautiful Aussie summer — we need to care for our skin in the harsh rays. Here are some ways you can keep your skin happy and healthy during the warmer months.

This little gem is known to rehydrate and calm some pretty nasty burns and undo past skin damage. You can grow it in your garden, or it’s easy to grab from the supermarket or chemist.

STAY MOISTURISED

Exfoliation is a huge part of caring for and refreshing your skin. To keep your skin glowing and healthy, grab a loofah, exfoliator or exfoliating gloves and exfoliating cleanser. Apply the cleanser to the exfoliator, and begin scrubbing your body in a circular motion, starting from your feet and moving up. When you reach your face, use a product and exfoliator specifically for your face, as it is more sensitive skin. Rinse your body with lukewarm water, and afterwards, with cold water. Make sure you moisturise after you have exfoliated to hydrate the skin.

Establish a moisturising regime to protect your skin from drying agents such as sunburn, salt and chlorine. Keep in mind that you need to be moisturising all over your body, not just your face — keep a bottle of body moisturiser in an easily accessible place and lather up your extremities often. There is also a wide range of shower washes that are moisturising as well, so stay hydrated while you shower.

MEET HEARTFELT VOLUNTEER NICOLE THOMAS, WHO CAPTURES PHOTOGRAPHIC MEMORIES FOR THOSE WHO LOSE THEIR LOVED ONES TOO EARLY

time like that.” Nicole grew up on the beaches of the Gold Coast, focusing her time photographing birth and newborns, however, she has been in Highfields for three years. When she and her family made the move to the region, her two youngest children started school, her youngest son was diagnosed with medical conditions and her support network reduced dramatically, making it hard to be on call 24 hours a day. However, when she was approached to consider being a Heartfelt member, Nicole knew she had the ability to be there for families in their time of need. Being the only local active Heartfelt volunteer for the region, Nicole services the Toowoomba Hospital and St Vincent’s Private Hospital, but will travel as far as needed to make sure a session is covered. “My role is to capture everything I would want as a parent — to be there with compassion and care towards the family while they are facing one of the hardest situations in their life,” Nicole adds. “We spend around an hour photographing their child and family, while forming a very special bond with

the family. “Once we are complete, we say our goodbyes and I leave to edit the images I send to Heartfelt. “Heartfelt then sends a beautiful package with digital images on a USB and prints included also. “There is no cost whatsoever to the family, we are volunteers, and Heartfelt covers the costs of the package.” While some people find the idea of photographing terminally ill or stillborn children uncomfortable, Nicole encourages people to know that it is okay to talk about it. “These parents want their children to be known and loved, and although this is such a tender subject, this should not be something you face alone,” she explains. “These children, whether they have never taken their first breath or have taken their last, are still our most precious blessings. “If you know someone going through a

Memories tucked away — final memories that loved ones will treasure for the rest of their days. “Each baby is so unique — I adore their little fingers, their tiny toes, and I want the parents to remember where each freckle sits, whose button nose they have,” says Highfields local and Heartfelt volunteer Nicole Thomas. Heartfelt is a volunteer organisation of professional photographers from all over Australia and New Zealand who donate their services and the photographic memories to families who have experienced stillbirths, premature births or have children with serious and terminal illnesses. With more than three years as a Heartfelt volunteer under her belt, Nicole feels as if she has the opportunity to help families facing the unimaginable. “When I arrive to a session I am there for much more than just to take photos of their child,” Nicole says. “I sit with them, talk with siblings, grandparents, friends and family. “I feel like I am offering them a gift like no other — images of their family together before they heartbreakingly say goodbye, and to me, that is such an important thing to offer families at a

loss, care for them — ask them to talk to you, ask them about their child. “If you have no words, introduce them to Heartfelt. “Inform yourselves of what we offer, and the importance of having these images — you never know when we will be needed. “We are here because this is what we want to give our families, and if Heartfelt could be the only word you have to offer your friend or family facing these hard times, you may have just left them with the most beautiful gift.” With Nicole being such a big advocate for Heartfelt, she noted the organisation was looking for additional support. “Behind Heartfelt is an amazing community of people who support what we do,” Nicole says. “Last Cuddles Bear Project offers us handmade keepsakes for our families to take home with them. “Their creations really are a beautiful

Meet treasurer of Highfields Pioneer Village, Jody Dodds, a lover of all things local and new mum HOW LONG HAVE YOU BEEN IN HIGHFIELDS FOR?

I was born into Highfields in the late 70s — my parents moved away and then returned in the late 80s.

WHAT BROUGHT YOU TO THE HIGHFIELDS REGION? My parents moved here in the 60s — they were very different times and Highfields was made up of mainly hobby farms and piggeries then.

HOW HAVE YOU SEEN THE REGION CHANGE SINCE YOU HAVE BEEN LIVING AND WORKING HERE?

Over time people have come to appreciate Highfields for its tall timbers and (now) lots of conveniences such as schools and shops, but in the early days there were many small farms in the area. Many people from

provincial backgrounds would downsize their farms to a hobby farm in view of retiring. When I was little, I would catch the bus from school and ride my bike the rest of the way home. There were cows in the paddock where the Village Shopping Centre is now.

DESCRIBE A FAVOURITE MEMORY FROM YOUR TIME IN HIGHFIELDS?

WHERE IS YOUR FAVOURITE HIGHFIELDS REGION HOTSPOT?

The Pioneer Village of course, it is like an alternate universe — being taken back in time.

My wedding day with my husband Shaun at the Pioneer Village would be my favourite. Riding to the Plaza and town pool on my bike with my friends as a kid would be a close second.

Highfields Pioneer Village, the many coffee shops in the area and the Cuckoo Clock Centre.

I volunteer at the Highfields Pioneer Village whenever I can — the billy tea there is amazing and the other volunteers are a great bunch of people.

PASTA WITH ROAST PUMPKIN AND ROCKET PESTO METHOD

Step 1 Preheat oven to 200 degrees. Line an oven tray with baking paper. Place the pumpkin on the tray and drizzle with oil. Season to taste with salt and pepper. Bake in oven for 20 minutes or until golden and tender. Step 2 Meanwhile, to make the rocket pesto, place the rocket, basil, garlic, pine nuts and parmesan in the bowl of a food processor and process until finely chopped. With the motor running, add

the oil in a thin, steady stream and process until well combined. Season to taste. Step 3 Cook the pasta in a large saucepan of boiling salted water following packet directions or until al dente. Drain well and transfer to a large bowl. Step 4 Add half the pesto to the pasta with the pumpkin, feta and rocket leaves. Gently toss until just combined. Divide among bowls. Drizzle with remaining pesto.

EASY PINA COLADA TRIFLE

Step 1: Combine Malibu and pineapple juice in a bowl. Soak biscuits briefly in juice mixture. Place in the base of a 5-litre trifle bowl. Make jelly according to packet instructions. Cool for 30 minutes. Pour jelly over biscuits. Refrigerate 3 hours. Step 2: Meanwhile, preheat oven to 130C/110C fan-forced. Line a large tray with baking paper. Cut top from pineapple and reserve. Peel pineapple. Cut half of pineapple into 2mm-thick slices. Place on prepared tray. Bake for 30 minutes. Turn slices over. Bake for a further 40 minutes or until dry. Cool on a wire rack. Chop remaining pineapple. Reserve. Step 3: Combine custard powder, caster sugar and coconut milk in a medium saucepan. Cook, stirring over medium heat for 10 minutes or until mixture bubbles and thickens. Pour into a bowl. Cover surface with plastic wrap. Cool for 30 minutes. Step 4: Melt butter in a large frying pan over high heat. Add half of reserved pineapple and half of extra pineapple. Cook for 5 minutes, stirring occasionally, until browned. Add half of brown sugar. Cook for 2 to 3 minutes or until caramelised. Transfer to a bowl.

INGREDIENTS ⁄2 cup Malibu rum (can be omitted) 1 ⁄2 cup pineapple juice 12 savoiardi biscuits, cut into thirds diagonally 2 x 85g packets pineapple jelly crystals 1 pineapple, with leaves attached 1 ⁄2 cup custard powder 3 x 400ml cans coconut milk 1 ⁄2 cup caster sugar 80g butter, chopped Extra 1 small pineapple, peeled, chopped 1 ⁄2 cup brown sugar 1 litre thickened cream 1 ⁄2 cup icing sugar mixture Fresh cherries, to serve 1

Repeat with remaining butter, reserved pineapple, extra pineapple and brown sugar. Cool 15 minutes. Step 5: Spoon custard mixture over jelly. Smooth top. Top with caramelised pineapple, leaving caramel behind in bowl. Whip cream and icing sugar to soft peaks. Top pineapple with cream. Refrigerate overnight. Cover caramel. Step 6: To serve, top trifle with pineapple top, pineapple flowers and cherries. Drizzle with reserved caramel.

IS IT really Christmas and New Year time? I am positive it was just last month I was on the cover of the February/March 2017 edition of this magazine and now we are farewelling 2017 and welcoming in 2018. The typical question for this time of year is, do you make resolutions? I kind-of do, I tend not to set anything unrealistic, such as, to continue working on building a life we enjoy, be a good person and be genuinely happy. More “life goals” rather than resolutions. I look at every year as a new book with 365 blank pages — we get to go about writing our own story that year and I truly believe our mindsets can control how our story plays out.

That is why I am always so focused on maintaining a positive outlook on life. What we think, we attract. With the end of the year and the start of a new one happening, this is a very suitable time for me to farewell my column in Highfields Style, as my little family and I make a move to a new town. Highfields and the Toowoomba region are very special places that we hold very fond memories of — this region will always stay dear to us and we will be back to visit regularly. But for now, we are off, forging our

own path and working on building a new life. Ending a year and starting off somewhere new is almost poetic, the closing of one chapter and an exciting new start. 2018 is a fresh start for our family, full of new and wonderful things to look forward too. New level of chilld care coming to Highfields

Lauren Hall says she loves the spirit and friendliness of the Highfields community, and is enjoying every minute of her time in the area with her young son Connor and husband Damian. The family currently split their time between Highfields and the Gold Coast and intend to move to the area in the next couple of years before Connor goes to primary school, once the family have sold other business interests on the Gold Coast and Brisbane, so getting involved in the community early was an easy decision for them. Highfields Child Care Centre is a wellestablished local centre with highly qualified, caring early learning educators. The centre was originally established in 2005 at 52 Diosma Dr, which is convenient directly opposite the Highfields State Primary School car park. “I was looking for a childcare centre with a great team, and this is a large part of what made the centre and the area so appealing when we first visited earlier this year - the staff have a true care for all of the children and their families,” Lauren says. “I am happy that each of the staff are coming on this exciting journey with us.” The centre needed reinvigoration, which they have undertaken beginning with the children’s environments becoming more inviting to explore, with improvements and additions being made every week.

The centre has added many new learning and play resources to stimulate the minds of the children in their care. “The Highfields Child Care Centre is also improving on all the external play areas, providing much more shade, a new play fort and new outdoor water play and natural elements for children to explore and learn within,” Lauren adds. All of the improvements have been in collaboration with the team, with best outcomes for the children in mind. The educational programming is a key focus for Highfields Child Care Centre, adding more Early Years Learning Framework tie-ins while being very creative in how they provide new experiences for all age groups, both indoor and outdoor. The business now also has a more innovative approach to early learning, which will feature literacy-based curriculum, self-initiated, age appropriate play-time activities, multi-cultural learning initiatives and much more. KEEPING KIDS BUSY THESE HOLIDAYS ASK most parents of school-aged children and they will tell you the Christmas school holidays can be both the best and the worst of the year. The kids get a substantial break to recharge their batteries after a long year of studies. But after so much mental stimulation all year, the cries of “I’m bored” can wear thin very quickly for parents. There are a number of activities to stimulate their minds, and don’t need to break the bank.

nature walks and sporting fields to keep busy young bodies moving. Williams Park, Highfields, is a beautiful wildlife corridor; it is a lifeline for many native wildlife species in the area and is the last connecting section of native bushland to the north. Butterflies, dragonflies and birdlife are prolific, and the scenery of beautiful tree ferns and gum trees is very picturesque. The northern end of this park contains a dry creek bed with informal tracks; the southern end has large mature trees, playground in shade, slide, formal tracks, toilets, barbecues,

and an old-style slide. The best way to access Williams Park Walk is through either Cecil Cres or Mavis Crt. Starting behind the toilet block at Williams Park, the steps will take you down to a bridge over Klein Creek. This will lead you to a beautiful track that follows the creek north towards Reis Rd. From there you can turn back to Williams Park and extend your walk following a grassy area towards Clarke Rd. Please leave your pets at home.

Many children love to get in the kitchen and help - and it is a valuable life skill to learn. Sure it will be slower and messier than doing it all yourself, but worth it to see their sense of satisfaction. Pick easy-to-follow simple recipes to start with, and depending on the age of the children, let them do all the hard work with supervision; younger children will need help with some tasks - like measuring, cutting, using appliances but with practice their skills will improve.

Advances in technology have made it easier for society in the sense that you can do everything from order a meal to take part in a university class through an app or some sort of screen.

However, not everything can be done through an app, and luckily, not all life skills are that hard to learn. Here are some important life skills to teach your children.

THE weather has warmed up with summer upon us for another year. Thoughts drift to days lounging by the pool and nights whipping up a fresh salad or enjoying a crisp glass of wine at home…except you haven’t gotten around to installing the pool you’ve always dreamed about, and your current kitchen is dark and gloomy. Renovations can be costly, yet they’re worth embarking on if they’ll add value to the home and help you enjoy your living space more, says Loan Market. Pools are up there when it comes to expensive investments. Australians love spending time outdoors, and 12 per cent of the population already have their very own pool. As a general guide for in-ground pools, fibreglass models will set them back anywhere between $6500 and $75,000, and concrete pools cost about $35,000 to $100,000 ($50,000 is the average). While refinancing can seem like a complex process, it can be easier than you may think and a mortgage broker or lender can step you through it. Whichever way the funds are secured, being able to add to your home and enjoyment is undoubtedly worth it.

DO THEY dive under the bed whenever rain starts to fall? This may seem cute and endearing behaviour, but it’s a sign that your dog is terrified of storms. Some of the main symptoms of storm phobia are hiding, trembling, whining, drooling, and pacing. In more severe cases, panicking dogs have been known to chew furniture, tear curtains and break windows.

WHAT TO DO

Your best bet for helping your dog overcome their thunderstorm fears is to talk to the team at Eclipse Park Veterinary Surgery. They can help you develop a program to gradually retrain your anxious dog by gently helping them adjust to storms. This involves exposing a storm-phobic dog to some gentle reminders of a thunderstorm, such as a very soft CD of thunder or a flashing light, and rewarding the dog with treats, attention, and other positive reinforcement if there’s no evidence of anxiety. DESIGNING IN A SMALL SPACE BY OWNER OF TARLIE B DESIGNS, NATALIE BROWNLIE

THERE has been a recent resurgence of interest in smaller scale housing. This can have many positives such as leaving a smaller environmental footprint, working within your budget and less maintenance and cleaning. Of course the flipside can include negatives such as cramped living areas. So how do you create the illusion of space in a smaller room? A good place to start is colour. Using light neutral tones on your walls, floor and ceiling will help to expand the space and also helps to illuminate your room by reflecting light.

A darker wall colour can be successfully used if the furnishings are a light tone and there is plenty of available natural and introduced light. When shopping for furniture, consider the scale, design and materials. Choosing furniture with a lightweight and low-line appearance will create the illusion of more space. Select designs which allow visibility beneath rather than solid designs. Materials like glass, acrylic and lucite work particularly well in smaller rooms as they do not obstruct views and make the area appear more open.

Consider using furniture pieces that serve a dual purpose – this will eliminate the need for excess pieces. The installation of ceiling height, slimline cabinetry to house books and decorator items in one area rather than have them scattered around the room will serve the dual purpose of creating a focal point of the room and keep surrounding areas free from clutter. Consider having pieces like your television wall-mounted to eliminate the need for a media console. The illusion of space can be enhanced with the use of sheer curtains as window treatments. Installing these from just below your cornice through to the floor will draw the eye upwards and enhance the vertical dimension of the room. A heavier block out drape can be installed behind these for privacy. Decorate your room in a way that maximises light and space and is considerate of colour, scale and weight. Large mirrors are fabulous in smaller rooms as they can dramatically increase the illusion of space with reflection. Place these where possible opposite windows to reflect your view and place a light source in front to reflect light and create ambience.

METHOD 1. Fill your jar halfway full of hot chocolate mix, and the rest of the jar with mini marshmallows. 2. Fill out your gift tag with a greeting. 3. Tie some red raffia around the top of the mini Baileys bottle, leaving plenty of length to tie around the neck of the jar. Wrap this raffia around the neck of your mason jar, keeping the Baileys bottle on the opposite side of the handle. 4.
