I

t’s so hard to believe that we’re in April! Naturally, the Darling Downs is baring its cooler weather and it’s the perfect excuse to start rugging up in beautiful winter fashion. This edition of Highfields’ Own has made me feel very involved and close to the community, which is what Highfields is known for and a reason it’s so special — it engages everyone. I’ve met some absolutely wonderful ladies who have rebranded the Markets at the Manor to the Highfields Village Markets, creating a beautiful, family-oriented space for the community to enjoy every second Saturday of the month. This month our cover is graced by local kinesiologist Amy Manz of Blissful Essence — what a woman! She has been an absolute joy to work with. Amy also played a huge part in our main feature this month, The Age of Anxiety, where we talk about the development of anxiety in today’s society and the involvement of holistic health. Credit must go to Arbonne make-up maestro Joanna Maloney for making Amy extra-beautiful on cover shoot day, and the Highfields Pioneer Village for giving us such a funky, green and gorgeous location. OUR PEOPLE Meet Susie Thompson, a local mum and mobile banking manager with ME Bank in Highfields How long have you been in Highfields for? I have been in Highfields for nearly four years. I am a mobile banking manager with ME Bank and work from my office at home. What brought you to the Highfields region? There was fantastic housing availability when we moved to Highfields, and my family and I were looking for a different, relaxed lifestyle — Highfields isn’t as busy as Toowoomba, and the ease of getting around in a small community is wonderful. How have you seen the region change since you have been living and working there? The area has had huge growth, particularly in its infrastructure facilities including schools, eating facilities and the new sporting complex. What do you love the most about the Highfields region? I can do all my day to day activities and shopping and I don’t have to go into Toowoomba. Living on acreage allows us to enjoy outdoor activities like horse riding and have other farm animals but we’re still close to everything. Where is your favourite Highfields region hotspot? Highfields offers us so many different

cafés and coffee shops as well as beautiful parks and nature walks — it’s hard to pick just one! Where do you like to take friends or family members when they come to the area? Cafés and coffee shops along the New England Highway. What would you like to see for the Highfields region in the future? It’d be fantastic to see Highfields host more activities for young people to attend such as concerts and sporting events. What do you like to do around the Highfields region in your free time? Go to local pilates classes, take advantage of the beautiful parks like Peacehaven, walk through the quiet streets for exercise and go out for breakfast or coffee. Describe a favourite memory from your time in Highfields. Giving the kids the opportunity to live in a lovely area that is safe but offers all the facitilites of a small community and having more options for senior school education. How do you participate in the community? I always enjoy going to watch the kids play sport such as futsal in the community centre. This is a great community and a lovely place to live.

What do you think makes stellar service? Providing and continuing to provide an excellent and outstanding service for guests and creating an experience that will be enjoyed and remembered. How long have you been in this industry? Homewood Cottages opened in October 2012. Are you a Darling Downs or Highfields local? We have been residents of Highfields since 1993 after moving here from Mapleton in the Sunshine Coast hinterland. We saw a lot of similarity in both areas and with the growth of Highfields and the establishment of a number of tourist-based businesses was the catalyst for our plan to establish Homewood Cottages. How old is the business? Four-years-old. We aimed to provide something different in the accommodation sector for Highfields. This was paramount in our plans which came to fruition when we purchased land which bordered Davidson’s Arboretum. The Arboretum (Latin for tree garden) is an exquisite 1ha of many varieties of beautiful autumn trees from around the world. What do you pride yourself on? Homewood Cottages prides itself on its location and unique style with two themed cottages nestled amongst beautiful deciduous trees and gardens, centrally located on Cawdor Rd. We were honoured that Homewood Cottages was chosen as the accommodation division winner in the Heritage Bank Toowoomba Chamber of Commerce Business Awards in 2014. as a negative alternative or a push against western medicine. “I guess people are always scared of something that isn’t the ‘norm’ — it wasn’t that long ago that chiropractors and naturopaths were considered witchdoctors but today they are practitioners that we trust and go to for help,” Amy says. “Kinesiology is still new so I understand people feeling like that, and they are entitled to their opinion — everything has to be the new thing at some point and as people allow themselves to try the new and begin the understand how it works, society will begin to trust the process just as we have with all the modalities before.” Amy has a few easy tips to handle any anxiety you may feel. Breathing “I know that sounds simple, but when we’re stuck in anxiety we don’t breath effectively,” Amy says. “If we take shallow breaths we can’t stop our racing heart and the body can’t deliver nutrients efficiently through our circulation, the diaphragm won’t push down and the organs won’t be massaged to help them work effectively. “Looking at this holistically, if the physical side remains in fight or flight mode, we also then can’t shift through emotions.

RESOURCES TO ASSIST If you’re struggling with anxiety, there are plenty of resources to access for help. ReachOut WorryTime is a useful app that helps you control everyday stress and anxiety. Whenever a worrying thought crosses your mind, pop it into the app and set a reminder for later. You can then forget it until the ‘worry time’ you set. Anxietynetwork.com offers a huge variety of statistics, articles and support opportunities. Headspace Australia is a national youth mental health foundation that offers headspace centres, online counselling services and postvention suicide support programs.

“We wanted to make it a Highfields community market — we wanted it to be somewhere for all the local people to come and enjoy the space,” Susan says. Stalls include anythings from candles, maintenance, wines, kids clothing, kinesiology, cleaning products, plants, skincare, jewellery, food, accessories, crafts, makeup and more. “Most of our stallholders are actually local Highfields people,” Susan says. There will be a free jumping castle and free face painting available for children, so it’s easy to come and enjoy the markets as a family. With some relaxing spaces set up throughout the markets surrounded by cushions and throw rugs, Susan and Amy are creating a vibe where people can relax and enjoy themselves. With dance displays, karate demonstrations and live music on the lineup, these unique and fun markets are like no other. “We’re trying to make it bigger, better and more about the community,” Susan says. he Highfields Pioneer Village volunteers are celebrating their three-day Easter Vintage Festival on Easter Saturday, Sunday and Monday — April 15, 16 and 17 with the theme of the festival being Keeping Time. MOUSSE CAKE Ingredients

175g plain chocolate biscuits 85g melted butter 400g chopped dark chocolate 600ml thickened cream 1/4 cup coffee-flavoured liqueur Cocoa powder, to dust

Method

1. Grease your pan of choice and line base and sides with baking paper. Process biscuits in food processor until they resemble fine breadcrumbs. Add butter and process until combined. Press mixture over base of pan and refrigerate for 30 minutes. 2. Place chocolate in large heatproof bowl over saucepan of simmering water. Stir until melted and smooth, then remove from heat. Cool for 10 minutes. 3. Beat cream and liquer until soft peaks form. Fold cream mixture into chocolate, then pour over base. Cover and refrigerate until set. —taste.com.au

EASTER EGG COOKIES Ingredients

250g butter 2/3 cup brown sugar 1/2 cup condensed milk 1 tsp vanilla paste 2 cups plain flour 100g chopped chocolate Mini Easter eggs

Method

1. Preheat oven to 160 degrees. Line baking trays. 2. Beat butter until soft, then add sugar and beat until light and creamy. Add condensed milk. Beat until light and fluffy, then beat in vanilla. 3. Fold in combined flours and chocolate and mix well. 4. Roll tablespoonfuls of mixture into balls and place on trays, leaving room for spreading. Flatten slightly, then bake for 12 minutes or until pale golden. Quickly press three mini eggs into each biscuit gently while still warm, then cool. —taste.com.au

WASHI PAPER EGGS

S

tep aside from the usual painted or dyed eggs this year with these easy-to-make washi paper eggs. You may wish to blow your own eggs as I have done, or use pre-purchased wood or foam eggs found at craft stores during Easter. Use PVA or another white craft glue and thin down in a small bowl with an equal amount of water. Tear the Japanese washi paper into pieces – make sure none of the pieces are any larger than a 5 cent coin or they won’t stick to the egg properly. Briefly place a piece of torn paper into the glue solution then smooth on to the egg. Repeat until the egg is completely covered, then leave to dry. Once completely dry, paint the egg with clear vanish.

using a pin, making one hole slightly larger than the other. 2. Holding the egg over a bowl, blow into the smaller hole firmly yet gently until all yolk and white is removed. 3. Wash the egg gently, then leave to dry overnight.

his May the beautiful Hampton area will fill with delicious local produce, cooking demonstrations, live music, celebrity chefs and other delights from the rich region we call home. The annual Hampton Festival, held Sunday, May 21, is a truly memorable experience to try in your own backyard. With events in the lead up as well as a full day’s program on the Sunday, there is something to engage everyone. Visit the Hampton Art Exhibition, take a seat in one of the demonstration tents and watch some of the best chefs in the business share their secrets, or sit and listen to live music as you sample the best produce from the Darling Downs and region. Cooking demonstrations are scheduled throughout the day at the festival, with this year’s headline announced as Paul West of River Cottage Australia fame. In the Australian show, adapted from the British flagship program of the same name, former chef Paul and his family attempt to live in a self sufficient manner on a small hobby farm, showcasing local produce and farming techniques. Catch this sustainable farming and organic food guru’s demonstrations on Sunday, May 21. The Hampton Art Exhibition will also be one not to miss, running across both Saturday and Sunday. Saturday sees the opening and preview, running from 2.30pm to 5pm, while on Sunday the exhibition will be open for the day from 9.30am to 4pm. GIVE ME A HOME AMONG THE GUMTREES 2017 Face of Weetwood Robyn Carter loves calling Highfields home

H

ighfields local Robyn Carter does not love the limelight, in fact when she was announced as the 2017 Face of Weetwood she was admittedly a little nervous about the media appearances. She is more at home when surrounded by teenagers, having clocked up 11 years as a teacher at Downlands College. “I love the kids, teenagers are hard work but they’re beautiful natured kids,” Robyn says. “Especially the Downlands kids — a lot are country kids — good, down-to-earth kids who love having fun and love their sport. “They are well-rounded.” Robyn is accomplished in her own right, previously working as

an accountant before becoming a teacher. She now teaches food technology and home economics, a different vein entirely from accounting. “I’ve always had an interest in fashion and have made two headpieces lately,” she says. It’s her contribution to the community however that positioned her as an ideal candidate for the Face of Weetwood. Robyn coaches basketball and touch teams after school and also holds the position of swimming coordinator at Downlands College. “I like to teach a lot about nutrition, healthy eating and basic life skills,” Robyn says. “I have quite an interest in it and have had for a while.” She is thoroughly looking forward to Weetwood race day, and the excuse to dress up. “My style is very black, it’s definitely my signature colour — black and white.” “When I dress up for races I really like the classic style. “I really let the cut of a fabric be the feature, I like a little bit of edginess in my look; brands such as Cue, Seed and Country

Road.” Robyn is a big fan of the sophisticated event the Weetwood has grown into, particularly how it has evolved over the past three years. “I’m looking forward to being involved in all aspects, particularly in this role. “In past years it has really stepped up a lot.” This year Robyn will judge Fashions On The Field, along with Karen Wade who won the contest last year. “The Toowoomba girls are really great at doing all the fashion, and a lot of the girls make their own which is really cool,” Robyn says.

Robyn, her husband Hamish (funny man from Hit FM radio) and their two boys Sam (soon turning six) and Adam (three-and-a-half), have called Highfields home for six years. The move was a serendipitous one, as Hamish and Robyn had discussed moving from their home in Rangeville to a place they could raise a family with a bigger backyard and more room for children to play. The very day they made the move out to the leafy, spacious suburb of Highfields, Robyn found out she was pregnant with Sam. “As soon as we found out we started trying to renovate the house,” Robyn laughs. The Carter family live on just under an acre in the older part of Highfields, which they love for the bigger blocks and greenery. She says they have been delighted with the friendliness of locals. “Even the teenagers say hello when you’re out running!” “You can’t go up to the shops without running into someone and we always go to the cul-de-sac party in our neighbourhood. “The neighbours… everyone is so friendly and we love that —

we do a lot of running and walking of our dogs.” The thing the Carters most prize about Highfields is the community culture. This was highlighted when six months ago three-year-old Adam found a purple Sharpie marker and set about drawing up both sides of the freshly painted hallway, on all the newly mounted doors, and even behind his bedroom door, just for good measure. Hamish uploaded a video to the Hit FM Facebook page of a very proud Adam showing his dad his handiwork. That week when they were out and about around Highfields a lady at a local shop remarked, “Oh, here’s the little artist.” Both Hamish and Robyn lead busy lives, with Robyn coaching sport and Hamish having run a taekwondo club in Toowoomba for the last 15 years. “Hamish is a third degree black belt so he and the boys are often out in the backyard doing kicks and things like that all the time,” Robyn says. With their different schedules and heavy workloads they love the sanctuary of their home amongst the gumtrees. Some of their favourite local locations include Kerb Café and Gelato, the Chocolate Cottage, Danish Flower Art and Peacehaven Park. “We have lots of picnics with friends there,” Robyn says. “Most of the time we are hanging out with the neighbours or taking the dogs to the off-leash parks.” For now, Robyn is looking forward to her role as Weetwood ambassador. “I’m just excited to meet new people, I think people tend to think that Hamish and I lead an extravagant lifestyle or have celebrity friends,” she laughs. “But we don’t; we are very basic people and are so busy with sport and work that we don’t get out enough. “So this is a really good opportunity to meet some new people around Toowoomba.” Make sure to say hello to Robyn when you see her at Weetwood this year.

TONY’S NOTES Hello and welcome again to the latest edition of Highfields’ Own magazine. The year is flying along and as I write this it’s hard to believe Easter is just around the corner. In regards to the local real estate market I am sure that I sometimes sound like a broken record, but the fact is with the half-acre to acre properties in Highfields, there is simply very little on the market. Buyers are crying out for these properties, however they are being held very tightly and as a result the few that do reach the market are selling very quickly and for good prices. I believe that one of the main reasons for this is that there is hardly any larger blocks of land being released by developers. These larger blocks are what Highfields was originally built on and the lifestyle that they created. Even the smaller blocks were a quarter of an acre which is twice the size of your modern Middle Ridge block. It would be nice to see a developer come along and develop some of the larger blocks — again, they would sell extremely well. There are a lot of buyers who still want room for a shed, pool and room for a veggie patch and the kids to play. While buying a new home is an exciting experience, it can also prove very stressful, especially if you are competing for your dream home against a lot of other potential buyers. Thankfully, there are ways for you to get yourself ahead of the pack and lift your chances of securing that dream property — and it all starts with loan pre-approval. Loan pre-approval provides you with a conditional approval of a loan amount. Generally speaking, it’s based on an assessment of your individual circumstances, needs and ability to repay the loan. A loan pre-approval will provide you with some clarity around the amount you can borrow, and therefore, what you may be able to spend on a property. As a result, it will stop you from looking at properties that are well outside of your price range. Further, loan pre-approval will put you in a stronger position to negotiate with a vendor or bid at auction. It’s important to keep in mind that pre-approvals are usually a limited-time offer — usually for a period of three to six months,

depending on the lender. In order to help yourself prepare for pre-approval, there are a few things you should do. Organise your deposit: As a home buyer, you generally need a deposit of at least five per cent of the purchase price, plus upfront costs. You will also need to show evidence of a genuine savings plan, such as bank statements that illustrate a savings strategy for at least three and up to six consecutive months. Pleasingly, some lenders now consider rent payments as evidence of genuine savings. Check your credit history: Grey areas in your credit history, such as bill defaults and/or prior loan/credit applications can affect your loan pre-approval application. It’s important to resolve any credit impairments with the relevant credit provider before you apply for finance. Your local broker can help you identify what credit defaults (if any) that you may have and work with you to rectify the situation. Prepare your paperwork: Gather evidence of your employment, income, assets, liabilities and expenses. You’ll also need to provide your driver’s license or other ID, recent pay slips, tax returns and bank statements.
