New systems will build on our commitment to create a culture of inclusion Pulaski County Special School District (PCSSD) is integrating two new programs into district-wide curriculum. Positive Behavioral Interventions and Supports (PBIS) will teach kids about behavior, just as teachers teach about other subjects. Response to Intervention (RTI) is a multi-level preventive system designed to improve learning or behavioral outcomes for ALL students.

“PBIS and Advancement Via Individual Determination (AVID) systems are an extension of our RTI approach that can improve upon and enhance our efforts in reaching our students where they are,” said PCSSD Superintendent Charles McNulty. “We will continue to work tirelessly to build a culture of inclusion and community throughout the Pulaski County Special School District.”

PBIS changes the focus to prevention from punishment to improve school safety and promote positive behavior with the understanding that kids can only meet behavior expectations if they know what the expectations are. Schools will still use discipline, but the punishment isn’t the focus - instead the focus is on teaching expectations and prevention problems.

RTI provides struggling learners with interventions at increasing levels of intensity to accelerate their rate of learning. Components of the process include high quality, scientifically based classroom instructions, ongoing student assessment, tiered instruction and parent involvement in order to address each student’s specific needs.

A Bite Of Everything This issue of SAVVYkids is a lot like a well-rounded Thanksgiving meal. Lots of planning and prep work, and we serve up a little bit of everything. Our College Guide story is geared toward the older chicks that are getting ready to pack up their bags for school and leave the nest. In this issue, top local universities give us the scoop on some of their fastest growing degrees and programs. You’ll find some very intriguing options to spark the interest of your techy-teen on page 20.

But, before your teens head out on their own, are they ready to handle whatever comes their way? Entering the workforce is a great way for older kids to learn responsibility, independence and time management skills. We talk with a family life specialist at the Arkansas Cooperative Extension Service on page 18 about when it’s appropriate to encourage kids to apply for jobs, which jobs are bestsuited for newbies and why it’s important for teens to clock in.

Speaking of teens, unfortunately many of them still haven’t gotten the memo about smoking. Arkansas has one of the highest rates of tobacco use among teens in the country with a reported 26.3 percent of high school-age youth in our state using tobacco products, including e-cigarettes. And, since Oct. 1, there have been 16 reports of vaping-related lung disease in the state. We speak with a coordinator from Project Prevent on page 35 about new tobacco laws in Arkansas and programs geared toward encouraging teens to quit.

We couldn’t possibly offer up a November issue of SAVVYkids without a mouthwatering Good Eats column dedicated to that long-awaited feast. Zara Abbasi offers up a few delicious, favorite Thanksgiving side dishes that travel well for those of us with a long list of family meals to attend and contribute to. Check out her recipes on page 26 and get those holiday stretch pants out of storage!

We hope something in this issue gives you food for thought. Don’t forget to enjoy the season, the food and the precious family time.

Spotlight on Nonprofits Giving Tuesday impacts local nonprofits

W

hile the décor in some stores may cause you to think otherwise, the Christmas shopping season doesn’t commence until Thanksgiving leftovers are stowed.

Even as Cyber Monday has chipped into Black Friday receipts (last year, Cyber Monday’s record $7.9 billion in sales beat Black Friday’s record $6.2 billion), the day after Thanksgiving is still considered the official start of holiday madness.

To put that level of spending into perspective, the collective $14 billon spent on those two days could buy 467,000 cars at $30,000 each or 70,000 $200,000-level homes, points out palmettopromise. org. Saving that much dough, at a rate of $100,000 annually, would take 140,000 years, or a mere 3,800 years at a rate of saving $10,000 per day.

In other words, it’s a ton of cash.

Now imagine what would happen if a small portion of that was diverted toward the nonprofit of one’s choice. That’s exactly the thinking behind Giving Tuesday, a 7-year-old global initiative that seeks to inspire people to support causes they believe in during a period when their hearts and wallets are most open.

Launched by New York’s 92nd Street Y and the United Nations Foundation in 2012, and leveraged mightily by social media ever since, the initiative has achieved spectacular growth, generating 3.6 million online gifts totaling $400 million worldwide in 2018.

“Giving Tuesday is huge for us,” said Megan McBroome, community outreach and marketing associate with Women and Children First shelter in Little Rock. “We don’t factor any sort of revenue for Giving Tuesday into our budget. So, any revenue that comes in is going to go in a general fund.”

“We’re always at capacity, especially around the holidays. If we’re running low on a top 10 item, like sheets or laundry detergent, we can use those Giving Tuesday funds for some items that we have to go get 911. That plays a huge role for us here.”

McBroome said the group has learned various ways to promote Giving Tuesday to help drive participation.

“Last year we put it in our newsletter and we also sent out a savethe-date to our general mailing list,” she said. “This year we’re also hosting a Facebook fundraiser. We have the opportunity to give donors who don’t necessarily look at their email but follow us on social media to give via Facebook and also tell where their funds are going, which is very important.”

Patrick Gallaher, executive director of Catholic Charities of Arkansas, said Giving Tuesday fits neatly within the organization's annual development strategy.

“We fell into it naturally,” he said. “Giving Tuesday coincides perfectly with our St. Nicholas Partners campaign where every year we issue a St. Nicholas Advent/Christmas/New Year’s card as our solicitation for year-end giving. It comes out about the same time Giving Tuesday happens.

“We publish it now through Facebook and we have a mailing campaign and an insert in the Arkansas Catholic diocesan newspaper. So, Giving Tuesday has been part of our tradition longer than the concept of Giving Tuesday has been in Arkansas.”

Gallaher said the branding and across-the-board awareness Giving Tuesday generates have an impact on both existing and prospective donors.

“A fundraiser can beat potential donors to death with requests for donations,” he said. “Doing it too frequently is bad, but if potential funders can be reminded at reasonable intervals, and a fundraiser finds the sweet spot of what those intervals are, it’s effective.”

Emily Piechocki, development director for Ronald McDonald House Charities of Arkansas, said some of the dollars the organization receives are directly attributable to Giving Tuesday hype. But, she added, the impact of social media to generate this giving cannot be overstated.

“There is a trickle effect of people promoting it, and not just nonprofits promoting it,” she said.

“What we do sort of gets lost in the weeds, but when we inspire people to post about giving, I do see some kind of communal effect that ends up happening that encourages overall giving on that day.”

Piechocki said establishing a matching program has helped the organization inspire more people to donate during Giving Tuesday, as has scheduling events to coincide with the day.

“We have an annual open house, and about every other year or so it ends up being the same day as Giving Tuesday. That has helped us, because we have people who come anyway for a big house lighting,” she said.

“End of year in general, not just Giving Tuesday but the last couple months of the year, is when we see about 40 percent of our individual giving for the entire year. Combined, all of the efforts that happen in what we call ‘Season of Giving’ are what make our whole year.”

How to:

1. Separate the embroidery hoop sections. If you use the outer section be sure to rotate the hoop and cover the hardware with your flowers.

2. Remove the flowers and leaves from the stems. You might need scissors or wire cutters depending on how the flowers are made. My flowers slipped right off the stems, and I just trimmed some leaves with scissors.

3. Decide how you will arrange the flowers before you start gluing.

4. Start by attaching a few leaves to the hoop, covering the embroidery hoop hardware.

5. Next, attach the larger flowers.

6. Add the smaller flowers and leaves to fill in spaces and add little pops of color.

7. Hang on your door either directly, on a hook or attach a little fishing line or ribbon to hang.

MAMA SAID ...

Honesty Is Still the Best Policy

W

e’ve all seen it. The small child, hiding in the corner with chocolate all over his face, promising he wasn’t the one who took the last cookie.

Recently, when I was cleaning out the couch cushions in my house, I found two elusive “Draw 4” UNO cards hidden for what, I believe, was a strategic move by my precious daughter. She had “no idea” how they got there. I asked her to take a time out so she could think about her actions. It was also a time out for me to reflect on what just happened. I couldn’t believe it! My daughter cheated! Worse yet? She lied.

She received a few bonus chores that week and we had a conversation. I asked, “Why would you lie about something so silly?” Her answer was simple, “I didn’t want you to be mad at me.”

I realize this may seem exaggerated for a simple card game with a child. When our kids are younger, these instances are cute and even laughable.

But, it’s not that cute when we’re adults.

My goal as a parent is to create an environment where my child is not scared to tell the truth. She knows I won’t always be happy. But knowing she can count on me is something I will never take for granted.

I’m sure we can all think of a time when, as an adult, dishonesty ruined an opportunity, a friendship or, in my case, a marriage. Because of my own experiences — and ultimate growth — telling the truth and owning up to that truth are lessons I find imperative when teaching my (obviously quite sneaky) 7-year-old.

I’ve told my share of little white lies and big whoppers over a lifetime, but the older I get, the more I appreciate the ease that comes with simply being forthright. So, how do I get my second-grader to understand a concept that many adults struggle with? The more articles I’ve read and links I’ve clicked on, I see a pattern of three easy steps that are helpful to me as a parent and, even more so, as a “grown up” still trying to figure things out.

First, RECOGNIZE it. Adults have a habit of telling “little” lies.

When your co-worker asks if you can make it to his event, you say you’re sick. Actually, you finally have a break and want to catch up on Netflix. It seems small, but getting too comfortable with telling small stories leads to a life of covering up your truths and trying to keep your story straight. Mark Twain said it best, “If you tell the truth, you don’t have to remember anything.”

No one today is walking around with too much time on their hands. It’s OK to say, “I’ve had a long week and I’m staying in tonight. I’ll see you next time.” You’re being honest and others will respect you for that.

This brings up integrity and loyalty. If your child wants to play on her tablet, but she’s got a basketball game where her teammates are counting on her, stick to your commitment. This type of accountability will be better for both of you in the long run and will show others that she is dependable. Recognize when you’re being untruthful in your relationships and remember that your word and actions are gold. Begin to untangle that web of lies.

Next, ACCEPT it. Plain and simple — children DON’T tell the truth when they’re scared of the consequences. They know they are wrong. Having the courage to confront the consequences of your actions and taking responsibility when you are accountable are the secrets to a more honest lifestyle. Right now, it’s hiding UNO cards. One day, it may be something bigger. I want my daughter to know that, that no matter what it is, she can talk to me and, together, we’ll get through it.

When you tell the truth, people will respect you more. Accept that you can’t change the past, but you can embrace a better future.

The truth hurts. We all need to live a life where there is a little discomfort. In the long run, it will cause a whole lot less pain.

Now, we have the toughest part. We have to EXPRESS it. Yes, there is a very literal way of expressing your honesty, and that’s telling the TRUTH. This means being honest with yourself, your loved ones, and even strangers.

(Warning! We’re about to get deep here.) If you feel like you lie more than not, then it’s time to evaluate your relationships and how you view them. If you can’t be truthful to the people that mean the most to you, it’s time to take a deep look inside and find the root of the problem.

No matter your age, it’s time to start living a more honest life. Instill honesty early on in your children, and don’t be afraid to practice it more yourself. Keep in mind, little eyes are watching, and little ears are listening. Be an example.

It may sound cliché, but the truth shall set you free.

Get a Job

Is your child ready to enter the workforce?

hen our grandparents were growing up, kids were expected to contribute time and effort to help the family, especially on farms or in rural areas. But now that we’re not raising livestock or lentils to survive, the dynamic changes.

Parents might wonder about the best ways to handle chores and other work-related expectations in these modern times. And when kids reach teenager status, what’s the best way to transition them into the workforce?

When it comes to helping around the house, “as soon as a child can follow directions, around 18 to 24 months, they can start doing chores.

Give them small, age-appropriate things to do like picking up their own toys, putting their dishes in the sink, or using a rag to wipe off a table,” Brittney Schrick, a family life specialist at the Arkansas Cooperative Extension Service, said.

“As they get older, increase the difficulty of chores and decrease the amount of interference you give.”

Parents and experts still go back and forth on whether children should be paid for chores. Schrick says it’s ultimately a personal choice.

“Whether or not a child is paid for their chores is a decision that

will vary by family,” she said. “There is no one right way to manage chores with kids, and there are pros and cons to paying and not paying. Finding their motivation is helpful.”

She said a downside to paying is kids will lose motivation to do chores once they have some money stored up in the bank. Parents should also consider a loss of privileges or additional work as consequences for kids who don’t complete their chores.

“Making sure they are given responsibilities at home and allowed to complete tasks with minimal interference from parents will increase their chances of success at an outside job,” Schrick said.

Once kids are ready, they can transition to work outside the home. Kids ages 9 and 10 could earn money raking leaves or walking a neighbor’s dog.

“They could do jobs for neighbors, family members, or earn money through short-term projects like selling something they make,” she said.

“When a child is ready to work for others will vary widely based on the child's personality and what they want to do and are capable of doing. Babysitting non-related children is not generally recommended for kids under 12, and many parents will want to hire someone older,” she said.

Legally, teenagers can apply for a work permit at age 14 to get a steady job outside the home, and at age 16 they can apply without a permit. For these first jobs, Schrick suggests retail stores or service-oriented work in theaters, entertainment centers or bowling alleys.

“Think about things they like to do, or genuinely do not like to do, and use that as a starting point for brainstorming. A first job will be overwhelming, so making sure it is a good fit will ease the transition,” she said.

When kids are looking for jobs, it’s helpful for parents to tap into their own network of friends and colleagues.

“Think of places where you know people who either work there or have worked there in the past. Having a contact is always helpful, so ask around,” she said. “It still takes good, old-fashioned leg work. Although a lot of applications are filled out online, it never hurts to follow those up with a visit to the location.”

Once a new job is acquired, parents should determine goals and priorities for the time devoted to this new job, taking into consideration the child’s current responsibilities and obligations, as well as how this new income should be used.

“Do they need a job to contribute to family finances, or is the money for their own use? Do they have transportation available whenever they need to work, or will they be able to work only when you can take them? Do they have other responsibilities, activities or obligations that will limit when they can work? It is important to think through and discuss these issues so that everyone is on the same page,” she said. “It may add more stress for a child to have a job, especially if they cannot drive, than is worth the money they will bring in.”

Degrees in Demand What’s trending among college degree programs

espite the recent drumbeat talking down the value of college education over cost, the statistics are clear: Pricetag notwithstanding, a college degree still provides a range of advantages that those without a degree generally don’t enjoy.

Most people have heard about the lifetime earnings disparity between those who hold a degree and those who don’t, but it is significant enough to bear repeating. A national report by the State Higher Education Executive Officers Association showed high school graduates earn an average of about $30,000 per year while bachelor's graduates earn an average of just over $50,000 a year and advanced degrees translate to roughly $70,000.

But as educationcorner.com notes, college not only equips young people with the skills they need to get a job. Merely completing college demonstrates to potential employers a graduate’s work ethic and time-management skills, not to mention the networking opportunities and personal growth the college environment can provide.

Having said all of that, it’s important to pay attention to what’s in demand in the marketplace when choosing a college and major. SAVVY Kids polled several Central Arkansas institutions of higher learning to get a sense of what degrees are in demand, and what it takes to complete them.

UNIVERSITY OF ARKANSAS – PULASKI TECHNICAL COLLEGE NORTH LITTLE ROCK | UAPTC.EDU University Transfer Curriculum For students who want the value of a two-year college and the flexibility to finish a bachelor’s degree on their terms, the University Transfer Curriculum is a great choice. The option allows students to earn a two-year Associate of Arts degree locally at UA-PTC, then transfer to a long list of other institutions for the remaining two years of study to earn a bachelor’s degree.

UA-PTC took the concept a step further, entering into a collaborative agreement with the University of Arkansas at Little Rock to create the Metro 2 + 2 Degree program at the UA System office in Little Rock. Students complete their first two years at UA-PTC in one of four degree areas, and then transfer to UA Little Rock for their final two years in one of 44 bachelor degrees. The result is a quality four-year degree earned locally at a substantial cost savings.

“The Metro Degree is specifically designed to help families and students streamline a quality four-year degree,” said Dr. Margaret Ellibee, UA PTC chancellor. “What’s new and exciting about this program is that we worked together with UA Little Rock to refine the transfer experience to be seamless and foolproof in very specific ways. UNIVERSITY OF CENTRAL ARKANSAS CONWAY | UCA.EDU Cybersecurity/Data Science From simple phishing and data hacks to global cyber terrorism, the security of the world’s computer networks is under constant assault. The reason? The original architecture was never designed to be as widespread as it has become.

“Computer networks were originally designed for universities and military personnel and assumed that everyone was a trusted user,” said Dr. Stephen Addison, dean of the UCA College of Natural Sciences and Mathematics. “Once computer networks became more commonplace, people began to use them for criminal purposes. Some companies now lose more money through cybercrime than through shoplifting.”

This fact has made cybersecurity degrees — such as the ones offered through UCA — in high demand nationally, expected to grow 17 percent this year alone. In Arkansas, there are almost 900 unfilled cybersecurity jobs, according to cyberseek.org.

UCA has grown its program rapidly to keep up, with bachelor degrees in cybersecurity, computer science, computer engineering and computer science/data sci as well as a five-year bachelor’s/master’s in computer science. Standalone master’s and minor degrees in computer science are also available.

In just one year, student participation has grown from nine to 57 declared majors, a 533 percent increase, leading the school to design a four-year bachelor’s degree in cybersecurity management within the College of Business, to be launched shortly.

ARKANSAS TECH UNIVERSITY, RUSSELLVILLE | ATU.ED Game and Interactive Media Design Arkansas Tech University founded its game and interactive media design program in 2016. In that time, enrollment in the program has exploded, growing 256 percent from 32 students in year one to 114 students in the fall 2019 semester.

A bachelor of fine arts in game and interactive media design degree takes four years to complete. ATU’s program introduces students to the cutting edge of visual communication arts and the latest in the interactive digital technology sciences. The program prepares students for work in the video game and entertainment industries as well as a broad range of fields requiring skills in animation, simulation, programming, web design, editing, mobile application development, interactive environment construction and story formation.

The number of applications for this degree is expanding rapidly. Some nongame applications include developing tablet apps for professionals and students such as medical exams on a tablet computer or textbooks on a Kindle. Graduates also design movie and music tie-ins with bonus content and augmented reality apps such as GPS navigators for smart phones.

Business applications include developing highly personalized marketing with interactive catalogs and holographic advertisements.

The U.S. Department of Labor forecasts there will be approximately 75,000 U.S. jobs in the field by 2028. Median pay for the profession in 2018 was $72,520 annually.

One unique area of study at the University of Arkansas Little Rock is the George W. Donaghey Emerging Analytics Center, one of very few departments of its type anywhere. The EAC is led by Dr. Carolina Cruz-Neira, executive director, who is one of the preeminent authorities in the field of virtual and augmented reality.

Students enrolled at the EAC don’t just work with this technology, Cruz-Neira explained; they also create entirely new applications.

“The EAC is actually a very unique facility, because it has a very wide range of virtual and augmented reality technologies,” she said. “Several of the ones that we have, we have developed ourselves based on the different applications and collaboration that we have.”

Student participation in this field of study has grown rapidly since the EAC opened in 2013. That first year, only two students were enrolled, whereas now it’s home to more than 50, each of whom gains hands-on experience from the get-go on projects for industrial and state and federal governmental applications.

“We work with a wide range of students at different levels of their education; we have anywhere from freshman-level undergraduate students all the way to Ph.D. and post-doctorate level students,” Cruz-Neira said. “All of these students, even the undergraduates, perform research from the very first day that they join us. They are all funded, and they all have different types of scholarships and hourly research positions with us.

“It’s an integrated research environment that gives the students very advanced, unique skills that they don’t get in a regular classroom.”

Nursing The nursing field has been a profession in high demand for years, and thanks to the tidal wave of aging Baby Boomers, that fact isn’t going to change anytime soon.

One look at the UA Little Rock Nursing Department catalogue backs that up with more than 900 majors, not counting pre-nursing programs. Every position is in demand, including bedside acute care and critical care nurses, pediatric specialists, obstetrics, educators and researchers.

“Nearly all of our students, 99 to 100 percent, have a job before they graduate,” said Elizabeth Sloan Davidson, associate professor and chair of the nursing department. “There is always a nursing job available with your education credentials.”

It takes two years to complete UA Little Rock’s Associate of Applied Science in Nursing degree and two more years to complete the Bachelor of Science in Nursing degree. The Bachelor of Science in Nursing completion degree is available online. Another advantage is students’ ability to sit for the NCLEX-RN State Board Exam with an associate degree, which allows students to become licensed and work in the field while finishing their bachelor’s degree.

The department offers an LPN/Paramedic to RN degree program, a one-year program specifically designed for licensed practical nurses and paramedics to earn an Associate of Applied Science in Nursing degree.

Step Aside, Turkey You’ll want to grab a pair of stretch pants to indulge in these travel-friendly Thanksgiving sides

T

his article is about stretchy pants. You’ll need them because it’s all downhill from the month of November. There are so many food-related events including my absolute favorite, THANKSGIVING, that buttons and zippers are just not going to cut it. Kidding, kidding … but am I, though? OK, I know you can choose healthy options and I’m truly all for that, but I have been craving some crazy comfort foods that I usually don’t crave and I will have an arsenal of stretchy pants at my disposal until the end of the year. It might be because we had such a long hot summer that the thought of sitting down to the ultimate feast of the year is making me truly crave fall meals and sides.

Speaking of Thanksgiving sides, they steal the show for me every year. You should really know that about me; I love the sides. I love turkey, I really do, and it’s not Thanksgiving without it, but I’m making it to the sides first and piling up every time.

All that comforting food just washes the stress of the holidays away. Everything is fine once the cooking and traveling is over; there’s only this glorious plate of food in front of you. But, yes, we have to make it over that cooking and traveling hump first.

It’s a well known fact that holidays create stress for people but I’m here to help you through it. I’m a food lover and stress hater so I love to combine those assets whenever possible, and it’s necessary for Thanksgiving so you’re not having a meltdown in the pantry while people are trying to eat. You know who I’m looking at.

When you add travel to the mix, you’re going to be tempted to throw in the towel. Do not do that (I mean, really, you always have to pick up the towels later anyway, right?). But truly, when you have to travel and cook, too, there are some considerations to make about the food: How long will you be traveling? Does the food need refrigeration? Will it need to be reheated? Is it easy to pack? The safest bet is to just bring foods that do not need refrigeration if you are traveling a distance. I’ve packed a cooler before and it leaked and there were lots of “sighs” quietly uttered (they weren’t sighs. They were not quiet).

So let’s get those creative juices flowing and get some ideas for things that not only travel well, but are minimal stress for you. Obviously the earlier you start your planning, the easier things will be on you later. This is something I know well because I did not always do a good job of planning in advance and it caused a lot of preventable stress. Make sure you decide on your dish, then read through the recipe at least two times so you’re aware of any steps you’re not used to or not anticipating. Then make a list of all the ingredients you need and cross check that with what you may already have on hand. The last thing to do is to make the dish and be ready to go. Those are just some tips that have helped me no matter the recipe I ended up making. Hope they come in useful for you, too.

Fall Bruschetta

I love bruschetta in the summer because it’s so effortless and fresh and packs so much flavor. It deserves a nod as an impressive appetizer for your Thanksgiving this year. It travels well; just keep the bread and toppings separated and assemble at the party location. Or, better yet, keep it easy and allow guests to assemble.

2 sweet potatoes, peeled and diced small 1 pound sliced button mushrooms 1 large yellow onion, sliced 5-6 sprigs fresh thyme, destemmed 4 tablespoons unsalted butter 1-2 tablespoons oil Salt and pepper to taste ¼ cup parsley, chopped 1 tablespoon fresh mint, chopped 2 tablespoons garlic paste 1 teaspoon lemon zest 1 sliced French baguette, lightly toasted 2 cloves of fresh garlic Optional: 1 cup herb goat cheese 1 cup toasted chopped walnuts Balsamic syrup 1. Heat oven to 400 degrees and on a sheet pan add sweet potatoes and onions and a little oil. Add salt and pepper to taste, stir to coat evenly and roast for 15-20 minutes or until sweet potatoes are soft and onions are caramelized but not dark. Stir every few minutes. Set aside when done.

2. In a sauce pan, heat butter on medium-high heat and add in the mushrooms, thyme and garlic as soon as butter starts to brown.

Cook until all liquid released from mushrooms is cooked off and mushrooms start to brown. Add in a little more butter or oil if necessary. Reduce heat to medium-low.

3. Add in the sweet potato and onion mixture and stir to mix everything. Add in the parsley, mint and lemon zest. Test for seasoning and add in more salt and pepper if necessary.

4. To serve: While bread is warm after toasting, rub the fresh garlic clove quickly on the tops of the bread. Spread the optional goat cheese, if using, add the sweet potato mushroom topping, and the optional walnuts, if using. Drizzle with olive oil or balsamic syrup.

Green Chile Potato Casserole

If you’re not traveling too far, this casserole will easily withstand the trip and reheats pretty easily. I also love the fact that it is such an easy preparation and can be made well in advance and travels well without requiring much effort. And, to be honest, who doesn’t love a cheesy potato dish? This one won’t compete with the traditional mashed potatoes so people can still indulge in both.

1 bag of shredded hashbrowns, about 25-30 ounces 1 stick melted butter, unsalted 1 can cream of onion soup or nacho cheese soup (I’m not proud of this but …)

1 cup sour cream 1 cup shredded Mexican cheese 10-ounce can chopped green chiles 1 cup crumbled bacon 2 teaspoons paprika 1 teaspoon each ancho chile powder and cumin ½ cup chopped green onions Salt and pepper to taste Optional: Cilantro for garnish 1. Preheat oven to 350 degrees and lightly butter a 9x13-inch baking dish.

2. And now the hard work begins. Roll up those sleeves and get focused because you throw all the ingredients into a bowl, mix and put it in the casserole dish. Cover with foil.

3. Go lay down and take a nap. That step was intense. Get a massage while you’re at it.

4. When your breathing is back to being semi-normal after that sprint, place the casserole dish in the oven and bake for about an hour.

5. Remove from the oven, remove foil and add a little bit more cheese, cilantro if using and green onions. Bake for an additional 10 minutes or until cheese is melted.

FIGHTING PERFECTIONISM

W

hat’s so bad about being a perfectionist? Don’t we all want to do the best we can? Many students young and old come into Unity Martial Arts predicting that they’ll struggle with perfectionism. They use perfectionism to explain why the learning process is going to be extra hard. I always say perfectionism is something to be defeated.

Perfectionism has a very big ego. It is the enemy of learning because it says you should be able to do anything by wrapping your brain around all the parts. Perfectionism is insulted by the idea that you have to learn or grow or take things one step at a time. What an exhausting and frustrating illusion!

If a skill is worth knowing, it won’t be easy or quick to learn, but it can still be fun. Instead of a perfectionist mindset, try to have a student mindset. A student shows up to learn. Being corrected isn’t an insult or proof that you’re not meant to be there—it’s why you are there. For a student, knowing the list of things you need to improve isn’t a reason to shut down, but an opportunity to prioritize.

The next time you feel yourself struggling with a challenge because you’re afraid to look foolish or are trying to fix so many things at once that your mind wants to shut down, take a step back and then take a deep breath. Think of all the things you’ve already done to be where you are. Think of what you have learned so far.

Then visualize your goal and pick one thing that you want to work on next. Hold it in your mind, and don’t let all the other things you could do better intrude. Just chart your progress with that one thing.

This is the path to mastery. Focus on the distant goal but work on just one thing and get a little bit better each day.

Spiced Palmiers

These sound fancier than they are; and they’re super fancy! But, as fancy as they are, they’re equally easy. They’re a typical European pastry but you get to be the hero by not bringing a pumpkin or pecan type dessert since there will be at least one of those. The addition of a spiced chai to these pastries make them fall ready and easy to present to guests. They’re served at room temperature and hand held to eliminate the need for silverware, or even dishes if we’re being totally honest.

1 package puff pastry ½ cup granulated sugar ½ teaspoon chai spice (premade or 1/2 teaspoon each of cinnamon, nutmeg, cardamom, ground ginger) 1. Mix chai spice and sugar together in a bowl and set aside.

2. Sprinkle half the sugar spice mixture on a clean countertop and roll out puff pastry, being careful to not let it get too warm.

3. Roll into a long rectangle. Sprinkle remaining sugar mixture on top and roll to push sugar into the dough.

4. Fold edges from both sides to halfway to the the center, then fold edges in again, this time reaching the center. Fold completely in half. Roll very lightly with a rolling pin. Place on a parchment-lined cookie sheet and refrigerate for 15-20 minutes. Cut into 1-inch slices and place 2-3 inches apart. Sprinkle any remaining sugar on top.

5. Preheat oven to 375 degrees and bake for 7 minutes or until caramelized, then flip and bake for another 7 minutes.

6. Let cool and enjoy!

All the Cool Kids AREN’T Doin’ It Arkansas takes steps to address smoking among teens

ewer Americans smoke; But, cigarette smoking remains the leading cause of preventable deaths and disability in the United States. And according to the Centers for Disease Control and Prevention, 26.3 percent of high school-age youths in our state reported using tobacco products, including e-cigarettes.

This is alarming, 16 percent of the 1,080 lung injury cases nationally associated with e-cigarettes or vaping have been teens. The Arkansas Department of Health, as of Oct. 1, has reported 16 vaping-related lung diseases.

What is being done to address the issue? In 2015, the state legislature passed a law making it illegal to smoke in a car carrying a child under 14. And just a few months ago, on Sept. 1, a new law raised the legal age to purchase tobacco products to 21.

“I think this new law will be a game changer. It’s not uncommon for a 15- or 16-year-old to know an 18-year-old who will share tobacco

free and that is their social norm,” Taylor said.

She said chewing tobacco is especially culturally popular among teen male athletes and as a part of the farming and hunting community. It’s accepted, sometimes, even expected in rural areas. That’s why addressing social norms is key.

Smoking rates decreased from the ’90s, Taylor said, but with the advent of vaping, smoking rates have skyrocketed.

“Our goal is to create a culture where teens are tobacco free and that is their social norm.”

However, your average 15- or 16-year-old is less likely to know a 21-year-old who will do so,” Laura Taylor, tobacco outreach specialist at Arkansas Children’s Hospital and coordinator of Project Prevent, said.

Unfortunately, cigarettes and vaping are not the only problems.

“Arkansas has one of the highest rates of teen use of chewing tobacco,” she said. “According to a CDC study that looked at risky behavior among high school students, 12 percent of Arkansas’s high school students used chewing tobacco in 2017. That’s more than twice the percentage of teens nationally.”

One of the ways Taylor works to combat teen tobacco use is through youth groups: They meet at schools, after school, at churches, in community centers, etc.

“Our goal is to create a culture where teens are tobacco

“Teens face peer pressure as always, but now there’s the added pressure of social media. For instance, teens have shared videos of themselves doing tricks with vape smoke and of kids doing challenges, like piling into cars and hitting the vape as many times as possible in a minute,” she said.

“Tobacco companies pushed chewing tobacco as a safer alternative to cigarettes,” Taylor said. “They’ve now done the same thing with vaping products, spending billions on marketing and targeting youth.”

Project Prevent began in fall 2017 by creating chapters that function like clubs. It started with 20 chapters and by this spring had grown to 56 in 43 counties. Taylor anticipates there will be 100 chapters by the end of this school year.

Each chapter has an adult adviser; however, the clubs

are led by students. They choose a project, whether it’s setting up information booths during parent-teacher conferences, speaking with school administrators to strictly enforce laws that prohibit smoking on school grounds, and/or providing tobacco education as a part of the discipline policy for student violators.

Club members may also choose advocacy as a project.

For instance, they may lobby their local city councils to ensure their local parks are tobacco free.

As a tobacco outreach specialist, she offers the following advice for parents: “Communication is key. Talk to your teens about the harm that smoking can cause. Let them know that the effects of vaping are unknown. It’s important to have open conversations about their health.”

She added, “Parents, if your teen is already vaping, smoking or dipping, there’s a good chance, they’re already addicted. However, there are programs to help. There’s the Be Well Hotline as well as a popular texting program and the Truth Initiative,” Taylor said.

You can also sign up for the Smoke Free Text program; it’s 6-8 weeks long, and participants will receive three to five messages per day, including tips, advice and encouragement to help overcome challenges and stay motivated. Text “Arkansas” to 47848 to start.

Additionally, users may text CRAVE, MOOD or SLIP. If you’d prefer to meet with someone in person, Arkansas Children’s Hospital also has a cessation program for patients and their family members.

“Parents should also check with their local health departments. Their staff includes nurses who are trained to assist with smoking cessation.”
