Start the Day with Breakfast You’ve probably heard it all before. But breakfast is indeed the most important meal of the day.

In the morning, after a long night without food, it is essential to refuel in order to provide the body and mind with the necessary nutrients and energy to get through the first part of the day. Our brain requires glucose or blood sugar to provide it with energy to function, whilst the muscles of our body need glucose to get the body working physically. After long periods without food, our blood sugar levels fall, causing tiredness and irritability amongst other symptoms that occur when you need to replenish your appetite.

Also those weight watchers who think skipping breakfast is a good idea should think twice! According to research, skipping meals, especially breakfast, can actually make weight control more difficult.

Breakfast skippers tend to eat more food than usual at the next meal or nibble on high-calorie snacks to stave off hunger. Bravo!

red leicester, tomato and bacon muffins Ingredients Yield: Serves 12 300g Self-Raising Flour 100g Melted Butter 2 Eggs 180ml Milk 1 Tsp of Dried Rosemary Sprinkle of Salt & Pepper 3 Slices Lean Back Bacon – chopped 1 Tomato – deseeded & chopped 12 Chunks of Red Leicester Method Sieve the flour into a large bowl. Add the herbs and season. In another bowl, mix the eggs, milk and

melted butter then pour into the flour bowl and fold in together until even. Add the bacon and tomatoes.

Line a muffin tray with paper cases and pour the mix into the cups. Place a chunk of cheese into each cup.

Then bake in a hot oven set on medium (180° Celsius) for about 40 minutes.

Serve warm for breakfast.

breakfast fruit and seed bread Ingredients Yield: Makes one large loaf 750g Plain Strong Flour 11g Sachet of Dried Yeast 5 Tbsp Castor Sugar Pinch of Salt 10 Pitted Prunes – chopped 80g Golden Raisins 3 Tbsp Linseeds 3 Tbsp Pumpkin Seeds 1 Tbsp Candied Orange Peel

½ Tsp Cinnamon ½ Tsp Aniseeds Pinch Ground Nutmeg 300ml Warm Milk 100g Soft Butter Method Sieve the flour into a large bowl, add the yeast, mix then add the butter and rub in. Add the spices, salt and sugar, then the warm milk. Bring the dough together, turn onto a clean surface and knead for 10 minutes until smooth and silky. Incorporate the seeds and fruits into the dough. Place the dough in a clean bowl and cover with a tea towel and leave to rest until it doubles in size. Knock down, and then shape into desired shape. Place on a floured baking tray and cover once again. Leave to rise until double in size and then bake in a hot oven set on 200 degrees for about 40 min.

Tap the base of the bread and if it sounds hollow, that is a sure sign it is ready. Remove from oven, lightly brush with milk and sprinkle with sugar and bake for another 3 minutes. Remove from oven, cool and serve fresh or toasted, with good butter.

scrambled eggs and smoked salmon mini buns Ingredients Yield: Makes 6 mini buns 4 Eggs 100ml Milk Knob of Butter Salt & Pepper 6 Mini Buns 6 Slices of Smoked Salmon Method Beat the eggs and milk, season. Melt the butter in a pan, and cook the eggs. Cut open the buns and fill with scrambled eggs and smoked salmon. Serve warm.

Cupcakes -Made with love & care Be it for breakfast, lunch, or a late afternoon snack, who wouldn’t love a cupcake?

Here we suggest a base batter which you can then modify to make different cupcake variations. Feel free to make your own signature cupcake. The most important thing is that you make them with love and care. vanilla cupcakes Ingredients Yield: Makes 12 300g Self Raising Flour 200g Sugar 2 Eggs Few Drops Vanilla 180ml Milk 100g Melted Butter

carrot, lemon and orange cupcakes Ingredients Follow the same recipe as the vanilla cupcakes. At the end, incorporate a grated carrot and a teaspoon each of grated lemon zest and orange zest.

Decorate with icing sugar.

Method Sift the flour into a large bowl. Mix the vanilla, eggs, butter and milk in another bowl and pour into the flour. Fold in until evenly combined.Line a cupcake tray and pour the mix into the cases. Bake in a hot oven set on 180 degrees Celsius for about 40 minutes.

Fall, a time when the leaves turn colour, the weather begins to cool, children head back to school and universities are brought back to life. It can also be a time for packing on the pounds!

Many people find that as the days grow shorter they start reaching for comfort food and end up with an extended waistline leading to crazy New Year’s resolutions by the end of the year. You might be relieved to learn that the urge to eat more as the days grow shorter is not anyone’s fault - it’s actually a scientifically recognised condition! Shorter days and lack of sunshine reduce our body’s production of serotonin, a

months, the inevitable lifestyle we lead nowadays (cars, central heating, plentiful food, etc.) does not help.

Having spent most of our summer outdoors enjoying the lovely weather, we are suddenly faced with gloomy rainy days which force us indoors where we usually end up inactive while devouring rich meals and calorific hot drinks.

From a diet rich in summer seasonal fruits and vegetables, we end up indulging in stews and casseroles full of creams and cheeses which spike up fats in our diets. From ice cold water and fruit drinks, we turn to hot toddies and hot chocolates (whipped cream and marshmallows, please!), all of which increase our calorie intake.

Being back to university for most students also means having to face two stressful

Don’t try quick fixes Instead of opting to lose weight for Christmas or for summer, give the more long lasting option a go by carrying out small changes over a longer period of time, making it part of your lifestyle. This will help you keep the weight off instead of gaining it right back again.
