A Golden Opportunity SMORGY! What the heck is a Smorgy? Smorgy, short for smorgasbord, is a term coined by the founders of the Apple Hill℠ Growers some 50 years ago. In the early days, farms offered fresh fruit in a farm setting. However, since bake shops were still on the horizon, opportunities for farm families to highlight the delectable treats and tastes, made with fresh quality fruit, were limited. In the true spirit of the El Dorado County Gold Rush heritage, the Apple Hill Founding Mothers saw the “flash in the pan.” They mined a golden nugget: the idea to showcase a large selection of baked goods from many farms, made with the area’s fresh fruit. The historic Smorgy was held at one location for one weekend, and the delicious fruit pies, fritters, cobblers, tarts and turnovers were showcased for the public to sample. The Smorgy lured guests from miles around to savor baked goods, a memorable way to introduce and showcase this new phenomenon known as “ranch marketing” by the newly formed “Apple Hill Growers.” As the Apple Hill Growers association grew and more farms added bake shops, the Smorgy had seemingly outlived its purpose. Now, after many years, the nugget of an idea is mined again. THE APPLE HILL SMORGY IS BACK! In August of 2016, the Apple Hill Growers will be hosting a one-day event to once again showcase the many delicious desserts that are made with love at our farms! To make the event even more special, our Apple Hill Wineries and hard cider makers will be pouring award-winning brews to go along with the desserts and a hors d’oeuvres reception. Don’t miss this Golden Opportunity to capture another golden memory with the Apple Hill Growers! “Taste of Apple Hill—Dessert Smorgy” Date: August 28, 2016 Time: 2:00pm – 4:00pm Location: Larsen Park at the corner of

Eureka! Liquid Gold “Eureka!” cry the ‘49ers as they rushed to the Sierra Nevada Foothills in search of gold. Today there is a new cry of “Eureka” in these hills as visitors flock to Apple Hill Grower farms prospecting for a liquid gold: apple cider. Apple cider has long been a part of the heritage of El Dorado. In the gold rush days, early settlers planted apple trees. The fresh pressed cider (“soft”) and fermented cider (“hard”) made from these apples were a staple in the lives of the miners and the early settlers. Rooted in this El Dorado agricultural history, Apple Hill Grower farms have continued this apple cider making heritage since 1964. Visitors to the farms enjoy sampling this fresh, all natural, unfiltered, preservative-free “soft” cider and packing home a jug of the golden liquid for drinking cold and fresh, hot and steamy, or in mulled cider for traditional holiday celebrations. Bake shops use the fresh (“soft”) cider to enhance pies, to leaven apple cider donuts, and to make the famous cider topping to pour over bakery items. Visitors also have the opportunity of watching on site cider mills pressing liquid gold at Bolster’ Hilltop Ranch, High Hill Ranch, and Rainbow Orchards. Today there is an added shout of “Eureka!” as visitor interest in “hard” cider is rapidly growing. Apple Hill Growers are heeding the cry and are offering a lucky strike by fermenting the “soft” non-alcoholic cider to produce the alcoholic beverage known as “hard” cider. Wofford Acres Vineyards, High Hill Ranch, Smokey Ridge Farmstand, Honey Bear Ranch, Delfino Farms/Kids Inc, and Rainbow Orchards are each brewing custom batches of this liquid gold. Flavors and styles of the “hard” ciders vary from farm to farm depending on the variety and blend of apples used and the method of fermentation. When searching for “soft” or “hard” cider, visitors will find their thrill drinking the liquid gold found at the Apple Hill Grower farms’ own “Cider Hill”. “Eureka!”

Apple Cider Sauce (hot cider sauce used at original Smorgy) 3 cups cider 1 tsp lemon juice 1 ⁄4 tsp lemon juice 1 ⁄2 tsp vanilla 1 ⁄4 tsp salt 1 ⁄2 cup sugar

⁄2 cup brown sugar ⁄4 cube margarine 2 heaping Tbsp white flour or cornstarch and enough water to make a thin paste 1 1

Place all ingredients except flour in sauce pan. Stir on medium heat until dissolved. Bring to boil. Mix flour with water until completely smooth; add slowly to hot cider, stirring constantly until mixture is thick. Remove from heat; pour over baked apples. Serve with vanilla ice cream.

Apple Butter For every quart of apples add: 2 cups brown sugar 1/8 cup cinnamon dash of cloves Place finely chopped or grated apples in a heavy dutch oven with 1⁄2 cup apple cider (or water) for every 1 quart of apples. Cook apples on low heat (250-300 degrees) stirring occasionally so apples do not burn. Apples will cook down to one-third of their original measurement so start with at least three quarts. When apples are very soft (approximately 5-8 hours, depending on the size of the chopped apples and the quantity cooked), mill apples by hand (or use a hand emulsifier) so that there are no chunks in the apples. Measure apples at this point and then place in heavy pot on stove. While apples are still hot, add apple butter ingredients above. Bring to a soft boil (will splatter if too hot–be careful) making sure that ingredients are well combined and apples are hot throughout. Fill 8 or 9 oz sterilized jars leaving 1⁄4 inch headspace. Run a knife up and down the sides of the jars to eliminate air pockets. Place lid and process for 10 minutes in simmering water. Store for up to one year in dark, cool place.

Farming in Gold Country

By Kirk Taylor

The Apple Hill Farms and Wineries are located in the Sierra Nevada Foothills. The SM

“Mediterranean Climate of the area is characterized by a wet season during the winter and a dry season during the summer growing season. Producing crops during the growing season requires supplemental irrigation water. One of the first water delivery systems to the area was the ditch that provided the water to power the Sutter Lumber Mill in Coloma on the South Fork of the American River. James Marshall, examining the tail races of this ditch in December of 1848, discovered gold. This discovery started the 1849 Gold Rush. The discovery forced the ‘49ers to develop an elaborate system of weirs, dams, ditches and flumes to move water from the rivers to the mining sites. The water was used to wash the lighter materials from the gold. Some entrepreneurs began to realize that supplying the miners with food and resources was more profitable than mining, so they started growing crops. They did this by utilizing some of the ditch water headed to the mining sites. Since the mid1850s, these water delivery systems have changed hands many times causing strife between the various water users. In 1929, the El Dorado Irrigation District (EID) was formed out of a coalition of farmers who feared losing water rights to other users. They purchased the ditches in the area known as the Placerville Divide to ensure an irrigation water supply. EID has made many improvements, expanded the system and purchased additional water resources to protect this water supply currently used by the Apple Hill Growers. Thanks to the effort and ingenuity of many individuals, the irrigation water used on and around the Apple Hill Farms and Wineries comes from Echo Lake (on the east side of the Sierra Nevada Mountains), the South Fork of the American River and/or Cosumnes River drainage.

The Apple Hill Golden Apple Trail SM

By Dave Bolster

Sacramento Bee writer Mike Dunn once wrote that Apple Hill was a giant outdoor agricultural theme park where visitors roamed from one farm or winery to the next, searching for the best apple pie or great wine. So, in the days before GPS and smartphone Apps, how did visitors find their way to various Apple Hill Grower farms? While Millennials are too young to remember, the travelers of old… used a map! The intrepid 16 members of the newly formed Apple Hill Growers in 1964 needed a means to help their visitors locate their member farms, so creating a printed map was an obvious necessity. The solution by the clever 16 was to make that great symbol of motoring in the ‘50s and ’60s, the paper trash bag that hung from the knob of the car’s glove box, into a map to guide their visitors. Baby Boomers and those of the Greatest Generation meandered around the ‘Hill using the map, and when they found an Apple Hill grower, re- hung the map on the glove box knob until they started the search for the next farm. And, for those lucky visitors who grabbed multiple copies of the maps, the paper bags could hold a few pounds of apples purchased at their favorite farm. Now that’s versatility! While the map was a valuable tool, the growers thought there was more they could do to help visitors find their ranches. Thus was born the Apple Hill Golden Apple Trail. With the cooperation of El Dorado County DOT and the Board of Supervisors, the growers painted golden apples on the various county roads in front of each grower member location. The golden apples were about three feet in diameter and were painted on the roads by the Growers for about 20 years until the early 1980s. The last remnant of the Golden Apple Trail can be found at the corner of Larsen Drive and Cable Road high in a pine tree at what is now Apple Ridge Farms. The old rusted rectangular sign reads “Apple Hill Golden Apple Trail.” The sign serves as a tribute to the intrepid 16 who found ways to guide visitors to our newly created Apple Hill farms, wineries, and Christmas tree farms. Today our visitors use the Apple Hill Grower website, the Apple Hill Grower smartphone App, and our Apple Hill Cider press publication to locate our members. While it elicits a smile to look back at the navigational technology of yesteryear, it is also comforting to recognize that while technology changes at an ever increasing pace, the fundamental attraction of Apple Hill remains – the basic human desire to connect to the land while sharing the experience of spending a day in a beautiful place with friends and family. Happy motoring! 54 applehill.com

As Good As Gold The following nuggets will help make visits to Apple Hill Grower farms as Good as Gold for farms and visitors alike: Come prepared with a supply of paper plates, plastic utensils and cups, so you can purchase whole bakery items or a jug of cider to share with your group. Pack an ice chest to keep your fresh cider and bakery items cold for the trip home. To enjoy a leisurely day driving around the hill, the opportunity to interact with the farmers themselves, and the chance for excellent service, plan a trip for September, November, or December or on a weekday, avoiding lines and traffic on busy October weekends. Note that the “You Pick” activity is restricted to identified “You Pick” farms listed on applehill. com and in the Cider Press. Picking fruit on farms that do not offer “You Pick” can cause safety problems and destruction of precious orchards and vines. Also please remember that all fruit picked, eaten, or taken home must be purchased as these fruits are the farmers’ livelihood. Apple Hill Grower farms provide containers, so visitors can dispose their trash and help keep our farms litter free. In partnership with El Dorado Disposal, farms also actively promote recycling by providing recycling receptacles. Visitors are encouraged to bring their own personal water bottles and refill with fresh, mountain water available from faucets on most farms. Please respect the farmers’ land. Note the posted hours that individual farms are open. Many farmers and their families live on the properties, and the farmers, as well as their neighbors, appreciate respect for their property and privacy when the farms are closed to business. Professional photography is allowed only by permission from property owners.

continued

Many farms welcome pets on leashes and their handlers who “always scoop poop and place in a garbage can. Pets should not be left unattended at any time. Only Service Animals are permitted in areas where food is sold or prepared. Be safe. Wear comfortable shoes for walking on rural lands. Children should be supervised at all times. While there is plenty of open space for children to run and play, climbing orchard trees is prohibited both for the safety of the children and to protect the trees’ production potential for the following season. Wagons, rather than large strollers, are recommended to transport small children on orchard terrain. Often large strollers cannot be accommodated in the limited space of barn sales areas. For a quality experience, look for the unique AH grower sign of quality identifying members of the Apple Hill Growers. Fifty Growers take pride in displaying the Apple Hill sign and in being identified on the official Apple Hill Grower Map. Information on all ranches can be found in the Cider Press and at applehill.com. Also the growers themselves are knowledgeable and happy to answer your questions about their Apple Hill Grower neighbor farms.

Discover WINTER One of the most aromatic times is early winter when the Christmas tree farms are in full action. Families, both local and from afar, have made coming to the Apple Hill farms in December a yearly tradition; there is nothing families look forward to more than visiting the farms in search of the perfect tree. Many bake shops are still open to warm you after your hunt, so you won’t miss out on the fragrance of pie right out of the oven.

Christmas trees

Preserves How to Flash Freeze 1. Wash, and dry as much as possible, dice large pieces of fruit. 2. Place on a wax paper lined cookie sheet in a single layer with space between pieces. 3. Place in the freezer for 1-2 hours, once frozen transfer to freezer bags. Be sure to double bag them. Use in smoothies, muffins, pancakes, desserts, or jam.

Black Friday

More people are finding out that the BEST thing to do on Black Friday – the day after Thanksgiving – is to create a great tradition! Choose and Cut the perfect family Christmas tree at your favorite Apple Hill Christmas Tree Farm.

Wine tasting Late winter brings rain, snow, as well as fresh air, and it is a great time to visit our award-winning wineries. Their new releases will entice you to stick your nose deeply into the glass. If you are lucky, you might get to taste straight out of the barrel in one of the cellars that smell so deliciously of new wine. Not to mention, Time Out Spa is the perfect place to soak in the aromatherapy of massage oils and beat the doldrums as you are pampered into complete relaxation.

Discover SPRING

In spring, the blossoms come! One of the most beautiful sights is a block of trees in bloom, first with the white of pears, then the rose of cherries and then the pink of apples. Since different apple varieties bloom at different times (and Mother Nature decides at a whim when to make blossoming happen), there is no “Best Time” to sniff the blossom-scented air and watch the bees work their pollinating magic.

Discover SUMMER Early summer is Berry Season, and the smell of warm Earth and ripe berries should be bottled for the winter months- and you can do it! “You Pick” Berry Ranches open in June, and a short time spent picking produces enough berries for you to take home and make jam, to give to friends when the weather is dreary, showing them your love and a sunny day. Bring the kids for a day of berry picking; it’s an unplugged activity that creates beautiful memories and a “What I Did Over Summer Vacation” topic.

You-pick

Photos Don’t forget your camera

2016 Facebook Photo Contest First Place Winner, Amy Stalker! Depending on Mother Nature, of course, most you-pick apples are generally available in September. Planning a trip for apple picking? Check for availability at applehill.com.

Lavender Don’t miss the Lavender Festival! Year round Apple Hill events can be found at applehill.com.

62 applehill.com

Late summer the apple barns open as they have fruit to sell. The “official” start of Apple Season is Labor Day weekend, but Mother Nature is in charge of ripening dates as well as blossoming dates, and guests who wait until October can miss out on pears and the early-ripening apples. September is a time for the warm smells of sunshine, just-picked fruit and peach cobbler. The “You Pick” ranches are quite small, so September can offer more to choose from before they are picked out.

Discover FALL Apple Season brings scents that may be more familiar to most of our visitors, but guests, who come only in October, are denying themselves the pleasures carried through the air during the eleven other months. Everyone knows the delights that are on the menu as they smell pies in the oven, creamy caramel being whisked to coat crisp apples, the pulp of the cider mills, the dampness of wet wine barrels. Older guests may be transported to the time they or their grandparents created the same smells in the kitchen or basement, and younger guests suddenly feel the urge to find out just how to recreate those smells at home.

apple cider The flavorful apples grown at the Apple Hill Farms make for exceptionally great Cider and Hard Cider. Taste your way through on your next visit!
