Apple Hill™ Through the Decades By David Bolster
50 Years Ago … The Beatles were taking America by storm, and the first Ford Mustang was rolling off the assembly line. The year was 1964, and in Camino, CA, apple and pear farmers were in a desperate fight for survival. While the pear industry was decimated by a disease called Pear Decline, apple growers grappled with the challenge of paltry returns for their fruit. From these desperate times spawned the idea to bring the public to their farms, and in July of 1964, the Apple Hill Growers Association was born. In his article in the fall of ’64, Henry Schacht of the San Francisco Chronicle called it “The Brave Try of Apple Hill.” 40 Years Ago By the early 1970s America had won the race to the moon, and the intrepid group of Camino farmers were discovering the public was falling in love with Apple Hill. Modeled after a festival in Ohio, the Apple Hill Growers held their first Apple Hill Smorgasbord in 1966, and by the early ’70s, were overwhelmed by the response. With the public clamoring for apple desserts beyond just the two weekends of the “Smorgy,” bake shops sprang up throughout the ‘Hill. 30 Years Ago The 1980s and early ’90s brought the end of the Cold War, a technology revolution that changed the world, and for the Apple Hill Growers, a revolution in the form of a new winery industry, the Fuji apple boom, and the introduction of new crops to the area, such as blueberries. 15 Years Ago The 21st century has brought us the age of social media and dramatic changes in how we buy and consume our food. The Apple Hill Growers have been leaders in the “locavore,” pick your own, and farm-to-fork movements that are now prevalent today. Consumers today want to know where and how their food is grown, and want to buy it locally whenever possible. Our Growers offer our visitors the opportunity to do just that. The essence of Apple Hill is the experience of visiting our family farms and wineries together with family and friends. A History of Conservation By Kirk Taylor
Water Conservancy
has been of utmost importance
to the Apple Hill™ Growers for 40 years! We realized early on that wasting water can have a negative impact on both the availability of water for area residents and the cost of water for everyone. The irrigation water used by Apple Hill™ Growers comes out of the Sly Park reservoir in Pollock Pines. During the drought of the mid-1970s this reservoir was nearly emptied. The federal government owned Sly Park and demanded that the major water users (agriculture) become most efficient in their water use. Richard Bethell, an Apple Hill™ Founder and El Dorado County U.C. Cooperative Extension advisor, obtained a 3-year grant to study ways to increase agriculture water efficiency. This study involved participation by the federal, state, and county governments as well as the University of California and local growers. The study investigated how water was being utilized on the farm and how to improve applications. They studied 1) when growers irrigated, 2) the systems used to apply the water and 3) system maintenance and reliability. The study results found that growers irrigated on a 10 to 14 day schedule regardless of weather conditions. Further, the irrigation systems were such that less than 50% of the water coming out of the sprinklers was actually getting into the crop root zone. A program was developed that corrected these problems. The Irrigation Management Service (IMS) monitors soil moisture levels once a week during the irrigation season. IMS uses this information with local weather conditions to predict site specific irrigation events. The service also utilizes site specific irrigation system information to tell growers how long to run a particular system to only replace the depleted soil moisture. An analysis of the IMS program in 1986 demonstrated that this service saved more than 2,400 acre feet (782 million gallons) of water over 2,500 irrigated acres. This was accomplished by eliminating two irrigation events per season when using local weather information as opposed to calendar scheduled events. Also, the irrigation system improvements increased water delivery effects from less than 50% to greater than 80%. As an Apple Hill™ grower (Smokey Ridge #133) and water management specialist, I along with other Apple Hill™ growers, understand that water savings in the orchards benefit everyone. We are deeply committed to improving water use efficiency as technology and water delivery systems improve. 10 applehill.com

We began life as a family-run apple stand some 38 years ago. One day, our friends at Raley's asked if we could make fresh cider for their fine stores. "No problem," we said. So we borrowed a neighbor's cider press and put the kids to work … topping off bottles by hand and delivering ice-covered juice on the back of a rickety old flatbed. My how things have changed! Today, our grandkids help craft our extraordinary ciders, juices, and blends right here on our Apple Hill farm for folks all across the country.

Joan Delfino’s Quick Guide to Apples With so many apples to choose from it can be a little overwhelming choosing the perfect apple for your needs. This timeless guide includes many common varieties and was created several years ago by an Apple Hill™ matriarch. It’s a great guide to use when you’re not sure which apple to pick. We have a handy ripening schedule on applehill.com so you’ll know what’s available. Golden Delicious: My pick for best all around apple. This apple is great for pies because there is little need to add much sugar. The slices keep their shape, and will not mush down. Makes great applesauce without sugar. This apple will keep in a cool place for months. Rome Beauty: For baked apples, the Rome is the one. If grown in the valley, the flavor is very bland. However, grown in the foothills, the Rome has a sweet tanginess that is hard to beat. Rome apples are big, red and round and when baked they retain their shape but cook to a softness that is perfect for a baked apple. Empire: This hybrid of a McIntosh and Red Delicious is a great eating apple. Because it is part McIntosh, it is okay to bake. Gala: A beautiful apple. With its gold and orange stripes, and its perfect shape, the Gala is a winner. I would not bake with a Gala, however. I would make salads, eat it fresh, and even make applesauce with it. Granny Smith: A great tart, crisp apple. Many pie bakers swear by this apple. In our bakery, we usually switch from Golden Delicious to Grannys around the first of November, mainly because they peel easier at that time of year. However, we do add more sugar to our pies and applesauce with Granny Smith apples. The Granny makes a nice Waldorf salad with the addition of chunk pineapple to offset the tartness.

Fuji: The Fuji, originating in Japan, grows well in Apple Hill. It is large and round and has stripes similar to the Gala. The longer a Fuji is on the tree the sweeter it becomes. Because the Fuji is the “current trend” apple, the supply usually doesn’t meet the demand, and it’s a little more expensive. McIntosh: An old variety. Many of our customers want McIntosh apples because that’s the apple they think of when they think of home. The McIntosh is harvested early, and if kept in the fridge, will stay snappy and tart for months. Gravenstein: This apple is very early, hence not in abundance when people generally visit Apple Hill. However, there are several growers who grow the Gravenstein, and they are in demand for applesauce and pie baking. Gravenstein apples are tart, with a sweet tang, a very good applesauce and apple butter apple. Mutsu: A large Asian apple. Good for eating.
Winesap: A very old variety. The Winesap apple is a keeper. Hard and crisp, with a sweet/tart quality. It is dark red with gold highlights; round, and of medium size. Arkansas Black: An old variety and a favorite of transplanted eastern and southern visitors. A very hard apple, picked very late, a good keeper. Braeburn: An oblong apple, red with gold shadings. Off-white meat, crisp and juicy. Good for eating.
Pink Lady: A great eating apple.

• Brush the dough with the melted butter. • Starting about 6 inches from the bottom edge of the dough, spread the apple mixture evenly across the dough in a column. • Sprinkle the Streusel/nut mixture on top of the apples. • Use the sides of the cloth or your finger to lift the bottom edge of the dough and flip it over the apples. Tuck the ends of the dough under. • Brush the top with the remaining butter and use a sharp knife to cut a few steam vents in the dough. • Bake for 35 minutes or until the filling bubbles through the vents. If the outer edges brown faster than the middle, cover them loosely with foil. Remove the pan to a wire rack and allow the strudel to cool until warm. • Sprinkle with powered sugar, if desired. Cut into 2-inch pieces on the bias. • Store at room temperature, up to 2 days (Best if eaten the day of baking)

Equipment: • A 36 inch wide table, covered with a clean sheet or tablecloth rubbed with a little flour. • 12 inch cookie sheet buttered.
Fill and roll the strudel: • Place the dough flat on the tablecloth.
Make the Streusel: 1/3 cup brown sugar 2 tablespoons granulated sugar 1 cup walnut or pecan halves 1 ½ teaspoons cinnamon 1 cup all-purpose flour 6 tablespoons unsalted butter 1 ½ teaspoons vanilla extract 1/8 teaspoon salt • In food processor fitted with metal blade, pulse together the sugars, nuts, cinnamon until the nuts are coarsely chopped. Add the flour, butter, vanilla, and salt and pulse until the mixture is coarse and crumbly.
Ingredients: 1 package frozen puff pastry sheets, use one of the 2 - 10”x10” sheets. 8 tablespoons melted unsalted butter 1/3 cup raisins (or dried cranberries) 3 medium Golden Delicious Apple Hill™ apples, peeled, cored and chopped
1 ½ teaspoons lemon juice 2 tablespoons sugar 1/4 teaspoon cinnamon 1/8 teaspoon nutmeg 1/8 teaspoon salt Streusel Optional: powered sugar for dusting
Make the filling: • In a large bowl combine apples, raisins, lemon juice, sugar, cinnamon, nutmeg, salt and toss to mix
Makes 1 - 10” strudel. Each strudel servers 6 Preparation time: 20 - 30 min. Preheat oven to 400° at least 20 min. before baking

At an Apple Hill™ Farm, get ready to introduce your children to families who farm for a living and each kid grows up knowing that the family farm is more than a place to live, but is truly a way of life. Summer jobs are found right there on the farm and carry on into fall. The fruit you eat is the same fruit that the farmer feeds his own family—you know it’s healthy! Dusty paths lead down to where the berries grow and red and purple stained fingers are the norm. Visitors run feverishly to the pumpkin patches seeking out the biggest or the best giant gourd they can find. Those who have harvested on the “Hill” in the past know that bringing the Radio Flyer wagon along for the trek is always a good idea. By days end you will have filled it with cider, pies, produce, crafts and possibly a worn out child or two. If you haven’t experienced a day or spent a weekend among the Apple Hill™ farms, you need to know that there are over 50 farms offering a variety of activities, produce, wines, micro-brews, and hand-made crafts. Tree canopied side roads will lead you to off-the-beaten-path farms that are known for their baked goods, their jams and jellies, hay or pony rides, fishing, pie eating contests and kids’ activities or you-pick fruits. Each farm has special activities that may include barbeques and tastings, a nature trail, live music or their dine-in or alfresco lunch offerings. In late spring, you-pick berries bring visitors from nearby cities and towns. By fall, there are festivals and seasonal celebrations all along the Apple Hill™ map. 2014 is the Apple Hill™ Growers’ 50th anniversary year and that tells you something about the kind of experience you’ll have if you spend a day or two visiting the Apple Hill™ Farms.
