The Appenzellerland offers a surprising amount of variety. Located between Lake Constance and the Alpstein massif, the lovely scenery of rolling hills, pastures, scattered settlements and views of the lake invite you to take unforgettable journeys of discovery. Just see for yourself. The Appenzellerland consists of two halfcantons: Appenzell Ausserrhoden and Appenzell Innerrhoden. Geographically, the area is divided into four regions: Foreland, Midland, Hinterland and the Interior, which is part of Appenzell Innerrhoden. In 1597 Appenzell was split in two, due to two different religions. Even today, the Catholic Innerrhoden and the Protestant Ausserrhoden maintain subtle cultural differences. Important to both, however, is their love of their common traditions, which are still lived today just as vividly and authentically as in times past. Where customs are still part of daily life The calendar sets the pace of Appenzell life – to this day. The «Alpfahrt» cattle drives ascending to the alpine pastures start in mid-May, with the herdsmen dressed in their traditional festive costumes. During summertime the locals are off to the «Stobete», the merry herdsmen’s festival featuring a string music ensemble. And in the autumn, following the colourful and merry procession back down from the high pastures, the most beautiful cows are crowned at the cattle shows. � 14 �
«Alpfahrt» cattle drives For many farming families the most beautiful day of the year is when they «öberefahren», or drive their herds in May or June up to their alpine pastures at the foot of the Alpstein massif. The goats take the lead, followed by cows, steers, calves and herdsmen in their folk dress. Bringing up the rear is the farmer with his «Bläss», the Appenzeller cattle-dog. From far and wide, the ringing of the bells, the lowing of the herd and the yodelling accompaniment echo through the valleys. The animals spend eight to ten weeks on the mountainside and then return to the valley. Both the ascent and descent are unforgettable pageants.
IONS T I D A R T R E V O C S DI AS IN A S A L I V E T O DA Y E S TIM GRANDFATHER’S Cattle shows Beauty contests – of a different sort. In the autumn, the Ausserrhoden communities put on cattle shows to crown the most beautiful and productive cows. A highlight of the year for the farmers and herdsmen. Usually they appear in folk costumes, proudly line up their animals – and enjoy the collective «Abloo» or bell ringing and yodelling. An event of quaint charm that attracts a large audience and enchants visitors. Stobeten «Alpstobete» is a tradition from days long past. At that time, herdsmen used to visit one another in summer while their herds were up in the mountains, sitting together «i de Stobe», or in the parlour. Still today, during July and August the locals meet up at the moun-
tain inns for the «Stobete». The string music ensemble strikes up a merry tune, the herdsmen perform the «Mölirad», or Mill Wheel Dance, and a couple clad in colourful traditional costumes dances the «Hierig», or Mime Dance. Exhilarating moments to which visitors are also cordially invited

Winter customs – as colourful as the Appenzellerland The «Silvesterchlausen» is one of the most impressive winter traditions in the Appenzellerland. On the last day of the year as well as on the 13th of January, men and boys wearing rustic masks go from door to door to wish everyone a good year. But the carnival season also harbours something intriguing. The «Bloch» is part of it. An inside tip, not only for «Fasnächtler», or those celebrating carnival.

Silvesterchlausen In the Appenzellerland, the new year is celebrated twice. On the 31st of December, following the Gregorian calendar, in Urnäsch, Herisau, Waldstatt, Hundwil, Stein, Schwellbrunn, Schönengrund and Teufen. And, according to the Julian calendar, on the 13th of January in Urnäsch und Waldstatt. This is when the mummers’ processions, or «Silvesterchlausen», are under way. A distinction is made between «schöne Chläus», beautiful figures, «wüeschti Chläus», ugly ones, and «Naturchläus», woodland and nature figures. The beautiful characters wear ornate headgear with scenes from peasant life, lovingly crafted by hand in hundreds of leisure-time hours. The ugly and woodland or nature figures captivate by sporting elaborate, wildly decorated hats, bonnets and masks. From early in the morning, the New Year’s mummers make their way from house to house with devotional chanting and elated «Zäuerli», or yodelling, wishing everyone «es guets Neus», a Happy New Year. In the evening
they frequent the inns until midnight. An insider tip: If you’d like to be present in the evening, you should reserve a table at one of the inns. By the way: When the 13th of January or 31st of December falls on a Sunday, the processions take place on the preceding Saturday. Bloch The Urnäscher Bloch is under way every other year on Carnival Monday. In Hundwil, Stein, Schwellbrunn and more recently also in Herisau, the Bloch, or tree trunk, is hauled on a decorated float through the neighbouring villages on Bloch Monday (the Monday after Ash Wednesday), accompanied by whip cracking and a brass band. Its origins: lumberjacks used to receive a tree trunk as a token of appreciation. The procession consists of men (in Urnäsch and Herisau) or boys whose costumes depict professions that have to do with timber.

On Fridays by appointment only, «Rollen», or bell, blacksmith Peter Preisig gives you a glimpse of this rare craft. Following these exceptional impressions, you will indulge in an «Apéro», or appetizer, in his workshop and then travel to Urnäsch for lunch. In the afternoon you will learn about the «Silvesterchlausen» New Year’s mummer processions at the Appenzeller Brauchtumsmuseum (Museum of Appenzeller Customs). Insider tips for gourmets If you value regional products and close-to-nature production processes, the Appenzellerland is the place for you. You’ll find here a wide range of domestic products for quenching «Hunger ond Dorscht». The most famous of them all is Appenzeller cheese, which gets its unique tangy flavour from a secret herbal brine. In the village of Stein and on the Schwägalp mountainsides, you can learn all about how the cheese is made. When it comes to meat, the Siedwurst boiled sausage and the Pantli smoked sausage stand out, as does the Mostbröckli, a piece of raw meat cured in a seasoning mix and then smoked and dried. In Gonten, mineral-rich water is pumped and bottled as is or
with added flavouring. Crystal-clear spring water from the Alpstein massif makes Appenzeller beer a one-of-a-kind treat. A secret combination of spices, honey and almond filling are the ingredients for the Appenzeller Biber cake on offer at many local bakeries. And to round off a congenial evening there’s nothing like an Appenzeller Alpenbitter, which gets its typical flavour from no less than 42 different herbs.

A tempting regional treat: Biberfladen Parfait
Preparation time: about 20 min. freezer time: about 6 hours
Ingredients for 4 servings: 1 vanilla bean 2 fresh egg yolks 2 tablespoons sugar 50 g Appenzeller Biber ½ tablespoon gingerbread spice 1 tablespoon cocoa powder 50 ml Appenzeller Alpenbitter 100 ml heavy cream 2 fresh egg whites pinch of salt 1 tablespoon sugar crumbled Appenzeller Biber as garnish peppermint leaves as garnish
Preparation: Cut into the vanilla bean lengthwise and scrape out the seeds. Use an electric mixer to mix egg yolks, sugar and vanilla seeds until the mixture becomes pale. Finely grate the Biber cake and stir into the egg mixture along with the gingerbread spice, cocoa powder and Appenzeller Alpenbitter. Whip the cream until stiff. Whip the egg whites with salt until stiff, add the sugar and continue beating briefly until shiny. Fold the whipped egg whites and whipped cream into the mixture and immediately pour into a loaf pan (approx. 20 cm long) lined with cling film. Cover and freeze for approx. 6 hours. Cut parfait into slices, garnish, and serve immediately.

Where music makes hearts dance Rousing, uplifting, buoyant. Appenzellers and their music exude a zest for life that’s contagious. A musical excursion to the land of high spirits is always a joy.

Original Appenzeller music for strings delights audiences on a variety of occasions, whether dances or concerts. A hammered dulcimer, two violins, a cello and a bass make up an authentic string ensemble. Typical for the local string music are «schlääzige» melodies that make it nearly irresistible to get up and dance. Other instruments sometimes join the original ensemble – for example a hand organ might replace the cello and second violin. Bands featuring a piano are not uncommon either. But the undisputed star of Appenzeller
folk music is the hammered dulcimer. The trapezoidal wooden sounding board with 125 strings is played with two mallets known as «Ruten». Another typical element of Appenzeller folk music is natural yodelling, known as «Zäuerli» in the canton of Ausserrhoden and «Ruggusserli» in Innerrhoden. natural yodelling is wordless singing with one or several voices. The solo yodeller begins a slow sequence of notes and then the other yodellers chime in or hum the melody.

With wood, feeling and passion The Appenzellerland has many a surprise in store for you. For example, professions that no longer exist. The white cooper Hans Reifler is still at work today producing items from local wood that beguile with their simple beauty. The best thing about it is that you have a chance to watch the master at work.

Hans Reifler’s workshop is pervaded by the pleasant smell of freshly worked wood. Sawn blanks, small boards and unfinished pieces are scattered all around. In their midst stands Hans Reifler, who has been directing the white cooperage here since 1992 as the third generation in the family business, showing great dedication and a love of the age-old craft. Through the window, the landscape of the Appenzell Hinterland spreads out below the Hundwilerhöhi mountain.
«We work with pale maple and fir wood that we purchase ourselves, have processed at the sawmill and then let dry,» says Hans Reifler. In his workshop, the white cooper then cuts the fir wood into pieces sized according to the intended purpose. He skilfully glues the individual elements together and shapes them into oval or round pieces. Processing on the lathe gives the objects their velvety surface. The vessels are held together by wooden hoops made of maple wood. In the early days, the white coopers mainly produced working implements for dairy farming and cheese production. «But that was long ago. Today, we mostly make everyday household items or gifts for weddings, birthdays or anniversaries of all kinds», says Hans Reifler. The broad product range can be seen in the store adjacent to the workshop: umbrella stands, champagne buckets, pepper mills, cheese platters, Appenzell milk pails in different sizes, CD racks, jewellery boxes and serving

You begin the day in Rorschach and take the mountain railway to the Biedermeier village of Heiden. On your tour of the village, you’ll learn some impressive facts about the once world-renowned spa town. For example, Red Cross founder Henry Dunant spent his last years here. You then board the Post Bus to continue through the Appenzell hills to Trogen. At the visitors’ centre in the Pestalozzi Children’s Village you will discover how some 300,000 children and young people worldwide receive support each year. The Appenzell railway will then take you to St.Gallen, where you will visit the Abbey precinct (a UNESCO World Heritage Site).

The tour starts in Urnäsch, where you can immerse yourself in the living traditions of the region at the Museum of Appenzell Customs. Interesting insights into the production of the world-famous Appenzeller cheese are guaranteed on an afternoon visit to the demonstration cheese dairy in Stein. Four-legged friend with character: The Appenzeller Bläss Anyone roaming through the Appenzellerland will meet up with him at almost every farm. Bläss, the locals call him affectionately. But visitors might at first be wary of the Appenzeller Sennenhund cattle dog. «Initially, he is slightly suspicious of strangers,» say breeders Ursula and Köbi Müller. But he is a friend you can depend on. Learn more about the Appenzellerland’s unofficial heraldic animal. � 38 �
On the gently sloping lawn in front of the Müller family’s farmhouse, young dogs of the Appenzeller Sennenhund breed are frolicking in two large enclosures. The puppies obvious feel happy here. Their mother, «Mira from Stein in Appenzell», and their father, «Kuno from Tüfibach», watch from a distance. Ursula and Köbi Müller stand in the doorway, evidently proud of their pets.
«The puppies live at the farm with us for about ten weeks after their birth, and then they go to their new owners,» says Köbi Müller. These first weeks are crucial for the animals’ later behaviour, Ursula Müller reveals. That’s why it’s so important for the dogs to become accustomed early on to people and cows as well as cars and tractors. So she takes the young dogs with her into the village and lets them run around free on the farm for extended periods. But it’s their mother that exerts the greatest influence on the puppies. This means she has to be particularly well-trained. «The pure-bred Bläss is not a wildly yapping farmyard dog, like some people think. It is a highly sensitive animal that needs people but that gives so much back», the Müllers point out. «By breeding these dogs, we want to help keep it that way».

Breeding Appenzeller Sennenhund dogs is a beloved pastime they have been pursuing for over 15 years. Köbi Müller is also a member of the breeding commission dedicated to the preservation of the «Blässli». Ursula and Köbi are gratified to note that demand for the dogs is on the rise. And not only in the Appenzellerland.
