GOLD SEAL SOCKEYE SALMON AND POTATO CAKES INGREDIENTS

DIRECTIONS

3 cans (510g) Gold Seal Sockeye Salmon, skinless boneless

Lightly pound coriander seeds in a mortar or crush them slightly. Set aside.

1 tbsp coriander seeds

Beat an egg in a small bowl.

1 egg A little over 1/2 lb russet potatoes, boiled and mashed 3 tbsp all purpose flour 1/3 cup finely chopped onions

Then combine all the ingredients except the oil in a large mixing bowl. Thoroughly mix and make round cakes about 2 inches in diameter and 1-inch thick and set aside to come to room temperature.

Heat the oil in a shallow frying pan on medium to high heat, put in the cakes and get to crisp on both sides. They should have a nice brown colour to them.

3 tbsp cilantro

CHEF’S TIPS

2 tbsp garam masala

Salt must be enough to bring out the flavours of the spices. Do not just use a pinch, it takes more.

1/2 tsp ajwain seeds salt to taste canola oil or a nice non stick pan for frying

RECIPES USING GOLD

Serve them with a nice Tartare sauce or any Chutney you might have in the kitchen. Try to use local fruit chutneys.

SEAL SOCKEYE SALMON, SKINLESS BONELESS

GOLD SEAL TUNA CUTLETS INGREDIENTS

DIRECTIONS

1 can (120g) Gold Seal No Drain Flaked Light Tuna

Boil, peel and grate potatoes, set aside.

1 lb potatoes

In a large bowl combine potatoes, Gold Seal No Drain Flaked Light Tuna, salt, lemon, green chili, coriander, onion, garam masala, ginger and garlic.

1 tbsp white flour 2 eggs

Beat eggs with flour, set aside.

1 tsp salt

Divide mixture into 12 portions and shape into patties.

1/2 tsp garam masala

Coat the patties with bread crumbs, dip into the egg mixture.

3 tbsp lemon juice

Fry both sides in a shallow pan until light brown.

1 tsp green chili – crushed

Place on absorbent paper.

1/4 cup coriander leaves – finely chopped

CHEF’S TIPS

1/2 cup onions – finely chopped 1/2 tsp garlic – crushed

Serve hot, with your favourite chutney or a dipping Tartare sauce.

Makes: 12 patties

SEAL NO DRAIN FLAKED LIGHT TUNA

GOLD SEAL PINK SALMON IN POMEGRANATE CURRY INGREDIENTS

DIRECTIONS

4 to 5 cans Gold Seal Pink Salmon, skinless boneless open the cans and drain any excess liquid 1/2 cup ghee or cooking oil 3 cups finely chopped red onions 1 tbsp cumin seeds 1 tsp turmeric

In a large sauce pan, heat the oil and sauté the onions until nice and golden brown, please spend the time in sautéing the onions really well. Add some cumin seeds, once the onions are nice and brown.

Then add the turmeric but reduce the heat to low to medium, add the salt and cayenne. Stir and sauté for approx. 1 min, then add jalapeno pepper, ginger and sauté some more.

Once the mixture is made, add the pomegranate juice to simply deglaze the pan and cook it down till it’s the consistency of a light sauce.

1 1/2 tsp salt 1 tsp ground cayenne pepper 1 tbsp chopped jalapeno pepper or green chili (should not be overly spicy) 1 tbsp finely chopped ginger 1/2 cup pomegranate juice

Add the Gold Seal Pink Salmon and lightly fold it into the sauce, do not stir too hard, let the salmon be coated with the juices and spices.

Remove from heat and add the cilantro and serve as a delicious dip or just with crackers. This does not have to be served hot.

SEAL PINK SALMON, SKINLESS BONELESS

GOLD SEAL TUNA, MUSSELS, AND BABY CARROTS IN TOMATO LIGHT CREAM CURRY DIRECTIONS

INGREDIENTS 2 cans Gold Seal No Drain Flaked Light Tuna 2.5 cups vegetable broth 4 cups water 1 oz ginger, in thin silvers 1 oz garlic, in thin slivers 1 small jalapeno pepper 1 tbsp black mustard seeds 1 tbsp salt

Combine the vegetable broth, water, ginger, garlic, jalapeno pepper, mustard seeds, salt, turmeric, paprika, and cinnamon in a large pot and stir well.

Place on medium heat and bring to a boil. Reduce the heat to low, but not to simmer. Cook curry, uncovered for 45 minutes, stirring occasionally. As it cooks, the smell of cinnamon should become stronger.

Turn off the heat and allow curry to cool slightly for about 10 minutes.

Turn on the heat to medium and add the whipping cream.

Taste the teaspoon of curry and add salt to your taste, it should not be too salty but definitely have salt to enhance the flavor of the spices.

Remove from heat and set aside.

Wash mussels thoroughly and with a paring knife, scrape off any grit and grime on the shell.

Return curry to a boil on medium heat, then reduce heat to medium low and add Tuna, gently stir and cook for 1 minute.

Add mussels, Gold Seal No Drain Flaked Light Tuna, baby carrots and tomatoes. Stir gently and cover and cook for approximately 2 to 3 minutes.

1/2 tsp turmeric 1/2 tsp paprika 1.5 inch stick of cinnamon 1/2 cup whipping cream

Immediately remove the lid and turn off the heat. The mussel should be open and the Gold Seal No Drain Flaked Light Tuna should be cooked.

2 finely chopped ripe tomatoes

Fresh mussels can be substituted with 2 cans of Ocean’s Baby Clams, open the can and drain any excess liquid.

GOLD SEAL LIGHT TUNA COCONUT CILANTRO SPOONS INGREDIENTS

DIRECTIONS

2 cans Gold Seal No Drain Flaked Light Tuna 3/4 tsp salt 1 tbsp fennel seeds 2 tsp panch phoron (Bengali spice mixture)

In a nice bowl, mix all ingredients, it should almost be like a coleslaw, let it sit in the fridge for over an hour, so that the spice and the juices get a chance to marinate themselves.

Serve the mixture on a crostini or a toast point as an appetizer or on a small spoon to be passed around.

SEAL NO DRAIN FLAKED LIGHT TUNA

GOLD SEAL PINK SALMON IN SWEET CORN COCONUT SOUP INGREDIENTS

DIRECTIONS

2 cans Gold Seal Pink Salmon, skinless boneless drained and set aside 3/4 cup sticky rice, soaked over night 3 corn cobs, kernels removed from the cob 3 to 4 curry leaves 3/4 cup coconut milk 1/2 tsp salt

Drain and rinse the rice under cold water until the water runs clear.

Put the rice and curry leaves into a pot with 2 cups cold water and stir. Cover the pot with a lid, place over a gentle heat and cook for 15 minutes.

Meanwhile, break up the corn kernels into small pieces either in a mortar or food processor.

Remove the lid from the pot, stir the corn, coconut milk, salt and sugar, cumin seeds, garam masala and the Gold Seal Pink Salmon and cook till the rice is cooked through.

Serve it warm.

SEAL PINK SALMON, SKINLESS BONELESS

SAUMON ROSE GOLD SEAL DANS UNE SOUPE DE LAIT DE COCO ET DE MAÏS SUCRÉ INGRÉDIENTS

DIRECTIVES

2 boîtes de saumon rose Gold Seal, sans peau ni arêtes, égoutté et réservé 3/4 de tasse de riz collant, trempé toute une nuit 3 épis de maïs, les grains retirés de l’épi 3 à 4 feuilles de curry

Rincer et égoutter le riz sous l’eau froide jusqu’à ce que l’eau soit claire.

Mettre le riz et les feuilles de curry dans une casserole, ajouter 2 tasses d’eau froide et remuer.

Mettre le couvercle sur la casserole et cuire 15 minutes à feu doux.

Entretemps, briser les grains de maïs en petites pièces soit dans un mortier ou un robot culinaire.

1/2 c. à thé de sel

Retirer le couvercle de la casserole, ajouter le maïs, le lait de coco, le sel et le sucre, les graines de cumin, le garam masala et le saumon rose Gold Seal et cuire jusqu’à ce que le riz soit cuit.

1/3 de tasse de sucre

Servir chaud.

3/4 de tasse de lait de coco

1 c. à table de graines de cumin grillées

ROSE GOLD SEAL, SANS PEAU NI ARÊTES, ÉGOUTTÉ

CUILLÈRES DE THON PÂLE GOLD SEAL, CORIANDRE ET LAIT DE COCO INGRÉDIENTS

DIRECTIVES

2 boîtes de Thon pâle émietté sans égouttage Gold Seal 3/4 c. à thé de sel 1 c. à table de graines de fenouil 2 c. à thé de panch phoran (mélange d’épices du Bengale)

Dans un joli bol, mélanger tous les ingrédients, comme une texture de salade de chou, laisser une (1) heure au frigo pour que les épices et les jus puissent mariner ensemble.

Servir le mélange sur un crostini ou sur une pointe de pain grillé comme amuse-gueule ou dans des petites cuillères à faire circuler.

1 c. à thé de gingembre haché

PÂLE ÉMIETTÉ SANS ÉGOUTTAGE GOLD SEAL

THON GOLD SEAL, MOULES ET MINI-CAROTTES DANS UN CURRY CRÉMEUX ET LÉGER AUX TOMATES DIRECTIVES

INGRÉDIENTS 2 boîtes de Thon pâle émietté sans égouttage Gold Seal 2.5 tasses de bouillon de légumes 4 tasses d’eau 1 oz de gingembre en tranches fines 1 oz d’ail, en tranches fines 1 petit piment jalapeňo 1 c. à table de graines de moutarde noires 1 c. à table de sel 1/2 c. à thé de curcuma 1/2 c. à thé de paprika 1.5 po d’un bâton de cannelle 1/2 tasse de crème fouettée 30 moules

Incorporer le bouillon de légumes, l’eau, le gingembre, l’ail, le piment jalapeňo, les graines de moutarde, le sel, le curcuma, le paprika et la cannelle dans une grande casserole et bien remuer. À feu moyen, porter le mélange à ébullition. Réduire à feu doux, mais pas à petit feu (mijoter).Cuire le curry, sans couvercle pendant 45 minutes en le remuant de temps en temps. Au fur et à mesure qu’il cuit, l’arôme de cannelle devrait s’intensifier.

Fermer le feu et laisser refroidir légèrement le curry pendant environ 10 minutes.

Remettre à feu moyen et ajouter la crème à fouetter. Goûter une c. à thé de curry et ajouter du sel au goût; ne pas trop saler mais ajouter définitivement plus de sel pour rehausser la saveur des épices.

Retirer du feu et réserver.

Laver les moules à fond et avec un couteau d’office, brosser et gratter le sable et la saleté sur les coquilles.

Amener le curry à ébullition à feu moyen, puis réduire à feu moyen-doux et ajouter le thon, remuer délicatement et cuire encore 1 minute. Ajouter les moules, le thon pâle émietté sans égouttage Gold Seal, les mini-carottes et les tomates.Remuer délicatement et couvrir. Cuire environ 2 à 3 minutes.

Puis enlever immédiatement le couvercle et fermer le feu.

Les moules doivent être ouvertes et le thon pâle émietté sans égouttage Gold Seal réchauffé.

CONSEILS DU CHEF Des moules fraîches peuvent être substituées avec 2 boîtes de petites palourdes en conserve d’Ocean’s. Ouvrir les boîtes de conserve et égoutter l’excédent de liquide.

SAUMON ROSE GOLD SEAL DANS UN CURRY À LA GRENADE INGRÉDIENTS

DIRECTIVES

4 à 5 boîtes de saumon rose sans peau ni arêtes Gold Seal. Ouvrir les boîtes et égoutter tout excédent de liquide 1/2 tasse de ghee ou huile de cuisson 3 tasses d’oignons rouges hachés finement 1 c. à table de graines de cumin 1 c. à thé de curcuma 1 1/2 c. à thé de sel 1 c. à thé de poivre de Cayenne moulu 1 c. à table de piment jalapeňo haché ou piment vert (ne doit pas être trop épicé) 1 c. à table de gingembre haché finement 1/2 tasse de jus de grenade

Dans une grande casserole, chauffer l’huile et faire sauter les oignons jusqu’à ce qu’ils soient bien dorés, veuillez prendre le temps de bien les sauter.Ajouter quelques graines de cumin, une fois que les oignons sont dorés.

Puis ajouter le curcuma tout en réduisant le feu à doux-moyen, ajouter le sel et le poivre de Cayenne.

Remuer et faire sauter pendant environ 1 minute, puis ajouter le piment jalapeňo, le gingembre et faire sauter encore un peu.

Dès que le mélange est créé, ajouter le jus de grenade pour simplement déglacer la casserole et cuire jusqu’à consistance de sauce légère.

Ajouter le saumon rose Gold Seal et l’incorporer délicatement dans la sauce, éviter de trop brasser, laisser le saumon s’enrober des jus et des épices.

Retirer du feu et ajouter de la coriandre et servir en tant que trempette délicieuse ou juste avec des crackers. Cette recette n’a pas à être servie chaude.

CROQUETTES DE THON GOLD SEAL INGRÉDIENTS

DIRECTIVES

1 boîte (120 g) de thon pâle émietté sans égouttage Gold Seal

Bouillir, peler et râper les pommes de terre, réserver.

1 lb de pommes de terre

Dans un grand bol, incorporer les pommes de terre, le thon pâle émietté sans égouttage Gold Seal, le sel, le citron, le piment vert, la coriandre, l’oignon, le garam marsala, le gingembre et l’ail.

1 c. à table de farine blanche 2 oeufs 1 c. à thé de sel 1/2 c. à thé de garam masala 3 c. à table de jus de citron 1 c. à thé de piment vert - écrasé 1/4 de tasse de feuilles de coriandre - hachées finement

Battre les œufs avec la farine, réserver.

Répartir le mélange en 12 portions et façonner en croquettes.

Enrober chaque croquette de chapelure, tremper dans le mélange d’œuf.

Frire les deux côtés des croquettes dans une casserole peu profonde jusqu’à ce qu’elles soient dorées.

Les déposer sur un papier absorbant.

1/2 tasse d’oignons – hachés finement

Servir chaud, avec votre chutney favori ou une trempette sauce tartare.

GALETTES DE POMMES DE TERRE ET SAUMON ROUGE GOLD SEAL INGRÉDIENTS

DIRECTIVES

3 boîtes (510 g) de saumon rouge Gold Seal, sans peau ni arêtes

Broyer légèrement des graines de coriandre dans un mortier ou les écraser légèrement. Réserver.

1 c. à table de graines de coriandre

Dans un petit bol, battre un œuf.

1 oeuf

Dans un grand bol à mélanger, incorporer tous les ingrédients sauf l’huile.

Un peu plus de 1/2 lb pommes de terre à chair jaune bouillies puis en purée 3 c. à table de farine tout usage

Bien mélanger et façonner des galettes rondes d’environ 2 pouces de diamètre et 1 pouce d’épaisseur. Réserver pour atteindre la température ambiante.

3 c. à table de coriandre

Chauffer l’huile dans un poêle à frire peu profonde à feu moyen-élevé, déposer les galettes et rendre croustillant les deux côtés des galettes jusqu’à ce qu’elles soient bien dorées.

2 c. à table de garam masala

CONSEILS DU CHEF

1/2 c. à thé de graines ajwain

Ajouter du sel juste assez pour rehausser les saveurs des épices. N’ajoutez pas seulement une pincée, il en faut un peu plus.

1/3 de tasse d’oignons hachés finement

sel au goût huile de canola ou une poêle à frire antiadhésive

Les servir avec une belle sauce tartare ou un Chutney quelconque que vous avez sous la main. Essayez d’utiliser des chutneys de fruits locaux.
