Revenge Is In The Air Retribution drives upcoming season of Billions

I

n a day and age of consumerism and major wealth disparity, Billions serves as the kind of series that holds a mirror up to the excesses of Wall Street and the one percent. Centered on the legal battles waged between rogue hedge fund managers and federal prosecutors, the Showtime drama stars Damian Lewis (Homeland), Paul Giamatti (John Adams; Sideways; Straight Outta Compton) and Maggie Siff (Mad Men; Sons of Anarchy).

The three respectively play Charles “Chuck” Rhoades, Jr. (a U.S. Attorney for the Southern District of New York), Robert “Bobby” Axelrod, the billionaire manager of the Axe Capital hedge fund and Dr. Wendy Rhoades, wife of Chuck and in-house performance coach at Axe Capital.

When the series completed its third season, newly appointed U.S. Attorney General Waylon “Jock” Jeffcoat (veteran character actor Clancy Brown) ousted Rhoades while former Axelrod protégé Taylor Amber Mason (Asia Kate Dillon) left Axe Capital and poached some traders in the process.

The end result was an intriguing alliance between the two male leads, whose characters had previously been bitter rivals. It all makes for an intriguing season four, in a plot that is a high-stakes chess game fueled by the combination of sharp writing and impeccable acting. The series is shot on locations throughout New York City and Long Island.

For longtime friends Brian Koppelman and David Levien, who co-created the show with New York Times financial columnist Andrew Ross Sorkin (the three serve as executive producers along with Neil

Burger), the idea of going into this latest chapter of Billions allows for plenty of intriguing plot twists. “[This season], people can expect these characters to have their best judgement be a little bit overtaken by their need for vengeance. Each of these people finds themself in a position where they feel they were not properly valued, appreciated and responded to. They’re willing to go very far in order to exact revenge,” Koppelman said. “What’s fascinating to us is when you look at people that were otherwise able to comport themselves in such a rational, intelligent way, the question is asked what happens when the kind of heightened emotions occur when you have a feeling like you’ve been screwed over or hurt? So even the smartest person can fall prey to the desire to get retribution.

We’re fascinated when it happens to people who have titanic-like capacity.

That’s where we find ourselves at the beginning of the season. All of them in an offensive, yet defensive posture.

They’re trying to defend from the attacks by someone else, and they’re trying to make attacks of their own.”

With the Rhoades and Axelrod characters originally based on former federal district attorney Preet Bharara and hedge fund manager Steve Cohen of S.A.C. Capital Advisors, Billions blurs the lines quite a bit between real life and fiction. It’s a line Levien admits their show tries to get as close to as possible without actually crossing it.

“We have a lot of characters that are important to the narrative. They each have a little world, and there is a lot of real estate to cover in the course of the hour. Sometimes those stories intersect and sometimes they don’t quite [intersect],” he said. “We have

REVENGE from page 3A to just weave it together so that you’re with each story long enough to be engaged, but not away from another one for too long to the point where you forget about it. One of the challenges we face is that we sort of track the business world, the political world and the judicial world, but we can’t be in a situation where we’re trying to ape current events, because our show will invariably come out a year after those things happen. And those events would seem very stale. So we’re trying to sort of feel what’s going on in the zeitgeist and write what we think would motivate these characters.”

Not surprisingly, it’s the kind of writing that the cast feasts on.

Following his stint on Homeland, Lewis intended to shift over to making movies, until Showtime Chairman David Nevins, who knew Koppelman and Levien wanted the British actor for the lead, convinced the London native to read the script for this new show.

Shortly after, he signed on to play Axelrod. Equally smitten was David Costabile (The Wire; Breaking Bad), who plays Mike “Wags” Wagner, COO of Axe Capital and Axelrod’s ferocious right-hand man. Having already worked with Levien and former Tufts

“I have been lucky to work with a lot of [great writers]. These guys, Vince Gilligan, David Simon and the guys who created Damages, the Kesslers and Daniel Zelman. Top-notch, spectacular writers who care about what it is that they’re making,” Costabile said.

“The way [Billions is] shot, the way everybody comports themselves and the attention to detail on each show. We know that if we don’t pay attention to it, we know that we’re going to lose the thread. And that’s true for the entire crew—they all do that. The detail and the way the show is shot demands that kind of attention and time. We’re given a great deal of time, which is great and which I also think makes it seem like more of a film. One pushes the other to greater heights I think.”

For Roslyn’s Koppelman and Great Neck’s Levien, where they grew up wound up informing many of the characters in the show, allowing for a high degree of authenticity. Koppelman’s belief in the show’s originality was never more vindicated than from what fans were saying on social media during recent Senate hearings.

“I can’t tell you how many tweets I saw from the Michael Cohen hearing and the hundreds of tweets from people talking about the Southern District in New York and Billions,” he said “Part of that has to do with the fact that we grew up on Long Island.

We’ve been around these kinds of characters for a very long time. We understand their world, what their

sliding scale of morality is and we understand what happens if you put a character like Jock Jeffcoat in the middle of that. We’ve been students of this because we’ve been incredibly enthusiastic about the way these kinds of people talk, think, justify and rationalize their behavior. They do that in this incredibly colorful way and for us, it’s a treat and a joy to have these amazing actors like Clancy bring them to life.”

assau BOCES Long Island High School for the Arts (LIHSA) invites all Nassau and Suffolk County students with artistic talent, passion and ambition to an open house on Saturday, April 13, from 11 a.m. to 2 p.m.

Prospective students from across Long Island are welcome to tour the campus at 239 Cold Spring Rd., in Syosset to experience classes focused on each area of the visual and performing arts. Attendees can also get information about the arts school’s summer program, the Summer Arts Academy, offered this year through a new partnership with Hofstra University.

Attendees can join a theater improvisation skit, sketch in an art class, take a dance class, listen to a musical performance and participate in much more to get better acquainted with LIHSA. During the open house, parents of prospective

training and instruction to students interested in pursuing careers in theatre, music, filmmaking, dance, special effects, fine arts and digital media.

As part of their professional-level training, students regularly receive one-on-one access to experienced professionals working in the industry. Students have recently benefited from Master Classes led

by Tony-nominee Norm Lewis; musician Sunny Jain; award-winning dancer and choreographer Ephrat “Bounce” Asherie and Tony award-winning composer, singer and songwriter Steve Lutvak; to name only a few. Students also

get to perform alongside Broadway stars during the school’s annual fundraiser, Broadway Supports LIHSA. Alumni of the school have gone on to pursue successful careers in all arts fields. In addition to landing starring roles on Broadway, alumni have danced with national touring companies, illustrated for New Yorker magazine, designed successful swimsuit lines, and embarked on technical careers working for companies such as Cirque de Soleil and at landmarks such as Lincoln Center. The Maurice A. Deane School of Law at Hofstra University will host a free one-day legal assistance clinic for all veterans on Sunday, March 31, from 9 a.m. to 1 p.m. at the Law School, 2nd floor Atrium, 121 Hofstra University, South Campus, Hempstead.

Veterans will receive a free onehour consultation by appointment only with attorneys who have expertise in such areas as VA benefits and claims, family law, elder law, tax, wills, estates, disability, land-

Hofstra’s Third Annual Girls In Engineering Day A “While I hope that the girls take away a better understanding of the engineering concepts from the workshop, I also hope that the exercise gave the girls a sense for the design process and the importance of collaboration and communication in solving complex engineering problems,” Dr. Goldberg said.

The girls were later divided into teams and, with the guidance of female students from Hofstra’s Society of Women Engineers (SWE), used what they learned to design their own bridges.

“I really didn’t know a lot about engineering before today,” said Sophia Sapodin, a ninth-grader at Half Hollows Hill High School. “And I never knew that you could build a bridge out of paperclips.”

Civil engineering major Tyler Bailey, class of 2022 was one of the Hofstra students who volunteered at the event.

“As an aspiring civil engineer and full-time student at Hofstra, I believe that hands-on experience, teamwork, problem solving, networking, and trial and error are the best way to learn,” Bailey said. “I hope that the girls benefited from all of that.”

In addition to touring DeMatteis labs, the girls attended a presentation

with Shila Shah-Gavnoudias, P.E., vice president of AECOM—a global design, engineering, construction and management firm. Shah-Gavnoudias shared her experience as a civil engineer and discussed the variety of career paths and opportunities available to young women in STEM. “If you’re interested in engineering,

bout 40 local Girl Scouts and students from Sacred Heart Academy in Hempstead spent a day building bridges, touring labs and learning about careers in STEM (science, technology, engineering and math) at the third annual Girls in Engineering Day hosted by the Fred DeMatteis School of Engineering and Applied Science.

In a hands-on workshop, Saryn Goldberg, associate professor of mechanical engineering, and Edward Segal, assistant professor of civil engineering, taught the girls how to build suspension bridges with paper clips and how to measure changes in the forces in the main cable as a function of the shape of the cable and the load distribution. The ninth, 10th and 11th graders then used what they learned to design and build their own suspension bridges out of masking tape, with the goal of holding the highest load with the least amount of tape.

Growth Mindset And Relationships: The Power To Improve

he idea of the growth mindset was originally studied in relation to education. Research has demonstrated that students who held a growth mindset, or the belief that their brains could grow, were able to learn more than those who had a fixed mindset. If students believe that their intellectual ability isn’t hardwired, they can adopt new strategies, put in more effort and set goals to help them reach new levels of achievement. Carol Dweck, the Stanford psychologist famous for her research on this very topic, notes that people with a growth mindset believe that their abilities can be developed as a result of dedication and hard work (2006). So how does this relate to relationships, and more specifically, your relationship(s)?

Expose Yourself To Your Fears And Conquer Them

A

s they entered the creepy forest in The Wizard of Oz, Dorothy Gale nervously asked the Tin Man, “Do you suppose we’ll meet any wild animals?” He replied sagely, “… mostly lions, tigers and bears.” Now, if Dorothy were in genuine danger, she would have every right to be quaking in her ruby slippers. Some of us might feel content never choosing to find out if the danger is real or not and that’s OK. Others may feel that fears like this negatively impact their life.

Exposure Therapy has been shown to be the most effective anxiety treatment for people with many anxiety disorders. While it involves practicing with what you fear, in order to become less afraid, it is not simply about “getting used to” the fear. It’s about retraining your brain to stop sending the fear signal when there isn’t any actual danger. People struggle against phobias because they recognize that their fears are illogical. They try to talk themselves out of it, but when that doesn’t help, they avoid the fear, which only intensifies it.

The amygdala is the part of our brain responsible for fight or flight decisions. The amygdala works quickly because speed is vital in protecting you against threats. The intellectual area of our brain, the cerebral cortex, may be well suited for speechwriting and philosophy, but is not fast enough to keep us safe from danger. By the time your cerebral cortex processed your circumstances you would be lion, tiger or bear food. Contrarily, your amygdala’s response would be so swift that you would only become aware of it once you felt its effects in your body (panic sensations) and in your behavior (duck, run, escape). Therefore, if you experience phobias and anxiety attacks, and want to overcome them, it is the amygdala you need to reprogram.

The amygdala learns by association.

It may associate, heights, enclosed spaces and wild animals with danger.

It doesn’t learn by conscious thought, which is why you can’t simply talk yourself out of a phobia. The fear memory is stored as a conditioned fear and can only be diminished by more conditioning, not logic or reason. Since your amygdala only learns when it spots something it considers dangerous, it can only learn new lessons when you are afraid.

If you run away from your fears, you are teaching your amygdala that you should avoid your fears to be safe. To

teach your amygdala something new you have to expose yourself to a trigger that gets you afraid. You will be teaching your amygdala that it had gotten you all worked up for no reason. yhan Hassan remembers the first time he heard the term “Long Island.”

It was the late 1960s and Hassan was a young man living in Cyprus.

He didn’t actually hear someone say “Long Island,” instead he read it in a book called Mamma Lucia

by Mario Puzo, acclaimed author of The Godfather. The budding restaurateur would see Long Island Fresh mussels from f.i.s.h. on main for himself—but first had some looked like and who lived there.” traveling to do.

Sharing an afternoon with Hassan, one must be light on their feet. He starts the day at his quick-serve plus sit-down establishment Ayhan’s Mediterranean Marketplace & Café in the corner booth, taking phone calls, looking over paperwork and greeting every familiar face that walks in through the door. The cafe features a glass case full of Mediterranean favorites like gyro, salmon, falafel and hummus, but also plenty of nontraditional fare that is given a unique Mediterranean twist.

There’s also a robust breakfast menu, with fresh omelets, breakfast platters, sandwiches, pancakes and fresh fruit. But what makes the cafe a singular experience is the sweeping panoramic view of Manhasset Bay from the glassed-in seated area.

“You cannot get this anywhere else, it’s a gem,” Hassan said of the view, a spot that also

holds a full bar and hosts live music on various nights. “We can even close this off for private parties. When it’s set up with fine linens and lights, it’s beautiful.”

From there, Hassan bounds across Main Street to f.i.s.h. on main, a restaurant that pays homage to the legendary fishing exploits of various Mediterranean coastal countries. f.i.s.h. on main is housed in a building that has stood on Main Street since 1900, and it has the sturdy columns to prove it.

“These are real,” Hassan says as he knocks on one of the columns, which mightily add to the whole Greek aesthetic. Inside, f.i.s.h. on main offers a modern and fresh look, with a menu plucked right from the sea featuring items like branzini and black sea bass, a catch of the day, whole Maine lobsters, and seafood pasta. And don’t forget to try the New England Clam Chowder, which Hassan proudly names as one of his award-winning soups—his other award-winnings soups, Turkey Chili and Red Lentil, are served at the cafe.

Back at the restaurant that started it all for Hassan, Ayhan’s Shish Kebab, they serve a fusion-type cuisine including the best cuisine the Mediterranean has to offer from countries including Turkey, Greece, Israel, Cyprus, and more.

“A lot of the food is the same, but with different names,” said Hassan, who calls himself a “curious cook” who often likes to experiment in the kitchen with different flavor combinations. “We like to try new things, but we have a vision that we stick to.”

That vision includes all of the favorites—from gyro platters and chicken kebabs, to lamb shank and the aforementioned grilled octopus. Sunday brunch is extremely popular at Ayhan’s, with long tables filled with Mediterranean delights and some more American breakfast favorites.

With nearly 40 years under his belt in Port Washington, Hassan knows that in large part, his success is a credit to the community and organizations like the Chamber of Commerce that support him on a daily basis.

“It doesn’t matter where I came from, this is home,” he said. “I’m very lucky to be here.”

Born Here, Made In Italy Passione makes a culinary connection to the past

milio Branchinelli sits in a cozy booth under warm lighting at his restaurant, Passione, in Carle Place. In front of him are two heaping plates of linguine with white clam sauce—one made with fresh linguine, the other with the boxed variety. The restaurateur, whose culinary lineage traces back to some of New York’s earliest pizza pioneers, wants to taste for himself how the preparation pairs with the different pasta styles.

“I like the fresh,” he said, before conceding that “people might be more used to the boxed linguine.”

This scene from an Italian restaurant epitomizes Branchinelli’s belief that running an eatery is about more than counting dollars or agonizing over bills. It’s about providing hungry patrons with what he believes is the truest representation of what he grew up eating—food that is fresh, carefully curated and so comforting that you could eat it multiple times a week.

Branchinelli’s storied connection to Italian cuisine begins with his father Gino, who in the 1950s became a trailblazer in the New York City pizza scene. Surrounded by Italian food his entire life, Branchinelli eventually opened Emilio’s Restaurant & Pizzeria in Commack in 1980, which still thrives to this day. After years of refining recipes and building a staunch set of standards for how to run his business, Branchinelli would open another eatery, the grand Passione Della Cucina on Old Country Road in Carle Place about six-and-a-half years ago.

With high ceilings and soft lighting, the restaurant is also

impeccably clean and professionally run, thanks to Branchinelli’s tireless devotion to the lessons taught to him by the generations that came before.

As for the food itself, every morsel Branchinelli purchases is for use that day—meaning every item prepared is fresh and truly farm-to-table—a phrase that he follows as philosophy, not fad.

“I have a lot of pride in my food and I want the customers to know that,” he said. “The food we serve is meant to be comforting, but also fun and exciting.”

The fun starts with the appetizers, which entice eaters to create a shared celebration centered around food.

Pizza fresh from the oven “right out of the sauce,” which cooks for around eight hours, developing its own deep flavors. Passione’s meatballs are first oven-roasted, where they baste in their own juices before being dropped into the pot of sauce. This style gives the meatballs some outer texture, perfectly complimenting the juicy interior.

Next, the Baby Rice Balls, served with Neopolitan red sauce, are crisp and hide a so-cheesy-it’s-creamy inside.

Meanwhile, Passione serves calamari four ways, with the cherry pepper-laden Arrabbiata spicing up meal in the most pleasant of ways.

Tips To Organize Your Home

pring cleaning means refreshing your living space with some new home goods purchases and reorganizing your current décor.

But cleaning and reorganizing your home is not as daunting as it may seem. According to organizing expert Jill Pollack, doing these simple tasks will prevent you from taking on too much at once and might even make you feel differently about maintaining order at home.

The most important thing to start is to create order at the doorway as it’s the first place you come in and last place you leave.

“It’s a place for your keys, a coat that is easy to access, so create that system,” said Pollack, adding that double hooks for hats, bags and backpacks is a great idea.

Next, get your drawers in order.

“Create a life surgery drawer,” said Pollack of organizing the junk drawer that almost everyone has in their home. “You know you need paper clips, hair bands, a section for gum or mints. When you need it, you need it.”

As for the closet, if you didn’t wear

Donate your clothes so your closet is more accessible and open. something last spring or summer, chances are you’re not going to wear it, so get rid of it. Pollack recommends investing in felt covered hangers so nothing slips off.

“The linen closet is one of the most non-emotional places to do. You need two sets of sheets for every bed, not five. Get rid of old or excess towels

and washcloths (have a nice set of everything and upgrade one in a while) and donate them to dog shelters and homeless shelters.”

It’s time to clean out the fridge.

Read expiration dates, check for freshness, clean the shelves and start fresh.

“The kitchen is the stomach of

the house. Anything you don’t need but is still good, donate,” said Pollack.

“Keep the cheeses, meats, dairy and fruit and vegetables in a designated spot for easy access and to know where everything is.”

f you have ever traveled down the Northern State Parkway on a warm sunny spring day, you likely noticed the beautiful trees and shrubs bursting with color. Bright yellow blooms and pretty pink and white flowers grace the way as you travel to your destination. You may have even wondered, “What is that beautiful plant?” Those hardy plants are not just for the roadways, you can also enjoy them in your own backyard.

Grab a trowel and head to your local garden center and get some inspiration for this season’s spring blooms that is a step outside the box of carnations and marigolds.

Forsythia

One of the most recognizable spring blooming shrubs on Long Island, its long stems produce brilliant yellow flowers. This hardy plant can be used to create a living fence between neighbors or as a specimen along the back of a border planting.

Bring the outdoors in by soaking cuttings in a vase indoors to bloom.

Eastern Redbud Tree A spectacular spring bloomer with very showy pinkish purple flowers held tightly on bare branches, the leaves appear after the flowers and have a beautiful heart-like shape. The Eastern redbud is the perfect small ornamental tree for homes of any size.

Dogwood Tree Fothergilla

dogwood Tree Everyone is familiar with the flowering dogwood tree. It is famous for its large yet delicate blooms in spring and excellent wide-spreading form. In the fall, the leaves of the dogwood tree turn a brilliant red. It is known to attract birds, making it a favorite of bird lovers.

Purple leaf Plum A stunning accent tree that resembles a cloud of fragrant spring flowers in spring, deep purple foliage graces the tree well into fall. If you are looking for a tree with leaves other than green, this tree will easily become your favorite.

Fothergilla One of my personal favorite spring bloomers is a plant called Fothergilla. Also known as the bottle-brush plant, fothergilla is an often unknown but really beautiful spring flowering plant. Spikes of fragrant white flowers appear in mid spring followed by bluish green foliage in the summer. The leaves turn a brilliant red in the fall. It is perfect as a standalone plant in the garden, or used as a medium-sized hedge for screening.

Spring is in the air, so choose the trees and shrubs that will make every spring one to remember.

As for the fish fillet, the Rex uses wet-battered hake—a sustainable member of the cod family—along with American cheese and homemade tartar sauce for a sandwich that, again, easily surpasses this fast franchise classic.

As for fries, the Rex serves fresh hand-cut Idaho russet potatoes blanched for crisp perfection on the outside and an unmistakable creaminess on the inside. The fries are served with a choice of dipping sauce, including roasted garlic, black truffle, spicy mayo and melted cheese.

Other oyster selections include Oysters Bienville, with Cajun bacon, mushrooms, sherry and Hollandaise; the signature Oysters Top Hat (for two), featuring shucked oysters with artichokes, pancetta, herbs and garlic bread crumbs; along with fried oysters and Oysters Rockefeller.

From there, we arrive at the small plate starter menu, where some lesser-known fare mingles with time-tested favorites. The Voodoo Wings come highly recommended, and are served with a pleasantly different buttermilk pecan blue cheese dressing. There are also plenty of Louisiana favorites here, including seasoned shrimp or chicken Creole gumbo, a deconstructed muffuletta platter, Cajun jumbo lump crab cake and a New Orleans sausage duo, with Louisiana Boudin stuffed Andouille served with lavender honey and Creole mustard sauce. But this writer encourages eaters to step out of their comfort zone for the Alligator in a Blanket, which offers

Louisiana gator (yes, from Louisiana) in a puff pastry with a Creole mustard dipping sauce. The gator indulges the eater with a slight snap of gaminess, that is immediately quelled by the buttery puff pastry. The way it’s prepared, the gator isn’t stringy in the slightest— instead it is juicy and truly reminiscent of pork in fatty flavor.

Top Hat also offers an array of salads, along with a selection of Po’ Boys, all fully dressed with lettuce, tomato, pickles and Blue Plate Mayo with French fries and Mirliton apple slaw. The Po’ Boys run the gamut from shrimp to sweet potato to roast beef to oyster to blackened chicken to surf and turf with roast beef, shrimp and New Orleans staple debris gravy.

Before delving into the entrées, there’s a section of the menu dubbed “Louisiana Specialties,” with all the favorites laid out in all their splendor.

There’s Creole shrimp and grits, jambalaya, cornmeal-crusted bronzed catfish and a slow-roasted deboned half duck. But chef’s favorite is the classic étouffée, featuring crawfish (the legendary “mud bug”), with New Orleans’ Holy Trinity of onions, celery and bell

pepper, cooked in the almost mythical dark roux, a heavenly thickener made with fat, flour and plenty of patience.

The impossibly rich preparation is the perfect bath for strong crawfish, as it all culminates in a stimulating and succulent combination that will keep your flavor receptors guessing and your brain synapses flashing.

Entrées are served with Haricot Verts and Creole mustard smashed potatoes and include the Mojo Berkshire Pork Chop with root beerglazed Granny Smith apples; Pecan Crusted Salmon; and the Slightly Blackened Gulf Fish & Creole Crab Cake.

Flip the menu over for a gander at Top Hat’s impressive cocktail selection. The first one listed, and for good reason, is the Top Manhattan, a heady and classic beverage with bourbon, sweet vermouth and black cherry juice.

Allow your server to convince you to try dessert, specifically the Bananas Foster Parfait, which takes the New Orleans classic and dollops it into a glass for a sweet end to a raucous meal.

A Clam For All Seasons DJ’s Clam Shack keeps it fresh all winter long

N

o one knows for sure how it happened or who did it, but somewhere along the way it was decided that seafood is strictly summertime eats. Across the south and north shores of Long Island, restaurants that specialize in ocean fare either close for the gray winter season or brave the cold, diminishing returns and remain open.

One local eatery keeping their lines in the water during the so-called down season is DJ’s Clam Shack in Wantagh—an oasis of fresh seafood making a strong case that this cuisine should be enjoyed all year round.

Deep diving into New England and Southern-style seafood, DJ’s slings lobster rolls, fried clams, crab cakes, fish tacos and much more. And even beyond the food, owner Paul Riggio and his team have created a family atmosphere on Sunrise Highway. Sit in the restaurant for no less than five minutes and you’ll witness customers enthusiastically greet Riggio and his team as if they were longtime friends.

“The town is just fantastic to us,” said Wall Street escapee Riggio in the diminutive, laid-back eatery.

“We have a neighborhood vibe and we look to treat people right the first time they come in.”

And when they come in, customers are greeted with an immediate whiff from the up-front grill, where manager Anthony Gentile can be found butter-grilling split-top buns and dropping conch fritters into the deep fryer. When asked what the must-eat items are at DJ’s, Riggio and Gentile don’t hesitate even for a second—it’s the lobster roll. Using the tenderest chunks of lobster—specifically, knuckle and claw meat—the lobster rolls are served two ways:

the cold, mayo-based New England style, and the warm, butter-forward, Connecticut-style.

The cold roll can be ordered light or heavy on the mayo, which is delightfully seasoned with tarragon and finished with celery. And while both incarnations put that signature lobster lusciousness fully on display, it is the opinion of this writer that DJ’s warm, buttered lobster roll is nothing short of the food version of a religious experience. Butter and lobster are best friends, and adding the flat-top grilled toasty roll to the equation elicits groans of eater’s pleasure immediately upon the first bite. Using the knuckle and claw in the roll is an ingenious maneuver, as that meat far surpasses the highly regarded tail portion in the aforementioned tenderness, but also in sweetness and overall flavor.

Another highly recommended dish is the garlic-steamed Little Neck clams. Featured on Guy Fieri’s Diners, Drive-ins and Dives when the show visited DJ’s original location in Key West, FL, the clams are steamed in a skillet with plenty of garlic, celery and surprisingly

complementary jalapeños and served with garlic bread that absolutely screams to be dipped into the juice pooled at the bottom of the dish. Clams also star in DJ’s creamy New England clam chowder, a downright luxuriously silky soup loaded with perfectly sized middle necks.

Other soups are on a rotating basis, like the lobster bisque, a smokier-than-usual version that is a superb antidote to the cold chill outside.

Other basket favorites at DJ’s include baked clams, kung pow calamari, shrimp scampi, Ipswich fried clams and a split grilled hot dog for landlubbers. Then there’s the tacos, which range from Mahi Mahi to shrimp and chicken and roast pork. All items can be grilled, blackened or fried, but the cooks highly recommended the Mahi Mahi in the blackened fashion. Dipped in melted butter and dredged in a blend of herbs and spices, the blackened Mahi Mahi taco packs some spicy heat thanks to Cajun mayo, but it is mellowed out nicely by pickled onions and cooling cabbage.

As for fried fare, DJ’s drops plenty into the fryer, like fish fingers, shrimp, clam strips and the southern-in-origin conch fritters, which are seldom seen on Long Island menus. The fritters

Great for dipping, the conch fritters come with a key lime honey mustard and a smoky little number dubbed “Cowboy Sauce.”

Specials also abound at DJ’s and range from fresh seafood marinara over linguine to locally caught flounder. Meanwhile, the first Wednesday of every month is a party at DJ’s, with live music and fresh shucking of Maris Stella Blue Point oysters.

It might be cold outside, but it’s an endless summer at DJ’s.

As for burgers, sure, there’s a cheeseburger— but then there’s the Donut Burger and Grilled Cheese Burger. As if you need to be told, the Donut Burger is served on a glazed donut, but also includes cheddar, applewood smoked bacon and Bowery sauce. It’s a high caloric investment, but worth the risk for a night out. However, even the Donut Burger stands in awe of the Grilled Cheese burger, which swaps out the standard bun for two grilled cheese sandwiches. Goodnight, folks.

More fun between bread is the Jaffle, an Australian street food that exists somewhere between a waffle

and a panini. Jaffles available include prosciutto and mozzarella, chicken, falafel, pulled pork and Reuben. But the best Jaffle is perhaps the simplest: ham and Swiss served with fig jam. It is sweet and salty, buttery and crispy.

Finally, main dishes at Bowery include Tacos Al Pastor, skirt steak, chicken paella, fish and chips, and a mammoth pulled pork poutine with cheddar and country gravy served over curly fries.

Of course, the signature cocktail menu shines with over-the-top liquid courage, like the Strongman, Fire Eater, Human Cannonball and Fun House. There’s also alcohol-infused snow-cones and more than 20 beers on tap—including a custom fall brew

he flavor profile of Chengdu, the capitol of China’s Sichuan Province, has been creeping westward for the better part of the last 20 years. Boiling over with Szechuan cuisine at its best, the city is the Far East’s cradle of fiery foods like hot pots—long hot peppers and cumin-crusted meats—and Long Island recently gained another authentically Szechuan-style Chinese restaurant with Cheng Du in Franklin Square.

Named for the traditional use of three cups of sauce (soy, rice wine and sesame oil) in the recipe, the dish is deeply flavorful and dotted with basil and whole cloves of garlic. Don’t be turned off by the those big garlic chunks—the cooking process renders the garlic soft and gentle, with a roasted butteriness that permeates the dish. Other Chef’s Special dishes include Lion Head Meatballs, Hot & Spicy Grilled Fish, honey walnut shrimp and braised pork belly.

Cheng Du also boasts an authentic dim sum menu with soup dumplings, Taiwanese buns, scallion pancakes and the absolute standout, the handmade dumplings. Painstakingly crafted by the chef, the sticky, doughy dumplings pockets of mouth-bliss with ingredients to match. The vegetable versions in particular came highly recommended by the chef and for good reason—for they contain much more than just the mushy cabbage you see at most Chinese establishments, opting instead for a variety of rough-chopped, fresh vegetables. It’s a time-consuming preparation that is well worth the wait.

And finally, the humble, yet impossibly grand, noodle. Cheng Du takes great care of its noodles with an array of cold and hot dishes, some spicy, some more restrained. The finest among them might be the Dan Dan Noodles with minced pork. Smooth with a peanut-foward spicy sauce, the noodles possess a silky and bouncy texture that is matched perfectly with the grit of the minced pork, while the taste is at once sweet, salty and savory, surrounded by an earthy umami.

Meanwhile, the Monday through Friday lunch special is hard to beat with an array of options, all with choice of soup, for around $8.

Any write up for Cheng Du Chinese Restaurant would not be complete without a mention of the inventive cocktails—such as the Mulholland Drive, a twisted, mind-altering drink containing a secret blend of ingredients and named after the surrealist movie of the same name. Cheng Du also mixes cocktails like Blue Velvet, their take on a margarita, as well as the Red Turtle, a heady mix with campari.

Cheng Du is exactly the place if you want Chinese comfort food, but also want to step out of the white take out box and try something authentic.

Overall, Audi has placed three of its vehicles in this year’s top ranking. The e-tron Audi e-tron source: is up for World Car (Photo Audi USA) of the Year and the World Green Car of the Year, a combination that the I-PACE has also achieved.

But it’s the Jaguar I-PACE that’s been making the most noise in 2019.

“It’s an all-electric vehicle that’s absolutely gorgeous,” Tony Anton, general manager of Jaguar Freeport, said. “The battery is actually located on the floor of the car, giving the center of gravity of the car so low that it’s the most stable car I’ve ever driven in my life.”

The I-PACE goes from zero to 60 in 4.5 seconds, and it has a range of up to 234 miles before it needs to be recharged. While it is all-electric, it still provides consumers with the same ingenuity that Jaguar is known for.

Meanwhile, in the World Performance Car of the Year category, there are three cars you literally can only dream of.

Each of the three cars are insane, inside and out, knocking your socks off—literally and figuratively.

From the Aston Martin Vantage to the McLaren 720S and the MercedesBenz AMG fourdoor coupe. They are literally racecars that are street legal. The price tags range from about $140,000 for the Mercedes-Benz to $150,000 for the Aston Marton and an stunning $288,000 for the McLaren.

Once the awards are announced for 2019, the manufacturers will keep on fighting for this title come 2020.

Schumer, Gillibrand Talk Conservation Legislation

U

.S. Senate Minority Leader Charles E. Schumer and U.S. Senator Kirsten Gillibrand today announced that, following their push, the Land and Water Conservation Fund (LWCF) has been permanently reauthorized. The LWCF has been instrumental in preserving some of the nation’s most important and iconic public spaces, and has invested more than $336 million in funding to protect public lands, water resources, and historic sites across New York State. Additionally, according to the Outdoor Recreation Association, outdoor recreation projects and sites annually generate approximately $41.8 billion in consumer spending and provide 313,000 jobs throughout New York State alone. Schumer and Gillibrand cosponsored legislation to permanently reauthorize the LWCF before it expired last year, but Congress

did not pass it and let the program expire. In this new Congress, Schumer and Gillibrand successfully fought to include the reauthorization in the Natural Resources Management Act, which was signed into law on Tuesday.

“I’m proud to announce that, following our push, permanent reauthorization for the Land and Water Conservation Fund—the nation’s premier conservation program—has been signed into law,” said Schumer.

“The Land and Water Conservation Fund has provided millions in federal funding over decades to protect many of New York’s breathtaking natural treasures and historical landmarks.

In the process, it has contributed to preserving hundreds of acres of parks, generating billions in economic activity, and helping create over 300,000 jobs in the outdoor economy of New York. Passage of this critical legislation

will help ensure that New Yorkers and tourists alike can continue to enjoy the state’s spectacular public lands, natural areas and historical sites for generations to come.”

“I’m very excited to announce that the Land and Water Conservation Fund has just been permanently reauthorized. The Land and Water Conservation Fund is one of the most important programs we have to protect our nation’s natural and historic treasures. In New York, it has played a key role in preserving landmark sites such as the Adirondack Lakes, the Saratoga Battlefield National Historical Park, and Coney Island Boardwalk” said Gillibrand. “It’s an absolute shame that Congress allowed the Land and Water Conservation Fund to expire last year, which is why I fought to make the program permanent and ensure that our nation’s resources can be preserved

for generations to come. I will always fight to protect the natural beauty and historic legacy of New York State, and I’m proud to see this legislation signed into law.”

The LWCF has provided funding to protect sites of natural and historic importance throughout the country for more than 50 years. The LWCF does not rely on taxpayer funds and instead uses revenue collected from offshore oil and gas development to purchase lands from willing sellers for the purposes of conservation. It also provides grants to states for recreation planning, acquisition of lands and waters, and facility development. Permanent reauthorization of the LWCF would provide consistent funding for projects overseen by the program to help preserve national parks and wilderness areas across the country.

In Search Of: Nashville Hot Chicken

hornton Prince III was a legendary womanizer in 1930s Nashville. The owner of a small eatery called the Chicken Shack, old Thornton was known to get himself mired in many trysts, much to the chagrin of whatever poor woman claimed to be his steady girlfriend at any given moment.

One of those girlfriends, whose name is lost to history, decided to attempt a measure of revenge and inadvertently created one of the greatest culinary wonders ever committed to a menu. After Thornton stayed out particularly late one night, the unnamed girlfriend woke up early to cook her man breakfast. She fixed him some fried chicken, but to give him the burn she believed he deserved, she loaded the chicken with an obscene amount of chili powder, cayenne pepper and any other spice she could get her spurned hands on.

But instead of spicing him onto a path of contrition, the brutal concoction brought a heat that he immediately knew would forever change the course of fried chicken. Eventually, Thornton and his brothers would refine the recipe and open the old chicken shack anew, under the name Prince’s

Today, there are an estimated two dozen restaurants in the Nashville area that serve hot chicken, and there’s even a Music City Hot Chicken Festival held every July. Unfortunately, we Long Islanders aren’t so lucky. Internet research yields precious few establishments serving the dish, and most that do boast a version of Nashville Hot Chicken are found in the city. But as we approach National Hot Chicken Day on March 30, let’s discover the eateries where Long Islanders can find some spicy bird.

Nashville Hot Chicken is deep fried, with the “hot” aspect traditionally added immediately after it comes out of the fryer. The two key ingredients to true Nashville Hot Chicken spice paste are lard and cayenne pepper, with additional ingredients including sugar, garlic, chili powder or bottled hot sauce. The spice paste is heated and heaped onto the chicken in varying amounts. It’s served atop two slices of white bread and finished with pickle slices.

It’s important to note that Nashville Hot Chicken is not chicken with buffalo sauce. Nashville hot is much more of a “dry” sauce, rather then the sloppy hallmark of buffalo wings. The taste is also far different, offering a smokier taste along with a more intense, deeper burn.

Island? Is it anywhere? Well, fast-food chain Kentucky Fried Chicken sells a somewhat reasonable facsimile of hot chicken—it’s called “Nashville Hot Chicken” and is indeed served with pickle slices, but alas, no white bread. However, one of the problems with KFC—and there are many—is that their hot chicken is served in a slimy pool of oil and grease. Also, KFC’s quality varies greatly store-tostore. To sum it up: The Colonel is not what we need in our hot chicken dealer.

Rockville Centre’s haven of fried food, Bucket List, does in fact serve their own take on hot chicken.

But the restaurant recently ceased operation of its full-service restaurant, opting to move into a new space across the street as a quick-service eatery.

Luckily, Nashville Hot Chicken will in fact remain on the menu at the relaunched Bucket List. And this is good news, as that eatery’s hot chicken gets as close as possible to the authentic dish, right down to the white bread.

Radio Radio in Huntington is another restaurant that graciously dabbles in the state dish of Tennessee. The restaurant, specializing in southern fare that crosses regional lines, brings

Nashville-style hot chicken with a skillfully prepared hot oil that actually works to coat your mouth—thus keeping the burn going after the bird is long gone.

Back in Rockville Centre, Copper Pot Chicken Co. brings Nashville hot to the table, offering it as a side sauce and also incorporating the preparation into a chicken sandwich.

But beyond that, Nashville Hot Chicken becomes much more difficult to locate in Nassau County. So, head west to Long Island City, where Sweet Chick— co-owned by rapper Nas—began serving hot chicken when it opened a couple of years ago. And of course, Brooklyn has plenty of hot chicken spots as well. One of which is Peaches HotHouse on Tompkins Avenue where hot chicken is not only the main event, it is also offered in a devastating “extra hot” style that the owners warn is not for the faint of heart.

Of course, if you absolutely had to, you could recreate Nashville Hot Chicken in your own kitchen.

ne of the most anticipated sporting events of the year has arrived. Every year, March Madness provides a perfect showcase of the best basketball teams in the country while also giving a platform to the smaller schools who, while they are the best of their respective conferences, are often overshadowed. But sometimes, the perfect amount of chaotic energy is injected into the tournament and upsets happen left and right. If you fill out a bracket for the tournament, here’s just a few teams to look out for in hopes of avoiding the dreaded bust.

Senior forward Caleb Martin, 2018 Mountain West Player of the Year, has once again had a great year for the team leading them with 19.2 points per game. Buffalo One of five teams in the state of New York that will be playing in the tournament, Buffalo has been one of the most dominant teams in the NCAA this season with only three losses in 31 games during the regular season. Head coach Nate Oats is in his fourth year coaching the team, and his winning percentage is his best yet going into the NCAA tournament.

The team is made up of plenty of great talent, with the standout player being senior guard C.J. Massinburg.

He averaged 18.3 points, 6.6 rebounds and three assists per game and won Mid-American Conference Player of the Year honors. Senior guard Jeremy Harris has also played a leading role on this team with a 14-point average and 2.9 assist average while senior forward Nick Harris, off the bench, has scored 14.4 points per game and leads the team in rebounds. Nevada Although it has slowed down as of late, Nevada is still a tough team to deal with. While the team isn’t statistically among the best teams in the league, they have only four losses on the season. They had a 14-game winning streak to start the

If this team didn’t win their conference championship, they would’ve gotten an at-large bid into the tournament. That’s rare for mid-major schools to get that opportunity, but Wofford is special. The team hasn’t lost a game since December and was undefeated in Southern Conference play this year. The team is ranked third nationally in total points and second in total field goals.

The player to watch on this team is senior guard Fletcher Magee, who just won his second conference player of the year award in a row.

His 20.5 points is among the best in the nation, but he’s specifically great at shooting three-pointers. His 151 successful three-point attempts is the best in the nation, with 135 being second-best. Senior forward Cameron Jackson leads the team with 7.5 rebounds per game, making him a perfect complement for a centerpiece like Magee.

No team has been able to stop this team in more than three months, and that’s why the prospect of playing them in March Madness should be terrifying.
