Anse Chastanet Weekly Culinary Events MONDAY The Emerald Estate Cacao Tree to Chocolate Bar Tour In this class we would like to indulge you further into the world’s favorite aphrodisiac… chocolate. Our chocolate alchemists will host you on our Emerald Estate Cacao Tour to show you the complete cycle of Tree to Bar production. We will discuss the history of chocolate in the Caribbean and the production process. To start off we will visit the Emerald Estate to witness the natural side of cacao including tasting raw cacao while discussing the fermentation, sun drying and polishing of the beans. Then travel back to our own Chocolate Lab to elaborate on the technical part of making the perfect chocolate bar. This 2 hour guided experience takes you through cacao bean roasting, grinding and conching in the making of our chocolate to create the perfect snap and shine. Along the way you will enjoy an invigorating cup of local cacao tea and our organic chocolate bars that range from 60%, 70% and 92% Bittersweet.. His team of Chefs will share the special techniques used in spicing up a great Tandoori chicken. Learn the trade secrets of how to blend spices to accompany any dish. We will start by tasting the cacao bean, which is the very first step in chocolate production, and end with the strongest type of cacao mass while sampling all in between. We will focus our attention on how to truly appreciate chocolate as it should be tasted and educate ourselves on its distinct differences. As a culmination of the sensory tasting session sample some of our homemade truffles and a taste of Emerald Estate Organic Chocolate bar. The farm produces a wide variety of items including vanilla beans, bay leaf, nutmeg trees, cinnamon, and numerous varieties of mango, sour orange, coconuts, leaves, greens, vegetables and herbs, all brought daily to our kitchens. Included in this visit is an interactive cooking class, light lunch and wine. Discover how Chef Frank Faucher, with over 15 years of experience in vegetarian and vegan cooking, expertly blends local ingredients from our Organic Emerald Farm. Anse Mamin Plantation Walk
e Plantation Walk, which is offered at 1:45 every aernoon but Sunday, is one of the most popular activities for resort guests. Participants are met at the scuba center by our Resort Guide and are taken by boat to Anse Mamin, which is the resort’s second beach located just to the north. Participants are sure to be dazzled by both the natural beauty of the old plantation and the interesting information provided by the guide. Within the lush coastal jungle are the ruins of an old sugar plantation, which was established in the last half of the 18th century, as well as a great variety of tropical foliage. A popular option is for guests to enjoy lunch at Anse Mamin’s Jungle Beach Bar & Grille then join the tour from there. FITNESS LEVEL – EASY
Taking advantage of the stunning natural beauty found within Anse Chastanet’s 600 acres and the surrounding area, the resort offers an array of walk options that allow guests the opportunity to take in the magnificent scenery while enjoying some exercise. Don’t forget your camera, sunscreen and, for the forest walks, mosquito repellent and a bottle of water. These exclusive tours, which are led by trained Resort Guides, are complimentary with the exception of two which include a modest transportation surcharge.
Morne Lastic Walk
Departing from Porte Co-chere at 9:00 a.m. on ursdays, this 3 hour trek takes participants up and over the mountains into the town of Soufriere. Along the way guests are treated to fabulous views of the Pitons, Soufriere Bay and the town. You will then be picked up by boat at the Soufriere waterfront for a scenic boat ride back to the resort. FITNESS LEVEL – ABOVE AVERAGE
Soufriere Market Walk
e Saturday morning Soufriere Market Walk is a favorite for many guests as it offers a great chance to really get to know the town and its people. Participants depart with the Resort Guide at 8:00 a.m. from Porte Co-chere and walk the resort road at a leisurely pace to town. Along the way there is plenty to see including flora and fauna, the Pitons and
Soufriere Bay. Upon arriving in town the first stop is the Saturday morning farmer’s market which is a colorful bustle of local activity with the selling of fruits, vegetables and other products. From there it’s on into the town center to see the church, town square and lots of interesting old French architecture. You’ll also have time for a little shopping and some refreshment while taking in the local culture. You will then board one of our dive boats for an enjoyable boat ride back to the resort with a visit to the bat cave along the way. FITNESS LEVEL – EASY/AVERAGE
Birdwatching at Anse Mamin Plantation
Anse Chastanet is fortunate to have one of the island’s best birdwatching locations right on the resort property within the Anse Mamin plantation. Participants meet at the Scuba Center at 7:30 a.m. for an orientation by our Birdwatching Guide and to receive binoculars. e tour begins with viewing several species which nest in coastal cliffs in the area. en it’s on to Anse Mamin and into the lush coastal jungle with its 18th century plantation ruins. e tour is designed for both novices and veteran birdwatchers. Interesting ancillary information about the old plantation and its existing flora and fauna will be also be presented. MONDAY & FRIDAY 7:30 – 9:30 AM US 30 PER PERSON + 10% SERVICE CHARGE AND10% VAT
Beach View Trail
is trail starts at the scuba centre on Anse Chastanet beach where you will meet your guide. As you begin you will encounter a steep section that provides excellent views down the main beach all the way back to the Scuba Centre. Further along, the trail ascends steps leading to a cool section through the indigenous vegetation. is is dry tropical forest, typical for the leeward coast of St. Lucia. At the summit of the
trail there are two lookouts; one on a short side track with views to the main beach, the other, found on the summit of the ridge, leads west to the very edge of the steep cliff overlooking the road to Anse Mamin and Caribbean beyond. DISTANCE ONE WAY – 1.58 MILES, 2,540 METERS.WALKING TIME 1 TO 1.5 HOURS (ALLOW 2 HOURS WITH EXTRA REST AND TIME TO ENJOY THE VIEWS). DIFFICULTY LEVEL – MODERATE

PADI Reef Rescue Specialty On Request | US $220 (plus 10% service charge and

Divers can gain hands-on experience in coral restoration while earning a PADI Conservation Specialty certification. Over two dives, you’ll assist with ongoing maintenance of the coral nursery, with the opportunity to out-plant your own coral fragment onto the reef. Another impactful option is participation in our Lionfish Removal Programme. Earn the PADI Invasive Lionfish Diver Specialty and actively contribute to reef health by helping remove this invasive species from local reefs.

Designed for our younger ocean enthusiasts, this programme introduces children to marine science through engaging topics such as Fish Identification, Turtle Identification, and the often-overlooked world of Seagrass. The Guest Information Booklet available to view online or upon request in print provides colorful descriptions of the various excursions and resort activities we offer. Please find below our weekly excursion schedule and price list. The majority of our tours can also be arranged privately; for this we have a separate price list established, which you can view at the Guest Services or Concierge Desks. You can sign up for excursions with the Guest Services or Concierge Desks or at Reception. Some excursions - if not booked as a private tour - require a minimum of 4 participants to be confirmed. Please enquire with the Guest Services or Concierge Desks or Reception to be sure your excursion is confirmed. For resort based activities, you can also sign up at the Scuba Center. Our reception team can also arrange private land taxis, water taxis or car rental for you. If you have any special requests, please do not hesitate to contact our management team.
