A Brief History of Anse Chastanet and Anse Mamin

ANSE CHASTANET, pronounced as “ants-shas-tan-ay,” was named after one of the French aristocratic families who settled on the island during the French occupation in the 18th century, the CHASTANET family who originated in the Bordeaux region, “ANSE” is antique French for “Small Bay.” The ANSE CHASTANET estate was owned by a variety of first French, then British families until it was purchased by the developers of ANSE CHASTANET. ANSE CHASTANET was built in 1968 by a group of three imaginative and determined Canadians. Imagination and determination was needed to carry through the construction project: at that point, there was no road leading to ANSE CHASTANET, so that all the construction materials had to be brought from Soufriere by canoe and then carried to the top by manual labour, mostly on the head of strong women, in the true island fashion.

The original hotel had 14 rooms only.

Funnily enough, most of the good views from the hillside were blocked by concrete walls.

ANSE CHASTANET was sold to the present owners in 1974.

eventually became the first “free” village in St. Lucia, where certain slaves who had legally obtained their freedom, joined with their brothers and obtained their “supplies” from the neighboring ANSE MAMIN estate.

profession, immediately saw the real potential of ANSE CHASTANET and started a thorough reconstruction and beautification programme by tearing down the concrete walls blocking the views and by redesigning and opening the accommodations and public areas to the spectacular scenery to the extent possible. Ten more rooms were added, including some one—and two bedroom suites.

In 1985, 12 beachside deluxe rooms were designed and built by Nick Troubetzkoy. It was his intention to use island materials only, in particular for the furniture which was designed by him and then handmade in Soufriere with the exclusive use of island woods such as teak, mahogany, wild breadfruit, greenheart and purpleheart.

In 1990, the same concept was applied for the addition of 11 hillside deluxe rooms which also display locally made furniture and other craftsworks.

All rooms are decorated with a colourful fabric called MADRAS. It originates in INDIA and it is the material of which the National Costumes in St. Lucia and other Caribbean Islands are made.

Part of ANSE CHASTANET’s 600 acres of land is the old French Colonial Plantation of ANSE MAMIN, just north of ANSE CHASTANET beach. One can get there either by boat or by walking— just follow the coastline at the northend of ANSE CHASTANET beach and walk along the water’s edge. After about 10 minutes, a beautifully deserted beach and a sleepy plantation are awaiting the explorer.

There are records of a mortgage for ANSE MAMIN estate, drawn up in 1834, designed presumably to resuscitate the estate after the hurricane of 1831. The plan seemed to have failed.

In 1852, the estate is listed as being in the possession of the heirs d’Y’Volley. One Stephen Williams was appointed administrator of the estate on July 29, 1839 and it appears to have been sold to a member of the DuBoulay family in 1859. It changed hands one more time before the entire estate was purchased by ANSE CHASTANET in 1984.

Besides the historical ruins, a great variety of tropical fruits, plants and vegetables and flowers can be found at ANSE MAMIN.

ANSE MAMIN has a very colorful history: it is one of the earliest estates established on St. Lucia and the first owner was French, the Baron Marie Antoine Y’Volley, and his wife Henrietta.

The original ANSE MAMIN estate included 723 acres of land and a sugar cane works. The ruins of the house and the sugar works, including the remains of a huge waterwheel, a viaduct water system and a 1 1/2 million gallon water reservoir can be seen to this date.

It is alleged that, in the old days, some of the slaves of ANSE MAMIN ran away and established a settlement at Bouton to the north east which still exists today. Bouton

ANSE CHASTANET’S stunning scenic setting and lush tropical surroundings provide much inspiration to visiting artists many of whom come back to the Resort regularly. They have made ANSE CHASTANET an even greater visual feast by dedicating to and displaying some of their art at the Resort.

Public facilities and all guest rooms have been decorated exclusively with original art. Local artists such as Lawrence Deligny, Peter Charlemagne and Matthew Paul have created colorful wall murals, painted “sky ceilings” and “flower boards” and impressive carved wall plaques and wooden sculptures.

International artists of acclaim have added amazing acrylic and ceramic tile paintings, all of them designed and completed for a particular setting right at the Resort, and very much inspired by the vibrant colors and scenic beauty of St. Lucia. German artists Stefan Szczesny, Leif Trenkler and Elvira Bach, Swiss artists Claude Sandoz and Peter Roesch, British artist Peter Newman, Dutch-Canadian artist Reina Nieland, Dominican artist Arnold Toulon and Guyanese artist Ron Savory are all part of the ever growing ANSE CHASTANET artist family.

Taking the plunge at Anse Chastanet and Jade Mountain

Elope to Paradise Tropical island weddings are getting more and more popular, whether or not you plan to elope to paradise exclusively with your loved one, or with your relatives and friends in tow.

Only 1-2 days of residency in St. Lucia are required for non-nationals in order for them to be married in a civil ceremony performed right at the Resort. Catholic Church weddings can also be arranged but take at least 3 months of planning, involving the bride and groom’s parish priest at home.

At ANSE CHASTANET and JADE MOUNTAIN, weddings are the unique and individual affair they must be, and every ceremony is organized in personal consultation with the bride and groom who can also add their own vows to the civil ceremony.

There is no dedicated “wedding chapel”; instead, the bride and groom choose their own “very special location,” be it the Treehouse, the beach, the “Miss Ina”, the old colonial plantation, a nearby waterfall, the coral reef or the privacy of their room.

Wedding ceremonies are limited to one a day.

The resorts will arrange for all legal documents and legal processing. Legal documents are prepared prior to arrival, based on a questionnaire the bride and groom will need to fill in. Required for

preparation also are copies of passports or birth certificates together with photo ID and, if applicable, copy of divorce documents showing the final decree (decree absolute) with stamp and seal. All documents must be presented in their original on arrival.

The “ELOPE TO PARADISE” TROPICAL WEDDING PACKAGE includes all legal processing, lawyer and registrar fees, all messenger and transportation services, wedding bouquet, buttonhole, wedding cake and bottle of champagne.

Optional services such as photography, videography, pre-wedding spa package, national wedding dress, private sunset post wedding sailing trip, live entertainment are all available. Two witnesses are required and can be arranged by the Resort. Dear Divers, Welcome to Anse Chastanet Resort and Scuba St. Lucia!

We would like to assure you that management and staff of Scuba St. Lucia will do their utmost to make diving for you here most enjoyable. The Scuba Centre is located at the south end of the beach. Our dive staff look forward to welcoming you there.

SCUBA ST. LUCIA is open from 8:00 a.m. daily. We ask all of our divers to do the ANSE CHASTANET REEF dive first as an orientation dive. This will give you a chance to sort out weights and check equipment fit and function in a very sheltered location. We also take a moment to check each diver’s mask clearing and regulator recovery skills. In addition, the shore dive is one of our most beautiful dives, with a steep coral slope going from 15 ft. to over 150 ft.; it is very spectacular and is one of the most popular dives on the island.

Our shore dives are scheduled for 8.30 a.m., 11:00 a.m. and 2:00 p.m. daily. We ask that you arrive at the Scuba Centre 30 minutes in advance, giving plenty of time to register with your certification card and to set up equipment prior to your dive.

After your shore dive, there are plenty of dives available. If possible, please reserve space on our dives at the scuba centre front desk the day prior. Please note that any charges for dives or equipment rental may be charged directly to your room account.

In case your dive equipment has not been transferred to the Scuba Centre upon your arrival, please arrange with reception for a bellman to carry your equipment to the dive centre. There are lockers and fresh water rinse tanks available for equipment storage at the Scuba Centre.

Dive Sites

Scuba St. Lucia offers their divers a variety of dive sites to be visited during their stay. Here are just a few exciting sites that you can dive with us.

Anse Chastanet Reef

This reef starts just a few shorts steps across the warm volcanic sand from the Scuba Centre. There is a plateau area with depths of 5-25 feet. This is the portion visited by our Introductory Scuba Students. The reefs falls quickly away from 20 to 140 feet in a solid wall of mixed corals. Most of our dives are in the mid-range, at 50-60 feet, allowing divers to see the full range of the reef from the sparkling water surface to the deep reef. Well worth a visit.

Fairyland

A short boat trip from the Scuba Centre is our beautiful location of Fairyland. This area on a major headland, is subject at times to very strong currents - this has the benefit of giving the site excellent visibility, and keeping the corals very clean so that it sparkles with the vibrant colors of many varieties of coral and sponges. The plateau area slopes gently from 40 to 60 feet; our dives are usually 50 feet and shallower on this site. Large boulders give plenty of nooks and crannies for fish to shelter in.

Pinnacles

This is probably our most visually stunning dive site. Four spectacular seamounts rise dramatically from the depths to within a few feet of the surface. These are encrusted with a profusion of black and orange gorgonia, and this lacy network provides shelter for trumpet fish, filefish, and sometimes seahorses. Large fishes - grouper, jack, and snapper - can be spotted around the Pinnacles.

Superman’s Flight

A fifteen minute boat trip south from the dive center, across Soufriere Bay, brings our divers to the base of the spectacular Petit Piton Mountain. The cliff face here was used as a setting for the film Superman II - Superman can be seen flying down the cliff face down toward the water, and our divers can fly along it below the surface. There are often strong currents on this site, which help to give it good visibility. The steep slope here is covered with beautiful soft corals, and there is a great profusion of fish life.

Wreck of the Lesleen M

This wreck is located to the north of the Scuba Centre, and our dive boats take approximately 20 minutes to reach the site. The 165 foot freighter was sunk in October 1986 as part of a project by the Department of Fisheries to provide artificial reefs. It is covered in soft corals, sponges and hydroids, and provides an ideal habitat for many juvenile fishes such as Nassau Groupers, Queen and French Angelfishes. The wreck sits on an even keel on the sand. It is 30 feet to the deck, and 65 feet at the deepest point.

…is an experience you should not be missing out on, whether by snorkeling or scuba diving.

Anse Chastanet’s diving school SCUBA ST. LUCIA is located at the south end of the beach and our scuba team will be more than happy to assist you learning to snorkel or scuba dive. We can even certify you, time permitting!

INTRODUCTORY DIVING So you have never dived before but you would like to give it a go. Just what is diving? Well, it can be relaxing yet on the other hand it can be action-packed. Sometimes it is tranquil, sometimes it is “adrenaline pumping”.

Adventurous? Yes, but it is also very safe.

Diving is a sport enjoyed by very many people all over the world, and there are many parts of the world you can enjoy it. But be warned! Once hooked, no vacation itinerary will be made by you ever again without some sort of scuba diving included in it.

The best choice for the first-timer is an Introductory Dive, also known as a “Discover Dive” or a “Resort Dive”.

The three terms all basically mean the same thing - a way to get wet, experience the sensation, and see dozens of varieties of marine life, all whilst under very close supervision of an instructor.

A Resort course does not get you a qualification you can use later on. It is a one off experience to see if you enjoy the sensation, or because your time does not allow for anything longer than one day. To do a “Resort course” you still need to be able to perform a few basic skills and go over a few major points.

The Instructor is by your side the whole time and will even hold your hand if you feel the need. Please remember that this certificate is not a qualification and will not allow you any privileges next time you dive - it is

simply a memento of one of the best experiences of your life. To get a recognized qualification you will need to complete a Certification course.

ROMANCE BELOW AND BEYOND! This would not be ANSE CHASTANET if it did not offer a special romantic experience even underwater!

Couples wishing to make their first dive a shared private special experience can sign up for the ROMANCE BELOW AND BEYOND beginner’s course. The scuba beginner’s course will be taught exclusively for the couple, including a personalized underwater picture and video clip slideshow to memorize the special event.

SNORKELING We realize that scuba is not for everyone and that’s why snorkeling is a great alternative and even if you are not experienced in the water at all we can still show you its beauty. We can teach you how to be comfortable with snorkeling equipment and even if you have been before we know all the tricks to stop masks leaking. We have trips out twice a day on our snorkel boat with a certified guide in the water to take care of you and with a great Piton view too. Escorted boat snorkel trips are available at a charge. Snorkeling off Anse Chastanet bay is free of charge. Snorkeling equipment is available to our resident guests free of charge.

Course Options for Certified Divers Refresher Courses If it has been a while since your last dive or you are feeling a little rusty, we would recommend a refresher before your trip to the reef. You will need to read a Scuba Tune-up Course, go over the equipment, followed by some practical skills and then a dive on the reef.

Open Water Certification A Certification course is a qualifying course that will give you certification as a recreational scuba diver. On completion you are given a license, which is usually valid for life. The course itself teaches the fundamentals of scuba diving, including dive equipment and techniques. They usually include a few days completing confined water dives and knowledge development sessions and finish with making four open water dives in the ocean.

We suggest you visit the dive centre to find the best option for you.

Advanced Open Water Courses Advanced Open Water courses are the important first step in continuing your dive education. It is designed to give the newly certified or not so experienced diver added confidence and enjoyment in their diving through additional skills and training.

Prerequisite for this course is a PADI Open Water Certificate, or equivalent, with another training agency.

Adventures in Diving No time to complete the full advanced course? Take advantage of the adventures in diving program. Do three dives towards your Advanced certification or just complete one adventure dive which can be signed off and you can continue your adventure diving on your next vacation.

Adventure dives include dives such as

Deep, Navigation, Boat, Multi Level, Drift, Under Water Naturalist, Photography, Videography and Night Diving.

Underwater Naturalist Specialty Interested in the Marine Reserve and aquatic life? Then this program is for you!

You will need to be a PADI Open Water Diver and be at least 12 years old. Your PADI Underwater Naturalist program will include two open water dives. These dives will introduce you to different aquatic life and include an overview of responsible human interactions with aquatic life. Some of the topic covered are: The planning, organization, procedures, techniques, problems and hazards of diving in different aquatic environments - A basic overview of major aquatic life groupings - Factual information that dispels myths of potentially dangerous aquatic life - An overview of basic aquatic life interactions and associations - Responsible human interactions with aquatic life - Diving technique used to help preserve bottom dwelling aquatic life and minimize aquatic life disturbance.

Photography Specialty The PADI Underwater Photographer Specialty course can help you learn how to take your fist underwater photographs or fine tune your existing skills to produce photographs that will stun your friends and family back home.

You’ll learn the basic skills of underwater photography such as camera handling, composition, film type, with special emphasis on practical techniques.

You’ll learn underwater photography dive planning, organization, procedures, techniques and potential problems. You’ll also learn how to care for and maintain your camera equipment.

Reef Life & Renewal at Anse Chastanet and Scuba St. Lucia The Scuba St. Lucia team at Anse Chastanet and Jade Mountain has embarked on the essential mission of maintaining two coral nurseries, striving towards the preservation and restoration of our vibrant coral ecosystems that gloriously grace our pristine coastline. The coral nurseries play a vital role in the recuperation of our damaged reefs, fortification of biodiversity, enhancement of the resilience of our coral ecosystems, while also augmenting the understanding of coral preservation's significance.

All guests, including our seasoned scuba divers, are offered a rare opportunity to delve into the workings of coral nursery management and visit the very spots where these nurseries flourish. Our focus is primarily on the conservation of two of the Caribbean's most critically endangered coral species: the Elkhorn coral (Acropora palmata) and the Staghorn coral (Acropora cervicornis).

In addition to fostering the growth of corals, our nurseries also function as an educational hub. We conduct workshops and training sessions to spread

awareness about the indispensability of coral conservation. Guests are invited to witness the mesmerizing beauty of these intricate organisms up close and understand the daunting challenges they face.

Our Reef Life and Renewal Ambassador spearheads our coral restoration activities and conducts certification courses as well as complimentary lectures on coral restoration, and the identification of coral, fish, and turtles.

My name is Kerwin Louisy. I am the captain of Anse Chastanet’s 38-foot monohull sailing yacht, “Suzi Q”.

Enclosed please find a schedule of our trips. We offer 1/2 day tours and sunset cruises. On our 1/2 day excursions we find a beautiful place to stop for a snorkel or swim so bring along your swimwear and snorkel gear. Sunset cruise guests enjoy drinks and hors d’ouerves while watching the sunset from sea. Upon request, we also offer full day sails, private sunset Champagne cruises and honeymoon charters.

Jungle Biking Adventure

E

xperience the incredible beauty and rich visual texture of eco-friendly trails in a coastal tropical jungle like setting with ruins from an 18th century French plantation estate. The unique trails, about 8 miles in all, are suitable for those new to off-road biking, but also include Tinker’s Trail, designed with 5 time world champion and 2 time Olympian Tinker Juarez, which challenges even the best of riders.

There are intermediate single tracks such as the roller coaster like Banja, French Wall and Bamboo Rock loops.

The shaded trails can be ridden without sunglasses even on the

sunniest day. And on those days when the sunshine becomes “liquid,” the groomed trails are lots of fun. Besides, when was the last time you got to play in the mud? Bring your camera, though, it makes for great photos. Best part, we clean the bikes. You can shower and change clothes in our dressing rooms before coming back to the hotel if you like.

Look up through the tops of the trees, listen to the birds and bask in the realization that you’re in the middle of the jungle and not at work! Or, if you prefer, make it a photo safari and hunt for wild orchids in the trees or just find a romantic secluded spot to enjoy the serenity of the moment.

First time rides are available daily. Check with the Adventure Desk at Scuba on the beach or call from Reception as to dates and times you want to ride and availability. First time rides include Cannondale bike and Bell Helmet rental, and a guided ride to point out the various trails and features along the perimeter Green level trails. After that, we turn you loose to explore at your own pace and go wherever you want. Ride as long as you like.

Repeat Rides are available after first time rides any time of the day during normal business hours. You just need to remember your bike and helmet size. As you already know the trails, you can get your bike and set off where you like.

oin us for a fantastic ocean kayaking experience on one of our five exciting kayak tour options. Whether you are a beginner paddler or a proficient sea kayaker we can offer options that will match your skill level and interests. On all tours you will paddle at your own pace for comfort and enjoyment.

You also have a choice of which type of kayak to use… sit-inside or sit-on-top models. For those who want a more serious coastal kayaking experience we do recommend using our Prijon sit-inside sea kayaks which feature rudders, ergonomic seats, and thigh braces.

Upon arrival, you are greeted by our professionally trained guide who will discuss your paddling goals and objectives. Once we have determined your kayak experience, we will custom create the tour experience just for you.

For first time participants, all five of our tours begin with an instruction session which includes an overview of the boats and all equipment needed to ensure a safe paddling experience on the water. We will set our boats up and learn the SEAL launch to get you out onto the beautiful Caribbean Sea. Before departing, we will also go over decision making, balance, stroke technique and what to do if you capsize. With a new arsenal of paddling and safety skills in your repertoire, it’s time to explore!

Soufriere Bay to Petit Piton to enjoy the spectacular views of the sheer mountain face rising vertically from the sea to a height of nearly one-half mile. After exploring more of the magnificent coast you will land ashore to stretch your legs or perhaps take a relaxing swim. On the return journey you will have the option of following the bay coastline towards the town of Soufriere for some added sightseeing.

Our basic and most popular tour option is Kayaking the Coast of Soufriere Bay. Donning our PFD’s, Personal Flotation Devices, your guide will lead you out and around Grand Caille Point and over one of our very popular dive sites, FAIRYLAND. From there, you will continue to paddle along the coast to examine the weathered volcanic cliffs eventually reaching the famed bat cave and Hummingbird Beach at the north end of the Soufriere waterfront. All along the way, you will be treated to great views of the twin peaks of the Pitons - a UNESCO World Heritage site - rising majestically out of the sea. A waterproof camera is a must!

Our most demanding and exhilarating kayaking option is the Paddle to the Pitons Tour that takes you across

Our Fishing Villages & Beach Picnic tour allows you to explore the scenic coastline north of the resort. Once you’ve worked up a good appetite your guide will arrange for the delivery by boat of an excellent lunch prepared especially for you by our Anse Chastanet Resort chefs.

There are several scenic deserted beach options on which you can enjoy your Caribbean picnic. After lunch and a cooling swim, you will return at a leisurely pace to the resort.

For our more romantic guests we offer a Sunset Kayak Tour that departs later in the afternoon allowing you to enjoy a Caribbean sunset out on the sea. And if birds are your interest there’s the Birdwatching Kayak Combo that focuses on the activities and nesting sites of a variety of seabirds that make the rugged cliffs in our area their home. This tour is best enjoyed early in the morning or in the late afternoon when the birds are in their nesting areas.

Pointe Seraphine Duty Free Shopping Depart the resort on our power catamaran, Miss Babsie, and cruise north along the scenic Caribbean coastline passing the fishing villages of Canaries and Anse La Raye before entering scenic Marigot Bay for some great views of one of the most picturesque harbours in the Caribbean.

Then it’s on to Castries where you will enjoy some excellent views of the harbour, city waterfront and the surrounding hillsides which are rich in island history.

Jewelry, clothing, electronics, shoes and leather goods, children’s clothing, Caribbean art and craft products, gifts and souvenirs and many other items are featured. Pointe Seraphine also offers options where you can enjoy a refreshing beverage or a light snack. You will then re-board the boat for the journey south returning to the resort by around 1:30 p.m.

Don’t forget to take along your passports and airline tickets which are required for duty free shopping.

You will disembark from the boat at the Pointe Seraphine Duty Free complex, St. Lucia’s premiere facility. There’s plenty of time to enjoy the great variety of stores with everything offered at duty free savings.

Jazzy Sunset Cruise Cruise the blue Caribbean in comfort and style on a luxury catamaran with magnificent views of the resort, the coastline and the Pitons presented all along the way. The Jazzy Sunset Cruise departs the resort’s jetty on Thursdays at 4:00 or 4:30 p.m. depending on the time of year.

Step aboard and be welcomed with a rum punch, a true island favourite. Don’t forget the camera as we begin with a slow cruise north along the shoreline providing great views of the resort and exotic Anse Mamin Beach.

Sweeping west we head out to sea for panoramic vistas of our entire region. Enjoy the enticing sounds of on-board live music featuring a blend of romantic ballads, soulful rhythms and Caribbean favourites, creating a perfect ambiance as our staff serves canapés and drinks from the open bar all along the way. Ret urning towards shore we drift below the Pitons; from the boat the majesty of the island’s iconic mountains can truly be appreciated.

Attention soon turns westward as the sun drops to the sea with the promise of a colourful Caribbean sunset which, of course, is celebrated with a glass of Champagne. As dusk unfolds the boat cruises leisurely back to the resort, which is now lit by a myriad of lights and beach torches.

Sulphur Springs, Diamond Fall & Gardens and Emerald Estate Visit the world’s only drive-in volcano, the Sulphur Springs, in route to the picturesque waterfall at the Diamond Falls & Botanical Gardens. As they are two of the island’s most popular tourist attractions we are fortunate they are so close to the resort making visiting an easy morning excursion. The pools at the mineral baths are filled with therapeutic mineral-rich water which is naturally heated by the volcanic activity in the nearby Sulphur Springs region. Take along bathing suits for a soothing dip.

The rejuvenating powers of the water were recognised by the troops of Louis XIV who created the original mineral baths! From Diamond you will stop in at nearby Emerald Estate, which is owned and operated by the Anse Chastanet Resort who uses the property to grow a great variety of organic fruits and vegetables as well as a variety of herbs

Saturday’s Castries/Marigot Bay Shopping Trip by Water Taxi The water taxi leaves Anse Chastanet at 9:00 a.m.

Upon your arrival at the Castries harbour the boat Captain will take on a brief walking tour of the town center, which will include a stroll through the famous Castries Market. You will then re-board the boat to cross the harbour to the Pointe Seraphine Duty Free Shopping complex. On the return cruise south you will venture in to Marigot Bay where you can select from a number of restaurants to have lunch. The tour returns to Anse Chastanet between 2:30 p.m. – 3:00 p.m. depending on whether or not you wish to have lunch at Marigot Bay. Don’t forget to take along your passports and airline tickets which are required for duty free shopping. Note: the price of lunch is not included in this package.

The guide will then rejoin you to continue the tour of the magnificent and dramatically colored falls and the remainder of the gardens. A camera is a must. You will return to the resort by around 10:15.

Diamond Waterfall

By private arrangement you will visit the famous Diamond Falls & Botanical Gardens before it opens to the public. The tour includes a tour of the gardens and falls and relaxing bathing in one of the three pools which are cleaned and refilled overnight especially for our guests. Morne Coubaril Zip Line & Plantation Tour For guests who wish to combine a bit of adventure with hands-on local history, the Morne Coubaril ‘Hotwire’ Zip Line & Plantation tour is a perfect way to spend a few morning hours.

Participants depart the resort by taxi at 10:00 a.m. for the 15 minute ride to nearby Morne Coubaril, one of the island’s oldest French plantation estates. You will stroll through the botanical gardens to the zip line facility to gear up for the eight Hotwire lines that await. Besides the elation of the zip lining, you will be treated to magnificent views of the Pitons, Soufriere Bay and the town and its surrounding mountains. Your guide will then take you on a short tour to see the processing of coconuts for the making of a variety of food products, the production of cocoa and coffee and a working mill that produces sugar cane syrup; and, of course, you will get to taste the various products along the way. For those who want another dose of adventure Morne Coubaril offers an optional Coconut Tree Climbing station with a safety harness system that

allows you to test your strength and agility. Before departing you can stop into their quaint gift shop that offers some of their own products along with authentic locally made items. You will return to the resort around 12:30.

Zip Lining and Canopy Tours The zip-line adventure takes place on the east coast of St. Lucia in the heart of the rain forest at the beautiful Errard Estate. The 300-year-old estate was once a spice plantation, and it is full of fragrant nutmeg trees and abundant cocoa trees. There is also an amazing river and waterfall.

Upon arriving at the zip base, you will be given a safety briefing and then outfitted with harnesses, helmets and gloves. Then it is off for the fun part. Traverse a series of nine platforms, with the longest run being 700 feet with a 60-foot drop.

You don’t need to be the athletic type to enjoy this tour, but it isn’t recommended for pregnant women or people with back problems, and the set-up cannot accommodate anyone weighing more than 250 pounds.

Dolphin & Whale Watching EXPERIENCE

The Whale Watching tour goes out on a comfy 52 foot catamaran. When whales are encountered the engines are cut, the sail unfurled and the hydrophone dropped into the water to allow guests to hear the calls and singing of the magnificent sea mammals. The following is a list of whales and dolphins to be seen off the coast of St. Lucia. They can be seen for the most part of the year, although the month of December to March may be more productive for sperm whale bulls.

This mammal has an erect triangular dorsal fin. It swims in large herds and is known to leap clear of water rotating around its longitudinal axis.

Grow to 12 feet.

Its coloring is dark gray barks to white bellies with a short defined beak. The dorsal fin is on the center of the back.

It rides bow waves and wakes of boats.

Feeding on fish, squids, shrimps and crabs it uses echolocation to hunt prey.

Sea & Land Tour Leave Anse Chastanet by sea along St. Lucia’s scenic Caribbean coastline and return by land via the dramatic Atlantic coast. Depart Anse Chastanet at 8:30 a.m by boat for Castries. You will see deserted beaches and beautiful bays as well as charming fishing villages scattered along the coast. Upon meeting your air-conditioned taxi you will be taken to various sights north of Castries such as the Point Seraphine Duty Free Shopping Complex and the beautiful Pigeon Island National Park. You will also pass through the Rodney Bay area – host to the famous ARC yacht race (Atlantic Rally for Cruisers) which begins in Spain’s Canary Islands and finishes in St. Lucia. After Pigeon Island you will be ready for lunch at Jacque’s Restaurant, long known as one of the island’s finest.

The tour continues across the interior Rain Forested mountains to the east coast with its spectacular rugged features which are dramatically different from the Caribbean side of the island. It is a long day, but worth it if you want to see as much of our island as possible. Your journey down the East Coast Road will include a stop at

Anse Chastanet Guide, Meno

Exploring The 600 Acre Estate Every day except Sunday, guided walks and hikes are offered on the resort’s 600 acre estate or other nearby areas. Most of these walks are complimentary. Check out the Anse Chastanet Walking Tours page in this booklet for full details and see the Guest Services Desk or the current in-room Excursions information sheet for schedules.

Tet Paul Nature Trail For guests who wish to enjoy from up high the majestic beauty of the world’s most famous pair of mountains – but don’t wish to do any serious hiking or climbing – the Tet Paul Nature Trail is for you. Traveling by taxi you will pass through the town of Soufriere to a small mountain top community in the nearby countryside. The Tet Paul Nature Trail, which is approximately ½ mile in length, affords an easy stroll through the cool air in the midst of St. Lucia’s World Heritage site. Great views of both Gros Piton and Petit Piton, the island’s southern region and the blue Caribbean below abound. And of course there is plenty of natural beauty along the trail which requires a modest level of fitness and exertion.

After leaving Tet Paul the taxi will return via scenic back roads passing through the Rain Forest community of Fond St. Jacques. Plenty of interesting sightseeing and photo opportunities are presented all along the way.

Rain Forest Hikes THE CENTRAL ST. EMOND RAIN FOREST comprises of 19,000 acres and is easily accessible from ANSE CHASTANET, the main entry being about 40 minutes away. As it generally rains more in the Forest (as the name would suggest), it is always a good idea to take along some cover. Wear comfortable and strong shoes and be prepared for them to get muddy. Insect repellent might also be advisable. Please note that the official Rain Forest Reserve can be visited only with the express permission of the Forestry Division (a right granted to ANSE CHASTANET) and in company of an official Forestry guide.

The Enbas Saut Waterfall Trail (4 1/2 Hours) The Enbas Saut Falls Trail is a 4 km trail which passes through one of the most remote, wild and unbelievably scenic parts of the island. The trek features a combination of Rain Forest, Cloud Forest and Elfin Woodlands as well as a chance opportunity to enjoy our local wildlife including the elusive St. Lucia Parrot (Amazona Versicolor), St. Lucia Oriole, St. Lucia Black Finch, Blue Hooded Euphonia, or Mountain Whistler. The hilly terrain of Piton Canarie, Piton Troumassee and Mount Gimie are viewed along the way.

Enbas Saut, when translated to English, means “below the falls”. This trail is most famous for its two cascading waterfalls and pools at the head of the Troumassee river.

Guest pick up is at 8:00 a.m. at Porte Co-chere. You will reach Edmond Forest Entrance by Fond St. Jacques where the guide will await you at the entrance. Soft drinks are included. Take your bathing suit and towels if you wish to get under the falls! It is most definitely invigorating!

Enbas Saut is a challenging and strenuous hike and should be attempted only by those with an above average fitness level.

Comfortable and strong footwear is recommended!

The Microreflector Trail (3 – 4 hours) The tour starts at the entrance to the Edmond Forest where your guide will be waiting. The Microreflector trail is a 6 mile loop with the first mile being a rather steep climb.

Thereafter, the trail goes down and levels out. The trail enables you to get a panoramic view of the forest as well as both the northern and southern reaches of the island in

the distance. And there’s always a chance to see the rare St. Lucia parrot and other endemic species.

Your driver will be awaiting you upon your return to the entrance with a sumptuous picnic lunch. Soft drinks and water are provided – we suggest that you carry your water along the trail. Guest pick up is at 8:30 a.m. at Porte Cochere by taxi for the scenic half-hour journey to the Edmond Forest entrance just beyond the village of Fond St. Jacques.

You will return to Anse Chastanet around 2:30 p.m. Be sure to wear appropriate footwear.

Birdwatching This is a tour especially designed for bird lovers – leave ANSE CHASTANET at 5:30 a.m. in the morning and meet your guide at 6:15 a.m. at the entrance. Your guide will take you to a strategic location within the Forest for quiet birdwatching. Expect a 30 minute walk to get to this location where you will spend about 2 hours. Return to ANSE CHASTANET, departing the Forest around 9:00 a.m.

Includes small snack pack and soft drink. We can arrange many more birdwatching excursions to birding locations around the island.

Rainforest Crossing (4 – 5 hours walking/hiking) This is by far the most strenuous hike, but also possibly the most rewarding if you are up to the challenge. Departing Anse Chastanet at 8:00 a.m., you will begin your trek at the entrance to the Edmond Forest Reserve at 8:45 proceeding across the Forest Reserve on the “Old French Road” (trail).

fruit, breadnuts and avocado and vegetables such as yams, potato and dasheen (all staples of our local cuisine).

The mainstay of the estate is its flower production; there are eight greenhouses with Hybrid Anthuriums, White Ginger Lilies, and Heliconia. Local Caribbean Pink Anthuriums are grown in the open under the cocoa which provides natural shade.

Excursion participants will have the opportunity to visit demo plots and see how the various flowers and vegetables are grown. You will also see and can participate in other activities on the Estate, such as harvesting and processing of cocoa, coconuts and vegetables.

Bon Nouvel has four walking trails, each offering a different experience. The Rainforest Trail begins with an easy climb up some steps and a magnificent view of Gros Piton. On this trail you will get opportunities to see and hear about the many indigenous species of birds found at Bon Nouvel.

At the end of the Rainforest Trail you will get to view demo plots of vegetables and Anthuriums being grown.

The next trail is the River-Ridge Trail where you will cross Jones’ plateau and descend along the ridge of the L’Ivrogne River with a stop at Jonathan’s view point where you will get to look out onto the historic Delcer canal, the river and Gros Piton. Breathe the fresh air and listen to the soothing sound of the water. It is truly a relaxing experience!

Enbas Saut Falls

Rain Forest. You will have a very good chance to see the St. Lucia Parrot and even the endemic Boa Constrictor along the way. As you reach Mahaut the forest gives way to the banana plantations on the east coast. You will be met by your driver with a picnic lunch. The 1 ½ hour return drive will loop the southern tip of the island providing plenty of sightseeing along the way You will return to Anse Chastanet before 4:00 p.m. Comfortable and strong footwear is recommended.

Bon Nouvel Nature Trail Bon Nouvel Nature Trail is a beautiful eco and agro heritage site established within Esperance Estate, a 56 acre working plantation established in 1830. The estate, bordering the Pitons World Heritage Site, has seen the production of tobacco, sugar, cocoa, coconut and coffee, and currently produces flowers, cocoa, honey, cinnamon, citrus, coconut, fruits such as grapefruit, tangerine, mangoes, tree crops such as bread-

The Glace Trail named after the family that owned the Estate for over 100 years is a must see. There you will see a myriad of flowering plants and fruit trees, including cocoa, guava, apricot and Caribbean Pink Anthuriums. The herbal and medicinal garden is truly unique; learn about the uses of Panadol, basil, mint and other local medicinal plants.

Our Carib hut, and cassava plot give you a glimpse of Saint Lucia’s Carib history. Clay pots, straw products and other crafts from that era are on display. Further along there is the tranquil flower garden where you can walk amongst roses and local flowers or sit and breathe in the fragrant air.

The Glace Trail ends in the Valley of the Saints, a peaceful savannah where you will enjoy an amazing view of Gros Piton and the ruins of a former sugar mill.

If you are an avid hiker, we recommend that at the end of Glace Trail you consider returning via the uphill Carib Trail on which you can inhale the scent of our collection of bayleaf and enjoy views of Gros Piton. However, if you are not inclined to hike up the steeper steps of Carib Trail, you can feel free to return on Glace Trail.

Enjoying the main three trails requires an average level of fitness; above average is required for Carib Trail. Appropriate footwear is recommended; a bottle of water and optional hiking stick are provided.

Climbing

GROS PITON Climbing Gros Piton is a strenuous challenge and should be undertaken only by very fit and experienced hikers.

You depart Anse Chastanet at 6.30 a.m. and begin your tour at “Fond Gens Libres” which is translated as “village of the free people”, a forty-five minute drive from Anse Chastanet. Upon arrival you will be met by the Gros Piton guides.

As you set off you will encounter the rare birds and wildlife that find sanctuary in this rugged and somewhat remote part of the island. The St. Lucian Wren, St. Lucia Oriole, St. Lucia Black Finch and the Red Neck Pigeon are just some of the rare bird species that will add to your experience along the trail. You will also notice changes in vegetation which are quite obvious as you proceed to the summit. Transitions range from an arid deciduous woodland along the coast, to broad middle zone rainforest and an upper mountain zone of Elfin woodland and wind-swept dwarf forest.

The first half of the trail involves climbing over large rocks as the trail starts gradually in a gentle slope where the Caribbean and the village at Choiseul can be seen to the south. The second half of the trail involves a steep ascent to the Gros Piton summit and is intended for the more adventurous hiker. This climb is approximately 3 to 4 hours round trip.

If you make it to the top, which is 2,619 feet above sea level, you will have climbed one of St. Lucia’s national landmarks. The Pitons and the surrounding area have been designated as a World Heritage site.

You may find that the steep descent will be especially hard on your knees; take it slow and be cautious along the way.

This tour is available upon request Monday through Sunday. It is strongly suggested that you carry water along the trail. Suitable hiking shoes and appropriate clothing are also recommended. GUESTS MUST BE PREPARED FOR A CHANGE OF CONDITIONS DURING THE CLIMB THAT MAY DRAMATICALLY INCREASE THE RISK OF SLIPPING.

PETIT PITON PETIT PITON PRESENTS AN INTERESTING CHALLENGE FOR THE VERY FIT AND EXPERIENCED CLIMBER. Petit Piton is the most difficult to climb but it is also the more exciting in terms of view from the top.

HOWEVER: A legal advisory put in place several years ago suggests that you do not attempt to climb the Petit Piton and even though this advisory is not being enforced it is important

to note that it is still in place. The reason for the advisory is the fact that a lot of the flora on Petit Piton was severely damaged in a bush fire several years ago which has led to the climb being more dangerous and difficult especially for the descent. Feel free to contact the Forestry Department or the St. Lucia National Trust for more information.

There are no licensed guides available, even though both the Tourist Board

Office in Soufriere and the Soufriere Police Station have names for persons who act as guides. Some of the ANSE CHASTANET employees have been acting as guides. Please note that such an arrangement is made during their time off, and is in no way connected or recommended by ANSE CHASTANET. Should you enter into any such an agreement with an ANSE CHASTANET employee, or with any other guide for that matter, you do so entirely at your own risk.

Helicopter Tour Anse Chastanet Resort is fortunate indeed to be the only resort in Saint Lucia to have its own helipad which provides our guests a convenient and very scenic option for airport transfers as well as a great tour option to view our magnificent scenery from above. Our 20 minute exclusive Helicopter Tour departs from the Jade Mountain Helipad providing participants the ultimate views of the entire island including visiting Rodney Bay, Cas en Bas, Grand Anse Beach, Marigot Bay, the Sulphur Springs volcano and the world famous Pitons, Saint Lucia’s iconic mountain pair. All along the way the pilot will provide interesting and informative commentary. The tour schedule is flexible but the morning generally offers clearer visibility conditions and better availability. Booking in advance is required and can be done at the Concierge/Guest Services desks..

Horseback Riding Saint Lucia is fortunate to have several professional horseback riding operations which offer guide led rides on well-kept and trained horses. As the operations are located at different parts of the island each offers its own unique experience for both the riding and the sightseeing afforded to participants in travelling to get there. Several operations include riding on a beach and into the sea, which riders enjoy almost as much as the horses! Golf The St. Lucia Golf & Country Club in Cap Estate welcomes non-members. The 18-hole course is located in the very north of the island and we usually recommend a water-land taxi combination to get there. Please receive further details from our Guest Services or Concierge Desks.

Explorer Tour For those who want to see it ALL! A tour all around the island by taxi for the guest who does not mind getting off the ‘beaten path’ and desires to see the “real” St. Lucia.

GRENADINES - Day Excursion by Plane and Boat For guests who wish to visit our beautiful neighbor to the south, we offer a great excursion to do so. The tour starts with an early morning taxi to the G.F.L. Charles Airport in the north of the island. Guests then board the plane for a 20-minute flight along the west coast of St. Lucia and the east coast of St. Vincent to arrive at the Grenadine Islands.

You will have a bird’s eye view of the islands of Bequia, Mustique and many others before landing at Canouan.

You will also be given the opportunity to participate in the tasting of all the products made and blended (in excess of 20) at the distillery. The “Rhum Shoppe” is a walk away from the bar, where purchases can be made at ex factory prices. Tour is approximately an hour and ten minutes long.

A Caribbean Experience - this tour provides in-depth information on the production of rum and offers the opportunity to taste the different rums and liqueurs produced. A forty-five minute drive from Anse Chastanet takes you to Roseau Valley where St. Lucia Distillers, the only rum-making factory in St.Lucia, is nestled into the vast banana fields. The tour begins at the Orientation Center with its quayside theme where you meet your guide and will learn about the history of the Roseau Valley, one of St. Lucia’s long time agricultural centers. Here are some highlights of the tour: - A ten minute video presentation of the story of rum in St. Lucia and how it is produced.

- A 3 dimensional (3D) display in the actual distillery section, along with a short narration on the involvement of sugar cane in the production of rum.

- The opportunity to view a “pot still” work. The pot still is made of clear glass where you will be able to view the process in clear details.

- Coopers Workshop where rum barrels are mended and a display of cooper’s tools, past and present. A re-creation of a village scene, with local rum shops and display on local village life.

- Distillery’s “aging bond” where you are informed of the aging process, and there will be three examples of rum on display in gallon bottles, where you can sample the smell and see the varying ambers aging can create. Then a fun visit to the “hen house” where you view another 3D display of a mongoose attacking a snake.

- The most popular rum of the Island is “Bounty Rum” also known as the “Spirit of St.Lucia” and to keep with this spirit you will be led to the Carnival Section to experience another spirit of St. Lucia. You will hear pulsating Caribbean

After the tour your driver will take you to Marigot Bay to meet with your Boat Captain for your return trip to the resort via water taxi. You depart Marigot at 1:00 pm to arrive at Anse Chastanet approximately 40 minutes later.

Segway Tour Located in the heart of Rodney Bay Village, the island’s centre of tourist activity, the tour features some great sightseeing allowing our guests to enjoy more of St. Lucia’s charm and beauty. The tour departs Anse Chastanet by boat for a cruise up the scenic west coast. The fishing villages of Canaries and Anse La Raye, as well as the beautiful harbour of Marigot Bay, are passed along the way.

At the island’s capital, Castries, you will be met by a land taxi for transfer to Rodney Bay passing many resorts and other interesting sights on the easy journey north. Upon arrival you will be given instruction on riding your personal Segway on the Practice Track before venturing off. The trail takes you along the beach before heading up the mountain which is perched over the southern edge of Rodney Bay. Your tour guide will provide interesting information along the way as you enjoy views of the busy northern tourist hub. The view from the top is truly spectacular and having a camera is a must.

f you are interested to learn more about our sustainability efforts and get a glimpse of the “back of house” then you will enjoy this property tour and lunch with our Property Manager and In-House environmental guru Carl Hunter. The tour is available once weekly whenever possible. The tour focuses on the history of Jade Mountain’s environmental development and management of our precious water resources.

The tour begins with a welcome by Carl Hunter in the Jade Mountain Club and an overview of the pool concepts and continuous moving of 300,000 gallons of water through Jade Mountain.

Then continue with a tour by vehicle of the Anse Mamin valley reservoir and catchment. This allows you to follow the water story all the way up to the water production facility where 100% of the water for Jade Mountain is made and stored.

Looping back, guests will get to see the reed beds, a manmade wetlands project spanning 4 acres. These wetlands naturally filter the waste water generated by the resort and allow us to have zero waste discharge to the marine environment.

The tour of the facilities will end with lunch at the Jungle Grill on Anse Mamin beach (Optional/ lunch not included), where guests will have the option to further quiz Mr. Hunter and learn about the resorts sustainability activities and the environmental awards we have received in the process.

Birds

of St.Lucia The wealth of birdlife on St Lucia has to be seen to be believed. The island is home to five species of birds found nowhere else on earth; St Lucia Parrot St Lucia Pewee St Lucia Warbler St Lucia Black Finch St Lucia Oriole Furthermore, it is home to another two species found on just one or two nearby islands and a further five who’s range is restricted to the island chain forming the Lesser Antilles. Finally, another eleven species of birds have an endemic subspecies foundonly here in St Lucia In total, there are 57 resident bird species on the island. Of these, at least 31 can be regularly found either within, or looking out from our grounds here at Anse Chastanet. Additionally, a number of migrating species together with visitors coming to the island to breed can be seen at the appropriate season. Classification is the sorting out of different kinds of plants and animals into increasingly narrow categories. Kingdom, Phylum, Class, Order, Family Genus and Species. This process, which gives a special scientific name to every living thing, has many uses. For example, our Parrot may be called “The St Lucia Parrot” in English, or “Jacquot” in Patois, but scientifically it is known as “AMAZONA VERSICOLOR” in the world over.

Saint Lucia Parrot

Anse Chastanet is fortunate to have one of the island’s best birdwatching locations right on the resort property within the Anse Mamin plantation, a lush coastal jungle with its 18th century plantation ruins. The tour is designed for both novices and veteran birdwatchers.

Interesting ancillary information about the old plantation and its existing flora and fauna are also presented.

Mangrove Cuckoo

For birding enthusiasts, St. Lucia features several other locations which feature an alluring variety of birds within very scenic natural environments. One of the most popular is the Millet Bird Sanctuary Trail which is located in the island’s midsection north of Soufriere. The walk is led by a Department of Forestry; over 30 species can be seen along the way, including five endemic species: the St. Lucia Black Finch, St. Lucia Parrot, St. Lucia Warbler, St. Lucia Oriole and St. Lucia Pewee.

For those who wish to combine birding with a visit to St. Lucia’s most lush rain forest we offer tours to the Des Cartier Trail, which is located inland from the east coast village of Micoud. Following ridge tops at about 1,800-feet above sea level, this relatively easy 1.5 mile loop hike takes you through one of the wettest tropical forests on earth receiving as much as 150-200 inches of rain annually. The St. Lucia Parrot is readily encountered along this trail.

There are several other options for bird watching guests to consider including the Gros Piton Hike which offers encounters with a number of rare birds and wildlife that find sanctuary in this rugged and somewhat remote part of the island. The St. Lucian Wren, St. Lucia Oriole, St. Lucia Black Finch and the Red Neck Pigeon are just some of the uncommon bird species that will add to your experience along the trail. St.Lucia Factfile GEOGRAPHY St. Lucia is one of the curved chain of volcanic islands which comprise the Lesser Antilles. It is one of the largest of the Windward Islands. It is separated from Martinique in the north by a channel 21 miles wide, and from St. Vincent in the south by a channel 26 miles wide, and is located 110 miles northwest of Barbados.

St. Lucia is 27 miles long, 14 miles wide giving a total of 238 square miles. The island is mountainous, the highest peak being Mount Gimie (3,117 ft). The most spectacular mountains are the Gros Piton (2,619 ft) and Petit Piton (2,461 ft) which are old volcanic spikes or extrusions rising out of the sea near the town of Soufriere.

BRIEF HISTORY St. Lucia was first inhabited by the Arawaks who migrated from South America in the Pre-Christian era. These peaceful settlers were replaced by a more warlike people called the Caribs.

It was originally believed that Christopher Columbus discovered St. Lucia on December 13, 1502 - the feast of St. Lucy - and hence named the island Santa Lucia. Facts have recently come to light suggesting that another famous explorer Juan de la Cosa probably discovered St. Lucia in 1499 or 1504. He was the navigator on Columbus’ first and second voyages. None of them actually landed on St. Lucia, but it is suggested that De la Cosa sailed passed St. Lucia while the nearest Columbus came to the island was by sailing around Martinique some 25 miles away.

All attempts to colonize St. Lucia were unsuccessful until 1650, when the island was purchased from the French West Indian Co. by two Frenchmen, along with the Islands of Grenada and Martinique for the princely sum of 1,660 sterling. For the next 150 years, the island changed hands fourteen times between the English and the French, finally being ceded to Great Britain in 1814.

In 1979, St. Lucia was granted independence and became a member of the British Commonwealth. In the same year, St. Lucia joined the Organisation of American States, and was admitted in to the United Nations as the 142nd member.

ECONOMIC GEOGRAPHY Beginning around the year 2000, tourism passed agriculture to become the leading sector of St. Lucia’s economy. The majority of hotels are located in the northern part of the island, with the greatest concentration found in the Rodney Bay area. The Soufriere area on the west coast is also an important part of the industry as it is the location of several

world-class resorts as well as many of the island’s main attractions, including the Pitons.

Agriculture continues to be an important part of the economy as it continues to go through significant changes. In 1953, the sugar plantations were transformed into banana plantations, which is still the principal export crop. Recent focus on diversification has resulted in cocoa, citrus fruits and other crops now contributing significantly to the economy as well.

DEMOGRAPHY An estimated 180,000 inhabitants, 40% of whom reside in the capital Castries.

RELIGIONS Nearly 80% of the population is Roman Catholic; other denominations are Anglican, Methodist, Baptist, Seventh Day Adventist, Jehovah’s Witnesses and the Salvation Army.

LANGUAGE English is the official language of the Island. PLACES OF INTEREST St. Lucia, the “Helen of the West Indies”, offers her visitors some of the most spectacular sightseeing in the whole Caribbean, be it historical sites such as the Louis XVI Mineral Baths or places of great natural beauty such as the Pitons, our Rain Forest or the Volcano and, here at ANSE CHASTANET HOTEL, most of these attractions are so close that it is almost compulsory to devote some of your time to a little sightseeing.

all it takes is to put on a snorkel, mask and fins - a whole new world is waiting to be discovered by you! This might be the beginning of a life long love affair with the sea and scuba diving.

SOUFRIERE AND ENVIRONS Soufriere, about 10 minutes from ANSE CHASTANET by boat or car, is a picturesque, typical West Indian town.

Soufriere was the oldest settlement in St. Lucia and it soon became the island’s prinicpal town. Soufriere had the largest population in 1775 with 2000 people and 100 estates, mostly in sugarcane and coffee.

During the French Revolution, a guillotine was erected in the square at Soufriere and several of the aristocracy lost their heads. The French influence is very strong in Soufriere and it is evident in the names of people and places, even thought the island has been English since the Treaty of Paris in 1814.

Unfortunately, due to a devastating hurricane in 1780 and several fires later Soufriere has about 7000 inhabitants.

Saturday morning is market day in town - and if you are an early riser - this is an interesting time to visit town. Besides the market activities which start about 6:30 a.m. (you should be there no later than 8:30 a.m.) there are a variety of small stores which you might want to explore.

DIAMOND MINERAL BATHS AND DIAMOND WATERFALLS Located east of town of Soufriere, these baths date back to 1784. Baron de Laborie, Govenor of St. Lucia, had these mineral waters analysed by the doctors of the French King Louis XVI. As a consequence of “Superman” Christopher Reeve picks a flower for Lois Lane at their report on the nature the Troubetzkoy’s private resiof the water generally, and dence near the upper Diamond Waterfall. in particular as one of the springs was found to possess properties identical with Aix Les Bain, the King granted a considerable sum of money for the construction of baths for the use of His Majesty’s troops in the Windward Islands.

Sadly, shortly after the French Revolution, the baths were almost completely destroyed in 1795. Sir Dudley St. Leger Hill, Governor of St. Lucia, tried to restore the baths in 1836, but could never achieve this goal and the baths were only restored much later by Mrs Joan DuBoulay-Devaux. She has

not only restored the baths but has also transformed the adjoining gardens into a true ocean of flowers to everybody’s delight. At the far end of the gardens you will find the lower Diamond River runs into the Sulphur Springs where the fresh clean water becomes heated to about 180’F, and saturated with minerals spewed from boiling craters. The water then cascades through the very centre of the volcano then continues downstream. Along its route there are six waterfalls of various heights, one of the prettiest being the Lower Diamond Falls, it’s rock wall being splendidly coloured by the mineral content of the river water. The upper Diamond Fall which unfortunately cannot be visited was used for a scene in the Hollywood movie Superman II. The tour guides stationed outside the Botanical Gardens are self-employed and would expect to be paid for their services.

MORNE COUBARIL A crown land grant in Soufriere was made to the Devaux family in Martinique by Louis XIV about the year 1713.

Three Devaux brothers came over to claim their rights to approximately 2000 acres of land. As the family grew larger the land was divided into smaller estates. The estate was damaged in the terrible hurricane of 1780, but was rebuild.

Morne Coubaril was one of the few estates spared by the Brigands during the French Revolution. The Devaux family owned the land for nearly 250 years until the last owner sold it in 1960.The most important crop was sugarcane, later taken over by cotton, cocoa and coffee. In 1960, Donald Monplaisir became the new owner of MORNE COUBARIL ESTATE with 200 acres of land and he continued the agriculture production. He considered the plantation as something to protect and he refused to sell parts of the property. When he died in 1993, the family agreed that one of his sons, Ralph Monplaisir, would be put in charge of the estate. In 1994, Ralph started his project to preserve the traditions in the spirit of agricultural life on the estate and created the unique opportunity to experience life a century ago on a plantation.

FOND DOUX ESTATE

The Lamontage Family has worked long and hard to bring this old estate back to life. The estate is known to historians because of the Battle of Rabot which was fought on Fond Doux Estate in 1795.

Several brigand fortifications and encampments still exist on the estate along with the ruins of the original estate house and work buildings.

The estate was part of a land grant given by King Louis XIV in 1713 to early French planters from Martinique. The estate was established in 1742 for the planting of cotton and coffee.

Sugar was the main crop from 1790 until around 1885 when cocoa and coffee became the focus. Bananas became the chief product around 1980. The current estate house dates GUEST INFORMATION - xliv

back to 1864 and the original drying shed and fermentry for cocoa, the copra house and the overseer’s house are still used. There are several estate trails, the Brigand Trail, Cocoa Trail and Citrus Grove Trail. Guided estate visits are now available.

UNION VALE Many old sugar-mills and factories may still be seen around Soufriere and some of the oldest surviving architecture.

There is a fine example of a water wheel at Union Vale Estate.

Unfortunately, Union Vale cannot be visited. It is the private estate of the Opler Family, owners of The World’s Finest Chocolate company. All the cocoa grown at Union Vale and almost the entire cocoa production of the island is bought by this company and used in the The World’s Finest Chocolate.

on the estate, but by 1765 sugar production took over as on many other estates. The hurricane of 1780 and the French Revolution of 1789 destroyed most of the buildings, even though there are still remains to be seen today, as well as a very impressive waterwheel which was imported in the 19th century from the British company Fletcher of Derby.

Close to the entrance to Soufriere Estate is a little shrine of the BLESSED VIRGIN, erected in memory of DESMOND DUBOULAY, who was shot in action during the 2nd World War when he was serving in the Royal Canadian Air Force.

SOUFRIERE CEMETARY One of the oldest cemetaries in St. Lucia. The first burial recorded there was in 1745.

MALMAISON Not too far to the north of Soufriere, but hardly visible today, was the estate of JOSEPHINE BONAPARTE, Born Tascher de la Pagerie, where she spent the first nine years of her life. Malmaison Estate was given to Josephine by her father, where she must have spent some very pleasant days, because she records very fondly in her dairy those early childhood memories. Josephine, who later married NAPOLEAN BONAPARTE, is believed by some to have been born in St. Lucia in 1763 at Paix Bouche Estate. There has been an ongoing dispute between Martinique and St. Lucia as to where Josephine was born. The ultimate proof is yet to be found.

TORAILLE WATERFALL A waterfall located in the outskirts of Soufriere, on the road to Fond St. Jacques.

STONEFIELD ESTATE The remains of a lime processing factory may be seen at Stonefield Estate. Oil was obtained by two processes; the first was by rubbing the limes over a rough surface to obtain a high quality lime oil from the skin; the other was by crushing and boiling limes to obtain oil. On Stonefield Estate, there is also a fine example of an Amerindian rock carving which can still be seen today. Stonefield nowadays is a small villa development.

SOUFRIERE ESTATE The property was originally part of 2000 acres of land granted to the DEVAUX family by Louis XIV of France (1713). Cotton, tobacco, coffee and cocoa were all grown

SULPHUR SPRINGS Commonly referred to as our “drive-in volcano,” beause you used to be able to drive a vehicle almost directly into the crater area. The Sulphur Springs are located just about two miles south-east of the town and will be an unforgettable and unique experience. One could not really call them beautiful, but they are dramatic, with steam coming up from the various size pools - tour guides claim that they boil their eggs for breakfast in them! Be prepared for a rather strong smell of sulphur and try not to wear any silver jewellery unless you brought silver polish with you as the sulphur will discolour the silver. See our special section on the volcanic origins of our island.

BALEMBOUCHE ESTATE When you step through the white gateposts, it seems as if you are entering another world. Few such “worlds within our world” remain, and Balembouche Estate is one of them. It is unique not only because of its historical value, but because of a part of the past is kept alive today. The traditional estate house is a home as well as a historical attraction. The ruins of the Sugar Factory with its 25 foot waterwheel date back to the many phases of the plantation; from the remains of the Arawak and Carib Indians, who GUEST INFORMATION - xlv

settled here 1500 years ago, up to the processing of coconuts, which came to a halt in 1993. The enchanting tropical garden with its huge old trees tells of former times and has also been extended to accommodate many little walkways, bridges and flower beds. The natural beauty of the rich vegetation at Balembouche provides perhaps the greatest enjoyment and tranquillity for visitors. Located near the town of Choiseul.

THE RAIN FOREST Our central Rain Forest today is restricted to the elevated interior to the east of Soufriere, approximately 9 miles inland, about 45 minutes ride from ANSE CHASTANET HOTEL, passing Soufriere and the small town of Fond St. Jacques.

This is a paradise for birdwatchers, botanist and naturalists and even the very rare St. Lucian Green Parrot can be seen frequently. 100 inches of rain and year round high temperatures provide the basis for the tropical Rain Forest.

CASTRIES AND ENVIRONS Castries is our capital with 60,000 inhabitants and with one of the busiest ports in the Caribbean.

Sadly, because of two fires in 1927 and 1948, most historical wooden houses having long been destroyed and only a few are left. If you stand at Derek Walcott Square, you will see the “old” on the one side and the “new” on the other side of the square.

Places of interest in Castries are the Market with fruit and vegetables in the exterior and handicrafts in the interior part of the Market. Derek Walcott Square with its Catholic Cathedral, Rain Restaurant on Derek Walcott Square for lunch or a drink and a variety of souvenir shops and street stands.

On the outskirts of Castries, Government House is an interesting sight, the official residence of the Govenor General of St. Lucia. From Morne Fortune, the hill of “good luck”, you will have a panoramic view over Castries Harbour, the Vigie Penninsula and Pigeon Island. A lot of military ruins can be found on Morne Fortune which date back to the 18th century.

connected with the main island by a causeway has played an important role throughout St. Lucia’s history. First settled by Amerindians, Pigeon Island then became a hide-out for the famous pirate Jamb De Bois and his men. Later, in the 18th century, it became a military fort and to this date, the military ruins from this era can still be seen on the island. But there is much more to explore: go and see for yourself the locations where the French and the English fought their battles for the possession of St. Lucia.

Climb up the Fort Rodney where a beautiful panoramic view of the whole island is waiting for you and your camera. Find out more about the islands’ history when it was a whaling station, a quarantine station for indentured Indian workers, a US Naval Station and finally the hide-away of a famous English actress.

Pigeon Island National Park is open every day from 9:30 a.m. to 4:30 p.m.

THE EAST COAST Over the past few years, several estates and other sightseeing attractions have been created on the East Coast. In some cases, opening hours are erratic and visits should be planned through Guest Services. Whenever possible, we have tried to incoporate some of the attractions in our excursion offerings.

The duty free shopping complex is an attraction in itself for some, the majority of the complex being at Point Seraphine, 5 minutes away from the city center. An extension has recently been built in the city center itself, on Jeremie Street.

PIGEON ISLAND When you leave Castries and head further north, you will reach Pigeon Island after a 35 minute car ride. You will pass a series of hotels and restaurants in the Rodney Bay area and the town of Gros Islet which is famous for it’s Friday night street party (JUMP UP). MARIA ISLANDS NATURE RESERVE Two small islands off the coast of Vieux Fort, home of 2 very rare species, the Kouwes Snake, and the Zandoli Terre, a ground lizard of which the male exhibits a splendid tail of brilliant blue. The species are indeed very rare, so no guaranteed sightings! The boat crossing can be very rough and visits need to be pre-arranged and not always possible.

MAMIKU GARDENS Mamiku Gardens is situated 45 minutes from Castries on the East Coast Vieux Fort Highway. The tropical gardens are carved out of woodlands that circle the hill where the ruins of the old 18th century de Micoud Estate House are located.

The estate was originally acquired in 1766 by the Baron de Micoud, a colonel in the French Army and a former governor of St. Lucia. Legend has it that the word “mamiku” derives from the Baron’s wife known as Madame de Micoud. By the year 1796, the estate house was no longer a family home, but a British military post, set up by the famous General Sir John Moore. The post endured much action culminating in a famous battle with the “Brigands” with Sir John recounts in his diary. The de Micoud home was destroyed in the battle.

The entire estate has been owned and operated by the Shingleton-Smith family since 1906.

LA TILLE WATERFALL AND GARDEN This 20 ft. waterfall is near Mamiku Gardens, accessed through a local fruit and flower garden, with ponds and trails.

FREGATE ISLAND NATURE RESERVE A one mile trail encircles the park to the observation point overlooking the small Fregate islands. As the fregate birds only nest here in the summer, do not expect to see too many of these magnificent birds at other times of the year.

Along the walk, you find a diverse variety of vegetation, and other birds who have made the reserve their home, such as the scarce Ramier Pigeon, the St. Lucian Oriole, the Trembler and several types of herons. It is also a Maria Islands natural habitat of the timid boa constrictor – emphasis is on timid, so don’t panic. Visits to the Fregate Reserve can be arranged through Guest Services in cooperation with the National Trust.

St. Lucia’s Geographic & Volcanic History St. Lucia is one of the biggest of the Windward Islands in the Lesser Antilles. These Lesser Antilles are situated along the edge of one of the most volatile sections in the earth’s crust where the great American Plate meets with and pushes beneath the slower moving Caribbean Plate. The result of this powerful action is a chain of volcanic islands where molten rock beneath has been rising up slowly to pierce through the weakened earth crust.

For a distance of 700 km, from Sombrero in the North to Grenada in the South, these volcanic islands form a volcanic arc which represents the eastern border of the Caribbean Plate.

The northern part of this volcanic arc up to Dominica’s latitude is made up of a double row of islands. The outer row is characterized by Oligocene igneous rocks covered by Lower Miocene limestone, while the inner row is made up prevalently of effusive rocks of Upper Miocene to Recent.

The southern part - from Martinique to Grenada - presents a single row of islands in which overlapping of the two arc axes takes place, thus with formations representing the whole time interval from Oligocene to Recent.

But not all of the Lesser Antilles are of volcanic origin. For example, the island of Barbados, to the east of the volcanic arc is a coral limestone island which was formed terrace like with different layers by the skeletons of tiny coral polyps which were piled upon one another in a never-ending cycle of life and death. Another island which sits on this limestone arc is MarieGalante and then Guadeloupe so that one half of Guadeloupe is volcanic while the other half is coral. From Guadeloupe onwards, the limestone and volcanic arcs overlap with each other, thus creating a mixture of coral - volcanic formations which can best be seen in the Virgin Islands.

St. Lucia is located between the island of Martinique to the North, at a distance of 21 miles, and the island of St. Vincent to the South, at a distance of 26 miles. St. Lucia is approximately 27 miles long and up to 14 miles wide, covering a total area of 238 square miles. Its highest mountain peak is Mount Gimie (3117 ft) and its most dramatic mountains are Gros Piton (2619 ft) and Petit Piton (2461 ft ) The island is almost completely of volcanic origin, with the exception of some insubstantial coral reef formations in the North. The volcanic activities which contributed to the formation of the island had several centers in various locations and took place over a number of geological time periods.

From a morphological point of view, a clear separation between the northern and mid-southern parts can easily be recognized. The borderline is situated approximately at the line ROSEAU - DELAIDE. North of this line, the volcanic features are quite eroded and the identification of centers of volcanic activity is impossible while to the south, the volcanic land forms are well preserved and very evident.

It is thought that St. Lucia was formed in four principal periods of volcanic activity: 1. The northern part of the island is formed with basic volcanic activity. A series of small volcanoes form an island of what is now the area north of Castries.

(Lower up to Upper Miocene Age, 19-9 million years ago) 2. Volcanic activity is spread throughout the island.

(End of Miocene Age, 6-5 million years ago) 3. Intense volcanic activity in the middle-southern part of the island, centered around Mount Gimie. This new larger volcanic island becomes joint to the lower northern part.

(Upper Pliocene to Pleistocene Age, 2-1 million years ago) 4. Another series of volcanoes becomes active, centred around Soufriere Bay. During this period, the socalled QUALIBOU Caldera is formed. The valleys which are surrounding much of the present day caldera get filled by many cubic miles of volcanic material and consolidate into plateau areas sloping towards the sea. The present day caldera comprises about 5 square miles. Soufriere Bay was thought to be the remains of a giant crater whose western half now lies beneath the sea, but latest geological findings cannot support this theory.

The formation of the Qualibou Caldera is followed by the formation of various volcanic extrusions in the area, one of them being the spectacular Twin Pitons GUEST INFORMATION - xlviii

Volcanic Activity on St. Lucia and Surrounding Islands

St. Lucia has a long volcanic history reflected in its many hot springs and volcanic and rugged features. It is estimated that the last large eruption on St. Lucia occurred between 20,000 and 37,000 years ago at Belfond near the Sulphur Springs. The only visible present day activity is the emission of steam and gases at the Sulphur Springs. Historic records indicate that these fumarolic and solfateric activities have maintained a fairly constant tempo throughout the last 180 years.

Only one episode of more intense activity has been reported ever since: this was apparently a steam explosion which occurred around 1766 and was then described as a “minor explosion which spread a thin layer of cinders far and wide”.

Similar but less significant steam explosions have been reportedly happening in more recent years, but no written records are available.

The islands surrounding St. Lucia were not as fortunate as St. Lucia and have a record of dramatic volcano eruptions even in younger history.

On the island of Martinique, on May 8, 1902, at 8:02 a.m., the coastal town of St. Pierre was destroyed by the powerful eruption of “La Montagne Pelee”. Within minutes, the mountain was blown to pieces and a solid wall of flames approached St. Pierre perishing all but two of its 28,000 inhabitants within minutes. A hot gas hurricane - called a “glowing cloud” or nuee ardente in technical terms - plunged down slopes at great speed of about 100 km/hour and engulfed the town with a searing 800’C emulsion of gas, mostly carbon dioxide, glass and dust.

St. Pierre was in the midst of elections when the first signs of trouble were noted. In order to keep voters at home to complete the elections successfully, administration gave orders that all report about La Montagne Pelee had to have a “reassuring tone”. A day before eruption, Professor Landes of the St. Pierre’s College was therefore encouraged to publicly state that “La Montagne Pelee presented no more danger to the inhabitants of St. Pierre than did Vesuvius to those of Naples”. Professor Landes died with the others. One of the only two survivors was a prisoner named Auguste Siparis, protected by the thick prison walls, who then became a curiosity in the Barnum & Bailey circus sideshow.

In 1976, the volcano St. Soufriere on Guadeloupe showed increasing activity. Fearful of another Mount Pelee catastrophe, the French government ordered the evacuation of some 70,000 people at a cost of many tens of millions of dollars.

However, no major eruption took place and the inhabitants were permitted to return after several weeks.

On the island of St. Vincent, the first known eruption of Mount Soufriere occurred in 1718. The next eruption, in 1812, lasted three days, destroying property and lives. Ninety years later, in February 1902, the mountain started rumbling again, a sign which was totally disregarded by the inhabitants. On May 7, however, a violent eruption took place, destroying many villages and killing 2000 people.

On Good Friday, April 13, 1979, the volcano exploded again blasting ash, steam and stones many thousand feet through the air. Only two days before, a check of the volcano indicated that there was no unusual activity.

Between April 13 and 25, there were 20 explosive eruptions. People within the vicinity of the volcano had to evacuate their homes. Luckily, no one was killed in the 1979 eruption but there was considerable damage done to homes and the land.

Geology Of The Sulphur Springs The SULPHUR SPRINGS (Solfatera) are located in the Qualibou Caldera, between the TERRE BLANCHE mountain to the East and Rabot to the West. TERRE BLANCHE (also referred to as Morne Souf) is approximately 1500 m in diameter and 450 m in elevation, RABOT is ridge shaped and north trending, approximately 1000 m long and 500 m wide.

While the Rabot Ridge developed during the same period as the Pitons, TERRE BLANCHE (Morne Souf), in contrast, has the characteristics shape of a newly formed dome, a round shaped volcanic extrusion, and is notably less weathered. Terre Blanche is therefore thought to have been formed at a considerably later date.

On the slopes facing the SULPHUR SPRINGS both TERRE BLANCHE and RABOT are affected by faults, fractures in the earth crust, which produce landslides that represents the present ground surface of the area.

At the same time, these fractures allow rains falling within the Qualibou caldera and the surrounding area and/or sea water to infiltrate the earth until, deep in the earth interior, it meets hot rock and becomes heated. then, this hot fluid rises from depth back to the surface, erupting there as either fumaroles (mostly steam and gases) or hot springs (mostly water).

The Sulphur Springs (Solfatera) are confined to an area of approximately 100m x 250m and are located in the slump (collapsed land) blocks which derive from earth fractures on the Rabot side.

The most common features are numerous pools (hot springs) filled with bubbling and fountaining hot black water. This colour comes from oxidation of Hydrogen Sulphide (H S) - rich hot fluids coming from depth. This hydrogen Sulfide rising from the depth with steam gives the area its characteristic pungent smell. The temperature of the pools is ranging from 63’ Celsius to 96’ Celsius. They discharge into the Sulphur Springs creek increasing its temperature of about 13’ Celsius from upstream to downstream. Beside the pools, fumaroles are presented as well: these are open cavities discharging steam and gas to the surface, generally at boiling temperature. Two of these fumaroles, however, are superheated (Fumerole No. 9 and 17) and particularly No. 9 with 171 Celsius measured is one of the hottest fumaroles known.The most widespread minerals of the Sulphur Springs are kaolin, sulphur, some silica and gypsum and alunite (sulfate).

As a result of the fumaroles and hot springs, areas of extremely altered bedrock with deposits of sulphur, ferrous sulfide, gypsum and kaolin are extensively developed for a considerable distance to the north of the Sulphur Springs. Most of the minerals have white colour, greenish-yellow is given by sulphur. Around the margin of the active areas, orange and reddish colours are given by the deposition of iron oxides.

Directly related to the activity of the Sulphur Springs is the existence of numerous hot springs in the wider surrounding areas. The most well-known hot spring is the one feeding the Mineral Baths on At the St. Augustin campus at the University of the West Indies in Trinidad, seismologists monitor continuously all volcanic activity on the Caribbean region, their main concern being the volcanoes on St. Vincent and Guadeloupe.

Superstition and Religion

It is easy to believe that the bubbling inferno of the Sulphur Springs together with dramatic mountain shapes such as the Pitons must have had a serious influence over the religion and beliefs of St. Lucia’s first settlers, the Amerindians, first the Arawak and then the Carib Indians thought to have arrived on St. Lucia by canoe from the South American Orenoko delta, approximately 800 a.d.

According to Robert Devaux, a former Director of the St. Lucia National Trust, it is quite probable that, to a culture such as the Arawaks, the huge Pitons would have acquired godly status. The two most important Gods in the Arawak religion were Yokahu, the God of Fire, Thunder and Food, and Atabeyra the Goddess of Fertility, Moving Water, the Tides and the Moon. Could Yokahu have been Gros Piton, dominating the Western horizon in the day time and sleeping at the Sulphur Springs at night? For Example, every year during the dry season, residents of the Morne Souf (Terre Blanche) area set afire to the western slopes of Morne Souf. No one really knows why this is done.

Some believe the reason is to prevent snakes from spreading from other areas into the Soufriere area. However, one superstition lingers suggesting that Amerindians of long ago used to burn Morne Souf slopes facing the Sulphur Springs to appease their volcano god Yokahu.

The name Qualibou is thought to have derived from the Carib language. Reverend C. Jesse, the author of many historic documents about St. Lucia, suggested the more correct spelling would probably be Coualibou. The possible meaning is thought to be “At the place where one ascends”. Is there a religious meaning to it? Does it suggest that the top of Morne Souf was a sacrificial spot to Yokahu, or a place to ascend for worship or other ceremony?

Commercial Use

In younger history, only one event at the Sulphur Springs seemed to have been noteworthy: Reverend Jesse describes in his “Outline of St. Lucia History”, that in 1836, shortly before the arrival of emancipation, sulphur mining operations were started at the Sulphur Springs. 540 tons of Sulphur were exported in 1836, 60 tons in 1838 and 160 tons in 1840. This new industry, however, was put to a stop before it could even properly start, by a tax of 16 shilling per ton on purified sulphur exported from the colonies to the motherland. The sulphur mining was operated by Messrs. Bennett and Wood.

Hygiene and Therapeutic Value

The Therapeutic values of the mineral rich hot springs in the Sulphur Springs region had already been recognized by the doctors of the French King Louis XVI and recommended for the recuperation of the French troops in the 18th century.

Besides the bathing facilities which were installed in 1786 at the hot spring on Diamond Estate, another bathing house with six chambers was built right above the Sulphur Springs where another hot spring feeds directly into the Sulphur Springs creek.

While the bathing houses at Diamond Estate have been reconstructed in recent times and are still in operation nowadays, the remains of the building at the Sulphur Springs perished with the road construction in that area. Up until the 1950’s an artificial pool had been formed with some rocks at the location where the clear water of the Sulphur Springs creek mixes with the black water out of the Sulphur Springs and was a popular spot for relaxation and children’s play. Even nowadays, the Sulphur Springs creek and a nearby waterfall are used for bathing.

Sherma credits her family for the love for culinary especially the art for Pastry Making. She grew a greater passion for culinary during her high school years at the Soufriere Comprehensive Secondary School.

Upon graduating she took the bold step in pursuing her dreams in Cake Decorating Courses at the National Enrichment and Learning Program (NELP). Upon graduating from this course, she enrolled in a Culinary Skills Course at the said institution.

For the past decade Sherma being self-motivated and passionate about the love for fine dining and the Culinary Art; have worked at prestigious world-renowned hotels in Saint Lucia.

Sherma has created her own Pastry Recipes, her famous Banana Bread mixed with traditional spices from her island home, has potential to one day be on the global market.

She was quickly promoted to a pastry chef, and currently hold this designation with Jade Mountain, Anse Chastanet’s sister highly-acclaimed luxury Five Diamond Resort.

She has participated in the SLHTA Culinary Cook Off and performed brilliantly, capturing a spot on the team to represent Saint Lucia at the regional “Taste of the Caribbean Competition” which was hosted in Miami, Florida.

She is a prime example of dedication is Key! dreams. Being employed with the Jade Mountain Resort, her heart is set on becoming one of the Caribbean’s leading pastry Chef, not only for her glory but for her island home Saint Lucia.

Elijah’s culinary journey began at the Hummingbird Beach Resort where he was employed as a gardener. After a few months, he was transferred to the kitchen as a dishwasher and he soon realized that his true passion was cooking. Within 2 years at the Hummingbird, Chef Elijah was promoted to Head Chef. And after 10 years of service at the Hummingbird Beach Resort, he could not refuse an opportunity that presented itself to join the Jade Mountain culinary team as Executive Sous Chef.

In 2000, Elijah made his television debut in a local cooking program called “Flavors of the Caribbean”. In November of 2012, he participated in an English cooking show for Sunshine TV about green bananas. The following year, he was back on TV again, this time for a German Television Company about the preparation of Lion Fish.

In 2012, Elijah represented St. Lucia in the “Taste of the Caribbean” in Miami where he won a gold medal in the coveted Chef of the Year competition. The following year, he took part in the “Chef in Schools” program with Saint Lucia Hotel and Tourism Association (SLHTA) where he was able to pass on his passion for cooking spend to Food and Nutrition CXC students all over the island.

In 2013, Elijah coached two students from the Soufriere Comprehensive School who represented St. Lucia at the Caribbean Junior Culinary team in Barbados where they ended up winning two Gold medals and the Team of the Year title. On Saint Lucia’s Independence Day, he again coached two students from the Soufriere Comprehensive School, which led to them winning the Independence Cook-off competition at Beausejour Grounds.

In June 2014, Elijah captained the St. Lucia Culinary team at the Caribbean cooking competition, Taste of Saint Lucia, held in Miami. The Team won the silver medal and Elijah also won a silver medal in the Chef of the Year category as well as a bronze in the beef competition. That was the best results a St. Lucia culinary team had ever achieved with an overall of 12 awards. Later in 2014, Elijah was recognized by the local newspaper, The Star, as St. Lucia’s Top Chef.

KAROLIN TROUBETZKOY Karolin Troubetzkoy is the Executive Director, Marketing and Operations of Anse Chastanet and Jade Mountain Resorts in Soufriere, Saint Lucia. She has been spearheading the marketing and day to day operations of these award winning resorts since 1986, with Jade Mountain Resort added in 2004, when the pre-opening marketing phase began.

From 1985 – 1986, Karolin Troubetzkoy was a consultant for the Organization of American States and in that capacity, produced tourism feasibility studies for the tourism marketing of Pigeon Island, the Maria Islands, Sulphur Springs and also a marketing brief for the St.Lucia Tourist Board.

From March 2010 to January 2016, she served as the President of the Saint Lucia Hotel and Tourism Association (SLHTA). She personally oversaw the development of a broad social media platform for the SLHTA and was instrumental in the successful implementation of a hotel booking engine for SLHTA and the relaunch of La Belle Helene Magazine.

In 2013, Mrs Troubetzkoy was able to gain support from the hotel sector to found the Saint Lucia Tourism Enhancement Fund (a voluntary contribution system of US $2 per visitor per room night), which enjoys a high compliance rate among the Saint Lucia hotels. Mrs Troubetzkoy served as chairperson of the Tourism Enhancement Fund for several years, most recently from March 2016 to December 2018 and remains actively involved to this day.

Mrs Troubetzkoy served as a Director of the Saint Lucia Tourist Board and as the Chairperson of the Tourist Board Marketing Committee for many years. She has been an active member of the marketing committees of the Saint Lucia Tourist Board for the past 20 years and has been a Saint Lucia Tourist board member from 2007-2009 and again from 2010-2016.

She has been the 1st Vice President of the Caribbean Hotel and Tourism Association (CHTA) from 2014-2016. Mrs Troubetzkoy chaired the CHTA Advocacy Committee for the region from 2012-2014. In 2014, Mrs Troubetzkoy re- energized CAST (Caribbean Alliance of Sustainable Tourism) and served first as Chairperson, then as deputy chair of this CHTA initiative.

Mrs Troubetzkoy was appointed President of the Caribbean Hotel and Tourism Association (CHTA) in January 2016, for the term 2016-2018, with her presidency coming to an end in June 2018 and subsequently served as CHTA’s Immediate Past President until Oct 2020. Mrs Troubetzkoy was only the second woman to serve as President in CHTA’s 50+ year history.

During her tenure as Vice President and President of the CHTA, several hurricanes affected the Caribbean. Mrs Troubetzkoy initiated and was instrumental in the fund raising efforts of the CHTA on several occasions: In 2015, over US 35.000 were raised for Dominica after Hurricane Erica, which allowed a school to be rebuilt. After Hurricane Matthew in 2016, over US 55.000 were raised for Haiti and The Bahamas.

In September 2017, Hurricanes Irma and Maria struck several Caribbean Islands. In the aftermath of these two hurricanes, there was a lack of communication available to both potential visitors to the region and the travel and tourism trade community. On her own initiative and making use of her own funds and available manpower, she created a website called Caribbean Travel Update within a 48 hour period and personally maintained and updated this website for a period of over 7 months, to ensure that accurate and up to date news could reach visitors and travel professionals alike, with the goal to correct the misperception that the entire Caribbean had been affected by the hurricanes.

She also brought to life the One Caribbean Family initiative- encouraging tourism businesses in the Caribbean not affected by the hurricanes to donate a small percentage of their new bookings ( often displaced bookings from affected islands) to the initiative which eventually raised over 1/4 Million US Dollars directly, via Tourism Cares, the organization chosen by CHTA to handle and disburse the funds. In addition, the One Caribbean Family initiative encouraged and stimulated other organizations with business links to the region to play their own role in assisting the islands, raising easily another 1 Million Dollars.

On a personal level, Mrs Troubetzkoy collaborated with GIZ and the German Embassy to bring relief to the island of Dominica after hurricane Maria. Making her personal time and also personal funds available in addition to funds from the German Embassy, several boat loads of relief items could be sent to Dominica.

As President of the Caribbean Hotel and Tourism Association, she also served as the co-chair of CTDC (Caribbean Tourism Development Company). The purpose of this private – public tourism sector collaboration was to promote Caribbean tourism more effectively and sustainably by showcasing the region’s rich diversity and promoting better and increased airlift, enhancing product development and product offerings through skills training and linkages to arts and crafts, music, cuisine and culture. Regrettably, this private -public sector initiative, whilst critical to the future success of Caribbean tourism has yet to reach its full potential.

When her CHTA Presidency came to an end, Mrs Troubetzkoy agreed to take on the role of Chairperson of the Caribbean Hotel and Tourism Association Education Foundation and in this position continues fundraising in the industry to make GUEST INFORMATION - lvii

available scholarships and training opportunities.

In July 2018, she was re-elected as President of the Saint Lucia Hotel and Tourism Association (SLHTA) and served until April 2021.

In Jan 2019, she was appointed Envoy to the Caribbean Challenge Initiative to bring awareness and build up resilience of the marine and coastal resources in the Caribbean. In July 2020, she accepted the Chairmanship of the Saint Lucia National Conservation Fund and in this capacity, joined the board of the Caribbean Biodiversity Fund becoming the organization’s Chairperson in September 2022.

She is the Honorary Consul of the Federal Republic of Germany in Saint Lucia and is a citizen of Saint Lucia. On May 24, 2019 the Federal Republic of Germany bestowed on Karolin the Order of Merit to acknowledge her work as Honorary Consul and her volunteer leadership in Saint Lucia and the Caribbean to advocate for operating in a sustainable environment, building resilience and mitigating effects of climate change.

The St Lucia Hotel and Tourism Association bestowed on Mrs Troubetzkoy the coveted Crystal Award in December 2002 for services to the hotel industry and in 2006 the Saint Lucia Hotelier of the Year Award. In 2012, Mrs Troubetzkoy received the prestigious Caribbean Hotelier of the Year Award from the Caribbean Hotel and Tourism Association, as one of only a handful of female recipients in the awards’ long history. In May 2023, Mrs Troubetzkoy together with her husband Nick were honored with the CHRIS (Caribbean Hotel and Resort Investment Summit) Lifetime Achievement Award. The award recognizes individuals who have made significant contributions to the Caribbean hospitality industry over their lifetime through their actions, deeds and accomplishments.

In June 2025, Karolin Troubetzkoy was honored with the Caribbean Tourism Organization (CTO) Secretary General’s Distinguished Service Award during Caribbean Week in New York. This prestigious award celebrates women leaders in Caribbean tourism who have demonstrated over 20 years of dedicated service, made significant contributions to the development of regional tourism, and served as inspirational mentors to other women in the industry.

She holds a degree in business administration with majors in both tourism marketing and hotel and restaurant management from the University of Applied Sciences in Munich. She speaks four languages: German, French, English and Italian.

PHILANTHROPIC WORK Building on her belief (shared and practiced by her husband since the property beginnings) that as much economic benefit as possible must be be kept in the community, Mrs Troubetzkoy, over the past 30 years, built up a network of seamstresses and craftsmen to hand-make all of Anse Chastanet’s furniture, soft furnishings and also table line and bathrobes.

She has worked closely with local craftsmen and artists to develop unique Saint Lucia art and Mrs Troubetzkoy instigated an “Art in the Hotel” program in 1985, long before this became a trend in the hotel industry. Over the past 35 years, local and international artists collaborated in creating the eclectic art collection at Anse Chastanet including local wood carvings and acrylic paintings by famous international artists such as Elvira Bach and Stefan Szczesny.

By inviting international artists to live and work at the resort for up to 4 weeks she was able to foster a dynamic creative exchange between local and international artists. To international artists, the exchange of art against accommodation provided new inspiration by virtue of the scenic tropical environment. Together with her husband Nick, the Troubetzkoys have sponsored local charities and sports events, too numerous to be mentioned.

In 1989, Karolin Troubetzkoy recognized the desire by guests to be able to assist in her local charity work and created a guest charity account. Since then, these funds have enabled her to expand her charitable work further especially in the region of child education and care for.

In the early 90’s, they started an “adopt a farmer“ program, and continue to the extent possible to purchase as much produce locally as possible. In addition, the Troubetzkoys also run an organic farm and make their own chocolate under the label Emerald Estate.

As Honorary Consul of the Federal Republic of Germany, Mrs Troubetzkoy secured funding for a new school cantina and kitchen for the Bouton School near Soufriere and recently funded and opened a carpentry facility for the Soufriere Comprehensive School. Another project was the rehabilitation of the Library in the Banse La Grace School. She is currently involved in a project to revive handicrafts in the Soufriere region.

Mrs Troubetzkoy is the Patron of the Saint Lucia Cerebral Palsy Foundation.

Sister resorts JADE MOUNTAIN and ANSE CHASTANET in St Lucia fall under the ownership of Nick Troubetzkoy. Troubetzkoy is a Canadian architect hailing from the west coast of British Columbia where he studied at the University of British Columbia and worked with noted west coast architects such as Ron Thom, Bud Wood and Arthur Erickson.

Troubetzkoy came to St. Lucia in the early 70’s to work with a group of architects on island to design vacation villas.

What was meant to be a brief stint in paradise, turned into a lifelong passion for the island and its people.

When the opportunity arose to purchase ANSE CHASTANET in conjunction with partners, Troubetzkoy did not hesitate leading him to become the Managing Director. Revolutionary thinking was synonymous with the Troubetzkoy name from the onset. He was determined to break away from conventional thinking as to what a hotel room should look like and that one hotel room should be a cookie cutter duplicate of the next.

Along the way Troubetzkoy has been careful to keep his priorities focused on the creation of a travel experience that is world-class. An experience that is also genuinely St. Lucian, deeply rooted in the island’s beauty and culture that aims to keep the economic benefits of his success on island through

recognition and by funneling money and training back into the community that has provided him such an opportunity to grow.

He played an important role in the creation of the Soufriere Foundation as well as the Soufriere Marine Management Authority. This occurred in a time where a commitment to a sustainable tourism environment was an afterthought.

This foresight has proven beneficial with sustainable tourism becoming the norm in present day Caribbean tourism.

Under his four decades of ownership, Anse Chastanet has grown from a small 12 room hotel employing only 12 staff members in the 1970’s to a 600 acre, 49 room world-renowned Caribbean resort. The resort can now boast an impressive and long list of awards to its name. Over the past 35 years, Anse Chastanet has been able to operate consistently, on a year round basis at high occupancy levels, in the process securing steady employment for a resort team that has grown to 250 employees.

Success bred more innovation, this was the case with Jade Mountain. Anse Chastanet’s success helped drive the launch of its sister Jade Mountain in 2006, providing an additional 29 sanctuaries and another 250+ employees to the resort team. The sister resorts compliment each other, providing an array of unique experiences whilst maintaining that founding philosophy of being one with nature, feeling immersed in the beauty of your surroundings.

Kai en Ciel Spas is in excess of 500 people. Many hundreds more have worked for varying periods of time over the decades, especially during phases of construction and property enhancements.

Over a thousand local craftsmen and laborers helped to create Jade Mountain over a period of four years. This had an enormous impact on the community of Soufriere, providing long-term economic stability in an area that is still among the lesser developed areas of St. Lucia.

Over the decades Anse Chastanet has become the largest employer on the west coast of the island south of the capital, that position became solidified with the addition of Jade Mountain.

For over 35 years, Anse Chastanet and then Jade Mountain have helped bring global recognition to St. Lucia. Helping grow the market for tourism through press coverage and awards.

Throughout the daily operations of the resorts an emphasis on local sustainability persists. Much of the produce used in the resorts’ kitchens is organically grown at the resorts’ neighboring estates, Anse Mamin and Emerald. One of the latest projects is the making of chocolate from trees growing on the estates. Guests at both resorts can not only purchase this locally made fine chocolate but can also participate in chocolate sensory tasting or truffle making classes. At the time of writing, Troubetzkoy was examining the possibility of creating a larger chocolate making facility, another avenue for creating local employment.

When Troubetzkoy first purchased Anse Chastanet, he was delighted to discover that Anse Chastanet Bay was home to a world-class coral reef. The entire Soufriere area offered incomparable sites for scuba diving and snorkeling. At that time, the sport of scuba was in its nascency on island and Troubetzkoy along with his team helped put St. Lucia firmly on the map as a diving, travel destination by leveraging the wonders below in the Soufriere waters.

As a result of these early pioneering endeavours, the island is now established as one of the premier scuba locations in the Caribbean and by extension the World. Today there are several independent, locally owned scuba companies as well as scuba operations in all of the major hotels on the island.

Nick also ensured that his dive centre was an active pioneer participant in the development of the Soufriere Marine Management Authority (SMMA). In 1995, the SMMA was formally established. Through a subsequent agreement marine resources were divided into marine reserves, fishing priority areas, multiple use areas, recreational areas and yacht mooring sites. Larger charitable acts included the renovation of the Soufriere Town Square, renovation of the Soufriere Parish Building, reconstruction to the Soufriere Vendor’s Market, a new bell tower for the Soufriere church and the Coin De Lance fisheries complex. Guests staying at Anse Chastanet and Jade Mountain are also encouraged to donate; Troubetzkoy then matches these donations.

As Anse Chastanet began to succeed and prosper, a prominent citizen of Soufriere issued a challenge to Troubetzkoy by questioning whether Troubetzkoy was enough of an “honourable man” to make as strong a commitment to Soufriere and its people as Troubetzkoy had to Anse Chastanet.

The result of this “affaire d’honneur” was the creation of an organization that would foster “community participation in tourism” which has morphed into The Soufriere Regional Development Foundation (SRDF). The SRDF which originated from the Soufriere Development Programme (SDP) is now a non-profit agency established to coordinate and encourage development initiatives in the Soufriere region. The goal of the SRDF is to foster development genuinely sensitive to the culture, needs and aspirations of St. Lucians and in particular the people of Soufriere.

The Soufriere Foundation has since been used as a role model for other Community Foundations throughout St. Lucia and the Caribbean.

On the occasion of Independence Day on Feb 22, 2015, Her Excellency the Governor General, as Chancellor of the National Societies of Honour, appointed The Saint Lucia Medal of Honour (Gold) SLMH to Nick Peter Troubetzkoy, for his outstanding contribution to the development of the Tourism Industry in Saint Lucia.

In May 2023, Nick together with his wife Karolin Troubetzkoy received the CHRIS Lifetime Achievement Award. The award recognizes individuals who have made significant contributions to the Caribbean hospitality industry over their lifetime through their actions, deeds and accomplishments No absentee owner, Troubetzkoy truly lived in Soufriere continually since he had arrived in St. Lucia.

In this process, the SMMA achieved enormous success in getting people with disparate interests to work toward a common goal. In fact, the process was so successful in resolving conflict that the United Nations Environmental Program now uses the St. Lucian process as its model for implementing marine parks in nations around the world.

Nick passed away unexpectedly on November 25, 2024, in London, leaving behind a legacy that transcends architecture and tourism. Though not born in Saint Lucia, Nick embraced the island as his true home. To many, he felt like a son of the soil—devoted not only to the success of his beloved resorts, Jade Mountain and Anse Chastanet, but to the well-being of Saint Lucia’s people, the preservation of its environment, and the flourishing of its communities.

Sustainability and social responsibility are vital elements for Nick Troubetzkoy who has always operated his business with the recognition that the community plays an essential role in the success of his hotels. Helpaws

Helpaws (which stands for Help Animal Welfare St Lucia) is a Non-Profit Animal Rescue Organization founded by Charlene Penney in 2013. When she first came to the island in 2010 she was appalled by the sheer number and poor quality of life of the stray animal population. As soon as she finished her post-graduate degree in Non-Profit Management she moved to St Lucia with her boyfriend, Yasha Troubetzkoy, and began her mission to save the animals of St Lucia!

To date her organization has grown to operate in 3 different countries, and has focused on three key areas: 1. High volume spay and neuter clinics a. So far her HelpAWS has organized 5 clinics that have spayed and neutered a total of 2400 dogs and cats!

2. Rescuing animals considered beyond hope a. On any given day there are on average around 40 dogs in HelpAWS facilities with another 50 dogs around the island being fed on a daily basis by volunteers.

3. Adopting out animals both locally and internationally a. HelpAWS has adopted out over 300 animals both locally and internationally with HelpAWS pups reaching as far as Germany, Canada, and the USA.

Anse Chastanet and Jade Mountain are proud to have supported HelpAWS from their very first day and we believe they are providing invaluable care to the animals of Saint Lucia. They are the first and only organized animal rescue in our community so we encourage you to join us in helping them help our animals of Saint Lucia!
