Lemon Butter Cookie RECIPE

Prep 20 min. + chilling // Bake: 10 min./batch + cooling Yield: about 13 dozen
1 cup butter, softened
2 cups sugar
2 large eggs, room temperature, lightly beaten
1/4 cup whole milk
2 teaspoon lemon extract
4-1/2 cups all-purpose flour
2 teaspoon salt
1/2 teaspoon baking soda
Colored Sugar, optional 1 2 3
In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in the eggs, milk and extract. Combine dry ingredients: gradually add to creamed mixture and mix well. Cover and Chill for 2 hours
Preheat oven to 350°. On a lightly floured surface, roll one portion of dough to 1/8-in. thickness. Cut with floured 2-inch. holiday cookie cutters. Place on ungreased baking sheets. Sprinkle with colored sugar if desired. Repeat with remaining portions of dough.
Bake 8-9 minutes or until edges begin to brow,n.. Remove to wire racks to cool completely.

1 box chocolate cake mix
2 eggs
1/2 mild olive oil or vegetable oil
Optional: sprinkles or powdered sugar
STEP 1
DIRECTIONS
Combine Cake mix, eggs, and oil in a bowl and beat with an electric mixer until batter forms.
STEP 2
Roll tablespoon sized cookies into a ball. Optional - roll dough ball in sprinkles or powdered sugar cover completely.
STEP 3
Place dough onto a parchment lined baking sheet, and bake at 350 degrees for 10 -12 minutes. Allow to cool completely.
