In light of the constant concerns regarding the levels of toxic ingredients in our personal hygiene and beauty products today, I thought it would be interesting for me to test this out on myself over a day. If anything, I learned how much stuff is placed on and absorbed into the largest organ of the body – the skin. Now, I heard that the average number of products that a woman uses everyday (minus oral hygiene products) is 12. Much to my surprise and after counting three times, I learned that I use 23 different products! I never thought of myself as high-maintenance, but this number had me wondering. After looking at that embarrassing number, I went back to look at the ingredients of each product. Well, that exercise was time-consuming, but well worth it. For the most part, the products I use are organic and botanically based and absent of parabens, but there is definitely room for improvement. The bottom line is that you don’t have to compromise your daily beauty regimen when cutting out the toxic ingredients. There are many high-quality, health conscious manufacturers to choose from. As a smart shopper, take the time to put on those pretty, little rhinestone glasses and read the labels. “My interest in neurosurgery stems from my time at Columbia University in New York. This is one of the nation's leading centers for neurological surgery and spine care,” Virella recalled. “I was fortunate enough to be assigned to Dr. Bennett Stein, one of the world’s most prominent neurosurgeons (now retired) as a medical student at Columbia. Dr. Stein was my first mentor who introduced me to the field.” Virella later relocated to California for his residency. “I did internship training at Penn, my residency at UCLA, and an infolding spine fellowship with Dr. Edward Benzel at the Cleveland Clinic Foundation.” Considered a nationally-recognized specialist in the field, Virella has authored numerous articles and lectured nationally and internationally in the field of complex and minimally-invasive spine surgery. He is also considered a specialist with extensive training in the management of cerebrovascular disease, including cerebral aneurysms and arteriovenous malformations — also known as AVMs.

We typically see patients with neck and lower back pain, but we also treat patients with brain tumors and cerebrovascular conditions. His hard work paid off with tangible results. Virella attended medical school at Columbia University College of Physicians and Surgeons, one of the oldest and most prestigious medical schools in the United States. He is a graduate of the UCLA Neurosurgery Residency Program and completed his complex spine in-folding resident fellowship at the worldrenowned Cleveland Clinic Foundation. Additional work included a second fellowship in Minimally-Invasive Spine Surgery at the UCLA Comprehensive Spine Center.

Ultimately, “I love being able to almost instantly cure someone’s pain and get them back to work and sports as soon as possible,” Virella further emphasized. “That is the best part of my job.”

In other career highlights, he served as the Director of Neurological Surgery at the Ventura County Medical Center in Ventura from April 2005 through June 2007. His hospital affiliations include Los Robles Hospital and Medical Center in Thousand Oaks, Simi Valley Hospital, Thousand Oaks Surgical Hospital and Conejo Surgical Center in Thousand Oaks. His practice in Westlake Village serves clients of all ages. “We typically see patients with neck and lower back pain, but we also treat patients with brain tumors and cerebrovascular conditions,” Virella said. “We are the most conservative spine practice in the region when surgery is indicated; we provide cutting-edge, minimally-invasive approaches.” And because of the location of his practice, “we can provide conservative, world-class care in the local area. Some people also exhibit small red bumps or pustules, small visible facial blood vessels and irritated eyes. Most commonly appearing in adults — with women more susceptible than men — rosacea can affect all skin types but is more prevalent among fair-skinned individuals of British and Irish descent. “The biggest myth regarding rosacea is that there is no known cure,” said Jonathan Breslow, a state- and nationally-licensed acupuncturist, certified in classical homeopathy. “Constitutional homeopathic medicine has been curing rosacea for more than 200 years. Constitutional homeopathic treatment treats the entire body-mind organism. It has a deeply balancing effect and profoundly raises the level of well-being to affect a cure of rosacea. Dr. Shear feels that “the biggest myths regarding rosacea are that the demodex mite and/or the microorganism, helicobacter pylori, are central to the cause.” Shear added, “the truth is that we do not know the cause of rosacea. We know that most patients with rosacea have an abnormal blood vessel response to heat and other stimuli. We know that chronic exposure to the sun damages the substances supporting the blood vessels in the dermis (the second layer of the skin). Finally, we know that the anti-inflammatory effects of tetracycline reduce the inflammation of rosacea.”

The classic appearance of facial redness with small, broken networks of blood vessels on the surface of the skin is the visual, which aids in the diagnosis of rosacea.

There is no test to diagnose rosacea and it is commonly diagnosed by the symptoms. Usually it appears only on the face so if the skin symptoms are on the scalp or ears it may be a form of dermatitis.

The diagnosis is made visually. No testing is necessary. Unlike conventional acne, rosacea does not present with comedones (blackheads and whiteheads) but rather with small red bumps or pustules, usually on the nose, chin, cheeks and mid forehead.

The skin is commonly red and blood vessels are dilated. Eyelid involvement is common and can be missed. Patients may develop swelling of the eyelid margin, chalazions, and a gritty sensation in the eyes. Other variants of rosacea are less well known, such as granulomatous rosacea. These variants can present as small, firm bumps around the mouth or diffusely on the face (called lupus miliaria disseminata facei).

There are two types of treatment for rosacea: topical and oral. Topical therapy includes metronidazole, sodium sulfacetamide, sulfur cleansers and creams, and azalic acid. These are the most commonly-prescribed medications, especially useful for patients with papules and pustules and some patients with redness and broken blood vessels. The oral antibiotic, tetracycline, 500 mg one hour before or two hours after a meal taken daily, should be used instead of minocycline or doxycycline. The two later drugs are unnecessarily expensive, have no therapeutic advantage over tetracycline, and can have significant side effects. For example, minocycline can cause a lupus like drug eruption and slate gray pigmentation of the skin and gums. Tetracycline’s anti-inflammatory properties (it slows the movement of white blood cells) and not it’s antibiotic properties are the reason it is such an effective drug to treat rosacea. It can be continued for three or four months. Once the patient has reached maximal medical improvement, a trial of topical medication can be given a try. Any of the topical preparations above may be tried. If they are effective for the patient, they can be used for maintenance. If they are ineffective, re-institution of tetracycline is indicated. If significant ocular rosacea is present, oral antibiotics are an effective and convenient method of relieving both the skin and eye concerns. Oral medications to reduce flushing are commonly helpful. In more severe cases, especially in men who go on to develop rhynophyma, treatment may create a delay or avoid its occurrence. In most cases treatment serves to avoid the stigma of a red face or red papules and pustules.

Rosacea can be controlled or ameliorated with various allopathic internal and external medications. Laser therapy seems to be emerging as one of the better dermatological approaches.

Mild cases are treated with sunblock (containing zinc and titanium) and prescription topical gels, creams, and washes, including metronidazole, and sulfacetamide/sulfur preparations. Severe flares or eyelid involvement often need oral anti-inflammatory antibiotics such as minocycline. Redness and dilated vessels are effectively treated with pulse-dye laser or certain light sources.

Other measures in the control of rosacea include avoiding aggravation triggers to the condition which include sun exposure, emotional stress, embarrassment, hot weather, spicy food, alcoholic beverages, windy weather, indoor heat, hot baths, cold weather and heavy exercise. Cure of rosacea is possible with constitutional homeopathic medicine, a comprehensive case history is taken to gain a deep understanding of the state of the entire body-mind constitution. This data is analyzed and understood. Then a homeopathic medicine is chosen, corresponding with imbalances in the body-mind constitution that lead to the manifestation of rosacea. A single homeopathic medicine is given in the form of sugar pellets which are dissolved in the mouth. This medicine is given approximately 6 times in the first year and then less frequently for several years. With constitutional homeopathic treatment, other complaints the patient is suffering from often spontaneously resolve. For example, anxiety on plane flights, digestive troubles, and restless leg syndrome go away as the rosacea is cured. Not treating rosacea in some cases can cause social phobia or self-consciousness. Advanced rosacea can lead to developing swollen, knobby bumps on the nose and cheeks.

Untreated eyelid involvement can cause long-term problems to the cornea and eyelid. Blood vessels of the face can become enlarged and difficult to shrink. Potentially, the skin of the nose can hypertrophy in a process called rhinophyma. Occasionally a biopsy is needed to confirm the diagnosis. Treatment can be more challenging in these cases. Steroid creams must be avoided in the treatment of rosacea.

But changing hair color is not something to be approached lightly since many chemicals used in the process are damaging or even toxic. Though dye technology experienced a huge renaissance in the 1800s with the discovery of chemicals that permanently change hair color, henna (Lawsonia inermis) is still the product of choice for those who prefer natural dye solutions that don’t damage the hair.

ANATOMY OF HAIR Hair is made of the protein keratin and grows from special pores called follicles in the skin. As the hair extends from the surface of the skin, the protein hardens. The outside covering of the hair, the cuticle, protects the soft inside cortex where color molecules, eumelanin (dark — brown and black) and phaeomelanin (light — red and blond), can be found. The natural color of hair depends on the ratio and quantities of eumelanin and phaeomelanin in each shaft. To permanently change color, melanin molecules must be chemically altered.

DYE ACTION The first step in changing hair color permanently requires that the cuticle be made porous with ammonia to allow other chemicals (such as hydrogen peroxide and dye) to penetrate inside. If ammonia is not used, then the natural color pigments in the hair remain protected and unchanged. As one of the most common lightening agents, peroxide is the developer or oxidizing agent that removes pre-existing color. According to NIH chemistry research on permanent hair dye, this is an irreversible chemical reaction. Melanin is still present, but the oxidized molecule is colorless. The pale yellow tint of bleached hair is due to the natural color of keratin, the structural protein in hair. Since peroxide reacts more readily with the dark eumelanin pigment than with the phaeomelanin, some gold or red residual color may remain after lightening. With semi-permanent dyes, the hair cuticle is not opened with ammonia; the final color of each strand depends on its original color and porosity (which allows some dye to enter the strands), so there will be subtle variations in shade across the whole head. Temporary hair dyes are nonoxidative and include colored compounds that stain hair but don’t enter the shaft or destroy the melanin molecules. Henna is one such item.

PETROCHEMICAL PROBLEMS Unfortunately, the very ingredients that offer so many color options and such reliable color retention are also the same ones that many feel are toxic to the body. According to www.cancer.gov, more than 5,000 different chemicals are used in hair dye. Although hair dye formulations from the early to mid-1900s contained aromatic amines that were found to cause cancer in animals, in the mid- to late 1970s, manufacturers changed the components in dye products to “eliminate some of them.”

Studies link hair dyes to an increased risk of certain cancers of the blood and bone marrow, such as non-Hodgkin lymphoma (NHL) and leukemia, while other studies of the same ingredients have not shown such links. Breast and bladder cancer research have also produced conflicting results. Some felt that this was due to the variation in use of dye and length of time used: risk was apparently greatest among those who had used permanent dyes for longer durations (15 years or longer). Dye ingredients’ allergenic properties are also of concern. The most recent notice released in 2007 from the SCCP warned against the potential for allergic sensitization to hair dye ingredients, separate from toxicological attributes. Signs of allergic reactions include redness, burning, itching, pain, blisters/sores, swelling, and even asthma, as a result of being exposed to hair dye. If consumers experience any of these problems during hair processing or even a few days later, they should discontinue use and see a dermatologist for patch testing.

NATURAL ALTERNATIVES Hair stains offer a different coloring option. They aren’t as long-lasting or as consistent, but they are safer for the skin and don’t require the use of toxic petrochemicals. Henna, a plant chosen by the ancient Egyptians, Persians and Indians for its redorange color and deep-staining properties, is still the most popular ingredient in natural hair coloring products. In its pure, unadulterated form, henna leaves are dried and ground up into a greenish-gray powder that makes a paste when mixed with hot water (100 g henna/300 ml water). Compound henna though, may contain henna with undesirable ingredients such as lead acetate, silver nitrate, copper, nickel,

Note that henna always colors the hair red or reddish orange. When mixed with other plants, called rangs, it is possible to get a variety of natural shades. Brown can be achieved by adding woad (a flowering plant or the blue dye it produces), walnut, amla (Indian gooseberry) or indigo (blue or purple dye from the indigo plant). Yellow or blond effects result from the addition of chamomile, saffron, Cassia obovata and rhubarb root. Normally, henna paste is left on the hair from 15 minutes to two hours. If the hair fibers are covered with waxy or oily substances (such as silicone-based or paraffin-containing styling products, olive oil, etc.), the process takes longer and has much more variable results because the stains may not stick to the hair fibers. Conversely, dry or previously processed hair is more porous and will allow color molecules to penetrate the cuticle. People with allergies to any of the plant extracts should be aware of these added components to henna packaging. For example those with nut allergies should not use ground walnut hulls with henna.

COLOR TREATMENT SUBSTITUTES AND TECHNIQUES For shiny hair or treatments that “re-invigorate dull, lifeless color,” options include natural rinses containing lime or lemon juice

or vinegar. These acids help remove residue build-up on the hair cuticle so the light-reflective properties of the cuticle are more noticeable. If lemon juice is left on the hair and the hair is exposed to sunlight, a moderate amount of lightening will occur over time due to the effects of UV radiation on melanin proteins. Dr. Anne Marie Helmenstine recommends various color application techniques that may reduce direct contact with dyes. Highlighting, where sections of hair are treated with lighteners, and low lighting, where sections of hair are treated with darker hair color, use foil or plastic film to separate the hair to be colored, thereby sparing the scalp. A perforated plastic cap on the head where hair strands are pulled through with a hook may also protect the skin.

IS HENNA SAFE? In studies conducted by the SCCP on Lawsonia inermis, no skin irritation or dermal toxicity was ever noted when the dye was applied for 24 hours under an occlusive dressing on both humans and rats. However, in tests where animal and human cells were exposed to the isolated dye molecule, lawsone was shown to have “genotoxicity/mutagenicity potential in vitro [tests conducted outside the body] and in vivo [tests conducted inside a living organism] and ... no safe threshold for lawsone can be established.” As it stands, henna is still available worldwide, but scientists need to conduct more tests to determine if the dye is completely safe for people to use for long periods of time and whether it poses any risks for unborn babies or causes cancer.

THE SMALL PRINT Sheila Zahn from the National Cancer Institute believes that “Based on what we now know, natural hair dyes are a safer choice. But avoid products with coal tar (PPD), which has been found to contain human carcinogens.” On the other hand, hair coloring choices are not as straightforward as some would have the public believe; John Bailey, PhD, director of the FDA's color and cosmetics program warns, “Today, ‘natural’ means whatever the consumer perceives it to be. The label is your best means of figuring out what’s in these products, but it’s by no means perfect.” John Corbett, PhD, vice president of the CTFA's scientific and technical affairs committee, says, "If a natural product contains words like amino, nitro or phenyl or names of colors starting with the letters HC, the product is not natural.” Therefore, it isn’t just a question of whether a product has chemicals in it or what type of plant/vegetable dye extract is being used. Be an informed consumer and read the findings on dyes. Make your decisions based on your own interpretations of the data available.

“What we’ve learned, however, is that these two conditions are often interrelated and can be most effectively treated by a doctor who understands how a woman’s vagina and uterus affect her bladder, urethra, cervix and rectum,” Hall said. If you’re having surgery for pelvic organ prolapse, it’s a good idea to see a urogynecologist who is also aware of the potential of unmasking an incontinence issue, she continued. “To help ensure incontinence is not an issue after a surgery for pelvic organ prolapse, I perform a simple in-office test that mimics the effects of the surgery,” Hall said. “I then examine the bladder to check for any incontinence issues that might arise after surgery. By doing so, I can address both problems in a single surgery, saving many women from a second procedure and a longer recovery.” Although most of the women she sees on a daily basis are in their 50s or older, she also regularly treats younger women with many of the same conditions. “I am committed to finding the safest, most effective and long-term treatment options available for women of all ages,” Hall said. “With proper diagnosis and medical care, many women are able to return to an active sex life. Younger women afflicted with pelvic floor disorders can often still have children.”

“Many urogynecologists such as myself, participated in formal fellowships to receive further training in the diagnosis and treatment of conditions that affect a woman’s pelvic organs, as well as the tissues and muscles that support those organs. Specifically, these conditions include incontinence in women, bowel control issues and pelvic organ prolapse.” Incontinence is when a person leaks urine or feels as if they need to urinate frequently or without control. Pelvic organ prolapse is caused when tissue and muscular support of the vagina is lost, causing a dropping of the bladder, cervix, urethra and rectum. “This results in an uncomfortable bulge in the vagina,” Hall said. Before the emergence of female pelvic medicine and reconstructive surgery, incontinence in women was primarily treated by a urologist, while other gynecologic issues such as pelvic organ prolapse, were treated by a gynecologist.

Women should know pelvic floor disorders are not life-threatening, Hall further emphasized. “Treatments, both surgical and in-office, provide safe relief to these painful and bothersome conditions.” It’s also important for women to realize pelvic floor disorders should not go unchecked, she added. “Talk to your doctor as quickly as possible if you experience any of the above symptoms. Pelvic floor disorders are more common in overweight women, smokers, those who do repetitious strenuous activities and those who suffer from constipation.” Ultimately, “As a urogynecologist, I strive to assure my patients that pelvic floor disorders affect millions of women nationwide and that there is help. A TURNING POINT Gallardo quit her 9 to 5 job when she realized she was not meant to slave it out in corporate America. “Knitting was therapeutic for me, like being in a totally different place that’s peaceful,” said Gallardo, who has been knitting since she was nine. [she was already called an avid knitter in paragraph 1]In her quest to combine her passion and find more meaning in her career, Gallardo founded Knitting Peace in 2008. “It’s a social enterprise that empowers women by creating hand-knit alpaca products,” said Gallardo.

She collaborates with the knitters on patterns, measurements and stitching. “It’s therapeutic for them because knitting keeps them busy on positive thoughts,” said Gallardo. The Bolivian-made products are sold in the U.S., in Germany and in a boutique in Bolivia. Gallardo also works with sales promoters who take website and catalog orders. Mostly a one-woman show right now, Gallardo splits her time between the different aspects of the business to sustain its growth. “It’s a learning process for me every day,” she said.

TRANSFORMING LIVES “The jail was very supportive,” Gallardo said, describing her somewhat unusual way of hiring employees and conducting business. “It wasn’t hard to set up.”

working toward a high school diploma. According to Gallardo, many non-profit organizations facilitate these enrichment classes for the women. Armed with newly-minted skills or a high school degree, the women are eager to work and there are artisans, aside from Knitting Peace, who provide jobs. Most of them have children under the age of 12 living with them in the cramped, dormitory-style jail. The women use their earned wages to purchase tiny spaces within the jail where they can sleep in greater comfort and have some semblance of privacy. “Those tiny spaces are theirs until they’re released and then they can sell them,” explained Gallardo. Some use the money to pay for attorney fees and to support older children who can no longer stay with them in jail. “I pay them competitive wages,” said Gallardo. “It’s a set rate per finished product, depending on the difficulty or magnitude of the product.” In her blog, Gallardo shares the story of Virginia, who recently joined the team. This mother of three had been trying to get on Knitting Peace’s radar for some time but felt her knitting skills were not up to par.

“The indigenous women knit beautifully,” said Gallardo, explaining that a majority of the women knew how to knit or learned how to knit while in jail. “I didn’t have to train them.” Aside from knitting, the inmates, who are in their early 20s to mid-50s, attend classes in crocheting, aerobics and accounting, and some are even

“What impressed me most were not just the consistent beauty of Virginia’s work and the speed that I had not known was possible for hand knitting,” shared Gallardo, “she also has this tremendous capacity to bring lightness and positivism to any situation.” Virginia had worked in the kitchen and laundry departments of the jail and had been earning the equivalent of less than $50 a month. Now considered a valued team member, Virginia is making more than double that amount and is able to comfortably support her brood.

The women usually knit five days a week at their own pace. “They know when I need certain products and they stick to the agreed timeframes,” she said.

RESTORING HOPE There is no slowing down for the indefatigable entrepreneur who continues to grow her socially-responsible company and promote sustainability and empowerment. Gallardo is in the process of starting a transition program and a workspace for those recently released from jail. “It’s definitely part of my long-term plan,” she said. The transformation she has seen in some of the women has inspired her even more. “Some of them were depressed when they started knitting, but I’ve seen them blossom and become more sociable,” she said. Since that time, CoolSculpting has been featured on numerous television shows, including The Dr. Oz Show, Good Morning America and Nightline, where physicians have touted the safety, efficacy, and ease of the revolutionary fat-clearing procedure. It almost sounds too good to be true — and the procedure is not ideal for everyone — but here’s what we know. CoolSculpting does not replace the need for a healthy diet and regular exercise regimen. It is not meant for obese patients, nor is it intended to cause significant weight reduction. But some people, no matter how many sit-ups they do, just can’t get rid of that tummy pooch. The ideal CoolSculpting patient is within 15 to 20 pounds of their ideal body weight and works out regularly, but is bothered by a bulge or two of fat that seems resistant to diet and exercise.

Zeltiq’s applicators effectively treat the tummy, upper abdomen, love handles, back fat or bra bulge, and some inner thigh fat. Zeltiq’s clinical studies used ultrasound to measure the effect of each CoolSculpting treatment on the subcutaneous fat layer. The average patient experienced a 20 to 25 percent reduction in fat layer width, resulting in visible, natural-looking changes to the body’s contours after one treatment. Some patients experienced large reductions of up to one centimeter in circumference with a single treatment. More than 70,000 CoolSculpting treatments have been performed worldwide, with consistent, reliable results. The fat loss achieved with the procedure is expected to be permanent when combined with a healthy lifestyle. If a CoolSculpting patient gains weight after the procedure, the weight will be distributed evenly, as opposed to honing in on the treated area. CoolSculpting, which uses a cooling technology called cryolipolysis, was researched and developed at Harvard Medical School and Massachusetts General Hospital in Boston. The lead scientist, Dr. Rox Anderson, is also credited with pioneering technologies currently used for laser hair removal, tattoo removal and other successful cosmetic treatments. For Zeltiq, Anderson’s research began with the medical fact that fat is more susceptible to cold than is its surrounding tissue. If the problem area is kept at the right temperature for the right amount of time, the fat can be targeted for damage and the adjacent tissue left intact and unharmed. During the procedure, the fat to be treated is drawn between two cooling plates using gentle vacuum suction. The area is then cooled to temperatures just above freezing for one hour, which causes the water inside the fat cells to crystallize, and the fat effectively changes from a liquid to a solid state. This fat damage triggers a process of natural and gradual removal, which causes no extra stress on the body yet leads to a gradual and visible reduction in the thickness of the fat layer. Results are seen in as early as three weeks and continue to improve during the course of two to four months post-treatment as the patient’s body continues to flush the damaged fat cells. Treatments can be repeated for additional fat reduction and contouring. Most patients do not describe the procedure as painful, though they do feel a tugging sensation and a short period of intense cold in the treated area. CoolSculpting is very tolerable without anesthesia or numbing, and most patients read, work on a laptop, listen to music or just relax during the procedure.

All the potential side effects of CoolSculpting are temporary. They include bruising, tenderness and cramping in the treated area, and redness, numbness and tingling of the overlying skin. Most side effects, if they occur, last no longer than one to two weeks. Providers with the latest technology and applicators generally charge $750 to $1,500 per treatment per area, often discounting additional treatments to the same area. There are many reasons I like to use CoolSculpting in my office. First and foremost, I love the simplicity of cooling the tissue to induce a natural process of fat removal. There are no needles, knives, injections, hormones or medicines. There is no need for anesthesia and the pain and side effects are minimal. In fact, many patients who choose to treat multiple areas in the same session have no more discomfort or side effects than those who treat just one area. And of course, there’s the fact that it works! The treatment has been especially popular with women who haven’t been able to lose their pregnancy pooch years after giving birth, men who don’t like their love handles hanging over their belts, and people of all ages who go to the gym regularly but can’t get a bulge to melt away. CoolSculpting is not a substitute for a healthy diet and regular exercise regimen and is not a method of weight loss. But the FDA and the medical community at large view it as a tool to target stubborn fat bulges in a safe, effective, and proven way.

With school back in session and families on the go, what do you recommend parents do to ensure their children are getting proper nutrition? During the summer months at home, it’s easier to monitor meals with kids, watching what they eat. I recommend packing healthy snacks for your kids, which will help avoid just eating what is convenient. Also, find out what the school is serving. Some school districts have great, nutritious lunches — some don’t. It can pay to pack a lunch from home because you have more control. Looking at the large percentage of overweight children in this country, what do you say to busy parents who feed their children unhealthy fast food? Parents are busy. I’m one of them and sometimes fast food is going to be a necessary routine but it doesn’t mean it has to be unhealthy. The rule? Don’t go by the numbers on the menu. In other words, avoid the combo meals. Usually the sandwich is enough. It’s our family’s routine. My kids know that we are going to get water to drink and a sandwich. Almost all quick-serve restaurants have grilled chicken sandwiches — often on a whole-wheat bun. It’s a pretty healthy meal compared to getting the combo meal that often includes a soda and fries. What do you suggest to parents who have a hard time getting their children to eat more fruits and vegetables? Make sure you’re being a good example. If the kids see you eating and preparing fruits and vegetables, they are much more likely to eat them too. In our family, it is perfectly normal; it’s nothing we have to argue about. It’s a norm like brushing your teeth.

Also, if the kids help with the shopping and preparation they are much more likely to try them. The kids are picking out the grapes, the tomatoes or red peppers. If they help prepare, they are much more excited to eat them. How do you feel about vitamin supplements for children and if you recommend them, what vitamins do you think are the most beneficial? Ideally kids would get all their vitamins and minerals from a healthy diet — even some cereal is enriched with vitamins. But if a child is a picky eater a multivitamin is a good idea. Choose one that is naturally sweetened without sugar or artificial sweeteners and no artificial colors. What are some tips parents can give their children to avoid picking up germs that cause colds and influenza while at school? Hand washing is important before eating and after using the bathroom. Keep your hands away from your face. You don’t get sick until germs get into your body through your nose, eyes, or mouth. Do you recommend flu shots for children? It’s a good idea. They are safe and usually pretty effective and can help avoid missing a week of school for kids and a week of work for the parent. With fall sports starting up, what first aid products do you recommend parents keep in their cars? You want to rinse out cuts and scrapes as soon as possible. Having a topical antibiotic first aid treatment and a few band-aids is a good idea. Topical aids used to sting a bit — but now they make some really great ouch-free products. When adults participate in sports they often spend a long time stretching and warming up but children often don't take the necessary time. Do you think the number of children’s injuries is caused by not warming up properly or are they caused by the fact that their bones and muscles are not as developed? It’s probably a combination of both factors. My kids are in sports and I always make sure the coaches are including warm ups and stretching. Keeping kids hydrated is also key. Dehydrated muscles and ligaments get injured more easily. In fact the patients may attend a social function the day of their treatment and will most likely receive compliments on their appearance. Most patients can see the results immediately and since the collagen was stimulated by this procedure, a cascade of events occurs, culminating in improved skin texture and a refreshed look after about four weeks. Three treatments are recommended, depending on how much collagen needs to be stimulated and they may be combined with other treatments such as chemical peels, Botox, or wrinkle fillers. Some older patients with thinner skin may need more treatments because they have lost more collagen. Facelifts are a scary thought for many patients. The procedure conjures images of bandages, swollen faces, bruises, tubes, anesthesia, etc. While facelifts are a great way to treat significant skin excess and aging of the face and neck, a number of less invasive methods can achieve similar results. Patients with less significant signs of aging who would like to look younger and improve the appearance of their neck, jowls, face, and brows may benefit from less invasive face rejuvenation procedures. These procedures have been advertised using various easy-toremember trademarked names. One thing to remember is that although a minimally-invasive procedure sounds great, not everyone will achieve the same results as the patients on TV. It is always a good idea to get an opinion from a surgeon who offers both a full facelift and a less invasive facial rejuvenation. Advantages of these newer procedures are that they are done under local anesthesia, and the surgery is less extensive so there is less bruising and swelling. Recovery is faster and results are excellent in appropriately selected patients. The procedure may be performed to address the neck, the jowls and the brows. Other procedures such as eyelid surgery and fat transfer may be performed at the same time to improve the volume distribution of an aged face. In summary, It may be overwhelming to grasp all the new treatment modalities available to patients seeking to improve their appearance. Specific tests can determine if you have a food allergy, gastrointestinal infection or a neurotransmitter imbalance. If your neurotransmitters are not in balance, brain fog will occur. Low levels of dopamine, nor-epinephrine, epinephrine or glutamate create a lack of focus and low brain function. Once tested, the individual can be treated with specific amino acids to correct the imbalance and create better brain function.

the MoSt iMPortant nutrient For your Brain iS Fat. It’s as simple as that. Nutrition is the most important tool for staying mentally and physically fit and is by far the most underused tool. When you think about it, the only way we live and heal is by the air we breathe, the water we drink and the food we eat. The most important nutrient for your brain is fat. Yes, fat. Fats are not a four letter word. Sixty percent of our brain is made of fat. Each of our 100 trillion cell walls is made up of 60 to 80 percent fats. Brain-friendly fats include olive, avocado and safflower oils. Nuts are also good sources. Saturated fats found in animal fats can raise homocysteine levels, the amino acid that can be toxic to your brain. Trans fats found in processed baked goods and fried foods make rigid, tough, slow brain cells. Get these fats off your plate. Eat more good fats such as essential fatty acids, Omega 3 and Omega 6. These need to be balanced. Even though most doctors agree that the best way to keep your mind fit is to use it by challenging it every day, such as playing brain teaser games, crossword puzzles, and running the ABC’s backwards in your head. That still doesn’t give us a warm fuzzy feeling that it will get better or help with the current frustrations that we have with "normal" memory lapses. Check the items off as you go. • Look at yesterday’s list and transfer anything you might have not finished to the current day’s list so it doesn’t get forgotten. • When going places, if you have a GPS, enter in directions to everywhere you go frequently. • Use Post-It notes on your back door and your garage or front door to remind you to turn off the iron, coffee pot, and air conditioning. • When you meet new people, make sure to repeat their names when greeting them. • Take a community class on something you have always wanted to learn, but have never done before.

Made from pressed canola seed, from the same botanical family as cabbage and cauliflower, canola oil is considered one of the healthiest cooking oils.

The popularity of this sweet, earthy and refreshing cooking oil is taking off.

Corn oil is a common frying oil extracted from the germ of corn or maize.

Typically extracted from wine grapes, the beginnings of grape-seed oil can be traced back to the 20th century, when its high-volume production started in the U.S. and Europe.

At seven percent, it has the lowest saturated fat content among the common cooking oils used in the U.S., making it a heart-healthy oil. “It is a good choice for deep-frying, stir-frying, sautéing, grilling and baking,” said Perry Castellano, a private chef and owner of Perry’s Catering based in Agoura Hills. Its neutral flavor and smooth texture also makes it a suitable oil for salad dressings, sauces and marinades. It can also be used as a replacement for butter or margarine in most recipes.

For many years now, coconut oil has been considered a staple in Indian and Thai cuisines. However, in recent years, the coconut oil has been showing up in dishes from chicken curry to chocolate pudding. It is considered a suitable replacement for almost any cooking oil or in recipes that call for butter or margarine. Coconut oil is usually solid at temperature. Dense and stable, it is wise to go easy on coconut oil, as less is required of it for cooking or baking.

There are numerous claims that corn oil is effective in lowering cholesterol levels due to its high level of polyunsaturated fats. It is also an excellent source of tocopherols, which provide vitamin E and function as antioxidants. Less expensive than other vegetable oils, corn oil is also used in baking and making margarine.

Its health benefits are supposedly similar to olive oil. It contains polyphenols, which are antioxidants. Grapeseed oil is also found in many skincare products due to its anti-aging benefits. Light and neutral in color and flavor, with just the right hint of nuttiness, grape-seed oil has many uses. “I use grape-seed oil for vinaigrettes or if I don’t want a strong olive oil flavor,” said Castellano. “I also use it for searing and frying because it’s a healthier oil.” Lisa Biondi of Mediterraneo Restaurant in Westlake Village also considers it a popular choice for deep-frying, stir-frying and sautéing. “It has this unobtrusive flavor which makes it a good addition to some dressings and sauces,” said the chef of the Zagat-rated restaurant.

Extracted from the seeds of the safflower plant, safflower oil’s many health benefits include weight management, diabetes control and cholesterol level reduction, among others.

According to WebMD, sunflower oil is a source of unsaturated fat and a replacement for saturated fat. High in vitamin E, sunflower oil also has other medicinal and wound healing properties. Several food manufacturers are slowly recognizing the health benefits of sunflower oil and are now using it in snacks like potato chips. Its neutral flavor makes it a good option for frying and salad dressings.

Vegetable Oil A blend of several oils including corn, soybean, palm and sunflower, vegetable oil is another widely used cooking oil. Frequently found in recipes, the most common use of vegetable oil is for frying. Many chefs and connoisseurs consider it as a good base oil because it can carry other flavors and does not overpower a dish.

However, its pleasantly nutty flavor still makes it ideal for high-temperature frying. Some people have turned to peanut oil for frying turkey during Thanksgiving. Its other uses also include stir-frying, Castellano said. According to Jan Tucker of www.whitelotusliving.com, a controversy has been brewing over peanuts and peanut oil. Several animal studies have shown peanut oil can clog the arteries. Even WebMD cautions peanut oil could increase the risk for heart disease, although the jury is still out. In addition, aflatoxin, a potent carcinogen produced by certain fungi associated with peanuts, suggests that peanuts contaminated with this fungus may cause cancer.

Odorless and colorless, it can be used for high-heat cooking methods such as deep-frying. Castellano likes the neutral flavor of safflower oil. “I use it for mild sauces, light vinaigrettes and mayonnaise-based sauces,” he said.

Castellano prefers to use sesame oil for flavoring vinaigrettes or as a last-minute addition to a dish, just for the extra hint of nutty flavor. “Sesame oil has a very strong flavor so I use it sparingly,” said Biondi. “Or I’ll mix it with other oils.”

Olive oil, virgin olive oil or extra virgin olive oil? That is the question.

While extra virgin olive oil is the most commonly used, the other olive oil varieties also have their uses. Castellano, who specializes in Mediterranean, Italian and French cuisines, weighs in. “I use extra virgin olive oil if I want that strong olive flavor in pasta, grilled vegetables, fish, sauces and vinaigrettes,” Castellano said. “For high-temperature cooking, I use virgin olive oil.” Biondi agrees that extra virgin olive oil is most suitable for basic vinaigrettes and sauces. “It’s also good for dipping bread,” she said. “For salads, I use plain olive oil because the flavor is more subtle,” she said. “Olive oil is also good for marinating, panfrying or to make certain dishes like chicken Milanese.”

Biondi issues a word of caution. “Not all olive oils are the same,” she said. “Some are more bitter or fruitier than others so you may have to keep looking until you find one that you like.” High in mono-unsaturated fat, olive oil in most forms helps reduce the risk of heart disease.


Cooking is Instinct

An excellent source of omega-3 fatty acids and antioxidants, walnut oil is known for its rich, nutty flavor. Biondi turns to this flavorful oil for French dishes and salad dressings. It can also be used to flavor fish, steaks and pasta, or to enhance the taste of some desserts. Most chefs prefer to use walnut oil for cold applications since high temperatures can eliminate some of its flavor and nutritional values.

“In recent years, people have changed cooking oil preferences,” said Biondi, noting trends and the popularity of certain oils over others. Blended oils are also not out of the question. Both chefs admit to experimenting with certain combinations, depending on the flavor they want to achieve. The olive oil and butter combination is also not unheard of for sautéing. The use of two different cooking oils — one for stir-frying and one for finishing — is also acceptable and widespread. As for flavored oils, these are usually not used for cooking, according to Castellano. The flavor may disappear or turn rancid. “It’s better to use these for drizzling or to finish off dishes,” he said. Biondi’s advice is simple. “If you’re still unsure about which cooking oil to use, just go with your instinct and don’t be afraid to experiment,” she said.

INGREDIENTS: 2 1/2 cups shredded roasted skinless, boneless chicken breasts 1 cup (4 ounces) crumbled queso fresco cheese 1/4 cup chopped green onions 1 teaspoon dried oregano 1/4 teaspoon ground cumin 1 garlic clove, minced 1 (4.5-ounce) can chopped green chilies, drained 1 (16-ounce) can fat-free refried beans 6 (8 in.) flour tortillas Cooking spray 1/2 cup green salsa

PREPARATION: Preheat oven to 500°. Combine first 7 ingredients in a large bowl; toss well. Spread 1/4 cup beans down center of each tortilla. Top each tortilla with 2/3 cup chicken mixture; roll up. Place rolls, seam sides down, on a large baking sheet coated with cooking spray. Coat tops of chimichangas with cooking spray. Bake at 500° for 7 minutes. Serve with salsa.
