Etymologically founded from the Old English teag, the name tye developed throughout Suffolk and Essex to be the name for places of congregation such as a village green or common place, an important location to the rural lifestyle.

This drink pays homage to the famous Suffolk-born artist John Constable, who’s portrayal of not only Stoke-byNayland but the surrounding area and Dedham Vale, earned the eponym of ‘Constable Country’.

Higham village on the river Stour was painted by John Constable circa 1804, a perfect example of what has come to be known as Constable’s Suffolk. Today the valley with is home to Higham Vineyards, known for their sparkling rose and pinot noir.

Our tonics are from the London Essence Company. Originally opened on the Thames riverbank in 1896 to produce essences for London’s top perfume houses, it was reopened in 2016. Using the innovative heritage and inspired by the careful craf and imagination of the original frm - London Essence create fabulous tonics and mixers in general. We love how their drinks enhance our range of spirits, ofering a great ingredient for cocktails/mocktails, whilst low in sugar and calories.

HOT BEVERAGES

Our cofee is from Woodbridge-based Christopher Montrose Speciality Cofee, whom ethically source and roast carefully selected beans from individual cofee growers.

We have chosen the single-estate Colombian Huila - a pure Colombian which has a stunning full and rich mouthfeel, deep but at the same time delicate, clean and pure afertaste. This great versatile cofee is a wonderful accompaniment to breakfast as well as one of our head pastry chef's puddings!

Decafeinated is equally fne, the Swiss Water Decaf from Minas Gerais in Brazil - a gentle, chemical-free cafeine extraction method that helps protect the original bean characteristics. Medium-bodied with mild acidity and slight burnt sugar sweetness.
